Spring has sprung – and after a particularly chilly winter, I’m absolutely loving this sunshine and 75-degree vibe. Beyond flowers in bloom and perfect patio temperatures, another way to know its springtime in Scottsdale is the plethora of events and activities happening this month.

The lively energy is palpable, and we’re here to fill your calendar. Sharon Skaar and Erin Dodd, founders of skin care line TreCeuticals, on the power of tenacity

Sharon Skaar and Erin Dodd were living the high life. Skaar was happily retired from fulfilling career in finance with one of the largest banks in the world, Dodd from a 45-year career in the luxury fashion world. They had been leaders in their respective industries, high-level managers and executives, and now found

time for a long list of hobbies, from golfing and shopping to world travel and self-care. But one night, while sitting around the firepit just three years into their friendship, the pair had a conversation that would start them on a whirlwind journey.

“We were talking about skin care – and yes, there was wine

involved,” Skaar says. “There are a lot of skin care brands out there and they all promise a lot of things, but no one had really gotten the recipe right as far as we were concerned. I’ve walked out of a store with a bag full of bottles that I’ve had to write on – ‘a.m., p.m., first, second, third’ – all these different steps. It doesn’t have to be that hard.”

That night, they grabbed a cocktail napkin and began scribbling plans for their own line, one that combined CBD, a proven anti-inflammatory, with the scientifically-proven active ingredients that many existing products lack. The very next day, they got to work on their new passion project, TreCeuticals.

The cruelty-free, medical-grade skin care line combines the very best of nature and science, with plant-based oil, retinol, hydroxy acids, and antioxidants that work to nourish and brighten skin. The entrepreneurs knew they had a hit on their hands when their families – oftentimes the most honest critics – started using and loving the products just as much as they did.

“Skin care is not about having perfect skin, it’s about how you feel inside,” says Dodd, who knew from the very beginning that they needed to use their resources to give back to the community and empower others. That’s why they donate a portion of their proceeds to Fresh Start Women’s Foundation – a nonprofit

that provides education and support to women make positive change in their lives. “That, and having the opportunity to mentor individual women, inspires me beyond anything else we’re doing.”

Overcoming Obstacles

Skaar and Dodd launched TreCeuticals (www.treceuticals.com) in May 2020, meaning that in March of that year, product orders had been placed and there was no turning back. It’s no surprise that inadvertently starting a company during a pandemic came with its fair share of challenges. From managing supply chain issues to boxing orders in their garages, the powerhouse duo saw every roadblock as a chance to put their tenacity to the test.

“I don’t think failure has to happen,” Skaar says. “Failure comes from how you deal with a situation – you can either let it take you down, or you can turn it around and find another way to resolve whatever’s happening. It’s always a learning opportunity.”

For Dodd, failure is not just a chance to grow, but to lean on support from the community.

“We always knew that in order to accomplish this, we would have to surround ourselves with smart, driven people. It’s so critical to connect with like-minded individuals, to become a sponge and absorb information from all sides,” she says.

Adversity hasn’t just helped the pair improve as entrepreneurs – it’s strengthened their relationship as best friends and business partners. One of the keys is a mutual admiration, which began the moment they met at a local women-supporting-women event.

“I was the new girl on the block, and I saw Sharon off in the corner,” Dodd says. “I call her an Energizer bunny because she’s like a magnet. People were just attracted to her, so of course, I was too. As I got to know her, I learned that she’s always pulling people together and making stuff happen. She’s a rainmaker, and together, we can make some serious rain.”

A Match Made in Heaven

Today, CEO Skaar serves as the duo’s critical thinker, while Dodd, TreCeutical’s president, handles the creative side of things. But at the end of the day, they’re glad to play the Thelma to the other’s Louise.

“When friends go into business together, it can go either way, but we started as friends and now we’re joined at the hip. We just complement each other perfectly,” Skaar says.

“It’s a beautiful partnership because we’re so different. I can’t do what she does, and vice versa,” Dodd adds. “It’s been really fun to watch her and learn. I hope I tell Sharon enough what an incredible partner, best friend, and sister she is.”

And with a few pinch-me moments under their belt – including a feature on The Jennifer Hudson Show – they’ve more than proven that two retired women without college degrees can accomplish amazing things.

“After three years of wins on this beautiful rollercoaster, I look at this whole journey as a blessing,” Dodd says. “We’ve been around the block a few times, but we’re still pushing and pushing. We just have so much more to give.”

Anita Verma-Lallian of Camelback Productions has an inclusive vision for the entertainment industry

As an Arizona native and the founder and CEO of Arizona Land Consulting, Anita Verma-Lallian has played a big role in Arizona’s growth.

Having managed and acquired a billion dollars’ worth of land assets in the Phoenix area over the course of her career, Verma-Lallian’s success in land consulting got her thinking – what else could she do to positively change the future of the state she and her family call home?

“My daughter is passionate about theater, and there isn’t a lot of opportunity for her to go into the film industry in Arizona,” Verma-Lallian says. “The film industry isn’t very diverse, and I wanted to create something that gave people of all backgrounds a chance to pursue their passions.”

As the founder of Camelback Productions, an Arizona-based film production company created to give a platform to South Asian talent, Verma-Lallian has carried over her financial savvy into the entertainment world.

“With land consulting, I’m constantly looking for ways to maximize a return on investment, and in the entertainment industry, you’re trying to ensure the highest quality film with the lowest budget – it’s the same business fundamentals.”

As she builds another company from the ground up, Verma-Lallian continues to look at her dad, Kuldip Verma, CEO and founder of Vermaland – one of the state’s largest private landowners – for inspiration. His entrepreneurial spirit, as well as his work ethic and wisdom, have helped make him the best mentor she could ask for.

At the end of the day, Verma-Lallian is excited for the chance to highlight the culture and history of South Asia, allowing South Asian creators to tell their own stories.

“If I have the chance to influence the future of entertainment with Camelback Productions, it would be to see more minority groups represented in the media,” she says. “There is so much talent out there from people of all backgrounds, but they don’t always have the opportunities or platforms to share it. Everyone needs to be heard.”

The brainchild of entrepreneurs Zander Diamont and Jared Amzallag, Minimal Living Concepts (MLC) is revolutionizing the world of guest houses. In 2020, COVID-19 emerged and working from home became the “new normal.” This provided the genesis for their endeavor. How does travel inspire your style? I love seeing what’s out there and how people in different places show up. In Tel Aviv where I lived before coming to the US, casual was always cool. Jeans, T-shirts with a hippie influence, simple silver jewelry, and of course a bikini and sweatshirts for the beach.

What is your favorite store? Athleta. It’s no secret that I love fit wear. I wear it to work at my gym but I’ll also dress it up with heels, accessories, and makeup. For me, Athleta has it all – great fits, color selections, lots of different styles, and it’s reasonably priced.

Music legend Nile Rodgers makes his Celebrity Fight Night debut to join the battle against cancer PHOTO BY JILL FURMANOVSKY

Music has been an ever-looming presence in Nile Rodgers’ life, but before he was one of the most prolific producers in the industry, the accomplished guitarist and co-founder of disco group Chic was a little boy growing up in Greenwich Village, New York, with a head full of songs.

“The first thoughts I had when I became self-aware were musical thoughts,” Rodgers says. “I remember looking out my window and seeing these kids – like a gang, but not a tough one, dressed in Lone Ranger-type masks – and I sort of scored the scene in my head. That became the template for my life. I still do it to this very day – every place I walk, I score, whether I’m singing something I already know or writing something that’s a depiction of the environment.”

Among many factors that influenced Rodgers’ love of music was his biological father, Nile Rodgers, Sr., a traveling percussionist with a specialty in Afro-Cuban beats. “I knew that I was going to be a musician from my earliest memories. For a while, I imagined myself as a bandleader playing the congas and the bongos, mostly because my dad was so good at it. I pictured myself in a symphony orchestra. I didn’t know what chair I’d be sitting in, but I certainly knew that was my life’s desire.”

Though Rodgers’ first passion was jazz and classical music, he eventually turned to pop to make a living. As a founding member of Chic, which featured Rodgers on guitar alongside accomplished bassist Bernard Edwards, Rodgers and his band helped define the sound of the 1970s with

disco hits like Good Times, I Want Your Love, and Le Freak, which became Atlantic Records’ bestselling single of all time.

After securing a record deal in the first place, Rodgers points to recording his first composition as one of the standout moments of his career. He’d written a song for Chic called Everybody Dance, but didn’t even have enough money to buy a copy of his own. Weeks later, Rodgers got a call from the engineer who had recorded it asking him to come down to his club to see something special.

“I walked into this nightclub, and as soon as the DJ saw me, he put the needle down on Everybody Dance. I heard a bloodcurdling scream, and the whole club went ‘Woo-hoo!’ and got up on the dance floor,” he says. “The last time I’d heard the

song was after we listened back in the studio, and now, the next time I hear it, people are going bananas over it? That was incredible to me, and I’ve been chasing that feeling my whole life.”

In the years that followed, Rodgers played a monumental role in music history. He and Edwards produced Sister Sledge and Diana Ross before Rodgers branched out on his own to work with David Bowie on his bestselling album, Let’s Dance, in addition to Madonna, Duran Duran, Mick Jagger, Steve Winwood, Cyndi Lauper, the B-52s, Eric Clapton, Bob Dylan, Lady Gaga, and Daft Punk, to name a few. His work has earned him three Grammy Awards, an induction into the Rock & Roll Hall of Fame, and the Recording Academy’s Lifetime Achievement Award.

For Rodgers, the countless hours he’s invested in his career over the past five decades are more than worth it when he considers the impact his music has made on the world.

“I can’t pretend I don’t notice when I’m standing in front of enormous amounts of people and we start to play a song like Le Freak or We Are Family or I Want Your Love. It’s an indescribable feeling. To have written and produced so many songs that are so meaningful to people’s lives is an incredible accomplishment,” he says. “That’s what artists live for – we want to communicate with people.”

“It’s a real honor. The fact that they exclusively fund Phase I and Phase II trials – the types of studies that can lead to truly explosive breakthroughs – makes me so excited to be part of the event,” Rodgers says. “There are more than a few surprises in store, but I can tell you it’s going to be a truly incredible night. My hope is that we’re able to set a new record for money raised in one night.”

Rodgers knows as well as anyone the impact cancer can have on one’s life. When he was diagnosed with prostate cancer in 2010, the feelings of fear and loss of control were devastating. But the moment the doctor proclaimed him cancer-free remains one of the happiest days of his life, and the experience imbued him with a strength that helped him fight his second bout of cancer in 2017 with bravery and composure.

“Unfortunately, too many of us are in the ‘cancer club,’ either having been diagnosed ourselves or having seen loved ones suffer with the disease,” Rodgers says. “It’s almost impossible to escape, which is why taking part in fundraisers with organizations like Gateway is so important and rewarding. I know firsthand how devastating it is to receive a cancer diagnosis, but it’s that experience that has helped me gain perspective on the meaning of nights like Fight Night and the importance of funding cancer research, especially for early trials.”

Hope on the Horizon

During the hardest times in Rodgers’ life, from growing up in poverty to being introduced to drugs at age 13, music was there for him when it felt like all hope was lost.

“When I was younger, there was a time when I planned to commit suicide. I was going to jump into the East River,” Rodgers says. “While I was on my way – which was only a few hundred yards from my apartment – I started singing Cab

Calloway songs. I don’t know why, because I was so depressed. It was just so up, so wonderful and so enchanting.”

It's this kind of strength that Rodgers aims to share with others through his nonprofit, the We Are Family Foundation. Formed in the wake of 9/11 alongside his partner Nancy Hunt, the organization has funded schools across Africa, mentored teen entrepreneurs and young activists as they fight against systemic racism, and created programs that promote diversity and respect, all in the name of supporting the next generation of global leaders.

“Right now, the biggest inspiration I get is from the kids, teens and young adults in my charity,” he says. “They are the turbocharger in my engine. Everything I do –and I’m starting to sound like Bryan Adams right now – I do it for them. These are young people who are doing great things for humankind. They’re trying to change the world, and I want to help them change it.”

The Saguaros will hold its spring gala, Cards for Kids, at Scottsdale Hangar One on March 25. The classic casino night is dedicated to raising money for local Arizona children’s charities. Founded in 1987, the philanthropic and social club, known today as the Saguaros, has raised millions of dollars for nonprofit organizations. Comprised of up to 50 young men under the age of 40, the group’s over-the-top soirees are known for attracting the who’s who of Scottsdale.

Cards for Kids started out as a poker tournament among friends, and over time has transformed into an annual casino night and one of the organization’s largest fundraisers of the year. In its fourth annual occurrence, the group promises an experience that is bigger and better than ever

before. Attendees should prepare for an action-packed night full of gaming, gourmet cuisine, beverages, and live entertainment. With activities ranging from classic casino games like blackjack, poker, craps, and roulette, to raffles and auction items ranging from trips to priceless experiences, the event is sure to be a royal flush for all.

This is the first year the event will be held at Scottsdale Hangar One.

“Due to the growing success and positive feedback of this event, we have moved the event to Scottsdale Hangar One in order to increase the occupancy of the event,” says Tad Crother, 2023 Cards For Kids chairman. “Previously, we had a maximum occupancy of 300, while this year we expect to have over 700 people in attendance.”

With more than double the attendees

of prior years, the Saguaros hope to set a record for this event by raising $300,000 in one night for children’s charities – though the organization’s support of the local community extends far beyond this one night.

“Last year we awarded over $1.2 million to 38 children’s charities,” Crother says. “Most importantly, the Saguaros are unique in that we not only raise money, but also encourage hands on interaction with the children the club supports. This active participation serves to strengthen relationships with those it serves and create a true partnership.”

In addition to the organizaiton’s grant application, which is open until April 1, the Saguaros organization offers additional events throughout the year including the 2023 Olympiad corporate event and signature NiteFlite golf and gala event.

A JOURNEY OF FACES

Sculpture artist Kostas Ulevicius is on a mission to find spirituality

In visual and fine art, the surreal, elongated face sculptures of Lithuanian American artist Kostas Ulevicius are a study of humanity.

Searching for what he describes as the “face of the other,” he has infused his work with a sense of “oneness” with artistic renderings symbolic of cultures and societies throughout the world and in history. Viewers are encouraged to see a sculptured face as a kind and understanding friend – one who can help eclipse the ubiquitous noise and distractions of daily life by drawing them into a world of harmony, calm and tranquility. Ironically, his sculptures are in stark contrast to his background, where he witnessed the worst of humanity in the totalitarian regimes of Germany and Russia.

Ulevicius hand-builds his sculptures, which are fired or bronzed with the distinctive blue glazes he creates. “When I sculpt, that’s the time I really feel alive,” he says.

For inspiration, Ulevicius seeks out paintings, shapes, and forms from all over the world.

“I visit bookstores and museums in addition to iconic museums such as the Louvre in Paris, the Vatican Museum in Rome, and the Versailles in France,” he says. “Historically, I draw from ancient cultures of the Greeks, Romans, Egyptians, and Buddhists.”

Ulevicius’ penchant for sculpture began while watching his father, a Gulag and Nazi prison survivor, sculpt in clay (Roma Plastilina). Ulevicius began to emulate him, creating figures using simple clay. His love for the artform created the foundation for his eventual career. From 1979 to 1984, he attended the venerable Vilnius Art Academy in Lithuania, which has a rich history of providing graduate and undergraduate degrees.

“They are famous for famous international teachers,” says Ulevicius, who took classes in pottery, academic drawing, painting, and sculpture.

While visiting Chicago, he found kindred spirits at an artist colony that provided him an ideal “jump-off” point for his burgeoning career. Soon, he procured a studio and began showing his art in galleries. In addition, he became an Artist in Residence at Wesleyan University. In 1996 Ulevicius moved to St. Petersburg, Florida, where his sculptures were sold at the Craft Council art show that attracts gallery buyers from around the country. WHAT’S BEHIND THE INCREASE IN COLORECTAL CANCER CASES IN YOUNG ADULTS?

Statistics rarely tell the whole story on any topic. Case in point: colorectal cancer. The numbers tell us that the disease is the fourth-most common cancer diagnosed in the United States and the second leading cause of cancer deaths. They also tell us that the rates of new cases and deaths from colorectal cancer have fallen dramatically over the past four decades.

But these numbers only tell part of the story. While overall cases and deaths have declined, especially among older adults, colorectal cancer diagnoses have increased dramatically among young adults.

One statistic that hasn’t changed: Colorectal cancer mostly affects seniors. Sixtysix percent of cases are diagnosed in patients 65 and older. For a variety of reasons—more people are getting screened and fewer people smoking, colorectal cancer rates have declined. Consider that from 1985 to 2018:

• New cases of colorectal cancer declined from 65 to 35 per 100,000 Americans.

• Deaths from the disease have dropped by half, from 26 to 13 per 100,000.

• The five-year survival rate increased from 58 percent to about 65 percent.

But, for younger Americans, the numbers tell a different story:

From 2012 to 2016, new cases of colorectal cancer have increased 2.2 percent a year for Americans younger than 50. The disease has become the leading cause of cancer deaths for Americans 20 to 49 years old, according to the National Cancer Institute. The average age of a patient diagnosed with colorectal cancer fell from 72 in 2001-02 to 66 in 2015-16.

And while African Americans are still more likely than whites to be diagnosed with colorectal cancer, early-onset disease is affecting more non-Hispanic white Americans than African Americans.

Research into the causes of early-onset colorectal cancer is robust. And while a specific cause of the concerning trend has not been pinpointed, Toufic Kachaamy, MD, Interventional Program Specialist at City of

Hope Phoenix, says the causes are clear to him.

“It’s lifestyle,” he says. “There’s no doubt in my mind.” Dr. Kachaamy points specifically to the modern American fast-food diet. For instance, he says, one fast food chain’s French fries contain 16 more ingredients than the potatoes, oil and salt in those you make at home.

“When did our diet become really horrible?” he asks. “It’s when our diet became industrialized. We don’t cook at home. If you make fries at home, it may not be all that healthy, but it’s still better. Nineteen ingredients—that’s not natural.”

Research suggests that a diet that includes frequent fast-food meals may affect the colon’s balance of good and bad bacteria, called the microbiome, microbiota or gut flora. Human microbiota is made of trillions of viruses, fungi and other microorganisms. Imbalances in human gut flora have been linked to autoimmune diseases such as Crohn’s disease, as well as multiple sclerosis and heart disease. While the microbiome’s role in cancer risk remains uncertain, researchers suspect poor gut bacteria may contribute to obesity, a leading risk factor for colorectal cancer. Other risk factors for colorectal cancer include:

• Smoking

• Alcohol consumption

• Sedentary lifestyle

Some cases of colorectal cancer in young adults may also be linked to genetics, or an inherited gene mutation that may increase their risk of developing colorectal or other cancers. In fact, researchers estimate that 15 percent to 30 percent of all colorectal cancer cases in young adults may have this genetic link.

Despite the increase in colorectal cancer rates among young adults, the disease is often overlooked in young patients. Symptoms, such as abdominal pain or blood in the stool, may be attributed to other causes, such as digestive issues or hemorrhoids.

“Also, these folks don’t get screened because they’re so young,” Dr. Kachaamy says. “So, they often come in with advanced-stage disease.”

Prompted by the increase in colorectal cancer cases among younger people, the American Cancer Society now recommends adults at average or low risk get screened for the disease at the age of 45, instead of 50, the previous recommendation.

Dr. Kachaamy’s own lifestyle may serve as a model for those who want to reduce their cancer risk. His family eats meals cooked at home. He exercises six days a week. And he watches little or no television, avoiding the sedentary living afflicting many Americans. “That’s the lifestyle that should be taught,” he says. “But many people don’t have the time for that. It’s just a matter of making it a priority, which I know is hard.”

To reduce your risk of colorectal cancer at any age:

• Exercise: Even a modest amount of exercise every week, such as regular brisk walks, may help improve your overall wellness. Always check with your doctor before starting a new exercise program.

• Eat healthy: A diet high in fiber, lean protein, fruits and vegetables may help promote healthy gut bacteria, which has been shown to reduce cancer risk. Eating too much red meat and processed foods may increase your cancer risk.

• Maintain a healthy weight: Obesity leads to about 500,000 cases of cancer worldwide, according to a recent study. It’s also a known risk factor for many cancers, including those of the colon, rectum, breast and pancreas.

• Don’t smoke: Smoking not only increases the risk of pulmonary cancers, the carcinogens in tobacco smoke travel through the bloodstream and may increase the risk of digestive tract cancers, as well.

A legendary sendoff for the V-12 machine

A company with a penchant for naming its cars after legendary fighting bulls, Lamborghini’s Aventador V-12 is being put out to pasture. Ultimae, a Latin word translating to “last” in English, is the brand’s final model.

A limited edition of 600 Aventadors, 350 coupes and 250 roadsters, are now on the market. All models are powered naturally by an aspirated, mid-engine, non-hybrid 6.5-liter V-12 delivering 769 horsepower through a 7-speed automated manual transmission and all-wheel drive. Each car is also equipped with effective rear steering that, when tested, periodically responded too sharply, requiring driver corrections. The Aventador Ultimae goes from 0 to 60 mph in just 2.7 seconds, with a top speed just over 220 mph. That horsepower seems modest when compared to the likes of the 887 horsepower Porsche 918 Spyder, the 950 horsepower Ferrari LaFerrari or new all-electrics like the 1877 horsepower Pininfarina Battista.

The starting price is $507,000, however, the

demand is expected to push the price to seven or more figures.

The Aventador’s design is complete eye candy. Visually, it is radically extraordinary; extremely wide and low to the ground. The fit is tight to the driver, and just getting into the Aventador can challenge laws of nature.

There’s a red cover on the operation console that houses the start button, unleashing among the richest, spontaneous and furious automotive libretto any engine could possibly sing.

Royal Lahaina Resort & Bungalows updates its calming, peaceful space in heart of Maui

In late 2022, Royal Lahaina resort on Maui's Kaanapali Beach – which became one of the first Maui resorts when it opened in 1962 – announced a sweeping update. Everything at The Mexicano is larger than life.

“Both our food and drink menus are meant to be audacious celebrations of flavor with outrageous vessels, grand garnish and vibrant pops of color,” says Will Martinez, general manager of The Mexicano.

Among its biggest and boldest cocktails is Martinez’s recent collaboration with The Mexicano's executive chef Fidencio Alatriste on the Fresa Cremosa Agua Fresca ($23). The strawberry-infused offering starts with Don Julio Reposado Tequila.

“This varietal is quite agave forward with vegetal notes and just a slight touch of honey,” Martinez says. “Its potency stands up well and complements the sweeter, richer elements in the recipe.”

Those sweeter, richer elements include strawberries, sugar and three types of milk – evaporated, sweet condensed and whole.

Once blended, the milks are poured over freshly chopped strawberries, vanilla, Zuko strawberry powder, and water. Then, tequila is added.

“We liquify the strawberries with the other ingredients through a blending process and then add the sugar and continue to mix until frothy,” Martinez says. “They key is then chilling in the refrigerator to allow time for the flavors to meld.”

Once chilled, the mixture is poured into a custom barrel-shaped glass and topped with cinnamon, chopped strawberries and whipped cream.

“Just before going to the table, we add strawberry wafers, both to give the drink height and so folks may dunk them for an added treat,” says Martinez, noting the cocktail may also be made without tequila.

The drinkable dessert is bursting with vanilla ice cream and berry flavors, but the tequila adds a potent kick.

In the kitchen with Manny Carino of Pitch Pizzeria

Manny Carino is the executive chef of Pitch Pizzeria, where he offers unexpected experiential dishes right alongside his evolving menu of Italian and American offerings.

How did you start cooking?

I was born in Oaxaca, Mexico, and moved to Omaha, Nebraska, at 14. Once in the states, I cooked at home for myself often. It gave me the confidence take a job at a French restaurant in high school. I had that job, and mentored under that French chef, for 17 years.

Was there a singular dish that inspired you to pursue a culinary career?

I will never forget the day I made my first chicken fried steak with smashed potatoes, from pounding and breading the meat, to crafting the roasted red pepper sauce for the potatoes. When guests raved, the feeling was intoxicating. I still feel the same elation cooking today.

How did you make your way to Pitch?

I joined the opening team in Omaha in 2009 as a line cook back when the plan was to be solely a pizza and meatball shop. Within three months, I became executive chef, and we evolved our thinking of what Pitch could be, first in Nebraska and then in Arizona when we opened our first Scottsdale location in 2018.

How has the restaurant evolved?

We use the name Pitch Pizzeria mostly to avoid changing the website, but we are well beyond pizza and meatballs (though they are still on the menu and better than ever). Today, both at the Quad and our new North Scottsdale location, our motto is that heat lamps are for cheaters. Everything on our massive menu, which ranges from entrees, specials and seafood to sandwiches, salads and brunch, is made with love from scratch.

What are can’t-miss dishes on the menu?

You have to order the pappardelle pasta with fennel seed sausage, oven-baked crab cakes, truffle fries with specialty aioli, Brussels sprouts, Calabrese meatballs, and the Gold Canyon short ribs. And, of course, a pizza.

Any other menu surprises?

We have our own proprietary red wine called No Offense, and we carry specialty spirits that are used in cocktails and also available for purchase. There are also regular cocktail and spirit dinners at both locations.

Hudson Valley duck is a proprietary breed – a hybrid of the Heritage Mallard and Pekin ducks – exclusively raised by Hudson Valley Farm in New York. A nod to the centuries-old use of duck in Chinese cuisine, this dish starts by preparing traditional peking duck in the Beijing style, which is a time-consuming roasting method that results in thin, ultracrispy skin. The peking duck is shredded and combined with julienned vegetables, then wrapped in spring roll paper and fried. At Talavera, every dish has a kiss of Spanish influence, and this one is no different. It is a twist on classic duck a l’orange, a roasted duck with a specialty bitter orange sauce called bigarade in French cuisine. This modern version also pairs the roasted duck with an orange sauce – a sherry orange sauce infused with duck reduction – as well as manzanilla olives from Spain, Marcona almonds imported from Spain, chopped sweet potato, and Swiss chard. $48. www.talaverarestaurant.com.

Chicken and turkey are the most commonly used poultry on dinner tables nationwide. However, once upon a time, duck reigned supreme on the menus of professional chefs and home cooks alike. The use of duck in recipes, in fact, dates back more than 4,000 years to China, where it continues to be a beloved and oft-used protein today. Prized for its high fat content, abundance of iron, and tender, juiciness, duck is resurging on menus across the Valley. Here are some standout preparations.

Arroz Chaufa, Peruvian Duck Fried Rice

The Mission

The Mission’s homage to this South American staple starts with long, slender-grained Basmati rice. It is combined with a fried egg, scallions, and butter, much like in Chinese fried rice, but then things get very different. First comes carrots that have been roasted in cumin, and next crispy shallots and haricot vert, which are French green beans. A chili oil made using sesame and a moderately hot variety of chili pepper called guajillo seasons the ingredients before the grand finale: slow-cooked duck confit, which is tossed with the rice just before the dish is served. $18. www.themissionaz.com.

Spiced Moulard Duck Breast

For decades, celebrity chef Scott Conant has delighted television audiences and diners alike with various preparations of duck, pairing the poultry with everything from black truffle sugo to marsala reduction. His current offering at The Americano features moulard duck breast, often compared to rib-eye steak, cooked with warming spices and herbs and paired with cauliflower puree, pomegranate jus, and foie gras meatballs. $40. www.theamericanorestaurant.com.

Zinc Bistro

Though most often made using chicken livers as the key protein, this pate, which a mixture of ground meat and fat made into a paste, stars brandied duck. Its flavors are ramped up by the addition of pork and bacon into the mixture, as well a cold egg sauce called gribiche. The result is a luscious, savory spread unlike any other in town. It is garnished with capers, frisee salad, and tiny, tart cornichon pickles. $20. www.zincbistro.com.

Sugar Cured Duck Breast

Curing duck is among the best ways to lock in the tenderness of the protein without infusing any preservatives or chemical agents. Here, Roaring Fork cures the duck with a coating of sugar and salt. It is chilled for several days until the flavor locks in and it may be cut and cooked. After a good sear, it is topped with a piquant onion jam and sweet cherry glaze and paired with Brussels sprouts. $30. www.roaringfork.com.

Inspired by one of his favorite winter dishes to prepare when he cooked in Provence, chef

Alejandro Martinez created a lighter version of this traditional entree by incorporating sauteed Swiss chard to counterbalance the richness of the duck. The natural sweetness of the charred carrots, the slight acidity from the dried blueberries and the blueberry gastrique, and the nuttiness from the hazelnuts complement the sweet, salty, fatty duck leg. $41. www.lons.com.

A celebration of spices and colors, this dish starts with Grimaud Farms muscovy duck breast, an extremely meaty breed with a bit less fat content that is best compared to veal or sirloin. The duck is spiced with za'atar, which is a combination of dried herbs including oregano or thyme, and toasted spices including cumin and coriander. It’s roasted until medium rare, then topped with an orange gastrique and complemented by a red beet puree, confit yellow beets, braised beet greens, and pickled candy stripe beets. $48. www.francinerestaurant.com.

Christopher’s at the Wrigley Mansion

Available on the Christopher's Classic menu every Tuesday and Wednesday, this dish was first developed in 1990 for chef Christopher Gross’ groundbreaking menu at the original Christopher’s. Its popularity earned it long-term placement on chef Gross’ menus for more than 30 years. Made with traditional French technique, duck breast is sauteed in butter and sliced. Sunset Wine Bistro brings European approach to service in the heart of Scottsdale

“Adding to the ambiance, a maximum of just 20 guests inside and another 20 outside are seated at any given time so our team may thoughtfully guide diners through the relaxed yet upscale experience,” Lauro says.

Sunset Wine Bistro may be the newest culinary offering at the Shops at Gainey Village, but its leadership has decades of experience both here and abroad.

The concept is the brainchild of restaurateur and wine connoisseur Romain Lauro. Locally, he owned and operated Salute Wine Bar in Tempe for many years, and prior to that he owned a high-end eatery in the heart of his native France called Comme En Provence – translated to“Like in Provence” in English – for nearly 20 years. When the opportunity arose to open what he calls a love letter to the scratch-made recipes of his home country (with a few classic American favorites as well) in the heart of Scottsdale, he could not resist.

“The name is an homage to the view from our floor-to-ceiling windows and on our patio,” Lauro says. “We face due west so every night our guests have a front row seat to the best sunsets in the world.”

The 1,500-square-foot space is chic and minimalist with an enormous white chandelier serving as both an art installation and centerpiece of the space. The light walls are dotted with French photography and Parisian landscapes on canvas to set the mood.

Every item on the food menu, which boasts ample starters, small plates and entrees as well as authentic French desserts, is made from scratch. Menu highlights include the creamy Tomato Bisque ($14), which is topped with chiffonade basil and paired with a full-size melty grilled cheese; Hummus Nachos ($12), using crispy pita wedges topped with house hummus, onions, goat cheese and drizzled balsamic; a selection of Bruschettas ($6 each); the Sunset Burger ($22), which is made using Wagyu beef; and Pan Seared Salmon ($29), complemented by smashed potatoes and steamed broccoli topped with white wine lemon beurre blanc sauce. The dessert menu is small but mighty with two or three French-inspired options, including an authentic Poire Belle Helene ($8), a classic French dessert with pears, whipped cream, sliced almond, and vanilla ice cream encased in a dome of hardened chocolate. There is a beautiful combination of Old and New World wines from which to choose, with most coming from California and France. The pinot noir and cabernet sauvignon offerings are of particular note. In addition to wine, there are two or three sparkling wine-infused cocktails, each very light and easy to drink, and select domestic and imported beers as well.

Sunset is open Monday through Saturday from 2 to 9 p.m. and is closed Sunday. Happy hour is offered weekdays from 2 to 5:30 p.m., where diners will receive $2 off beers, $3 off wines by the glass, $8 off bottles of wine, and $2 off all appetizers.
