The first quarter of the year is done, and already I feel like I need a vacation! But thankfully in South Africa we have loads of weekend spots to explore, irrespective of which province we live in.

I think one of the key lessons I learned as a result of all our Covid-19 lockdowns, is to experience more! For me that means taking advantage of and realising how awesome SA actually is. Considering I have not won the Lotto as yet, leave is sometimes a bit scarce, but even if it’s just driving out to the winelands, picnicking at a park, or doing a one-day hike, being out and about is fantastic for the soul.

Having lived in various provinces I can say that each province has its own unique offerings of nature, entertainment, history, adventure and more. Coupled with the grace and openness of South Africans, we are indeed spoiled for leisure pursuits.

Budget constraints? There are plenty of accommodation options that cater to your pocket, and there are loads of free or low-cost activities to enjoy. Family venues – loads! Considering we are in autumn, which has great weather – not too hot or too cold – we have no excuse.

In this issue we have an exciting section called "Into Africa" (page 73) where we feature some fab destinations outside of South Africa. We feature Mozambique and Malawi, in addition to some great getaway spots to experience!

Keep a lookout for the Sardine Run

Something to keep a lookout for is the migration of sardines along the Southern African coast, which is one of the biggest migrations of marine creatures worldwide. A vast number of sardines travel from the Cape up the Wild Coast in large groups, creating an opportunity for predators to feast and a fascinating spectacle for divers. The sardine generally takes place late autumn into winter (generally around May to July) – check online to ascertain dates.

Travel Tips for Autumn

> Assign roles: A single leader is the goto person who ensures everyone knows what they need to do, and what is happening. Alternatively, if appointing a group leader does not work, then assign specific roles to people such as a “foodie” who can be in charge of finding all the best spots to eat; the “finance guru” who can be in charge of doing cost calculations for trip. Whatever you choose, keep lines of communication open so everyone feels included.

> Group transfer: It’s a good idea to plan this in advance to kickstart the trip in a relaxed manner as opposed to waiting around trying to figure out how many taxi’s and other transport will be needed and costs.

> Lookout for group discounts: This could be for accommodation, activities, and more.

> Pack light: You have responsibility for your own luggage, so it is not a good idea to have loads of bags when travelling from place to place.

2 Double up!

• Pack in an extra bank card: Sometimes life happens where you misplace your card, or it might be stolen. It’s a good idea to have a spare debit card as a backup so you are not left with no money.

• Have extra copies of your passport and ID: If you misplace your documents, have a backup in one of your other bags. It’s also a good idea to email yourself these documents so you always have a copy if the original is lost.

Booking flights

The rule of thumb remains to book in advance. Flights tend to be a bit cheaper if you fly during the week (excluding Monday and Friday). If you have a credit card or some sort of rewards or loyalty card, be sure to check if you qualify for a discount.

Tourism offices

These are often under-used, but they can be a veritable treasure trove! Tourism offices should know everything that is currently happening, and the staff can also help point you in the right direction if you have a limited budget and time. These offices also have handy maps and brochures to guide you.

5 Plan but don’t over-plan

While it’s important to have an itinerary of places you want to visit, leave some hours or days open to explore places you might not have known about.

Device chargers

Load-shedding aka electricity blackouts, has become quite normal in SA. The power is off for two to four hours at a time, depending on area and load-shedding stage. It might be useful to download a mobile app on from the Google Playstore or Apple iStore to stay in the know – an

Avoid travel debt - stick to the budget

Ensure you have a budget drawn up with a "security" fund for emergencies. While it may be tempting to blow the budget there are a variety of activities and accommodation options to suit every budget.

Lanzerac where grace & wine never go out of style

First-class. Those are the words that come to mind when visiting Lanzerac Wine Estate.

Lanzerac is nestled in the Jonkershoek Valley, which is well-known for its fynbos, trails, lush forests, majestic views of mountains and conditions suited for growing grapes.

It’s hard to find the words to adequately express an experience at Lanzerac, but Wynand Lategan, Lanzerac’s Cellar Master comes pretty close to it while describing the wine. “It’s the perfect place where old-world charm meets new-world fruit.”

Lategan, in the midst of the busy harvest season, comes across as highly efficient yet warm, and has quiet confidence that stems from experience and passion for what he does.

“After studying, I worked as a journalist but really wanted to work outdoors in nature. After a time, I started studying Wine Technology at Elsenburg and realised that I could make this a career. I started by working weekends and every holiday in tasting rooms at wine farms and eventually got a job as an assistant winemaker,” Lategan says.

“Winemaking affords you so many opportunities – it is farming but also affords you a creative outlet to produce something amazing from nature and add input to various aspects of the business, such as marketing, finance and so forth,” he adds.

“Each day is different, particularly during harvest. While you have a general plan, sometimes things change. I have to consider the outdoor elements, loadshedding and various other factors –being adaptable and taking a very handson approach is required.”

According to Lategan harvest time can vary slightly. “It’s a bit like giving birth to a baby and you have to be ready whenever its ready and then monitor it 24/7. Harvest lasts about two months and I have a general idea of what I will be getting because wine is actually made in the vineyard, which I consistently monitor.

“It is critical how you manage your vineyards in growing season as that influences your wine more than what you do in the cellar. Throughout the growing season I can ascertain the character of what I am going to get. The key to making a really good vintage is to get the timing right, know when to harvest and to not overdo the wine in the cellar. For me it’s about finding the perfect fruit in vineyard.”

Lategan explains that Lanzerac’s wines are unique in the sense that it focuses solely on the Jonkershoek Valley and its terroir. “Each winemaker has their own style, but for a good wine you have to be cognisant of the terroir and work with that. South African wine is a combo of old world and new world – old world style but new world fruit.

“Our white wines are very much about balancing freshness and fruity flavours, and our reds feature dark fruit and

polished tannins. All our wines are about balance – I never want to over-oak a wine or over-ripe the fruit. Our wines also tend to focus more on the palate than the nose – it has a lot of substance on the palate.”

Lanzerac has three main ranges: Jonkershoek Range, Heritage Range and Cellar Master Collection (limited).

“There are always new ideas but for the Jonkershoek and Heritage Range it’s about consistency to cater to our clients. Once I have done the core wines – Jonkershoek and Heritage – I then experiment a bit, which is what the Cellar Master Collection is about... I am never too old to learn something new,” says Lategan.

Kicking off: getting there

Travelling from Cape Town our first destination was Tsitsikamma. Getting there is an adventure on its’s own. There is the option to drive to Tsitsikamma from Cape Town (about 8 hours), but with a jam-packed trip we did not have the time. I would recommend if strapped for time, fly into Gqeberha (formerly known as Port Elizabeth) or George. Having done this trip before, I opted to fly into George because while it is a bit longer (speed limit is lower), it is a more scenic drive passing Knysna and Plett (perfect for a bit of a detour).

Destination Tsitsikamma

Tsitsikamma is arguably one of the most magical places in South Africa. It’s lush forests, captivating coastline and natural splendour highlights some of the best scenery SA has to offer.

To properly enjoy Tsitsikamma you need at least a week to explore some of the great multi-day hikes, However, if you strapped for time you can opt to do shorter walks like the Storms River Mouth Bridge Trail, which is about an hour.

Storms River is a charming little village and feels safe. A few quaint shops and sufficient cafes help add to the happy yet natural vibe.

• Hike the Otter Trail – a multi-day hike where you traverse forest and coastline.

• Canopy tour – involves ziplining through the forest, crossing suspension bridges and learning about the ecology of the area from an experienced guide.

• MTB and general hiking.

• Bloukrans Bridge Bungee – one of the world’s highest jumps (216m).

• Water activities – includes tubing, kayaking and canyoning adventures.

Perhaps it was the relaxed vibe and beauty of Tsitsikamma, but the two-hour drive to Gqeberha on the N2 was fairly chilled. If you have some extra time, you can do a stop-over at Jeffery’s Bay to experience some good waves.

Did you know? NMB is the Bottlenose Dolphin capital of the world with approximately 28 500 Bottlenose Dolphins sighted in the bay.

Highlights of Nelson Mandela Bay

Route 67: Starting at the Campanile this route offers 67 art works depicting Nelson Mandela’s 67 years of work in the fight for freedom. All artwork was done by local artists.

Sacramento Trail: A popular and easy 8km coastal walk that offers amazing scenic sites of land and sea. There is also a chance to spot dolphins and whales when in season.

Beach about: There are loads of awesome beaches, such as Hobie Beach, to explore, chill on, or have a meal at, and it’s a perfect spot for sundowners.

Addo Elephant National Park: Has the highest density of African elephant in the world but is also home to a variety of other animals including lions, buffalo, zebra, and eland. In addition to offering safaris, Addo also offers adrenalin pumping adventures such as ziplining and sand sledding.

Top tip: If travelling the NMB region, purchase the Nelson Mandela Bay Pass, which is a smart card that offers you free admission to certain attractions, in addition to discounted rates for selected activities, shops etc.

Destination Amatola Region

Dense forests, majestic mountains, flowing waters, history and culture – these all define the Amatola region.

Highlights

Amatola Mountains: Sunlight filtering through the lush afromontane forests, waterfalls, panoramic views and a magical feel – this is the Amatola Mountains. Originally inhabited by the Khoisan hunter-gatherers, it later became a fortress for the Xhosa people during time of war.

Hiking trails: The Amatola Hiking Trail is an iconic yet challenging trail. This six-day (100km) hike sets off at Maden Dam near King William’s Town and traverses through Hogsback. It is advisable that you attempt this only if you are fit and skilled at hiking. If you are a novice, ensure you have experienced hikers with you.

While the Amatola Hiking Trail is well-known, there are shorter hiking and walking routes available to explore if you are strapped for time or lack the fitness for a six-day hike. Examples include:

• Military Path, Hogsback: About 2km walking through forests and opportunities to spot an array of birdlife. According to legend, Hangman’s Tree (found on this path) was used as a means to execute of soldiers who were considered deserters.

• Andersons Dam Trail, Stutterheim: About 8km, this trail is suitable for various fitness levels. In addition to amazing scenery, there are picnic spots and ablution facilities for a great day out and about.

• Kologha Forest Blue Day Walk, Stutterheim: Approximately 3km, this hike is suitable for all fitness levels and traverses through indigenous forest and passes magnificent waterfalls.

• Katberg Hiking Trail, Katberg Forest Station: This can

take two to three days or a couple of hours if you design your own trail. There are some challenging aspects to this trail, so it’s best to have a level of fitness.

• Pirie Forest Hike, halfway between King William’s Town and Stutterheim: A bit of a hidden gem, this is a 9km circular hike. The hike begins at the same spot as the Amatola Hiking Trail and turns off. To many visitors this trail seems like visiting a fairy wonderland.

Hogsback

Located high up in the Amatola Mountains, this village is magical. Dominated by indigenous forest and majestic waterfalls, Hogsback is a gem for nature lovers. Activities found here include mountain bike trails, hiking, horse riding, exploring the arts and crafts route and a host of eateries.

J.R.R. Tolkien, author of the Lord of the Rings trilogy, is said to have been inspired by the area to create his fantasy universe, Middle Earth.

Stutterheim

Located at the foot of the Amatola Mountain range, Stutterheim boasts a variety of outdoor activities such as hiking, fishing, abseiling, canoeing and picnicking.

Visitors can also pop in to the Stationary Engine Museum, which houses one of the most comprehensive collections of restored stationary engines. There is also the Cata Village Museum, which highlights the history of the Xhosa village of Cata.

Kidds Beach

Before heading back to the city life and reality, one more stop – Kidds Beach. Chill out at this seaside escape on the Sunshine Coast that boasts stretches of white sandy beaches and water activities such as surfing, fishing and tidal pools for kids.

Fryer’s Cove! A wine of a time at

CRISP AND FRESH WITH NOTES OF THE OCEAN – AN APT DESCRIPTION FOR FRYER’S COVE AND ITS WINE…

Setting off early in the morning from Cape Town we hit the road for Doringbaai! A mini-road trip, about three hours from Cape Town, we travel the N7 and eventually turn-off to traverse some dirt roads (following Google maps), that eventually gets us to Doringbaai. Doringbaai is best known for being a quaint, hardy fishing village, but we discovered a hidden gem in Fryer’s Cove…

Arriving at Fryer’s Cove the outdoor building looks like a fish factory, which it originally was. Entering via The Jetty Restaurant, which has the aesthetic of a typical restaurant by the ocean, the newly launched Tasting Room is a surprise. It is chic and contemporary yet blends in seamlessly with its surrounds. Design-wise and aesthetically, the building and its features feels contradictory, yet it works.

The wine

The nearby and only vineyard within the Bamboes Bay ward –the smallest in South Africa – is a mere hop, skip and jump from the Atlantic Ocean (and it's about 2km from Fryer’s Cove), which results in the premium Bamboes Bay Range.

Liza Goodwin, Fryer’s Cove Winemaker and General Manager is rushing around as we visit in the midst of the harvest season, but she spares some time to give us some background about the vineyards and the creative/operational process. Considering the proximity of the Atlantic Ocean, I question how this impacts the process and taste of the Bamboes Bay Range.

“The Bamboes Bay Sauvignon Blanc is extremely unique – I have not tasted another wine with these flavours – it's

unmistakably West Coast.

“The wine brims with a vibrant mix of citrus and passion-fruit aromas, while wisps of fresh seaweed awaken the senses. The nose follows through on the palate with intense lime and tropical flavours, rounded off with a lingering salty minerality that accentuates the closeness to the ocean,” says Goodwin.

Goodwin explains that due to the Bamboes Bay vineyard location, it generally takes the grapes a bit longer to ripen further adding to the complexity of the wine.

“The temperatures here are cooler – averaging about 1820 degrees, and while there is sun in the mornings there is generally a mist, so our grapes take a bit longer to ripen. We constantly taste the grapes to know when it’s ready and I would say that our wines have flavours that are a more concentrated and intense.”

Chatting to Goodwin, the history of Fryer’s Cove comes through – it was originally a family-owned business based on a passion for wine that remains true to its roots today.

There is no doubt that any wine farming is challenging, and winemakers in general have to be very agile as the vineyards are at the mercy of nature, however the Fryer’s Cove team use the challenges to not only overcome but innovate.

An example of the ingenuity is that Fryer’s Cove runs stainless steel pipes filled with water from the cold Atlantic Ocean, which then runs through the cooling tanks to regulate their wines temperatures thus being more environmentally friendly.

Fryer's Cove Wines:

• Bamboes Bay Sauvignon Blanc: Clean herbaceous flavours that is concentrated on the nose. Lemon grass and citrus come through.

• Bamboes Bay Hollebaksstrandfontein (Sauvignon Blanc Reserve): Full-bodied that is unique in taste. Hints of fynbos and kelp come through.

• Fryer’s Cove Sauvignon Blanc: Citrus notes come through clearly with a hint saltiness.

• Fryer’s Cove Chenin Blanc: Citrus notes complemented with hints of oak spice.

• Fryer's Cove Grenache/Cinsault: Aromas of raspberries and hint of cloves.

Having been to various wine estates I can honestly say that a visit to Fryer’s Cove is a novel experience – a wine tasting practically on the doorstep of the ocean! The aesthetic is tranquil, and the gentle ocean breeze coupled with a magnificent view makes for a chilled experience.

Launched in December 2022, the indoor seating area is tastefully designed with earthy colouring complementing ocean tones. The indoor area allows guests to look upon a huge bespoke fish tank with steel fermentation tanks in the background. Goodwin points out that they are doing a bit of an experiment by maturing a few bottles of wine in the tank. The outdoor seating area allows for panoramic views of the ocean, relaxation and remains authentically Doringbaai.

At the tasting room, visitors can enjoy some fantastic pairings. Chef Allan creates delicate dishes that balance and complement the wine. The dishes are flavourful but not overpowering – it was a bit like bite-size fine dining, which fitted well with the destination.

while enjoying wine with a view.

Chef Allan, who heads up the kitchen, has an impressive background. He has worked internationally at Michelin Star restaurants and made it to the quarter finals of MasterChef UK. Since returning to SA, he has worked as a caterer, started his own ice-cream business called “Delish” and is now at Fryer’s Cove. Considering the location, it is understandable that the menu features fish dishes heavily but no complaints here! The menu itself is simplistic with a twist – guests can order their regulars such as fish and chips, seafood platters, burgers etc. but there are also dishes like risotto with abalone that speaks to his training and passion for fine cuisine.

A perfect escape

Granted it is a bit of a drive to Doringbaai from Cape Town, however, a visit to Fryer’s Cove feels like an escape from the daily grind of life –it combines all the favourites i.e. a

roadtrip, crisp wine, superb food, and authentic rugged beauty. It’s quite easy to make a full day or even a weekend break with accommodation options a few km away.

AT FIRST GLANCE THE RENAULT KOLEOS LOOKS IMPRESSIVE FROM THE OUTSIDE – IT HAS STYLE AND ELEGANCE. IT ALSO HAS A DIFFERENT LOOK TO MANY SUVS ON THE ROAD THAT SOMEHOW ALL SEEM TO BLEND TOGETHER WITH SIMILAR LOOKING FEATURES – SO ANOTHER POSITIVE.

Stepping in the vehicle, I feel it is a bit of a waste that only a colleague and I are road tripping because this SUV is really spacious – it will comfortably transport a family and has sufficient boot space.

Destination Doringbaai, West Coast from Cape Town! This is approximately a 7-hour drive (there and back). Driving an automatic, the gear transitions remain smooth and it provides enough power to easily overtake other cars on the road.

The Koleos also handled perfectly on the various bends and curves on the N7. After driving for a bit on tar, we turn off and hit a long stretch of sand and gravel. I was impressed –sometimes on gravel and sand a vehicle will slip and slide, but with the Renault Koleos the drive remained solid.

Overall, the vehicle looks sexy, packs a punch on the road in terms of handling and has all the bells and whistles that one would expect of a luxury vehicle.

The Hex Trails

At the foot of the Hex River Mountain, the working farm Klipheuwel hosts some of the most adventurous and scenic hiking trails.

The Hex Trails consist of five routes varying in distance and elevation. Here visitors can choose to undertake a family and pet friendly stroll along the River or Cattle trail, or for more experienced/extreme hikers the Baboon trail will test your endurance to the full as this is the most challenging route of all.

Camping, kloofing & hiking at Ruah

Situated 6km outside De Doorns, nestled in the base of Elskloof and met by the Sand River, this campsite is a hidden and well-preserved historical gem that once was home to the first generator implemented by the Dicey Bros. Remnants of the Khoisan people are also still visible here.

Ruah consists of six campsites, ablution facilities, a clearly marked hiking trail and rock pools. Camping, kloofing, exploring and relaxing is what you do best when visiting Ruah Camping. Unfortunately, no day visitors are allowed. Only campers have access to this route.

Explore the Hexpas

After diamonds were discovered in the north, the Hexpas railway line was built in the 1870s to connect Cape Town and Kimberley. The line climbs to the karoo plains at a steep 1:40 gradient and its cutting is claimed to be the deepest and longest hand-dug cutting in South Africa. During the 1980s this railway line was decommissioned and became home to the much-loved Hexpas Express from 2002 to 2015.

The Hexpas Rail Route, however, is still home to numerous hiking and biking routes. While strolling or jogging along the railway line, you can either explore the circular route around Osplaasdam, or stay on track all the way up to Tunnel Station or the Kaffrarian Rifle Monument. Permits and refreshments can be obtained at the Veldskoen Farm Stall.

Rim of Africa

Rim of Africa, Traverse of the Cape Mountain, is home to a variety of hiking trails. The Hex River Complex was declared a world heritage site by UNESCO during 2015.

The Hex River Mountain range hosts Thomas Hut and the renowned TRAVERSE 4, one the most challenging and breathtaking trails on the route. Only experienced hikers (Registered MCSA Members) have access to these routes on guided hikes.

Roam the Matroosberg

Ahoy! Ever wondered where the name of the Matroosberg derives from? Well, when travelling northeast from De Doorns and looking up the Hex River Mountain, you’ll spot a rock formation outlining the shape of a sailor standing on his boat.

So, if you’re a skilled mountaineer take a hike up the unmarked Matroosberg Route and visit this site. Overlooking the Hex, you’ll enjoy epic views while gazing across the lush greenery of the valley and Groothoek Kloof.

Gear/saddle up for Middelberg

On the outskirts of the Hex River Valley, along the R318 enroute to Montagu, visitors can also pay a visit to Ezelsjacht and Middelberg Guest Farm. Both these estates are situated on a karoo plateau (also known as the ‘Agterveld’) between the neighboring towns of De Doorns and Touwsrivier.

Here romantic weekends under starry skies entails roaming on horseback, mountain biking or trail running. For the adventurous, sprint rallies are also hosted by Ezelsjacht annually. Varying in elevation and distance, Middelberg is

home to five biking and hiking routes – from family-friendly to extreme.

HIKING TRAIL GEMS TO EXPLORE IN SA…

North-West: Kgaswane Summit Trail

Located in the Kgaswane Mountain Reserve this is a circular, 25km two-day hike, which is better suited for experienced hikers. Along the way there are a variety of landscapes to experience, from bushveld to indigenous forest with views of Rustenburg, Pilanesburg and Magaliesburg.

The terrain is fairly challenging in parts – be prepared to do some scrambling. Wildlife such as kudu, eland, zebra, hartebeest, snakes and baboons can be spotted.

Mpumalanga: Blyde Canyon Hiking Trail

With panoramic views of the Blyde River Canyon, there are various trails to explore which are interlinked. The Blyde Canyon Hiking Trail covers about 50% of the nature reserve, is approximately 60km and takes about three to five days to complete, depending on your fitness level. Traversing though forest you will witness amazing rock formations.

Limpopo: Magoebaskloof Hiking Trail

Located in the Magoebaskloof forest, hikers get the opportunity to experience indigenous forest, pine plantations, and streams and waterfalls. The hike can last anywhere between one and five days, depending on the route you take. If you choose to do the full route (five days) it is recommended that you be relatively fit.

Be on the lookout for the ‘tallest planted tree in the world’, as well as historical sites such as the old mule path and the O' Connor memorial.

KwaZulu Natal: Cathedral Peak Trail

This hike can take one to three days, depending on where you choose to break it up. If you opt for the one-day option, you would need to get an early start as the hike is about 19km (approximately 10-12 hours).

Considering that there are some steep paths, which require a scramble, it’s advisable to be an experienced hiker. Cathedral Peak stands just over 3 000m above sea level and is surrounded by the Drakensberg escarpment. Of interest is that the area is well known for rock paintings.

Free State: Thaba ‘Nchu Trail

Covering about 9km, this is a relatively easy trail. Great views and gradual climbs allow hikers to explore with ease and break for lunch. Fairy shrimp can be found in rainwater pools in the rocks.

TOP TIP

If you are new to hiking it's advisable to choose a hike that is not too long or has too much climbing. To undertake longer more difficult hikes, you should train in advance.

Gauteng: Shelter Rock Trail

Named after a boulder that was dislodged from the Magaliesberg cliff face many years ago, the Shelter Rock Trail is just under 8km and takes just under three hours. While there are some inclines, it is not a hectic hike for those in reasonable fitness and health.

Some highlights include majestic views of the Magaliesberg and ruins of an Iron Age village. Did you know: Local people took shelter at Shelter Rock from the enemy during the Great War of 1898-1903 and during Mozillikazi’s invasion of the area in 1820.

Eastern Cape: Alexandria Hiking Trail

Located in the Addo Elephant National Park, the Alexandria Hiking Trail is a 36km circular two-day (or three-day) adventure during which hikers experience forest, coast and dunes. A moderate level of fitness is required.

Keep a lookout for the “Waterboom”, a gigantic yellowwood named for the reservoir of water held at the base of its trunk. You can also see Bird Island in the distance and stand a chance to spot the endemic hairy-footed gerbil.

Western Cape: Swellendam Hiking Trail

This is a trail for seasoned hikers that covers 60-80km over four to six days (there are shorter trails). Hikers will traverse mountain terrain, kloofs and see waterfalls and rock pools. It does not require scrambling but there are some tricky parts. It is well-known for spotting proteas and a variety of birdlife.

Northern Cape: Klipspringer Hiking Trail

A 32km loop trail near Augrabies Falls National Park, this is a three-day hike during which there is a good chance you will spot klipspringer. The trail can be challenging, and hikers should be fit. The trail is generally open during April to October as the heat in summer can be brutal. Hikers will get the opportunity to see gorges, rivers, succulents, rodents, reptiles and granite rock sculptures.

HERE ARE THREE AREAS YOU CAN FOCUS ON TO MAKE YOUR NEXT HOLIDAY AS ‘GREEN’ AS POSSIBLE.

BE FOOD SMART

What would a holiday be without enjoying some wonderful meals with family and friends? And yet, we also know that the way in which we produce and consume food has one of the greatest impacts on our environment.

This is for a range of reasons – from the clearing of virgin land to make way for new crops to unsustainable fishing practices and excessive food waste. Fortunately, we have some ideas and handy apps to help you make your food choices a little easier.

Follow the sugarbird

You can start by choosing to support one of WWF’s 55 Conservation Champion farms in the Western Cape that have signed up to ensure that they implement regenerative agriculture practices. This includes lowering their energy and water footprints and safeguarding natural areas on their farms, particularly in the Cape Floral Region which is one of the world’s botanical treasure chests.

WWF’s Conservation Champions are entitled to use the Cape sugarbird logo on their wines to show that they are taking their environmental responsibilities seriously – so look out for the logo when you’re selecting your wine for your evening meal. You can also download the Champion Wine Farm Guide (http://championwineguide.co.za/) which gives you all the details about participating farms – including many of the ecotourism activities they offer to visitors, from mountain biking to hiking, picnics and more.

Greenlight your seafood

For many, a beach holiday is synonymous with a delicious plate of seafood. But we also know that many species are currently being overfished, which can make ordering that meal a bit tricky. Fortunately, there are choices you can make – like eating locally produced mussels over prawns – that will ensure that you are doing your bit to protect our oceans.

An easy way to check whether the fish

that you want to order is sustainably fished is by using the WWF Southern African Sustainable Seafood Initiative app (or SASSI app). It works by using a basic traffic light system to guide consumers. If a species is listed green it’s your best choice, orange means you should think twice, and red means don’t buy. Keep it seasonal

A holiday is a great opportunity to frequent local markets and buy local, seasonal produce which helps to reduce your food footprint. Get creative when planning your meals so that they reflect the seasonal bounty that we have in South Africa and factor more vegetables into your diet – for your own health and the health of the planet.

Limit food waste

Food waste is a big issue in South Africa, with almost a third of food going to waste (that’s 10 million tons of edible food a year!). In a country, where so many go

hungry this is an appalling statistic.

Don’t over shop if you’re self-catering but rather plan your meals carefully so as to limit what lands in the bin. Remember, many places are not well geared up for managing waste so the less that goes into the bin the better. A little bit of foresight and planning can make all the difference.

Go on a camping trip, take a hike, go for a bike ride in nature. You’ll feel all the better for it. You can also learn more and reconnect with nature by visiting your nearest national botanical garden or an aquarium.

MIND THE PLASTIC

It’s natural to let your everyday habits slip a little when you’re on holiday – like buying water and putting the bottle into the bin when you’re done.

Did you know that South Africans generate the equivalent of 41kg of plastic waste per citizen a year, and the materials you throw away persist in nature long after they have been discarded?

You can reverse this trend by ensuring that you follow the mantra of refusing single-use plastics as far as possible and investing in reusable items. Pack your reusable coffee travel mug so that you don’t have to buy disposable cups when you’re on the move.

Keep your trusty water bottle to hand and refill it when you have access to clean, fresh water from the tap. Take along reusable containers and zip-lock bags to

store your food to keep it fresh for longer. Sit down for a meal and use real cutlery rather than grabbing the takeaway. The break will do you good.

And, finally, don’t forget to have fun!

Travel is all about recharging those batteries, creating new memories and having unique experiences. It’s widely acknowledged that spending time in nature is good for our physical and emotional wellbeing. Travel can also be a force for good when it supports communities and the local economy. If you internalise some of these ideas so that they become second nature, you’ll be well on the way to making ours a better world. Enjoy!

Soutpansberg – The Mountain

Why is it important to conserve the Soutpansberg?

The Soutpansberg is recognised as:

• A Priority Conservation Area by the South African National Biodiversity Institute (SANBI)

• A Critical Biodiversity Area by the Limpopo Department of Economic Development, Environment and Tourism (LEDET), the provincial conservation authority

• A Strategic Water Source Area by WWF-South Africa

• Part of the National Protected Area Expansion Strategy by South Africa’s Department of Forestry, Fisheries, and Environment (DFFE)

• Lying within the UNESCO Vhembe Biosphere Reserve, proclaimed in 2009

What are the unique attributes of Soutpansberg?

• There are 18 recognised centres of endemism in southern Africa – localised areas with high species diversity found nowhere else.

• The Soutpansberg is one of these and has the highest plant diversity of all these centres, home to various rare and threatened plant species. Approximately 3 000 vascular plant species are known to occur in the 6 800 km² that makes up the Soutpansberg Mountains. Six biomes are found in the mountains: forest, thicket, savannah, grassland, fynbos, and wetland.

What are the threats facing the area, and what impact would this have if not mitigated?

These mountains currently receive little formal conservation support and are severely threatened by over-exploitation of

natural resources, invasive alien plant species, and habitat destruction through developments.

The Soutpansberg Mountains currently receive little formal conservation protection, with less than 1% of the area formally conserved in nature reserves. It is severely threatened by the overexploitation of natural resources, invasive alien plant species, and habitat destruction through unregulated developments.

The key threats to the unique biodiversity of the Soutpansberg mountains include the following:

• Illegal killing of wildlife for the local bushmeat trade and skins of species such as leopard (Panthera pardus). Leopards have shown a 66% decline in population density over the past eight years, mostly due to illegal snaring.

• Illegal killing of wildlife for the trade in animal products.

• Illegal and unsustainable harvesting of medicinal plants and the uncontrolled collection of firewood.

• Ongoing illegal sand mining in the Sand River for the construction industry.

• Illegal fish poaching.

• Illegal clearing of indigenous forests for agricultural development.

• Bush encroachment.

• The spread of invasive alien plants, especially within the riparian zones (on the banks of rivers), threatens freshwater biology, water quality, and the region’s water security.

Some of these threats are linked to pressures from the lack of economic opportunity for the rural communities surrounding

the western Soutpansberg. The lack of socio-economic development results in communities relying heavily on extracting and using natural resources directly from their surroundings to survive, and the extent to which they do so is not always sustainable.

How does the Endangered Wildlife Trust work to conserve the area?

The Endangered Wildlife Trust’s Soutpansberg Protected Area Programme (SPA) works to address threats to species and their habitats across the Soutpansberg by promoting formal protection of the area and facilitating the development of local jobs in the ‘green’ jobs sector.

We actively engage the communities and landowners in and around the Soutpansberg to build capacity, generate awareness, and create resilience against environmental change. We also aim to collaboratively build a community of conservation practice across the region to benefit the Soutpansberg’s natural resources, wildlife, and current and future generations of people dependent on the area.

What are the plans for the future?

The EWT has embarked on a long-term project to realise our dream of establishing the Soutpansberg Protected Area (SPA) to protect the largely pristine mountainous environment within the western Soutpansberg’s Sand River Gorge.

We are working with landowners and communities to establish one large, protected area corridor through the Biodiversity Stewardship process. This network will conserve the region’s unique biodiversity, including critically

endangered, endangered, and locally endemic species of animals and plants; maintain the integrity of the water sources and catchments locals rely on; improve land management; and expand sustainable livelihood options for the local communities in the ecotourism and conservation sectors.

Providing jobs will also stimulate growth in the local industries supporting these sectors and reduce the pressure on the surrounding environment.

What have been some of the major successes?

Western Soutpansberg Nature Reserve: The first phase of the SPA Protected Area project focused on the western Soutpansberg. Following biodiversity assessments, the western

Soutpansberg properties identified for Biodiversity Stewardship due to their unique biodiversity value all qualified to be protected as a Nature Reserve, the highest level of protection.

Clearing out aliens: Since work began in August 2018, our team has cleared over 58ha of dense invasive alien trees from within sensitive water catchments, replenishing over 12 million litres of water back into the environment every year. Based on our impact, in August 2022, the Fondation Franklinia provided additional funding to continue this vital work for another two years.

This work was made possible by the Coca-Cola Foundation’s Replenish Africa Initiative (RAIN) and Fondation Franklinia.

Making it RAIN in local schools: Our

workshops with local community schools have been a core activity of the Soutpansberg Water Conservation Project, funded by the Coca-Cola Foundation’s Replenish Africa Initiative (RAIN). The workshops complemented our water conservation work (through biodiversity stewardship and alien vegetation clearing on the mountain) by teaching local school children about the importance of water conservation.

As part of our commitment to empowering local communities, we partnered with Sumbandila Scholarship Trust, initiating a pilot reading club at the local rural primary school. Three volunteers also visited Pharani School daily for over a week to help learners with their reading and writing skills. This

work was made possible by the CocaCola Foundation’s Replenish Africa Initiative.

Besides invasive alien plants, poaching is one of the biggest threats to the Soutpansberg’s wildlife and ecosystems. This poaching can take the form of illegal harvesting of threatened medicinal plant species, illegal fishing in rivers, and snaring wildlife for commercial trade and household consumption. The SPA rangers conduct regular antipoaching patrols to remove snares and fishing nets and escort intruders off the property.

The Old Salt Trail: After extensive work by the SPA Rangers, the Old Salt Trail routes have been cut, tested, and maintained in anticipation of the public launch of the trail.

A SHORT BREAKAWAY WITH LIMITED TIME (3-4 DAYS) MAKES

GEORGE/WILDERNESS AN EASY AND EXCITING DESTINATION TO EXPLORE, RELAX AND JUST ENJOY…

About 5 hours from Cape Town, this is a great route to take if you don’t want to wake up with the chickens! Tackling the N2 just after peak time traffic, Somerset West whizzes past and excitement sets in along the scenic Sir Lowry’s Pass (passengers can take full advantage of the panoramic views, but drivers need to be alert on the sharp bends and a lot of trucks).

1st stop: Peregrine Farmstall (Padstal), Grabouw

The Peregrine Farmstall serves up spectacular coffee and fresh goods (the pies are heavenly) to kickstart the adventure… and there are so many treats to buy that you will be pretty much set for snacks for the journey.

2nd stop: Ou Meul Bakery, Riversdale

More pastry heaven for an early lunch and to stretch your legs. You can also fuel up at the nearby petrol station.

After Riversdale you pass Mossel Bay, which is a chilled spot with activities including the longest zipline over the ocean, the Point of Human Origin, and some superb restaurants and accommodation options.

Destination George reached

It’s always a marvel to note how clean the streets of George are. Gone are the days when George was considered as a bit of a retirement village – there is loads to do here, be it outdoors, shopping, or dining and exploration. It is also a fantastic spot to get to areas like the Wilderness, which can only be described as breath-taking.

We hit a few balls on the course and had our own caddy, which felt like we were channelling our inner Ernie Els. This course has amazing views!

stop: Buff and Fellow (accommodation)

An eco-game farm about 10km from George airport and near Glentana Beach, the architectural elements are novel. We stayed in a “coconut” pod that was a two-bed selfcatering unit that has a spiral staircase around the dam. It’s George, but aesthetic-wise it feels like you are in Bali. Activities on offer:

• Enjoy an interesting breakfast – walk to the chicken coop to get your fresh eggs

• Game drives – spot some buffalo, rhino, buck and more. There is also a Shetland pony that you can feed.

• Fishing – catch and release

• Board games in each unit

• Chilling near the water or at the dam

stop: Garden Route Botanical Gardens

You can walk for hours exploring indigenous flora, a maze, owl sanctuary and the bird hide. A great lunch spot here is the Marshmallow Garden Café, which serves up positively sinful milkshakes.

stop: Outeniqua Transport Museum

Showcasing a variety of steam locomotives and the museum is also home to ox wagons and restored vehicles.The museum boasts a charming miniature town with small trains that’s definitely something to see with its attention to detail. Some of the individuals who spent years building this small town are available to talk you through the history.

It is also at this venue where you can hop onto the Outeniqua power van – a rail trip that takes you back in time with insights into our rail history, and journeys through the OuteniquaMountains, which were originally inhabited by the Khoi San.

7th stop: Redberry Farm

It’s a berry celebration all year long! A great spot for the family or people who love berries – everything has a strawberry flavour – the pizza with the strawberry balsamic is divine. There are also activities such as pony rides, bumper boats, gift shops, a maze to explore and a jaw dropping big strawberry that you can climb up via the use of stairs, which leads to a beautiful lookout for stunning views of George and the farm.

8th stop: Victoria Bay

Situated between George and Wilderness, this tucked away cove enclosed by cliffs offers frolicking and superb waves to surf.

9th stop: Kaymans River, Wilderness

Time to get serious about nature and adventure! On offer is abseiling – which looks easy enough but in reality can be quite daunting (unless you are a complete adventure junkie) – that gets paired with canoeing. The one end of the river features a waterfall and on the other side is where the ocean meets the river (the Kaaimansrivier railway bridge, which was constructed in 1925-1928 can be sighted here). So not only is there tons of adventure in the Kaaimans River, there’s beautiful history too.

10th stop: Backline Lounge, Wilderness

Trendy and cool, this lounge has an extensive cocktail menu that is perfect for a chilled afternoon of sundowners. Sometimes the venue hosts a live DJ – the best way to find out is to check out their Facebook page for any cool events happening.

Okay, this is not something generally read in a travel mag, but just as we like to take the road less traveled here’s another one of those – the bathrooms! Visiting the bathrooms here is an experience on its own! The female bathroom has been designed and made to feel like you’re under the ocean with the water actually above you moving. The men's bathroom was designed to make it look like you’re in the deep ocean with the sunrise happening on the top. It’s truly a cool little add on to this magnificent cocktail bar.

For a novel way to experience Wilderness, try e-biking, which does not require a lot of peddling. The route proceeds to take you over the mountain where you can stop off at various viewpoints and experience the beauty of nature en route to The Map of Africa, where you can enjoy panoramic views of peaks and a river valley that resembles the shape of Africa. There is also a paraglider launch spot nearby.

What makes these creatures so special and what role do they play in the ecosystem?

Pangolins are the only mammal with scales – they are so unique and distinctive that they have been characterised under their own order, Pholidota. They have been on the planet for 85 million years – crossing over with dinosaurs in the Cretaceous period.

Pangolins are voracious consumers of ants and termites and are probably responsible for keeping these common insects under control in their natural habitats. We have very little perception of what the insect life in a rainforest is like, because insects are hardly a feature of urban life. I know, I

have lived in a clearing of a rainforest, and would say that the insect life was my greatest challenge. There is always going to be a knock-on effect when you remove a predator from the eco-system.

Why are these creatures poached?

The reasons are the real or perceived value of pangolins and their body parts in the illegal trade on the international market, including the demand for pangolin scales as a remedy in Chinese traditional medicine cures, the awareness of the international trade and the value attached to the sale of pangolins and their derivatives on the black market. We do not share the sale price and we encourage people and the media

not to share this because it stimulates the trade.

There are eight species of pangolins – four in Asia and four in Africa. In both Asia and Africa, they are consumed as bushmeat or in restaurants as expensive wild meat and the scales are used in traditional medicine cures.

In South Africa, this illegal trade is considered organised crime and often takes place between the nationals of various countries that share their boundaries, and where pangolins naturally occur. It is not a “street sale” in the traditional meaning, in that they are not sold openly on the street. It is navigated as an illegal trade, where the perpetrators are aware of the associated penalties and jail time, and they will make every endeavour not to be caught.

There are two types of trade through the internet that we are aware of: the one is a genuine situation where the person who is advertising the sale of a pangolin is in possession of a pangolin. The other, which is quite common, is a person “fishing”. “Fishing” means that the person is not in possession of a pangolin but is aware of the trade and knows that it is lucrative. He is advertising a pangolin for sale, to see what sort of response he gets and whether it is worth his while to enter into genuinely trading a pangolin.

The public are our ears and eyes, so it is vital that anyone who is aware of a pangolin being offered for sale, should advise us of this.

Are the poaching figures increasing or decreasing?

According to the latest IUCN Red List, all species of pangolins are decreasing in numbers.

What is the estimated number of pangolins in South Africa?

We have no way of knowing this in South Africa, or anywhere else in the world. You can’t count pangolins as they are mainly nocturnal, elusive, solitary and they make no noise. But we do know that they are threatened, by virtue of the quantities of scales that are confiscated from the illegal trade.

What is being done locally and internationally to help curb the poaching and trafficking of pangolins?

The African Pangolin Working Group is mandated by the South African Department of Forestry Fisheries and the Environment (DFFE) to oversee all matters relating to the trade in Temmincks pangolins in South Africa, which has

included:

• being present at sting operations

• transporting of pangolins retrieved from the illegal trade to accredited pangolin specialist veterinary facilities

• contributing expert witness statements to court dockets

• the rehabilitation and release of pangolins into appropriate wild areas

• giving expert evidence in aggravation of sentencing in pangolin crime cases

• conducting training workshops for law enforcement and prosecutors

• development of resource material

Because of our wide arc of activities, interfacing with stakeholders in government and the private sector; and because we see pangolins through from confiscation to release, we have been able to achieve significant successes and our precedent court cases have achieved the maximum sentence of 10 years imprisonment with increasing regularity.

Still, we believe that we are probably only retrieving 10% of the pangolins that are being illegally traded.

Is enough being done?

A dedicated core of pangolin conservationists around the world are doing everything in their power to fight against the extinction of this order. We believe that we are successful beyond what is being achieved for many other species of fauna and flora.

Ultimately, the trade has to be countered on many levels, including the demand for pangolins and their derivatives, such as the alleviation of poverty, the creation of alternate job opportunities, and awareness and education. And these efforts must be continued and increased. Unfortunately, there is no one panacea that can be applied to all the complexities involved. The trade is ongoing and there isn’t a light at the end of the tunnel yet, but with so many people pushing hard, we are hopeful.

How long will it be before pangolins in the wild become extinct?

We believe that if the illegal trade in pangolins is not urgently curtailed, that they will become extinct in the wild within the next 10 years. The Asian species are already critically endangered, and the African species are vulnerable or endangered – according to the IUCN Red List. When they become critically endangered, it means that they are facing a high risk of extinction in the wild.

It’s been reported that habitat loss poses a threat to pangolins. How have research, rehabilitation and conservation centres stepped up to assist in this challenge?

The African Pangolin Working Group is dedicated to saving pangolins and the habitat they occupy. In South Africa, we are fortunate to have large wilderness areas and protected reserves where the habitat is mainly intact.

Human-wildlife conflict is always a problem, where population growth and human settlements expand into or border on wilderness areas. Sensitisation to pangolins and their value to us as part of our natural history; the huge role that they play in the rich indigenous lives of our people; and the illegal trade that robs us all. Of course, global warming will be catastrophic for all wildlife, and it is only a matter of time before we see the consequences of this.

What is involved in the work you do in helping to rehabilitate pangolins that have been captured?

In South Africa, the illegal trade that takes place is primarily in live animals. Once they are taken out of their home range where they are familiar with burrows (for shelter), where their food source can be found and possible predators in the area, they are kept in unsuitable conditions (by a trader), without adequate food or water and are often mishandled or become injured during their attempts to escape.

Once a pangolin has been in the trade for a week or more, it is unlikely that they will survive due to stress, starvation or injuries sustained during the ordeal. Even if it was saved by a well-intending member of the public,

and released into the wild, it would be unlikely to adapt outside of a carefully monitored re-introduction programme.

If we are alerted to the illegal trade of a pangolin, we are often able to successfully intervene, in collaboration with the South African Police Services, to retrieve the pangolin from the trade, and to guide the next steps in its rehabilitation that will include specialist veterinary high care and supported natural foraging for building the animal back to a suitable body condition.

The whole process can take anything from two months up to a year, at a considerable cost to the organisations

involved. Every pangolin that is retrieved from illegal trade is fitted with telemetry for ongoing observation of its ability to adapt to a new environment; for any long-term compromise that may arise; and for continued research into the best practices for the conservation of these animals. A pangolin won’t be released until the specialist vet has given approval, which will depend on the circumstances of the patient, the age, weight and condition

How can the public assist in helping to protect pangolins?

The public can do whatever they are good at to help save pangolins. We need educators, researchers, writers, artists, business people, fund raising, etc. We have seen individuals who care about our endangered wildlife playing a big part in raising awareness on their individual social media platforms, or offering their talents, abilities and skills to organisations like ours.

Along the 120-kilometre coastline, you’ll find 58 golden beaches open and ready to welcome visitors. The KZN South Coast is also home to the highest number of Blue Flag Beaches in the province and some of the country’s best surfing spots.

2. 21 tidal pools

The KZN South Coast also boasts the province’s highest number of tidal pools, 21 spots of protected bathing.

3. Ocean adventures

Your maritime adventure doesn’t end there – the KZN South Coast has two world-renowned diving sites at Aliwal Shoal and Protea Banks. These are two of three Marine Protected Areas found here, with Trafalgar adding to the great freediving and snorkelling sites.

Flourishing flora and fauna

But Moz serves up more than beach beauty – the breathtaking conservation areas are teeming with flourishing flora and fauna.

Adventure tourism is a big hit in the central and northern on mountainous areas, rivers and waterfalls. Conservation areas such as parks, reserves and game reserves are a draw for lovers of adventure tourism.

A unique combination of beach and safari in less than 20 minutes offers visitors unforgettable memories. An example of this is in the southern province of Maputo where visitors can view wild animals such as elephants and giraffes, and at the same time experience diving and observe coral reefs.

Africa's greatest lake

MALAWI MAY BE AFRICA'S NEWEST BIG 5 WILDLIFE DESTINATION AND BOAST ONE OF THE MOST ROBUST OFFERINGS OF ANY COUNTRY IN THE REGION, BUT WITHOUT A DOUBT THE JEWEL IN MALAWI'S TOURISM CROWN IS THE ICONIC LAKE MALAWI.

At 82km wide by 587km long and fringed with golden sand beaches, Lake Malawi often feels more like an ocean than a lake. Crystal clear waters allow visibility up to 27 metres and waves that get big, but not too big, allow for some of the best snorkelling, diving and water sports on the planet.

UNESCO's Lake Malawi National Park

The world’s first freshwater national park and a UNESCO World Heritage Site is at Lake Malawi's Cape Maclear. The park includes a land area as well as the lake and offshore islands.

Here, you'll find a veritable aquarium of tropical fish providing a colourful kaleidoscopic display. The countless thousands of freshwater fish, the mbuna, are more abundant and varied here than anywhere else in the world. Boats are available for hire and the fish will feed directly from the hand.

Away from the lake, the park has baboons, antelope and hyrax, and, of course, there is a great variety of birdlife including fish eagles, cormorants and hamerkops. This area was a favourite of David Livingston and the graves of five early European missionaries can still be found in the park.

Lake Malawi Cichlids

Likoma Island

Off the eastern shore of the lake is Likoma Island: a little piece of Malawian territory in Mozambican waters. Its history – the setting up here of the headquarters of the University Mission to Central Africa (Livingstone’s mission) in the 1880s – caused it to be retained by Malawi when the lake was divided politically after World War II.

The island, which only covers 17km2 is home to an imposing Anglican cathedral on which work began in 1903.

Activities on the Island include diving. There are over 20 diving sites around the island. One can also take boat trips to the neighboring Chizumulu Island. Walking, biking and quad biking can also be enjoyed on the island. The clock tower of St Peter’s Cathedral provides a stunning view across Likoma. After a tour of the cathedral, you can head to the roof, climb across the bells and the clockwork and take in the beautiful scenery.

Karonga archaeological site

Karonga is a place of growing interest. It has been recognised by UNESCO for its interesting but turbulent history as a centre for the notorious 19th Century slave trade.

Now the town is the site of a new museum focused on both its cultural history and the recent archaeological finds of dinosaur and hominid bones. Karonga exemplifies the connection between Lake Malawi and the Malawian people and clearly demonstrates how important the lake is to Malawian culture both now, and in ancient times.

MUSHROOM GARLIC BREAD

Serves 4-6

Ingredients:

• 1 large baguette

• 115g butter, softened

• 4 cloves garlic, finely grated

• 1 tablespoon dried oregano

• 1 tablespoon parsley, chopped

• 60g Parmesan, grated

• 250g portabellini mushrooms, sliced

• Fresh thyme leaves, for serving

• Olive oil, for cooking

• Salt and pepper, to taste

Method:

1. Preheat braai onto a medium heat.

2. Cut the baguette lengthwise in half.

3. Toast baguette halves until lightly golden brown on the braai, cut side down. Remove.

4. Combine butter, garlic, oregano and a good amount of salt and

Serves 4

Ingredients:

• 3 tablespoons olive oil

• 1 onion, chopped

• 1 garlic clove, crushed

• ½ teaspoon dried chilli flakes

• 1 large bunch (150g) spinach, rinsed and chopped

• Salt and pepper, to taste

• 1 cup maize meal

• 3 cups water

Method:

1. Heat a pot over medium heat. Add the olive oil and onion, and sauté until soft. Add the garlic and chilli flakes, and sauté until they release their flavour.

2. Toss in the spinach and stir until the leaves are wilted. The leaves will be wet from rinsing, which will create enough steam to cook them sufficiently. Season with salt and pepper to taste.

6. Spread evenly over the bread.

7. Sprinkle bread with half of the Parmesan.

8. Heat a frying pan on high heat or a cast iron pan on the braai.

9. Add a drizzle of olive oil and cook the mushrooms until tender and golden. Season well.

10. Spread mushrooms all over the bread and finish with the rest of the parmesan.

11. Return the bread to the braai and close the lid. Cook until the cheese and garlic butter mixture melt into the bread and the outside is crisp.

(If you don’t have a braai with a lid – wrap the garlic mushroom bread in tinfoil.)

Serve straight off the braai, sprinkle with thyme leaves and cut into chunky wedges.

3. In a bowl, mix the maize meal and water to form a slurry, then stir it into the spinach in the pot. Continue stirring over medium heat until the pap thickens and begins to bubble. Cover with a lid, then lower the heat and simmer for 15–20 minutes, or
