Fine hair has plenty of benefits. It’s quick to dry and style, doesn’t shed as much as thicker hair and looks stunning when bobbed. However, fine hair is also more prone to breakage. That’s why Rodney Gentry at Sachi Studios advises paying particular attention to your hair care routine when you have fine hair. “With fine hair, the strands have a smaller diameter, which means they are more vulnerable to damage. As such, it’s important to care for your hair the right way. Avoid any unnecessary heat treatments and go easy on the amount of product you use, as you’ll simply weight the hair down.” There are plenty of ways in which those with fine hair can add volume. Dry shampoo can work wonders, as can volumizing powder. Curling the hair without heat – by using a curling donut, for example – can also deliver impressive results. It’s important to use shampoos, conditioners and hair masques designed specifically for fine hair, according to Rodney Gentry. “Using products that have been made with fine hair in mind should maximize protection for your hair while also not weighing it down. This becomes even more important when coloring the hair, as coloring can make the hair dryer and thus more prone to breakage.” Rodney Gentry advises using heat protector spray religiously before blow-drying or curling, while also minimizing washing to preserve the intensity of the color for as long as possible. FOR WOMEN, BY A WOMAN Dr. Mitzi Krockover is rethinking and rewriting women’s health care to benefit real people

Unsettled by the growing list of factors – including, but not limited to, socioeconomic status, access to health care, and legislative decisions – that affect women’s health, Dallas native Dr. Mitzi Krockover decided to make a career out of amending it. Over the course of her decadeslong career, the now-Paradise

Valley resident has held many leadership positions in her professional and volunteer work that support and advocate for women and women’s health. Krockover initially recognized the shortcomings in women’s health when she was a medical student at University of Texas

Pulse UP CLOSE Health Science Center at San Antonio and noticed women’s health was only a brief topic of discussion. "[It] was covered poorly, and we were taught that certain conditions, such as fibromyalgia, were nothing more than empty nest syndrome,” she says. After her residency at McGaw Medical Center of Northwestern University, Krockover worked as an assistant clinical professor and attending physician at David Geffen School of Medicine at UCLA. She and her colleagues set out to develop something better for their female patients that treated the whole woman, resulting in the Iris Cantor UCLA Women’s Health Center. In 1997, the center was designated a National Center of Excellence in Women’s Health by the U.S. Department of Health and Human Services.

Pioneering with Pride As a founding medical director of the center, Krockover’s work was just getting started and she continued to pull up a seat for herself at tables of influence. She was the vice president of women’s health, preventative services, and eHealth at Humana, and the director of the Health Futures Council at Arizona State University. She also co-leads the health care sector group of Golden Seeds, an investment group that funds women-led businesses, and co-founded the Arizona chapter. Over the past 20 years, Krockover has provided technical advice on women’s health services as a senior partner of SSB Solutions, a consulting group that offers value-focused strategies for the health care industry. As a managing director of Golden Seeds, an angel investment organization, she learns about innovations in women’s health and mentors entrepreneurs to help them develop their companies. Some of her investments have helped advance women’s health technology, otherwise known as “femtech.” “Femtech companies have been growing in number and scope for years now in response to the actual pain points that women experience concerning specific medical issues,” she says. “The area was primarily focused on reproductive health issues but has more recently expanded to include incontinence, sexuality, perimenopause, and more.” Krockover is currently developing her own company, Woman Centered, LLC, which will provide women’s health information and services for women over the age of 40. Her company’s first initiative is a podcast called Beyond the Paper Gown, which will be available for streaming sometime this month. “Through my podcast, I hope to inform and engage women to learn about the factors that impact their health and help them to advocate for themselves,” she says.

Above and Beyond The aforementioned is merely a snapshot of Krockover’s seasoned career in women's health care. She is also an experienced volunteer, having served in board-level positions at organizations like Black Women’s Health Imperative, Take The Lead Women, and Springboard Enterprises, to name a few. In 2019,

she was appointed board chair of the Institute for Mental Health Research – Arizona’s first nonprofit organization dedicated to mental health research. Since the start of her term, Krockover has helped the institute reinvent itself and maintain funding during its most challenging time: the pandemic. “We created the COVID-19 Mental Health Research Impact Fund to draw attention and donors to the important work [of the institute and its scientists] and the ‘coming tsunami’ of mental health challenges,” she says. Under her leadership, the institute also launched a free webinar series to educate the public on various mental health topics related to the pandemic. The webinars (www.imhr.org/ webinars) take place on the second Tuesday of every other month at 11 a.m. “Outstanding researchers present these webinars, most of them are based in Arizona. The webinars can be helpful to those focused on their mental health, those supporting others, and anyone curious about current research and research needed in the future,” Krockover says. According to Krockover, the most challenging part of her work is finding the time to do everything that she wants to do. The people closest to her, including her colleagues, fellow board members, community advocates, and, most importantly, her two grown daughters, give her the energy to push forward. “In many ways, I do [all of this] for my daughters,” she says. “I want to leave a better environment for them and their generation – one in which they feel safe, their concerns are heard, and they can access health information, health care, and innovation in a way that enables them to lead their most healthy life, both physically and mentally.” In the little free time she has, Krockover enoys playing piano, taking long bubble baths and watching her favorite TV shows.

Seasoned lawyer and political strategist Mark Cushing fights for the rights of household animals

There is a lawyer for every kind of legal issue, whether it be divorce, bankruptcy or property protection. These are the more common legal issues, but what about the lesser-known ones, like laws that impact animals? There has to be a lawyer advancing causes that relate to our country’s four-legged friends. There is, and his name is Mark Cushing. Oregon native Cushing was a gun trial lawyer in Portland before falling into the obscure field of animal law. He then relocated to Washington, D.C., as a partner of a national law firm and lobbyist. In 2006, he solved a major problem in Congress for the pet and veterinary industry. Cushing has since been giving a voice to the voiceless: animals. “I spend most of my time leading or working on change initiatives in the pet health care and animal welfare world. This is great fun and rewarding as we embrace the new status of pets in our society,” he says. In 2011, Cushing established Animal Policy Group and took it private in 2017. A mighty team of 10, Animal Policy Group provides gold standard advocacy, strategy, and consulting services to all facets of the pet sectors and veterinary colleges across North America. The University of Arizona College of Veterinary Medicine and PetSmart are just a couple of Cushing’s clients. “Through my work with [these clients], I also get to be involved with a variety of nonprofits, including Arizona Humane Society,” he says. Cushing’s care for animals extends beyond the courtroom. His first authored book, which was released last month and is titled Pet Nation, tells the story of how companion animals have changed life as we know it. Since its debut, he has been writing away at the upcoming sequel. He and his wife, Natalie, have called Arizona home since 2017. The couple resides in Paradise Valley with their three fur babies: a papillon puppy named Louis and two Bengal kittens, Vera and Yves. “[Louis] is a real pal, and funny as can be. And the two kittens are Olympic athletes who view Natalie and me as staff and are in the process of a household takeover,” Cushing says.

Jackie Yoder uses her mathematical mind to inspire and encourage independence

While growing up on a dairy farm in rural Pennsylvania, Jackie Yoder discovered she had a special talent. “No, it was not for milking anything,” Yoder says. “As early as kindergarten, I was just always a whiz with numbers.” Her prowess was a point of pride for her father, who was as much an entrepreneur as a farmer, as well as her homemaker mother. “Math was still very much considered a ‘boy subject,’ even in the 1990s,” Yoder says. “But I didn’t care because math was going to help me reach my dream, which was to lead a business like my dad.” Yoder’s desire only grew when, at just 8 years old, her father passed away. “Seeing my mother’s world crumble when we lost my dad made me double down on my studies,” says Yoder, who graduated at the top of her class in high school and then attended Mount Aloysius College to study accounting in the early 2000s. Armed with her degree in 2006, Yoder made the move to Arizona. More than 10 years later, Yoder earned her master’s degree and took on the role of Mom. “When I became a mother, I realized my greatest strength was not in deciphering numbers, but in showing others how to not be intimidated by them,” Yoder says. In 2017, she set out on a quest to help others as a volunteer mentor at New Pathways for Youth. Her ability to educate and inspire eventually brought her to Wilde Wealth Management Group in 2020, both as chief operating officer and head of the firm’s community outreach arm. Under her leadership, Yoder nearly doubled the size of the business in just 18 months while establishing regular volunteer activities for the staff and encouraging her colleagues to take leadership roles within the community. “I also joined the board of Chrysalis in recent months, eager to help women touched by domestic abuse reclaim their independence,” she says. This fall, Yoder will be overseeing the expansion of Wilde’s headquarters, which will allow her to bring a handful of similarly financially savvy female leaders into the firm. “Math may have been a ‘boy subject’ when I was in school, but today’s financial world is open to all great minds, as it should be,” she says.

When he’s not training Arabian show horses at Royal Arabians in North Scottsdale, Justin Cowden can be found cultivating his eclectic style beyond the barn. Most days, this translates to fitted, equestrian-inspired outfits. “I have a few different looks throughout the day from the barn, to the gym, to a night out,” Cowden says. His signature look includes skinny jeans, sneakers and a fitted, short- or longsleeved T-shirt with his favorite current trend – a brimmed hat. “I have to find the right fit and shape for myself but when it’s right I love it.” In addition to neutral tones and casual, tailored streetwear, Cowden’s go-to item is his favorite timepiece. “My Panerai Luminor watch has got the kind of face that you can pair with anything and finishes off any look with some simplicity,” he says. While he takes influence from stylish celebrities, including Ryan Gosling and Zac Efron, Cowden’s style is 100% his own. His advice when it comes to polishing off a look? “When in doubt, try a blazer or fitted jacket with your outfit – sometimes it works, sometimes it doesn’t,” he says.

How does your career influence your style? A lot of our attire we ride in is very crisp and formfitting – that’s a trend that I definitely follow not only because I work in it, but because I chose to wear it casually. What are your favorite brands? Topman for T-shirts, sweaters, jeans, and button-downs that fit great right off the rack and last without breaking the bank. As a wardrobe stylist, Elyse Johnson’s innate sense of style comes in handy when dressing herself and her clients to feel comfortable and confident. Johnson draws inspiration from fashion icons like Jacqueline Kennedy Onassis and the 1970s era, always paying attention to effortlessly cool trends. “Classics like a silk top or a cashmere sweater paired with a pair of on-trend distressed denim and some kind of edgy accessory like a leopard belt or shoe is my signature look,” she says. A fashion lover from a young age, Johnson’s style isn’t about spending a million dollars – it’s about looking like you did. “I love to mix high- and low-priced pieces to create looks that turn heads but don’t break the bank,” she says. This season, you will find Johnson wearing and styling her clients in rich jewel tones, thanks to the flattering shades on most skin tones. She’s also currently loving flared jeans with tall heels. Agolde is Johnson’s favorite brand for denim and she always counts on Aritzia for monochromatic looks. “Lack of Color and Rag & Bone are my preferred hat brands because they carry my favorite fedora,” she says.

How does your career influence your style? I pursued wardrobe styling because of my love of fashion and style, and my career has shaped me because I’m always studying the trends. I don’t believe you have to follow every trend that arises, but it’s always good to be knowledgeable and incorporate some. What trend are you currently loving? Puff sleeves – they add a feminine, romantic touch to any outfit and, when worn correctly, can be really flattering. I like to pair them with a little masculinity to tone them down. What is your must-have fashion item? A hat to compliment and complete a look. There are different styles, from a cowboy to fedora to a bucket (that style just made a resurgence and I couldn’t be happier).

Amateur polo player Julia Kline may be new to the sport, but she comes from a rich tradition of equestrianism. Growing up in Virginia’s hunt country, some of her first memories are of watching her father, an airline pilot, training and riding their thoroughbreds and thoroughbred crosses. “When my dad wasn’t flying, he would fox hunt or ride around our small farm,” Kline says. “Seeing how he enjoyed working with and training them inspired my lifelong love of horses.” When she was 4 years old, Kline received every little girl’s dream gift – a pony of her own. “Her name was Buttons. She used to take off and run back to the barn while my brother and I were riding double, which terrified us! Several ponies followed, and I probably fell off over 100 times, but I would never stop getting back on.” Within a year, Kline participated in her first horse show, and by age 14, the talented young rider was competing against adults in the bigger jumper classes. Just as she showed a natural aptitude for all things equestrian, Kline has been able to seamlessly apply her eclectic talents in a variety of areas throughout her career. While in college, Kline decided to take a break from studying political science at George Mason University and work as a flight attendant, reveling in the freedom the job afforded her. “That break ended up being eight years,” says Kline, whose passion for horses is rivaled only by her passion for travel. After returning to school and finishing her degree, Kline worked in government relations in Washington, D.C., before moving to a small investment advisory firm in Virginia. And, as fate would have it, returning to her home state resulted in more than just a good job – Kline also met her husband, Scott, at an investment banking conference she attended while working for the firm. In the years that followed, Scott became not only Kline’s partner in life, but in law. “Personal or professional growth requires courage and stepping out of your comfort zone, and when I was 36, I decided to go to law school.”

Since 2016, Kline has practiced business law with a focus on startups and early stage companies. She took a year off in 2018 to travel with her family, and has since practiced part time with Scott, who has been in corporate and securities law for over 30 years.

Pride of the Valley

The following year, the duo made the move to Arizona. “We had traveled to Scottsdale for business a couple of times and were blown away by the beauty of the Sonoran Desert,” she says. “We loved how it had a relaxed atmosphere while offering worldclass restaurants, art galleries and cultural events. It just felt right for us.”

It wasn’t until the pandemic that Kline first experienced the world of polo, and she knew she was hooked as soon as she finished her first chukker – or period of play – in 2020. “It was just too much fun – and outdoors, socially distanced and a great way to enjoy the camaraderie of a team sport.” A lifelong rider, Kline’s amateur polo career took off fast after buying her first polo pony. Today, she’s a member of both Arizona Polo Club and Skull Valley Polo Club. Among her many prized memories is playing on the Queen’s Ground at the Guards Polo Club in Windsor, now the largest polo club in Europe six decades after it was founded with Prince Philip as president. This month, Kline will add another unforgettable experience to her trophy hall as she competes with Jet Set Polo at The Bentley Scottsdale Polo Championships: Presented by Talking Stick Resort, taking place Oct. 23 at WestWorld of Scottsdale. Known as one of the Valley’s most iconic events, this year marks its 10th anniversary. To celebrate a decade of The Scottsdale Polo Party, attendees will be treated to a festive milestone event with American polo star Nic Roldan, who will represent former champion Aspen Valley Polo Club against La Mariposa Argentina Polo Club in the featured match of the day. Other teams include the Royal County of Berkshire Polo Club, the Wales Polo Team, and the largest polo club in the nation, the Grand Champions. For Kline, polo is more than a hobby – it’s a way to connect with family and forge strong relationships with her horses and fellow players. On Oct. 19, Western Spirit: Scottsdale’s Museum of the West will unveil Light & Legacy: The Art and Techniques of Edward S. Curtis. The largest exhibit in the history of the museum, the show will run through spring of 2023. Light & Legacy will celebrate the life and works of Edward Curtis, showcasing his images, audio and motion pictures taken over the course of three decades starting in the 1890s. Curtis’ work includes thousands of photographs of Native Americans all across the American West, resulting in The North American Indian, an illustrated publication of photographs in 20 volumes. At the event, presented by Lulu’s Fund, guests can expect live and silent auctions, a wine pull, a step and repeat banner with photo ops and a delicious meal with a vegan option. “Most of all, there will be an inspiring program where you’ll meet the animal

stars of our life-changing before and after transformation videos,” Lopez says. “These victims of extreme neglect, abuse and abandonment were rescued and rehomed with help from PACC911’s Medical Care Programs. Our event features some of the most dramatic turnarounds of our prior year’s work and you will have an opportunity to invest in helping to save more lives in 2022.” The event will be cohosted by Emmy award-winning TV personality, radio talk show host and cookbook author Jan D’Atri and animal expert and celebrity dog trainer consultant Kyle Kittleson. A pumpkin that lasts forever may sound like a myth but artist Gregory Tomb is making the idea a reality with his handmade glass pumpkins. From Oct. 22 to 24, The Holland Center (www.hollandcenter. org) will celebrate the Halloween season with its second annual Glass Pumpkin Patch, featuring over 1,000 of Tomb’s whimsical, vibrantly colored pumpkins. “I’ve been making pumpkins since last winter and all summer here in New York, where I’m the artist-in-residence for a town in the Adirondacks,” he says. “I will have a range of mini pumpkins and some of the big signature crackle pumpkins.” The pieces by the acclaimed local glass artist, known for his one-of-a-kind, intricate designs, will be available for purchase from 10 a.m. to 5 p.m. each day. Proceeds from the event will benefit The Holland Center, a nonprofit organization committed to enhancing arts, education and community in the Desert Foothills region. Tomb’s work incorporates classic techniques of furnace, fused, flame-worked and cold-worked glass, and he also experiments with new processes and ways to use glass and light. His colorful autumnal creations have been featured in museums and magazines around the country. Tomb’s passion for glass art began as a child during frequent family road trips to the Corning Museum of Glass in Corning, New York. “The feeling it created seeing this almost magical material be formed from a glowing liquid into a form is what first fascinated me about glasswork,” he says. Tomb’s passion only furthered when he attended Hartwick College as an art student. “I started college as a psych major. I wanted to go into art therapy,” Tomb says. “Ultimately I had fun blowing glass and wanted to learn more…at the time when I changed my major to art with a religious studies minor, I just wanted to travel. I didn’t really think of it as a career choice.” In addition to glasswork, Tomb also played in a band for five years. Another one of his passions included becoming a skiing and rafting instructor, but he always came back to glass. “There is a correlation in the adventure of each [glassblowing, skiing and rafting], all of these things are exciting and require you to stay in the moment,” he says. “Most of all communicating to customers as an instructor/guide for skiing and rafting has helped immensely in communicating to students during glassblowing classes.” Once Tomb committed to honing the craft of glassblowing, notably working in a factory for world-renowned glass maker Simon Pearce, he began to get nationally recognized for his work. In 2014, he started participating in juried art shows nationwide and has been awarded “best in glass” and served as the featured artist at the Nassau County Museum of Art, the Hampton Fine Art Festival, the Stuart Art Festival and the Scottsdale Artfest. After a 22-year hiatus, BMW revived the 8 Series as its new flagship model, sitting high atop the brand’s lineup in terms of design, luxury and status. The Gran Coupe reviewed here is a four-door sedan version of the two-door 8-Series, which is available as a coupe or a convertible. The Gran Coupe is offered in three trim levels: the 6-cylinder 335-horsepower 840i Gran Coupe; the M850i xDrive Gran Coupe, heavily powered by a 4.4-liter twin turbocharged 523-horsepower V-8 engine with standard allwheel drive; and the massive 617-horsepower M8 Competition Gran Coupe. When tested, the vehicle went from 0 to 60 mph in just 3.7 seconds. The quick engine is paired with a smooth, eight-speed automatic transmission. Outside, the design proportions and styling are nothing short of sensational – long, low with muscular rear shoulders, frameless doors, and a long sloping hood with performance bumps ending at the expressive BMW signature kidney-shaped grille. UNDERSTANDING PREVENTION AND RISK REDUCTION FOR THOSE AT HIGH RISK OF BREAST CANCER A conversation with breast cancer experts Marnee Spierer, MD, Chief of Staff and Chief of Radiation Oncology and Raquel Prati, MD, Chief of Surgical Services and Breast Surgeon at Cancer Treatment Centers of America (CTCA) Phoenix.

DR. SPIERER: On January 15, 2021 I had both of my breasts removed. The procedure is called a risk reduction double mastectomy, and I made the decision to help prevent breast cancer. The operation was performed by my friend and colleague here at CTCA Phoenix, Dr. Raquel Prati. But the operation itself came after a lot of research – asking a lot of questions – and genetic testing and counseling. That due diligence started with understanding my family history. My grandmother is the first person in my family who had cancer. She was totally healthy and fabulous, and she was diagnosed with some unknown “female cancer” – back then we didn’t know what that was – and she died very quickly. Years later, her daughter – my aunt – was diagnosed in her early 40s of breast cancer and died of that in her early 50s. This was still before genetic testing, so she was not tested for BRCA. Once BRCA testing became available, my mother got tested and she was negative. But at that time, it was a very basic test. In December of 2019, my older sister was diagnosed with breast cancer. She underwent genetic testing but with an extended panel. She, like my mom, was negative for BRCA. My sister’s diagnosis made three generations of cancer on my maternal side; at least two positively breast cancer, one unknown, and we have no known BRCA gene. There’s a line of thought out there that it is black and white – you are either a gene carrier and as such at higher risk for breast or ovarian cancer – or you are not a gene carrier and you’re at average risk. That is simply not true. Much more than a genetic mutation goes into determining risk.

‘LOOKING FOR SOMETHING THAT HAS GONE WRONG’ DR. PRATI: This is never solely about a positive or negative genetic test. It’s about a variety of factors. Once genetic testing is done, it’s important to also have genetic counseling in this type of scenario because people need to understand what the meaning of a result might be and what it might entail. From there, we can begin the discussion about prevention and risk reduction along with high intensity screening for individuals in higher risk categories. At a basic level, screening is an attempt to detect a problem as early as possible. You’re not preventing anything, but you are looking for something that may have gone wrong. For women at a higher risk for breast cancer, the screening is more intense and may include more

frequent imaging than the general population who is at average risk of developing breast cancer. Now, risk reduction can be offered in a variety of ways, but perhaps the most impactful plan is to have the breasts removed so that you would have the risk dramatically reduced. It won’t drop to zero – there is nothing you can do that would prevent all risk – but surgery will reduce risk by about 90 percent of whatever one’s risk level is. That’s a significant number and brings anyone to a lower risk level than the general population. Of course, there are other alternatives to risk reduction depending on your comfort level and high-risk situation. For example, if your highrisk situation is not genetically linked but you have atypical breast lesions from a biopsy or some family history on top of that, sometimes risk reduction might mean taking some medication to lower your risk of breast cancer. There are ways of doing risk reduction that aren’t surgery. Given the options, it becomes a patient’s choice after being offered their options.

‘KNOWLEDGE AND UNDERSTANDING’ DR. SPIERER: Everyone has their own path to making decisions about risk reduction. For me, it took time to learn my family history, run genetic testing and work through genetic counseling, understanding all my options through discussions with healthcare professionals. Risk reduction becomes about knowledge and understanding. At the end of the day, it took me seven months to come to the decision to move forward with the risk reduction double mastectomy. Once I made that decision, I never looked back because I had done my research and knew my risks and all the available options. This is what felt right for me.

NO TYPICAL CASE DR. PRATI: A lot goes into a patient’s decision, and there really isn’t a “typical case.” Everyone is different. People are influenced by the science, by emotion – there are cultural and demographic factors that influence decision-making. NO TRICK, ALL TREAT SanTan Spirits unveils CaraMellow Salted Caramel Whiskey

SanTan Brewing has been a pioneer in the local beer scene for nearly 15 years, earning accolades from the U.S. Open Beer Championship, Great American Beer Festival and World Beer Cup along the way. By 2015, the founders were ready for a new challenge and launched a distilling arm to complement its expanding brewing empire. Today, the brand has a portfolio of nearly a dozen whiskies, three gins, two vodkas, canned cocktails and even herbal liqueurs and bitters as well as its own Spirit House, a tasting room and eclectic cocktail lounge that opened in 2019 in downtown Chandler. “Our whiskies are a particular point of pride,” says Anthony Canecchia, founder of SanTan Brewing. “Each varietal is curated from two to four years using a method called elevage, a time-intensive but well worth it process where we rotate our barrels to different climates during their aging process.” According to Canecchia, the process – coupled with the natural Arizona heat – allows each batch to breathe deep into the wood, which benefits the critical aging period. This painstaking process is used for the brand’s more traditional and cask strength offerings, as well as its newer flavor-infused whiskies. “The first in our line of flavored whiskies is called CaraMellow,” Canecchia says. “As the name suggests, it is meant to transport you back to your youth and remind you of that amazingly smooth caramel in a Cadbury Caramello candy bar.” But, unlike the Caramello, there is no chocolate. Instead, sea salt caramel is combined with a hint of toasted marshmallow and then added together to the freshly distilled whiskey prior to proofing. “It is important to flavor nonaged whiskeys because the aging process will take away from the desired flavoring or intensify the sweetness,” Canecchia says. Over the moon for the sweet, smooth result with the CaraMellow, Canecchia and his team have been further inspired to dream up additional flavor combinations with their whiskies. “The success of the CaraMellow spurred us to try our hand at a CinnaMaple Breakfast Whiskey and SweetPeach Bourbon Whiskey, both out in recent weeks, among others,” Canecchia says. According to Canecchia, the CaraMellow – and its sister varietals – may be enjoyed on its own or over ice, but it really shines as the base spirit in a medley of seasonal cocktails. Kazimierz Wine & Whiskey Bar highlights mezcal in Not Your Mother’s Luau

In 2019, after nearly 20 years in business, Kazimierz World Wine Bar closed its doors. Just months after the heartbreaking closure, however, Valley restaurateur Tommy Plato – owner of Second Story Liquor Bar and The Gelato Spot – reopened the speakeasy-style restaurant as Kazimierz Wine & Whiskey Bar, adding a list of small bites, whiskies and cocktails to the menu. “Our cocktail program features a constantly rotating menu of classic and cutting-edge recipes, as well as some that are a little of both,” says Dominique Jackson, lead mixologist of Kazimierz. Not Your Mother’s Luau ($18) is both a nod to classic Tiki cocktails as well as a palate-pleasing new way to enjoy mezcal. “It offers a little something for both the traditionalist and the experimentalist.” It starts with Mezcal Naran, which is known for being agave forward with notes of lemongrass and orange peel versus that pure smokiness for which the spirit is most often known, in a shaker with ice. The mezcal is combined with tart Chinola Passion Fruit Liqueur and Liquid Alchemist Passion Fruit syrup. “We also add lime juice and pineapple juice to play up the acid and the tropical notes in the build,” Jackson says. “Before shaking, we add a hint of orgeat syrup, as the almond flavor provides just the right amount of sweetness.” The contents are shaken and strained into a Tiki-style glass mug filled with freshly shaved ice. “We garnish with dehydrated pineapple, lime wheel and Luxardo cherry and then top with a hint of cinnamon before bringing out the hand blowtorch,” Jackson says. Citizen is an upscale gastropub known for its innovative new American dishes and barrel-aged cocktails, with Benjamin’s offering an immersive dining experience right above.

What inspired you to cook? Growing up in Minnesota, I always cooked with my mom and grandma, but aspired to be an architect. Two weeks shadowing an architecture firm in high school cured me of that, and I turned to food, enrolling in Saint Paul College's Culinary Arts program after graduating high school in 2005. What was your first professional cooking job? I was a team chef for the Minnesota Wild. Talk about trial by fire. Or ice, since it was hockey. From snacks after practice to large-scale galas to intimate player meals, I experienced a little of everything, including seeing the then-team center drink an entire bottle of vodka during dinner and somehow skate like a champ six hours later. How did you make your way to Arizona? After visiting friends at Arizona State University, I got a wild hair to move here in 2008. The odd thing: My parents lived in Sedona, and I didn’t tell them. Imagine my mom’s surprise when she called asking how the Minnesota winter was and me replying I had no idea as I was enjoying the 70-degree Scottsdale winter. What brought you to Citizen? Upon moving here, I mentored under Gio Osso at the Estate House, where I became friends with Bernie Kantak, who then worked at Cowboy Ciao across the street. After Estate House closed (thanks, recession), I helped open Beckett’s Table before Bernie called me with plans for Citizen. I joined him on day one in 2011 and have been here ever since. Describe the food at Citizen: We are a gateway restaurant! We offer food you know – like meatloaf – but serve it in a way that helps you start to come out of your comfort zone a bit. Bourbon & Bones For those who are unaware, bone marrow is the soft, spongy tissue with copious blood vessels found in the center of the bones of most animals, including humans (though expect beef here!). Before letting that stop you from tasting, it is important to note that not only does eating bone marrow build the immune system and help the body regenerate cells faster, but its flavor is both decadently buttery and meaty. Escargot

The Mick Brasserie As anyone who has seen Pretty Woman knows, escargot are “slippery little suckers.” That is because they are edible land snails – escargot is actually just French for “snail.” That is enough to keep some people from trying escargot their entire lives. When prepared well, the dish explodes with butter and garlic, and has a lovely texture. At The Mick, they are made with housemade garlic- and parsley-infused butter and accompanied by brie cheese gratin as well as toasted brioche and microgreens. Pig Face Dumplings

Clever Koi Clever Koi's signature dumplings have a blend of multiple exotic flavors. First, there is the pork cheek, which is the slip of meat in the hollow of an animal’s cheek underneath its eyes known to melt in your mouth. Then, there is the briny kimchi, an Asian staple that intimidates some but is just a take on fermented vegetables. Finally, the dish is topped with housemade spicy Sriracha sauce, which many Arizonans can take, but visitors still shy away from on the regular. $13.50. www.thecleverkoi.com.

Esquites

Talavera Esquites comes from the Aztec word “izquitl,” which means “toasted corn.” That sounds innocent enough, right? At Talavera, it is then transformed into the restaurant’s version of Mexican street corn with the addition of chiles, cream, aged cotija cheese, and lime. The unexpected ingredient, and the one that may make diners pull back, is the final ingredient before it comes to the table: chicatana salt. Despite its name, this finishing touch is actually a rare chicatana ant. Prized in Mexico, the ant is known for its ability to impart an earthy smokiness to any dish. $12. www.talaverarestaurant.com.

White Anchovies with Speck

Benjamin’s Upstairs Many have only ever had anchovies ground up in Caesar salad dressing, and most are not even aware they are in there. Whole white anchovies, especially marinated in vinegar and salt then packed in oil as they are prepared here, are one of the most prized delicacies in the Mediterranean. At Benjamin’s the briny beauties are also combined with speck, which is a type of cured, lightly smoked ham. Accompanying this salt lover’s dream plate is creme fraiche made with chives and dill as well as mustard, pickled red onions and crostini. $14. www.benjaminsaz.com.

Chicken Liver Mousse

Roasted Corn Gordita

The Mission As with the esquites, at first blush a roasted corn gordita sounds fairly tame. However, among its signature ingredients, one that tops the entire dish, is an authentic huitlacoche crema. Huitlacoche, also often called corn smut, is a fungus that infects some species of corn. Though it sounds odd, huitlacoche actually tastes like a mushroom-corn hybrid with a hint of truffle. In Mexico, the ingredient is so beloved, its regularly found in fresh in the farmers markets, akin to fresh strawberries or basil here. $12. www.themissionaz.com.

Hush Public House Fun fact: Chicken liver – yes, the actual organ meat of the chicken – is a superfood. It happens to be loaded with folate, iron and biotin, each of which helps the body perform a laundry list of functions. Tasting one for the first time can be daunting for some, but at Hush, where it is whipped into a light and airy mousse that tastes like a savory souffle, taking the culinary chance is worth it. Caviar Fries

The Americano Americans love French fries. However, those most often consumed are likely of the McDonald’s variety. At Americano, as a nod to founder Scott Conant’s Italian roots, they hit a whole new level. After the fries are cut by hand, they are topped with creme fraiche, shallots, scallions, and cured egg yolk. Then, the dish gets its signature ingredient: Calvisius White Sturgeon caviar, imported from Italy. Caviar is made by curing unfertilized sturgeon eggs from fish belonging to the Acipenseridae species with salt. MIND, BODY, SPIRIT SANCTUARY Blue Buddha Collective brings the wellness community together through yoga, coffee and art BY ALISON BAILIN BATZ

To say the past 18 months have been stressful would be an understatement. Thankfully, Blue Buddha Collective is now open in Scottsdale, providing some much-needed Zen and wellness – not to mention caffeine – to locals. Part yoga studio, part espresso bar and part art gallery, the 2,100-square-foot business is actually three concepts in one. The retreat is perfect for health and wellness enthusiasts looking to connect on the mat, and over a cup of coffee. Blue Buddha Yoga within the Collective specializes in eco-friendly, infrared heated yoga. “The experience of practicing this type yoga, which occurs in an infrared studio, is similar to practicing yoga outside and feeling the warmth of the sun on your skin, without receiving the harmful UV exposure,” says Karin Fellman, founder and owner of Blue Buddha Collective. The studio also offers heated vinyasa flow yoga as well as Pilates and bands programs with infrared radiant heat. There

are two non-heated classes, Buddha barre and yoga nidra/sound healing, which is an ancient sleep-based meditation. “All classes are designed to strengthen the body, mind and spirit and work to boost immune function through infrared light therapy, postures and breath work,” says Fellman, noting some classes are also offered in Spanish and that both mats and towels are available onsite. “Students leave feeling stronger inside and out, with feelings of inner peace, self-awareness, selflove and acceptance.” According to Fellman, each class is designed for most fitness levels, and movements may be modified as needed. At Blue Buddha Café guests may enjoy both hot and cold espresso as well as coffee drinks, drip coffee, smoothies and tea. The Collective also features an artists’ nook, with work by local artists on display. According to Fellman, the studio is outfitted with UV lights, antimicrobial PEM flooring in the yoga room, and hospital-grade air filters in the cafe. The yoga space is equipped with clean Infrared Light Therapy - Radiant Heat Panels to create heat without blowing dust and allergens around, as well as leave a greener footprint. “I’m so excited to welcome yogis, espresso enthusiasts and artists alike through Blue Buddha’s doors,” Fellman says. Blue Buddha Collective is open Monday through Friday from 6 a.m. to 7 p.m. and Saturday and Sunday from 9 a.m. to 1 p.m. Class schedules are listed online. Single classes start at $17, and there are several tiers of pricing, class and beverage bundles as well as a tier that offers unlimited classes starting at $88 per month.
