ell hello there August! Summer is starting to slowly simmer down as we roll into the beginnings of Fall. First, I’d like to wish good luck to everyone fishing in the Golden North Salmon Derby, may the weather be pleasant and your catch be plentiful. Second, this is an especially sentimental month and edition for Southeast Living Magazine. A year ago we announced that Southeast Living Magazine would be printed locally at Alaska Litho instead of being outsourced to the lower 48’s. I’ve written before about the importance of supporting our local businesses, organizations, people and communities and it’s thrilling that the publication took this step to insure we are putting our money where our mouth is, and more
importantly putting our money back into the Southeast A l a s k a e c o n o m y. Wo r k i n g with a local business like Alaska Litho really reminded me of the full circle effect that happens within the Southeast Alaska communities. There are more connections then you realize which can be anywhere from business, family, acquaintance and or activity oriented. Maintaining our local connections with businesses and residents we work with has helped us maintain our motto which is “striving to keep the communities of Southeast Alaska connected and to help local businesses prosper.” Printing locally has also allowed us to use more localized

businesses for tasks we normally don’t. As a result of printing locally we are using Alaska Air Cargo which we didn’t before, which in turns means we are also using a local transporting business in Ketchikan to deliver the magazines from the airport to their distribution location, Coastal Real Estate Group who has been advertising, supporting and distributing the publication for over two years for us. As you can see, this process has had a positive and unforeseen ripple effect for other businesses. Working with local businesses and/or business people often brings a superior level of quality and customer service. For example, Alaska
Litho has done just that for the magazine, they are flexible, creative, extremely punctual with jobs and work with the customer to insure the highest quality of product possible. I cannot say enough wonderful things about Alaska Litho and their consistent support for Southeast Living Magazine. Lastly and off topic, I’d like to announce the newest member of the Southeast Living Team and Hoke Family. Ariana Harper Hoke was born on July 11 at 10:51am weighing 6 lb. 5 oz and she is such a bundle of joy! Thank you to everyone who helped us along this journey full of adventures and unexpected twists and a special thank you to the Bartlett OB unit, both nurses and doctors. I couldn’t have asked for a more knowledgeable, kinder, capable staff that excelled in every way. That being said, welcome to August, I hope everyone is having as much fun as I am! STAINS OF SUMMER
If
you haven’t already gotten out to pick some Blueberries or Huckleberries, the bushes are seriously calling and you should put down your smart phone and go. I believe this is going to be a berry season we talk about for years to come in Juneau. Having just bought my first home (condo), I finally have a space to call my own. And knowing I won’t have to pack up and move in a year I am happy to fill my pantry and freezer with summer goodies. Having lived in Juneau since I was a year and two weeks old, I have never seen our blueberries so massive. Like, I’m almost a little confused by it: they are as big as the ones you get in the store, but they actually taste like blueberries! From my super-secret berry picking spot right along the Eaglecrest parking lot (that’s me in the silver Subaru), I have already plundered about 51 cups of berries. Never before have I filled a gallon bag more than once in the same little spot. But this season, it’s totally possible, and I can do it in about two hours. And though picking berries is a cathartic exercise in finger dexterity and eye-hand coordination for me, I am also
excited to have the taste of summer for months to come - though I think one of my shirts may be stained for much longer. This is the perfect season to learn to make jam with all the berries we have. My first two batches of jam turned out to be more of a lumpy syrup (ha ha ha, funny thing, if you decide to add only one cup of sugar instead of the eight cups the recipe calls for it won’t set right, because after doing some internet research it turns out that the sugar chemically binds with the pectin in the skin of the fruit to make it ‘set’), and my third batch of jam is more of a paste (so, don’t add an extra two tablespoons of pectin because you aren’t adding all the sugar). But now my fourth, fifth, sixth and seventh are perfect. I got a low sugar recipe from my
friend Joann, as I want my jam to taste like blueberries and not a Jolly Rancher - which is a sentiment she shares. But if you don’t have domestic genius friends (because let’s face it, if everyone was a genius then we would just call it normal), my kitchen’s favorite felon Mrs. Stewart has several delicious recipes you can easily find online to try. Try adding ¼ teaspoon nutmeg and allspice, or some fresh squeezed orange juice and pulp. Try mixing it up! And worst case scenario, you have some jam that doesn’t turn out (or about four batches for me), so you just mix it into pancake batter and then you make killer pancakes. But if making jam really isn’t your thing and you just vacuum seal them (I do three cups at a time, as pies and muffin recipes usually

haring our home is something my parents have done since I can r e m e m b e r. By Dr. Summer Beattie, ND Ours was o f t e n the gathering place for all the neighborhood kids and it wasn’t unusual for a friend or three to come play, stay for dinner and then still be there for breakfast! It also would not be surprising to come home and find my mother or father had invited an acquaintance or even complete stranger home for dinner. I distinctly remember one dinner with a man my father had seen camping out at the Long Island sort yard. He was visiting from Juneau, cutting and splitting fire wood from the scrap pile. It was a
typical Southeast Alaska day – cold, dark and raining hard. He seemed like such a nice guy. So when Dad got ready to leave work, he had to invite him home for a hot shower and home cooked meal. This guy sat at our table and told us grandiose stories of having traveled the world, friendships with some of the Hollywood greats like John Wayne, and having made his living filming documentary footage of sharks and even the Vietnam War. I remember thinking he just could not be telling the truth. How does someone as traveled as him end up cutting fire wood in Hoonah, Alaska. But it was true. All of it. This encounter was the beginning of a long friendship with Chuck Keen – an incredibly unique and remarkable man. Now that I have my own family, we’ve loved to invite people to our home. My husband and I enjoy cooking for
and with people. There is something about sharing a meal that can create an experience that nourishes both body and spirit. I find that these guests become fast friends as the magical aroma of food and drink mingles with good conversation and laughter. In the words of culinary great , Julia Child,

Using a level, place the window and fasten it into the rough opening.

Knowing company is coming almost always insures the house will get a bit better of a quick clean up – so regular visitors actually help me stay better on task about cleaning. Our daughter loves to have both small tea parties with one or two friends and big birthday bashes with all her friends. That being said, living in a home that is constantly in a state of remodel/transition with two little children and both of us working full time plus jobs that require travel - it can also be a lot of work to have people over. What I can tell you is that it is worth the effort. Those times when a friend has just popped in and had coffee on some random morning or called after work to see if we want to do dinner or dessert were apt to initially make me cringe. I’d look around my home and see the laundry still
piled on the sofa and the dishes piled in the sink, a baby needing a diaper change, and a little girl with an art mess scattered everywhere – maybe even a blanket tent in the living room and a web of string and toys tied from furniture to the front door knob and think – “Yikes!” But those friends that have bonded over food don’t care – more often than not a friend has loaded my dishwasher while I
crafted a drink at the espresso machine. They have cleared the table of artwork to make room for a plate I’ve filled, or folded my laundry so there is room to sit down and read to my daughter while I chop vegetables and herbs. We’ve sold our home here in Juneau and will be handing over the keys by the end of August. As I look around at where so many memories were made and friendships cultivated
I’m sad to leave. I’ve loved this home and the people who have shared it with us. My hope is that the new owners will fill it with fabulous food shared with friends as well. Be willing to have people over even if it seems like it’s too much; it makes life so much richer!

One health, One medicine: 5 ways people and their pets can stay healthy together (BPT) - Your household is busy, but keeping yourself, your children and your pets healthy is a top priority. Fortunately, wellness for people and pets can go hand in hand, allowing your entire family to feel their best and live life to the fullest. “People who take a proactive approach to their physical, mental and social wellness are typically healthier and better prepared if any health issues arise,” says Satesh Bidaisee, Associate Professor and Deputy Chair of St. George’s University Department of Public Health and Preventive Medicine at St. George’s University. “Same goes with pets, too, which is why family wellness should be a holistic effort.” Here are the top health recommendations from Dr. Bidaisee. EXERCISE People: People should exercise for at least 150 minutes a week (30 minutes per day, five times a week) if doing moderate aerobic activity or 75 minutes a week (25 minutes per day, three days a week) if performing vigorous aerobic activity, recommends the Department of Health and Human Services. Additionally, people should strive to do strength-training exercises at least twice a week. Pets: Check with your veterinarian for information regarding how much your pet should exercise; this often depends on
your pet’s breed and age. Dogs and cats, for example, should typically exercise daily. Simple daily activities like playing fetch or grabbing the laser-pointer take little time and are lots of fun for pets. Tip: Why not exercise together? Walk with your pup. Do yoga and your cat won’t resist joining in. You both will benefit by being active. ANNUAL CHECKUPS People: Annual checkups for children and adults are important in order to proactively assess any health concerns. Be sure to ask about important tests like blood sugar, triglycerides, blood pressure, BMI and cholesterol. For females, ask if you’re due for a PAP or mammogram. Pets: Pets also need to see a veterinarian for a checkup once a year. Things a vet should check include weight, breathing, ears, eyes, dental health, feet, legs, coat and skin. They will ask about behavioral changes, nutrition and exercise, so remember to discuss any concerns. Tip: It’s difficult to remember when to schedule appointments for each family member. Instead of separating them, schedule all appointments at the same time so you don’t forget. VACCINES People: Ask your doctor if you’re up to date
on all your vaccines at your annual checkup. Children have a recommended schedule to follow, but adults often overlook important vaccines like the annual flu shot or a tetanus shot every 10 years. Pets: Vaccines for pets vary by species and sometimes by age. Ask what your vet recommends at your pet’s annual checkup. For dogs, consider distemper, canine adenovirus2 (hepatitis and respiratory disease), canine parvovirus-2 and rabies. For cats, ask about a distemper and rabies shot. Tip: Vaccine recommendations change as new research emerges. Ask about any changes in the recommended schedule since your last visit. SUPPLEMENTS People: Supplements can boost your health, but before starting any new one, ask your doctor about which would be right for you. For example, in addition to a daily vitamin, other supplements to consider include omega-3s, magnesium, calcium and fiber. Pets: Pets may benefit from supplements depending on their age. Younger pets may need vitamins to support growth while older pets may need supplements for joint health, such as glucosamine. Work with your vet to learn what’s best for your pet. Tip: Ask about appropriate dosage so neither you nor your pet take too much of a certain
supplement. The right amount will boost health, but too much can cause problems. SUN PROTECTION People: Use SPF 15 or higher every day. Apply 30 minutes prior to going outside and reapply every two hours, as well as after swimming or excessive sweating, recommends skincancer. org. t’s that time of summer, when the fairs and festivals are full of amazing smells, the fruits of labor are starting to ripen and harvest time is upon us. Seems things are a bit earlier this year with the mild winter and global warming so I wanted to share something that is difficult to find in most parts of Southeast (with the exception of Haines I’ve found but please message me if you live elsewhere and have an amazing cherry tree). http://dnr.alaska. gov/ag/Grants/FruitTreeGrowingGuide.pdf and http://www.apfga.org/ for resources and info on Alaska Pioneer Fruit Growers. I’ve been traveling a bit this summer and have come across cherries everywhere and there is nothing better to me than enjoying fresh fruit and preserving it for darker and colder days ahead. So canning your own fruit mixtures is amazing, you control the ingredients,
sugar amounts (which I have the most issue with store bought varieties and the over sickening sweetness levels). Learning your flavors and preferences and then canning your own fruit fillings, be it cherries, nagoon berries, blueberries or highbush cranberries should be on your summer bucket list. I’ve got recipes for your cherry filling, discover what suits your yard, forest and fill up that pantry. So what do you do with all these amazing jars of pie fillings... well it’s fair time so you make hand pies.. I’ve always been a fan of portable self enclosed foods, whether it be on a stick, in a vessel made of the ingredients or encased in a dough. It’s food on the go and I like to gather no moss. Hand pies are traditionally deep fried but can be skillet fried or baked and the dough is typically a doctored up biscuit instead of pie crust, usually of sweet or savory fillings. For our sweet fillings you’ll need to add some dried fruit or the fresh fruit mixture will collapse the dough in the process and there is nothing sadder than a ruined hand pie... hand pies used to be called Coffins in the middle ages, for any basket or covered cave food cooked in a clay oven, throughout history you will find a hand like dough in almost every culture, so get to it America, time to make your own from scratch, again, make them with your hands... you will feel the love all the way thru the process. 1/2 teaspoon baking powder
1 cup (16 tablespoons) cold unsalted organic butter 1/2 cup cold sour cream, organic FILLING 1 1/2 tablespoons organic cornstarch 2 cups fresh canned cherry filling 2/3 cup dried cherries (unsulphered if you can find them) 1/2 cup sugar, organic 1 teaspoon vanilla or almond extract 1/8 teaspoon kosher salt organic Flour (for dusting)
1 to 1¼ cups granulated organic cane sugar
1 large egg white
4 tablespoons tapioca flour/starch, such as Bob’s Red Mill®
1 1/2 teaspoons raw sugar, organic
Pinch of kosher salt ½ cup organic tart cherry juice, not from concentrate ¼ to ½ teaspoon pure almond extract Special Equipment Cherry Pitter, such as (Progressive International GPC-5000 Cherry-It Multiple Cherry Pitter) PREPARATION: In a large saucepan, blend together sugar, tapioca flour/starch and salt using a whisk. Add cherry juice and stir until well blended; add pitted cherries. Cook and stir over medium heat until mixture reaches a boil, about 2 to 3 minutes. Remove from heat and stir in almond extract. Set aside to cool to room temperature. Use as a filling or topping immediately in recipes or store in jars with tight lids in refrigerator up to 2 days. If storing pie filling in the refrigerator, it may separate. To thicken again, reheat filling in a saucepan over medium heat stirring frequently. Cool before using in recipes. When we made this recipe, we made two batches yielding 5 pints or 5 half liter jars full. SUMMER LOVIN’ CHERRY HAND PIES YIELD: 8 HAND PIES Preheat the oven to 425°F; place a rack on the middle shelf. Line a baking sheet with parchment paper. PASTRY 2 cups Unbleached Organic All-Purpose Flour 1/2 teaspoon salt

To make the dough: Whisk together the flour, salt, and baking powder. Add the butter, working it in to make a coarse/crumbly mixture. Leave most of the butter in large, pea-sized pieces. Stir in the sour cream; the dough won’t be cohesive. Turn it out onto a floured work surface, and bring it together with a few quick kneads. Pat the dough into a rough log, and roll it into an 8” x 10” rectangle. Dust both sides of the dough with flour, and starting with a shorter end, fold it in three like a business letter. Flip the dough over, give it a 90° turn on your work surface, and roll it again into an 8” x 10” rectangle. Fold it in three again Wrap the dough, and chill for at least 30 minutes before using very important step and a good time to preheat the oven and such. To make the filling: Combine all the ingredients in a saucepan set over medium heat. Cook until the mixture starts to thicken, about 5 minutes. Transfer the cooked berries to a bowl and let cool to room temperature. To assemble the pies: Roll the dough into a 14” x 14” square. With a straight edge and pastry wheel to cut out 8 each 3 1/2” squares. Divide the filling among eight of the squares, using about a heaping tablespoon for each. Brush some of the beaten egg along the edges of each filled square. Cut a vent into the each of the remaining eight squares, using a decorative cutter of your choice. Top each filled square with a vented square, and press along the edges with the tines of a fork or a pie crust crimper to seal. Brush the top of each pie with the remaining beaten egg, and sprinkle with sparkling sugar. Transfer the pies to the prepared baking sheet. Bake the pies for 18 to 20 minutes. Remove them from the oven, and let cool for 20 minutes before serving.
