What to taste in Armenia?

Summer Khashlama

K

hashlama is one of the favorite dishes of the Armenian cuisine. It is prepared in different ways having lamb as a main ingredient. We suggest summer Khashlama with vegetables.

Ingredients 2 lbs. lean lamb, cut into 1 inch cubes 1 large onion, coarsely chopped 2 fresh tomatoes, diced ½ large yellow pepper, coarsely chopped ½ large red pepper, coarsely chopped ½ cup flat leaf parsley (stems removed; leaves left whole) ½ cup crushed tomato ¼ cup tomato paste 2 cups lamb broth (water, beef or chicken broth may be substituted) 1 tsp. marjoram, or to taste Salt, black pepper and paprika, as needed Onions and garlic may be added to the recipe.

Preparation Place lamb cubes in a large pot, cover with water, and bring to a boil. Reduce heat to medium. Remove scum as it rises to the surface. Cook, uncovered, until meat starts to become tender, about 1 hour. Remove meat from pot with a slotted spoon; place in a casserole dish. Season meat with marjoram, salt, pepper, and paprika. Toss to coat. Strain lamb broth and pour into a liquid measuring cup. Add water, if necessary, to make 2 cups. Add the tomatoes, peppers and parsley to the meat in the casserole dish. Gently toss. Mix the tomato puree, tomato paste and lamb broth. Pour liquid over the meat and vegetables, gently mixing together. Bake, covered with aluminum foil, in a moderate, preheated (350°F) oven for 1 hour. Remove the foil and continue baking for additional 30 minutes, or until meat is very tender. Legends and myths of Armenia

“Watermelon’’ in English “Dzmerook’’ in Armenian

O

riginated in Ancient Egypt, watermelon is famous and loved berry fruit around the world. In Armenia, the watermelon was even used as a medicine, as Armenian food culture is deeply embedded with medical beliefs and prescriptions for health. There is a folk story emphasizing the health-giving properties of the watermelon, a claimed cleanser for the entire body, with an explanation of the Armenian name for watermelon – dzmerook. The servants of the medieval Armenian King Gagik noticed a mysterious horned snake by the palace. The snake was trying to shed its horns. The king’s servants cut the snakes horns and, thus, saved it. In gratitude, the next day the snake brought a seed and left it by the palace. Soon a big, strange fruit grew from the seed. The servants decided to test the unknown fruit and offered it to an old man who was on the verge of death. A miracle occurred. The old man not only recovered, but he also felt better than ever before. The king

36 TOURINFO MAGAZINE

was next to try the natural medicine. He also felt fortified. Since then, Armenians call the gift of the grateful snake, the chmerook which means “not-die” (ch=not). With the passage of time, the letter “ch” became “dz”, thus we have the word dzmerook for watermelon.

We, Armenians really love watermelon and even have a summer festival held every year in the capital city Yerevan. This year the festival will take place near Swan Lake on 15 July. This will be a great fun for you, don’t miss!
