A
s 2020 draws to a close, it’s clear that we all deserve a hearty pat on the back. We’ve endured many unexpected
challenges adjusting to our new normal, and we’ve learned
a thing or two.
It turns out home can be so much more than we ever intended. It can double as our office, whether we dress up for the daily grind or let it all hang out in our favorite sweats. It can be a cozy lunch spot serving the comfort food we crave (chicken noodle soup for the win!). And home is where we’ve learned to gather with family and friends in a whole new way, through camaraderie on a computer screen. Home has truly become our shelter, a sanctuary where we can breathe deep, collect our thoughts, and recalibrate our expectations. It is the fortress from which we focus on all the good in our lives and dream about the future, that glittering alternate universe where we’ll gladly reclaim our place on this earth, hug it out with friends, and finally embrace distant family just like we used to. Sometimes all we really need is a hug from Mom.

With dishes that are easy to make, simple to serve, and full of flavor, these recipes prove that making soup does not have to be challenging. Each soup is versatile enough to take on additional flavors, spices, or vegetables. Keep it simple and serve them with a loaf of crusty bread and a big crunchy salad as you enjoy these “slurpable� meals this winter and beyond.

Butternut Squash Soup This recipe may be used to make soup from any number of starchy vegetables, such as carrots, parsnips, celery roots, etc. Experimenting with different herbs and spices will create exciting new flavor combinations to explore while ensuring that those yummy veggies don’t go to waste. Just add the spices, herbs, and seasoning in the same step when you add the salt. Try a cardamom carrot soup or a curried pumpkin bisque using this same technique and you will never get bored with soup! Add creative garnishes to make it fun and pretty.
Y I E L D : 4 servings INGREDIENTS: ¼ pound butter 1 medium yellow onion, diced 2 cups water 1 medium butternut squash, peeled, seeded and cut into cubes 2 tablespoons brown sugar ¼ cup cream (optional) Salt to taste 2 tablespoons pumpkin seeds, toasted (divided) 2 tablespoons sour cream (divided)
INSTRUCTIONS: Melt the butter in a large pot over medium heat. Add the diced onion and cook until translucent, about 6 minutes, stirring occasionally to prevent browning. Add the water and cubed squash to the pot and bring to a simmer. Cook until the squash is easily pierced with a fork, about 15 minutes. Transfer the contents of the pot to a blender or a food processor. With the motor running, add brown sugar and cream (if using) and blend until smooth, approximately 2 minutes. Season with salt to taste. To serve, return soup to pot and heat. Ladle into bowls and top with pumpkin seeds and sour cream. Soup may be stored in the refrigerator without the garnish for up to 4 days.

Vegan Mushroom, Wild Rice, & Quinoa Soup
This soup is your perfect chance to highlight fresh herbs, so if you happen to have rosemary, thyme, oregano, or tarragon (just to name a few) on hand, sprinkle a little on top just before serving.
Y I E L D : 4 servings INGREDIENTS: 1 tablespoon vegetable oil
4 cups vegetable broth
16 ounces mushrooms, chopped*
ž cup wild rice
1 medium yellow onion, diced
ž cup quinoa
2 cloves garlic, minced
Salt and pepper to taste
INSTRUCTIONS: Heat the vegetable oil in a large skillet over medium high heat. Add the onions and mushrooms and cook until the vegetables are beginning to brown, stirring frequently, approximately 8 minutes. Add the garlic and cook for 2 minutes. Reduce heat to medium low and add the vegetable broth. Bring to a simmer. Add the rice and quinoa and simmer for 15 to 20 minutes until the grains are tender. Season to taste with salt and pepper and serve hot, or store it for up to 4 days in the refrigerator.
*Cremini, shiitake, oyster, and hen of the woods are all good candidates, but almost any edible mushroom may be used to make this soup.
Chicken Noodle Soup There are at least a hundred ways to dress up this classic soup. You can add herbs, drop in dumplings or matzah balls, or make it gluten free by substituting rice for pasta. I’ve found that this basic version is the most popular with kids (and a lot of adults, too).
Y I E L D : 4 servings INGREDIENTS: 4 cups chicken stock
1 medium onion, chopped
2 boneless, skinless chicken breasts,
3 celery stalks, chopped
cut into approximately 1-inch cubes
8 ounces dry pasta
3 carrots, peeled and chopped
Salt and pepper to taste
INSTRUCTIONS: Bring the chicken stock to a simmer over medium heat. Add the vegetables and the raw chicken breasts. Simmer until chicken is cooked through, about 12 minutes. Add pasta to the soup and simmer until cooked, approximately 10 minutes. Season with salt and pepper. Serve hot or store for up to 4 days in the refrigerator.

Carefully remove the bacon with a slotted spoon and transfer to a plate lined with a paper towel. Return the pot with the rendered fat to the stove. Add the onion and carrot and cook until translucent, about 5 minutes. Add chicken stock and beans and bring to a simmer, cooking for 15 minutes. Carefully scoop out 1 cup of soup and transfer to a blender or food processor. Puree until smooth. Add the pureed soup back into the pot and stir to incorporate. Add thyme and season with salt and pepper to taste. Sprinkle with reserved bacon pieces and serve hot. Soup may be stored in the refrigerator for up to 4 days.

VIRGINIA: I was born and raised in my namesake state of Virginia, and lived in Richmond, Springfield, Charlottesville, and Arlington, so the whole state feels like home. For nearly 20 years, Coastal Delaware has been a relaxing retreat from my “city life” in the D.C. area. I feel a physical release of stress when I cross the Chesapeake Bay Bridge, heading east. John and I first met here in Delaware, introduced by mutual friends who also split their time between the city and beach. After we got married and moved into our new home, I continued to go back and forth often to visit my dad, see friends, or attend business meetings. Later, with a baby on the way, I left my D.C.-based job and shifted my focus to raising a family. Though I've cherished the extra time at home this year, I've missed Virginia during the pandemic since those trips between states are such a big part of my life.
