General Manager’s Letter I am excited to enter this upcoming season. Our team has grown, we are returning to a more normal Club environment, and we have a lot of exciting things planned for this season. Chad Schultenover, GM/COO
We have welcomed a new Executive Chef, Brad Fisher, CEC, CCA. Brad is looking forward to meeting all of you this season. When a new Chef joins the Club, they spend time observing and getting to know the team and membership. They spend time learning traditions and finding ways to improve events. There is a lot to take in for a new Chef in the first season. Please join me in supporting Brad as he becomes a part of our QC family where I know you will all enjoy dining under his leadership. We have also welcomed Donna Dickson, Clubhouse Manager. Donna is an aspiring manager looking to join a Club and team where her expertise is felt, and she can continue to grow as a leader. Donna’s role is a return to a much more traditional style of F&B management. I am confident that with Donna overseeing the Clubhouse and Brad in the kitchen, that this duo will begin to improve the member experience at QC. COVID-19 is not gone yet. We continue to review the CDC guidelines as well as the state of Florida mandates. We are doing our best to navigate through this situation as we return to normal. We expect to bring back buffet style dining as well as some of our traditional events. Plenty of thought and care will go into making sure things are safe. We will continue to keep you updated as more information is available to us. We are so excited to bring you a lively 2021-2022 season this year. Our team has created a fun and entertaining schedule of events and we look forward to serving you. Our 40th Anniversary will be celebrated at the Welcome Back Party this year. Don’t miss this event. All members are welcome. Return to buffet style Sunday Brunch with the addition of live entertainment at some of them. Wednesday night dinner will return this season. Look forward to special dining promotions like Pasta Night and other fun attractions. Our winter concert series on the lawn will be sure to bring you back each month for an encore. There is plenty more on top of all of this.

It is hard to believe but it is time for the 2021/2022 season to begin, and we couldn’t be more excited to welcome everyone back. With a full event schedule, closing in on a full Membership and the continued growth surrounding the game of golf, it is poised to be a fantastic season at Quail Creek. As we enter our 40th Anniversary season, we will look back at where we have come from and continue to look forward to where we want to go. This milestone year will be one to celebrate, enjoy and experience with your friends, family and guests. We look forward to continuing the positive momentum established last season, and the record rounds played over the summer months throughout this season. We have nearly 120 events scheduled from November through April between our Club and Association events and we hope you are as excited to participate as we are to host. Courtside Greetings from the Courts!

We have had an exciting summer, filled with activities and events! The summer in Southwest Florida has brought extreme temperatures but it has not taken away our courts’ activities. I cannot remember a summer this active from the years that I have been part of Quail Creek Country Club. Our Bocce Courts have had tremendous success! As phase 3 was completed, our Members found the Bocce Courts to be one popular area to socialize. With the addition of an organized intraclub summer league, our Members have competed on Thursday nights in a fun and competitive league. Bocce has been such a great addition to our membership and we cannot wait to share the new events that we have to offer! As we wrapped up the summer intraclub league, the RED team was the league winner! Congratulation to John Friend (captain), Janette Logan, Judith Muholland, Linda Bunch, Drexel Bunch, Tim Reid, Jennifer Reid, Jennifer Carney and Mary Lou Walsh. Pickleball has been very active as well, even though the high temperatures of the summer makes us adjust our play times. Pickleball has been great to Quail Creek Country Club, our team still meets Members who are new to pickleball and want to give it a try. The sport has bridged some of the gap in between tennis players and golfers, who now meet on the pickleball courts. With Pickleball growing so rapidly around the world, we are also planning more events around the pickleball courts! Tennis also had some wonderful highlights. On July 10th, we had a pickleball and tennis mixer on our courts, called the Breakfast at Wimbledon event. The day started with a stretch at the net with our Fitness and Spa Director Luanne Smith. We had a total of 81 players mixed in between the tennis and pickleball courts, which was record setting for us for this time of the year. After the event, we hosted a Professional Tennis Exhibition on our multipurpose lawn, which had over 100 attendees. The “Grass Tennis Exhibition” was so well received that we are looking forward to hosting another during the season so our membership can have the experience of grass tennis. We are very excited about the upcoming season! Our team has put together many events that will incorporate social aspect with the sports. Looking forward to seeing you on the courts! Fitness, Wellness & Spa Can you believe how fast time flies every summer? Here we are getting ready for season again. Our fitness/spa teams have been busy this summer. Here are a few highlights:
Luanne Smith, Director of Fitness, Wellness & Spa
All of the fitness team got to work with our first ever QC Kids Camp. The pictures don’t do them justice. The kids were a lot of fun, very out spoken and kept all of us on our toes for the month of July. Big thanks to Rachel Koral who used to attend camp at QC back in the day and was a camp helper when old enough. She is currently an art teacher in the area. Luanne and Joan went through a vigorous Pilates training and are now certified thru The Pilates Standard. The class has only been available to attend in Europe. Joan and Luanne spent 7 full weekends (Friday, Saturday and Sunday) over the past year taking this class. Don’t be shy if you want to know about Pilates–they are the ones to ask! Thor stayed busy this summer running the Junior Golf Performance Summer Golf Camps helping grow the game of golf to over 200+ golfers this summer! He also has hit the half way mark in becoming the first recipient of a Masters Degree in Exercise Science specialized in Golf Performance from CALU. In addition to that–he is a finalist for the 2021 South Florida PGA Section Award for Youth Player Development Professional of the year! This season we hope to stay with as many classes (or more if needed) as last season. Marti Dowman will be returning with Yoga two times a week. Alex will be cycling multiple times a week in addition to a new class, Bikes and Boards–25 minutes on the bike followed by 25 minutes in the springboard room. Alex and the fitness team have been doing extra springboard training with Nora Gomez Deers, master Pilates Instructor and Teacher Trainer. We will be offering more small group options for the springboard and Pilates studio this fall. Look for them on the website and app to sign up weekly. Alex is working on her NASM Personal Trainer Certification and will be adding personal trainer to her list of things she can do here at QC. We added some great new items to the spa last year. We now carry Quail Creek robes. The robes are embroidered and available in two styles. Supracor bath mitts have been a great seller. We have also added the Hypervolt GO to our current line of Hyperice massage products. Our trainers and massage therapists have been using the Hyperice products in the fitness center and spa on our clients. I am very excited to join you as the new Executive Chef of Quail Creek Country Club. I really look forward to meeting all of you over the course of the season. Our conversations will help me shape our menus and events at the Club. In addition to getting to know all of you, I am excited to meet and with work with the Quail Creek staff. They all have been so gracious in making my transition from PA to FL very easy. Below and continued on the next page, is a recipe to consider as we enter the fall months. Happy cooking! Green Curry Chicken Bowl Yield: 6 servings Ingredients 2 T canola oil 2 T garlic – minced 4oz fresh ginger – peeled and sliced 1 stalk of lemon grass – sliced 2 kaffir lime leaves – optional (if used remove before eating) 2 Thai Chilies - Slice in or leave whole and remove once cooked 2ea - 2 lb. Whole Chickens 2 T green curry paste – Mae Ploy brand recommended 4 – 13.5oz cans of coconut milk – CHAOKOH brand recommended 4oz cream of coconut (COCO LOPEZ) 1 tsp. fish sauce 1 cup heavy cream 2 T granulated sugar 3 cups cooked jasmine rice 1.5 cups reserved cooking broth from the chickens .5 cup fresh cilantro Fresh basil leaves 16

Procedure 1. P oach the chickens in water with an onion until fully cooked. Strain the cooking broth and reserve for future recipes. 2. Pull all of the meat from the chickens and discard the carcasses. 3. I n a sauce pan add oil and heat over medium heat. 4. A dd the garlic, lemongrass and ginger and sweat 2 minutes 5. A dd the coconut milk, fish sauce, sugar and cream of coconut and bring to a simmer 6. D issolve the curry paste in the cooking broth from the chickens and add. 7. Allow to simmer for 20 minutes. 8. Add the cream and bring to simmer. 9. M ake a slurry out of cornstarch and the cooking broth and thicken the sauce to the desired consistency. The sauce should coat the back of a spoon. 10. Add the pulled chicken meat to the sauce and heat through. This is a basic green curry recipe with a few of my personal touches. I like to add the cream to give the sauce a creamier texture and I like to thicken the sauce slightly to ensure that it’s viscous enough to coat the chicken. To plate; heat the jasmine rice and sauté some fresh zucchini with ginger. Place the rice in a bowl, top with the curry, spoon over some of the ginger zucchini and top with fresh chopped cilantro. My recommendation for wine with this dish would be Pinot Grigio or Sauvignon Blanc. Both compliment the dish nicely.

QWOFF is a group for all women of Quail Creek married, single, or widowed who enjoy getting together to have fun. This includes book and movie reviews, theater outings, lunch, dinner and other special activities in the Naples area. QWOFF always has a table reserved for Club functions and Dining events. We will be happy to meet with you before any event and introduce you to everyone. During season, call Lois Werder (239-514-0072). For all QWOFF events, if you plan to stay for dinner, please make your reservation in advance and request the QWOFF table. During Season, a QWOFF table is always available for dining on Sundays at 5:30 pm.

Men’s Fellowship
Wednesday, Oct. 27 – Pasta Night at 5:30pm
The Men’s Christian Group meets for golf and fellowship on Mondays at 11:00 am in the Board Room (when it is available). This group meets for one hour. Many issues and topics related to the Christian faith are discussed. Following the meeting, the group plays nine holes of golf. Everyone is welcome whether they play golf or not. This group meets from October to the end of April.
