to the May issue of OCIO Magazine. With Spring giving way to summer, the recent boost in warm weather has given us a little taste of what is ahead. The beach bars and restaurants begin to move into full swing and the smell of sardines being cooked over log fires fills the warm air. Winter clothes have been packed away giving way to brighter, lighter clothing. Flips flops have been dusted off and swimsuits unpacked from their winter hibernation. It is also sun cream (and after sun) season so time to beak out the Hawaiian Tropic. Hot days and balmy nights are just around the corner people, bringing with it everything that summer living has to offer. Enjoy!

One of the primary concerns during hot spells is heatstroke, a dangerous condition that can affect both humans and animals. Symptoms may include excessive panting, drooling, lethargy, rapid heartbeat, and vomiting. If you notice any of these signs in your canine companion, it’s essential to act swiftly to cool them down and seek veterinary assistance if necessary. To avoid heatstroke, it’s advisable to limit outdoor activities during the hottest parts of the day, typically between 10 a.m. and 4 p.m. Instead, opt for early morning or late evening walks when temperatures are cooler and the sun’s intensity has waned. Ensure your dog has access to plenty of fresh water at all times and provide shaded areas for them to rest and cool off. In addition to staying vigilant outdoors, there are plenty of enjoyable activities to partake in with your furry friend indoors to beat the heat. Ford Explorer New Electric Crossover

Ford is a company that’s undergoing a period of extreme change. Iconic nameplates like Fiesta and Mondeo have been taken away, with the Focus next on the chopping block. Instead, electrification and SUVs are now at centre-stage. The new all-electric Ford Explorer is at the crux of Ford’s new focus (no pun intended), and represents the aims and ambitions of a brand that’s been consistently successful for the best part of 50 years.

This new mid-size Explorer was revealed a fair while back now, but last year the company took the tough decision to delay the project in order to ensure the latest battery technology could be used. The Ford Explorer will initially be available with two battery and drive options. The core single-motor rear drive model featuring a 77kWh battery pack with 282bhp and a range of 373 miles. It will have a peak charging rate of 135kW, which will recharge the battery from 10 to 80 per cent in around 28 minutes.

Above this will sit a dual-motor option with a

marginally larger 79kWh battery pack and a 335bhp power figure. This model offers 350 miles, and comes with a far more powerful 185kW DC charging rate that will go from 10 to 80 per cent in 26 minutes. Eventually, Ford will launch an entry-level 52kWh model with 166bhp, which will be available towards the end of this year. All Ford Explorer models are also optimised to suit an 11kW wall-box charger at home, which will be able to recharge around 40 miles per hour.

All models will offer a 14.6-inch portraitoriented touchscreen interface, plus powered front seats with heating, memory and massage functions. 19-inch wheels, adaptive cruise control and a rear ski hatch, which is actually more useful than you may think.

The cabin’s ambience is boosted by the clever B&O soundbar that’s placed across the top of the dash. As well as acting as a speaker, it also introduces a soft textured element to an otherwise fairly minimalist interior.

Physically, the Explorer is only marginally

longer than the Ford Focus, and thanks to a comprehensive set of parking cameras is incredibly simple to pilot into awkward parking spaces.

All in all, a very exciting launch of a new styled favourite that will appeal to established Ford Explorar followers as well as newbies to the model.

Our travelling group of golfers had the pleasure of returning to the fabulous Estepona Golf last month.

Estepona Golf is considered to be a real jewel amongst the many courses located on the Costa del Sol, and it is easy to see why. From the moment you arrive you are greeted with friendly smiles and a very welcoming ambience.

This well established club came under new ownership and management last year and already the changes they have made are evident ...and the team has only just begun.

The course now offers 18 diverse holes and plays to a par 72 with 5403 metres off the yellow tees. The course is not overly difficult, if you play it within

your capabilities of course, making it accessible and enjoyable to all levels of play and all levels of handicap.

The course seamlessly integrates with the natural countryside and indeed nature itself. There are over 1,500 palm trees and more than 2,000 olive trees within the landscape of the course and the views of both the Mediterranean sea and the Sierra Bermeja mountains are nothing short of stunning. Many of the holes face the sea so in summer there is always a pleasant breeze to be enjoyed. On our visit the course was in excellent condition. The tee boxes were generous and the fairways were welcoming with plenty of green grass to play on, if your tee shot stayed straight. If not, the light rough running alongside the fairways will

prove to be a challenge. Approach shots to the large manicured greens were made easier by the quality of the greens that awaited you. These greens certainly favoured the brave as a well executed approach shot that deserved to stay on the green, stayed on the green. And putting on such good quality greens was an absolute delight.

After our round we enjoyed the bar, terrace and restaurant facilities on offer. The huge terrace with its relaxing furniture and ‘chill out’ vibe, made for a delightful place to enjoy a drink and bite to eat as we reviewed our scorecards and reflected on what was an incredibly enjoyable day of golf. This was our second visit to Estepona Golf and already we are planning our third. If you are yet to

visit and play this wonderful course, may I recommend that you do so, you will not be disappointed.

Ahora, el campo ofrece 18 hoyos diferentes, jugando un par 72 con 5.403 metros desde los tees amarillos. El campo no es demasiado difícil, si juegas dentro de tus capacidades claro, haciéndolo accesible y disfrutable para todos los niveles de juego y de handicap. El campo se integra perfectamente en el entorno natural y en la propia naturaleza. Hay más de 1.500 palmeras y más de 2.000 olivos dentro del paisaje del campo, y las vistas tanto del mar Mediterráneo como de las montañas de Sierra Bermeja son simplemente espectaculares. Muchos de los hoyos están frente al mar, así que en verano siempre podrás disfrutar de una agradable brisa.

The Perfect Paella

The traditional Spanish Paella has gained popularity all over the world for its vibrant colours, bold flavours, and unique cooking technique. While there are many variations of paella, from seafood to meat to vegetarian, one thing all paellas have in common is the crispy bottom layer, known as socarrat. This crispy layer is what sets paella apart from other rice dishes and is often considered the mark of a perfect paella. So, what exactly makes the perfect paella? Well, it all starts with the ingredients. For a traditional Valencian paella, the key ingredients include shortgrain rice, saffron, tomatoes, garlic, Spanish chorizo, chicken or rabbit, and a variety of seafood such as shrimp, clams, and mussels. The combination of these ingredients creates a rich and flavourful base for the dish.

Next, the cooking technique is crucial to achieving the perfect paella. The rice is first sautéed in olive oil with diced onions, garlic, and tomatoes until it has absorbed the flavours of the aromatics. Then, the saffron is added along with the broth, allowing the rice to cook slowly and evenly. As the rice simmers, the broth evaporates, creating a crust on the bottom of the pan.

This crust, known as socarrat, is what

gives paella its signature texture and flavour. The crispy layer forms as the rice cooks over low heat, allowing the bottom to caramelise and become crunchy. Achieving the perfect socarrat requires patience and skill, as the rice must be cooked just right to prevent it from burning. The key to achieving the perfect socarrat is controlling the heat during the cooking process. The paella should be cooked over low heat, allowing the rice to slowly absorb the liquid while developing the crispy bottom layer. The pan should also be periodically rotated to ensure even cooking and prevent hot spots that can lead to burnt rice.

Irecently had the pleasure of visiting the beautiful city of Valencia. Known for its stunning architecture, delicious food, and vibrant culture, Valencia did not disappoint. Upon arriving in Valencia, I was immediately struck by the city’s charm. The combination of historic buildings and modern architecture created a unique and inviting atmosphere. I started my weekend visit by exploring the city centre, wandering through the narrow streets and admiring the colourful buildings that lined the cobblestone paths. One of the first things I noticed about Valencia was the abundance of orange trees lining the streets. The sight and smell of the citrus fruit filled the air, adding a refreshing touch to the city’s ambience. I later learned that Valencia is famous for its oranges, and the fruit plays a significant role in the local cuisine.

After strolling through the city centre, I made my way to the famous City of Arts and Sciences. This futuristic complex of

buildings designed by renowned architect Santiago Calatrava was truly a sight to behold. The futuristic structures, including an opera house, science museum, and aquarium, perfectly contrasted the historic architecture of the city centre.

I spent several hours exploring the different buildings within the complex, marvelling at the innovative design and striking beauty of each one. The interactive exhibits at the science museum were particularly fascinating, allowing me to learn about everything from astronomy to marine biology in a fun and engaging way. As the sun began to set, I decided to make

my way to Valencia’s beach area. The city boasts several miles of beautiful sandy beaches, perfect for relaxing and soaking up the sun. I spent the evening walking along the shore, listening to the sound of the waves and watching the sun drop below the horizon. It was a peaceful and tranquil way to end the day.

The next morning, I set out to explore Valencia’s historic sites. I visited the iconic Valencia Cathedral, a stunning Gothic masterpiece that dates back to the 13th century. The cathedral’s ornate facade and intricate details left me in awe, and I marvelled at the beauty of the interior, which houses several stunning works of art.

After visiting the cathedral, I made my way to the bustling Central Market. This lively market is a paradise for food lovers, with vendors selling everything from fresh produce and seafood to local delicacies like horchata and churros. I sampled some of the delicious treats on offer, savouring the flavours and aromas of traditional

In the afternoon, I took a leisurely stroll through the Turia Gardens, a beautiful park that stretches through the city. The park was once the site of the Turia River, which was diverted after a disastrous flood in the 1950’s. Today, the gardens are a peaceful oasis in the heart of Valencia, complete with lush greenery, fountains, and walking paths.

As my weekend in Valencia came to a close, I found myself reluctant to leave. The city’s rich history, vibrant culture, and warm hospitality had captured my heart, and I knew that I would be returning again soon. Valencia had left a lasting impression on me, and I was already looking forward to my next visit to this beautiful city.

Por la tarde dí un paseo relajado por los Jardines de Turia, un hermoso parque que atraviesa la ciudad. El parque fue una vez el cauce del río Turia, que fue desviado tras una desastrosa inundación en los años 50. Hoy, los jardines son un oasis de paz en pleno corazón de Valencia, repletos de frondosa vegetación, fuentes, y senderos.

Al acercarse el final de mi fin de semana en Valencia me sentí reacio a marcharme. La rica historia de la ciudad, su vibrante cultura, y su acogedora hospitalidad habían cautivado mi corazón, y sabía que no tardaría en volver. Valencia había dejado una gran impresión en mí, y ya estaba esperando con ansía mi próxima visita a esta bella ciudad.

What do you know about OLIVE OIL?

¿Conoces el aceite de oliva?

Extra virgin, virgin, light, pomace, filtered, cold pressed, stone milled, organic, …. The list goes on and on. If you are confused about which olive oil to buy, you are not alone. The world of Olive Oil is a complicated one, but there are a few keys to choosing the right olive oil for your needs. First is knowing the types of olive oil available, the second is considering what you will use it for. Learning the different grades of olive oil and their characteristics will help you make sense of what you read on labels.

Next decide which type of oil will best suit your intended purpose. Are you buying oil to drizzle on a piece of roasted country bread, to use on your skin, to make soap, or to burn in an oil lamp? Different uses may require different oils. The question is: Which oil for what? Let me try and point you in the right direction.

Although there are many grades and definitions, we would like to emphasise only a few points that we think are most relevant

El mundo del aceite de oliva es complicado, pero hay algunas claves para elegir el aceite de oliva adecuado a sus necesidades. La primera es conocer los tipos de aceite de oliva disponibles, la segunda es considerar para qué lo va a utilizar.

Aprender los diferentes grados de aceite de oliva y sus características le ayudará a dar sentido a lo que lee en las etiquetas.

A continuación, decida qué tipo de aceite es el más adecuado para su uso. ¿Va a comprar aceite para rociar un trozo de pan rústico tostado, para utilizarlo en su piel, para hacer jabón o para quemarlo en una lámpara de aceite? Los distintos usos pueden requerir aceites diferentes. La cuestión es: ¿qué aceite para qué? Permítame intentar orientarle en la dirección correcta.

Virgin olive oil is obtained from the olive only, using solely mechanical or other physical means, in conditions, particularly thermal conditions, which do not alter the oil in any way. It is pure fruit juice, so to speak. It also meets a set of chemical standards.

Refined olive oil is obtained by treating low quality or defective virgin olive oil with the use of charcoal and other chemical and physical filters. An obsolete equivalent is “pure olive oil”. Note that no solvents are used in the refining process. Though it may be confusing, you should be aware that the term olive oil, when used alone, refers to a blend of refined olive oil and virgin olive oil.

Pomace is the ground flesh and pits left after the extraction process. Within the olive-pomace oils category, oil specifically labeled as olive-pomace oil is a blend of virgin olive oil and refined pomace oil. Extra virgin is the highest grade of olive oil. As with all virgin olive oils, it is made mechanically, without the use of chemicals or excessive heat.

The chemical characteristics of extra virgin olive oil (as with all vegetable oils) give an indication of the care with which it was made and stored: how the fruit was grown, transported and harvested, how it was milled into oil, and how the oil was packaged and bottled. Chemical testing can also help determine if the oil is adulterated. The chemical standards for extra virgin olive oil are the highest of all the grades and, as such, offer a minimum guarantee of quality.

In addition to chemical characteristics, extra virgin olive oil also has certain organoleptic characteristics: it does not have taste defects yet is not totally flavourless. This does not guarantee it will taste good to you, however.

Having said all that, it is important to recognise that there are huge differences among extra virgin olive oils in terms of their quality, taste, aroma, colour, health benefits, shelf life, presentation, and or course their price. Extra virgin olive oils can be anything from very delicate and mellow to quite bitter and pungent. Their anti-oxidant content varies considerably. A high quality extra virgin olive oil is perfect

Las pruebas químicas también pueden ayudar a determinar si el aceite está adulterado. Los estándares químicos del aceite de oliva virgen extra son los más altos de todos los grados y, como tales, ofrecen una garantía mínima de calidad.

Además de las características químicas, el aceite de oliva virgen extra también tiene ciertas características organolépticas: no tiene defectos de sabor, pero tampoco es totalmente insípido. Sin embargo, esto no garantiza que tenga un buen sabor.

Dicho esto, es importante reconocer que existen enormes diferencias entre los aceites de oliva virgen extra en cuanto a su calidad, sabor, aroma, color, beneficios para la salud, vida útil, presentación y, por supuesto, su precio. Los aceites de oliva virgen extra pueden ser desde muy delicados y suaves hasta bastante amargos y picantes. Su contenido en antioxidantes varía considerablemente.

Un aceite de oliva virgen extra de alta calidad es perfecto como condimento, rociado sobre el pescado, la carne, las verduras al vapor o las patatas asadas, en aderezos para ensaladas, como aderezo para el pan, como base para la mayonesa y las salsas sin cocinar, o frotado sobre un trozo de pan, por citar sólo algunos ejemplos. Como el aceite se deja sin calentar, se aprovechan todos los beneficios de su sabor y aroma, así como sus cualidades saludables. No utilizará mucha cantidad, por lo que merece la pena pagar el precio más elevado de un aceite de oliva virgen extra gourmet. Piense en el aceite de oliva virgen extra como en el vino. Combínelo con los alimentos, encuentre la combinación adecuada. Utilice un aceite de potencia suave o media para aliñar ensaladas o como condimento sobre alimentos suaves, como la mozzarella. Cambie a un aceite de oliva robusto para rociar tomates frescos o un plato contundente. Use su imaginación para crear varias mezclas de sabores que le gusten. Cada vez son más las tiendas que ofrecen catas y degustaciones de aceite de oliva. Aprovecha para decidir qué aceites te gustan más. Al final, eso es lo que importa.
