Eek, spring is finally here! At my house we are in the full landscaping swing of things! We’ve got some starters sprouting indoors and are planting bulbs and other things outdoors. I am moving a small cherry tree I sloppily stashed in the ground on the side of my house last year to another location so it can flourish. We are thatching the lawn, and hope to get working on landscaping our backyard. We did learn along the way not to cheap it or skimp on important things like topsoil. We unintentionally skimped on soil husband. The possibilities are endless on our side yard and our grass grew and my imagination explodes with all in patchy and less vibrant the edible resources I could then our front lawn. This potentially grow. Now, my year I fear we will be adding husband isn’t much of a more soil and seed in hopes gardener, nor is he very fond that the grass fills in. we brought back a variety of different corns, sunflowers, tomatoes, and a variety of peppers along with our usual assortment of herbs and decorative yard plants. Last year we grew a habanero pepper plant indoors and we actually got a single red pepper. It was so much fun to watch it sprout and continue to grow. This is a great and inexpensive way to decorate a windowsill and provide lasting benefits. Even if you

live in an apartment or condo, growing something indoors can be fun and easy. Now I’m not sure if this is the correct way or the expert way to have an indoor plant but it worked for us. We bought a pot(s), some organic soil and our seeds. After planting the seeds according to the instructions on the packets, we watered it and watched them sprout. We had a few plants that budded, such as the pepper and tomato plants and we pollenated them with a paintbrush. Quick and Budget Friendly Ways to UPDATE your BATHROOM It may seem obvious, but the bathroom is one of the first things you see when you wake up in the morning. As such, how you see your bathroom might set the tone for your whole day. Your bathroom should make you smile, bring you joy, or at the very least - not make you cringe. A few updates that you can do yourself will make your bathroom feel new again.

1.

Change out the lighting.

You’ll see your bathroom in a whole new light if you change out a dated light fixture for something that’s new and dramatic. Turn the ceiling into a focal point by installing a medallion and an elegant hanging fixture. If installed over a tub be sure there’s at least 8 feet of clearance from the tub rim to the bottom of the pendant for both your safety and to comply with electrical code.

Add architectural interest to a basic bath with beaded board. Thriftier than most wall tile and less maintenance than wood, beadboard paneling made from cellular PVC stands up to water and never needs to be painted. Eightinch-wide panels come in white or blue.

Plantation shutters provide privacy as well as light, a roman shade can bring a splash of color. Or if you like more drama a full-length curtain may be your speed.

Paint!

A surefire way to update your bathroom is with paint. A gallon of paint will cost you less than $30 and if you feel adventurous you can do it yourself. If you do, make sure to clean your walls first. Since the bathroom is so humid, a mildew or moisture resistant primer will help seal the paint.

7. Freshen the Hardware

Bathroom fixtures including hooks, handles and soap dispensers can be quickly and easily replaced and will give the space an updated feel. Most bathrooms look their best when all of the metals match in color and finish.

You deserve to wash your hands and brush your teeth without cringing at a crusty old leaker of a faucet from the ‘80s. For a full spigot upgrade, all you need is a couple of hours and a shiny new fixture. The sink faucet should generally coordinate with the shower and bathtub faucets; cabinet pulls, hooks, shelving brackets and towel racks also should have a similar style.

Kingdom of North Douglas The people of North Douglas are a proud people. They treasure their relationship with nature, and the solitude and community they have fostered. You can always tell the locals from people who have spent time down south, as townies lament about driving ‘all the way out North Douglas’. But the people who choose to live out North Douglas are happy with their seclusion. It is only a ten minute drive from the bridge to ERA Helicopters. For some reason our perception of time and distance changes as soon as you take a right and head west along the island. But there are several reasons to head out

North Douglas. For anyone that likes to ski or snowboard, Eaglecrest sits back in the valley overlooking the airport from its ridgeline. When they built the Black Bear chair they put in a maintenance gravel road, and this road serves as a pedestrian thoroughfare in the summer, helping to preserve the marshy meadows. There is a trodden trail along the ridgeline once you get to the top of Ptarmigan chair, and there are also some alpine lakes for swimming in the summer. One time we even crashed a Land’s End photo shoot

There are still plenty of black bears, and one time I even got stalked by a young

have come together over the years to create rock fireplaces and seats, so for years we have been able to sit back and enjoy the sunsets. Named after a beloved dog, ‘Chunks Beach’ is our favorite summer time spot for shenanigans. We have had solstice parties, evening bond fires, and of course have shared so many laughs and memories. And yes, being a townie, it is a bit of a drive, but the view and friends is always worth it. * There have been a few brown bears that have been seen and shot on the backside of Douglas, where they swam over from Admiralty Island. But it is exceptionally rare. Courtney Wendel has lived in Juneau since she was a year old. She has a twin brother and an older brother, and learned to enjoy the outdoors at a young age by following the boys into mischief. Graduating from JDHS in 2006, she attended UAS to receive her Literature of the Environment, BA English degree. When not at work she spends most of her time on the diverse trail system hiking, running, or camping with her spotted pooch and adventure buddies.

MAKE YOUR HOUSE A HOME FOR A LIFETIME My wife wants to remodel the house. With me being a contractor, this means that she has hired me to do the work, help with the design, and schedule the stages and phases of the remodel. There is only one thing wrong with that picture, which I haven’t been able to communicate to her. Where do I find the time? It’s hard to remodel all day long and then come home to remodel again, I do agree with her though, we are in need of some updates. We have started the planning phases and what we would like to do but haven’t gotten past that just yet.

Part of that planning phase is

looking at the future needs for us as homeowners and how we will use the house in the future. What will our needs be in 5 years, 10 years, and more years into the future? I think a lot about how a series of courses I took will help with this planning for our home as well as the homes of our clients. The courses I’m speaking of were offered by the National Association of Home Builders where I was able to earn a designation called Certified Aging-inPlace Specialist. This certification will prepare me and my clients for what is called the “Silver Tsunami.” The Silver Tsunami is the term used for all of the baby boomers becoming older and moving onto a “funner” time of their life. Most homeowners would like to remain in their homes until the very end and by working with a Certified-Aging-in-Place Specialist, that can be accomplished. Some of the concepts that benefit a homeowner as well as their guests are adaptability, accessibility, and universal design. The changes you make to your home will make it more comfortable, livable, functional, and

Some of the updates that many people may not associate with changing needs as we age include good lighting, an easy to maneuver entry and other more subtle but important enhancements to a home. Placing a well designed shelf to set your belonging while you unlock the front door seems simple enough but it is something that is often overlooked. Even using some of the latest technology for your entry door lock that will recognize you and unlock the door before your get to the doorway. These types of updates to a home will make it more functional and attractive. Adaptations to a home for future use could be building a doorframe that can be widened later when it’s needed. Installing a grab bar or other adaptive equipment that can be removed when desired. It could be that adding a bathroom to the first floor or turning the office into a bedroom for a few years to accommodate and temporarily adjust the home for future or current needs. A Certified Aging-in-Place Specialist can identify comprehensive and practical solutions to aging-in-place needs, which include your lifestyle, health, and family situation. Common modifications include, entrances, kitchens, bathrooms, lighting, common areas, among others. Home modifications can include indoor and outdoor spaces. Choosing materials and designs that reduce maintenance on the exterior, installing assistive


devices, enhancing the home through remodeling and new construction but also in a stylish way. All these items can be addressed in a phased or all inclusive renovation.

One of the truly impressive characteristics of Southeast Alaska that makes it unique and memorable is the water – not just the rain, though that is often the first thing that comes to mind for both those who live there and those who visit. It is the way the communities butt up to the bays and ocean, the lakes, the rivers, the muskegs as well as snow and ice. All of it looks so pristine and clear in photos. The people who live here rely on that water in so many ways. It’s a part of the eco-system that supports subsistence, recreational and commercial hunting and fishing. It’s also piped into homes where it is

used for bathing, washing clothes and dishes, watering lawns, flushing toilets, and of course, cooking and drinking. The water crisis in Flint, Michigan and the drought in California highlighting the use of recycled oil field water/ fracking water being used to irrigate crops are just two domestic water safety issues making headlines this year. While these regions seem very far away, water purity anywhere in the world impacts everyone everywhere. We should be thinking about the water in our homes too. The Exxon Valdez oil spill in Prince

No one really disagrees that the reaction to start clean-up was much too slow, grossly inadequate and created even more environmental contamination and significant health impacts to many species of the area including the people who live there and who worked on the clean-up. Pho Ga

Recipe

a coarse-mesh sieve lined with cheesecloth) positioned over a pot. Discard the solids. Use a ladle to skim as much fat from the top of the broth as you like. (To make this task easier, you can cool the broth, refrigerate overnight, lift off the solidified fat, and then reheat before continuing.) Taste and adjust the flavor with additional salt, fish sauce, and rock sugar. There should be about 4 quarts (16 cups) broth. Assemble the pho bowls Spring always feels like an amazing bowl of Pho, or pronounced “fuh” is the national dish of Vietnam and has become a great comfort food in our house just like it’s homeland, I’ve even made a rice based Pho when I was trying to do something with leftover rice. Pho can be as different as the geography of Vietnam and has its humble beginnings from the French colonization in the late 1880’s. Sounding very similar to “pot au feu” meaning pot on the fire, for the long simmering time of chicken, or marrow filled beef bones combined with various aromatics like charred ginger and onion roasted on open flame before being added to the broth. With Pho Bac in the north which is more of a clear broth and simple ingredients with minimal additions at the end to Pho Nam of the South with much more lavish garnishments and additions such as fish sauce and hoisin. Vietnamese eat pho everyday for at least one meal, pushcarts and open markets in neighborhoods to elegant bistros, pho has caught our attention and it truly is a humble yet complicated comfort food that is great for a fun dinner party or for feeding hungry kids dinner. This particular recipe is great with some Alaskan wild edible ingredients, like yellow violets or nettles that are starting to poke thru the meadows around town. Use thick gloves, and a paper bag for collecting them in, they are very temperature sensitive and go great with the clear broth made in a pressure cooker of this chicken based recipe. Makes 4 bowls of pho INGREDIENTS 3-4 pound organic free-range chicken with offal 1 large organic onion peeled and cut in half (to char) 7 large cloves of garlic 60 grams of fresh ginger sliced in half lengthwise (about 3” length) 1 bunch of cilantro 2 whole star anise 12 cloves 2 Tblsp coriander seeds, dry roasted in a skillet for 1 minute 1” chunk of cinnamon, or ¼ tsp if that’s what’s in the cupboard 1/2 teaspoon cracked white pepper 80g light brown sugar 2 tablespoons fish sauce 1 tablespoon salt (or to taste) 1” piece of kombu seaweed (for tenderizing) 16 ounces dried pho noodles 1/2 small organic yellow onion, very thinly sliced 2 scallions, chopped chopped cilantro (about 1/4 cup) Pickled Chilies 4 serrano chili peppers sliced thin (bird chilies or jalapeños work too) 1/4 cup rice or cider vinegar 1/4 teaspoon salt (best if done at least 24 hours ahead of time and I always add a touch of leftover onion)

MAKE THE PHO BROTH Place the onions and ginger directly on the cooking grate of a medium-hot charcoal or gas grill ( or on a medium-hot burner of an electric stove. Let the skin burn (if you’re working

indoors, turn on the exhaust fan and open a window), using tongs to rotate onion and ginger occasionally and to grab and discard any flyaway onion skin. After 15 minutes, the onions and ginger will have softened slightly and become sweetly fragrant. There may even be some bubbling. You do not have to blacken the entire surface. When amply charred, remove from the heat and let cool. Rinse the cooled onions under warm running water, rubbing off the charred skin. Trim off and discard the blackened root and stem ends. Use a vegetable peeler, paring knife, or the edge of a teaspoon to remove the ginger skin. Hold it under warm water to wash off any blackened bits. Halve the ginger lengthwise and bruise lightly with the broad side of a cleaver or chef’s knife. Set the onions and ginger aside. Rinse the chicken under cool water. Detach each wing by bending it back and cutting it off at the shoulder joint. Add the wings and neck, if included, to the chicken parts. If the heart, gizzard, and liver have been included, discard them or save for another use. (Some cooks like to simmer the heart and gizzard in water and slice them for adding to the noodle bowls.) Set the wingless chicken aside. Remove and discard any loose pieces of fat from the chicken parts. Wielding a heavy cleaver designed for chopping bones, whack the bones to break them partway or all the way through, making the cuts at 1- to 2-inch intervals, depending on the size of the part. This exposes the marrow, which enriches the broth. To achieve a clear broth, you must first parboil and rinse the chicken parts. Put them in a pressure cooker (about 12-quart capacity) and add cold water just to cover. Bring to a boil over high heat and boil vigorously for 2 to 3 minutes to release the impurities. Dump the chicken parts

and water into the sink (make sure it is clean), and then rinse the parts with water to wash off any clinging residue. Quickly scrub the pressure cooker clean and return the chicken parts to the pot. Put the chicken into the pot, breast side up. Pour in the water and snuggle the chicken in between the parts so that it is covered with water. Bring to a boil over high heat and then lower the heat to a gentle simmer. Use a ladle or large, shallow spoon to skim off any scum that rises to the top. Add the onions, ginger, salt, brown sugar, coriander seeds, cloves, and cilantro and cook, under pressure for 25 minutes, adjusting the heat if needed to maintain pressure simmer. At this point, the chicken is cooked; you can put the pressure cooker under cold running water to release the pressure. Its flesh should feel firm yet still yield a bit to the touch. Use a pair of tongs to grab the chicken and transfer it to a large bowl. Flush the chicken with cold water and drain well, then it set aside for 15 to 20 minutes until it is cool enough to handle. Meanwhile, keep the broth at a steady simmer.

If using dried noodles, quickly submerge them in the chicken broth and use the heat of the broth to cook, I like cooking them directly in the broth rather than soaking and loosing it’s al dente chewiness. If using fresh rice noodles, untangle them, place in a colander, and rinse briefly under cold running water. Cut the cooked chicken into slices about 1/4 inch thick, cutting the meat off the bone as necessary. If you don’t want to eat the skin, discard it first. Set the chicken aside. Ready the yellow onion, scallions, cilantro, and pepper for adding to the bowls. Arrange the garnishes on a plate and put on the table. To ensure good timing, bring the broth to a simmer over medium heat as you are assembling the bowls. (For an extra treat, drop in any unused white scallion sections and let them poach in the broth. Add the poached white scallion sections (called hành chan) to a few lucky bowls when ladling out the broth.) At the same time, fill a large pot with water and bring to a rolling boil. For each bowl, place a portion of the noodles on a vertical-handle strainer (or mesh sieve) and dunk the noodles in the boiling water. As soon as they have collapsed and lost their stiffness (10 to 20 seconds), pull the strainer from the water, letting the water drain back into the pot. Empty the noodles into a bowl. If you like, once you have finished blanching the noodles, you can blanch the bean sprouts for 30 seconds. They should wilt slightly but retain some crunch. Drain and add to the garnishes. Top each bowl of noodles with chicken, arranging the slices flat. Place a mound of yellow onion in the center and then shower some scallion and cilantro on top. Finish with a sprinkle of pepper.
