OAKVILLE BUILDER EMBRACES A WEST COAST VIBE FOR THEIR DREAM HOME By Laurie Wallace-Lynch Photography By Jason Hartog As owners of the award-winning Rock Cliff Custom Homes in Oakville, Roman and Ali Rockliffe have built hundreds of homes, but when it came to building their own, they wanted something truly unique. “Our previous home was a very modern design, and I knew I wanted to try something slightly different with this build,” explains Rockliffe. “I’ve always gravitated to California designers, and I love their coastal style—it’s timeless. It’s a low-fuss style that’s the epitome of my family. For the interior and exterior, we went with neutral warm tones that will hopefully stand the test of time as style and design trends change. We’re looking to make this our long-term home, so we didn’t want anything too trendy that would need to be updated within a few years.” That California vibe is evident throughout the home with its floor-to-ceiling windows, minimal trim, spacious open concept, and neutral white oak used on the floors throughout the home. “California style is modern, but not cold,” she adds. “It’s warm-modern. I’ve lived in a modern home, and it never quite felt as homey as this one.” And while the architectural style of their dream home may be new to the Rockliffe family, the neighbourhood where they built is very familiar. “The Morrison area of Oakville has always been home for me,” she explains. “I lived a few streets over growing up and my parents still live in the same house. I always wanted to raise our kids in the same neighbourhood. My kids even go to the same school I attended.”

The couple couldn’t believe their luck when a home in the neighbourhood came up for sale. It was a back split, which they tore down to build their dream home on an idyllic lot. “We knew it was the perfect property,” she says. “It was a fabulous large lot surrounded by tall, mature trees. I wanted a fantastic backyard with space November • December 2023 | 45
cover spotlight for an inground pool so the kids could swim, as well as room for them to practice their sports. The biggest challenge we had was finding a rental home to move into while our new home was being built. With three kids and a dog, it took a bit of creativity and tenacity to find the right spot, but it all worked out in the end.”

Rock Cliff Custom Homes was founded in 2005 and designs and builds custom homes and cottages, as well as doing restoration and renovation work. The award-winning home builder serves the GTA and Muskoka region. “Our company designed and architected the whole project for our home as well as doing the interior design,” she says with pride. “The inspiration behind the design was our family. We needed a space that functioned well for our family, but at the same time, I wasn’t prepared to sacrifice style. I wanted to have a beautiful space that worked with three young kids and a dog but would make our brand of ‘luxury living’ proud. Big open spaces for families and friends to gather were a must for me. I wanted areas we could hang out together but that also served as an architectural element of the home.” The size of the massive white oak front door gives visitors a hint that this home is about living large. A welcoming foyer features an artistic vignette encompassing a bench and hall table. Gleaming white oak floors (from Speers Flooring Ltd. in Oakville) are showcased throughout and lead to the adjacent home office with expansive windows overlooking the front of the house. Custom bookcases by Top Notch Cabinets Inc. in Burlington feature a built-in desk as well as a table for meetings or homework. The great room is an awe-inspiring space with vaulted ceilings and exposed beams painted out to match the woodwork. The fireplace is surrounded with luxurious Carrara marble, while arched custommade built-in bookcases create a perfect home for books and other treasures. “What makes this room unique is the 20-foot-high vaulted ceilings with the beam feature and the walls are fluted plaster which we designed,” she adds. “Inside each arch, there’s reeded panelling. The home also has a detail in place of the baseboard throughout. It’s a custom look that I for one haven’t seen done before.”

cover spotlight The great room feels at one with nature thanks to a wall of floor-to-ceiling windows that offer panoramic views of the backyard. “It’s that inside-outside California look,” states Rockliffe. “People love the concept of being able to open up the space so you can walk out to the patio and the pool. There’s also a big, covered porch with a fireplace. We wanted a large space where we could entertain and host dinner parties. A heated covered porch is a must in Ontario where we can hang out almost year-round.” The dining room sits adjacent to the great room and is also designed for large-scale entertaining. The space is defined by two glass panels, which offer a unique entrance to the space. A large Carrara marble table from Restoration Hardware takes centre stage. “We wrapped the ceiling in the same white oak as we used on the flooring, so it creates an intimate and luxurious feeling,” she states. “Another unique feature is the double-sided wine display feature that can be seen in the dining room as well as in the great room.” The wine rack is by Top Notch Cabinets Inc. and the majority of the great room and main floor furniture is from Muskoka Living.

The dining room light fixture adds an element of drama to the space. “All of the light fixtures throughout the house are from Luminaire Authentik in Montreal. What’s great about this company is that you can custom order colours and put together almost any design you can imagine. I sent them an inspirational photo of a light fixture I loved and they customdesigned this fixture to my specifications.” The soaring vaulted ceiling continues into the expansive kitchen. The massive island, topped in Caesarstone, beckons people to gather, comfortably seated on the leather-backed kitchen stools that Rockliffe discovered at Curato.

and a guest room with ensuite. A custom wrought iron staircase designed by Stairhaus Inc. in Barrie offers access to all three levels. While design work in the principal bedroom is yet to be completed, the vision is to create a luxurious hotellike feel that’s as comfortable as it is luxurious. The principal ensuite boasts an oval soaker tub and a large glass shower. All the upscale plumbing fixtures throughout are from Kohler Canada. Two oval mirrors hang over the custom vanity, which was designed by Top Notch Inc. and appears to ‘float’ in space, adding yet another luxe element to this dreamy, spa-like space. “One of my favourite rooms in the house is the mud room with the locker storage for the kids and all their ‘stuff’,” she adds. “My one rule for this home was that it needed to be meaningful for us. Every element that went into the design was planned with our family in mind. It’s the same approach we have when dealing with our clients. On some level, we all must keep resale value in mind, but when you’re starting to map out what your dream home looks like, it should be something meaningful to you. That’s our trademark. We help clients find the right balance between making financial decisions in terms of the build, but we’ll always make sure their home ticks all their must-have boxes. Our team is vested in making our clients happy with their home and the process it took to get there.” Rock Cliff Homes offers a unique client mobile app that outlines exactly where they are in the process. EMBRACE BEING IN THE MOMENT AMONGST THE WONDERS OF JAPAN By Linda Barnard The young Zen Buddhist monk had a shaved head and a decent swing. The metre-long stick in his hand hit the flat of my shoulder with a firm whack. No surprise here. I’d asked for it, signalling with a deep bow that my mind was wandering during the 30-minute zazen (seated) meditation he was leading at Daihonzan Eiheiji, a Soto Zen temple in the forested mountains about 500 km northwest of Tokyo. For about $10 Canadian, visitors can work their mindfulness muscles with a meditation at Eiheiji, meaning “temple of eternal peace.” Two-night stays with vegetarian meals, lots of time for silent reflection and humbling housekeeping chores are about $100.

Like many people, I’m not very good at stilling my mind, living in the moment or keeping still, never mind getting into the lotus position. Could time in Japan help me learn Ichi-go itchi-e, the concept of being here, now? Guide Yuko Ehara explained it to me this way over breakfast: our conversation, this sunny morning, the food, none of it can ever be repeated in exactly the same way. Ichi-go itchi-e means to focus on things as they happen and to be grateful for this unique moment.
There are 70 wooden buildings of various sizes in the monastery complex, which was founded in the 13th century. A heavy snowfall made the surroundings even more picturesque, silent — and cold. The monks go barefoot in the unheated monastery.
I vowed to embrace it. From easing into the hot and healing waters of communal geothermal mineral baths, savouring each bite of luscious wagyu beef or fatty tuna, or feeling my legs burn as I climbed stone steps on a 1,000-year-old pilgrimage route, I’d tune into each experience as it unfolded on my six-day trip to Japan.

We left frenetic, fascinating Tokyo behind on the five-hour train ride west into the foothills of the Japan Alps for a stay at Rurikoh, a ryokan in the Kaga Onsen region. Ryokan are traditional Japanese inns. Rooms have woven tatami mat floors. Guests can sleep on the floor on plush futons. I opted for a bed for my stay. Two nights later, I chose a futon at the 575room Hotel Urashima Resort & Spa in the town of Nachi Katsuura Onsen. It was a surprisingly restful sleep. A peaceful soak in the hotel’s Pacific Ocean-view cave onsens (mineral-rich waters said to help everything from arthritis to skin conditions) likely contributed. Men and women bathe separately and naked. It may seem strange to be unclothed around strangers at first, but the feeling doesn’t last long. Pictogram signs explain everything you need to know, like washing your body before your soak.

I stepped into the shallow 40 C water of a rock-lined outdoor pool at Rurikoh’s onsen (there’s also a larger bath indoors) and watched the snow falling on carefully pruned trees in the small garden. Afterwards, I was so relaxed, that it was an effort to dress for the multicourse kaiseki dinner in a private dining room. These dinners are like a chef’s multicourse tasting meal and are usually part of a ryokan stay. The menu combines imaginative presentation and the best of local, seasonal foods. The kaiseki at Rurikoh was a banquet of creative courses, including house-made tofu topped with shaved radish designed to mimic a mound of snow, local seabream sashimi and newly in-season Queen crab rice. The meal was paired with sake brewed nearby, served cold from small glass flasks. I used my vow to stay in the moment as an excuse to take breaks as we

climbed a short but challenging section of the Kumano Kodo ancient pilgrimage route to a Shinto shrine in the Kii Mountain Range. The 267 stone steps seem to be an organic part of the moss-covered forest and the vertical route is lined with massive old-growth cedars, some 800 years old. The tranquil UNESCO World Heritage Site was a place to consider how many others had climbed this route, wearing the stone stairs smooth in spots. Now I was in this moment, walking their path, too. Near the top, we bowed and walked under a vermillion torii gate, a traditional Shinto shrine entrance. The Kumano Nachi Taisha Grand Shrine is a group of brilliant red-orange buildings of varying sizes, each of which houses a spirit, or kami. Beyond is the pagoda-style Seiganto-ji Buddhist temple, with 133-metre-tall Nachi, the country’s tallest waterfall in the background.

In historic Kyoto, I struggled to keep my ichi-go itchi-e promise as I thought about the evening ahead and a geiko (the name for geisha in Kyoto) and apprentice maiko performance in a private room in a local restaurant over a kaiseki meal. We started our day in northern Kyoto, where the first glimpse of Kinakuji (Golden Pavilion) made the here and now the best place to be. The top two floors are entirely covered in gold leaf. A still, tree-lined pond at the foot of the onetime home of a retired shogun created a stunning reflection. The shogun’s villa became a Zen temple following his death in the 15th century. It has been rebuilt several times since. Recognized by the Japanese government as an “intangible cultural asset,” the geiko and maiko performance was everything I’d hoped for. It’s not easy to arrange to see these artists perform, considered to be agents of living culture in Japan. A personal introduction to the woman who runs the geiko house in one of the five “flower town” districts in Kyoto is required first. And it’s not cheap. Our private performance costs about $2,000 Canadian for 90 minutes. Ontario-based Japan tour leader Sam Hirota said one option is to book a local tour. be in Kyoto in April, get tickets to the annual Miyako-Odori, where geiko and maiko do a month of showcase performances. Geiko Tomitae and Maiko Hidechiyo greeted us at the door of the restaurant with low bows. I gasped when I saw them in their elegant kimonos, white makeup and traditional hairstyles. They smiled and bowed again. Tomitae sang and played a shamisen, a three-stringed, banjo-like instrument. Hidechiyo danced with delicate exactness, moving her sleeves or holding her fan just so. Each dance began with her turned away from us, making a deep back bend. Their movements and gestures were graceful and precise, down to the careful way Tomitae folded her hands, fingers pointing down in her lap, as we talked. I couldn’t help staring. Afterwards, they sat with us, pouring

sake and tea, laughing at our jokes and answering questions through an interpreter. Tomitae, who became a maiko about 10 years ago at age 16, wanted to dispel Hollywood myths like the one that geikos are “sold” to mother houses as girls to train. Not true. They invited us to play Konpira fune fune, a Japanese drinking game that looks easy but isn’t. I sat at a low table opposite Hidechiyo. We took turns tapping a round wooden block between us as Tomitae played a simple tune that kept speeding up until one of us made a mistake. Hidechiyo always won. The evening with Tomitae and Hidechiyo was the definition of ichi-go itchi-e: one time to be treasured in Japan and never repeated. ur Christmas dreams are filled with visions of celebratory foods, sparkling decor and some quiet time by a cosy fire. If travel is part of your Christmas dreams but you don’t want to leave those traditional celebrations behind, consider a stately stay in the Irish countryside. The weather is wintery but not severe, the craic is friendly and welcoming, and the holiday food and drink are suitable for royalty. What better place to celebrate Christmas, then, than in a grand Irish castle? One of the most welcoming places I’ve stayed in Ireland is Ballymaloe House, near the city of Cork. The lovingly maintained home, still family-run, is a perfect Christmas house, with multiple fireplace mantels decked with armloads of holly and ivy from their farm, and a dining room dressed for the holidays. The oldest parts of the present Ballymaloe House can be traced back to an Anglo-Norman castle built around 1450. Each of the 33 rooms has its own name and distinct character. When I stayed at Ballymaloe, I was charmed by its informality. Guests met together most afternoons in the large main drawing room. The drawing room is where I met with Hazel Allen, daughter-inlaw of the original creators of the manor house hotel. She poured us tea from a massive teapot and offered me buttery shortbread while we chatted in front of the fire. “You’re the Canadian,” she said. “In some ways I credit Canada for causing me to end up at Ballymaloe.” As a young woman, she had worked at Expo ‘67 in Montreal. On the bus on her way to work one day, she picked up a Canadian newspaper and read a story about Ballymaloe and its dining room’s emerging reputation for using local farmto-table ingredients. “That was before Farm-to-Table was a thing! I was intrigued. When I got back to Ireland, I looked into bestsidemagazine.com
CELTIC COMFORT AND HOLIDAY TRADITIONS it, wrote a letter asking for a job and was hired.” The first person she met there was Rory Allen, son of the owners. They fell in love, married and … ”Here I am!” Later I met Darina Allen, another daughter in law, and a famous cook and cookbook author. She’s probably the best known chef in Ireland, affectionately referred to as ‘Ireland’s Nigella’.Her prestigious Ballymaloe Cookery School is just down the road from the manor house and guests can book classes and tastings. There are walks to be had through the walled garden or the 300-acre property, or guests can opt for bike rides along country lanes or hikes along the coastal cliffs. The Jameson Distillery is close by for a visit and Cork City is nearby as well. The best activity of all is relaxing by the fire, with holly, tinsel, and a massive Christmas tree. Because Ballymaloe is still familyowned, as one would expect the house is closed from December 18th to the 27th so the family can celebrate their private Christmas. In the weeks leading up to Christmas, however, the dining
room debuts seasonal fare, the house is decorated for the season with fresh boughs from the estate and the famous Ballymaloe Farm Shop is full of one-of-akind gifts. It’s the perfect place for a preChristmas getaway. Another Irish castle that celebrates the season with great style is Ballyfin. This perfectly restored country house is the most luxurious place I’ve ever stayed. Ballyfin isn’t elegant in an ostentatious way. It’s elegant because of the pitchperfect style of every corner of the house. If you love Irish art, sumptuous decor and the decadent allure of a country estate holiday, Ballyfin will enchant you. It’s like sliding back to a gentler, more indulgent era for a while. Christmas at Ballyfin is a parade of temptations, with champagne by the fire, and multi-course feasts in the dining room - I think every dining room should have a fireplace or two! - and outdoor adventures in the bracing Irish air. Guests can take horse-drawn carriage rides, indulge in clay pigeon shooting or archery, hike along the lake or explore the walled garden and grounds. Set at the foot of the Slieve Bloom Mountains in the centre of Ireland, this 400-year-old Georgian house, restored to its original grandeur, is the perfect setting for Christmas or New Year’s. It’s situated in the small town of Straffan, close to Dublin, so you could spend Christmas day sampling Christmasbedecked restaurants and pubs. Dromoland Castle in County Clare is another famous estate that will serve up a sophisticated Christmas season getaway. Like Ballyfin, this historic property has been well restored, though more Victorian in style than the Georgian influence of Ballyfin. The castle’s open fires, twinkling lights and seasonal decor – including a handmade gingerbread house – will conjure the spirit of the season. The hotel offers a threenight festive getaway that begins with a cocktail & canapé reception on Christmas Eve followed by dinner in The Earl of Thomond restaurant. A piper will herald the arrival of a special Christmas guest (who even arrives with gifts). The next day, enjoy a late breakfast followed by a traditional Christmas Lunch with all the seasonal trimmings, accompanied by melodies from Dromoland’s resident pianist. Between meals, guests can explore the grounds by foot or by bike, which share the same design as the Gardens of Versailles. There’s a guided Hawk Walk as well as an excursion to the nearby Limerick Race Course. Ashford Castle, in County Mayo, is an 800-year-old property and the former home of the Guinness family. It’s also home to one of Ireland’s best spas, so Christmas guests can work in some wellness treatments with their celebrations. For a romantic and private celebration, book the boathouse to enjoy lake views and your private gardens and terrace. Arrange a guided walk with the property’s gardener, book a private dinner with the chef, or enjoy a tasting in the wine cellar. nce inside the front lobby of the historic Glenerin Inn and Spa, it feels like a locale in Williamsburg, Virginia, or perhaps Quebec City. Yet, the property is close by in Mississauga’s picturesque Sawmill Valley Creek.

Set on two acres of estate grounds, the Tudor-style stone mansion and adjacent carriage house was built in 1927 as a private 30-room summer residence for the Evans family. Classified as a heritage home, the interior features grand stone fireplaces, exposed ceiling beams, 1940s stained glass and oversized paned windows. The property has had several lives before becoming a luxury destination for weddings and getaways. In the 1940s it served as a school and had an apiary run by John Sproule. Under the ownership of Robert Simpson Company, it became a rest home for employees recovering from serious illnesses.
It’s that glamorous 20s-era essence which captured the imaginations of interior designer Jackie Glass and General Manager Brian Pope. “I immediately felt the vibes of The Great Gatsby,” says Glass. Glass researched the era to determine how much of Art Deco style would work in the space. At deco finishes include glossy finishes on the floor and furniture, feminine colours (pink) marble, mirror, gold, palm trees in big pots etc. “It was that fact that allowed me to develop the design concept of a very gentle homage to Art Deco because it had more of an English style feel with all of the natural stone and beam work detailing.” As a heritage building, all changes had to pass through the historical society. The windows were replaced entirely. Original elements such as the support structural beams in the lobby and in the Credit Valley room are original. Having had a personal residence in a heritage area in Oakville, glass was already familiar with the guidelines. “(We) knew that if we were bestsidemagazine.com

respectful, we would be able to create a beautiful space.” Glass and her team enjoyed the conceptual and overall design process for the Glenerin. The hallways boast wallpaper instead of paint, the warm pinks and deep blues add contrast to the stonework, gold light fixtures with some marble detailing add glam, crisp hotel bedding (imported from Portugal) adds a clean and classic feel, Calcutta porcelain tiles give the washrooms a spa-like look, potted palms in dark corners add life, existing shelving is stylized with simple collectibles. Floral arrangements shown in photos were provided by True Flowers in Oakville. Finally, the built-in closets and kitchenettes were kept neutral and cleanlined so they virtually disappeared into the space. “I did paint out the ceilings and woodwork but retained all the natural stone; I felt it would lighten everything up and also allow the beautiful Credit Valley stone to take centre stage,” she says. The entire $6 million undertaking also included some infrastructure updates to upgrade the technology in the building. The lobby lounge greets you with plush velvet banquettes, deep-set round chairs, dining chairs and bistro tables, a cathedral ruins hardwood floor, and vintage Art Deco chandeliers and wall sconces to set the mood. It’s an area that’s become a lively social space, something Pope advocated for. “Every Friday and Saturday, with the wedding parties, guests come down to the lobby all dressed up in the afternoon, and it was my vision to infuse a lobby lounge concept,” Pope explains. DI MARIO’S TRATTORIA: RUSTIC & REIMAGINED By Rebecca Dumais
C
hef Claudio Aprile has never been one to simply carry over or put together a meal based on someone else’s list of ingredients, quantities or methods, but when he was approached to reimagine the menu at Di Mario’s Italian Trattoria by restaurant owner, entrepreneur and CEO of Paramount Foods Mohamed Fakih, the fit couldn’t have been more ‘fantastico.’ Aprile quickly settled into the role of Culinary Director at Di Mario’s in December 2022, an intimate eatery located in the heart of Downtown Burlington, one that’s been a culinary favourite of the community for over two decades. The business connection with Fakih, who also owns Italian mainstay Via Allegro in Etobicoke, happened organically, both relying on getting to know one another the old-fashioned way rather than through social media message exchanges. “We started to hang out, exploring Toronto, going to restaurants and breaking bread together, getting to know what type of people we each are. It built from there,” he says. While excited to jump in feet first, renewing an established restaurant required some forethought and acquiring an understanding of the community. Aprile wanted to first pay attention to the guests, what their

needs were, and what the restaurant meant to them. “A lot of (the approach) was very traditional; more about going to someone’s table and introducing myself and understanding what the restaurant meant to them,” he says. “This has been a very interesting experience because in the past I’ve always focused on creating something brand new, whether it was techniques, ideas, flavours – trying to reveal new things to my guests.” In this case, a level of respect was required for what previous owner Nicky Leonelli Had built – nearly 20 years of hard work. “She developed a very close relationship with Burlington. She did an amazing job at that,” he acknowledges. “I think her level of hospitality is exceptional and I paid close attention and learned from that.” In the past, Aprile’s never been particularly interested in taking something over. “It was never something I found stimulating,” he admits. “This time it was different. I’ve learned so much from Mohamed. He’s a very skilled entrepreneur with a deep pool of knowledge. Of course, Aprile notes that the entire kitchen staff is fantastic, but he’s taken Cheyenne under his wing and acts as a mentor. “He’s evolving into a dynamic sous chef. Those to me are the jewels – when you find (people) like that.” It’s been a team-building exercise. “I think we’ve done a great job with that.” Often one of the mistakes that a lot of business-minded people make in the hospitality industry, according to Aprile, is that they don’t recognize how important it is to keep staff. “This thing about cleaning house and going into a business and overhauling, I think is a mistake. We do think there’s a lot of value and importance (there).” Sure, it’s a business, but it also has a heart, which is kept alive in large part by those very people already present. “Acting in a respectful way, I think, is very important. It’s been about trust – building trust with your team.” Aprile knows he’s fortunate to have great front- and back-of-house staff – including the addition of Brooke as general manager. “She’s incredible. Driven, and very focused.” The menu has evolved with Aprile’s interpretations yet also retains its rustic Italian roots. It’s comprised of many of the ‘greatest hits’ in Italian food, which were deconstructed and rebuilt. “The food is very traditional, light, fresh. We do follow the seasons. It’s simple. That’s the thing. What we’re doing is not complicated at all. It’s my interpretation of Italian cuisine. I love food. I love cooking. I’ve been doing it for 40 years and I still, without a doubt, get very excited about new ideas and launching a new dish or a reimagined menu, building a team or training a new team. I enjoy that,” he says. “I did pay close attention to tradition so I haven’t strayed too far away from Italian food culture – instead I 90 | November • December 2023

embraced it. We’ve introduced a lot of new dishes, and they’ve been received really well.” The best seat in the house is the new chef’s table tasting experience. Seat yourself right beside the kitchen while you and a handful of guests enjoy a freestyle menu. “It’s a very unpredictable menu – you never know what you’re going to get,” Aprile says, adding that certain dishes may even have other cultural influences, not necessarily Italian. “It’s a great opportunity for the kitchen to experiment, come up with new ideas and challenge themselves. Those dinners have become very popular.” The experience is best enjoyed by two to six people and must be booked ahead. Sunday Brunch was also introduced recently, and Aprile hints that soon there may be a beautiful Italian family-style supper series on Sundays. Di Mario’s wine list is so extensive and so carefully honed that it earned the restaurant a 2023 Award of Excellence from Wine Spectator, which is a leading authority on the world’s best wine lists. “The wine list is even more extensive than it was. We have our master sommelier from Via Allegro, Wendy, 92 | November • December 2023
she’s phenomenal,” he says. “Wendy has such a deep wealth of knowledge. You can ask her anything about wine and she’ll have an answer for you.” Signature cocktails are general manager Brooke’s creation. Even when it comes to beverages, Di Mario’s is focused on offering classic flavours with a contemporary presentation. She has taken a similar approach to cocktails as Aprile has taken to the food. Paying close attention to the established clientele and hearing what they had to say was important in the new iteration of a community favourite. “They’re a big part of the development and the evolution of the restaurant. Burlington is such a small community. It’s amazing,” He’s also taken note that Burlingtonians love food. “It’s a small neighbourhood but it’s very cosmopolitan in many ways and I see a lot of changes happening in the downtown core. I think there’s a very big appetite for creativity and the commute from Burlington to Toronto to go to a restaurant is a little bit played out.” Luckily for us, we don’t have to do that anymore. The licorice flavour of Sambuca paired with shrimps is an unexpected combination. Makes 8 servings (serving size: 4 shrimp and 1 bread slice) Ingredients: 1 cup dry white wine ½ cup minced shallots 2 tbsp Sambuca (licorice-flavored liqueur) 2 tbsp fresh lemon juice 1 tbsp butter 2 tbsp minced fresh or 2 tsp dried parsley 1 tbsp minced fresh or 1 tsp dried tarragon ½ tsp freshly ground black pepper 2 garlic cloves, minced 32 large shrimp, peeled and deveined (about 1 1/2 pounds) Cooking spray 1 cup minced seeded tomato 8 (1-ounce) slices French bread, toasted Directions: Combine wine and shallots in a small saucepan; bring to a boil and cook until reduced to 1/2 cup (about 15 minutes). Remove from heat; stir in the Sambuca and the next 6 ingredients (Sambuca - through garlic). Preheat broiler. Arrange the shrimp in a single layer on a jellyroll pan coated with cooking spray and pour the Sambuca mixture over the shrimp. Broil for 5 minutes or until shrimp are done. This dish is finished with black truffles in a flaming wheel of grana Padano, served tableside. Ingredients: 1kg short ribs 1L red wine 3L veal stock 500g mirepoix (250g onions, 125g celery, 125g carrots) 6 sprigs thyme 6 sprigs rosemary 12 sage leaves 3 bay leaf 20g black peppercorns 15g coriander seeds 10g dried porcini mushrooms 6 parsley stems Directions: Marinade the short ribs in the wine and all the aromatics overnight. Remove the short ribs and sear until a golden crust forms. Caramelize mirepoix in the same pan the short ribs were seared with 100 ml of olive oil and 2oz butter. Deglaze with the red wine and reduce till a thick syrup consistency. Add the veal jus and bring to a boil. Braise
everything together in a tight Dutch oven at a preheated oven temperature of 350°F for 4 hours. Allow for the short ribs and liquid to chill overnight to develop more flavour.

Move over cheese, there’s a new cheese in town. Halloumi is a beloved and iconic cheese that hails from the Mediterranean island of Cyprus. It’s also loved worldwide – and for good reason. Renowned for its unique taste and texture, Halloumi is a semihard cheese made primarily from a combination of cow’s, sheep’s, and occasionally goat’s milk. Its high melting point also makes it distinctive, so it’s ideal for grilling on the BBQ or pan-fried without losing its shape. It’s a perfect substitute for traditional Greek cheese. So, bring family and friends to a Greek Cypriot Taverna in your home. OPA!
Serves 4-6 Ingredients: 1/4 cup extra-virgin olive oil 250g sheep’s milk halloumi cheese, halved lengthwise (makes two pieces) 1/4 cup all-purpose flour 2 tbsp small green olives 1 oz Greek brandy Half a lemon 1 tbsp dried mint Directions: Preheat the grill to medium/high heat. Divide oil into two small cast iron skillets. Large enough to fit each piece of halloumi cheese with additional space for olives or you can place both pieces in a 9-inch cast iron skillet. Heat oil until it sizzles. Place both pieces of cheese under running water, then dredge them into the flour, shaking off any excess. This helps the halloumi form a nice golden crust and to hold its shape when fried. As soon as the oil heats, add the cheese pieces and fry for 3-4 minutes on each side until nicely golden and crisp. Add olives and pour in brandy. Using a lighter, carefully ignite the cheese and let it flame for 30 seconds. Squeeze the lemon on top to put out the flame and sprinkle with dried oregano. Ingredients For the Filling: 2 pints ice cream any flavors (946mL) 1½ quarts ice cream any flavor (1.42L) 1 loaf pound cake For the Meringue: 4 egg whites room temperature ¼ tsp cream of tartar 1 cup superfine sugar (200g) Directions For the Filling: Place the ice cream in the fridge for 20 to 30 minutes or soft enough to very easily scoop, but not runny. While the ice cream softens, very lightly coat an 8- to 9-inch-wide bowl with oil. Line with plastic wrap, leaving several inches of overhang around the edges. Slice the pound cake into ½-inchthick pieces. When the ice cream is soft, place alternating scoops of the various 98 | November • December 2023
ice cream flavors in the lined bowl, reserving half of the 1.5-quart flavor. Press a piece of plastic wrap to the top of the ice cream scoops and gently press down to fill in any gaps between the scoops. Smooth out the top. Freeze for 15 to 20 minutes or until the top is mostly firm. Return the remaining ice cream to the fridge while the bowl freezes. Once mostly firm, remove the plastic and spread the remaining ice cream over the mixed scoops. Place pound cake slices on top, making sure they fit snugly together. Cut some of the pound cake to fill in any gaps, as needed. (There will probably be some cake leftover.) Fold the excess plastic wrap up over the cake to cover and freeze until solid, about 2 to 4 hours or up to 1 week. For the Meringue: When ready to serve, place the egg whites and cream of tartar in the bowl of a stand mixer with the whip attachment. Beat on medium speed until frothy and
doubled in volume, about 2 minutes. Very slowly add in the sugar while beating. Once added, continue beating until stiff and glossy, about 6 more minutes. For the Assembly: Remove the bowl of ice cream from the freezer and unwrap the bottom. Place a large plate on top and flip to invert, using the excess parchment to help release the ice cream from the bowl. Once inverted, carefully remove the plastic from the ice cream. Spread or pipe the meringue all over the ice cream, making sure that it is completely covered and touching the plate, creating a seal. Using a kitchen torch, brown the meringue. Serve immediately. When Dale Egan couldn’t find the perfect candle lantern for her daughter’s outdoor wedding centrepieces, she created it herself. There’s an English proverb about how necessity is the mother of invention. In this case, a mother’s necessity created Lantern Cozies. Lantern Cozies are thin custom-designed wood covers that bend around a glass cylinder candle holder. As an entrepreneur and Oakville resident whose unique artistic talent has been recognized by Martha Stewart and American TV personality Joelle Fletcher, Egan and her husband Jim operate this art-based business from home in what’s supposed to be their golden years. She jokes that they failed at retirement. “We’re project people. We’re just busy people and if we weren’t doing this, we would find something else to work on. It’s in our nature. We don’t sit down much,” she says. Lantern Cozies are made with three types of wood: white oak, black walnut and maple, all of which are sourced in Canada. They sell on Etsy and in stores for between $70 to over $100. They’re interchangeable, meaning you can have several cozies with different designs and only one glass lantern. Depending on the season or your mood, you could have flowers dancing on your walls one evening or a shadow of a winter

Egan is working on keepsake Lantern Cozies for a wedding where she plans to combine a Jamaican hummingbird and a Portuguese rooster in honour of the bride and groom. “It’s meant to be like an affordable luxury. It’s meant to be something nice but not something you throw away. Something a little special,” Dale says. After her own daughter’s garden party wedding was done, Egan decided to see if she could sell all the leftover Lantern Cozies she’d designed to a store on Main Street. To her surprise, the store owner accepted. “Initially I made Christmas ornaments, letterpress Christmas cards. I was so tickled with the idea that I could sell anything,” Egan says. Then, COVID lockdowns happened in 2019. Egan decided to sell on Etsy since there was no other viable venue. “I was on Etsy for about three weeks and they contacted me to be part of a Creator Club with an influencer,” she says. During a phone conversation with Etsy reps, they told Egan “they’d never seen anything like them.” She thought that the initial email request from Joelle Fletcher’s team was a scam. But it wasn’t, and online sales of Lantern Cozies took off. “Getting traction on

Etsy is very hard. But we had that intro and then in combination with Black Friday in lockdown. It was quite busy,” she says. Most recently, Martha Stewart added Lantern Cozies to her list of must-haves. When you visit the Lantern Cozies website, you’ll see Stewart’s face smiling back at you. “The way I see it, I could tell some guy changing the tires on my car that I sold my products on Etsy and he would have no clue what Etsy was. But if I told the same guy that my product had been curated by Martha Stewart he would be seriously impressed,” she wrote in her blog post about getting the business mogul’s seal of approval. When Egan compared the first week of the Martha Stewart advertising campaign in March against the first week of the previous campaign with Joelle Fletcher, she saw that Martha sold 43 per cent more lanterns. For nearly three years now, online sales have been steady but last Christmas the Egans decided to try setting up a booth at a traditional craft market. She concedes most artisans work the other way by starting at craft shows and then moving the business online. They have also attended some trade shows. This new way of selling her product came with a new set of challenges, including how to display and market the product. Egan opted for photos of the lit lanterns and had them enlarged. “My product is meant to have a candle in it, and you can’t have that at a craft show, so you’re showing your product but not in its best light patterns. But that’s fundamentally the problem, so I had photography. But people were really amazed because they’re very practical.” Designs come to her in different ways, she may be inspired through her work for a local charity such as Lighthouse in Oakville or a special day on the calendar like Robbie Burns Day. Sometimes ideas run around in her mind for months like a squirrel trying to outrun a fox. When asked what design she prefers the most, she picks the floral design. “I designed the flower one for my motherin-law. She is an amazing gardener. She lived for her garden. HIGH FLYING HOPES showing their best side
A round-the-world flight fundraiser By Rebecca Dumais
A
s the 27-year-old pilot and Oakville resident Callum Wallace will tell you, nobody does a round-the-world flight in a single-engine aircraft just for a joyride. To undertake the journey is done out of purpose. Wallace took a meaningful cause under his wing and, at the controls of his V35B Beechcraft Bonanza, embarked on a worldwide journey to raise money for Home Suite Hope (HSH), a Halton-based charity that helps mothers with children overcome homelessness. Selected families are taken through a four-year program that provides housing and college tuition for the mother to help the family become strong and independent.
His solo journey began on May 23, 2023, flying east from Canada with stops in about 26 countries across Europe, Africa, Asia and islandhopping along Pacific Island nations. He even received donations midair. “Even when I’d been over the ocean and I made a radio call – the pilots flying the airline heard me and questioned why and how I am where I am, Googled me and made donations!”

When Wallace got to know his aircraft hangar neighbour where he rented space for his plane, the British man told Wallace about a round-the-world journey he’d done with his partner in 2014. “Hearing about the mission and stories, set the idea in my mind at this time,” he says. It’s a logistical challenge more than anything and very tough to plan, especially if there are areas of the world in conflict/wars.” The foundation is an important cause for Wallace because as a Realtor, affordable housing is a hot topic he encounters often in the industry. Also key, was knowing that the funds he’s worked hard to raise go somewhere he knows are allocated appropriately and have a meaningful impact. “Part of the issue HSH is having right now is housing affordability for their families in the program,” he says. Throughout his journey and the places he’s landed, Wallace says it’s been made clear that homelessness is a global issue, not just in Canada. Wallace had hopes of his own as a child; he’s loved aviation since he was young but thought his colour blindness was a barrier to becoming a pilot. “I later, through a pilot I was working on a real estate transaction with, found out this is not true and was able to pursue the passion. The feeling of flight for me was something special. I can’t think of anything else that I could put on par with
five- to eight-hour flight results in one hour of time change. Only two flights on this trip did I have a two-plus-hour time change on the day/flight leg: Sri Lanka to Malaysia – two and a half hours change and Hawaii to California – was three hours (difference). For reference, this leg was 15 hours of flight time – also the longest leg of all.” How did he keep himself focused? “Coffee… lots of Coffee!” Besides finding the need for an overabundance of caffeine, Wallace says he’s found a new appreciation for living and the opportunities available in Canada and North America overall. The Gala event, held on November 10 at the Pearle Hotel in Downtown Burlington culminates the campaign, and Wallace will share some of the craziest stories from his trip. Money raised will act as seed funding for HSH to build its own multi-unit dwelling. First things first when Wallace returned home, besides returning to his day job selling homes: to take comfort in his community. “I’ve been away for more than two months now, in hotels and it was NOT glamorous,” he admits. “I look forward to seeing all my friends and family, and my puppy, and sleeping in my bed!” The list of courageous and capable volunteers willing to set out and achieve a large goal like this is probably a short one. The feat of flying solo across the globe in a single-engine aircraft has only been done by about 140, Wallace says – three of whom were Canadians.
Wallace approached HSH on his own. An undertaking like this has the legs to generate meaningful contributions to a deserving charity. “Home Suite Hope was the first organization that came to mind as I know first-hand the work they do through previous support and colleagues of mine also supporting them,” he says, adding that they were thrilled to know they were selected as the recipient of Wallace’s fundraiser. “I think at the beginning no bestsidemagazine.com
the feeling of flying.” In 2020 he earned his Private Pilot certificate with Spectrum Airways in Burlington Ontario, followed soon after with successful completion of the instrument rating. Even though it might seem that Wallace would be battling jet lag along the way, he says it’s not that bad. “My plane isn’t like an airliner going massive distances at once, changing time zones. Often a
Wallace faced some very hard moments not only with flying the plane but also mentally. “I had a terrible experience in Pakistan and India. If I had a button I could push to abort the mission and teleport myself and my plane back home, I very likely would have pushed it,” he says. “I remember thinking this in the hotel room. I hadn’t eaten in 24 hours because my stomach was in knots. I told myself that what the families are going through with their children is extremely hard and they have no ‘out/abort’ button. This will make my holiday easier, and I wish you the best for yours!” These words written on a card by one of many people who benefit from the Kerr Street Mission (KSM) in Oakville are a reminder to Heidi Avery, Director of Stewardship and Fundraising of the impact the community makes.

This holiday campaign began 20 years ago, designed to help families facing financial hardship. “These people have challenges making ends meet during the year due to rising prices, poverty and more - let alone finding money to provide for their families during the holidays.” To receive assistance, clients must register to identify that they’re in need and then they’re provided with gift cards that they can use to purchase gifts, food, toys for their children and new clothing.
As the cost of living keeps going up and more and more people turn to food banks, KSM’s Christmas Wonders and Beyond campaign hopes to raise $500,000 this year. “We’ve increased our goal slightly due to the increase of people needing our support. We provided for over 700 people last year and expect that number to increase to almost 1,000,” Avery says. “We need the community’s support to help us.”
Often clients are reliant on government assistance such as Ontario Works, Ontario Disability Support Program (ODSP) or Canada Pension Plan for income. When you consider that the amount one can receive from ODSP income support is up to $1,308 a month and rent for a onebedroom apartment in Oakville is upward of $2,699 it’s clear that many people are struggling to make ends meet.

More than 750 pieces of sleepwear were distributed last year. While 210 volunteers helped manage the program that gave out 3,000 toys. “Thank you so much for a very Merry Christmas. My family got everything we need with your generosity,” said one client. For privacy reasons, the identity of KSM clients is not revealed. “Both of my young sons are now all set with warm clothes for the winter, as well as happy with the toys they got. With the gift cards we received for Food Basics and Walmart. We also had a lovely holiday dinner and were able to get some practical items for my husband and me to use around the apartment! We send our heartfelt thanks, and hope we’re able to give back this year, to help others,” another client stated. In a town that’s known for its luxury homes and high-income earners, it may be surprising to some to learn that poverty affects 9.4 per cent of its residents. That’s more than 21,000 people (about the seating capacity of Scotiabank Arena in Toronto). This fundraising program is funded solely by the generosity of the community, Avery says. “We look to them to provide support. Our biggest ask is financial,” she says, noting that there are various levels of donations which benefit everyone from individuals to families. A $100 donation provides for an individual, a $200 donation for a family of two, $600 provides for an average-sized family, and $1,600 provides for a family for Christmas and beyond. You’ll need a bar area to serve drinks. Whether it’s built-in, a bar cabinet or a bar cart, that will be your backdrop – and even the focal point for the evening. Your choice of bar doesn’t need to be a cabinet or oversized piece of furniture; think low-profile sideboards and how you can set up a beautiful holiday display on top. D’Orazio recommends you “mood it up” regardless of the type of bar you choose. An antiqued mirror backsplash or high-sheen wallpaper can look gorgeous as the backdrop to your drink station.

here are two types of people: those who love to entertain, and those that love to be entertained. Party planning, for some, is just too much hustle and bustle – especially during the holidays.
Tannis D’Orazio gets its. The 25-yearold Oakville interior designer and owner of Studio Sereno received her design certification through the Interior Design Institute out of San Francisco after completing a Business Management degree at the University of Western Ontario. As someone who understands the importance of a well-planned, welldesigned space, she also knows the same rings true for party planning. “Planning 116 | November • December 2023
a party can be incredibly daunting,” she says. “But I’ve always loved birthday parties and seasonal holiday celebrations. My family instilled that in me.” D’Orazio recommends organizing well in advance so it’s not a panic the day before the big day. “Try to start a week or two before. Take it a step at a time, do a booze run one day, figure out your glassware, pick your linens and napkins. Menu plan so you know what your grocery list will be for the coming week.” Her confidence in entertaining stems from her joy of tackling the design of entire floor plans and layouts, piecing the often-
If a custom or semi-custom bar isn’t in your budget or high on your wish list for the event, there are other options. Local home furnishing stores, Crate & Barrel, West Elm and Pottery Barn sell a variety of styles and well-made bar cabinets and carts, says D’Orazio. If you gravitate to vintage, she suggests visiting local antique markets to repurpose an old relic. Less practical but equally appealing from a design aesthetic are unscented tea lights or candles to help set the mood. “Don’t let scents overwhelm the food and drink you’re setting out,” says D’Orazio. “Light, especially as days shorten in fall and winter, is a key factor in beautifying your space.” If candles aren’t your thing, place twinkle lights in a ceiling light fixture or through a garland and hang it on the front of the bar area. As a sustainable option, D’Orazio recommends swapping paper for cloth napkins. “Not only is it more sustainable (plus it saves you money),” she says, “proper (cloth) napkins immediately up the luxe factor of your event.” Don’t forget to add greenery. Christmas trees aside, poinsettias, cedar garlands or wreaths, holly and, of course, mistletoe add a fresh, natural and festive vibe to your home’s atmosphere. When it comes to stocking your bar, be sure to pick up the essentials: beer, red and white wine, vodka, and other hard liquor based on the drinking preferences of your guests, plus lime cordial, citrus bestsidemagazine.com
slices, sodas and juices for mocktails and mixing. Think about serving a signature cocktail (such as D’Orazio’s Frosted Blackberry Spritz). Jingle Juice, Eggnog and Peppermintinis each also make for a memorable Christmas cocktail. Or make a Winter Sangria, red wine mixed with wintery fruits such as citrus, apple, and cranberries. The beauty of this is that it lends itself to making en masse. Fill a pitcher and your hosting duties will be made a little lighter for the evening. Remember to include non-alcoholic options for your guests. Impart a bit of pizzazz to your drinks with garnishes. D’Orazio recommends fresh rosemary sprigs, cinnamon sticks or cranberries frozen inside ice cubes.

Consider using some of your practical bar items as décor. A colourful bowl of citrus, a crystal glass full of pretty paper straws and a water pitcher with fresh cranberries add a pretty holiday vibe while doubling as pragmatic bar essentials. Be sure to mix glassware for visual interest. Use stemless and stemmed wine glasses, lowball, martini and shooter glasses, for example. If you’re hosting a sit-down dinner party, D’Orazio still suggests offering some nibbles available as visitors mingle with their beverages. Spiced nuts are a great choice or olives with festive picks. The sky is the limit when it comes to snacks. Extras that she suggests will make your party complete include a good cocktail shaker, bottle opener, double-sided jigger, cocktail strainer, decanter or aerator, wine chiller and an ice bucket. Hosting a holiday celebration doesn’t have to send you into a Grinch-like mental state. D’Orazio recommends keeping certain design principles in mind, whether entertaining, redecorating a bedroom or redesigning your house. “I find myself preaching harmony a lot,” she says. “That being said, it isn’t about everything being the same. It’s the use of a common shape, colour, and material, to name a few. As you move through a space or from room to room in a home, the more likeness in elements used, the more harmonious the design.” bestsidemagazine.com
Texture is also important, says D’Orazio, likening it to an artist’s brush stroke on a painting. “The texture of all surfaces and finishes in a space can be chosen carefully to create another dimension of the design. I love neutrals; by layering different textural elements you can create a space that is visually interesting, without being too in your face.” A less-is-more approach is also part of her mantra. “I always pick two colours and work those in with the neutrals – more than three, especially layered with texture and pattern, can become a sensory overload. Different colours have different impacts on human psychology so these will vary by room or client preference. Learn to fall in love with the negative space, she advises. THE OAKVILLE MUNICIPAL GREENHOUSE & CONSERVATORY the town’s parks, street planters and hanging baskets, as well as preparing 377 hanging baskets and 312 barrels for display throughout the town each summer. Those favourite fall mums – about 2,500 of them – are grown here and planted throughout Oakville’s parks. The greenhouse, located at 1100 Cornwall Road, is run by Steve Wiersma, Manager of Parks Operations and Galina Tchouprikova, Senior Green House Operator and assisted by a group of 20 volunteers (many of them long-term) who help with seedling transplants each April and during the Doors Open event. Tchouprikova enjoys taking individual care of the plants which all have different growing conditions. “I like to supply Parks with a variety of plants that residents appreciate,” she says. “I enjoy seeing the designs from these flowers that gardeners create for Parks’ flower beds. I like when Downtown, Kerr and Bronte BIAs complement our work on hanging baskets and planters that are placed on streets.”

n the outside the Oakville Municipal Greenhouse is unassumingly austere, but inside it’s a mini tropical oasis complete with lush greenery intermingled with colourful plants and flowers and water features.

It’s a relaxing space open to the public for anyone looking for a quiet reprieve. On the strictly municipal side, the greenhouse functions as the operation headquarters for growing the town’s greenery. About 100,000 plants are grown each year for

During the holiday season, a beautiful poinsettia tree adds festive flare and forced bulbs are on display during the Spring Show. The patio boasts beautiful displays; a great place to pause and enjoy as you’re surrounded by flowering plumeria, bougainvillea, lantana, bay laurel, fig and olive trees. Need a cure to combat those dreary months? Wiersma says the greenhouse is one of his favourite places to visit, especially in the winter. “The public conservatory has a great number of tropical plants that remind me of visiting the Caribbean,” he says. “My favourite plants are the Ponderosa Lemon, and the cactus and succulent collection.” Open from September – June and private bookings only in July and August.
