Letter from the Publisher Surviving the Holidays!

H

appy Holidays! This time of year often brings feelings of glee, twinkling lights, bright cheery smiles and ugly red sweaters, but it can also be a busy and sometimes overwhelming time. The days are darker, gloomier, budgets can be tight, driving is more stressful, the list goes on. So with that I have some personal holiday survival practices I’d like to share and also a few season must-haves.

Don’t sweat the small stuff. Be thankful for what you have, big or small. I am so thankful for my family, a warm place to call home and a full belly (of food that is, don’t need to be starting any rumors). It’s easy to get wrapped up in the idea that our holiday parties and dinners must be grand, perfect, every hair and chair in place. That’s a lot of puzzle pieces to put together and keep that way when life can be unpredictable and messy. So cherish the mess, unless it’s Legos, those things kill to step on. Mess means we have things to do, people to see and life to live. When all else fails, casseroles. Who

doesn’t like casseroles?! There are a number of good recipes Online, I choose to look at Pintrest. My favorite casserole is chicken and dumpling. It’s easy and I can eat it for days and I consider it relatively healthy. And if you’re already going to make one meal, why not make another and pop it in the freezer for later!

walk outside in the slush or freezing weather for 15 minutes, the fresh air clears the mind and is good for the soul and is a good reminder that there is a hustle and bustle of life out there which is hard to remember sometimes when we are stuffed indoors more frequently. Exercise is a crucial element to keep a good physical and mental balance.

Make your own traditions to look forward to. Growing up, and to this day, Christmas to me means soccer and the annual Holiday Cup Soccer Tournament. For more than 16 years I’ve played in the tournament, usually with a soccer game either everyday or every other day of the week leading up to Christmas and then the week after. It’s wonderful to be active, to see friendly albeit competitive faces on the turf that I’ve seen year after year. And this ties in with my next season essential, exercise.

Eating right. Personally, I feel food can either do a lot of good or a lot of bad to your body and what you eat is the foundation or building blocks to health. With anything moderation is key. Treat yourself to a cupcake or goody but do eat a healthy serving of veggies more often than not, and if you’re too busy for that, throw a handful of spinach in a smoothie! I also try to cut out processed foods because personally eating ingredients I cannot pronounce doesn’t sit well with me. Eating well helps me both physically and mentally, which in turn helps keep my attitude cheery and my energy level up.

Exercise is really important, especially this time of year. I’ll be the first to admit, I get SAD, or seasonal affective disorder if I’m not diligent about keeping the winter blues away. Even if it’s just a

pajamas! I must have pine scented something, whether it be oils, candles or the real deal. I love the smell of a Christmas tree but for the last few years my husband and I have had this tiny fake Christmas tree we’ve used. Mostly we didn’t want the cat to get into the needles or climb it but I have to get the smell somehow. Then there’s Christmas music. I am one of those people who secretly listens to Christmas music before Thanksgiving. I love a good holiday jingle, classic, new, or silly! And lastly, pajamas. There is something about a winter morning, cup of coffee, and wearing fun fuzzy pajamas, it makes it all the more magical. Merry Christmas and Happy Holidays to you and your loved ones, it’s been an eventful 2017 and I am looking forward to what 2018 has to offer. See you in the New Year! Contented Christmas Home

Every

home has its own traditions for the Christmas season. Even those who do not intentionally celebrate the holiday can not help but be exposed to and influenced by it. Christmas permeates our culture, and not just locally but globally. In one form or another, it has been part of historical celebration since even before the Christian era from which it gets its name. Pagan origins, morphing caricatures and the meaning of Christmas are the subject of intense debate. I chose not to let all of that matter in our home. As Christmas has evolved throughout time, it continues to do so in our home.

I’m finding that perhaps the oldest daughter has not been seasons of our lives shape at my parent’s home in Alaska the way we embrace or move to celebrate. The Food Chain Hug the ones you love. Life is unexpected sometimes. You can’t stop nature. I bought my condo out by the airport, so I was close to the EVAR trail and during our long dark cold nights I wouldn’t actually have to drive anywhere if I didn’t want to. I wanted to be within walking distance of a generally safe and well used trail that was an off leash area so Barksalot could romp around and do dog stuff. I rented a house along Radcliff for about a year, and have lived in my condo for over three years, so I have put in so many miles year round along the wetlands. And so far so good. We all know that we have black bears that roam around basically everywhere. One time I saw the biggest black bear I have ever seen saunter down our front yards between our cars and our buildings, and then calmly walk past me while I yelled at it and Kiska barked like a crazy person. But that bear had zero cares about us. A little unnerving, but generally an experience you expect to have here. After all, I love our wildlife and our wild land. As a nature photographer, I rely on Alaska being full of furry woodland creatures. I respect and appreciate them. Except for spiders in the house….. I did let that one spider live for quite a while, until

I saw a bug and then actually yelled at the spider “I LET YOU LIVE! You don’t even pay rent by leaving change in the couch cushions and you haven’t killed this bug!” Then I squished the bug, then the spider, then felt a little bad; but nobody gets a free ride buddy. #SorryNotSorry. A common saying I like is “out of the house and into the food chain” and I think that really describes how we live here. We all know that when you leave the house, even in the heart of the valley, it is possible to see large wildlife. I don’t really think there is anywhere in town where there is a zero percent chance of seeing a bear. But, wolves? It is common knowledge that there is a wolf pack on Douglas. There have been wolves spotted back behind Salmon Creek Dam, there is a pack out by Thane (could even be the same one), and obviously Romeo was a perfect example of wolves out by the glacier. But people don’t really see wolves. Not really. Usually we just see the tracks they leave, or pictures on trail cameras. But things seem to be changing. I had obviously taken the EVAR for granted. I always check the mud to see who has been passing through. Several times I

have seen deer tracks, never have I seen bear tracks, and of course a plethora of Tuf and dog tracks. But my false sense of security changed in November. For the record, the EVAR is not a leash required area. Kiska doesn’t really care about people or other dogs, she doesn’t go on walkabouts, and generally only cares about t w o

But one dark night while walking without headlamps with a friend, Kiska got very stiff, barked a few times, and ran off the trail about 60 yards out into the grass. This is super weird behavior for her. We trail run all summer and hike year round all over Juneau, and even when we have come around a corner and been feet from black bears, Kiska just looks at them, looks at me, and just stands there. I am actually working on her trying to get her to bark to scar it off. I don’t know if she thinks they are just big dogs or what, but she literally just stands there and looks at me. So this behavior was not bear behavior. My friend had a crazy powerful flashlight, so he swept the field around Kiska to try to figure out what her deal was as she stood out there silently glowing red from her

LED Lighthound body harness, and then we saw off to the left about 60 yards was a pair of green glowing eyes attached to a long black lump in the grass. I feel like an idiot now, but my first question was ‘is that a mountain lion?’ Honestly my biggest fear is mountain lions. There was a rumor of a pair out on Mendenhall Peninsula road a few years back. Duh, obviously that was a wolf. I yelled at Kiska like a crazy person, the wolf got up and was suddenly HUGE, then ran down the grassy flats away from us. Kiska came back and I instantly leashed her in case she felt the need to continue to protect us. My Friend led off the wolf just a bit with his flashlight as it ran, and a second pair of eyes looked at us – too far for the black wolf to have ran in that amount of time. I cannot verify 100% it was a second wolf though.

As I watched the black wolf get up and run, I had two thoughts: this is how I watch my dog die and I hope the wolf chokes or breaks a tooth on the metal plates in her knees, and what is the opposite of ground shrinkage because that thing is a beast and it’s how far away? (When you see a deer in your scope and it looks huge so you shoot it, but when you actually get up to it it’s small, we call that ground shrinkage, usually to mock the hunter.) In that instant, I realized that even though we don’t see them very often, predators really are everywhere, all the time. When I didn’t get a shooting opportunity on a massive buck on Admiralty one time, my then boyfriend said that that’s how they get that big, they don’t give you shooting opportunities. And that’s how our sneaky big predators live here, they don’t give you shooting opportunities and they don’t put themselves in situations to get shot – such as being naughty. And with both sets of eyes well off in the black distance, we walked back along the trail and I told the other people walking their dogs why

I was yelling like a crazy person. Because that’s what good neighbors do. The one time seeing the wolf was for sure a crazy experience, but honestly it is a statistical outlier. Of the four years living down the street from the EVAR and walking it all the time, I have never once seen a wolf or tracks before. So, this one chance encounter over hundreds of walks isn’t something that is going to make me never walk the EVAR again. Goodness, if I never did a trail that I had seen a large predator or large predator tracks on, there would literally be no trail left to do. We live in Alaska, and with that comes risk. But that is why we live here: to be in and enjoy nature and all it has to offer, while weighing our risks and rewards. The number of trail miles I have logged without incident, compared to the number of people who get in car accidents is silly when you think about it. I am at more of a risk driving to work or to go get groceries in the winter than I really am walking my dog every night. I hear of way more car accidents than people or dogs getting mauled on our trail system.

Veggie Holiday Vegetarian Holiday Roast

A small handful of dried porcini or bolete mushrooms 2 tablespoons of olive oil 2 red onions, peeled and finely chopped 2 sticks of celery peeled and finely chopped 2 cloves of garlic, peeled and finely chopped ⅔ c of risotto rice or pearl barley ¾ c of white wine 2 ½ c of good hot vegetable stock 1 ⅓ c of mixed wild mushrooms ⅔ c of pistachios, toasted ⅔ c of almonds toasted a handful of breadcrumbs from good bread 1 1/4c of good cheddar cheese (use Chao cheese if need for vegan) 1 red chilli, finely chopped Zest of 1 lemon 2 eggs, beaten (use flax egg if need vegan) 2 sprigs of each, sage rosemary, thyme, leaves picked and chopped 200g of fresh cranberries 2 tablespoons of light brown sugar

ecause I usually tend to focus on some lovely cut of wild game for the holidays I thought I would appease the ever growing crowd of vegetarian and vegans coming to your holiday feasts. Everyone wants to do something good for the planet and the body and eating less meat is surely the fastest way to reduce carbon footprint in the world. Most of you know I’m a passionate food activist working to reduce chemical monocrops and bring back a more sustainable and nourishing permaculture small ag operations to feed large cities and families. So here are a few Vegetarian and easy adapted vegan recipes for you and your friends and family. Many store bought and processed gluten free, vegetarian and vegan products are high in corn and soy additives (the over 500 processed ingredients found in most processed foods) that are not organic and full of harmful chemicals. While Alaska possibly had the lowest use per state, it’s waters are still heavily impacted by aquaculture feed. You might have overheard stories of fisherman that a particular bay or harbor isn’t producing fish like it used to, often times this is the impacts of corn and soy based fish feed. Now that it’s particularly contaminated with genetically modified soy and corn your hatchery fish are getting a heaping dose of glyphosate or Bt self producing pesticides, so once ingested they continue to reproduce down the food chain. http://www.nmfs.noaa.gov/ aquaculture/faqs/faq_feeds.html I hope you will consider joining this effort to lessen toxic chemicals in your food supply, your home, your garage and your neighborhood this holiday season. First make the risotto base Soak the dried porcini in a little boiling water. Add the olive oil to a large pan, add the onion and celery and cook for 10 minutes on a low heat until soft and sweet. Add the garlic and cook for another minute or two. Turn up the heat and add the rice, cook the rice for a minute or so until you hear it snap, crackle and pop, then add the wine and stir until it has all bee absorbed. Drain the mushrooms, sieve any grit from the liquor and add this to the risotto pan stirring until it is completely absorbed. Finely chop the soaked porcini and add these to the pan too. Then add ladle by ladle of stock, stirring each one in until it has been completely absorbed this will take 20 minutes or so. Stir as much as you can this is what will make it creamy. Once the rice is al dente (when you break into a grain it should be almost cooked through but still have a little white fleck in the middle). Once you are happy put in a bowl to cool. Heat the oven to 350F. Soak the mushrooms in a little hot water to rehydrate (save juices) and then pat dry and fry in olive oil on a medium heat for 5-10 minutes until they are just starting to crisp and smell lovely and woody. Chop the nuts a little to break them down, you can do this in a food processor, you want coarse pieces not a powder. Once the risotto has cooled off add all the other ingredients apart from the cranberries and sugar and mix and mix well. Put the sugar into a pan the cranberries and cook for a minute or two, then tip them into the bottom of the loaf tin and even out. Pile on the nut roast mixture and pack down with the back of a spoon. Butter a loaf pan and line the bottom with wax paper. Cover with the whole thing with foil and bake for 45 minutes, remove the foil and cook for a further 15 minutes. Once it’s golden brown on top remove from the oven and leave to settle for 10 minutes. Lay you serving platter or board on top of the tin then cover your hand with a tea towel and courageously flip the whole lot over, use a knife to loosen the tin then carefully lift off. Serve with all the trimmings.

Vegan Gingerbread Cookies 1 ½ cup organic white flour 1 ½ cup wholewheat flour ¾ cup brown sugar, organic ⅓ cup cacao powder 2 flax eggs ½ cup extra virgin olive oil ¼ cup organic blackstrap molasses 1 tbsp. pure vanilla extract 1 tbsp. ground ginger 1 tbsp. cinnamon 1/4 tsp. ground nutmeg 1/8 tsp. ground cloves 1/4 tsp. baking powder 1/4 tsp. salt

For the frosting 1 + 1/4 cup powdered sugar 2-3 tbsp. milk of choice (I went for organic vanilla almond milk) optional vegan food coloring (see no1te below) For the hot chocolate ¼ cup cacao powder 1 cup brown sugar 4 Tablspoons cornstarch, organic 2 ¼ cup almond milk, organic 2 tbsp. vanilla extract ½ cup dark chocolate whipped coconut cream, optional Instructions • Cream the flax eggs, olive oil molasses and sugar. • Add in both flours, salt, baking powder, cacao powder and spices and whisk until a dough is formed. • Roll out dough into a rectangle. • You don’t want it to be too thick, but it doesn’t have to be too thin either. If you cannot transfer your gingerbread men to the baking tray, it’s too thin. • Don’t worry, you can start over as much as you need to. This dough can handle it all. Just try to find what it works best for you! • Cut out the cookies with a gingerbread men cookie cutter and transfer to a baking tray lined with baking paper. • Bake at 200ºC for 12-15 minutes. • Let them cool before frosting them! • For the hot chocolate, whisk cornstarch, cacao powder and brown sugar in a saucepan. Add in milk and vanilla extract and whisk again to combine. • Bring mixture to a boil - don’t stop stirring so it doesn’t burn! • Lower the heat and keep stirring for 2-3 minutes more until it thickens. • Add in chopped chocolate and whisk until melted. • Chocolate should be smooth and glossy by now. Remove pan from heat. •Top with optional coconut whipped cream if desired! Notes: You can buy vegan food coloring online, but spirulina (for green/blue), beet juice (for red) and turmeric (for yellow) work in a pinch. Just be careful not to overdo it and you’ll be fine! If you don’t care to make flax vegan eggs, normal eggs work well too!
