Behind The Scenes Didier Agueh Executive Host and Artistic Director

Alberto Sanna Bar, Lounge and ICHI Sushi Manager

I love London in the summer time; it’s always an occasion for me to visit various music festivals, listen to my favourite artists or discover new trends and promising talents. I would recommend the iTunes Festival, Wireless, Lovebox or Meltdown for the big line ups and headline bands. For a more intimate and eclectic musical experience, however, check out Spitalfields or Bushstock if you have more specialist musical tastes.

Tentatively, tentatively, summer is on its way – Londoners are bulk-buying BBQ packs and enjoying the sunshine in our many parks. In light of the arrival of everyone’s favourite season, I am focusing this month on ‘bringing back the Mojito’ and have made it my Cocktail of the Month – why not try a few different styles as well as the straight-up classic – with raspberry, strawberry or even spicy ginger?

We like to appeal to the mainstream and a wide audience, but equally I’m happy to think outside the box on occasion and provide more quirky entertainment such as our successful Cabaret Bingo with the wacky Ida Barr or the talented drag act “La Voix”, who is currently competing in the semi-finals of “Britain’s Got Talent”.

I am really proud to announce that our bar supervisor Claudia is now a member of the United Kingdom Bartending Guild and the Primo Bar team as a whole are currently competing in a number of prestigious cocktail competitions across the UK and Italy.

I’m also proud to have two of our regular singers, Alex Buchanan and Moni Tivoni selected to join Jessie J’s team in The Voice UK! Alongside New York, London is also the city famed for its musicals, which is why I have created a once-a-month evening with West End artists performing songs from your favourite musicals. We all hope this year will be a hot and sunny summer. And of course after a long and warm day in the office, cool down with our 2-for-1 cocktail promotion Overtime, every week day between 5-8 pm.

2

We have a new cocktail list on its way - if you fancy a sneak preview, why not ask one of our friendly bar staff to recommend something from the new menu, we also welcome your suggestions for naming these new concoctions - if we like your idea, we’ll keep it on the menu! Finally, for those many afternoon tea fans amongst you, Reda Sallam our Assistant Bar Manager will be introducing a new Afternoon Tea at Primo Bar, inspired by his time at the Grosvenor House Hotel on Park Lane which I guarantee will wow you. Don’t forget, if you love Primo Bar or have any feedback, please leave it on Tripadvisor or Time Out!

Cocktail Of The Month Alberto’s Choice... The Mojito Ingredients: ¾ of a lime 2 spoons of brown sugar 8 mint leaves Rum Crushed ice

How to prepare: Muddle the lime, sugar and mint leaves together, add the rum then stir together with crushed ice filled to the top. Top up with a touch of soda water. The origin of the first Moijto is hotly contested between the Americans and a small bar in Havana “The Bodeguita de Medio”. Richard Drake, an associate of Sir Francis Drake, imported mint, aguardiente (spirits), cane sugar and lime to America and is sometimes credited with introducing the Mint Julep cocktail – originally a mixture concocted to remedy colds and flu that he invented whilst drunk. In the 1800s the aguardiente was replaced by Bacardi rum. Others say the Bodeguita de Medio created the first Moijto, made with cane sugar planted on the island. It is here that Hemingway first tasted it “The best unofficial national drink, it wasn’t just a drink but a symbol of national pride”.

Interview with ROBIN BANERJEE Could you please explain us a little bit of your background? What are your influences? I am influenced by Jazz and Soul Music

from the 60’s, 70’s and 80’s – by far my favourite guitarist is George Benson. As you mentioned you used to be Amy Winehouse’s guitar player. How did you meet and how long did you work together? I first met Amy Winehouse at The RossOn-Wye Festival in 2004 when she performedwithherbandafterourGroup‘Jazz Jamaica All-Stars’. I was a member of Amy’s live band from August 2006 to August 2007. She was an extremely inspiring person and sang with an incredible amount of soul, we loved sharing the stage with her.

What is your most memorablE moment with her? Without a doubt I’d pick Glastonbury 2007 when we performed in front of 100,000 people at the Pyramid Stage, together, and then on the same evening to 40,000 people at The Jazz/World Stage. The crowd there is immense; you can’t describe the feeling to play to that audience. You will perform an Amy Winehouse Tribute at Primo on Saturday 20 July. Can you tell us more about the show? We are performing with vocalist Dina Ariaza Posada, who is an emerging talent from Seville in Spain. She sings Amy’s songs beautifully like ‘Back to Black’, Love Is a Losing Game’ and ‘Stronger than Me’. Dina on vocals, Salvador on bass and I will perform all of Amy’s repertoire, as well as the songs she covered such as Monkeyman’ and ‘Valerie’. You will also perform an acoustic set beforehand on Monday 17 June. Who will you perform with?

Yes I am performing with my good friend and amazingly talented singer Jennifer Moore. Jennifer is a Jazz/Soul/Pop and Latin vocalist and together we shall perform a wide range of material from Nina Simone to Van Morrison as well as more modern artists such as Bruno Mars and Adele.

Robin will be on the Primo Bar stage with Jennifer Moore from 8pm on Monday 17 June and Saturday 20 July from 9pm. 17

E

njoy Chef Walter’s spring menu until the end of June when he will introduce new summer seasonal flavours. Delicious British Asparagus features on the current, fresh menu - as do many of your favourite classics. New dishes to inspire you include the duck and asparagus salad, lobster risotto and rump of lamb with a Moroccan tagine.

18

brasseriejoel.co.uk

Here is Walter’s recipe for Asparagus Macaroni Gratin to try at home.

Method of Cooking

Macaroni Asparagus Gratin Ingredients for 4 people: 250g of seasonal British asparagus 100g baby tomatoes, chopped (San Marzano if possible) 10g unsalted butter 0.25l. of cooking cream Handful of fresh basil leaves

1 bay leaf Salt and pepper 20g Gruyère cheese 200g Penne pasta Chervil Nutmeg

- Trim the heads of the asparagus off at 3 cm from the tip then dice the remaining stalks. Cook in a litre of salted boiling water for about 5 minutes. Lift the asparagus out using a slotted spoon and set aside. Bring the remaining asparagus water to the boil again and cook the penne pasta until al dente (about 10 minutes, or 1 minute less than the recommended pack times). Drain in a colander and return to the saucepan. In a separate saucepan, reduce the cream by half by simmering it slowly, add the chopped basil, thyme, bay leaf, salt and pepper, shaving of nutmeg Remove the bay leaf from the reduced cream then add mixture and herbs to the penne. Stir in the asparagus (save a couple of tips for the garnish) and the baby tomatoes. - Put the whole mix into an oven dish and sprinkle with grated gruyere cheese. - Bake in preheated oven at 180° for 15 minutes then serve with a garnish of chopped asparagus and chervil.

Have you tried Brasserie Joël’s Sunday Lunch? Only £12.50* per person and a choice between four mains to share.

*A discretionary service charge of 12.5% will be added to your bill. All prices are inclusive of VAT at the current rate.

Stevie Wonder

Amy Winehouse

Josephine Desmond

The Stevie Wonder Experience band was conceived by renowned saxophonist Renato D’Aiello and fronted by Roberto Angrisani, a quintet with strong roots in gospel, jazz and pop. The idea was to explore the interaction between Renato’s jazz solos on top melodies and harmonies of Stevie Wonder’s compositions which offer an inspiring territory for improvisation. Roberto is director of the “Urban Voices” choir which sang at the closing ceremony of the Olympic Games and at the recent BAFTA awards.

Dina & the Holy Band Trio will make you believe that Amy Winehouse is in the house. Dina not only looks like Amy, but her characterisation will send shivers of joy down your spine. The trio brings their repertoire of soul classics taken from Amy’s back catalogue and celebrate her life.

Josephine Desmond has been wowing audiences throughout the UK and Europe whilst fronting various bands and acoustic duos. Expect a high mezzo soprano voice from a supremely talented jazz vocalist.
