Firewood ‘olive tree logs’ Troncos de olivo

ith the colder months fast approaching, it is almost time to light up your fireplace and enjoy a little winter warmth. Nothing beats the magical feeling of being cocooned in front of the fire with the warmth from the logs seeping in through your skin and, even better if the warmth is generated by natural logs that do no harm to the environment.

Instead of burning any logs that are available, olive wood logs provide great heat and a wonderful aroma when used in an open fire.

Quite obviously, olive wood logs come from the olive tree. In Spain and Portugal, the trees felled for the purpose of creating logs for our fires are very old and are felled because they no longer produce good quality olives. The felling of these trees makes space for new trees to be planted, sometimes up to 5 new trees being planted for each old one felled because of the dense trunks and root system they have after so many years growing.

No hay nada como la sensación mágica de ser arropado en frente de la chimenea y dejar que el calor de los troncos se filtren a través de su piel. Y, es pura felicidad si el calor es generado por troncos naturales que también hacen que el aire a su alrededor sea maravilloso con un olor agradable.

En lugar de quemar los troncos que están disponibles, troncos de madera de olivo proporcionan esa sensación maravillosa cuando se utiliza en una chimenea.

Obviamente, los troncos de madera de olivo provienen del olivo. En España y Portugal los árboles se talan con el fin de hacer leña para nuestros hogares, ya que son muy viejos y no producen aceitunas de buena calidad.

civilisations for many aspects of life and was always said to be therapeutic and pleasant. Probably the other reason being that olive trees were grown in such abundance. But either way, the olive tree has always been put to the very best use and not least of all in the creation of logs for our summer barbecues and winter fires.

Olive wood is very dense which makes it burn very well. It burns for much longer than most other woods, making it more economical as you need to use less. Also, it does not have a high sap content like other wood, making it ideal for our home fires and barbecues.

The good thing about olive logs is that they do not endanger the environment.

At home, they also keep the environment from being polluted, even though one may resort to using the fireplace almost on a daily basis throughout the winter months.

As a final thought, when your wood is delivered, do be prepared to store it correctly. Naturally you will want to keep it dry but beyond that, think about storing the logs on a wood pallet perhaps to get it off the ground. Wood left on the ground in a disorganised pile won’t allow enough air-flow to keep the wood sufficiently dry from the damp and wet air of the winter months. To properly dry your wood, or what’s called “seasoning’, the wood ideally needs a place where the sun can warm it and the wind can blow through it. This will properly season your wood giving you a longer burn time and lots more winter warmth. n 10 OCIO magazine

Por lo que parece una eternidad, las partes del árbol del olivo han sido utilizadas por las civilizaciones mediterráneas para muchos aspectos de la vida y siempre se dice que es terapéutica y agradable.

Probablemente, la otra razón es que los olivos se cultivaron en tal abundancia.

Pero de cualquier manera, el árbol de olivo ha sido siempre poner a la mejor utilización y no menos importante en la creación de los registros de nuestras barbacoas de verano y los incendios de invierno.

Madera de olivo es muy densa que hace que se queme muy bien. Se quema durante mucho más tiempo que la mayoría de otras maderas, por lo que es más económico que necesite usar menos.

Además, no tiene un alto contenido de savia como otra madera, por lo que es ideal para nuestros incendios en el hogar y barbacoas.

Lo bueno de los troncos de olivo es que

En casa también mantener el medio ambiente limpio de la corrupción a pesar de que uno puede recurrir al uso de la chimenea casi a diario durante los meses de invierno.

Como reflexión final, cuando se entrega la madera, no estar preparado para almacenar correctamente. Naturalmente, usted querrá mantenerla seca, pero más allá de eso, pensar en el almacenamiento de los troncos en una palé de madera tal vez para tenerlo apartado de la tierra.

Madera dejada en el suelo en una pila desorganizada no permitirá suficiente flujo de aire para mantener la madera suficientemente seca del aire húmedo de los meses de invierno. Para secar correctamente su madera, o lo que se llama “condimento”, la madera ideal necesita un lugar donde el sol puede calentar y el viento puede soplar a través de él. Esto tratará adecuadamente la madera que le da un mayor tiempo de quemado y mucho más calor en invernal. n

ituated in the foothills of the Sierra de Mijas with breathtaking views of the Andalusian countryside and distant Mediterranean, La Cala Resort is a golfing mecca only 30 minutes from MĂĄlaga Airport. Three championship courses, designed by world-renowned architect Cabell B. Robinson, provide an exhilarating challenge.

Our small group of golfing enthusiasts had the pleasure of playing the Asia Course early in September...and what a pleasure it was.

The Asia course is the oldest of the three courses, the other two being the Europa 18 OCIO magazine

course and the America Course. Off the yellow tees, this par 72 course presents a slope index of 139 and is not particularly long at 5412 metres, but it is narrow in places and presents a few challenges along the way, requiring some thought, care and attention to go with some skill and strategy if you are going to bring in a good card. The course itself has been beautifully crafted from the natural landscape, utilising all of nature’s beauty to enhance the playing experience. The greens on the Asia course were replaced a year ago with Bermuda grass to further improve the golfing experience, and I must say it

was a pleasure to chip and putt on such fine greens. A feature of the course is the many strategically placed bunkers which all carried fluffy soft sand to help with your escape shot. The fairways were equally in good order, green and immaculately maintained. It must be said that indeed, every aspect of this golf club is well maintained and well managed, right from our first contact with the team in the pro shop to the bar & restaurant team serving chilled beverages on the impressive terrace overlooking the golf courses after our round. And it doesn’t stop there. Along with three championship golf courses, a luxury

Nuestro pequeño grupo de entusiastas del golf tuvo el placer de jugar en el Campo de Asia a principios de septiembre... y fue un verdadero placer.

El Campo Asia es el más antiguo de los tres, los otros dos son el Campo Europa y el Campo América. Desde los tees amarillos, este campo par 72, presenta un índice de pendiente de 139 y no es particularmente largo, con 5.412 metros, pero es estrecho en algunos lugares y presenta algunos desafíos a lo largo del camino, que requieren cierta reflexión,

cuidado y atención, para enfocarlos con cierta habilidad y estrategia si se quiere traer una buena tarjeta. El campo en sí ha sido bellamente diseñado a partir del paisaje natural, utilizando toda la belleza de la naturaleza, para mejorar la experiencia de juego. Los greens del campo de Asia fueron reemplazados hace un año por césped de las Bermudas, para mejorar aún más la experiencia del golf, y debo decir que fue un placer hacer un chip y un putt en estos greens tan finos. Una característica del campo son los muchos búnkeres estratégicamente colocados, que llevan arena suave y esponjosa para ayudar en el tiro de escape. Los fairways estaban igualmente en buen estado, verdes e inmaculadamente mantenidos.

Debe decirse que, de hecho, todos los aspectos de este club de golf están bien mantenidos y gestionados; desde nuestro primer contacto con el equipo de la tienda profesional, hasta el equipo del bar y restaurante que sirve bebidas frías en la impresionante terraza con vistas a los campos de golf después de nuestra ronda. Y esto no acaba aquí. Junto a los tres campos de golf de campeonato, un lujoso hotel de cuatro estrellas de 107 habitaciones con un Spa de Hidroterapia de última generación, cuatro restaurantes y múltiples bares completan la experiencia del complejo turístico de La Cala. Esta fue nuestra primera visita a La Cala Golf Resort y estamos deseando volver. n

Doña Julia Golf Club L

ast month, our small group of golfers visited the well known Doña Julia Golf Club in the municipality of Casares. Designed by the renowned Málaga architect Antonio García Garrido back in 2005, this magnificent 18 hole golf course is perfectly integrated into the natural landscape of the Casares Mountains, with truly spectacular views to the Mediterranean Sea and the African Coast. Surrounded by so much natural beauty, it is sometimes hard to concentrate on the golf but, if you can, the course is indeed a very enjoyable one to play, albeit 20 OCIO magazine

a technical one with so much variation from hole to hole. We particularly liked the way the first 6 holes have a gradual climb to them to bring you out on top of the world with the most incredible views of the Mediterranean. Then, hole 8 presents a par 5, handicap 2 of great beauty, and distance. At 576 metres off the yellow tees this is a very intimidating hole from the tee but, it is all downhill, and with a bit of luck and straight driving you are in with a chance of birdie, and birdie on a 576 metre par 5 is a good story to tell in the clubhouse after the your round.

The quality of the course is a credit to the management and maintenance team who clearly take great pride in their work. The greens are faultless (although I could have done with them being a little bigger as it turned out) and the fairways are lush and green. There are plenty of well kept sandy bunkers, which we know is difficult at the moment with no rakes permitted on the course and the water hazards are nothing short of picturesque.

l mes pasado, nuestro pequeño grupo de golfistas visitó el conocido Club de Golf Doña Julia en el municipio de Casares. Diseñado por el renombrado arquitecto malagueño Antonio García Garrido, en 2005, este

magnífico campo de golf de 18 hoyos está perfectamente integrado en el paisaje natural de la Sierra de Casares, con unas vistas realmente espectaculares al mar Mediterráneo y a la costa africana.

Rodeado de tanta belleza natural, a veces es difícil concentrarse en el golf; pero si se consigue, el campo es realmente muy agradable para jugar, aunque sea un campo técnico con mucha variación de un hoyo a otro. Nos gustó especialmente la forma en que suben los primeros 6 hoyos. Gradual, para llevarte a la cima del planeta con las más increíbles vistas del

Mediterráneo. Luego, el hoyo 8 presenta un par 5, hándicap 2 de gran belleza y distancia. A 576 metros de los tees amarillos este es un hoyo muy intimidante desde el tee pero, es todo cuesta abajo, y con un poco de suerte y conducción recta, te encuentras con posibilidades de birdie, y el birdie en un par 5 de 576 metros es una buena historia para contar en la casa club después de tu ronda.

La calidad del campo es un reconocimiento a la dirección y al equipo de mantenimiento, que claramente se enorgullecen de su trabajo. Los greens son impecables (aunque me hubiera gustado que fueran un poco más grandes) y las calles son exuberantes y verdes.

Hay muchos búnkeres de arena bien mantenidos, lo que sabemos que es difícil en este momento, ya que no se permiten rastrillos en el campo y los obstáculos de agua son realmente pintorescos.

La encantadora Casa Club está abierta a los jugadores y visitantes por igual, ofreciendo un ambiente relajante para disfrutar de un refrigerio, aperitivos o tal vez una comida en el restaurante. En la tienda para profesionales, bien surtida, encontrará una amplia gama de ropa y equipamiento para damas y caballeros para todas sus necesidades de golf, junto con un equipo multilingüe que le asistirá y aconsejará en todos los aspectos del golf en el Club de Golf Doña Julia. n

tress and anxiety are common experiences for most people. We all know stress has a knock on effect and left untreated will often cause more severe health issues.

In many cases it is about acknowledging the onset of stress and dealing with it.

There are many things we can do to help deal with stress and even prevent it. Let’s have a look at a popular few.

Exercise: Exercise is one of the most important things you can do to combat stress. It might seem contradictory, but putting physical stress on your body through exercise can relieve mental stress. The benefits are strongest when you exercise regularly. It is a medical fact that people who exercise regularly are less likely to experience anxiety than those who don’t exercise at all. Try to find an exercise routine or activity you enjoy, such as walking, running, golf, dancing or yoga.

Write it down: One way to handle stress is to write things down. While recording what you’re stressed about is one approach, another is jotting down what you’re grateful for. Gratitude may help relieve stress and anxiety by focusing your thoughts on what’s positive in your life.

Learn to say no: Not all stressors are within your control, but some are. Take control over the parts of your life that you

can change and are causing you stress.

One way to do this is to say “no” more often.

Intimacy: Cuddling, kissing, hugging and sex can all help relieve stress.

Positive physical contact can help release oxytocin and lower cortisol.

This can help lower blood pressure and heart rate, both of which are physical symptoms of stress.

Listen to soothing music: Listening to music can have a very relaxing effect on the body. Slow-paced instrumental music can induce the relaxation response by helping lower blood pressure and heart rate as well as stress hormones. Nature sounds can also be very calming. This is why they’re often incorporated into relaxation and meditation music.

Although stress and anxiety may arise in your life do not let it take control. Take positive actions to combat stress and your mind and body will thank you for it. n

However, staying stylish in autumn is not as easy as it is in summer and, showing off your style while still staying warm can be a challenge. After all, it’s tough to see your outfit when it’s covered up by a big jacket. What’s a stylish girl to do? Don’t worry, you don’t have to forgo looking good to keep from getting cold. There are many ways to dress so you can stay warm and still show off your fashion sense, and none of them require breaking the bank. Here are some tips for braving the cold and still looking hot: * Invest in a classic and stylish coat. Your coat is the most important part of your autumn and winter wardrobe, so invest in a fabulous one that will last you many years. Remember, if you are u

Even better, they’re so cheap that there’s no reason not to buy a bunch in different colours. In recent years I’ve been in love with Pashmina scarves. They’re really warm, come in so many colours,

and go with almost everything. They’re perfect paired with a basic coat to add a pop of bright colour to an otherwise dull outfit. * Invest in a pair of cute autumn boots.

One of my favourite things about autumn fashion is that I have an excuse to buy cute boots. Boots are so versatile in autumn, and if you get the right pair, you’ll have the perfect footwear for almost any occasion. A great pair of boots is a must have if you want to be stylish during the colder months of the year. * Remember that being warm is still the most important thing.

FIAT PANDA Cross Hybrid

T

he Fiat Panda has turned the ripe old age of 40. But even with their heritage and history, they can’t escape the shift towards electrification in the motoring world, and the Fiat Panda Cross Hybrid is the latest entry into this exciting new world of motoring.

When creating the Cross Hybrid, Fiat hasn’t meddled too much with the basic Panda formula that has been so successful for them over the years. In fact, to say that they have simply taken the Fiat Panda model and simply fitted it with a hybrid system would not be too far from 40 OCIO magazine

the truth...and that is a good thing.

Under the bonnet is a 1.0-litre threecylinder turbo petrol engine that has been paired with a 12-volt integrated belt starter generator, which is able to harvest and store in a small battery, the energy lost during braking and deceleration. That stored energy then allows the engine to shut down when coasting (providing the power steering with electricity, for example) and can then provide a small amount of extra shove when accelerating.

Such is the technology of this new hybrid system that it’s almost impossible to

detect, it is just there doing it’s job. In fact the only indication that the system is even in operation is a light that illuminates on the rev counter when you lift off the throttle.

The official data from Fiat claims that the Panda Hybrid will return over 50mpg, with CO2 emissions of 126g/km. That’s up on the 42.8mpg you’ll get from the Panda’s other engine option, a 1.2-litre unit.

As for the rest of the Panda’s driving experience, well, it’s a car that has remained true to it’s roots and heritage.

Esa energía almacenada permite que el motor se apague cuando se desplaza (proporcionando electricidad a la dirección asistida, por ejemplo) y pueda proporcionar una pequeña cantidad de

empuje adicional al acelerar. Tal es la tecnología de este nuevo sistema híbrido, que es casi imposible de detectar, simplemente está ahí haciendo su trabajo. De hecho, la única indicación de que el sistema está en funcionamiento, es una luz que se ilumina en el cuentarrevoluciones cuando se levanta el acelerador.

The Panda is light, at just over 1,000kg, which makes it not only a perfect town and city car but the way it is easy to manoeuvre makes it a fabulous car for the small mountain villages here in Southern Spain. Plus, the Panda’s raised ride height and softly sprung set-up make it a comfortable car over rough surfaces which again is ideal on the tracks and country roads we tackle on a daily basis with life in Spain. On the open road it is not the fastest of cars but then it isn’t trying to be. With only a small but efficient engine, there has to be some give somewhere, and the top speed is where it needs to give. Having said that, the Panda will happily cruise the Spanish motorways at regulation speeds.

Barbacoa al estilo argentino

f where there’s smoke there’s fire, then in Argentina, where there’s fire, there’s an ‘Asado’. An ‘Asado’ in Argentina isn’t just a barbecue, or a cultural tradition, it’s a main source of national pride.

Before we get into it, let’s just run through a little vocabulary. Asado means the ‘BBQ event’ but also it is a cut of meat (short and spare ribs). The Asador refers to the “grill master,” who is also known as the “parrillero” and al asador or asador criollo is a sub-style of barbecuing vertically on an iron cross over an open flame. The Parrilla (pronounced pa-ree-sha) is the grill or the cooking device. So, with that covered, let me explain a little about this world famous cuisine.

The Parrilla: The parrilla is the grandmaster of all grilling devices, an extraordinary tool that captures the primal essence of cooking meat with just salt and fire. Parrillas in Argentina come in all shapes and sizes, but the most common two-part design consists of a main grill with a brasero (firebox) on the side. The brasero is loaded with firewood and/or charcoal. Once the fire is ablaze and glowing embers fall to the bottom, the hot coals are transferred and spread out under the main grilling area. Above, the grate grooves form a V-shape, and tilt on a slight decline guiding the excess juices to an attached trough, which causes any unwanted grease to drip downward, preventing flare-ups. Many parrillas are equipped with a crank and chains that adjust the height, essential for properly regulating temperature.

The meat that is cooked on the Parrilla is rarely marinated, just sprinkled with coarse salt either right before, or once it hits the grill. When larger pieces of meat are prepared a la cruz, standing up on an iron cross, they are often doused in a salmuera, a brine of hot water, coarse salt, and herbs.

When each cut of meat reaches the optimal level of doneness, it is carved and distributed as ready. It’s not uncommon for the grill master to simply serve the cuts on 52 OCIO magazine

a communal wooden board, so each eater can grab what they want with their fingers or forks. Of course this is not common practice in a restaurant, but at a family gathering it is the only way to eat. What is very common though in Argentinian restaurants is the Parrillada. This mixed-grill platter encompasses a little bit of everything that the parrillero is cooking. You would need a very healthy appetite to finish one of these on your own, so it maybe best if it is ordered u

i donde hay humo hay fuego, entonces en Argentina, donde hay fuego, hay un “Asado”. Un “Asado” en Argentina no es sólo una barbacoa, o una tradición cultural, es una de las principales fuentes de orgullo nacional. Antes de entrar en materia, vamos a estudiar un poco de vocabulario.

Asado significa el “ acontecimiento de la barbacoa” pero también es un corte de carne (costillas cortas y de repuesto).

Asador se refiere al “maestro de la parrilla”, que también es conocido como el “parrillero” y el asador criollo es un sub-estilo de asar verticalmente en una cruz de hierro sobre una llama abierta.

La parrilla es el dispositivo de cocción.

Así que, con esto cubierto, déjenme explicarles un poco sobre esta cocina mundialmente famosa.

La Parrilla: La parrilla es el gran maestro de todos los dispositivos de asado, una herramienta extraordinaria que captura la esencia primordial de cocinar la carne con sólo sal y fuego. Las parrillas en Argentina vienen en todas las formas y tamaños, pero el diseño más común, de dos partes, consiste en una parrilla principal con un brasero a un lado. El

brasero se carga con leña y/o carbón. Una vez que el fuego se enciende y las brasas caen al fondo, los carbones calientes se transfieren y se extienden bajo la parrilla principal. Arriba, las ranuras de la parrilla forman una V, y se inclinan en un ligero descenso guiando el exceso de jugos a una canaleta adjunta, lo que hace que cualquier grasa indeseada gotee hacia abajo, evitando las llamaradas. Muchas parrillas están equipadas con una manivela y cadenas que ajustan la altura, esencial para regular adecuadamente la temperatura.

La carne que se cocina en la parrilla rara vez se adoba, sólo se rocía con sal gruesa justo antes, o una vez que llega a la parrilla. Cuando se preparan trozos de carne más grandes “a la cruz” (de pie sobre una cruz de hierro), a menudo se bañan en una salmuera, una salmuera de

Cuando cada corte de carne alcanza el nivel óptimo de cocción, es cortado y repartido ya listo. No es raro que el maestro de la parrilla simplemente sirva los cortes en una tabla de madera compartida, para que cada comensal pueda tomar lo que quiera con sus dedos o tenedores.

Por supuesto, esto no es algo habitual en un restaurante, pero en una reunión familiar es la costumbre. Lo que es muy común en los restaurantes argentinos

es la Parrillada. Este plato de parrillada mixta abarca un poco de todo lo que el parrillero está cocinando. Necesitarías un apetito muy saludable para terminar uno de estos por tu cuenta, así que tal vez sea mejor si se ordena como un plato para compartir y se coloca en el centro de la mesa, de la misma manera que se haría en las ciudades y pueblos de Argentina. Los argentinos son bien conocidos por sus preferencias en el consumo de carne y es un chiste muy usado en Argentina que si quieres vegetales con tu carne, entonces mejor que traigas los tuyos. Por supuesto, una patata cocida siempre está disponible y, curiosamente, a menudo se envuelve en papel de aluminio y se echa en las brasas para cocinarla.

Una última observación sobre la salsa Chimichurri. Es un concepto erróneo, comúnmente generalizado, el que los argentinos ahogan todo con salsa chimichurri. Cuando pides un bistec en Buenos Aires, el camarero te traerá un plato de bistec desnudo, no escondido trás una salsa o condimentos. Dicho esto, el chimichurri se coloca generalmente en la mesa para un uso comunal moderado y para mojar el pan. No hay una sola forma de hacer chimichurri, así que el sabor será muy diferente, pero cuando encuentre uno que le guste, no hay nada mejor para acompañar a su sabroso n bistec recién asado.

The Argentinians are well known for their meat eating preferences and it is a well used joke in Argentina that if you want vegetables with your meat, then you had better bring your own. Of course a jacket potato is always on hand and interestingly, would often be wrapped in tin foil and chucked into the burning coals to cook.

A final word about Chimichurri sauce. It’s a common misconception that Argentines smother everything with chimichurri sauce.

When you order a steak in Buenos Aires, the waiter will bring you a plate of naked steak, it doesn’t hide behind a sauce or condiments. That said, chimichurri is generally placed on the table for moderate communal use and bread sopping. There’s no one way to make chimichurri so the taste will differ greatly but, when you find one you like, there is nothing better to accompany n your tasty, freshly grilled steak.

s we all know, Olive oil is an integral part of Spanish cuisine and Spanish life. With a tradition that spans over 3,000 years, there is so much to talk about and a few fun facts that just might surprise you. So let’s see what we know about Spanish olive oil.

Naturally, no Spanish kitchen would be complete without a tall bottle of olive oil.

Be it to add flavour to your breakfast toast, dress a salad at lunch or include in your recipes for dinnertime. So many towns and villages throughout Spain produce their local variety and the country is simply full of speciality growers and producers of this liquid gold. Although Spain makes more olive oil than anyone else, Greece actually consumes more annually. On average, Spanish annual consumption of olive oil is about 10 litres per person, and Greece manages to consume the equivalent of 11 litres per person.

Did you know... Spanish olive oil started with the Phoenicians.

The Phoenicians, tribes from modern day Syria or Lebanon, are said to have introduced the olive tree to Spain in 1050 B.C., meaning they have almost a 3,000year connection to the country. However, it was the Romans that began the spread of olive groves throughout Spain and the Moors that introduced more advanced cultivation and production techniques.

Did you know... the Ancients referred to olive oil as ‘liquid gold’.

Olive oil was particularly important in Ancient Greece and throughout the Roman Empire. In fact, Andalusia’s climate made it a huge part of the production of oil for the Roman Empire. Greeks and Romans cherished their famous ‘liquid gold’ and used incredible amounts of it for cooking. However, they also used olive oil as fuel and it is said that they even used it to light the earliest Olympic torch.

Did you know... there are over a hundred varieties of Spanish olives.

There is an amazing variety when it comes to olives in Spain. However, not every variety of olive is consistently used to make oil. Of the 100+ varieties found in Spain, about 24 are regularly used in the oil making process, each one with a distinct and delicious flavour.

Did you know... Olive trees have an average lifespan of between 300-600 years.

Olive trees live an incredibly long time, and Spain is home to some of the oldest olive trees in the world. The Museo del Arión in Tarragona, is a museum that displays trees that are over 1,000 years old and the oldest of them all is said to be over 2,000 years old.
