Eek, spring is finally here! Or is it. After our enormous amount of snow mid-March, I’m really hoping that’s the end of it. I am ready to get into the full landscaping swing of things! We’ve got some starters sprouting indoors and are planning on planting bulbs and other things outdoors as soon as the snow melts. Then we’ll thatch the lawn, and hope to get working on landscaping our backyard. We did learn along the way not to cheap it or skimp on important things like topsoil. We unintentionally skimped on soil husband. The possibilities are endless on our side yard and our grass grew in and my imagination explodes with all patchy and less vibrant then the edible resources I could our front lawn. This year I potentially grow. Now, my fear we will be adding more husband isn’t much of a soil and seed in hopes that gardener, nor is he very the grass fills in. I still have a tomato plant from last year that I kept indoors that never bore any fruit, but we cannot bare to trash it, so there is sits in the window, looking half dead, half clinging to life. This year we brought back a variety of different corns, sunflowers, tomatoes, and a variety of peppers along with our usual assortment of herbs and decorative yard plants. Last year we grew a habanero pepper plant indoors

and we actually got a single red pepper. It was so much fun to watch it sprout and continue to grow. This is a great and inexpensive way to decorate a windowsill and provide lasting benefits. Even if you live in an apartment or condo, growing something indoors can be fun and easy. Now I’m not sure if this is the correct way or the expert way to have an indoor plant but it worked for us. We bought a pot(s), some organic soil and our seeds. After planting the seeds according to the instructions on the packets, we watered it and watched them sprout. We had a few plants that budded, such as the pepper and tomato plants and we pollenated them with a paintbrush. Play in the Home You saw in last month’s edition that I launched an offering for a free 4-week educational forum in which I am sharing some key foundations I believe my patients need to have in the areas of mindset, nutrition, movement and environment in order to create a life of health and happiness. Working on that project has also meant continuing to participate in my own learning, review of emerging health research and re-evaluation of my own habits that might not be ideal. Two things happened recently that highlighted one area that I have known I need to improve on.

This pool party ended up being one of the most fun times I’ve had with my girls in a while. We laughed and splashed and dunked and sprayed water. We connected in what they love most: play. I hope other moms who watched us from the dry side of the pool left inspired that they too could abandon self-consciousness and shed body shame to embrace the joy that unbridled play brings them and their kids.

child is already experiencing deep thoughts and emotions and giving them freedom to express their feelings. The parent’s role is to acknowledge and then model confident and empathetic leadership with clear boundaries. I strongly encourage you to read through Janet Landsbury’s on-line article RIE Parenting Basics: 9 Ways to put Respect Into Action. All that to circle back to this common theme in these experts philosophy of child development. All firmly agree on the idea that children require uninterrupted, self-directed play to fully develop on all plains – physical, emotional, mental and spiritual. I can not emphasize enough that historical study of child development and emerging science is proving this true for children AND adults. Yes – adults. More and more medical research is showing that as adults abandon their intuitive desire and practice to play, it has a profoundly negative impact on their psychological and physical health. “Laughter is the best Medicine.” What more naturally elicits deep joy and laughter than imaginative and active play? Play relieves stress, improves brain function and productivity, enhances social and intimate relationships, encourages cooperation and creativity. At a most basic level it does this because of endorphine release and proteins that help re-shape the brain. But the physiology is actually quite complex and not isolated to any one system of the body. Movement in play helps maintain or improve balance, strength, coordination and flexibility. According to Dr. Stuart Brown, MD, because of all these benefits, play is as crucial to our overall health as sleep or nutrition. That is huge! Dr. Brown has dedicated his medical career to the study of how play shapes health. To share his findings and resources with the public at large he founded the National Institute for Play (www.nifplay.org) and wrote the book simply titled: Play. If you have children, establish a routine play time, ideally daily – even if it’s only for 15 minutes. Worry far less about the length or even quality of the play and instead focus on the commitment to undistracted attention and consistency. If you take away one

positive action from this article it is this: choose a length and time can you stay committed to and make it happen. Perhaps designate one evening a week that is just for family play. Let your children be the leaders in whatever you choose to play. That should mean setting aside your technology for that period – phone, email, text, etc. You do not have to have children to incorporate play into your life. Some ways to engage other adults in play is to host a game night or attend one. Instead of just walking your dog, engage them in play (ball, Frisbee, chase, etc. – pets can very much love the game as much as a child). Join a community sport or an athletic work team. The win is not in the goal of the play but in the experience. The goal is simply to consistently show up and participate. Juneau is sometimes referred to as the tropics of Alaska; we don’t get the extreme negative temperatures that the interior and the north get, we don’t tend to get as much snow (except for that winter in 2007 where Eaglecrest had a deeper snowpack than anywhere else in the world *), and we don’t have the big game associated with the more rugged Alaska such as caribou, polar bears, and musk ox. The gear that I have is reasonably good gear, in that it gets me around in Juneau and I am reasonably comfortable most of the time. Plus, suffering a bit sometimes keeps me from taking things for granted. I am a baller on a budget so I don’t spend crazy amounts of money on my gear, but I also want to be able to go do the stuff I want to do. And something I have really wanted to do is go see the start of the ‘Last Great Race’. And in February of 2017 I found myself heading to Anchorage and Fairbanks for the Iditarod.

Rondy coincides with the start of the Iditarod, and is a city festival centered around winter activities that lasts for a week. This year my wonderful mother made onesies for her Juneau brood, among her other sewing projects. She made adorable animal onesies for my Facebook Wife’s two children, so when I saw the child pattern had a fox, I was instantly in love. My mom put a lot of thought and effort into my onesie, really thinking through each part and how to make it the best and most practical. (Detachable tail for easy washing? Yes please!) We Googled red foxes to make sure we were getting it right, and many texts were sent with questions and comments. Mom takes sewing seriously. One of the more exciting events at Fur Rondy, is the Running of the Reindeer. For people who are familiar with the Only Fools Run at Midnight in Juneau, this is very similar. People dress up in costumes and there are four herds (men, women, couples, and tourists). I ran in herd two for the gals and rocked my fox onesie (only one lady yelled out to me “hey, what do you say?!” to which I replied “ring a ding ding ding!”). Although it was noticeably less warm than my North Face down parka I brought, I was

After Fur Rondy events, White and I headed to Fairbanks on Sunday afternoon. The drive was beautiful, and I would love to do it again when the landscape is less monochromatic. We passed several moose on the side of the road, and luckily none of

them ever felt the need to see if the snow was whiter on the other side. For someone from Juneau where we don’t plow the end of the road in winter, I was expecting the road to be in terrible condition. Instead the pavement was almost completely dry, with very few spots where the snow had gotten packed down and turned to ice. On a few bends it’s obvious the sunlight doesn’t warm the pavement being in perpetual shadow and we took those corners a little slower. We passed several plows and big rigs making sure the road and shoulder were clear, instead of having massive berms blocking the view of anything that might want to emerge from the woods, be it large or small. We covered 348 miles and lost about 40 degrees. Along the way we had a beautiful view of Denali, but some clouds capper her peak by the time we headed north. Arriving into FAI we found our hotel and straight off it was a slog of Iditarod spectators and support. Many languages were spoken in the lobby, and the parking lot was full of trucks and SUVs plugged in for the cold night.

My friend White lives in Anchorage, so for a few airline miles I flew in on Friday morning. Getting off the plane in ANC, I am reminded of just how dry it is there. Even though ANC is also on the water, everything is instant static and chapped. Fur

committed to the neon orange. I ran out ahead of the pack, as the snow they put on the road was a lot like running in sand and I didn’t want to stumble into anyone. They let the runners get a head start, then they let the reindeer go. The sound of their hooves punching into the snow as they ran up behind me was just incredible. I was honestly surprised at how tiny the reindeer are, as I for some reason thought they would be somewhere between a deer and an elk. The reindeer expertly dodged all the runners, and ran to their pen at the end. Though there wasn’t a giant herd of reindeer, it was still an awesome experience and one I highly recommend. At the end, a family with small girls asked if they could get a picture with me, because their daughters loved my fox onesie the best.

We met White’s photographer friend Madden, and he whisked us off to go aurora hunting. After a long drive (by Juneau standards), we stopped outside of Fox on a road atop a hill, and had views all around with very little light pollution from the towns. I learned as much as I could about night photography from Madden, and just as we were getting ready to call it quits, the elusive lady graced us with her display. This was by far one of, if not the best, aurora show I have ever seen. What FAI lacks for in mountains, it makes up for in expansive views. We could see a full sweeping arc of light, pulsing and dancing across the black sky. The aurora was so bright and dynamic, I could have stayed there forever. But alas, it was getting on 12:30 and we had big plans for the next day, err, later that morning. Apparently when going to bed back at the hotel, I fell asleep mid conversation then woke up to contribute something that I guess actually made sense, before immediately falling back asleep and slightly snoring as only sleep deprived people do. After waking up from what felt like only a brief nap, we packed up the truck and drove to the Chena River. We parked, waited a bit, then made our way down onto the

snow-covered river amongst the other brave souls who came out to cheer on the mushers despite the -35 degrees. This is where I found out that my Juneau gear is not truly adequate for FAI winters. And I guess most adventurers experience this at some point: the gear from home just doesn’t cut it where you go. But let me tell you, chivalry is not dead. It just has a silver beard and swears like a sailor. The guys gave me hand warmers for my mittens, and toe warmers for my boots. They even put small hand warmers along my legs in my boots to try to help keep my feet warm. When adventuring to a very cold place, you should do some serious research and don’t be cheap on the outer layers. While they were almost sweating in their Lacrosse Ice King boots, I was doing the pathetic cold prance in my North Face boots to try to keep blood circulating to my poor feet. I had my North Face parka zipped to my chin, while their Mountain Hardware puffy jackets were halfway unzipped as they were trying to dump heat to prevent sweating. White would say “man, I could just take a nap right now I’m so comfortable.” To which I would playfully glare “warm isn’t even close to how I would describe myself right now.” My seal and fox hat and beaver mittens

made by the Fritze’s out of Dillingham worked flawlessly as my breath froze to the fur beneath my chin. The boys quickly had frozen mustaches and the delicate white glaze on their beards complemented the snowy landscape. But I must say, of all my gear I’ve purchased, my locally made furs are the only things that really kept me warm as expected… Next time, I’ll make some better gear purchases before I come to -35 degrees to stand around outside for 4 hours. I saw several mushers with Sea Fur Sewing mittens out of Sitka, and I might invest in some before I head back to a winter in FAI. Madden also had a crucial point about furs, they don’t freeze and break. I guess people have actually had that happen. Uhhh, no thanks. I’ll support my local native artists and local economy with its sustainable resources managed by FNG. But even with the -35 and the incredible cold, the experience was worth every face-numbing, toe-tingling, shivering second of it. For anyone who has not traveled to see the Iditarod, this is something I HIGHLY recommend. After all, Alaska is our playground, and this is something that people travel from all over the world to both participate in and to see. There were several Norwegians, a few French, and some other international competitors this year who will battle it out with the finest from Alaska

and the US along hundreds of frigid miles. The sound of the dogs panting as the run by, the slobber frozen to their fur, and the sound of their bouncing gangline makes the experience something that you can never get through a screen or from a truck window. I am not someone who has closely followed the Iditarod in the past, though I have always been interested in updates and hearing that everyone makes it through unharmed and seeing pictures of the dogs. But after experiencing the exhilaration firsthand as mushers and teams go by on day one of their epic journey, this is probably something I will take more interest and pride in as an Alaskan. I know I haven’t done anything to support the Iditarod thus far, but maybe giving Aliy Zirkle a high five as she mushed by added to her good spirits. Courtney Wendel has lived in Juneau since she was a year old. She has a twin brother and an older brother, and learned to enjoy the outdoors at a young age by following the boys into mischief. Graduating from JDHS in 2006, she attended UAS to receive her Literature of the Environment, BA English degree. Pho Ga

Recipe

Spring always feels like an amazing bowl of Pho, or pronounced “fuh” is the national dish of Vietnam and has become a great comfort food in our house just like it’s homeland, I’ve even made a rice based Pho when I was trying to do something with leftover rice. Pho can be as different as the geography of Vietnam and has its humble beginnings from the French colonization in the late 1880’s. Sounding very similar to “pot au feu” meaning pot on the fire, for the long simmering time of chicken, or marrow filled beef bones combined with various aromatics like charred ginger and onion roasted on open flame before being added to the broth. With Pho Bac in the north which is more of a clear broth and simple ingredients with minimal additions at the end to Pho Nam of the South with much more lavish garnishments and additions such as fish sauce and hoisin. Vietnamese eat pho everyday for at least one meal, pushcarts and open markets in neighborhoods to elegant bistros, pho has caught our attention and it truly is a humble yet complicated comfort food that is great for a fun dinner party or for feeding hungry kids dinner. This particular recipe is great with some Alaskan wild edible ingredients, like yellow violets or nettles that are starting to poke thru the meadows around town. Use thick gloves, and a paper bag for collecting them in, they are very temperature sensitive and go great with the clear broth made in a pressure cooker of this chicken based recipe. INGREDIENTS

3-4 pound organic free-range chicken with offal 1 large organic onion peeled and cut in half (to char) 7 large cloves of garlic 60 grams of fresh ginger sliced in half lengthwise (about 3” length)

Let the skin burn (if you’re working indoors, turn on the exhaust fan and open a window), using tongs to rotate onion and ginger occasionally and to grab and discard any flyaway onion skin.

have softened slightly and become sweetly fragrant. There may even be some bubbling. You do not have to blacken the entire surface. When amply charred, remove from the heat and let cool. Rinse the cooled onions under warm running water, rubbing off the charred skin. Trim off and discard the blackened root and stem ends. Use a vegetable peeler, paring knife, or the edge of a teaspoon to remove the ginger skin. Hold it under warm water to wash off any blackened bits. Halve the ginger lengthwise and bruise lightly with the broad side of a cleaver or chef’s knife. Set the onions and ginger aside. Rinse the chicken under cool water. Detach each wing by bending it back and cutting it off at the shoulder joint. Add the wings and neck, if included, to the chicken parts. If the heart, gizzard, and liver have been included, discard them or save for another use. (Some cooks like to simmer the heart and gizzard in water and slice them for adding to the noodle bowls.) Set the wingless chicken aside. Remove and discard any loose pieces of fat from the chicken parts. Wielding a heavy cleaver designed for chopping bones, whack the bones to break them partway or all the way through, making the cuts at 1- to 2-inch intervals, depending on the size of the part. This exposes the marrow, which enriches the broth.


To achieve a clear broth, you must first parboil and rinse the chicken parts. Put them in a pressure cooker (about 12-quart capacity) and add cold water just to cover. Bring to a boil over high heat and boil vigorously for 2 to 3 minutes to release the impurities. Dump the chicken parts and water into the sink (make sure it is clean), and then rinse the parts with water to wash off any clinging residue. Quickly scrub the pressure cooker clean and return the chicken parts to the pot. Put the chicken into the pot, breast side up. Pour in the water and snuggle the chicken in between the parts so that it is covered with water. Bring to a boil over high heat and then lower the heat to a gentle simmer. Use a ladle or large, shallow spoon to skim off any scum that rises to the top. Add the onions, ginger, salt, brown sugar, coriander seeds, cloves, and cilantro and cook, under pressure for 25 minutes, adjusting the heat if needed to maintain pressure simmer. At this point, the chicken is cooked; you can put the pressure cooker under cold running water to release the pressure. Its flesh should feel firm yet still yield a bit to the touch. Use a pair of tongs to grab the chicken and transfer it to a large bowl. Flush the chicken with cold water and drain well, then it set aside for 15 to 20 minutes until it is cool enough to handle. Meanwhile, keep the broth at a steady simmer.

When chicken can be handled, use a knife to remove each breast half and the whole legs (thigh and drumstick). Don’t cut these pieces further, or they’ll lose their succulence. Set aside on a plate to cool completely, then cover with plastic wrap and refrigerate; bring to room temperature before assembling the bowls.

in the chicken broth and use the heat of the broth to cook, I like cooking them directly in the broth rather than soaking and loosing it’s al dente chewiness. If using fresh rice noodles, untangle them, place in a colander, and rinse briefly under cold running water. Cut the cooked chicken into slices about 1/4 inch thick, cutting the meat off the bone as necessary. If you don’t want to eat the skin, discard it first. Set the chicken aside. Ready the yellow onion, scallions, cilantro, and pepper for adding to the bowls. Arrange the garnishes on a plate and put on the table.

Return the leftover carcass to the pot and adjust the heat to simmer the broth gently for another 11/2 hours. Avoid a hard boil, or the broth will turn cloudy.

Strain the broth through a fine-mesh sieve (or a coarse-mesh sieve lined with cheesecloth) positioned over a pot. Discard the solids. (For an extra treat, drop overnight, lift off the solidified fat, and then in any unused white scallion sections and let reheat before continuing.) Taste and adjust them poach in the broth. Assemble the pho bowls If using dried noodles, quickly submerge them

on a vertical-handle strainer (or mesh sieve) and dunk the noodles in the boiling water. As soon as they have collapsed and lost their stiffness (10 to 20 seconds), pull the strainer from the water, letting the water drain back into the pot. Empty the noodles into a bowl. If you like, once you have finished blanching the noodles, you can blanch the bean sprouts for 30 seconds. They should wilt slightly but retain some crunch. Drain and add to the garnishes. Top each bowl of noodles with chicken, arranging the slices flat. Place a mound of yellow onion in the center and then shower some scallion and cilantro on top. Finish with a sprinkle of pepper. Raise the heat and bring the broth to a rolling boil. Do a final tasting and make any last-minute flavor adjustments. Ladle about 2 cups broth into each bowl, distributing the hot liquid evenly to warm all the ingredients. Serve immediately with the garnishes. From my fragrant table to yours, enjoy!
