appy Holidays! This time of year often brings feelings of glee, twinkling lights, bright cheery smiles and ugly red sweaters, but it can also be a busy and sometimes overwhelming time. The days are darker, gloomier, budgets can be tight, driving is more stressful, the list goes on. So with that I have some personal holiday survival practices I’d like to share and also a few season must-haves. Don’t sweat the small stuff. Be thankful for what you have, big or small. I am so thankful for my family, a warm place to call home and a full belly (of food that is, don’t need to be starting any rumors). It’s easy to get wrapped up in the idea that our holiday parties and By Anna Hoke

dinners must be grand, perfect, every hair and chair in place. That’s a lot of puzzle pieces to put together and keep that way when life can be unpredictable and messy. So cherish the mess, unless it’s Legos, those things kill to step on. Mess means we have things to do, people to see and life to live. When all else fails, tacos. I cannot tell you how many holiday dinners (or nights leading up to holiday dinners) that have consisted of tacos and every type of taco topper and side you could want. I find that these days I am not the planner that I used to be, mostly I fly by the seat of my pants… and who doesn’t like tacos? It’s an easy gig and it takes away the burden of cooking all day. Everyone brings an ingredient or two, we make a big pot of taco meat and provide shells and tortillas and everyone is happy! Not to mention I always feel better about eating tacos over ham or turkey and all the Christmas fixings. I know this is not traditional but it’s become our own

Holiday Survival Guide tradition when life gets busy. Make your own traditions. Like the holiday taco dinners, make your own traditions to look forward to. Growing up, and to this day, Christmas to me means soccer and the annual Holiday Cup Soccer Tournament. For more than 15 years I’ve played in the tournament, usually with a soccer game either everyday or every other day of the week leading up to Christmas and then the week after. It’s wonderful to be active, to see friendly albeit competitive faces on the turf that I’ve seen year after year. And this ties in with my next season essential, exercise. Exercise is really important, especially this time of year. I’ll be the first to admit, I get SAD, or seasonal affective disorder if I’m not diligent about keeping the winter blues away. Even if it’s just a walk outside in the slush for 15 minutes, the fresh air clears the mind and is good for the soul and is a good reminder that there is a hustle and bustle of life out there which is hard to remember sometimes when we are stuffed indoors more frequently. Exercise is a crucial element to keep a good physical and mental balance. Eating right. Personally, I feel food can either do a lot of good or a lot of bad to your body and what you eat is the foundation or building blocks to health. With anything moderation is key. Treat yourself to a cupcake or goody but do eat a healthy serving of veggies more often than not, and if you’re too busy for that, throw a handful of spinach in a smoothie! I also try to cut out processed foods because personally eating ingredients I cannot pronounce doesn’t sit well with me. Eating well helps me both physically and mentally, which in turn helps keep my attitude cheery and my energy level up. And lastly, my Holiday must-haves: snow tires and pine candles. So snow tires… I went one winter here without them and it was a big mistake. I didn’t get into an accident

but my car did get sucked into some slush on my street on the way to a soccer game, which pulled me into the ditch. Like many Southeast Alaskans I was not appropriately dressed for the weather since I didn’t anticipate getting stuck and I had to run down our long, dark, snowy street in soccer shorts to find our wonderful neighbor that has the truck. I don’t know if snow tires would have prevented this situation or not but sliding anywhere in a vehicle is scary and stressful and I’d like to think that snow tires do help, paired with thoughtful driving of course. And to end it all on a happy note, I must have pine scented candles. I love the smell of the Christmas tree but my husband and I have had this 3 foot fake Christmas tree we’ve used for years so I have to get the smell somehow. The smell from the candles gives our house a Christmas feel and it’s the little things like that which make the holidays for me. Merry Christmas and Happy Holidays to you and your loved ones, it’s been an eventful 2015 and I am looking forward to what 2016 has to offer. See you in the New Year! 10 IDEAS TO GET YOUR HOUSE READY FOR Holiday checklist: See how to make your home warm & welcoming in one afternoon. It’s that time of year; I know we all have lots of wrapping, cooking, and holiday-card writing to do but guests will soon be descending upon your home, too. To make their stay as pleasant as possible and keep your sanity, a little preparation will help.

1.

Keep things toasty. To keep your guests comfortable on cold nights, make sure they have

ample blankets and an extra quilt on the bed. Extra pillows are always a nice touch too. For added warmth consider your window treatments. They can keep the cold out and the heat in. Adding a simple roller shade can also give your guests get the privacy they might need.

Set out a bouquet of fresh flowers. Even a single stem or potted plant on the nightstand, dresser, or bathroom vanity will do. In the winter, clip a branch from an evergreen for holiday cheer. Extra touches like this will make your guests feel special.

You don’t necessarily need to install new sconces, but if the guest room is currently stuck with leftover dim lamps or just one depressing overhead light, borrow a task lamp or two from your office and set them up on the nightstands. Give them the time of day. Hosts often overlook the need for an alarm clock for guests because they haven’t slept in the room themselves. Another item in this room that’s a nice touch is water. Bottles of water or a pitcher and glasses makes guest feel at home. If you want to be super-hostess, leave them the latest copy of People mag so that they can keep up with the latest gossip.

Provide a comfy spot for reading and lounging. If your guests have a nice spot to retreat to in their rooms, they’ll be more tempted to hang out there a bit and stay out of your hair when you need a little me time.

Give them somewhere to store their things. Living out of a suitcase on the floor is a drag. Empty a drawer or two for their unmentionables. A portable luggage rack is a wonderful touch and makes unpacking so much easier. It is easy to fold up and store in the back of a closet or under the bed. Growing up in Alaska I am a fervent preacher of ‘don’t go into the woods alone’, but I am also guilty of doing just that. My poor mom has become very tolerant of my 30 second phone calls - “Hey mom, I’m walking up the (insert trail name) trail about a (insert distance). Just Barksalot and myself, but there are some cars in the parking lot.”

Followed-up with the “Hey mom, turning around at the (some well-known trail landmark)” if I have service when I am at my halfway point. Then the standard “Just got to my car” call that I sometimes forget to make. (Oops.) But being the good mother she is, she usually gives me a little while before calling me to see where I am. Our older brother finds this unbelievably annoying and detests this level of parental involvement; but for me, I take comfort in the fact that if I were sitting in a puddle with a broken ankle out of cell service, or I took a tumble down a gully, my mom would call in the cavalry in a reasonable amount of time. I tell my mom I’m hiking with my dog, so I’m not reeeaaally alone, but Kiska can’t

help dress a wound or help me gimp out. As much as she would probably like to try. There are many trails in the Juneau area that are pretty popular, and even on a week night you can find at least one or two other people putting in the miles, little headlamp lights bobbing along the trail. So even though you may only be a party of one, there are other people on the trail that will probably pass you at some point. I generally keep track of

the number of parties that pass me, and guess by the number of cars I saw how many people may still be on the trail. I’m sure this is not something unique to Juneau, but every town with residents that have an affinity for nature (or people with crazy dogs that need to run around and be wild little creatures outside to spare their house), as life doesn’t just stop because the sun is being elusive. In the warm summer months I live for the comradery of group hikes and shared experiences, and I still do love company on crisp winter wanders: sitting on a ridgeline soaking in the short hours of sunlight, painting or

drawing in mittens, while drinking hot tea and cold beers. But I also revel in the silence of the snow thudding from branches above, and the soft crunch of frost beneath my boots. There is nothing quite like the laughter of friends breaking the silence, but also there is tranquility in nothing but the sound of the jays and the crows. And with so much seasonal stimulation, I have to run away for a time, to be able to come back to civilization and be a gracious adult.

Sweet sound of silence: In a time of joy and cheer, The quiet is missed. Courtney Wendel has lived in Juneau since she was a year old. She has a twin brother and an older brother, and learned to enjoy the outdoors at a young age by following the boys into mischief. NEW YEAR, NEW BATHROOM Beware

of the projects brought on by the new year! The holiday season is quickly coming to an end and with the end of the holiday season comes a new year, 2016 to be exact. This new year comes with new bathroom and kitchen trends, trends that will come and go and trends that have been with us through the tests of time. This may be the year to dive into that bathroom and update it from the 1970s and bring it into a timeless new look or a look that will function like the spa bathroom you have always wanted. I am currently trying to psych myself up to renovate the bathroom in my house. The wife throws ideas at me pretty regularly which I am quite used to it in my line of work. Sometimes I wonder if we can just wait it out and that 70s bathroom with the olive green with gold fixtures will be back in style and be the hottest trend and

I won’t have to work after a long day’s work. In fact, I recently just looked at a new color green that a jacuzzi tub, toilet, and sink came in. It wasn’t avocado green, I’ve seen avocado green, it was a brighter greener green, like the new grass that sprouts from grass seed.

The important things my wife needs to have in a bathroom are not as important to me. I am all about the guts and comfort while my wife is about aesthetics. First I don’t care if I’m standing on linoleum, concrete, or tile, just as long as my feet are warm and I have a warm bathroom. There are many new and old heating products out there that will allow me to have a warm floor or radiant heat in my bathroom to make it more comfortable. I like my bathroom fans on a timer so when I walk into the bathroom to take a shower I press the 60 minute fan timer button and I don’t have to think about it again. When I walk out of the bathroom the fan remains on and exhausts the air needed to make it fresh and dry. I don’t have to return to the bathroom to turn off the fan so it’s not running all day while I’m away at work. An equal alternative to the fan timer switch is a fan on a humidistat. With a humidistat the fan turns on at a set humidity and turns off when the humidity has returned to normal. I need light in a bathroom. Natural light is great but artificial light will do as long as there is enough of it. The fixtures don’t matter as much to me as they do to the wife but I really like to have the bathroom light and bright. Task lighting around the vanity is important to help with shaving and flossing. Task lighting should also be in the shower or bathing area so that legs can be shaved and arm pits washed. I would shave my legs if I was a world class swimmer but I’m not,

Lighting is very important at the guts stage of a bathroom remodel because you need to know where wiring is needed and how much wiring is needed. home has its own traditions for the Christmas season. Even those who do not intentionally celebrate the holiday can not help but be exposed to and influenced by it. Christmas permeates our culture, and not just locally but globally. In one form or another, it has been part of historical celebration since even before the Christian era from which it gets its name. Pagan origins, morphing caricatures and the meaning of Christmas are the subject of intense debate. I chose not to let all of that matter in our home. As Christmas has evolved throughout time, it continues to do so in our home. I’m finding that perhaps the seasons of our lives shape the way we embrace or move away from holiday seasons as well. In this period of my life, holidays are seen through the eyes of my children. As we find something no longer serves purpose or brings joy, we are letting it go. As we find new ways to celebrate, we

add them in. Time with family is central to all holidays for us, but Christmas is perhaps the singular time of year that a person really wants those we love and those who love us to be close. That’s just not always possible. This year will be the first Christmas our oldest daughter has not been at my parent’s home in Alaska to celebrate. We are blessed to have good friends and each other to be with, but come the day of, I’m sure it will feel like a key piece of what makes Christmas, well Christmas, is just missing. So with all the changes, here is where we are at this year.

Holiday Balls Rum Balls

2 ½ cup crushed vanilla wafers 2 tbls coca powder 1 ¼ powdered sugar ½ cup dark spiced rum (I love Kraken, Captains Black or Appletons anything you’d like to drink straight) 1 cup pecans crushed

Sift the cocoa with 1 cup sugar. Stir in the spiced rum mixed with the syrup. Add crushed vanilla wafers and nuts. Mix thoroughly.

Italian Christmas Cookies

Shape mixture into walnut sizes balls and dredge with remaining sugar or leave them plain. Store in a tin. Makes 2 dozen, just try not to eat a ¼ of them, I dare you!

Coconut Snowballs

1 3/4 cups unsweetened shredded coconut ( I like Bob’s Red Mill) 3 tsp coconut oil 3 tbls maple syrup 2 tbls unsweetened coconut milk 1/2 tsp vanilla extract 1/8 tsp smoked salt (Sitka Saltworks) Organic dark chocolate as needed

Place 1 cup shredded coconut and 3 tsp coconut oil into the bowl of a food processor. Process on high speed, scraping down the sides every once in a while, until it reaches a butter consistency.

great memories growing up making holiday cookies and into my adulthood, in Alaska many of those times were at the local Moose Lodge kitchen baking with amazing ladies, swapping tales, wine and laughter like nobody’s business. This year’s recipes are dedicated to those ladies (you know who you are!!) So gather around, invite some friends over, pick a few ingredients, have a few cocktails and have an amazing cookie making session. Divide and celebrate at the end, it’s so much better than just a cookie exchange, it’s the process that bonds us and creates lasting friendships, which in Alaska are so special in creating a sense of community and family often times away from home. Once the coconut balls have firmed up, melt the dark chocolate in a small saucepan over medium heat. This should only take a minute or two.

Once the chocolate is melted, dip the coconut balls into the melted chocolate and sprinkle them with the shredded coconut. Allow the chocolate to harden by placing the coconut balls back into the refrigerator for 5-10 minutes.

Add the maple syrup, coconut milk, vanilla extract, and salt and process on high speed until all of the ingredients have combined. Add 3/4 cup of additional shredded coconut and process on high speed until all of the ingredients have combined and formed a batter. Shape the coconut mixture into 1” balls and coat with the additional shredded coconut. Refrigerate for at last an hour or up to a week. Bring to room temperature before serving.

Chocolate version of Coconut Snowballs If you’d like to make these extra special, omit the final coating of shredded coconut in from above. Allow the shaped coconut balls to firm up in the refrigerator, preferably overnight.

1/2 cup butter, softened 3/4 cup organic sugar 4 eggs (room temperature) 2 tsp vanilla extract 3 cups all-purpose flour 3 tsp baking powder (non-aluminum)

Glaze: 3-3/4 cups confectioners’ (powdered) sugar 1/2 cup warm milk 2 tsp vanilla extract Nonpareils (sprinkles) for decorating

Using a heavy-duty mixer, beat your eggs for about 5 minutes, until they are light and foamy, and then set them aside. Next, combine the flour, sugar, and baking powder on low speed. Gradually beat in your butter and vanilla extract. Mix until your flour mixture resembles find crumbs. Next, gradually add your eggs. Roll your dough into 1/2 inch balls. (These little guys will expand during baking!) Your dough will be sticky, but that is what keeps the cookies from cracking during baking. Bake your cookies at 350 degrees, for about 10-12 minutes. Meanwhile, in a small bowl, combine the powdered sugar, milk, and vanilla extract until smooth. As soon as cookies are removed from the oven, you want to place your cookies on a cooling rack. Now, the fun part of baking: the decorating! While the cookies are still on the cooling rack, use a spoon to pour the glaze over the cookie. Next, before the glaze hardens, apply your sprinkles (the tiny multi-color nonpareils which now you can find organic!!).
