Sculpture Museum Cancun’s submarine art installation takes the otherworldly feeling of being under the sea and, well, goes deep. English sculptor Jason deCaires Taylor created over 500 life-sized and monumental sculptures out of materials designed to foster coral growth, in effect collaborating with the ocean itself to create haunting works of submerged art, visible by scuba, snorkel or glass-bottom boat.

The name everyone knows is Jacques Cousteau, but in the beginning it was the Trois Mousqemers. The collection goes further into underwater history, with an early 18th-century diving suit and sunken relics discovered offshore that date back to Ancient Greece.

Snuba combines the ease of snorkeling with the depth of scuba diving, and the waters around St. Lucia provide a prime spot for viewing a rich variety of marine life. Spend some time visiting sea horses and parrot fish in crystal-clear Caribbean waters. Undersea terrain runs from white sand to volcanic peaks as well as shipwrecks intentionally placed to form artificial reefs.
French Polynesia takes pride in its UNESCO Biosphere Reserve, which encompasses no less than seven low-lying coral islands and dozens of distinct habitats, from barrier reefs to seagrass beds to brackish lagoons. Travelers can see creatures here that exist nowhere else. Divers experience walls of silvertip sharks circling the steep passes, while schools of fish too numerous to count swim over coral heads and massive manta rays sweep in from the open sea. Even above the surface, the atolls and their inhabitants are shaped by the sea.

He was born in Puerto Rico and for most of his youth his passion was volleyball. His skill at the game earned him an athletic scholarship to Johnson & Wales University in Miami, Florida. While there, fixing his own meals, he finally caught the cooking bug and found he had a knack for preparing food. Not long after discovering his buried talent, he decided to give it his full attention and make it his life’s work. He graduated with a bachelor’s degree in Culinary Arts. have contented himself with a highpaying job at an established restaurant. But Mendin decided to take some serious risks. In 2001, freshly out of school, he helped launch two Nobu restaurants, one in Miami, the other in London. Still, he hungered to better himself. In 2003, he left Miami for Spain, where he worked and studied with two of his idols — internationally renowned chefs Jesus Ramiro in Valladolid, and Juan Pablo Felipe in Madrid. H
ow does a fun-loving college boy with a passion for volleyball become one of the most highly respected entrepreneurs and culinary artistes in the world? Don’t ask modest, unassuming Chef Jose Mendin. He doesn’t understand it himself. After being nominated five straight years for James Beard’s coveted Best Chef Southeast Award, he was named by People as one of the sexiest chefs in America — and replied simply, via Facebook, “Don’t know about that, but thanks!” Mendin not only excels as a chef, but also as a savvy businessman. He started Sushisamba in Miami and Mercadito in Chicago — two highly regarded restaurants known for creative dishes that combine American, Asian and Latin flavors. In 2009, he got together with two friends, Sergio Navarro and Andreas Schreiner (who also happen to be brilliant chefs), and founded the Pubbelly Restaurant Group. Pubbelly won the StarChefs Rising Star Restaurateur Award in 2016. Not bad for a guy who started out as a carefree jock with no interest in cooking. Despite being born into a family with an appreciation for fine food (his greatgrandmother was a noted cooking teacher), Mendin never expected to have a career in the culinary arts. He didn’t hear the call to his life’s mission until relatively late.

A SWEET SIP OF THE CARIBBEAN
IT’S EASY TO PICTURE JOSE MENDIN, like most excellent chefs, dancing a virtual ballet over a gas stove, carefully mixing ingredients into a pan, stirring them and leaving them to simmer for the perfect amount of time. But not every recipe Mendin makes is complicated and exacting. Some are so simple, just about anyone can do them. Here’s a great-but-easy one, a cocktail mixed in tribute to Puerto Rican politician Anibal Acevedo Vilá, who was once caught in a nightclub drinking out of a red plastic cup. When asked what was in it, he replied, “This is my secret punch.” Chef Mendin designed his own sweet take on Acevedo’s refreshment. ANIBAL SECRET PUNCH • .75 oz guanabana pulp (El Sembrador brand) • .75 oz pomegranate syrup • 1 oz lemon juice • 1 oz tangerine juice • 2 oz New Amsterdam vodka Add all ingredients to a shaker, fill with ice and shake. Strain into a red Solo cup over fresh ice and garnish with an orange wheel and lime wheel.

honed prowess, Mendin returned to Miami and, in partnership with Jordi Valles, opened Mosaico, a restaurant specializing in Spanish cuisine. As busy as he is, Mendin still finds time to give back to the culinary community. He often takes part in cooking seminars. Like other James Beard Award winners and nominees, Mendin has taught cooking to travelers on Windstar Cruises, the official cruise line of the James Beard Foundation. Most recently he showcased his skills on Windstar’s Windward Islands Surf & Sunsets voyage to San Juan, sharing some of his closely guarded culinary secrets with guests. What kind of food does Mendin specialize in? That’s a difficult question. Even the most well-chosen words fall short of describing taste sensations. And, as with any truly exceptional art, Mendin’s tends to defy all attempts at being confined to a specific genre. But generally speaking, Pubbelly is known for mixing European, Asian and Puerto Rican styles into something totally unique: think southern-fried softshell crab with kimchi and shiso ranch; mofongo made with pork belly in shoju broth; or butter crab sushi rolls — kanikama wrapped in soy paper and served with ponzu and warm clarified butter. “I trained in Europe,” Mendin says. “So, I worked in London and all over Spain and I’m Puerto Rican.” All these influences are apparent in the dishes he prepares. “Every single piece or recipe that you create has to be very flavorful,” he says. A HOSPITABLE “HELLO” A warm welkam (“welcome”) is always on offer and you may be surprised at how easy it is to converse in their local tongue. Bislama, or pidgin English, emerged in the 19th century during the “Blackbirding” era when thousands of Ni-Vanuatu worked under duress on plantations in Australia and Fiji. The easiest way for them to communicate with each other and the plantation owners was to create a blend of English words and grammatical structures from the Pacific, resulting in Bislama. Vanuatu may be the most language-dense country in the world, with over 100 indigenous languages spoken across the archipelago, but one thing is for certain: There are no barriers to communicating in the islands. Locals are always willing to offer up some Bislama translations to help you along the way.
A BISLAMA PHRASEBOOK The word “Bislama” comes from “beach-la-mar,” an anglicized version of the French term bêche de mer, which itself comes from Portuguese bicho do mar, or “sea cucumber.” In the 19th century, local Vanuatu laborers would gather and dry sea cucumbers at the same time they were collecting sandalwood for European colonists; another early name for the language was Sandalwood English. A note on pronunciation: Bislama is generally spelled phonetically for English-speakers, so that welkam is spoken as “wel-kam.” However, an “I” is short and there is no silent “E,” so that i gud by yu is pronounced “ee good by you” and mi no save is pronounced “me no savvy.” Since Vanuatu has more than 100 distinct native languages, Bislama is a second language for many islanders, and is spoken with a large range of accents. Many Bislama-speakers will not distinguish between “D” and “T” sounds, between “B” and “P” sounds or between “G” and “K” sounds; in some areas, “F” is pronounced like a “V” or a “B,” and a “J” like a “CH.”

FIRE AND FRUIT One of the most effective ways to immerse yourself in a culture is to break bread with the locals. In Vanuatu, though, it’s all about the laplap. This national dish is one that is often prepared and shared communally in villages across the archipelago and consists of fruit, vegetables and meat wrapped in banana leaves and cooked in a shallow coal-filled fire pit. Layer upon layer of a special paste made up of grated breadfruit, bananas, taro or yam root is applied to the banana leaf with island cabbage and a drizzle of coconut milk. Meats are added and the entire offering is wrapped together in big banana leaves and placed on the hot coals for an hour. cooking them together and sitting in a circle to enjoy their bounty. During ceremonial occasions, the entire village will prepare the food together and eat the tropical delicacy as a collective feast. Those unable to visit a local village can head to Port Vila markets for some traditional laplap whipped up with love by one of the market ladies. SIPPING WISDOM For a true insight into Vanuatu kastom (“custom”), you can’t go past the truth serum that is kava. As the local saying goes, “Alcohol makes you stupid, but kava makes you wise.” This ceremonial drink is made from the root of the kava plant (Piper methysticum), a relative of the pepper plant. With Vanuatu being the ancestral home of kava, be aware that the drink
and its respective effects can be more potent than anywhere else in the world. The ground or grated root is strained and squeezed through coconut fiber and diluted with clean water before being served in a coconut shell. Often served as a “welkam” drink and used as a key tool for celebrations, there are two distinct strains of kava to be aware of. Ignoble strains can make you feel dizzy, nauseous and result in a two-day kava “hangover,” while the noble strains can improve your mood, keep your head clear, heighten your hearing and vision, relax your body and calm your nervous system. It is metabolized much easier … meaning there are no lasting effects on your body either. The advice here is simple. Ask which strain you are being served before you indulge. An acquired taste, kava’s flavor is reminiscent of dirt, grass and spice and will numb your tongue or make it tingle. To make the experience more palatable, however, suck on a slice of fruit afterwards. If you are going to embark in the “kastom,” do so responsibly by avoiding mixing kava with alcohol, not eating 3 to 4 hours before drinking kava and not snacking between drinks as it may make you feel nauseous. If you do get hit with the stomach rumbles, warm milk or tea generally counteracts the effects. In the village, kava is consumed in the nakamal (the central meeting hut) and is only offered to men, but there are many kava bars throughout Vanuatu now where women are also welcome. Look out for a red or green light by the door indicating their location. E END OF THE ROAD. In its place, a coniferous timberland and snowcapped mountain range cradle the coastal city of Sitka, shielding its bay from the formidable Gulf of Alaska. Just off the shores, a dormant volcano and thousands of rocky, green islets interrupt the incoming current. The view from land is a calm Pacific Ocean stretching away towards Japan. Most people bring a camera. Thrill-seekers bring a surfboard.
Surfing in Alaska sounds like an oxymoron if there ever was one. And yet one look at a map of Sitka’s coastline of fjords, islands and river mouths reveals the highest potential for surf in the Last Frontier. Pair this with a rainforest-like climate, and the water temperatures (45 to 60 degrees Fahrenheit) are comparable to Northern California. THE LAND DUKE FORGOT

In 1993, Surfer Magazine sent a team to Sitka to get a taste of the virtually unknown Alaskan surf scene. Dave Parmenter’s cover story heralded Sitka as “The Land Duke Forgot,” alluding to Duke Kahanamoku’s (aka the Big Kahuna) traditional surfer culture. Indeed, the harsh conditions, wildlife and unpredictable wave breaks made for a humorous contrast to Southern California or Hawaii, yet the untamed beauty of the Alaskan wilderness left an impression on the seasoned surfer: “So what was it like to surf Alaska? How different was it than, say, Oregon or Northern California? All I can say is that it wasn’t a matter of how the water felt or what wax to bring, or even how your lungs burned running up the point, sucking in volcanic ash from a nearby eruption. I felt something so much bigger than mere … surfing. They call Alaska the “Last Frontier,” but it’s more than that. ON THE ROCKS
Situated on Baranof Island, just east of the main town, is one of the only surf spots accessible by road in the Alexander Archipelago. Sandy Beach, Sitka, is geographically the most navigable surf spot to catch a break. A bit of a misnomer, the glassy swells that reach the shore are attributed to the beach’s very rocky terrain. Wait for the hour-long window before or after high tide rolls in. On a good day, you’ll face 4 to 8–feet waves and an offshore breeze. Slipping on a 5 to 7– millimeter wetsuit, boots and gloves is highly recommended by the resident “Sandies” who also frequent the only wave in town. An adorable exception to this rule are the seal and otter locals, well-equipped with their own insulation system, who will be catching some waves of their own. TIDAL ERUPTION
The Alaskan Coastline extends for 6,640 miles; nearly all of it is accessible only by plane or boat. And some of its best waves are near the ashy shores of Kruzof Island, home to the volcanic Mt. Edgecumbe. The dormant volcano’s last eruption occurred around 2220 B.C.E. and left volcanic sediment to blend with recently formed coral to form lava rock, not unlike the treacherous Pipe reef below the Banzai Pipeline in Oahu. When a wave moves quickly from deep to shallow waters, a perfect barrel is formed.
To the south of Kruzof Island is where experienced surfers will reap the most out of the obsidian terrain. Shoals Reef and Shoals Point are two surfing spots where the waves break on grizzled lava rock to create powerful (and potentially treacherous) conditions that will satisfy the most daring of thrill-seekers. In Kalinin Bay, on the northwest corner of Kruzof Island, the mossy forest eventually opens up into sedge grass that fades into Sea Lion’s Cove, a two-mile white-sand beach. In prime conditions, 15- to 20-foot mauling waves invite expert surfers to chance the rocky shoreline to the north. Southwestern swells running at 8 to 12 feet are a more manageable feat on the south side. MIDNIGHT SUN
Alaska is often referred to as “Land of the Midnight Sun,” where summer days seem to blend into one another with as little as one to three hours of darkness in between. Even a southern city such as Sitka enjoys up to 17 hours of daylight in June. Of course, the flipside of this is that sunlight is sparse during the winter and can severely limit
surfing opportunities. Expert surfers combat this with the reflective nature of a blanket of snow and a full moon to illuminate the surface of the water. Though soundly unreasonable, night surfing is possible. The only challenge that daylight presents during a Sitka summer is the feeling of regret not being able to take advantage of it all after the dark winter months. CHASING WAVES
The temperamental nature of Sitka’s currents, along with limited access to the coastline, turn the quest for the perfect wave into a game of luck. Unlike most surf scenes, you’re bound to catch a lot more waves with a little local advice rather than going it alone. Engaging with Sitka’s close-knit surfing community will provide you with a pool of local experience, resources, finances and gear that can’t be found on a website or map. Even still, waves are never guaranteed, but the chase to find the perfect ride is a euphoric experience in itself. Whether you get waves or not, two things are always promised: You’ll enjoy the view and you’ll come home with a story.

OTTING SHARK that has been buried in a hole in the ground for months, a bowl of rams’ testicles, whale kebabs, puffin meat and a whole sheep’s head with tongue and eyeballs may sound daunting, but these unfamiliar and, yes, occasionally perturbing Icelandic menu items are only one side of Iceland’s historic culinary culture. LONG WINTERS, SPRING FASTS
Iceland was first settled in the seventh century by Irish monks seeking monastic solitude in its isolated landscape. Two centuries later, the monks abandoned the landmass after it was discovered by Viking settlers from Sweden and Norway, along with others fleeing political strife in ninth-century Scandinavia. These
homesteaders set up an economy based on subsistence farming but had to contend with harsh weather, sparse soil and a three-month growing season. The food produced during that short summer had to last through nine months of winter, which meant a dependence on being able to preserve meats and cheeses for long periods of time. These methods of food preservation became a characteristic influence on Icelandic cuisine and remain much used today. The Christianization (or re-Christianization) of Iceland was in full force by the year 1000, and that also had its impact on the food culture. The introduction of fasting for Lent increased the emphasis on fish as a source of protein, and the importance of preserving fish as a dietary staple. The so-called “Little

Ice Age” of the 14th century brought a cooler climate to the Northern Hemisphere, which meant Icelanders could no longer produce barley or other grains. The change in temperature also led to the traditional Nordic longhouses being replaced by Icelandic turf houses, which were easier to heat and offered new cooking methods. Longhouses usually featured a long fire in the center that warmed the whole space, and around it holes were dug in the ground to create earth ovens for baking bread and cooking. The turf houses that gradually replaced them featured multiple smaller rooms and a separate kitchen with a raised stone hearth over which cast-iron cooking pots could be hung, a new cooking method that also contributed an influence to Icelandic food culture.

Preserving in salt was the most prevalent method of making food supplies last through the winter in the Scandinavian region during the 14th century, but a shortage of firewood caused by the Little Ice Age made salt production difficult as it relied on fire intensive activities such as boiling sea water or burning seaweed. The alternative method of preserving meat and fish in fermented whey, which significantly altered its flavor, grew in popularity. One of the best-known fermented Icelandic delicacies is a putrescent shark meat called hákarl. Greenland shark is poisonous when eaten fresh, but after being buried underground to ferment for 6 to 12 weeks it becomes edible. Often served WINDSTARCRUISES.COM | 61

in cubes on cocktail sticks, hákarl has a pungent stench that puts many off, but its flavor is milder than its odor. It’s also customary to wash hákarl down with Iceland’s national drink, brennivín, a local caraway-flavored schnapps similar to Sweden’s aquavit. Brennivín has the ominous nickname “Black Death” because of the skull design that used to feature on its famous black bottle, which was later replaced with a much less sinister map of Iceland. Iceland is also well known for the quality and succulence of its lamb dishes. The original ninthcentury Scandinavian settlers imported sheep to the island and the breed has developed in isolation since then, unaffected by modern selective breeding practices. The Icelandic sheep is often referred to as
the “settlement breed” or “Viking breed,” and roams freely outdoors from spring to autumn, feeding on a wholly natural diet of grass, moss, berries, angelica and seaweed. It is not fed grain or given any growth hormones and is extremely tender with a mild flavor. SCANDINAVIAN SNACKING
Iceland also has its own version of the hot dog called pylsa. It’s made from a blend of lamb, beef and pork and has a characteristic flavor. These sausages are typically served with crunchy deep fried onions, raw onions, ketchup, sweet mustard and creamy remoulade sauce. Hardafiskur, which means “hard fish,” is a kind of dried fish jerky that has been a part of the Icelandic

diet for centuries and is commonly made from cod, haddock or wolffish. The fish is dried in the cold North Atlantic air until it becomes cured in a process similar to maturing cheese. Hardafiskur is eaten as is or smothered in salted butter, and is considered a healthy alternative to chips or popcorn. Skyr is a traditional Icelandic dairy product that has the consistency of yogurt but is technically a cheese. It’s made by separating skim milk from cream, which is then pasteurized and cultures from previous batches of
skyr are added. After it has thickened, it is filtered and flavors such as vanilla, berries, coconut or licorice can be added. Skyr was brought to Iceland from Norway originally but the dairy tradition has since vanished from everywhere in Scandinavia except Iceland. Ancient skyr from over a thousand years ago can even be seen at the National Museum of Iceland. More recently, skyr has taken on political connotations as it has been hurled at parliament buildings in Iceland as a form of anti-government protest. WINDSTARCRUISES.COM | 63

PALATE CHALLENGES
Iceland’s reputation for unusual cuisine doesn’t come from nowhere, however, and there are many traditional menu items that might not appeal to more delicate palates. Svið is a whole sheep’s head that has been singed to remove the fur, then cleaned and boiled. It is served with tongue, eyeball and ears intact and ready to eat, and accompanied by scoops of mashed potato and mashed turnip. Iceland is home to the largest puffin colony in the world, accommodating around 10 million of the colorful birds during the summer months. The largest breeding grounds are the Westman Islands, around
10 kilometers south of the mainland and home to around 20 percent of the world’s Atlantic puffin population. The famous birds may look too cute to eat, but their abundance (and the practical necessity of using all available natural resources to survive) has made the puffin a part of the Icelandic diet for centuries. The meat of the puffin is usually boiled or smoked and has a texture similar to pastrami. BAKERS’ TREATS
Despite the scarcity of grain production, Iceland still has its own bread traditions with a strong Danish influence. Laufabrauð, or “leaf bread,” are

Flatkaka is a round rye flatbread believed to date back to the original settlement. It was originally baked on hot stones or directly on the fire’s embers, which lent to its characteristic spotted pattern. Today,
it is also cooked in cast-iron frying pans. Rúgbrauð is a dark, sweet-tasting rye bread with no crust. It is traditionally baked in a pot that is first placed among the embers of a dying fire and then buried in the ground and left overnight. Flour was not always easy to come by during the long Icelandic winter, so treats such as these were considered luxuries for special occasions. If you have a chance to sample them, savor them.

HILE THE OFFICIAL language of Panama is Spanish, don’t be surprised if what you hear isn’t entirely familiar — even if your Spanish is relatively fluent. Whether it’s slang, speech habits or outside influence, Panamanian has evolved into its own way of talking. But here are a few tips to keep you in the conversation.
THE ACCENT Many Panamanians drop the “s” from the end of a word, so instead of vamos a la playa (“let’s go to the beach”) it becomes vamo.’ But sometimes, as in the case of estar, “to be,” they even drop the “s” at the front — so you might hear ’ta loco if someone calls you crazy. (“Estas loco!”) Skipping the “d” in words ending with “-ado” is pretty standard. Lado (“side”) becomes lao; pescado (“fish”) turns to pescao. Pelado literally means “peeled” but is also slang for someone bald or when someone was a baby. Over time, it became the common word for a man, in the vein of “guy,” “dude” or “fellow,” and pronounced like pela’o. 70 | WINDSTARCRUISES.COM

PANAMANIAN PIG LATIN A local form of slang reverses syllables in words. So hambre (“hunger”) becomes bre-ham, as in Tengo breham? “Are you hungry?” Is and on are reversals of sí and no. In the case of pela’o (“dude”), the -lao moves to the front of pe- so that “Qué pasó, pelao?” (“What’s up, man?”) Becomes “Qué so-pá, lao-pe?” (or even “Q Xopá” when texting.) To add to possible confusion, sopa means “soup” if the accent is on the first syllable. The diminutive suffix -cillo can even be added to make “little man,” in other words, a child.
FOREIGN INFLUENCES The United States took over the Panama Canal project from the French in 1904, and completed construction a decade later. Up until handing over control of the waterway to Panama at the end of 1999, the U.S.A. had a strong presence in Panama, especially in the Canal Zone. Panamanians took up baseball, which remains one of the country’s most popular sports, and many residents also picked up English. In some cases, those English words made their way into the local language: English with a Panamanian Spanish twist. For example, a clipsadora is a “stapler” here, but engrapadora elsewhere. Gufi is a “goofy person,” and a fren is a “friend.” Chiquishow means “public scandal,” from the word for “children” — chiquillos — and comparing such a thing to a child putting on a show, a tantrum. “Chewing gum” became chingongo, which frankly has a nicer ring to it. From the word “official” comes offi, meaning “OK.” ’Ta cool, ’ta cruel, or ’ta priti (short for “esta pretty”) can mean “great” when referring to, say, a movie.

PANAMANIAN PRONUNCIATION Panamanian Spanish is pronounced like standard Latin American Spanish. Vowels are short, there’s no silent “E” but there is a silent “H,” so that hambre is “am-bray.” A “QU” is pronounced like a “K” and a double-L is softened to a “Y” (chiquillos is “cheekee-yos”). The double-“R” is rolled (arroz), and a tilde over an “N” gives it a “Y” sound (piña is “peenya”). Unlike Castillian Spanish, an “S” or “Z” is not pronounced with a lisp: pasó is “pass-oh.”
Verbs in Spanish end in -ir, -ar, and -er. Just as English slang might make action words out of nouns — “Google” into “googling”; “adult” into “adulting” — the Panamanians have taken some nouns — English nouns — and made them into Spanish verbs. For example, they learned the word “shortcut,” but rather than taking or making a shortcut, they use sharcotear. “Trippin’ ” or “having a good time” becomes tripear. The money in Panama may look vaguely familiar. The bills they refer to officially as balboas, or in slang as dólares or palos, are dollars from the United States. And while the coins are of Panamanian design, they match the size and denomination of the U.S. dollar. So twenty-five cents is still a quarter of a balboa, and pronounced cuara. Daim barely changes from “dime.” Not so unusual, but brand names sometimes become the general term for the product. So diapers may be referred to as pamper and baby food is gerber, which, because of the h-like pronunciation of “g” before “e,” becomes something like “hair bear.” 74 | WINDSTARCRUISES.COM

Tin & Co. manufactured trash receptacles years ago and the name emblazoned on each became widely shared as “tinaco,” a label that stuck for all trash bins. From that evolved perro tinaquero, a dog one might find rooting around in the garbage, a stray dog.
your spouse, but to be “in the dog’s bed” means you’re broke in Panama: Estoy en la cama de los perros. “It could happen to anyone” is best said A cualquiera se le muere un tío: “Anyone’s uncle dies.” The understanding is that if your uncle were to suddenly die, it wouldn’t be your fault.
COMMON EXPRESSIONS Idioms are always fascinating from culture to culture. When you are surprised by something unbelievable, the first thing you may shout in English might not be “pork chop” but it is in Panama: ¡chuleta! Another exclamation you might hear is ¡Miercoles! (“Wednesday!”) Truth is, these are safe-for-public substitutes for similar sounding expletives. Something easy in English may be “a piece of cake.” But in Panama, it’s “a pineapple juice drink”: Eso es chicha de piña! (Chicha is a common term for various easily made fresh-juice drinks.) In English, being “in the doghouse” means you’re in trouble, often with
DALE (DAH-LAY) From dar, the verb “to give,” this word may seem to say “Give it!” but it shows up in some uniquely Panamanian constructions. You might hear Dale pa’alante! Dale pa’tras! In standard Spanish, that would be Dale para adelante or atrás or literally, “Give it for the front” or “for the back.” In Panama, either someone is telling you to move forward or back, perhaps in line or on a bus, or else they’re shouting dance instructions in a pop song. Dale pue’ is “OK then, go ahead,” while ¡Dale cuero! (literally “Give it leather!”) is a command to do something quickly. WHAT’S TO EAT The term “meat and potatoes” is sometimes used to describe the most basic home meal in the United States. In Panama, that would be arroz, poroto y carne or A.P.C. (pronounced “ah-pay-say”): that is, “rice, beans and meat.” From the verb raspar, which means “to scrape,” comes raspao or “shaved ice,” not to be confused with raspaito, “a scratch-off lottery ticket,” vendors of which are common along sidewalks downtown. Arroz con sombrero is rice with a fried egg on top. Seco con vaca is the popular cane liquor mixed with milk (vaca is “cow”). And at the end of the meal, you are harto when full. But just as in English, you can be harto or “fed up,” as in you can’t endure something anymore. Hopefully, all this information isn’t arroz con mango — “rice with mango” — that is, a tangled mess or difficult situation.

Visiting Morocco gives you the opportunity to explore one of the world’s oldest cultural regions through its food, market life and historical sites. Casablanca offers captivating architecture, including art deco buildings that house fascinating galleries and museums. The nation’s largest city borders the Atlantic Ocean and is also home to Hassan II Mosque, the largest in Africa. This port also serves as the launching point for tours to Marrakesh to visit the colorful and energetic souks where you can haggle with vendors for handcrafted goods or wander through the city square Jemaa el-Fnaa to become entranced by snake charmers, artists and other entertainers. I explored the Imperial City of Rabat, the capital city and home to the palace of King Mohammed VI. Windstar excursions here also visit the Mausoleum of Mohammed V and Hassan Tower. The ornate marble mausoleum is adorned with zellige tiles, arranged in colorful mosaics. This masterpiece of modern Alaouite architecture contains the tombs of one of the country’s most revered monarchs and his son, Hassan II, who was father of Morocco’s current ruler. Our tour continued at the scenic Kasbah of the Udayas medina in Rabat’s Old District. This includes a rest stop with refreshing mint tea, the national drink of Morocco.

Agadir offers a much different feel. The arid seaside city is enveloped by the Sahara Desert as it sits on the ocean. It’s a surfers’ haven, with sandy and quiet beaches. Tour options here include 4x4 rides in Paradise Valley to experience the diverse landscape, plants and neighborhoods that sit below the Atlas Mountains, a market and medina tour at the ancient village of Taroudant, or an interactive Berber cooking class. Outside the city, keep an eye open for the “flying goats.” The fruit of the argan trees lures nibbling and nimble-footed goats onto higher and higher branches until they look like they’ve landed there in the treetops. In Tangier, located just 20 miles from Spain across the Strait of Gibraltar, the gateway to Africa offers two UNESCO World Heritage sites. Together, the Old City (medina) and impressive Kasbah (citadel) enchant travelers to explore this city’s eclectic mix of European and African heritage. Try a cooking class and taste the famed Moroccan flavors of couscous and tagine chicken or lamb. I enjoyed a hearty meal cooked in the tagine clay pot, and the heaping serving perfectly blended the chicken with spices, dates, olives and onions, all enhanced by fragrant mint and lemon that wafted from the steam as it was placed piping hot on my plate.

Leaving Morocco, it was time to set sail for the Canary Islands, the set of seven main islands in the Atlantic that represent the southernmost community of Spain. The region is autonomous, though, and each island owns distinct characteristics, both culturally and geographically. A sub-tropical climate lets the Canaries enjoy warm temps all year. Lanzarote, a desert-island paradise, is the first entire island to be declared a Biosphere Reserve, a status that serves to protect and study special ecosystems. Sister islands Las Palmas, La Gomera and Gran Canaria also hold the designation. Lanzarote offers a famous wine trail because of its unique and ingenious winemaking processes. Its stark landscape resembles a moonscape thanks to ancient volcanic activity, and crescent-shaped vineyards are carved into the volcanic hillsides, utilizing the ash to retain the limited moisture in this arid environment. The volcanic minerals give the grapes a flavor that distinguishes a Lanzarote wine. Aside from sampling the wines, I rode a camel for a short jaunt in Timanfaya National Park. The park is the island’s top attraction, and its 20 square miles is covered with lava flows and dormant volcanoes. Las Palmas is a well-developed island, featuring narrow streets lined with shops and restaurants, as well as pretty park and garden areas. Outside the city, the island features its own brand of natural beauty, with the verdant laurel Los Tilos forest, easy-to-reach beaches and the inviting Volcano Route hiking trails.
Wind Surf docked in the marina close to the city center, and I easily wandered to town. Las Palmas is a convenient port stop for independent explorers. A shopping mall is located just steps from the pier, and a large open plaza is located across the marina, where you’ll find public transportation and signage for points of interest around the town. You’re also within walking distance or a quick cab ride to museums, basilicas and the Crater de Bandama, a dormant volcano that is now inhabited and used for farming. (A walk around the rim offers amazing views.) Playa de Las Canteras, a 10-minute stroll from the ship, offers a sweeping public beach and wide promenade area. I arrived in December, and was able to enjoy a swim and time basking in the sunshine. Our final stop on Wind Surf was La Gomera, a brilliant destination because of its stunning natural areas. Garajonay National Park is a UNESCO World Heritage site, and the lush cloud forest features popular hiking paths and winding roads that bring visitors to the island’s summit. Mists sweep over the peaks of the mountains, and the park’s high point is Garajonay Peak, the highest point on the island at 4,869 feet. The park is filled with rare laurel-tree forests that date to the Tertiary period, more than 2.6 million years ago. La Gomera also offers quaint seaside towns and lovely beaches and is well known for its steep ravines that cut between the volcanic hills. Residents on the island still use the silbo gomero, or Gomeran whistle, an ancient language derived so that villagers can communicate with one another across the ravines. The sounds of the whistling language can travel for more than a mile.

MORNING After fortifying yourself with Turkish coffee, prepare for a shopping experience you’ll never forget. Turkish bazaars are much more fun than a Western-style shopping mall and are full of character. Kusadasi has three: Kusadasi Bazaar, Oriental Bazaar and the Grand Bazaar. Most shops in the bazaars accept euros, U.S. dollars and credit cards if you don’t have Turkish lira. But cash is king here. Be prepared to haggle — and ready to walk away if the price isn’t right. Most sellers will accept 50 percent of their original asking price. Enjoy the game. A lot of the handbags and belts are made of quality Turkish leather crafted into fake designer items. Most of the leatherwear is like this except for the jackets, which are made of beautiful, soft leather and can be picked up for a steal. You can also pick up authentic

Turkish goodies such as glass lamps, silver and jewelry made of Turkish stones. Ceramics and Turkish plates are exquisite and inexpensive. Turkish rugs in Kusadasi tend to be expensive (and large), but if you really fall in love with them, shipping can be arranged. AFTERNOON Kusadasi happens to be only 35 minutes from one of the most renowned UNESCO World Heritage Sites in the world, Ephesus. Dating back perhaps as early as 7th century B.C., Ephesus is Turkey’s historical jewel — a Greek, Roman and Byzantine city at different points in time. Each of these civilizations left their mark on the city, making Ephesus unique and fascinating. Some highlights, in the order you’ll see them from the entrance gate, include: • THE TEMPLE OF HADRIAN — A small temple built in honor of Roman Emperor Hadrian in 145 C.E. The friezes around the top of the interior wall tell the story of the founding of Ephesus. Medusa, with her serpent hair, presides over the temples to keep out evil spirits.

KUSADASI IS A SMALL, TURKISH seaside town that has lots of local charm and one very large claim to fame: It’s 15 miles from Ephesus (or Efes in Turkish), the second-largest city of the Ancient Roman civilization. DINNER AT THE LIBRARY OF CELSUS Windstar guests visiting Kusadasi will get a once-in-a-lifetime experience of the Celsus Library after hours during an exclusive Evening in Ephesus event: a five-course, white-gloveservice dinner in the courtyard accompanied by a trio from the Aegean Chamber Orchestra. The Library’s spectacularly illuminated façade allows you to examine statues in their niches and elegant stonework of the frames as you dine under the moon and stars.
• TERRACE HOUSES — These beautiful homes of wealthy residents are being meticulously restored to give us a rare insight into life during the Roman period. Most are two-story terraces built in the 1st century and were luxurious even by modern standards — they were heated, had running water, pools and baths. Still intact, you can walk through the spacious rooms decorated with whimsical frescos and mosaics of birds, flowers, gardens, gods and mythical creatures. • THE CELSUS LIBRARY — The library once housed thousands of precious scrolls, all of which were burned during a Goth invasion of A.D. 262. Fortunately, the beautiful exterior is still here for us to admire. • THE BROTHEL — Ephesus’ brothel was typical of a Roman city. Always in the city center, these were considered a necessity as Roman soldiers were not permitted to marry. Across the Marble Road from the Celsus Library, you will find the remains of a house with a bathing pool. • THE LOWER AGORA & THE GREAT THEATER — On the left as you exit the Celsus Library, pass through an arch and find yourself at the lower agora, a marketplace. Many things are still awaiting
excavation in the lower agora, but the plaza leads to the Great Theater. If you have never seen a Roman or Greek theater, then this one is an excellent start. The easiest way to get to Ephesus is by taxi. If you can arrange to share a ride, then so much the better. Ask to be dropped at the Upper Gate so you only have a downhill walk through the ruins. Two or three hours is enough to see the highlights — more if you’re an art and history buff. EVENING Far from the humble kebab, there are wonderful authentic dishes to sample in Kusadasi. Look out for pide (bread stuffed with cheese, meat and other fillings), kofte meatballs, gozleme pastries, salads and delightful Turkish sweets. In and around the Orient Bazaar are places to eat. You can get a decent meal for 15-30TL. One excellent restaurant close to the cruise port is Erzincan (Camikebir Mahallesi, Yedi Eylul Sokak 9). With comfortable Turkish decor and beautifully presented Turkish food, it’s probably the best restaurant in town, famous for its mezze plates, kebabs, claypot-cooked meat stews, and the star of the menu, the kunefe: a Turkish dessert made of noodle-like pastry and sweet cheese served with clotted cream and rosewater or pistachio toppings. It’s simply divine. Orient Bar (Camikebir Mahallesi, Kisla Sokak 9) is a great find. This courtyard restaurant with live Turkish music is right on the beach; it’s quite magical at sunset to enjoy a Turkish beer or a raki by the sea. Enjoy your day in Kusadasi!
