T
he DoubleTree by Hilton in Trieste, recently inaugurated by HNH Hospitality, one of the main Italian independent hotel operators in the management of 4 and 5 star hotels, per fectly combines the historicity of architectural forms with the needs of contemporaneity. This is immediately confirmed upon entering the spacious lobby, inspired by the solemnity of classicism, which welcomes guests immediately attracted by the iconic marble fountain depicting Neptune with three lions drinking. In the imposing building, conceived between 1911 and 1913 by architects Ruggero and Arduino Berlam, the motif of solemnity is recurrent starting from the monumental staircase that leads to the first floor where one can wander around the historic librar y. Here, however, there is also the Berlam Coffee Tea & Cocktail which, overlooking Piazza della Repubblica, is an ideal meeting point before moving on to the Novecento restaurant with its menu attentive to local and international cuisine.

eaching the Upper East Side, we find a more relaxed dimension which is certainly due to its proximity to Central Park. A modern extension which ensures brightness and freshness is created by The Mark Hotel. Today this pleasant building at the corner of Madison Avenue and 77th Street, dating from1927 and just steps from the famous park, is, in fact, a hotel where design and classic features come together with a surprising result. For The Mark Restaurant by Jean-Georges, the famous JeanGeorges Vongerichten, French chef attentive to the simplicity and fresh market produce, composes a menu that dispenses subtle elaborations of classic European cuisine. odern, very central, good design. In the common areas and suites local stone and wood dominate. The result is a palette of colors ranging from beige to light brown. They confer a feeling of warmth to its spaces. The ski slopes are nearby, as is the station of the Gondola, used to reach the nearby peaks. Hence, despite its central location - due to the small size of the center - guests are, nevertheless, in a perfect position to devote themselves to nature. The hotel’s restaurant, Whitebark, is fully lined in wood and this gives a very mountainous atmosphere. Executive chef Jeremy Graham, with a very American menu ranging from land and sea does not, nonetheless, neglect Scottish salmon or Spanish gazpacho. A pleasant experience in which we were also protagonists of the life enjoyed at the edge of the spacious pool.

Saas Fee Lost deep in the Saas valley in the Swiss canton of Valais, Saas Fee is a dream that has taken its present forms of tourism thanks to a somewhat special pioneer: pastor Johann-Joseph Imseng. A native of Saas Fee, the place where he was born in 1806, the young Johann-Joseph, a priest since 1829, soon began to keep company with

the aristocratic travelers busy discovering the mountains of Valais. Having become pastor of Saas Fee in 1836, Imseng was characterized by entrepreneurship and activism united to his love for the mountains and the desire to advance his homeland. The pastor, in August of 1847, led a group from Zurich in an exciting climb up Allalin. It was only the first in a series of ascents to the
summits of the Valais which soon became events capable of making the priest-guide known even abroad. Before Imseng’s death in 1869, he still had the time to assist directly in opening several hotels to improve the conditions for the reception of those who went to the Valley. Not just help for his parishioners but a transformation of the culture and economy of the place was undertaken by Johann-Joseph Imseng. Thanks to his determination, and his optimism, the Saas valley began to show its full tourism potential. In the village of Saas Fee, at 1800 meters above sea level, attractions and scenic areas establish today, as at the time of the pastor Imseng, a permanent

dialogue between the beauty of the Valais, the culture of the mountain and the elaboration required for a modern tourist destination, all in an ensemble on a human scale. The winter for citizens in the Free Republic of holidays Saas Fee combines, in fact, the largely sunny blue sky with white snow covering100

kilometers of slopes. Cadenced as the rhyming of a poem dedicated to the magic of winter white, Saas Fee boasts among its records, the Dom (4,545 m), the highest peak in Switzerland and the ice grotto (Eispavillon), the world’s largest (5,500 square meters) without forgetting the Mittelallalin, where you can have lunch in the world’s highest revolving restaurant (3,500 m), and enjoy sustainable quality tourism. Not to be overlooked is the Metro Alpin, which opened December 19, 1984, and is still the highest underground funicular railway in the world. To the charm of the past - as evidenced by surviving the alpine architecture - one weds the attention for the present and the future. Saas Fee has been closed to automobiles since 1951.

The family has four estates in the suitable lands in the west of the island and it is right near Marsala that the grapes used for the famous Marsala Pellegrino which we tried for this article are grown. This fortified wine was the first to be produced by the Pellegrinos and the one that made it successful. It was immediately exported abroad. Marsala Superiore Riserva 1985 DOC It is a semi-dry wine made from Grillo and Catarratto grapes aged at least 48 months in barrels and 6 months in barrique. Aging gives it an intense aroma with notes of honey, orange, vanilla and candied fruit. In addition to traditional combinations with dry desserts, we also recommend trying it with patĂŠ de foie gras and aged cheeses. Marsala Vergine Riserva 2000 DOC A dry wine with a strong alcohol content. It is aged for at least 10 years in oak barrels which contributes to its spicy notes and hints of dried fruit. In addition to dry biscuits, it goes perfectly with parmesan and onion jam. M ar sal a S o l e ra s Virgin D O C It is obtained with Grillo, Catarratto and Inzolia grapes and is aged “onlyâ€? 5 years in oak barrels. The resulting color is deep gold and the aroma is always intense but with hints of toasted almonds. It also goes well with dark chocolate and, if you want to dare, with avocado and grilled shrimp.

The family also has vineyards in Pantelleria, where they produce traditional wines. Among them we tried the Passito DOC. Passito di Pantelleria DOC Sweet dessert wine made in Pantelleria from Zibibbo grapes grown using the “Pantelleria tree�, a type of cultivation protected by Unesco. The taste is honeyed with notes of apricot that are also distinguishable on the nose. Excellent with traditional Sicilian ricotta desserts.
