Letter fr om t he Publisher Is it here? Is spring finally here? After our dull and rainy weather mid-March, I’m really hoping that’s the end of it. I am ready to get into the full landscaping swing of things! We’ve got some starters sprouting indoors and are planning on planting bulbs and other things outdoors as soon as the ground thaws. Once the snow and ice clears, we’ll thatch the lawn, and hope to get working on landscaping our backyard. We put our 3 year old to work collection “treasure” in the front yard. Which really means picking up all the little bits of trash that become exposed when the snow melts. We don’t intentionally throw trash in our yard so I’m not quite sure how there are so many little pieces of plastic, chomped up kiddo toys, and other unidentifiable objects, but suffice to say it was a fun treasure hunt for her. One of my favorite things when we start the growing season is to scout for seeds and dream of what we could grow while at the store with my husband and daughter. The possibilities are endless

and my imagination explodes with all the edible resources I could potentially grow. Now, my husband isn’t much of a gardener, nor is he very fond of fruits or vegetables but he loves the idea of growing them. I think the colorful pictures on the seed packets sells him big time. Last year we planted a variety of different corns, sunflowers, peas, and a variety of peppers along with our usual assortment of herbs and decorative yard plants and my

personal favorite, peonies. I did a lot of traveling in 2018 and I’ve been inspired by the East Coast local produce and the vibrant Hawaiian tropics. I really do want to plant more produce and edibles. Last year our peas turned out really well, we planted a few flowering trees in our front yard and got lucky on some plants that just kept blooming through the end of fall. Also while traveling, I observed the abundance of different birds. Waking

to the unique call of the birds in Hawaii and trying to identify them while sipping an ice cold beer on the lanai was magical. Last fall it was chasing a group of wild turkeys up the hill at my in-laws house in upstate New York, just to catch a glimpse of them. I’ve also enjoyed watching videos of the winter birds my mom and dad feed outside their house out the road. So this year I am going to research bird seed and feeders and start documenting the birds in the area. We live near a great bird viewing trail which is home to the red winged black bird in the spring and summer, it happens to be one of my favorite birds. I’ve also seen families of ducks, king fishers, great blue herons to name a few. With that, I hope you find new and exciting things to welcome spring back to Alaska! One of the truly impressive characteristics of Southeast Alaska that makes it unique and memorable is the water – not just the rain, though that is often the first thing that comes to mind for both those who live there and those who visit. It is the way the communities butt up to the bays and ocean, the lakes, the rivers, the muskegs as well as snow and ice. All of it looks so pristine and clear in photos. The people who live here rely on that water in so many ways. It’s a part of the eco-system that supports subsistence, recreational and commercial hunting and fishing. It’s also piped into homes where it is used for bathing, washing clothes and dishes, watering lawns, flushing toilets, and of course, cooking and drinking. Water purity anywhere in the world impacts everyone everywhere. We should be thinking about the water in our homes too.

How hard, or even impossible, it was to do your day-to-day activities? Folks with chronic illness deal with that level of inability and discomfort every day, sometimes all day long. The ways one can become incapacitated like this are many. From multiple sclerosis to fibromyalgia, myalgic encephalomyelitis (chronic fatigue) to arthritis – and the miserable world between, there’s a whole lot of people out there who are having a hard time with daily basic tasks.

And, to compound matters, changes in barometric pressure can make things like rain, wind, cold temperatures, snow, and even clouds cause flares; making the person that might have been able to meet you for dinner a few days ago, completely and utterly debilitated today. It’s Not Easy to be an Alaskan Spoonie Suffice to say, winter in Southeast Alaska brings an incredibly challenging time for most with chronic illness, or “spoonies.” Many are even homebound. Here’s a few ways to help your spoonie friends during this tricky time of year:

SNOW. Think of that miserable flu again. What do you think would have happened if you forced yourself to shovel snow in that condition? With a regular flu, you’d probably stay sick a bit longer. But for a desperate spoonie, doing so will likely cause a flare. When you’re already dealing with such intense symptoms, it’s hard to describe just how horrific a further increase is. If you’re able to help a spoonie shovel, or to just do it for them – you’re a true hero. Same for salting, taking care of stabby icicles, and all of the other fun our Southeast winters bring. House chores. Let’s be honest, your spoonie hasn’t even been able to shower in days, let alone do laundry or dishes. (Vacuuming? Haha. You’re funny.) Standing things are hard. And


cleaning tends to require standing. Plus, cleaning one’s house does nothing to pay its rent or mortgage, and when you’ve only got so many spoons per day – one must prioritize. Lending a hand means the world.

When faced with the task of cooking – standing for an extended period of time – many spoonies choose to eat convenient-but-unhealthy meals, or forego the meal completely. (Want to help, but don’t want to face the elements even in your healthy bod? Think about sending over a delivery meal, or even groceries with Instacart.) Be sure to ask about allergens as they’re common in spoonies! Say what’s up. Being chronically ill is incredibly isolating. The world keeps spinning after you’re forced into a sickbed, and it can feel like it’s forgotten all about you. So if you think of your spoonie, tell them. Arrange a visit if they’re up for it. And

if that’s not doable, try to call over messaging. Typing out how one feels isn’t particularly soothing. (It’s likely they won’t have energy to talk for long anyways. C’mon, go retro.) Ask. The ways your spoonie needs help are many, but they aren’t likely

Spring means seeds, plants and garden planning. Even though we still may have snow and ice left, it’s time to plan the plantings, get seeds going indoors and ready for May gardening. My container gardens of years past in southeast were always full of strawberries, nasturtiums, geraniums, fresh herbs, and lettuces. With rhubarb plenty, and harvesting of new shoots in the woods. My favorite strawberries were the trailing ever-bearing variety or June-bearing also does well. They are also great ground-cover if you can fertilize, or in a rock garden or planting wall. I had only a 30-50% recovery rate for overwintering. But I am usually not the best at winter protection either. They are great for companion plants like herbs, broccoli, and cucumbers which I have also had great success with. This year I’m planning a vertical garden with trailing strawberries. Strawberries have been around on all continents and were first cultivated in France. Enjoy a fresh bite of spring, get your seeds ready for summer and enjoy the fresh fruits of the year. I always buy organic varieties, as non-organic berries are heavily sprayed with pesticides and are high on dirty dozen list. I hope you enjoy this simple yet flexible cake, with a few easy additions. It is a great accent to a sunny patio and a glass of rose!

Strawberry Cake Ingredients: 2 and 1/2 cups sifted organic cake flour or other soft organic flour or gluten-free mix

1/2 cup reduced strawberry puree (see note)*

2 teaspoons baking powder

Strawberry Cream Cheese Frosting

1/2 teaspoon baking soda

1 cup freeze-dried strawberries*

1 teaspoon salt

One 8-ounce block full-fat organic cream cheese softened to room temperature

3/4 cup (1.5 sticks) organic unsalted butter, softened room temp

1/2 cup (1 stick) unsalted butter,

1 and 3/4 cups granulated sugar

3 cups organic powdered sugar

5 large egg whites, at room temperature

1-2 tablespoons milk

1/3 cup sour cream or plain yogurt, at room temperature

1 teaspoon pure vanilla extract

2 teaspoons pure vanilla extract

salt, to taste

Pour batter evenly into cake pans. Bake for around 24-25 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it is done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling. Make the frosting: Using a blender or food processor, process the freeze-dried strawberries into a powdery crumb. You should have around 1/2 cup. Set aside. In a large bowl using a hand-held or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese for 1 minute on high speed until completely smooth and creamy. Beat in the butter until combined. Add the confectioners’ sugar, strawberry powder, 1 tablespoon milk, and vanilla and beat on medium-high speed until combined and creamy. Add 1 more tablespoon of milk to slightly thin out, if desired. Taste, then add a pinch of salt if needed. Assemble and frost: First, using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Discard (or crumble over ice cream!). Place 1 cake layer on your cake stand or serving plate. Evenly cover the top with frosting. Top with 2nd layer and spread the remaining frosting all over the top and sides. Refrigerate for at least 45 minutes before slicing. This helps the cake keep its shape when cutting– it could slightly fall apart without time in the fridge. Cover leftover cake tightly and store in the refrigerator for 5 days. Recipe Notes: Make Ahead Instructions: The cake layers can be baked, cooled, and covered tightly at room

Using a hand-held or stand mixer fitted with a whisk attachment beat the butter and sugar together on high speed until smooth and creamed, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the egg whites on high speed until combined, about 2 minutes. Then beat in the sour cream and vanilla extract. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour in the milk *just* until combined. Do not overmix. Whisk in 1/2 cup of reduced strawberry puree, making sure there are no lumps at the bottom of the bowl. The batter will be slightly thick.

temperature overnight. Likewise, the frosting can be prepared then covered and refrigerated overnight. Let it sit at room temperature to slightly soften for 10 minutes before assembling and frosting. Frosted cake can be frozen up to 2 months if you have room in the freezer. Thaw overnight in the refrigerator and bring to room temperature before serving. Cake Flour: I strongly suggest using cake flour in this recipe. It’s sold right next to the all-purpose flour in the baking aisle. And you use it a lot in my recipes! In a pinch, you can use a DIY version: measure 1 cup of all-purpose flour. Remove 2 Tablespoons. Mix in 2 Tablespoons of cornstarch. Sift it. Measure 1 cup. This sifted 1 cup equals 1 cup of cake flour. I suggest doing this 3x, then remove 1/2 cup since you need 2 and 1/2 cups in this recipe. Where to Buy Freeze-Dried Strawberries? I always find them in my regular grocery store in the dried fruit aisle. Wegmans, Giant, Trader Joe’s and Target carries them. Keep your eyes peeled– they’re more commonly found that you think! Do not use the chewy/gummy dried strawberries. You need FREEZE-dried strawberries which grind into a powder. If you can’t find them anywhere, just leave them out of the frosting and add another 1/2 cup of confectioners’ sugar. Reduced Strawberry Puree: puree 1 lb of strawberries. You should have a little over 1 cup. Stirring occasionally, simmer the puree over low-medium heat for 25-30 minutes until you’re left with 1/2 cup or a little over 1/2 cup Allow to cool completely before using in cake batter. I always make the reduced puree the day before so it has plenty of time to cool down. I cover and place in the refrigerator overnight. Use 1/2 cup in the cake. Discard any leftovers or spoon on ice cream/ yogurt/add to smoothie. Yum! You can use frozen strawberries, but they will take longer to reduce even if you thaw them first. 9×13 Cake: Simply pour the batter into a greased and lightly floured 9×13 pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean. Cupcakes: Fill cupcake pans 2/3 full with batter. Bake for 20-22 minutes. Makes 2 and 1/2 dozen cupcakes. For 14-15 cupcakes, follow my recipe, which is adapted from this strawberry cake. Or 9” springform pan (this is my preferred method, line the bottom with parchment paper for the “naked cake look” easy to open, slice fill if you like and frost as desired. Food Coloring: If you want, you can add a teaspoon of beet powder to brighten that hue. Not necessary, of course.
