Elysian Oldroyd is due on March 27.

Yeah, baby! Having a baby isn't an easy thing. There's so much to think about during the pregnancy. You start off thinking about the basics, like how the child will fit into the flat, or your car, or your work and social life. But as an ex-pat, it's more complicated than that. As an American and Italian/Czech couple living in Prague and seven months into our pregnancy, this is a special issue for us. When we found out we were pregnant, we thought we should have an issue dedicated to being an ex-pat and becoming a parent. Within a few months, we realized there is too much information to fit into a single magazine. So, we know this issue only scratches the surface. Rest assured, we'll be putting more detailed information on being pregnant in the Czech Republic on the Parenting section of our website. This month we'll tell you about two things we found extremely helpful — an essential guide to the most popular maternity hospitals in Prague plus tips from Prague's English-speaking doulas. We also included some exceptional items to add to your baby registry, with many of them made or designed in

the Czech Republic. Speaking of made in the Czech Republic, we interview Martin Pos this month. The Czech born entrepreneur started the company CYBEX. The company is famous for its premium strollers, car seats, and accessories, plus collaborations with supermodel Karolina Kurkova and designer Jeremy Scott. We also chat about their new e-Priam electric-assisted stroller, whose technology was developed right here in Prague. We also visit two restaurants. One is perfect if you're a carnivore, and one has just started catering to vegetarians. Meat Eater only has 22 seats, but owner and grill master chef Daniele Govoni has created a utopia for meat lovers in their new Old Town location. Across the river, famed hamburger restaurant Bejzment announces they've gone green. And that means that every delicious burger on their menu is now available with a vegetarian option. Be sure and follow us on Facebook and Instagram, and message us if you have any new parenting tips. See you next month!

These nests can be placed in a pram, in a crib or in the parents’ bed to help with breastfeeding. PARENTING

Help through the journey

Doulas help guide and translate the pregnancy process for expats By Nicole Ely It’s a Friday afternoon and eight women in various stages of pregnancy lounge in a circle on the floor. Some are leaning against pillows to support their baby bumps. Others are fully reclined on cushions. They snack on a bowl of fruit and drink tea as Anna Vrsnik speaks in a soft voice. The women are participating in a doula workshop at A Centrum in Karlin. For the past two hours, Vrsnik and Silvie Rosenova have been guiding the group through what they can expect in the weeks leading up to the birth of their babies. Doulas generally provide additional emotional support and advice to women as they go through pregnancy and eventual labor. They can assist in smaller tasks, like translation or prenatal counseling, and can be present during the birth and the postpartum period. In many ways, they fill in the gaps left by doctors and midwives, who are the typical primary care providers for women when they give birth in hospitals. While the doula profession has been around for almost two decades, the popularity of using doulas during a pregnancy has grown among both Czechs and expatriates in Prague in the past years. “It started as more of an alternative medicine, but nowadays it’s becoming normal and mainstream,” Rosenova says. This rise in popularity came at the same time many hospitals in the Czech Republic were changing their approach to childbirth. Pregnant women were seeking better emotional support during labor and many hospitals were facing harsh criticism for their quality of service, according to Vrsnik. So some hospitals began cooperating with doulas. “Still, I think there is a lot of confusion about what a doula is,” Vrsnik says. Vrsnik and Rosenova break it down. The main people who attend to pregnant women when they go into labor are midwives and doctors. Midwives are the most specialized in the physiological process of labor, while the doctor is usually a pathology expert who helps in cases where surgery might be needed. The relationship between the two is very different depending on the hospital. Often midwives change shifts multiple times during one delivery and are tending to four or more women in addition to taking care of administrative work. This means a woman going through labor might only see her midwife once every hour until she is ready to start pushing. 16

PRAGUE RESIDENT | JANUARY 2020

“If you do not have a partner or someone with you, you can be there alone,” Vrsnik says. Enter the doula, whose main focus is on the mother. Doulas must have at least one to two years of specialized training. In addition to helping prepare parents for their new baby, doulas in Prague also can be a trusted navigator for foreigners making their way through the Czech healthcare system for the first time. Many foreigners having babies in the Czech Republic are often surprised at the low level of English speakers in many hospitals, according to Vrsnik. There are currently six actively working Englishspeaking doulas in the city who can help expecting mothers with everything from translation to registering at a hospital. Rosenova recalls acting as a translator for a client because she was getting so frustrated with her midwife, who didn’t speak English and couldn’t understand her. “We know a lot of hospitals and what the women want, so it’s easier to have a doula rather than deal with strangers,” she says. Doulas are also handy when selecting which maternity hospital to give birth. Every hospital’s approach is different, and doulas are the best experts on where to register. “I see some foreigners register in some of the very well-known hospitals, but they don’t know what it looks like inside,”

Rosenova says. “It’s difficult to tell what the facilities are really like from the websites.” Expats can also hire postpartum doulas, who help the mother in the six weeks following the birth. “It’s very good to think about the period after labor, because sometimes we’re so focused on the labor that we forget about the postpartum,” says Rosenova, who works with many postpartum clients. Many foreigners look to these doulas to fill in for family members or friends who live too far away to provide extra support. “They call it mothering the mother,” Vrsnik says. Finding the right doula is important. The best place to look for one is online through Facebook groups or at workshops like the one at A Centrum. “Every doula is different,” Vrsnik says, “when you are choosing your doula, you must fall in love with that doula.” Since becoming a doula five years ago, Vrsnik has worked with 150 clients. Over the years, she’s had many wonderful memories. One of her recent favorites was of a mother who, after previous traumatic experiences, was able to catch her own baby in her hands during labor. “She said it was the moment of her life!” Vrsnik says, smiling. “I feel like with every labor I have a chance to make better, that baby has a better start to life.”

PARENTING

Choosing the right hospital With the help of two knowledgeable doulas, we give an overview of what to expect from Prague’s most popular maternity hospitals among expats. PODOLÍ

The Institute for the Care of Mother and Child (ÚPMD) or Podolí maternity hospital is the biggest of all the maternity hospitals in Prague and offers a lot of privacy and comfort to new and returning mothers. Women have single rooms for their delivery and are allowed two visitors at a time, so your partner and your doula can be by your side at all times. However, there are some drawbacks. This hospital has the highest rate of C-sections, so if you want to have a natural birth, this might not be the place to register. They also offer very little when it comes to privacy during the postpartum period, where most mothers are expected to stay in the hospital for 72 hours after labor. However, if you have private insurance from Canadian Medical Care or are willing to pay extra, you can get a private room after your delivery. Their staff usually doesn’t speak that much English, but they do accept doulas, so you can have one there to translate.

APOLINÁŘ

The first thing you’ll notice about the Apolinář hospital is its age. In fact, many expats call it "The Harry Potter Hospital" because of it's architecture. Built in 1875, it is one of the oldest operating hospitals in the world. It focuses on highrisk and pathological pregnancies, including women with diabetes and heart problems. So if that’s a concern of yours, this is a good place to register. Most of the doctors and staff also speak English. One thing that the hospital doesn’t specialize in is privacy. Unless you pay more for a private room, which are limited and not guaranteed since delivery is unpredictable, the birthing rooms are separated by dividers so you can often hear and sometimes see other women giving birth. Women also must share bathrooms and shower facilities, and you only get one support person. So if your partner and your doula is present, they have to switch off being with you during the delivery.

THOMAYOR

Located in Krč in southern Prague, this hospital specializes in care for premature births, typically delivered between 30 and 36 weeks. In one year, they perform 3,000 gynecological surgical procedures and deliver 2,000 babies, with more than 40 percent resorting to surgery. They also hold the title for the most baby-friendly hospital, awarded by the World Health Organization and UNICEF. While they are better with privacy than Apolinář, they also only allow for one support person during the delivery and have shared bathrooms and showers. So be ready to mingle with your newborn.

BULOVKA

Bulovka's reputation as a birth centre has dramatically increased over the past few years as they've upgraded the care offered there. Bulovka is a great place to register for a more individualized experience. Their birthing center, which is part of their hospital, focuses on low-risk pregnancies. You’re allowed two support people and you also have the option to have your own midwife, whom you can meet in advance and have present during the entire labor. In February, they will also be opening family apartments in their birthing center for the postpartum period.

MOTOL HOSPITAL

Although it didn't appear on our doula's list, Motol is a popular option with expats. Not only is the teaching hospital the largest medical facility in the Czech Republic, it's also known for it's English-speaking staff. Motol is also the only comprehensive care centre for newborns with congenital defects in the Czech Republic. Hosting around 3500 births annually, you're pretty likely to get a private room here. But, as a teaching hospital for two different university programs, you may be dealing with staff that have medical students in tow.

Canadian Medical: the private option Although the Czech Republic has a great coverage with VZP and quality medical care, if you’re pregnant and an expat, you may be looking for absolute assurances you’re getting the very best treatment. Canadian Medical offers client’s premium outpatient and inpatient care. Named several times to the annual “Czech 100 Best” rankings. They’re a popular option among expats. In fact, several of their doctors hold the Medical Advisor to the U.S. Embassy in Prague certificate. They’re also the first private clinic in the Czech Republic to have received certification from United Accreditation Committee. The provider says they're also very selective with their staff. Qualifications in the field, a professional approach as well as knowledge of foreign languages is a necessity. Canadian Medical’s doctors, nurses and administrative staff members speak fluent English. Many also speak German, French and Russian.

So what else do you get that you don’t normally get with other insurance? Canadian Medical says superior service which would not be possible with public healthcare in addition to peace of mind. They offer two programs to expecting mothers, Materna Care I and Materna Care II. Both programs also include things like a selected obstetrician, partner attendance at birth, 24-hour emergency telephone service, and contain a free first appointment with their pediatrician for patient’s newborn baby. They also offer packages which directly follow up maternity programs for a mother and her baby. Canadian Medical works in tandem with the maternity hospital in Podolí, which is actually a public healthcare hospital. Canadian Medical chose this partnership due to Podolí’s specialization in gynecology, obstetrics and neonatology. Aside from childbirth, patients can also trust in Canadian Medical for their healthcare needs.

Since January 2018, Canadian Medical began to concentrate on outpatient surgeries at their Walter Building facility. These types of surgeries allow for the patient to spend post-surgery recovery at her home with loved ones, therefore speeding up the overall recovery and return to a normal life. Canadian Medical also specializes in general surgery, plastic surgery, pediatric surgery, orthopedics, gynecology, urology, ENT, angiology and vascular surgery." JANUARY 2020 | PRAGUE RESIDENT

Prague is a very child-friendly city if you know the right places. There’s museums, kid’s corners, crafts, festivals and so much more. These are our picks for a great baby’s day out on the town any day of the week. 9AM - BREAKFAST

Avant Garde

Who said you can't take kids to a nice restaurant. Avant Garde may be upscale, but it's also family-friendly with a spacious kid's corner and live entertainment for kids. Great for breakfast any day of the week (as well as lunch and dinner), but mom should definitely take note of the Sunday Brunch Buffet that runs until 3pm, and the fact that kids under five eat for free. Perk for the parents, unlimited wine is also part of the Sunday buffet. Avant Garde Evropská 2690/17 160 00 www.avantgarderestaurant.cz

10:30AM- WORK TIME

Baby Office

You’ve had a good breakfast and a stylish new haircut. Now it’s time to get some work done. Baby Office is a company dedicated to helping parents maintain a good work life balance. It started in 2013 as a coworking center with a mini-kindergarten, but has expanded to include babysitting in companies, mobile play corners and fun family events. There’s no better place to play with other children under adult supervision while Mommy or Daddy gets those emails sent, files invoices and does other important grown-up stuff. Baby Office Pod Višňovkou 1662/25, Praha 4 www.babyoffice.cz

Plus you could always use some work on those motor skills, am I right? So get into those different colors and create something you’ll be proud to put up on the refrigerator. There are also options for exercise without children, but where’s the fun in that?

After all that exercise, you and Mommy are famished. Head over to trendy Food Lab to grab a bite and enjoy the supervised kid’s corner. PROFILE

MARTIN POS Founder and Chairman of CYBEX and Executive Director of Goodbaby International

By Nicole Ely

Czech entrepreneur and founder of CYBEX, international designer of car seats, baby carriers, kids furniture and strollers, on creating a brand beloved by parents, celebrities and supermodels. You're the child of immigrants. Could you give us a little background about yourself? We came to Austria when I was ten years old and it wasn‘t easy at all. The way people look at immigrants these days, that is the way people were looking at us back then. We didn’t speak the language, and it was even worse at school. I was the kid from the East, the scum. Which in the end was a good thing – it gave me the drive to succeed, to become independent of nothing and no one, and to pursue my goals and visions. What inspired you to go into your field? I was working for a company that produced juvenile and sports products. I started off as a 20

PRAGUE RESIDENT | JANUARY 2020

service technician and gradually worked my way up to a travelling salesman position. At that time I was approached by Concord, a German car seat producer, who offered me a position as their Director of Marketing and Distribution. I was 23, and it was an offer that couldn’t be declined. It turned out the company was in desolate state but I managed to lead it out and back into the spotlight with a brand new distribution network, newly open market in Japan and 400 percent growth in turnover. I can’t talk about inspiration, I was simply drawn into the field by chance. How did you come up with the idea for CYBEX? I was working within the industry and as a father myself, every day I’d see car seats that were overly complicated, heavy, difficult to operate and simply not fitting the lifestyle of a stylish modern parent. Since my position was not allowing me to go further and make a change, I decided to be that change myself. I wanted to create car seats that would be safe, but also easy to operate and suitable in a nice car. All parents care about the well-being and safety of their children, but in the end it’s the parents who stand at the center. They are the ones who install the car seats, push and fold the strollers, and those were the people we wanted to help.

What were some of the challenges you faced when starting CYBEX? We wanted to surpass our competitors in all the important fields–safety, innovation and implementation of new technologies, and combine all that with sleek design. We started off in 2005 with a small team and have rapidly grown in size, gradually moved to multiple markets and time zones. Our business has been met with many challenges, but when you put your mind to it, you can deal with any challenge, no matter how big or small. CYBEX is a good balance between safety and style. Could you talk about how you achieved this balance in the company? Every parent wants a stroller that is 100 percent reliable when it comes down to functionality and safety. But why shouldn’t a stroller also be stylish? For modern parents, a stroller also doubles as an accessory. It’s like a woman’s purse that holds the most precious treasure. We decided to combine all these aspects and implement them into the core of our brand, which aims to provide above-average safety and quality coupled with distinctive design and functionality. We want to make the safest products available, that would also be visually appealing and intuitive. So

there you go, safety, functionality and design all wrapped up in elegance and style. What inspired CYBEX‘s collaboration with designer Jeremy Scott? We were introduced via a mutual friend who worked for Adidas. The brand had a long history of collaboration with Jeremy Scott and I immediately liked his personality and pop artist approach. Since then we’ve released two collections that combine fashion and design, as well as uncompromising functionality and safety. I like Jeremy‘s style of communication. He’s not afraid of irony or dark humour, and all of these motives can be spotted within his work for CYBEX, which is simply fantastic. How did the development of the e-stoller known as the e-Priam come about? I love the combination of design and technology and I get excited when I see engineers coming up with innovative technology and looking to pair it with design. We wanted to have an e-stroller in our portfolio and our engineers had been working on it for a while without success, and then we coincidentally met these two engineers from Prague, who had the technology and were looking for a platform. I had the brand and the infrastructure and I knew we could give it a platform and our iconic design. So we started the collaboration. While you‘re Czech, CYBEX is considered a German company. Could you explain why Germany was the best place for your business? CYBEX is a global company, not a German one. We have bases in Germany, Shanghai, Boston... I don’t like to differentiate between nationalities or

Supermodel Karolina Kurkova with the Cloud Z i-Size from her collection.

countries of origin. In fact, I like to do the opposite – to connect different cultures and abilities of people from all corners of the world, with all kinds of backgrounds. And you can see that within our company. Our products are designed in the Czech Republic, engineered in Germany to be produced in our facilities in China. And I do believe this is the best way to lead a successful business. I don’t judge anyone by their passport, I want to see their abilities. As it’s been almost six years since CYBEX merged with Goodbaby International. What are the biggest changes that have occurred at CYBEX during this time? Teaming up with Goodbaby Internaitonal gave us access to the greatest factories in the industry, as well as the latest technology and production capacity. We wanted our company to grow fast and lacked a vertical supply chain, which we have accessed thanks to the fusion. Goodbaby also has the biggest distribution web in China due to which we have expanded the distribution of CYBEX products massively. Basically overnight we gained access to the most dynamic market in the world. And that’s been very exciting ever since.

all around the world, but through innovation and implementation of the latest technology, we want to get even better at that. We also feel strongly about environmental standards and our goal is to produce our products in eco-friendly environment and use new techniques to meet the latest eco standards. One of our latest deeds in that regard is our collection with super talented Czech supermodel and a good friend of mine, Karolina Kurkova, where we used certified recycled fibers. We want to keep our finger on the pulse at all times. We want to make ourselves available to every parent out there. The future is in innovation and within our industry, we will be the first ones to get there. No more uphill struggles: The CYBEX ePriam the latest "must have" for parents. The technology for the product was developed here in Prague.

What are your hopes for the future when it comes to CYBEX?

Martin Pos with supermodel Karolina Kurkova at the launch of the CYBEX by Karolina Kurkova Collection event in Shanghai.

At this moment we employ over 13,000 people, our turnover is over one billion dollars, but this still is just the beginning of the journey. It’s important for me to set no limits. We focus on constant development, expecially when it comes down to child safety. We’re proud our car seats regularly stand on top ranks of independent safety tests, but we want to push the current safety standards and go even further. Our car seats are already protecting millions of children JANUARY 2020 | PRAGUE RESIDENT

PRAGUE PIG

Řeporyje vs. Russia

In a month of grim Czech news, a Prague suburb’s absurd “war” with the Kremlin provided some light relief By Samuel Beckwith, PraguePig.com There are months when the “real” news is so bleak, you’re grateful for a bit of frivolity. That’s how it was in December, when the mass-shooting at the Fakultní nemocnice Ostrava university hospital was just one of the grim stories grabbing the headlines in the run-up to Christmas. Six days earlier, on December 4, 13 young children were among the 18 people injured when two buses collided in Prague 4-Chodov. The capital also saw two near-fatal stabbings over the same period. On December 19, a 45-yearold woman reportedly stabbed a man in the chest in the Můstek metro station vestibule at the corner of Vodičkova street and Wenceslas Square. And on December 5, a 22-year-old man was arrested following a stabbing in the Atrium Flora shopping mall in Prague 3-Žižkov. (In a curious case of misreporting, the Novinky.cz website initially described the victim of the Atrium Flora attack as a “dark-skinned foreigner”. Later reports referred to him only as a “Czech national” and made no mention of his skin color.)

Saved by Slavia

Sometimes, of course, even shocking stories have their lighter moments. On the night of December 10, a malware attack crippled computer systems at the hospital in Benešov, Central Bohemia, forcing staff to cancel operations and move some patients to other facilities. As well as threatening lives, the cyberattack would also have prevented hospital employees receiving their pre-Christmas pay but for an unlikely savior: soccer. By luck, two managers were out of the country watching Slavia Praha play in Dortmund, Germany, at the time of the attack, and their notebooks, containing vital payroll information, remained uninfected. As of December 19, the hospital’s X-ray machine, CT scanner and MRI scanner were working again but IT experts were still working to bring other departments back online.

The tabloid mayor

One man with a long track record in the frothier side of the news is Pavel Novotný. Not to be confused with the ‘90s footballer or gay porn star of the same name, Novotný is now mayor of PragueŘeporyje, a sleepy suburb (population 4,693) on the western edge of Prague 5. Prior to entering local politics, with the center-right Civic Democrat Party (ODS), he used his family connections--his father is TV entertainer Petr Novotný--to become perhaps the country’s most notorious tabloid journalist, editing the now-defunct Spy magazine then setting up the equally scurrilous eXtra.cz website. Brash and provocative, Novotný is a divisive

Petr Novotný figure but he’s a skillful player of the media game, often genuinely funny, and certainly not a man to be underestimated. But perhaps even he couldn’t have imagined the almighty row he’d kick off when he proposed erecting a memorial to General Andrey Vlasov’s anti-Communist Russian Liberation Army (ROA) in Řeporyje. Regarded as traitors in their homeland, the Vlasovtsy collaborated with the Nazis before switching sides and fighting alongside the Czechs, against the Germans, during 1945’s Prague Uprising.

All-out war

Novotný was sharply criticized by the Russian ambassador to Prague over the memorial, and was then invited to appear on state-owned TV station Russia-1 to defend his position. Mocked as a “drunk” and a “drug-user”, the mayor gave as he good as he got, reminding viewers at one point of the Soviet massacre of Poles in Katyn in 1940. In a subsequent Russian TV interview, with the Zvezda channel, Novotný went even further, warning the Kremlin that if he wins his “war” with Russia, he will hang Russian Foreign Minister Sergey Lavrov, release all Russian political prisoners, and return Crimea to Ukraine.

Behind the self-publicity and clownish posturing, there’s a serious point, of course. Novotný’s proposal deliberately draws parallels between the ROA and the Soviet Red Army, who also collaborated with the Nazis before switching sides, and whose own memorials -- particularly a statue of Marshal Ivan Konev in Dejvice -- are increasingly controversial in Prague.

Show of love

There was also a hint of self-publicity to the good news story of the month: reports that Jaromír Jágr is dating retired Slovak tennis star Daniela Hantuchová. According to the Expres.cz website, the 47-year-old ice hockey legend accompanied Hantuchová to an event at Prague 5-Smíchov’s Botel Admiral, held to mark the anniversary of marketing agency VDN Promo. Perhaps PraguePig.com is being cynical but is it more than just a coincidence that VDN Promo is organizing major public appearances by Jágr, in Prague and Bratislava, in June? (Tickets on sale now.)

Meat Eater

Award-winning grillmaster Daniele Govoni's new restaurant is the new destination for meat lovers By Nicole Ely At the time of this interview, the employees of Meat Eater Steak & Wine were busy getting ready for opening. The staff were still in the process of training. The menu was being finetuned. The restaurant’s last final touches were being installed. “Rome wasn’t built in a day is the motto,” says David Cerny, the man working behind the scenes. He had been spending 12-hour days at the new restaurant making sure every detail is just right. Meat Eater is hoping to become a capital for Prague’s carnivores. Located in Old Town, this small but elegant establishment serves high-quality meat and wine to patrons looking for a fine dining, meat-filled experience. The concept comes from the mind of European barbecue master and food expert Daniele Govoni. “Our customers’ experience needs to be unique,” Govoni says. “We study the temperature and timing to be sure that every client will have a new sensation with each bite.” Govoni is internationally known for his barbecue skills. In October he participated in the Steak Cookoff Word Championship in Texas, and has earned the title of Grand Champion for the Czech Republic in 2015 and Reserve Grand Champion in 2019. He has also served as a judge for the Kansas City Barbecue Society. Although Govoni comes from a family with a long cooking tradition, he actually started his career as an architect. Originally from Bologna, the Italian journeyed to the Czech Republic years ago and decided to pursue his passion for barbecue instead. He taught himself to grill and eventually his talents were noticed. The idea for a place like Meat Eater first came to Govoni more than two years ago. Located on the narrow Vejvodova street, the steakhouse is a quiet spot just around the corner from the bustle of Old Town. Thanks

to Govoni’s connections, they are able to provide some of the finest and rarest meats you can find in the Czech Republic. While they do serve one vegetarian dish, the focus is of course on the beef. And the choice is excellent. They offer cuts of a variety of breeds, and even have wagyu from the United States, Australia and Japan. Their wine selection is also top-notch with mostly red Italian wines, perfect to pair with a juicy steak. Govoni employs two chefs with previous experience in Michelin restaurants to carry out the menu. Using ceramic grills, the steaks are cooked to pink perfection as they don’t allow for overcooking. Each steak also comes with a small dollop of mashed potatoes. If patrons decide to forgo a steak, the menu features a good selection of starters and a few non-steak entrees.

You can try their buttery foie gras with pistachios and apples. Their beef tartare shouldn’t be missed with hand cut, not ground, meat from the Italian Marchigiana breed. The Meat Eater pie with beef ragu, demi-glace and vegetables was also a standout. Govoni, Cerny, the chefs and everyone else work extremely efficiently despite the restaurant’s small size. At about 70 square meters, including the kitchen, every nook and cranny is utilized without making the space feel cramped. A window into the kitchen allows diners to get a glimpse of the culinary artistry while still enjoying a calm, intimate meal. Although located in the tourist quarter, Govoni would like to build a good following among locals. The dining room sits 22 people total, and so reservations are recommended and can only be made up to 14 hours in advance. This will help make sure that

expats and Czechs who live in Prague still get the opportunity to eat there. Meat Eater has the potential to become a destination steakhouse for Prague’s vibrant food scene, and Govoni’s ambitions don’t stop there. After they get the Czech location running smoothly, he plans to open several restaurants in several major European cities, including Monte Carlo, London and Brussels. Until then, Govoni and the crew are focusing on giving the meat lovers of Prague something tender and delicious to sink their teeth into. Looking back on the opening of Meat Eater, he feels like he’s leaving a dream. “At night I think about every moment of seeing the dream come true.” Meat Eater Vejvodova 8, Prague 1 meateater.cz

We don't much care for vegetables. Fruits are okay. But avocado, that's just different. Avocado Bistro has been a popular destination for a while now at popups and festivals appearing around Prague. So, it makes sense that they're finally moving to a permanent home. These guys are passionate about avocados, and maybe that's why they've developed such a big following with vegetarians and health food lovers.

There's a new sibling to Sisters Bistro on Spalena Street, which opened at the start of December. Like the other location (on Douhla), Sisters is all about the chlebíčky – in modern form. The opened faced sandwiches are always fresh and make for a quick quality meal.

Bejzment goes green

Vegetarians Get a Taste of the ‘Nasty’ By Nicole Ely If you were wandering down Lesnicka, you could pass by without noticing Bejzment. At first glance, the nondescript burger joint looks very similar to a lot of the restaurants you see in Prague 5. Inside, the brick interior resembles a college bar you would stumble upon in the United States with license plates, American flags and Jack Daniels posters adorning the walls. Specializing in gourmet burgers, Bejzment is a destination for many meat eaters. Waitresses shuffle through tables wearing black t-shirts decaled with In Beef We Trust. But now, vegetarians have a reason to partake. Since late November, the restaurant has been offering their customers the option to substitute any menu item for a vegetarian alternative. Why? “Because I’m crazy enough to do it,” says owner Zed Střížek. While many Prague restaurants are embracing the vegetarian trend by adding a few non-meat items to their repertoire, none are offering their entire menu. At Bejzment, patrons can order a veggie version of anything, from their burgers to their chicken wings to their hotdogs. Střížek is self-professed a meat lover to his core. The husky burger master sports sleeves of tattoos that blend burger imagery with the works of Salvador Dali and the famous photograph of Rockefeller Center construction workers. He opened Bejzment in 2010 when he noticed a lack of craft burgers on Prague’s food scene, and then he founded Burgerfest in 2012, which quickly grew to be Europe’s largest burger and barbecue festival. Once Střížek saw the growth in demand for vegetarian options at food festivals like Burgerfest, he realized he could offer something more than just the typical soups and salads. If vegetarians had more than just a few starters and one entree, they would come back to try new things. To him, going vegetarian made good business sense. “These days everyone wants to be cool and green,” he says. “So I decided to do everything vegetarian. But not vegan. Vegans are a pain in the ass.” The trick with veggie burgers is getting the texture and taste of the meat substitute just right. To do this, Střížek and his team create all their products in-house as opposed to ordering premade patties. Their recipe consists of around 14 ingredients, including chickpeas, beetroot, yeast

and much more. No chemicals are added. “It’s also about getting the veggie stuff to taste good,” he says. Fortunately, Střížek has a fan of vegetarian food in his daughter, who often taste tests his new recipes. “She’s my guinea pig,” he says. Whenever Střížek is experimenting with new vegetarian recipes, he often finds himself looking at American websites, fitting in with the restaurant’s overall vibe. Before opening Bejzment, he spent several years in Atlanta, Georgia where he learned about traditional southern cuisine and barbecue. He continued this passion when he returned to Prague and got a job as a kitchen manager at Hard Rock Cafe. Not caring for the corporate world, he left Hard Rock after a little over a year and went out on his own. His exploits in the United States planted the seed for his deep love of American culture, shown in Bejzment with Route 66 posters, Mel’s DriveIn ads and other memorabilia from Střížek’s own personal collection. There are 15 different burgers on the menu,

and even more barbecue and starters. According to Střížek, every burger has a story. One that might catch your eye is the Porn de Jeremy. Střížek got the idea for the burger when a brand ambassador for Ron Jeremy’s rum visited the restaurant a while back. Střížek and his baker came up with a, um, suggestively shaped bun and pitched the burger to the adult film star’s people. “We are the only certified burger joint that can use his name,” Střížek says. And yes, you can order a veggie version. Just be warned. It is a lot to put in your mouth. In the future, Střížek plans to introduce more veggie burgers at events like Burgerfest. His ultimate goal is to provide healthier options without sacrificing that mouth-watering taste. “I eat meat and I can eat the veggie burger no problem.” the meat lover says. “I want to give vegetarians the feeling of that dirty, nasty barbecue taste.” JANUARY 2020 | PRAGUE RESIDENT

16:00 @ Estates Theatre A fairy tale for children, a symbolic story for adults. A play about seeking happiness, which may be surprisingly nearby. Blue Bird as the desire for ephemeral, ungraspable happiness. An adventurous voyage towards the soul of the things and beings around us, the seeking itself being the destination – only during this seeking can the two central characters come to comprehend that human relations and compassion are that which can bring us the Blue Bird of Happiness. The bestknown text written by the Flemish symbolist Maurice Maeterlinck, a Nobel Prize-winner, is one of the most impressive allegories of global literature, reaching out both to adults and children. The author’s fertile imagination, reviving the world around us, inspires theatre-makers to opulent staging and affords a great spectacle to everyone who likes being enchanted. *Performance with english subtitles.* Happiness, Drama, Desire, Fairy tale

Wolfgang Amadeus Mozart’s final stage piece was intended for the common people visiting the Theater an der Wien, where it was premiered on 30 September 1791. The creators drew upon the tradition of the old Viennese magic opera, one of the types of singspiel, a popular genre combining sung and spoken passages in which alongside human characters appeared various supernatural beings and animals and stage machinery effects were employed. Die Zauberflöte has become the best-known example of this genre not only owing to the fairy-tale story in which by means of a magic flute and his comical companion, Papageno, Prince Tamino seeks the way to Princess Pamina, daughter of the Queen of the Night, but also thanks to the references to Masonic symbolism and, naturally, Mozart’s engrossing music. A year after its premiere in Vienna, the singspiel was presented in Prague at today’s Estates Theatre on 25 October 1792. The new production, staged by the renowned Czech director Vladimír Morávek, is a spellbinding spectacle providing a remarkable artistic experience. *Sung in German, Czech and English surtitles.* Magic, Opera, Flute

Yannick Nézet-Séguin conducts William Kentridge’s new production of Alban Berg’s expressionistic masterpiece Wozzeck, regarded for its intense emotional power and brilliant score as one of the most significant operas of the 20th century. Composed during and in the aftermath of World War I, Berg’s dark exploration of a soldier besieged by the evils of society, is staged by Kentridge in a ramshackle warren of stairs, ramps, discarded furniture, and debris. His own theatrically animated charcoal drawings, along with other projected drawings, maps, and film clips, evoke a nightmarish world of crashed planes, searchlights, ghostly gas masks, and battlefields. Peter Mattei makes his role debut as Wozzeck opposite Elza van den Heever as Marie, the mother of his child. Singing the roles of Wozzeck’s tormentors are Christopher Ventris as the DrumMajor, Gerhard Siegel as the Captain, and Christian Van Horn as the Doctor. Andrew Staples makes his Met debut as Andres. Kentridge, who previously directed Berg’s Lulu and Shostakovich’s The Nose at the Met, unveiled the new production at the 2017 Salzburg Festival, where it received critical acclaim. Kentridge’s production is a co-production of the Met, Canadian Opera Company, Opera Australia, and Salzburg Festival. Opera

Národní 2

Antonín Dvořák’s two most successful operas, The Devil and Kate , and Rusalka , are based on fairy-tale motifs. Blending folk and humorous with lyrical and fantasy elements is one of the typical (and still very popular) traits of Czech dramatic creation. The theme of this charming fairy-tale opera is taken over from Božena Němcová’s folk tale of the same name about the brazen and fearless Kate, the wily shepherd Jirka and the duped devil Marbuel. Dvořák created a masterly patchwork of contrasting scenes – folksy, breezy, fiendishly fervent and courtly noble. Adolf Born’s exquisite sets and costumes bear the hallmark of this original and popular artist. *The opera is staged in Czech original version and English surtitles are used in the performance.* Czech, Antonín dvořák, Opera, Folk, Devil

Andrew

The Murder Capital

A fairy tale for children, a symbolic story for adults.

Devendra Banhart is an American singer, guitarist and songwriter. With his music, he represents genres including psych folk, freak folk, psychedelic music or neofolk. In most of his music pieces, he uses the classical guitar as the only instrument. Banhart’s work comes from a combination of Indian, Venezuelan and American pop music of the 1960s. Most of his songs are atmospheric, dark or melancholic compositions, although the album Cripple Crow has been kept in the atmosphere of pop and glam rock. A characteristic feature of Banhart is a careless, “narcotic”, slightly unreal vocal. His debut album The Charles C. Českomoravská 17

Swedish band Sabaton have been a major force in the power metal field since the mid‘00s, but had to battle through significant difficulties to get there, which may explain their eventual creative obsession with everything war-related. Originally founded in 1999 and comprised of Joakim Brodén, Rickard Sundén, Oskar Montelius, Daniel Myhr, Pär Sundström, and Richard Larsson, the enterprising group quickly produced two demo tapes that were later released in a limited edition as Fist for Fight in 2002. But after inking a deal with Italian label Underground Symphony, Sabaton saw their first would-be official album, Metalizer, inexplicably held out of the marketplace for a full two years. Tired of waiting, the members of Sabaton, once again took matters into their own hands, and financed the recording of another album, Primo Victoria, which was officially released in 2005 by the Black Lodge label. It also opened the floodgates for a slew of popular singles and battle metal LPs to follow, including 2006’s Attero Dominatus, 2008’s The Art of War, and 2010’s Coat of Arms, all of them bursting at the seams with historic and mythical chronicles of battle set to anthemic power metal. ~ Eduardo 790 to 1390 CZK Metal
