Letter from the Publisher

Welcome to February! If all goes as planned, I will be spending the first part of this month in Hawaii! As I sit here pre-trip writing my column, I am trying to compile ideas for traveling with an 18 month old. It’s no secret that this part of a vacation can be a little unnerving. Our little bundle of joy is a total wiggle worm, and not so little anymore. She loves to move, chatter, fidget, doesn’t take many naps and bedtime is a long process before the actual sleep happens. Needless to say, sitting on a plane for the better part of the day isn’t the most ideal place for her, or for any toddler for that matter, no matter their chill factor. I have asked countless moms for their pro tips while traveling with their little ones and today, I’d like to share with you what I’ve learned. New Toys: several moms suggested that we get a few new toys for the trip and bring them out, one by one on the plane. Keep the toy in it’s original packaging if at all possible so that unveiling it becomes apart of the process and takes up as much time as possible.

Some good ones we like are magnetic blocks, stacking cups, and some window Suctioned toys. Personally I try to avoid “noise making” toys to try and spare other passengers, but sometimes the beeps and repetitive songs are better then the sounds of a bored or unhappy kiddo. Coloring: Ari loves the process of coloring. From pulling the pens or pencils out of the box, taking off and putting the caps back on the markers and the actual coloring bit. Being 18 months and still perfecting her dexterity, she does end up with as much marker on herself as she does the paper, so choose art supplies that are kid friendly, non-toxic and can be wiped off easily. Music: More, more, more! Is something Ari yells anytime the music stops. She loves music at any time. We bought her some kiddo headphones, which we haven’t tried out yet. We will save the unveiling and exploring their packaging for the ride as part of the fun. IPads/Kindle: Ehhh… I hope you can

Away we go! sense my enthusiasm, or lack there of. Personally, I have a somewhat negative knee jerk reaction to screen time, and am not a fan of introducing electronics to my kiddo but sometimes, desperate times call for desperate measures. We do have a kindle for Ari in which we’ve loaded educational games and a few cartoons. Luckily she’s not too interested in it yet and I plan to keep it that way as long as possible, but it is a good tool for the toolbox in a pinch. Snacks: Who doesn’t love snacks. A wide variety of healthy snacks goes a long ways and can be fun and exciting to pick and choose from. One mom suggested bringing some sort of organizational tupperware to organize the snacks so they are arranged in a pleasing manner and can be mixed, matched or resorted by your toddler. Car seat: I’ve had this internal debate over checking or carrying the car seat. I think that this is a personal choice varying from child to child. Personally, unless it’s in a vibrating, music playing car, Ari isn’t thrilled about being

strapped in and we will most likely check it. Some kiddos however find comfort in their car seat, it’s familiar and can feel secure to them while they are traveling in a new and unfamiliar environment. Carrier: I don’t go anywhere without my Tula. Though Ari is an expert at walking she does like to be carried, especially after a long day of travel. Any sort of soft carrier or wrap will do, and it saves time if you’re running to your gate and don’t have the time to wait for a walking toddler. Books: Ari is starting to find interest in books. We usually don’t finish them (someday I’ll find out what happens at the end of The Little Fur Family). She does like to turn the pages herself and check out the pictures. That’s all the pro tips I have for now! I hope you have a wonderful February! Anna Hoke is the graphic designer and owner of Southeast Living Magazine. She can be reached at anna@seakliving.com.

of a class of antibiotics called fluoroquinolones. As long ago as 2001 Dr. Jay Cohen, MD published findings on how broadly devastating these antibiotics were in multiple systems of the body. The side effects were debilitating and often long-lasting in a very high percentage of patients taking them. But it wasn’t until 2013 that the FDA finally issued a warning that these should be reserved to treat only the most serious bacterial infections that were not responding to other treatments. Yet, I still see patients who are still being prescribed Cipro or other fluoroquinolones as a first attempt to treat routine urinary tract infections, sinus infections etc. What most patients and apparently many prescribing health care practitioners don’t realize is that fluoroquinolones are potent neurotoxins that can cause damage to both the central and peripheral nervous system. They are linked to peripheral neuropathy, gastrointestinal complaints, skin issues, changes in vision and hearing, musculoskeletal pain and weakness (which is made apparent in my clinical focus on regenerative injection therapies for orthopedic complaints), and yes – cardiovascular dysfunctions such as hypertension, palpitations and chest pain. So when I recently discovered HeartMath Institute it opened up a whole new way of looking at cardiovascular health for me in a way that connects the heart and mind and integrates it in practical ways to bring heartsmart wellness habits into my home. Doc Childre, who partnered with Rollin McCraty, Ph.D in 1991 to found HeartMath, initially faced quite a bit of criticism from the medical community because he was a self-taught researcher in the area of stress management. He is now regarded as a leader in the field. HeartMath Institute boasts an impressive team continued to be led by Rollin McCraty,

Ph.D as the Director of Research for HeartMath. McCarty is also adjunct faculty for The Institute for Functional Medicine. HeartMath has used their research to develop an array of technological products, cognitive behavioral tools and trainings that are available to both the lay person and health care organizations. The emerging field of Neurocardiology research has revealed that the heart actually has its own unique and expansive intrinsic nervous system. It is far more than just a mechanical pump. It is a “brain”! The heart actually is able to assimilate input, recall information and initiate action all independent of the cranial brain. In fact, the heart sends signals directly to organs of the body such as the lungs and indirectly to many other parts of the body. The heart sends more signals to the cranial brain than the brain does to the heart! Even more amazing is realizing those heart brain signals have a regulatory effect on glands and organs of the body and even directly impact centers of the brain such as the thalamus, hypothalamus and amydgala. The parts of the brain shape our interpretation of events, the way we think and our emotions. In many ways the heart commands the brain. Could this may be why religious leaders, philosophers and poets have long written about the passions of the heart as the key to character and development of intimate and community relationships? Empires rise and fall on the zeal of men – all governed by the heart-brain dynamics. Traumatic emotions such as intense anger, grief, fear and worry have been well documented to increase the risk of heart attack and other cardiac issues. Likewise studies show that those approaching life with optimism, joy and other positive psychological approaches to managing stress have a documented decreased risk of cardiovascular disease. Together the mind and heart influence our experience of

empathy and compassion for others. The influence of this relationship between the heart brain and mind extends to those around us. An brief but very interesting documentary on the subject was released in 2013 and you can watch it at : http:// topdocumentaryfilms.com/ of-hearts-minds In the words of filmmaker David Malone, “it is our heart working in tandem with our brain that allows us to feel for others ... It is ultimately what makes us human... Compassion is the heart’s gift to the rational mind.”

just start with something. We are barely into a new year and what better resolution to keep than being heart-smart for you and your family. It’s not your kitchen that is the true “heart of the home”….it’s the people in it. Dr. Summer Beattie,ND was born and grew up in Southeawst Alaska - it will always be home. A 2004 graduate of Bastyr University, she served two terms on the board of directors for the Washington Association of Naturopathic Physicians, and has worked in a variety of primary and specialty care settings. This has given her a broad wealth of experience that she now uses in a unique clinical practice with a focus on rejuvenative physical and aesthetic medicine. Dr. Beattie,ND offers comprehensive care as it relates to physical rehabilitation from a Naturopathic Orthopedic perspective. You can find her and on-line patient programs at www. onehealingmedical.com

So, as I myself continue to explore ways to train and nourish the heart-mind connection, my recommendation would be to start by downloading the free e-books and tools at www.heartmath.org. There are general resources as well as guides specific to veterans and parenting. Decide which methods you can implement easily and quickly at home and

pring is right around the corner in Southeast Alaska and this time of year contractors are often asked, “What is the best decking material for the region?” Decking materials range from natural wood to manufactured composites made from recycled materials. When it comes to selection a lot of things need

to be considered, including the homeowner’s preferences, maintenance, costs, and the general advantages and disadvantages of each material under the advisement of your contractor. Each material performs differently and can be used in multiple ways to obtain what the homeowner is trying to accomplish. I will explore composite, natural wood,

The color Although composite decks are mold and of the stain can also be changed if you mildew resistant, this does not mean do not like the color or are going want mold and mildew will not grow on the to change the look. A light detergent cannot be changed without changing and a soft brush with a garden hose will the composite entirely. easily clean the deck.

Composite decking can be fastened to the structure in multiple ways. Face fastening is the most common which is basically a fastener through the face of the material into the structure. Composites can also be fastened with hidden fasteners or clips. Hidden fasteners are fasteners that are placed on the side of the material and into the structure. Clips are used to grip the groove on the side of the composite (must be ordered with these grooves) and fastened to the structure. Spacing is key when using composite. You can find special spacing tools to create hidden fasteners or clip fasteners, making spacing nearly automatic. When face fastening a composite material I will use a carpenters pencil to space the decking which gives it about 3/8 inch spacing. When using a composite decking, the structure or deck joists need to be spaced less than when you are using a natural wood or treated wood decking, at about 12” on center which will add some material costs and labor costs. Natural wood decking material has its benefits and drawbacks as well. Most natural woods used for decking like cedar, redwood, teak, and other exotic species have natural chemicals contained within the wood to deter rot, moisture, and insects. Wood materials like common lumber will have to be treated

The fastening on natural wood decks can be done exactly like the composite decking either face fastened or hidden fastened. Both ways of fastening are the same as the composite decking, although the use of clips is not common with wood decking. Another advantage lumber has over composite wood is that it can span a greater distance between deck joists saving on structural materials and labor. But this can be offset by the fact that natural lumber may have warping, cupping, or crowning sometimes making it a challenge to work with. Pressure treated and Sunwood (surface treated lumber) material is also a popular option. Neither pressure treated lumber or Sunwood receives stain or finish well, so what you see is what you get. It is possible to paint, but it can only be painted with the right preparation using a water based acrylic latex paint. Membrane decks are the great idea in this climate especially a second story deck since the underside of the deck can be used as a covered patio or deck below. Membrane decks must be maintained and cleaned regularly to allow them to be in the weather for many years. There are other variations on membrane decks that incorporate concrete, concrete pavers, and other materials and all are good options for a deck on a second story. ...Continued on Page 16

To housemate, or not to housemate? To housemate, or not to housemate? This is a complicated question. So back in college (woooow, did I really graduate 5 years ago?), we actually had ‘roommates’ for our freshman year. Though it was obnoxious at times, it was part of the freshmen experience. But after that we had ‘apartmentmates’, as we didn’t share rooms anymore. So now, I have housemates. Sometimes people kind of correct me to roommate, and I make it very clear that I do, in fact, have my own

room. So therefore, they are not my ROOMmate. Been there, done that, don’t need to share a room ever again. After college I had a few housemates, including my older brother for a while who had just gotten out of the Navy. But we were always renting, and I could never afford the total rent on my own. So I was in this common place of either needing to make way more money (ha ha ha, don’t we all *heavy sigh*), or needing to split the total cost with someone else. And splitting the cost seemed like the more realistic option – but I am totally still hoping that I one day find a giant gold nugget so big I have to get it helicoptered out. A girl can dream, right? I knew when getting my mortgage I wanted to be able to afford it totally on my own. Even though I had some renters lined up, I didn’t want to cry myself to

sleep at night because I wouldn’t be able to reasonably make ends meet. And I use the word ‘reasonably’ specifically. When I first went to the bank, they were willing to loan me what I thought was a crazy amount. Like when one credit card gave me a 7,500$ limit in college. Who does that?! Just because they are willing to, doesn’t mean I should accept, or that it’s really in my best interest. So when working with my lending lady, we worked on a total monthly amount I would be comfortable with. I feel like the skills and creativity we learn by living on ramen and eggs in college are good skills to have … for the zombie apocalypse … not because we couldn’t afford our mortgage on our own. I can honestly say that Dave Ramsey’s book The Total Money Makeover really changed my life (like the other books I have mentioned before, I don’t get anything for recommending this book, it’s just a super good book), and using my budget was crucial to see how much money I could really put towards a mortgage, after I paid everything else. I was still getting out of some credit card debt from my divorce, so I wasn’t living totally in the black. But I am lucky that I worked while in college and graduated with no student loans, and I paid my parents cash for my Subaru I bought from my dad, so I also didn’t have a car payment at the time. After my first renter Pacha moved out at the end of the summer season per his lease, my friend Ariel moved into his room, and when my second renter Drizella told me she found a free place to live and broke her lease, a friend of a friend Iago moved into Drizella’s room. Then Ariel and her man found a place and she was wonderful about giving me notice, so I put an ad on Craigslist to test

the waters. A middle-aged man Baloo replied, and he seemed nice enough (I did end my add with saying “Creepers, partiers, and sex offenders need not apply”). He said he was clean and quiet, but that’s what Drizella and Iago said too, and it was maybe what they hoped to be but not what they were in reality. So, I didn’t hold my breath. At the end of the summer Iago broke his lease and moved out for college in a different city, and Flynn Rider moved in – his co-worker. At this point I had owned my condo for a year and two months, and I had already had 5 different people in my two extra rooms. This was not what I had in mind when I decided to rent. I have found that for some people a lease doesn’t mean anything, and even mentioning legal actions does nothing to encourage them to act with honor and integrity. My renting saga was quickly souring hope for good renters. I had always considered myself a good renter, so I never understood why landlords could be so… bitter. But man had I figured out why. With Baloo and Flynn Rider, I told myself no more. No more renters after them. I’m done. Just done. But alas, there are some good people out there. People who know themselves, and are honest and represent themselves truthfully as they are – not their idealized self. For the past several years, right now is the best living situation I have had. Baloo really is clean and quiet (it’s a fact he is cleaner than me), and Flynn Rider is also clean and considerate. They are both funny, we all like to watch movies together, and we can sit around and joke and talk about life. It’s a perfect mix of personal time and group time, where we can be in the living room working on our own things and the silence isn’t weird, or we can talk and showing each other funny YouTube videos. I know it’s terrible of me, but I honestly hope they don’t move out anytime soon. Baloo has a life back down south he wants to get to, and I feel terrible and selfish for thinking it let alone putting it in ink, but I hope he stays in Alaska a while longer. And Flynn Rider is my boyfriend, and I hope

this lasts for a really long time. I have renting to thank for this relationship actually. I only got to know Flynn Rider before he moved in to make sure he wasn’t a creeper (remember? Creepers need not apply.). And in getting to know him we had so much in common and so many of the same life experiences and goals, it turned into something we both weren’t expecting or even looking for. We talked about not having him move in, but decided to give it a go and if nothing else at the end of his 6 month lease he could just move out. And I have to say that owning your own place is a security blanket like no other for living with a significant other. I know that if something happens between us, I will not be homeless with two pets in the Juneau housing market. I know it’s a little pessimistic of me, but it’s a legit fear. So instead, I can sit back, and sleep easy knowing that until I decided to sell this place or buy something else I never have to move my bed again. And with Baloo and Flynn Rider, I hope we stay a little happy housemate family for quite a while longer. * For anonymity, all names have been changed to Disney characters. Continued: Selecting Material for a Deck in Southeast Alaska ...Continued from Page 8

I spoke of fastening systems above (face, hidden, and clip) but the fasteners themselves are as important as the fastening systems. Some fasteners are not compatible with pressure treated lumber and the chemicals in the lumber will eat or corrode many fasteners resulting in a failing deck. Stainless steel fasteners are recommended for pressure treated lumber. Stainless steel fasteners are also recommended for cedar because other fasteners tend to stain or discolor the cedar. I have also used hot dipped galvanized and aluminum hidden fasteners to fasten cedar successfully. Composite decking has many composite-specific fasteners and though they’re compatible with composite, be sure to confirm the fasteners are compatible with the structure the deck will be fastened to, usually pressure treated lumber. The clip systems with the grooved composite decking I have found to work very well, although every joist should be

Decks require regular maintenance. No matter what type of material you decide to use for your deck, whether a new deck or refurbishing an old, it will be important to develop a regular maintenance schedule. Clean your deck regularly, stain and finish it on a regular basis and you will have a deck to enjoy for many years to come.

clipped to eliminate squeaks and clicks. The connection between the deck and the home is the most critical part of the system. Rain splashing up from the deck can greatly affect the structure of a home. The deck is usually fastened to a board hung off the home whether it’s a first story deck or second story deck. The board, also

known as, a ledger should be held off the home with a ledger bracket. A common bracket for this application is the Stratton bracket which holds the ledger board ½ inch off the house to allow water to drain behind the deck. I still like to install an ice and water shield behind the siding that the brackets fasten through to eliminate any water that may find its way behind the siding.

“Even by Alaska standards, this place has to be seen to be believed.” This beautiful acreage in Southeast Alaska has 3 separate cabins and is accessible by boat and float plane. It is located in Ground Hog Bay in Icy Straits, just a few miles from Swanson Harbor. There are existing moorings in the bay for your boats. The property is bordered on 3 sides by Tongass National Forest and faces approximately 800 feet of waterfront on the fourth side. With no private property adjoining, this site can be subdivided. The cabins face south for the best sun exposure, and each cabin is fully self-contained for spring-summer-fall living or a summer retreat. This location would also be ideal for an Ecotourism business or for a guiding business. Each of the 3 cabins has a woodstove, propane heater, solar panel, generator, running water, septic system, on-demand hot water and full bath with a shower. There is a year-round creek running through the property. The maintenance building has all the tools and equipment you can think of, including ATVs, excavator, 17’ Whaler and an 18’ Lund boat and much more. Turnkey incredible living and beautifully maintained. MLS#14985. $549,000

All things Rose

Recipe

Contributed by Amber King

Everything is Coming Up Roses

2017 into beautiful opportunities!

Just in time for Valentine’s Day... I’ve needed a lot of roses in the past few months of 2016, so what better to compliment the month of February than recipes of roses.

200 million years old... the oldest flower brings myths, loves and legends. The first cultivated roses were 5,000 years ago in ancient Mesopotamia. Sargon I, king of the Akkadians brought vines, figs and rose trees back from an expedition along the River Tigris.

Rose can come in the form of essential oil, rose absolute, rose hips, rose water, rose petals, and there are so many uses in the culinary world. Most of our roses come from South America these days, the old world of the Mediterranean and amazing cuisines from Turkey and the Greek isles. Maybe it’s the abundance of Rose Tulsi tea I’ve been consuming or the exorbitant amount of rose absolute oil I’ve needed thru the stress of losing loved ones, holiday stress and seeming emotional upheaval that was 2016, I’m so ready to take the past and transform

20

W W W.

Confucius wrote that the Emperor of China owned over 600 books about roses. The Greeks brought them to Rome, women in Athens dance naked wearing crowns of roses around the Temple of Hymen to symbolized the innocence of Golden Age. From heraldic symbols to Aphrodite Roses were the most coveted flower for centuries. Empress Josephine collected 2,562 different varieties in the French gardens of Malmaison.

But I’ve had rose on my mind for a while. Since digging into herbalism as a teenager cooking with flowers and herbs has been paramount in my world. Cooking with Flowers by Miche Bachner is a fantastic starting point. While Alaska can be a challenging environment for rose they do have several varieties of wild roses and also cultivate varieties with some care and direct sunlight. While one of the easiest recipes to make with rose petals is to simply candy them, or make honey. To make Honey you simply infuse honey with flower petals. Find you’re local honey in your town or on the honey.com finder http://www.honey. com/honey-locator/profile/chugiak-heights currently Mr. Alaskahoneyman is the only place listed in AK. But any quality organic honey will

substitute if needed. The basic formula is 1-2 tablespoons to 1 cup (8oz) of honey. Place in a clean dry jar, you may chop and dry any fresh flowers or herbs, or air or oven drying method if in a rush. Stir in herbs with a wooden spoon or chopstick (avoid any metal) and let them infuse at least 5 days, stir if they rise to the top, the longer they are in the more intense the flavor will bee (wink). Strain into clean jar and keep in a cool dry place out of sunlight. Enjoy! Rim your favorite cocktail glass with the honey, or get creative, it’s the month of love! Be inspired, loving and full of growing light and happiness for the spring that will eventually come! Enjoy this fantastic ancient pudding as well for dessert! Pair with a sweet muscat (in very small portions) or sparkling rose cava.

Feburary Phirini or Firni (An ancient traditional Indian/Pakistani/ Afghan milk pudding with pistachios and cardamom made for all celebrations and occasions). Serves 6

Ingredients 1 quart whole organic milk 4 ounces (5 cups) wild rose petals, plus more for decoration (from 2 grocery bagfuls of flower-laden branches) 1/4 cup sugar, organic (or honey) 1 teaspoon pure vanilla extract 1/2 cup cornstarch, organic 1 teaspoon rosewater, or to taste (optional) Pinch of saffron 1 pint fresh raspberries 2 tablespoons coarsely ground unsalted pistachios Pistachio pieces, saffron petals and rose petals for garnish Additional add-in’s if you would like: cooked rice, raisins or other dried fruit

Preparation

bring to a simmer over medium heat.

1. In a large heavy saucepan, bring the milk almost to a boil, then remove from the heat. Remove 1/2 cup of the milk and set aside. Gently mix the rose petals and saffron petals into the warmed milk in the pan and let infuse for 15 to 20 minutes. Strain the milk through cheesecloth or a fine strainer, discarding the petals.

3. Whisk the cornstarch into the reserved 1/2 cup milk until there are no lumps. Add the cornstarch mixture to the pan and simmer over low heat, stirring gently with a rubber spatula, for 7 to 10 minutes, or until it is thickened and coats the spatula. Remove from the heat and let cool.

2. Pour the infused milk back into the saucepan, add the sugar and vanilla, and

4. It has a subtle taste of the wild roses in this dish but if you prefer a stronger rose flavor, add the rosewater. Gently

fold in the raspberries. Ladle into separate dessert dishes and sprinkle the top with ground pistachios. Cool in the refrigerator. Serve chilled or at room temperature.
