SafeTea™: definition This certification has been developed and implemented by our Maison. It simply incorporates several key measures:

Japan - Ichibancha 2018 In Japan, the Ichibancha (first flush) season is prized for the quality of its green teas. We are offering three Grands Crus from Kagoshima. Situated on the island of Kyushu, Kagoshima is Japan's second biggest tea-producing prefecture. Its mild climate allows it to produce excellent Shincha, a Sencha green tea harvested in the spring, each year.
KABUSE SHINCHA Kabuse is a shade-grown tea. Several days prior to harvest, the tea plants are covered with large tarpaulins to partially shade them from the light. This step changes the composition of the tea leaves, increasing their concentration of theanine and giving rise to exceptionally mild green teas, without even the slightest bitterness. This high-quality Kabuse Shincha is characterised by its powerful umami flavour. This very mild tea presents fresh, vegetal, buttery and marine-iodine notes, giving way to hints of menthol, all supported by a delicate, powdery sensation in the mouth. REF. 3065A18.

KAGOSHIMA ASANOKA SHINCHA Asanoka is a recent cultivar that is still quite rare in Japan. This delicious green tea is pleasantly mild with a lovely umami flavour and grassy, fruity and iodine notes that develop over a vanilla and floral backdrop. REF. 3067A18.

KAGOSHIMA YUTAKA-MIDORI SHINCHA This flavourful Shincha comes from a little-known cultivar called Yutaka-Midori, which is typical to southern Kagoshima. ANXI TIE GUAN YIN "IRON GODDESS OF MERCY"
This Grand Cru was harvested 2,400 metres above sea level on one of Vietnam's tallest mountains, situated to the west of the Hà Giang province and close to the Chinese border. Produced by the famous ancient "Shan" tea plants, this particularly gourmand batch offers a surprising hint of bitterness and a velvety texture supporting fruity, vanilla, and honey notes with hints of maple syrup and cocoa. The tea ends on woody notes with a lingering finish.
Harvested and produced twice a year, Anxi Tie Guan Yin undergoes light oxidation (10%), with one hour of gentle fermentation. The final firing is brief and its only purpose is to dry the tea leaves. The result is a beautiful Oolong with a rich floral bouquet and strong grassy notes followed by hints of butter and vanilla, making it full-bodied with a lingering finish. Although Satemwa "Dark Tea" cannot be called a "Pu Erh", as the name is specific to China, it is equally delicious. Balanced and harmonious, this dark tea reveals long-lasting notes of liquorice, cocoa and undergrowth, taking the drinker on a memorable journey through the tastes of Africa.

In Japan, most teas are produced from one dominant cultivar called Yabukita. This year, we are pleased to present Grands Crus from other cultivars, such as this delicious Shincha produced from a rare cultivar called Meiryoku. A must-try! Dry leaf Appearance: attractive leaves rolled into needles. Colour: dark green. Scents: grassy, buttery, brioche. Infusion Aromas: strong marine (white fish, whelk), iodine (oyster) and grassy notes with fruity hints. Liquor Colour: pale green. Texture: thick, fading with a slightly powdery sensation towards the end. Flavour: umami. Good neıus for smoked teas! The recent tightening of European standards has led to a near shortage of smoked teas in Europe. Palais des Thés has therefore called on its expertise in creating fragrant new blends to develop recipes which recreate the aromatic profile of these smoked teas. Smoked teas are traditionally single-estate teas whose smoky notes develop as a result of their production process: the leaves used in these black teas are lightly grilled on a hot iron plate before being spread out on racks over a fire made from pine tree roots. To counteract the shortage, Palais des Thés is offering smoked tea lovers two fragrant new blends that reproduce the aromatic profile of these distinctive teas.

Bring tea to the table!
Encounter ıuith Gilles Quillot, Ambassador for cooking ıuith tea Chef Gilles Quillot, who has worked for the French Ambassy in London for 20 years, regularly creates tea-based recipes, such as cod fillet poached in a bouillon of Thé des Lords. And while the flavour of bergamot echoes the British tradition, the chef's work is motivated by passion. Early in his career, Gilles Quillot reached the finals of a contest for best dessert of the year, with a recipe based on Earl Grey. Like Proust’s madeleines, bergamot would permeate his creative universe. Nowadays he uses it fresh and in season, preserving it in salt for use in his recipes throughout the year. For his cod fillet, Gilles Quillot cooks it in a Thé des Lords bouillon, over a very low heat or in the oven. PREPARING THE BOUILLON: Peel the vegetables and cut into thin strips • Heat
4 cod fillets, approx. 100 g each • 1 large
