welcome

D

ear passengers, I would like to welcome you aboard our plane, where our crew members will introduce you to the distinguished services that Royal Jordanian has to offer, hoping to meet all your inflight expectations.

We have reason to celebrate this autumn: our airline received its first Boeing 787 Dreamliner aircraft in late August, marking a qualitative leap in the aviation industry in Jordan, and giving you the opportunity to enjoy the latest technology and innovation on board this totally new and efficient aircraft.

Boeing trained tens of pilots in London to fly the Dreamliner. It also held training sessions for a group of engineers, technicians and crew members who, in turn, trained their colleagues on maintenance and inflight services of the new aircraft.

Since it establishment 50 years ago, RJ has been constantly modernising its fleet to better serve passengers and meet their needs by providing exceptional services through its skilled and welcoming cabin crew.

The 787 has modern system architecture that is simpler, more functional and more efficient than that of today’s airplanes. For example, on-board health-monitoring systems allow it to monitor itself and report system maintenance requirements to ground-based computer systems. In addition, its LED-based lighting system adapts to daylight levels during take-off, offers a warmer light during meals and dims to help passengers relax or sleep.

The introduction of the new aircraft will pave the way for RJ to step into a significant period of fleet renewal to serve its long-haul routes. A further four Dreamliners will join the fleet before the end of this year, and the rest of the ordered aircraft will follow in the coming years, replacing the currently operating Airbus 330s and 340s.

The efficient special features of the new aircraft give our airline a competitive advantage when it comes to on-board and cargo services.

The introduction of the Dreamliners is another important achievement for the airline’s record. The step will boost RJ’s on-board services and route network, promising a brighter future and enhancing its competitiveness at regional and international levels.

This airplane has improved fuel efficiency, as it uses 20 per cent less fuel than today’s similarly sized airplanes, enabling it to offer an eco-friendly performance. The new Dreamliners also offer 20-30 per cent more cargo capacity, compared with other airplanes of the same size.

We are proud to have the Dreamliner flying across the Jordanian sky. It will enable us to offer you, our passengers, a memorable and unique travel experience to more than 50 destinations across the world.

Passengers will experience more comfort and luxury on board, enjoying higher cabin humidity levels, 65 per cent larger windows and more legroom. The Boeing 787 has a total of 270 seats: 24 full flat-bed seats in Crown Class and 246 in Economy Class.

W AFTER the

ith the heat of the Jordan summer now turned into a warm glow, the plethora of sports activities the country has to offer will draw visitors off the beaches and into the deserts, mountains and canyons. And the best part for would-be adventurers is that the proximity of these sporting destinations, and the helpfulness of local tour guides, means they can choose to devote their adventure to one activity or to experience a handful of thrills.

Get on your bike A relatively new way to explore Jordan’s incredible landscape, mountain biking is turning into one of the most popular tourist sports in the kingdom. A huge advantage is that it can easily be combined with experiencing culture and heritage. Jordan Explorers, specialising in adventure tourism, offer biking tracks that range from a weekend getaway to an intense weeklong tour. Their King's Ride excursion, for example, takes visitors on a journey through desert and alongside the Dead Sea, combining fantastic biking with an authentic Bedouin experience, including camping and stargazing. Jordan Explorers' Founder, Hanna Samir Jahshan, says: ‘Before I started the business ten years ago, I was regularly trekking and camping all over Jordan. Then I dreamed of being able to turn my hobbies into a viable business and promote my country to as many different people as possible, giving them the most inspirational and exciting experiences.’ This desire to create unforgettable adventures has been growing stronger, with the constant creation of specially tailored programmes that offer bikers trips through incredible terrain and heritage.

Terhaal is a two-day adventure, with one night spent camping out under the stars. The tour takes you through an incredible gorge that is filled with hanging gardens, water springs and waterfalls, the biggest of which is about 80 metres high. There’s also a huge hanging boulder, red-rock gorges, limestone caves and the incredibly rich aroma of dense wild mint bushes. The trail ends at Ghor Al Mazra’a, next to the Dead Sea, so visitors can end their trek with a much-deserved mud bath by the salty waters.

Views to dive for From the beauty of the wadis (valleys), travellers can head to the southernmost tip of the kingdom to the marine-life treasures of its coast. The crystal-clear waters are home to a multitude of colourful corals that visitors can discover on a simple snorkelling outing or explore more deeply with an underwater diving experience. Aqaba's reefs start right at the water's edge, and the sea itself is the perfect temperature at this time of year, with calm waves of an ideal 25C. One of the most prestigious centres at the sea port is Dive Aqaba, which offers training sessions for guests with all levels of experience, from beginner to instructor. Established in 2002, the diving centre – which has just undergone a huge refurbishment to upgrade its guest services – specialises in boat diving, taking travellers to some of the best sites in the region. From the Eel Garden, where the black corals are covered by waves of the beautiful sleek creatures, to stunning night dives at the Cedar Pride shipwreck, there are myriad underwater adventures to enjoy. j

Grand canyoning Riding through incredibly refreshing, translucent waters that gush up rivers and on to enormous smooth boulders, climbing up apparently never-ending gully walls whose multi-coloured sides run up into the sky... canyoning in Jordan gives travellers the chance to practise so many different activities in one adventure, and to the ability level that suits them. There are plenty of tours to choose from, and one of the most spectacular sites lies in Wadi Karak. Excellent for those with moderate experience of the sport, the Wadi Karak Canyoning trip offered by

Take a bird's-eye view One of the most awe-inspiring ways to experience the Jordanian landscape, paragliding is an alternative adventure that's gaining more followers. Autumn is the best season to take to the skies for this ultimate adrenaline rush: the country boasts some of the most magnificent paragliding spots in the region, with visitors able to soar above the red rocks of Wadi Rum, the hidden treasures of Petra, the sheer wonder of the Jordan Rift Valley and the busy capital. Anyone who wants to try must already have passed a course in paragliding before they can take to the skies in Jordan. Jordan Direct Tours offer trips run by professionals, with packages that range from one day to week-long treks, taking adventurers from the north of the kingdom down south, over Mount Nebo, King Talal Dam, the nature reserves of Dana and Feynan, and much more. It's a dramatic way to see the natural wonders of Jordan, and undoubtedly worth the effort.

World-renowned guest house Feynan Ecolodge is one of the region's top environmentally friendly places to stay, with stunning interior design and great views of natural beauty. It offers year-round activities for visitors, and from September is bringing together its accommodation and adventure offerings into one package. ‘Our guests come to sample some of Jordan's most interesting hikes, meet Bedouin people and enjoy the peace of a remote, candle-lit 24

lodge,’ says Sarah Dobbing, Feynan’s marketing and operations executive. The activities included in stays at the Ecolodge this autumn are hikes with trained nature guides, visits to Bedouin families, cooking classes covering delicious local delicacies, plus stargazing on the lodge's rooftop. It’s also especially worth making the effort to do the Wadi Dana to Wadi Ghwayr hike, which gives views of the full spectrum of landscapes and terrains Feynan has to offer.

Visit Bursa to discover Turkey’s newest Unesco World Heritage Site, famed for its role in Ottoman history

T WORDS

he myriad charms and cultural splendours of old Istanbul are widely known, but the true cradle of Ottoman civilisation is found about 80km south of the city, just beyond the shore of the Sea of Marmara. Some two centuries before the Ottoman Empire entered its so-called ‘golden age’ in the 1500s – when, during the reign of Süleyman the Magnificent, the great Ottoman architect Mimar Sinan was overseeing the construction of the Süleymaniye Mosque in Istanbul – tribal leader Osman Gazi founded a small state in Bursa and the surrounding area. This state would go on to become the Ottoman Empire, and the foundations of its civilisation and power were laid in the newly conquered city of Bursa, which Osman’s son Orhan made its capital. In recognition of the city’s historic and cultural importance, several sites in and near Bursa were collectively made a Unesco World Heritage Site in June 2014, becoming the 13th such site in Turkey. Modern Turkey’s fourth most populous city, Bursa was known as Hüdavendigar (meaning ‘God’s gift’) during the Ottoman period, although these days that title has been superseded by the nickname Yeşil Bursa (‘Green Bursa’), on account of the lush greenery j

The historic courtyard of Bursa's former silk market is a great place to stop and drink tea

Wander into the city’s labyrinthine bazaar and you’ll find what were two of the busiest spots for this silk trade – the İpek (‘silk’) han and the koza (‘silkworm cocoon’) han – where there’s still plenty of silk for sale, although most of it’s now imported. The large and well preserved 15th-century courtyard is now a çay evi (tea house), and one of the most pleasant places in Bursa to sit and watch the world go by, whether over a tulip-shaped glass of steaming amber tea, or while sipping a thick Turkish coffee. İskender kebab – one of Turkish cuisine’s most mouthwatering dishes (and certainly this author’s favourite, sampled all over the country as a culinary yardstick over the past 20 years) – also has its origins in 19th century Bursa. Named after its inventor İskender Efendi, it consists of slices of succulent döner kebab laid across a bed of chopped pitta bread, doused in tomato sauce, browned butter and yoghurt, and goes perfectly with a tall glass of fresh ayran (chilled yoghurt drink). Bursa is also the place most closely associated with Karagöz, the traditional Turkish art of shadow puppetry – which, according to legend, is based on the antics of a pair of eccentric characters employed as construction workers on one of the j

of its surroundings. It’s also a major industrial centre, and among other things, the base for much of the country's motor industry. The city’s history has blessed it with some outstanding architecture, from early Ottoman mosques and tombs to stout citadel walls and a sprawling covered bazaar. Its Unesco listing includes the nearby village of Cumalıkızık and encompasses several külliyes (groups of religious buildings, established around a mosque and integrating schools, public baths and a kitchen for the poor), the hans (inns) of the nearby bazaar, the Yeşil Cami (Green Mosque) with its shimmering tiles and the Ulu Cami (Great Mosque) with its elegant calligraphic panels, as well as the beautifully preserved Ottoman houses of Cumalıkızık. It also covers the tombs of Osman and Orhan Gazi, which are comparatively modern, both rebuilt in 1868. The originals were destroyed, along with many nearby buildings, by a devastating earthquake in 1855. Bursa was the main centre for the production of silk during the Ottoman period, and most of the luxuriously embroidered royal robes you may have seen at Topkapı Palace in Istanbul or at the Textile Museum in Washington DC or the Victoria and Albert Museum in London were produced there. 40

Bursa is blessed with outstanding architecture, from Ottoman mosques to a covered bazaar

Ottomans knew as Constantinople and which they conquered in 1453, ending the Byzantine Empire and completely changing Europe’s political order. When the great medieval traveller Ibn Battuta visited Bursa in the early 14th century, just a few years after it became the first Ottoman capital. He described it as a great city with fine bazaars and wide streets, surrounded on all sides by gardens and running springs. Some of the gardens may have long since vanished beneath the urban sprawl, but otherwise he might have written the same of this historic city today.

city’s mosques in the 14th century. The expressive puppets, made of tough leather (often camel hide) and mounted on sticks, are illuminated and animated behind a white sheet. The comical actions and often bawdy humour of Karagöz were once performed widely in Turkey's coffeehouses, parks and other public places, and it was added to the Unesco list of Intangible Cultural Heritage in 2009. Bursa sits in the shadow of Uludağ – a volcano that is more than 2,500 metres high and rises steeply above the city’s south-eastern edge. Simultaneously a national park and Turkey’s most popular ski resort (the ski season starts in October), its upper slopes are easily reached by a cable car that starts from the suburb of Teferrüç. Hiking trails snake up Uludağ to a group of alpine lakes and the summit itself, from where the view on a clear day stretches across the Sea of Marmara to Istanbul – which the

Barcelona La Boqueria Market bolets (wild mushrooms), one of the main components of Catalan cuisine. Mushrooms at the market come in dozens of varieties, including porcini, chanterelle and saffron milk cap. Autumn is also the best time for seafood, including cuttlefish, squid, clams, red shrimp and octopus, which are traditionally used in rice dishes and soups or as main courses. As the year moves on to chillier November, roast chestnuts and sweet potatoes emerge, traditionally served in cone-shaped bags, while December brings in pedigree poultry including duck, turkey, guinea fowl, goose and chicken. If you’re feeling hungry and want to try some of the best food on offer, the market is peppered with lively stalls where customers can sample the region’s tantalising range of dishes. j

With more than 40 bustling food markets showcasing a host of fresh produce, Barcelona is undoubtedly one of the best cities in the world for true foodies. The city’s award-winning La Boqueria Market is a landmark in itself, with its grand iron entrance and metal roof that dates back to 1914. Fresh fish, seafood, game and offal, fruits, vegetables, charcuterie, breads and pastries – to name a few – are all neatly displayed here, while autumn sees the appearance of a host of Catalan gastronomic delights: pumpkins, aubergines, turnips, pulses and artichokes, most of which are traditionally found in hearty soups. In October, wild boar, quail, partridge, hare and pigeon are cooked in rich stews, often accompanied by 50

London’s oldest fruit and vegetable market dates back to the 13th century, when traders congregated there to sell a host of foods, including grain and livestock. Borough Market today is home to more than 100 stalls, where farmers from all over Britain showcase fresh produce including fish, meats, vegetables, cheeses and pastries. Most traders are primary producers who make, grow or breed the seasonal produce themselves. By September, the shooting and hunting season has already begun, thrusting game birds and wildfowl into the culinary spotlight. Pheasant, grouse, duck, goose and grey partridge line up along the meat counters, plus a tasty range of chutneys and pies. This time of year also brings all manner of greens to the table. Early autumn heralds the arrival of bright orange pumpkins and butternut squash, along with root vegetables such as beetroot, turnips and baby carrots. Rosy-cheeked apples sit side by side with tawny-skinned Cox’s apples, traditionally used in English desserts such as crumbles and pies. Colourful wild fruits abound during these months too. Blackberries are ready to be picked in early autumn, and elderberries provide the flavour for jelly and cordial. Ruby red cranberries take centre stage and are traditionally used to make the sauce for the upcoming Christmas feast.

Historic Campo de’ Fiori has attracted locals for centuries with its tasty produce

Istanbul Inebolu Pazarı Market Alpine meadows, rolling highlands and quaint fishing villages mean the Black Sea region has long been exalted by Turkish people, but the area doesn’t just look good, it tastes good too, producing some of the country’s best cuisine. Villagers from around the Black Sea travel to Istanbul and set up shop at the İnebolu Pazarı farmers’ market on Sundays, where they display a tantalising array of cheeses and wild mushrooms, swirls of creamy butter, fine selections of teas as well as freshly baked corn bread. The season gives rise to the renowned Black Sea anchovies, Jerusalem artichoke, leeks and pumpkins, all used in thick soups, while figs, cranberries, damsons and pears are often the basis for flavoursome homemade jams. This is not one of Istanbul’s best known markets, and you’ll hardly see any tourists here, but it’s a fascinating shopping experience where you’ll be jostling with eager locals. 52

Rome Campo de’ Fiori Market With the approach of autumn, when the temperature drops and the colours of the landscape change, Italian cuisine becomes richer, warmer and heartier, with meat casseroles, thick vegetable soups and hearty pasta dishes appearing on the table. Cooler evenings and shorter days also provide the perfect time for sharp-eyed mushroom hunters to scour the forest floor, with dozens of varieties found all over the country. A favourite is the rich, earthy porcini, traditionally used for creamy, smooth soups, pasta sauces and pizza toppings. Rome’s lively Campo de’ Fiori, one of the city’s oldest markets and for centuries the stage for public executions, bustles with shoppers each morning. Autumn is an exciting culinary season, with sellers displaying radiant pumpkins, sweet figs and heaps of roasted chestnuts that are traditionally sold bagged up and piping hot. Fruit stands also showcase juicy persimmon and tear-shaped prickly pears with light, airy centres.

A

s the days grow shorter and temperatures start to cool, nature lovers head off on road trips across the US to witness the unforgettable spectacle of trees turning from green to autumnal yellow, red, orange and even purple. Known as ‘leaf peeping’, these seasonal sightseeing journeys fi rst became famous in New England, in the north-east of the US, but the tradition has since also taken root further afield. The Great Lakes region offers dramatic panoramas, as brightly coloured woodland stands out against agricultural landscapes, and blazing trees line thousands of kilometres of shorelines and waterways. Chicago and Detroit’s lakeside locations mean you don’t even really need to set foot outside the city to experience these vistas, with the parks on Lake Shore Drive in Chicago and Belle Isle in Detroit both putting on awesome autumn displays. j 55

TRAVEL TIPS CHICAGO

Stay Hotel Lincoln boasts a thrilling heritage – past guests include Al Capone and Pulitzer Prizewinning playwright David Mamet – and it’s set in one of Chicago’s greenest neighbourhoods. Ask for a room overlooking Lincoln Park and Lake Michigan for the best views. 1816 North Clark Street.

But it’s out beyond the city limits, in rural Illinois and Michigan, that Mother Nature really shows what she’s made of. America’s most famous road, Route 66, stretches for nearly 4,000km from the Midwest out to the Pacific coast, and it all begins in Chicago. Driving this heritage route southwest through northern Illinois is a great way of combining leaf peeping with roadside attractions, museums and restaurants. As October advances you’ll see sugar maples turning vibrant orange and red, while walnut leaves blaze yellow and white ashes take on a deep purple hue. These colours are present in the leaves all year round, but it’s only when levels of the bright green pigment chlorophyll begin to fall as the climate changes that all the other colours become visible. Autumn festivals celebrating the turning leaves and the harvest are commonplace all over the Midwest. The 20km of walking trails at Starved Rock State Park, a 90-minute drive from Chicago, are open all year, but free guided tours of the best leaf-peeping 57

spots in the area take place over the Fall Colors Weekend (18-19 October). You might even spot bald eagles in the wild, too. The Klehm Arboretum and Botanical Garden in Rockford, Illinois, is home to more than 300 species of trees, many of which are non-native, making it one of the richest leaf-peeping experiences in the state. Th is historic park, less than two hours from Chicago, is particularly worth heading out to on 5 October, when it plays host to Autumn at the Arboretum, a day of family fun including scarecrow making and horsedrawn wagon rides. There are plenty of autumn colour opportunities for travellers based in Detroit, too. Michigan has one of the largest state parks and state forest systems in the US, as well as more than 11,000 inland lakes, meaning that you don’t have to drive far before you come across a patch of beautiful wilderness. The leaves start to change in September in the north of the state, while October is the best time to take to the road if you’re staying closer to Detroit. j

From the Motor City, follow the shore of the huge Lake St Clair to Algonac State Park, where the oak savannas put on a multi-coloured display of green, red, yellow and orange, or head north-west to the Holly Recreation Area – more than 32km 2 of rolling woodland, lakes and open fields. Culturally minded travellers should continue from Holly to Grand Rapids, where the annual ArtPrize competition takes over downtown, and will this year be held from 24 September to 12 October. On the outskirts of Grand Rapids, picturesque Fallasburg County Park holds an arts festival of its own on 20-21 September, featuring a craft and fine arts market, food stalls, live music and a children’s activity area, plus evening entertainment. Covered Bridge. Listed on the US National Register of Historic Places, it is one of only three such traditional bridges in Michigan that are open to traffic. The area is also home to Fallasburg Historic Village, whose school and house museums tell the story of local life in the 19th century. When it comes to planning your own leaf peeping day trip, it's worth remembering that the best times for taking photographs are early in the morning and late in the day, when the sun is sitting low on the horizon. Cloudy days set off the colours beautifully too, so there’s really no need to wait for the sun to come out before setting off on your woodland adventure. Weekends can be busy in the most popular spots, so consider a weekday excursion for a more peaceful trip. And most importantly, be ready to take the road less travelled – there’s nothing more thrilling than turning a corner and seeing a magnificent vista open up before you… and having it all to yourself. 58

What are your main duties? We ensure that passengers receive an exceptional service from the moment they step on board until they leave. We help them to their seat and stow luggage overhead. We appreciate cultural diversity, and sensitivy towards passengers who may need extra help, such as children. What about safety? Flight attendants are highly trained in service, safety and emergency situations. We can’t always attend to passengers’ requests straightaway, for example during take-off or landing. But they understand that we’re not there only for service; we’re there for their safety. What qualities should a flight attendant have? Caring, good communication, quick-thinking and patient, with a warm, welcoming smile. Also, multitasking and keeping a calm environment onboard.
