Facts & Figures Kristal so d.o.o. was established in 1997 with the intention of processing and exporting salt and sugar. At the beginning of 2013, the company opened a new factory specifically for the work unit “Natural fish”. Their facilities include a 1,000 m² cold store, modern chambers for smoking, slice machines and vacuum packing. The main product is cold smoked Atlantic salmon that is imported fresh from Norway. The daily capacity is 1,500 kg or 30,000 kg per month. Kristal so d.o.o. is formed by a team of professionals committed to achieve excellence in production and to guarantee international standards and quality. It exports to markets such as Italy and Slovenia. Products & Services Kristal so d.o.o. main product is cold smoked salmon. The cold smoking method used does not exceed 20 °C, which means all nutrients are preserved. With its rich taste and smell it is ready for consumption, rich with omega-3. ANCHOVY | ANCHOVETA Anchovy (Engraulis ringens) are a marine and coastal species that lives mainly within 80 km of the coast (and as far as 160 km). The population depends on the plankton abundance, so availability for catches is reduced when warmer and less saline surface water extends during El Niño events. A new fisheries management system, introduced in 2008, appears to have stabilized the fishery. SUPPLIED BY AXSA PESQUERÍA

Peruvian anchovy has traditionally been only used by the fishmeal industry. Only recently it started to be utilised for products destined directly for human consumption (presently less than 1 % of total capture). Presentation is frozen head and gutted (HG), frozen for canning and salted vacuum-pack fillet.

Also know as arapaima(genus Arapaima) paiches are among the largest freshwater fish in the world, reaching lengths of as much as 4.5 m, they are native to the Amazon and Essequibo basins of Peru and Brazil. They are important food fish and have declined in the native range due to overfishing and habitat loss, as a consequence rigorous constrains in the fishery have been imposed. Hence several aquaculture initiatives have been successful, and the present trade originates in controlled farms. Farming of paiche occurs in the native distribution areas, providing much needed employment and low environmental impact. They are feed local small fish (also cultivated) and feeds made locally.

Because the paiche produces boneless steaks, it is considered a delicacy, much appreciated in South American cuisine. Presentations are according to clients’ requirements.

EUROPEAN CARP | CARPA EUROPEA (PROCESSED) The European carp or common carp (Cyprinus carpio) is a widespread freshwater fish of eutrophic waters in lakes and large rivers in Europe and Asia. Various species have been domesticated and reared as food fish in ponds and is still a major form of aquaculture in Central and Eastern Europe. Carp is eaten in many parts of the world. In Central Europe, it is a traditional part of a Christmas Eve dinner. SUPPLIED BY DTD RIBARSTVO DOO
COUNTRY Serbia
European carp are omnivorous. They can eat a herbivorous diet of water plants, but prefer to scavenge the bottom for insects, crustaceans and benthic worms. Although tolerant of most conditions, carp prefer large bodies of slow or standing water and soft, vegetative sediments. Farming occurs in farming and flooding prone areas, providing much needed employment and low environmental impact. Carp comes in processed in various presentations, smoked or in a variety of pâtés.

Giant squid or Pota (Humboldt squid – dosidicus gigas) is one of the largest squid commercially caught in the world and especially abundant in the Peruvian coast. It is an oceanic and neritic species occurring from the surface to 500 m depth; adults are found in water temperatures below 28 °C. In nearshore waters, it occurs near to the surface day and night. It feeds on larvae of pelagic fishes and on crustaceans. Cannibalism is common. The catches are obtained by hand line fishing of fairly basic small boats crewed by three to six people. The individual weight of a giant squid can reach 100 kg, but the average weight is around 30 kg. The giant squid can be processed into several frozen products: tubes, rings, wings, tentacles, batons, etc. as well as pre-cooked frozen. Presentation can be in block or retail packaging.

SCAMPI Deep-water scampi or langoustines (Metanephrops mozambicus) are endemic to the South West Indian Ocean (SWIO) region and make up the largest proportion of deep-water crustacean trawl catches in Mozambique and South Africa. The species inhabits the continental shelf and slope at depths of 200 to 750 m (mostly 400 to 500 m). It settles in areas of sticky mud, in which it burrows. Males become slightly larger than females (88 mm versus 83 mm) with a maximum total length of 205 mm. SUPPLIED BY GLOBAL IMPEX SIALE ENTERPRISES

MAHI-MAHI | DORADA Mahi-mahi (Coryphaena hippurus) is a surface-dwelling ray-finned fish found in off-shore temperate, tropical and subtropical waters worldwide. Catches average 7 to 13 kg. Mahi-mahi are among the fastest-growing fish. They spawn in warm ocean currents throughout much of the year. The fishery is mostly artisanal longline based and some hand lining. The Octopus (Octopus mimus) is a benthic, neritic species occurring from the coastline to the outer edge of the continental shelf (in depths from 0 to 200 m), where it is found in a variety of habitats, such as rocks, coral reefs, and grass beds. Throughout its distribution range, this species is known to undertake limited seasonal migrations, usually overwintering in deeper waters and occurring in shallower waters during summer. Its abundance shows large variations closely linked to environmental factors such as changes in productivity related to El Niño events. The fishery is completely artisanal, mainly by freediving and semi-autonomous diving (with air compressor). The fishery is managed by measures including minimal weight (1 kg) and two to three month closures on capture, transport, marketing, storage and processing.

PINK PRAWN Deep-water prawns (Haliporoides triarthrus) are endemic to the South West Indian Ocean (SWIO) region and make up with scampi the largest proportion of deep-water crustacean trawl catches in Mozambique and South Africa. The species occurs on the continental slope at depths of 300 to 800 m, but it is more commonly fished between 400 and 600 m. Females can achieve a maximum size of >60 mm carapace length and males >50 mm; total lengths of up to 150 mm have been reported. SUPPLIED BY GLOBAL IMPEX SIALE ENTERPRISES

Atlantic salmon (Salmo salar) is – by far – the species most often chosen for farming. It is easy to handle, it grows well in sea cages, commands a high market value and it adapts well to being farmed away from its native habitats. In salmon farming, the eggs hatch in fresh water tanks on land. The fry will usually spend 8–18 months in fresh water tanks before it is ready for smoltification and transfer to net pens in the sea. The smolt usually weighs approximately 100 g when it is moved to the sea, but in 12–18 months it will have reached a weight of 3–6 kg and be ready for slaughter. The salmon is fed pellets which contain a high concentration of proteins and fat. In addition to feed, the growth rate of salmon depends on water temperature, health conditions etc. The production of smoked salmon has developed from a very simple process with few possibilities for adjustments to a number of high-technology unit operations with several control options that are able to produce different flavourings and presentations. The processing takes place in Serbia.

Initial culture stage goes from scallop larvae collection in natural environment, or from seed from hatcheries. The growing process occurs in coastal bays, through different splittings by size, holding them at different densities up to reaching commercial size.

Furthermore land prices have been low, as there have been little competing uses for it and, as a result, made entry easier and low conflict with traditional owners. The ponds are usually located close to the sea shore, this lowers the impact of pumping seawater to the ponds. South Coast Rock Lobster

The South Coast rock lobster is endemic to South Africa. The spiny lobster species can be found from Cape Province to Port Alfred. Palinurus Gilchristi is a cold-water species that grows slowly and can live up to 30 years. Rock lobsters feed on mussels, small molluscs, crustaceans and a variety of other invertebrates. The species prefers rocky areas at a depth range of 55 - 360 m. Therefore, the fishery for this species operates in deep waters off the coast (50–200 m), with fishing gear restricted to long-lines with traps. The maximum total body length varies between males (16 cm) and females (31 cm). Recorded carapace lengths also varies, between 6 and 10 cm. In 2008, the Department of Agriculture, Forestry and Fisheries (DAFF) in South Africa has implemented an Operational Management Procedure (OMP) for the South Coast rock lobster with the objective to increase the spawning biomass of Palinurus Gilchristi by 20 % over the next 20 years. DAFF implements the OMP with a combination of total allowable catch (TAC) and total allocated fishing days (TAE). The IUCN Red List of Threatened Species™ has assessed Palinurus Gilchristi as Least Concern. Presentation is frozen whole and tails.

West Coast Rock Lobster The West Coast rock lobster is a spiny lobster species which can be found in Southern Africa, from Algoa Bay and Cape of Good Hope in South Africa, up to Cape Cross in Namibia. It can grow up to 46 cm and prefers shallow coastal waters at depths between 0 and 50 meters. Rock lobsters feed on mussels, small molluscs, crustaceans and a variety of other invertebrates.

The Department of Agriculture, Forestry and Fisheries (DAFF) in South Africa has announced the total allowable catch (TAC) of 1924.45 tons for the 2015/2016 west coast rock lobster fishing season which translates to a 6,83 % global increase when compared with the global TAC for 2014/2015. DAFF set the objective to rebuild the 2006 biomass of male West Coast rock lobster above the 75mm CL minimum size limit, by 35 % by 2021. The global TAC therefore is in line to achieve the targeted objective of the recovery plan. The IUCN Red List of Threatened Species™ has assessed Jasus lalandii as Least Concern.
