Harmen Design’s philosophical embodiment of balance

I

n Greek mythology, Harmonia is the goddess of harmony and concord. As a society which more or less invented the architectural arts, The Greeks prized this concept as the ultimate goal in the design of any built structure. Harmony doesn’t just mean symmetry or balance, though these elements are part of it. It’s about finding an ideal whole, a sense of overall visual “rightness,” that somehow settles the mind and the soul. The concept of Harmonia is implied in Harmen Design, the name that Goli Basiri and Kia Kazemian gave to the studio they founded in 2018. It embodies a philosophy that incorporates both interior and external architecture, how these two elements work together; and a sense of how teamwork creates a result greater than the sum of the parts. It’s also about creating a design that pleases the senses, not just the head or the heart.

So, I went into architecture to discover exactly what it is that makes some home designs work.” Kia noticed, soon after he entered the profession in Canada, that (in many cases) there were important differences in the way architects in this country approach the design process. “Architecture is about all the details, not just the shell and the ‘permanent’ elements,” he observes. “But in North America, the disciplines of interior design and architecture are treated separately.” The couple founded Harmen Design intending to offer design services that married these two elements into a single, synchronized approach.

The first couple of years were challenging, as they often are for young firms, until they received a referral to a builder who specialized in investment properties to assist in the design of a 4,000-square-foot house.

That job led to more work and a growing portfolio, and the business took off. Today, their Oakville studio is thriving, with six design and support employees. At the time of publication, the firm is currently working on 14 different projects. Part of what sets Harmen apart is the amount of technology the team uses in its work: not just three-dimensional CAD drawings, but virtual reality – headsets and all – which allows clients to “walk through” a property, choosing or altering finishes or other elements as they go. The VR designs are the product of extensive site research and interviews with clients, along with a detailed questionnaire. The designers also encourage the client to build a Pinterest board containing images of everything from restaurants they like, to travels, to a pretty mug or piece of clothing they might own. “We find most of our clients don’t really know exactly what they want,” says Goli, “but if you offer them more than one option, it’s much easier for them to decide.” One of the most critical sources of harmony must be between the design team and the builder. For the last five years or so, Harmen and Day Custom Homes founder Taylor Day have successfully collaborated on about half a dozen projects. “Our client had hired Harmen for their interior design,” recalls Taylor of their first meeting. “Once I saw how well we worked together, we brought them into some of our projects and presented Harmen as one of our preferred interior designers.

One of the most critical sources of harmony must be between the design team and the builder. Kia and Goli also have a background in architectural design, which really helps them understand a builder’s position and what we need to make this vision come to life,” he adds. “[They’re] experienced in the process and have great ideas and solutions for comfortable, very clean, and very timeless designs. They’re a great team.” The contemporary stunner in Mississauga’s Lorne Park neighbourhood pictured here was built in 2022. It was Harmen’s third project with Day. The client, a bachelor in his thirties, didn’t want his home to be too neutral or formal. He wanted to showcase beautiful materials and textures, along with a growing collection of fine art, which would provide spots of bright colour through the interior. The team used a palette of white with black structural trim, glass walls that cast light throughout the house, and an open-concept floor plan, which still allowed for some separation between individual rooms. 40 | January • February 2024

In the home office at the front, custom bookshelves display the owner’s collection of anthropomorphic mouse sculptures by Brooklyn, N.Y., artist KAWS; glass office walls cast light from the corner window at the front deep into the space. Past a sunlit steel, glass and white oak staircase, a striking wine rack made by suspending steel cable between panes of glass defines the beginning of the dining area. From this point on, dark-stained walnut cabinetry takes up most of the side wall, while a dining room “window” of smoked mirror fronted by underlit shelves helps brighten and add more display space.

The walnut cabinetry ends in the kitchen, located at the back, with a central swath of deep-grey porcelain slate covering the range hood, backsplash, and an imposing waterfall-style island in front. “I was a little nervous showing the client this dark slate

material,” Goli laughs. “With the walnut cabinets, it’s like the Batcave! But he loved the look.” The most charming room on the main floor is the great room, where pure-white walls rise to a cedar-strip-lined ceiling two storeys above. The highest part of the room centres on a serene hearth clad in cement board, its grey expanse tempered by narrow insets that add a horizontal element. On sunny days, the entire room is awash in sunlight, from a full-height corner window, framing a leafy view of the garden. This is a room made for relaxing.

“To us, a house is like a story that keeps evolving with its owner,” says Goli. “A sign of success in our work is when we come back and visit a year later, and the clients are still adding to it, putting their own touches on it. While we may not have a designated Design Week like the fashion industry has in order to tout the new trends coming down the runway, there are some exciting new ideas coming your way for the year 2024. Here is a list of my Top 10 trends that will start making their way into retailers and design studios.

SATURATED COLOUR.

A new colour forecast is the freshest way to update any living space and surprisingly we’re seeing richer, more saturated tones than in previous years. We’ll always love our neutral tones; every designer, including me, has their favourite palette. Still, it’s so refreshing to see deeper tones on walls and furniture, which create a moodier vibe.

WALLPAPER MANIA.

It wasn’t that long ago that clients were wildly opposed to wallpaper. But boy, have things changed! Gone are the days when wallpaper removal was difficult and selections were limited. Today’s wallpaper is bold, bright and beautiful with something for every design style. Recently, when designers coaxed their clients to use wallpaper, they would suggest papering a focal wall or small space; however, today’s trend is to boldly wallpaper the entire room. The result is strong and confident. Look for a large pattern and don’t forget that drama can be created with monochromatic colours and patterns just as well as strong colourful tones.

THE SEVENTIES ARE CALLING.

One thing stood out with the fabrics being presented this season. We saw deep saturated colours that a had a decided 70s vibe. Rusts, olive greens and purples took centre stage and were often seen in a velvet finish – very rich, very cozy and very retro. Mix those tones with charcoals, creams and blacks and 2024 has never looked so cool.

SHAPES OF THINGS TO COME.

A balance of curvilinear and rectilinear shapes in any room is critical for a cohesive space. But design, for several years, tended to focus on linear lines. Today we're seeing a return of more rounded shapes. Sofas, ottomans and case goods are now curvier and more shapely than ever before. While a good dose of both is important in a room, furniture with shape adds a sense of playfulness and a sensual quality we haven't seen for a long time. bestsidemagazine.com

FLUTED FINISHES.

This was unexpected. Cabinetry and furniture recommendations are often deliberately selected to be simple in style, the reason being that clean lines stand the test of time. However, we've started seeing fluted detailing on everything from wall accents and bar fronts to furniture and cabinetry. Because there's a resurgence of architecturally curved walls, fluted details add a Euro-chic elegance that seems to have some staying power.

METAL MIX.

It used to be that we either had brass finishes or silver finishes and never the two should meet – particularly in one room. Then came the time when we courageously mixed the two together and it became acceptable. Fast forward, and brass merged with gold tones. We even added matte black and graphite finishes to the mix. How refreshing to add yet another metal – enter copper. This orange-hued finish marries well with many of our tried and true finishes. Used alone for dramatic accents or mixed with other finishes like matte black or graphite, copper has a patina and beauty that easily refreshes any room.

BIG ART. I love art. It's one of the single most important elements to finish off a room. It's personal and expresses

personality and a journey of life. But the size of art is getting noticeably bigger, graphic, and mounted simply. Gone are layered mattes and frames. Pieces of art are often simply “canvas-mounted” and placed strategically on walls to garner attention. Art is personal and emotional so pay attention to the story you're telling and make it a big one.

This is refreshing. We actually have a new design term creating some conversation. It's dubbed Modern Fancy. MESS(Y) KITCHENS.

While not every home has the room for a small secondary kitchen, dubbed the mess kitchen, let it be known that the mess kitchen is alive and well, and many a renovator is still willing to forgo a closet in order to gain that space. Keeping small appliances like coffee makers and toasters out of sight and hiding dirty dishes when entertaining makes the mess kitchen an area designers always try to incorporate in their kitchen design. MARBLE DRAMA.

First came granite and then solid surfacing for countertop choices. But the countertop finish of choice for some years has been quartz. Its hygienic qualities, ease of care, and endless selections made it a designer's dream. But lately, there's been a subtle return to an organic and natural style. Designers are now turning to the drama of marble. These handselected dramatic slabs are used as a single focal element as the star of the room. The project was Gregory and Bozic’s largest undertaking to date, and a plan was initially created to completely alter the original footprint of the house to improve the functional flow. They wanted to allow for substantial additions and highlight the uninterrupted views of the property’s picturesque

ou don’t need skis for outdoor thrills and luxury slope-side experiences in Canada’s winter hotspots of Banff, Lake Louise and Jasper, Alberta. These treasured Rocky Mountain regions are a powder lover’s delight and rightfully synonymous with downhill pursuits. But there’s far more to do here than ride a ski lift — unless it’s boarding the Banff Gondola to the summit of Sulphur Mountain to admire the sunset over Banff townsite and the Bow Valley before dinner at Sky Bistro. Banff and the village of Lake Louise, a 45-minute drive away, are within Banff National Park. Jasper is the largest national park in the Canadian Rockies and includes the charming namesake town. It’s about a four-hour trip north of Banff along one of Canada’s most dramatically scenic routes, the Icefields Parkway. Officially called AB-93 North, the two-lane highway is framed by thick forest as it passes towering mountains, waterfalls, glaciers and lakes.

You may not need a car, something to consider given winter roads can be treacherous. There’s a shuttle bus from Calgary International Airport to Jasper. Another bus goes to Banff, and there’s a Lake Louise express bus to and from downtown Banff. These are truly choose-your-own-adventure destinations, places that embrace winter with gusto. Here are some ideas to build your getaway. No skis required. Say Mush! Move over, horsepower. For an exhilarating experience on snow, nothing compares to the athletic charge of a team of eight enthusiastic Alaskan huskies pulling your sled past mountains and forests.

tucked into the sled for our trip. We sat like a bobsled duo beneath down covers and a waterproof wrap. The dogs leaped and barked, making it clear they wanted to run. At Lecours’ command, the team began to pull the sled along a snow-packed trail at an enthusiastic trot. Lecours guided them with encouraging and calming commands, none of which included “mush.” These muscular dogs are elite athletes that need about 6,000 calories a day. She knows each one’s personality, quirks and unique strengths.

Lake Louise-based Kingmik Dog Sled Tours runs 90-minute excursions that cross the Continental Divide and briefly pass into British Columbia.

The sled’s runners made a soft whoosh on the show as the dogs paced along the trail through Kicking Horse Pass and beneath a massive wooden sign proclaiming our arrival in British Columbia. On the way back, Lecours guided the team through “the Narnia forest,” along a narrow, winding route that curved around immense trees.

“I love my huskies,” said Lecours as she embraced the dogs one by one. Chasing Frozen Waterfalls Maligne Canyon is the deepest canyon in Jasper National Park and in summer, best viewed from the rim. The winter freeze lets you walk along the shallow frozen river bottom dozens of metres down, between the canyon walls. For our Maligne Canyon Icewalk with SunDog Transportation and Tours, we put on safety helmets, insulated rubber boots and “icers,” what guide Jeff Hanson calls the pull-on rubber ice cleats. They came in handy as Hanson led our small group down sometimes slick paths into the canyon. We stopped at overlooks and bridges to admire the views below and had an audience with “the Queen,” a 25-metre waterfall frozen into sculptural beauty. This isn’t a walk to do without a guide, Hanson stressed. It was an uncanny experience to walk across the frozen river bed. We searched for fossils in the rocks and admired the organ pipe-like displays created by massive icicles, then walked behind a frozen waterfall, the frozen cascade making a dream-like curtain. Maligne Canyon tours run until late March, depending on the weather. Blade Runner There’s ice skating and then there’s ice skating on Lake Louise, where the Rocky Mountains, Victoria Glacier and an iceblock castle form the backdrop for what’s been called one of the most beautiful iceskating rinks in the world. The Fairmont Chateau Lake Louise maintains the ice surface. Rent skates at Chateau Ski and Snow Rentals beside the front desk. And for some next-level pond hockey, sticks are also available for rent. Skating continues until mid-April, depending on the weather. Afterwards, warm up from the inside out at the rink-side outdoor ice bar. Bartenders make warming concoctions like mulled wine and hot chocolate cocktails topped with a generous swirl of whipped cream.

Swim With a Toque Who needs a bathing cap? When you go for a splash as the snow falls around you, a toque is the better option. Heated outdoor pools at the Fairmont Jasper Park Lodge and the Fairmont Banff Springs are easy to ease into when the temperature drops, thanks to an indoor-tooutdoor curtain into the heated pool. Admire the mountainous views of Mount Rundle and Cascade Range from the Banff Springs Upper Hot Springs pool. The outdoor hot springs have been bringing visitors to Banff since 1886 and the natural mineral spring waters are now often supplemented with municipal water. Forgot your bathing suit? Rent one at the check-in desk in the circa-1932 bath house. Choose between a modern swimsuit or a surprisingly flattering onepiece romper-style historic design. Aurora’s Rule Winter is the best time to chase the northern lights, especially in Jasper, which is certified as a Dark Sky Preserve. The Jasper Planetarium at the Fairmont Jasper Park Lodge has a planetarium dome theatre. It runs guided tours outside with what it calls the largest, most powerful telescopes in the Rockies. Aalto Restaurant at Pyramid Lake, about 6km north of Jasper, offers a Dark Sky and dinner combination through March, pairing a three-course menu with guided stargazing through telescopes. Indigenous Experiences There’s a pharmacy in the forest, as Cree-Iroquois master interpretive guide Brenda Holder pointed out on one of her traditional Native medicine walks around Cascade Ponds in Banff. The owner-operator of Mahikan Trails talked to us about the land, explaining how her ancestors lived off its bounty as she identified plants and explained their uses. The forest is alive, even in winter, she said. Matricia Brown of the Sturgeon Lake Cree Nation runs Jasper-based Warrior Women with her daughter, Mackenzie. She leads plant walks, makers’ workshops and hosts weekly fireside chats at the

Fairmont Jasper Park Lodge and various other locations. Indigenous Chef Shane M. Chartrand, co-author of the cookbook Tawâw: Progressive Indigenous Cuisine, is collaborating with The Maple Leaf restaurant in Banff on menus and special events. Chartrand’s signature dishes include alder-roasted mushrooms and bison tenderloin and marrow. Sulphur Mountain was once a gathering place for the Stoney Nakoda First Nation. Hear their storytelling as part of the Nightrise multi-media experience on the outdoor decks around the Banff Gondola summit building. It’s free with a gondola ticket. Where to Stay Jasper bills itself as the “cabin capital of Canada,” with more than 800 cabins. They range from rustic to deluxe, such

as the Fairmont Jasper Park Lodge, a 700-acre luxury resort on Lac Beauvert. The property has main lodge rooms and suites in cozy signature cabins, some with wood-burning fireplaces. There are also restored, self-contained heritage cabins that sleep two to 16 guests. The Fairmont Banff Springs Hotel, called Canada’s “Castle in the Rockies,” has 739 luxury guest rooms and suites, many with inspiring Rocky Mountain views. Canadian Pacific Railway general manager William Cornelius Van Horne saw the tourism potential of this area early, planning to use the CPR to bring visitors to the stunning mountain landscape and natural hot springs. All he needed was a hotel. The original Banff Springs Hotel opened in 1888.

The first bedroom boasts soaring arched millwork flanking a luxe queen-sized memory foam bed, a comfy swivel accent chair for reading, a 32-inch TV, and a private four-piece bathroom with floor-to-ceiling checkered tile walls and a spa shower. In the second bedroom, a luxe kingsized memory foam bed awaits, customdesigned furniture by Pompous Fox, a 32-inch TV, a private washroom with a full tub and shower, and a custom arched closet. Gather in the “common area” with its large bouclé sofa, complete with golden velvet pillows and ottomans. A vintage black terrazzo fleck dining table seats three for dinner, with stools available to pull up for more guests. Make the most of your flat and embrace a quiet evening in; pick up a few groceries at The Little Green Grocery and perhaps a monster loaf of sourdough bread (or some baked goods) from Downie Street Bakehouse. Prepare your meal as you enjoy a glass of wine in the sleek galley kitchen, which features high-end built-in appliances: a range, microwave, fridge, freezer and dishwasher, topped off with a stunning Rosso Levanto marble countertop. The overall project was fronted by Autumn Hachey, founder and creative director of Stay Here, a full-service multidisciplinary creative studio and lifestyle agency. Hachey brought in the expertise of Toronto-based full-service interior design firm Twenty-Two Twelve, owned and operated by sisters Haley McDonough and Jillian Smith-Moher.

After 10 months the transformation was complete and ready for its reveal, and the star of its own show, documented in the TV series Staying Inn: Hotel Julie. The series, which aired on CTV Life Channel, CTV.ca, and the CTV app, followed Smith-Moher and Hachey, along with their team, as they transformed the inn into a luxury hotel.

This project truly is a matter of the heart.

There’s much ado around Stratford any time of year, although the festival scene kicks off on April 16. Those who love to shop will find many eclectic gems and galleries downtown. Many of Hotel Julie’s decor items were sourced locally. A vibrant culinary scene offers something for every palate. (If you happen to be a proponent of pickles, order the Consigliere at Pazzo Pizza.) Be sure to call ahead for restaurant reservations and hours of operation. There are lots of other activities to keep visitors busy year-round too, including the Perth Museum, and self-guided trails such as The Chocolate Trail and The Bacon and Ale Trail. For some wintertime fun, the River Valley Tube Slide is a 20-minute drive away.

hile this time of year we may be missing the warm summer days, there is something magical about getting together with friends and family for a warm and cozy winter evening. When the temperature drops and the snow starts to fall, it’s difficult to not feel full of joy sitting by a roaring fire with a group of special people. One of our favourite things about entertaining in the winter is hosting on a weekend when people are less likely to be rushing off to an activity. A weekend evening of casual entertaining indoors also lends itself to simpler pursuits where we can turn off phones, live in the moment, and replace the rush with a game of cards, backgammon, or charades. Whether it’s a speical occasion, a relaxed gathering, or just an excuse to band your favourite group of people together, our winter warm-up menu will fit any event.

TABLE SETTING

Typically we like to start our table settings with a crisp tablecloth, but in this case since we have a great wooden table to work with, we used wood and greenery, and subtle touches of lighting to give the table a glow. Lay a long garland down the centre as a runner, scattering tea light candles throughout for ambient lighting. Rather than resting your plateware directly on the table, we recommend using wooden charger plates. If that’s not an option for you, or if you don’t have a wooden table, no worries. Consider a burlap or tan coloured linen to get the same look. An easy way to take your table setting up a notch is to use pomegranates for place cards. Whether you choose to write directly on the pomegranate or stick a name card in the stem, this chic DIY is sure to add an extra element to your décor.

MENU PLANNING

The easiest way to make sure your winter warm-up runs as smoothly as possible is to prepare as much as you can ahead of time. In an effort to prevent the “chaos in the kitchen” scenario, we’ve suggested three canapés for this meal that can be made in advance and should be ready to serve as your guests arrive. First is a sliced baguette with a variety of spreads: Duck Rillette, Garlic Confit, and Herbed Chèvre. We recommend making these spreads the day prior, to let them rest in the fridge up until guest arrival. To complement the baguette and spreads we have a Cranberry Baked Brie and Gougères. Baked brie is the perfect blank canvas to showcase a variety of toppings. Get creative or use whatever you have in your kitchen to make this dish your own! As guests finish their welcome cocktails and slowly move on from the delicious canapés, it’s time to start the seated portion of the meal. The first course, Ham & Bechamel Baked Tomatoes, will make you feel like you just came in from skiing. Next, we go to our main course. When you picture the perfect winter meal up at a chalet, you’d be hard-pressed to find a better-fitting main course than Boeuf Bourguignon. This may be one of our more tedious dishes, but it will have guests begging for the recipe in the days following. Since Boeuf Bourguignon is such a heavy dish, and roast vegetables are mixed in with it, we recommend not overwhelming your guests with too many sides. A single side dish of Parisian-styled mashed potatoes is always the perfect match for this hearty dish. Between the main and dessert, we like to serve an individual cheese course – as it helps elongate the evening and pairs perfectly with the wine your guests are already enjoying. The quantity of cheese we like to offer depends on how many people we’re hosting, but as a basic rule, we aim to have at least 1 ½ oz per person and a minimum of three cheeses to choose from. Finally, we offer a super simple dessert of vanilla ice cream with dark chocolate sauce – aka Dame Blanche. The name of this easy-to-make dessert comes from bestsidemagazine.com

For our winter soirée we’re bringing back the classic martini bar setup to warm up your guests. Here are three variations we like to include: First, the Espresso Martini. It offers a richer alternative to the other two cocktails and provides a little pickme-up early in the evening. Then we move to the fan favourite Cosmopolitan. This cocktail is truly perfect to sip by the fire as you nibble on canapés and socialize with your guests. Lastly, we can’t leave out the Classic Martini. More traditional than the Cosmo, the Classic Martini is a welcome sign to most as it can be mixed with either vodka or gin. And don’t forget to stock up on garnishes – you never know who might be the “extra olives” type! Once our guests move to the table, we switch to red wine. While there’s nothing wrong with continuing cocktails through dinner, a nice red wine will pair beautifully with the rich menu.

We recommend decanting older wines (5+ years) 1 hour before guests arrive but leave the bottle next to the decanter in case guests are interested in seeing which wine you selected. Lay out all your dinner and glassware the night before so that it’s easy to see what you will be using to serve each course with. Duck Rillette keeps for 7-10 days in the fridge, so it’s great to keep on hand for a decadent weeknight meal.

The team at radius is dedicated to bringing inspiration from their travels back to the Hamilton and Burlington communities. “We all love to travel and research and learn from others but bring that inspiration back to the communities we love,” Chelsea says. “Our family of staff just loves food, cocktails, wine and hospitality in general. Sometimes we like traditional items, giving them a radius spin or bringing a few added elements to it.” Executive Chef Daniel Burcher, with over 20 years of culinary experience, leads the kitchens, focusing on innovation and excellence. Newly promoted from the Hess location is Portuguese-born Chef de Cuisine Jorge Rocha, who brings a passion for global influences and local produce. Jorge is leading the operation in Burlington and credits his love for food and travel as inspired in part by his mother and grandmother. “Their goal is to create a brand known for trust and inclusivity, fostering growth and an uplifting atmosphere,” Dan notes. Hearty concoctions of fresh vegetables, broth, and proteins come together in stick-to-yourribs soups and stews, or wintry in-season vegetables that are tossed together as a bold feast for your eyes and nourish you from within. They’re amazingly fulfilling meals, especially when accompanied, perhaps, by a sandwich or slice of crusty bread with butter. No matter if you’re a noisy slurper, sip daintily or eat your salads one vegetable at a time, everyone can appreciate curling their hands around a robust meal in a bowl when it’s cold outside. Butternut Squash & Lemongrass Coconut Noodle Soup Ingredients 1 small butternut squash 4 tbsp coconut oil ½ tsp kosher salt ½ tsp fresh ground pepper 2 stalks lemongrass with green stems finely sliced 1 tbsp minced ginger, unpeeled 1 tbsp minced garlic 1 tbsp Thai red chilli paste 400 mL coconut milk 200 g spinach rice noodles or your favourite noodles, cooked as per package directions Garnish 2 ¼ cup ¼ cup ¼ cup TT

green onions, thinly sliced (reserve green stems) cilantro leaves (stems roughly chopped and reserved) fresh mint leaves fresh basil leaves (stems roughly chopped and reserved) red & green Thai chillies, thinly sliced

Directions • Preheat oven to 400°F and line a baking sheet with unbleached parchment paper. • Wash and dry squash. Trim each end of squash and cut it in half lengthwise. Remove seeds and place on baking sheet cut side up. Leave skin on. Rub squash with 2 tbsp of coconut oil and season with salt and pepper. • Roast in preheated oven for 20-25 minutes until squash is fork tender. Place in a high-speed blender. • In a large pot, heat remaining 2 tbsp of coconut oil over medium heat. Add lemongrass, green stems from onions, cilantro and basil stems, ginger, and garlic, and sauté for 1 minute. • Add chilli paste and sauté for an additional minute. Stir in coconut milk with 1 1/2 cups of vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes. • Add liquid in blender with squash and purée until creamy. • Divide cooked noodles into bowls and top with soup. Sausage & Rosemary Split Pea Soup with Grana Padano Ingredients 2L 1 lb

water sausage, poached and diced ¼ cup oil 1 onion, diced 1 carrot, peeled and diced 2 ribs celery, washed and diced 1 tbsp garlic, minced 2 tbsp rosemary, chopped 2 ½ cups green split peas, washed and rinsed TT grated Parmesan for garnish Directions • Add sausages to 10 litres of water and bring to a simmer; once sausages are cooked remove from stock and set aside to cool. Once cooled down, dice sausages, and reserve stock. • Heat oil in a pot over medium heat until hot.

• Add onions, celery and carrots and cook until soft. • Add rosemary and garlic; reduce heat and cook until aromatic. • Add sausage stock and split peas, turn up heat, bring to a boil, then turn down to a simmer. Continue cooking until split peas are soft, about 45 to 55 minutes. • Add cooked diced sausages and heat through. • Remove from heat and adjust seasonings with chicken base and salt and pepper. • Adjust to desired consistency with more water. • To serve, ladle into bowls and top with grated cheese. peeled and diced butternut squash 4 cups medium diced white onion 6 cloves garlic, thinly sliced 2 tbsp olive oil 4 tbsp butter 7 cups chicken or veg broth 2 cups 35% cream TT salt and pepper Gastrique Directions • Bring water, sugar, vinegar, salt, and chilli flakes to a boil on stove. • Pour over cranberries and raisins, let soak for 1 hour. • Strain liquid from dried fruit and reduce a little more than half or until it becomes thick.

• Once liquid looks thick, pour it back over fruit. Let cool before using. Soup Directions • Toss cubed squash in olive oil, and season with salt and pepper. Roast in the oven at 375°F until golden in colour and tender. • Place butter, onion, and garlic in a soup pot on medium-low heat and sweat, no colour, until onion is translucent. • When squash is done add to soup pot and cover ingredients with broth. Bring to a simmer and simmer on low heat for 45 mins. • Add cream and blend soup using a stick blender until smooth. • Season with salt and pepper. • Garnish with dried fruit gastrique. Fish Stew Ingredients 2-3 lbs

assorted firm fish (such as halibut, cod, monkfish, salmon, tilapia), cleaned and cut into 2-inch pieces 1 lb shrimp (peeled, deveined) 1 lb squid (cleaned, sliced into 1/4-inch rings) 1 lb mussels (washed and scrubbed) 1 onion, chopped 3 garlic cloves, sliced thinly ½ bulb fennel, cleaned and thinly sliced (fronds reserved) 3 tbsp olive oil 1 cup dry white wine 2 cups fish stock 1 ½ cups plum tomatoes with their juices (crushed by hand or chopped) 3 thyme sprigs 1 bay leaf ½ tsp chilli flakes (or to taste) ½ cup chopped Italian parsley Zest from 1 lemon TT salt & pepper Serve with: Thick slices of crusty grilled bread Directions • In a large, heavy-bottomed pot, over medium heat, combine 3 tbsp of olive oil, chopped onion and fennel. Cook slowly, stirring once in a while, until soft and lightly golden in colour (5 mins). When done, add sliced garlic and chilli flakes. Stir for a few seconds (do not let garlic burn), then add white wine and let it simmer until alcohol evaporates (about a minute). • Add tomatoes, fish stock, thyme and bay leaf. Bring to a boil, season with salt and pepper, then turn down to a steady simmer and cook for around 10 to 15 minutes, partially covered. • When ready, start adding fish to the pot. Cook until fish turns opaque and firms up a bit (2 to 3 minutes), then tuck shrimp, squid and mussels into the liquid. Reduce heat to low and cover the pan. Cook until mussels open and shrimp are pink (about 3 to 4 mins). If you need to stir the sauce, do it carefully so as not to break up the fish, or try shaking the pot gently instead. • Take the pot off the heat and top with chopped parsley, fennel fronds and lemon zest. • Serve straight away by carefully ladling the soup into bowls, accompanied by slices of grilled crusty bread. M

essy, tactile finger painting with wee ones may have informed the next career step of Burlington artist Briar Emond, but her semi-abstract renderings of trees, water and other natural scenes are the result of a strong left-right brain balance. “I never thought about painting before I was 40,” says the 55-year-old mother of two teens. “I was finger painting with my kids one day and realized how special it was. I’m not a person who has hobbies. I never painted when the kids painted. But when I did, I figured out that play is not useless.” What she learned about painting is how to explore ideas and emotions and that what’s important in the creative process is not perfection but the feelings called to mind by a work of art. “What’s great about art is how it’s interpreted,” she says. “I love if people see things in my work that I didn't intend. That tells me about the observer. I create space on a canvas for people that allows them to think and find different things on different days. I’m not interested in doing things that have been done; I don’t want to be influenced by other people’s work.”

Her lead-up to the art world could be described as circuitous. Born and raised in Mississauga, Emond earned a Bachelor of Commerce degree from Guelph University. She worked as an account manager in banking for eight years before doing a complete about-face, which eventually immersed her into the world of film and television production. But by her midthirties, the prospect of motherhood beckoned so she decided to make raising her children her livelihood. Today, Emond works from a studio in her Burlington basement, where her unusual painting technique sees her pouring acrylic paint onto typically large canvasses that are laid out horizontally on the floor. Once she gets an image she likes, her canvasses are placed vertically for her to fine-tune. Emond liquefies her paint with water, often using a spray bottle so she can play with the consistencies of her paints. She sprays water where she wants the paint to go and the result is often exploratory though not completely out of left field. “I work with the paint to explore repetitive patterns that occur naturally in nature,” she says. “I love to see the paint lead the way in regards to creating leaves or water tributaries -- the natural patterns we see in nature. Then I see what the paint does and then I play with the paint. Usually, I’ll see a leaf in it or a lot of trees, a flower or a body of water. I let the paint lead the way. It’s way more interesting that way.”

At the end of January, Emond will have work on display at Sakai Japanese and Korean Restaurant on Fairview Street in Burlington. In the meantime, her artwork is available for sale or rental at the Art Gallery of Burlington Shop. Her latest series is based on the Niagara Escarpment and Lake Ontario. Emond spent the remainder of 2023 completing artwork that was commissioned as holiday gifts. But whether it’s the pressure of meeting artistic deadlines or just painting for pure joy, it’s obvious Emond has found her purpose for being. “I love painting, she says. “I like

the tactile feeling of applying paint to a canvas and the emotional feeling of creating something. I paint whatever interests me at the time. My work is intended to highlight the things we cannot see but can feel; be it the wind, gravity or the seemingly magical code to the chaos: math. Whether we understand the math or just feel its simplistic power, it is there, guiding our universe all the way from the microbial level to the big picture of space. Citing the Fibonacci sequence, a well-known math formula in which each number in the sequence is the sum of the two numbers that precede it, she is still awed by its unassuming splendour. Its design pattern is often used to create art, architecture and graphic design. “That’s how a sunflower grows, how 99 per cent of everything grows,” she says. “That’s the language of our physical reality. It’s not just a ‘woo-hoo’ thing. There’s a reason why this equation explains things so well. What appears to be chaos is quite logical and beautiful in its simplicity. That’s where the math comes in.” Given her background as a banker and as the daughter of an accountant, Emond’s passion for mathematical patterns provides fierce inspiration. It adds up. Before she started painting, she viewed math as a utilitarian device meant for calculation. Today, she describes it as “our only truth. I explore visualizing the math of our nature in my work,” she told UNICEF. “I figure if everyone could see and feel how mathematically awesome our physical reality is, we would treat it with more care. If we could all see how physically interconnected we are, we would treat each other with more respect.”

W

hen Bonnie Flemington wishes you a Healthy and Happy New Year, she means it quite literally – and can help make it happen. As a Certified Nutritionist and owner of Bonnie Flemington Wellness in Oakville, she coaches clients in person and virtually, designing a personalized and guided nutrition plan to help address issues like inflammation, arthritis and joint pain, digestive issues and weight management. She speaks from experience when it comes to dealing with inflammation and pain. “My first career was as an accountant and although I was active and practiced yoga, I had a nagging pain in my hip. I went to a doctor and unfortunately didn’t come up with any solutions. I started experimenting with my diet by giving up gluten and then sugar for a few months and tracking how I felt. Sugar is linked to inflammation but it’s not the only thing.” 110 | January • February 2024

“There are other problematic foods like gluten. My experience drove me to learn more about health and nutrition. I discovered the life-changing impact that diet and lifestyle had on my health. I went back to school for two years and earned my Certified Nutritional Practitioner (CNP) at the Institute of Holistic Nutrition. I have since completed several continuing education courses to help support clients with inflammation, digestive issues and hormone imbalances.”

Within a year of making diet and lifestyle changes, she was pain-free. “I felt so good that I wanted to share what I had learned with others.” Flemington offers some tips to help get us on the road to wellness for 2024. “Consume less sugar, refined flour, fewer processed foods and eat more vegetables, healthy protein and drink more water,” she advises. “When I coach clients who are giving up or cutting down on sugar or gluten, we focus on what we can have more of, rather than what we have less of. If a person is eating muffins and bagels for breakfast, we talk about alternatives like making your own flax bread, making smoothies and egg options.” When many of us have given up on making New Year’s resolutions, Flemington says that setting goals is an important aspect of your wellness journey. “Start with one or two personalized goals and think about your daily habits and what needs to change to get to that goal,” she suggests. “Focus on just one goal to start so it’s not overwhelming. If it’s walking 20 minutes a day, the hardest part is the act of putting on your coat and boots and getting outside. It doesn’t matter how far you go. It’s that feeling of success that counts since success breeds success. Make the goal small so you don’t give up.” Don’t go it alone. Phone a friend. “Get the support you need to help you make the change, from a professional or family and friends. Also tracking your food is helpful. If you want to drink more water, you need to know your starting point. Also tracking sugar is helpful. You may be surprised how much sugar you are consuming from things you didn’t realize contained sugar,” she notes. Adding a new healthy habit can be difficult in our time-stressed lives. What’s the key to making a new habit fit into our daily lives? “If you’re exercising an hour a day and want to start meditating, cut your exercise routine to 45 minutes and add 15 minutes of meditation,” says Flemington. “If your goal is to eat more vegetables, when you bring home the groceries, cut up the vegetables and leave them at the front of the fridge so they are ready to add to meals. If you have cut-up vegetables ready you can make an egg scramble in about five minutes. Once you’re doing something bestsidemagazine.com

Flemington says it depends on the individual and how ingrained the habit is. “Lots of people talk about breaking a habit in 21 days, but realistically, it could take up to a month or even six months.” (BTW, she reassures us that giving up sugar does not mean zero sugar and there are healthy alternatives such as fruit and dark chocolate.) In terms of popular health trends, she says intermittent fasting is the most prevalent trend on her radar. “I feel that it can work for many people, but it needs to be personalized to make it work for you. Fasting overnight is beneficial for everyone. Another trend I’m seeing is people being more proactive when it comes to their health. Many are realizing that health is your responsibility and that’s

empowering. When we’re empowered to take control of our health, we can find the help we need to feel our best.” As a holistic Certified Nutritionist, she takes a “big picture” approach when creating a personal and guided nutritional plan to help her clients overcome pain and other health challenges. “My goal is to determine the root cause of the symptoms to put clients on the road to wellness.” Flemington’s website provides a free antiinflammatory e-guide as well as several healthy – and tasty – recipes. In the words of poet Ralph Waldo Emerson, “The greatest gift is a portion of thyself.” Recipients of Chase’s Gift are many, thanks to the dedication and generosity of its creators. Chase’s Gift, a Burlingtonbased fundraiser, is a yearly event aimed at helping ease the financial burden for families whose kids are battling cancer, as many unforeseen costs come with such a diagnosis. Today, as its namesake Chase Sandy is 18 and getting on with his life, his parents continue to want to help those in need. “We saw how difficult the financial burden can be for families who have a child with cancer,” says Chase’s mother Tamara Sandy, a Staff Sergeant with Halton Regional Police Service, who with her husband started Chase’s Gift in 2014. “We were so lucky to have support at work and we wanted to give that back.”

As law enforcement officers, it’s not lost on the Sandys how their work environment rose to support the family. At age four and a half, Chase, the couple’s only child, was diagnosed with nephroblastoma, or Wilms Tumour, which meant he would need lifesaving surgery to remove his kidney. That would be followed by six months of chemotherapy – and surgery three months into his treatment. Chase’s parents are thankful that they could alter their work shifts so they could be with Chase every step of the way. That meant both mom and dad accompanying him to chemo treatments. That meant having expensive drugs and medical equipment covered by their work health insurance plans. Thankfully they had already employed a nanny (due to their shiftwork), which also allowed the couple to continue to work while Chase was cared for at home. The couple understands they have much to be thankful for and paying it forward is how they show their gratitude.

They also know the stories of families who have had to endure the heartache of childhood cancer while struggling to pay the rent, or to cover the cost of lifesaving medications, or for something as seemingly simple as groceries or parking fees.

fundraising efforts have also helped pay for, but not limited to, electric wheelchairs, oncology equipment and supplies for McMaster Children’s Hospital where Chase is a patient, as well as donations to Campfire Circle, a summer camp for children with cancer in Waterford, Ontario.

In the nine years since the Sandys have established Chase’s Gift, an annual fundraiser held in late February in Burlington, they have provided over $225,000 to local families in need. “It’s such a huge expense,” says Sandy, whose husband Jeff is a superintendent with Halton Regional Police. “We were lucky we had benefits. I saw one of the medications, a four-ounce bottle of antinausea medication, and it was $175. We started seeing families that had to quit work to tend to the needs of their child, so they couldn’t pay the rent.”

One of the benefits of not being a registered charity, says Sandy, is that funds can be directed quickly to those in critical need. A committee of work friends and the Sandys evaluate needs on a case-by-case basis, but ultimately a social worker at McMaster Hospital helps vet donations and channels funds to the most urgent cases.

WE’RE BACK The Annual Fundraiser Returns 2024

The annual fundraiser, which had to halt operations during the pandemic, is back in full force for 2024. The event, which will be held at the Polish Banquet Hall on Fairview Street, generally lands a crowd of 300 to 400 and tickets always sell quickly. But organizers don’t peddle tickets to just anyone. The event doesn’t make money if people don’t attend, so they’re particular about who purchases the tickets, and with good reason. The evening features fast-paced auctions for desirable prizes such as household appliances, signed sports jerseys, gift baskets, sports tickets and more. “It’s just so much fun,” Sandy says. “We usually sell out pretty quickly. It’s like playing bingo

every two minutes and it’s so fast-paced.” Chase’s story and his parents’ efforts have inspired others to pay it forward. Sandy cites Smith Baker, a Brantford-area boy who passed away at age 15 after his battle with brain cancer. His family is now reaching out to help others whose children have cancer. Smith’s mother wrote the Sandys a note, saying how she appreciated their generosity and kindness as Chase’s Gift provided the family funds to cover the cost of a house cleaner as they were going through their son’s treatment. While the Sandys don’t solicit support from separate, smaller fundraisers, they have support from friends and family as well as past beneficiaries of Chase’s Gift, some of whom continue to stage smaller fundraisers throughout the year from which proceeds are funnelled into Chase’s Gift.

CHASE SANDY AGE 18

A Typical Teen Today, Chase is living the life of a typical postsecondary student. He is studying political science at the Mississauga campus of the University of Toronto, where he lives in residence. Chase wants to be a lawyer, working for an NGO in the area of human and civil rights. He’s involved in the university’s business law club and Caribbean club. His health is good, says Sandy, adding that he’s savvy when it comes to being keen on what he can and can’t do or consume. Water consumption is important – but caffeine and protein powder, not so much. He can’t play contact sports, for example, and will continue to go for annual checkups at McMaster for the rest of his life. “He gets why this is so important,” Sandy says of Chase’s Gift.
