Art as tastemaker Art has long inspired our creative work at Palais des Thés. We believe that the gourmet experience is complete only when it is guided by the symphony of shapes and materials. That is why we partnered with a leading designer to create le Set du Tea Sommelier. But is the reverse also true? Can art be translated into taste? That was our challenge in composing the two exclusive blends ordered by the Louvre! Thés du Louvre: tuıo exceptional flavoured blends At the Louvre’s request, Palais des Thés composed two exclusive flavoured blends that capture the magic of the museum. Balancing freshness with dessert notes, the two blends evoke the sumptuous palace and the poetic Tuileries Garden, respectively.
AN EXCEP TIONAL COLLABOR ATION Hoping to create a tea in its image, the Louvre chose to work with Palais des Thés. The collaboration was based on a set of shared values, including French excellence and creativity, and on the mission of bringing the very best to a wide audience, whether in arts and culture or fine food. Our company has already had the privilege of partnering with a number of leading cultural institutions in recent years, and the Louvre is the latest addition to that distinguished list. In 2012, we created a flavoured green tea blend for the Musée Guimet. In 2014, we composed Thé Hokusai for the Grand Palais’s retrospective of prints by the renowned Japanese master. Then, in 2017, the “Gauguin: Artist as Alchemist” exhibit gave us the opportunity to create another exclusive blend, this time inspired by the artist’s Tahitian period. Creating a tea blend that evokes the magic of the world’s most visited museum was a challenge we accepted with enthusiasm.

Thés du Louvre We started to develop both blends with frequent input from the Louvre teams. An endless round of tests and tastings at the Tea School began as we sought the right combinations and the most suitable harmonies between tea and aromatic ingredients. Mathias Minet, creator of flavoured blends for Palais des Thés for more than 20 years, took charge of the process. He chose bergamot notes to brighten the black tea, along with notes of blackberry to add depth and mellowness. For the second composition, Mathias opted for a complex balance of apple, plum and quince notes that develop a sweet alchemy with the green

Le Set du Tea Sommelier was also designed to promote a multi-sensory approach to tasting. Made from delicate “Blanc de Chine” porcelain from Dehua, it boasts a fine, pure white enamel that shows the true colour of the tea. Moreover, the rounded shape of the bowl prevents shadows from falling on the tea liquor. Plus, the lid can be turned over to hold the steeped leaves. As a result, the tea can be appreciated in all its three states: dry leaves to see and smell in the tea canister, steeped leaves, and liquor. As you can see, this truly is the perfect accessory: an all-in-one set for the ideal, balanced, and delicious tasting experience.

He opened his own design office in Paris and has worked for all the major furniture companies, as well as hotels and leading brands. Indonesia RIVIÈRE DE JADE DU MONT HALIMUN For the first time, we present a Grand Cru from Indonesia. This Oolong is harvested on Mount Halimun in West Java. Its delicately crumpled leaves are reminiscent of Taiwan’s famed Bao Zhong teas. Its fresh, grassy, and f loral notes mingle with deeper gourmet and fruity undertones with a subtly astringent texture. This rare and unique Grand Cru is the perfect introduction to Indonesian teas. Indonesia PERLES DE JADE DU MONT HALIMUN These “jade pearls” are also harvested on Mount Halimun in Indonesia. Matcha Shiro is produced in Japan, in the Shizuoka prefecture, from the Saemidori tea cultivar best known for producing shade-grown teas, which are made by covering the tea plants with straw or stretched canvas three weeks before harvest. Deprived of light, the tea leaves develop fewer tannins, making for a richly creamy texture. This superb Japanese tea is used during the traditional Cha No Yu ceremony. Dry leaf Appearance: leaves finely ground into powder. Colour: vivid green. Scents: very grassy. Whisked tea Colour: jade green foam. Texture: very creamy. Taste: umami. Flavours: intense grassy notes, nutty undertones. Aromatic profile and length in the mouth: the strong grassy and fruity flavour notes are conveyed by a particularly rich, creamy texture. In New York, I met the bar directors of both the NoMad Bar, who mixed tea syrup with liqueurs, and The Plaza New York, which serves a cocktail called “Le Paradis de la Vanille” based on Rooibos des Vahinés. I conducted my own experiments based on their tips and techniques and the result was these six original recipes. What makes tea an interesting ingredient for cocktails? It’s a unique ingredient that brings new f lavours to complement the aromatic notes of the spirits. The result is a novel taste experience. Why did you choose Grand Jasmin Chun Feng for the
