FREE-RANGE CORN-FED LANDES CAPON RED LABEL ST SEVER The free-range corn-fed capon St Sever, the noblest of festive poultry, comes from the largest forest in Europe, the Landes forest. Hailing from the ancestral “Cou nu” (naked neck) chicken breed that has remained unchanged for over 50 years, it was awarded the first Label Rouge in history in 1965. The capons live in total freedom, in the shade of pines and ferns, and instinctively find the way to their marensine (a small mobile shed in the Landes tradition) when night falls. Fed with 80% farm-produced corn, their diet is supplemented with soy, alfalfa, vitamins and minerals, as well as all the treats found in the undergrowth (grasses, worms, insects, etc.). During the last 25 days, the farmers feed their poultry milk, which gives them a tender and soft flesh and a slightly typical flavour. This exceptional capon will give you chunky pieces of meat, which do not reduce when cooked! THE CHEESES OF THE MARCHAND BROTHERS For 6 generations, these internationally renowned cheesemakers from Lorraine have been handing down ancestral family recipes. Today’s heirs Philippe, Patrice and Éric Marchand age nearly 250 cheese varieties in their cellars, some of which have become genuine legends. The story of Le Petit Gros Lorrain starts in an attic where Philippe Marchand discovers a round mould made of fir wood. Inside is a notebook written by his grandmother, detailing an ageing process that disappeared more than half a century ago. To honour both his ancestors and the Lorraine region, the master cheese affineur set out to bring a Gérardmer cheese back to life and collaborated with a dairy farmer to recreate the Gros Lorrain. A little later he felt like giving it a little brother, and that’s how the Petit Gros Lorrain was born.
