Letter from the Publisher

Up, up and away!

Welcome to February! If all goes as planned, I will be spending the last part of this month in Hawaii! As I sit here pre-trip writing my column, I am trying to compile ideas for traveling with a two and a half year old. It’s no secret that this part of a vacation can be a little unnerving. Our little bundle of joy is a total wiggle worm, and not so little anymore. She loves to move, chatter, fidget, doesn’t take many naps and bedtime is a long process before the actual sleep happens. Needless to say, sitting on a plane for the better part of the day isn’t the most ideal place for her, or for any toddler for that matter, no matter their chill factor. I have asked countless moms for their pro tips while traveling with their little ones and today, I’d like to share with you what I’ve learned.

sometimes the beeps and repetitive songs are better then the sounds of a bored or unhappy kiddo.

New Toys: several moms suggested that we get a few new toys for the trip and bring them out, one by one on the plane. Keep the toy in it’s original packaging if at all possible so that unveiling it becomes apart of the process and takes up as much time as possible. Some good ones we like are magnetic blocks, stacking cups, stickers, and some window Suctioned toys. Personally I try to avoid “noise making” toys to try and spare other passengers, but

Music: More, more, more! Is something Ari yells anytime the music stops. She loves music at any time. We bought her some kiddo headphones, so she can rock out without sharing her playlist with the rest of the plane.

Coloring: Ari loves the process of coloring. From pulling the pens or pencils out of the box, taking off and putting the caps back on the markers and the actual coloring bit. Being two and a little mischievous, I have to keep a close eye on her with art supplies. She takes as much joy drawing on herself and surroundings as she does the paper. Thank you wet wipes!

IPads/Kindle: Ehhh… I hope you can sense my enthusiasm, or lack there of. Personally, I have a somewhat negative knee jerk reaction to screen time, and am not a fan of

RE/MAX of Juneau 907-789-4794 office

introducing electronics to my kiddo but sometimes, desperate times call for desperate measures. We do have a kindle for Ari in which we’ve loaded educational games and a few cartoons. Though I’d rather fill her time with creative playtime, it is a good tool for the toolbox in a pinch. Snacks: Who doesn’t love snacks. A wide variety of healthy snacks goes a long ways and can be fun and exciting to pick and choose from. One mom suggested bringing some sort of organizational tupperware to organize the snacks so they are arranged in a pleasing manner and can be mixed, matched or resorted by your toddler. Car seat: I’ve had this internal debate over checking or carrying the car seat. I’ve learned that this is a personal choice varying from child to child. Personally, unless it’s in a vibrating, music playing car, Ari isn’t thrilled about being strapped in and we will most likely check it. Some kiddos however find

comfort in their car seat, it’s familiar and can feel secure to them while they are traveling in a new and unfamiliar environment. Carrier: I don’t go anywhere without my Tula. Though Ari is an expert at walking she does like to be carried, especially after a long day of travel. Any sort of soft carrier or wrap will do, and it saves time if you’re running to your gate and don’t have the time to wait for a walking toddler. Books: Ari has a love for books. Our reading routine usually starts out by me reading the book to her, and then she “reads” the book back to me. Listening to her repeat back what she heard and learned is usually pretty hysterical. That’s all the pro tips I have for now! I hope you have a wonderful February! Anna Hoke is the graphic designer and owner of Southeast Living Magazine. She can be reached at anna@seakliving.com.

PREPARING YOUR HOME FOR A BABYSITTER I think I have mentioned it before; we do not just think of heart health in February because of Valentine’s Day, but because this month was named American Heart Month by then President Lyndon B Johnson in 1963. Because at that time, half of the deaths in the US were due to heart disease, Congress joined in passing a resolution to ensure that every year, this designation would continue by Presidential decree. However, we do not just think of the literal beating organ in our chest when we think of the heart. Instead, we associate this symbol with feelings of deep love. Top on the list of all we hold dear to our hearts is of course our children. Author Elizabeth Stone is credited with having said, “Making the decision to

have a child - it is momentous. It is to decide forever to have your heart go walking around outside your body. ” I can tell you from personal experience - this is absolutely true. S

child themselves. In the state of Alaska, there is no law specifying at what age a child can be left home alone. There are laws that prohibit leaving a child home alone if doing so could put them in danger. The Juneau Police Department addressed this exact concern on their website in their dispatch Q & A. I would take this to also mean then, that there is no legal age at which another child can be asked to babysit, but instead it falls to the parents of both the babysitter and the children being cared for to use common sense to determine if it creates a dangerous situation.

is to make sure your babysitter has appropriate training. The American Red Cross is one of the first organizations we might think of for training in heart care such as CPR and First Aid. They also offer both on-line and, in some locations, classroom training sessions in Babysitting Basics and Advanced Child Care. Bartlett Regional Hospital offers the Safe Sitter Class for 6th-8th Grade Students. Next sessions are June 5, 2018 and July 10, 2018. More information about registration is available on their website under the Calendar of Events tab. Bartlett’s class offering is advertised as covering everything from managing emergencies when caring for children to behavior management and how to be nurturing. The American Red Cross also has created a Family Interview Form for children who have completed babysitting training to give every family they will be working for. It covers family information, emergency contact numbers, medical information about the children, household rules, instructions on how

to handle misbehavior, homework, chores, safety concerns (such as a fire, baths or pools, how to work the locks, etc.), pets, food, television, outdoor play, bed time routines, hygiene (diapers, hand washing,

Back then I didn’t know any better, but I certainly should have been paid a lot more than I was for all that work! In my experience, today’s babysitters would never think it necessary to do any housework and if you want them to, expect to pay for that service. I

think a very experienced babysitter could probably handle some extra duties, especially if they can include the children in them. However, I find it hard enough as a parent to do chores while trying to be truly present with my children. Asking another child to do as much if not better might simply be too much. We also have rules of behavior for our babysitter to follow while caring for our children. You will want to make sure these expectations are clear. Our babysitter is not to be spending their time texting friends, using social media, or have unapproved friends over. We live on a lake and it is off-limits while we are gone. They are not allowed to use the stove top or oven (because it is a gas range) but have to use the microwave to heat anything. No open flames (matches, candles, etc.), no alcohol, minimal sugar, no music or TV that is violent, sexually explicit, or scary. In fact we have a no TV, no video game policy unless special permission is given.

Montessori school our girls attend and although now at a Montessori high school, spent a good deal of time with them at school last year. Montessori has fluid classrooms among the different age groups. So when I said to her, please approach watching the girls and have them behave just as you would expect them and yourself to at school – with grace and courtesy for each other and the environment (furniture, toys, etc.), and have fun…. she knew exactly what I meant. We have a shared language and experience based on Montessori principles that made it easy. We have spent time with her family over the last year, so my girls already know and adore her. I would recommend that when you are interviewing potential babysitters, you not only ask for references, but first try

to initially pool from your close circle of friends or groups (church, clubs, etc.). Chances are you will have a familiarity and commonality with each other that makes the transition of having them care for your child easier. It makes it enjoyable to leave them when I come home and they ask if their sitter can stay just a little longer! Even with all the preparedness, you may find that you need to fire your babysitter. Pay attention to anything that makes you feel uncomfortable, fear that your children are not being treated appropriately, or concerned that they are not safe. Be “ok” with firing your sitter before behavior that makes you simply uncomfortable becomes a serious problem. I hope this article gives you a start on resources. I also hope it starts conversations – when are we and our children ready to hire a babysitter? What things in our home might need to be addressed to make it a safe place for someone else to care for them?

How do we make having a babysitter a great experience for us and the sitter? Having someone care for your children in your home can be a happy and healthy experience when everyone has done the necessary work to prepare.

Like so many cliché movies. . . Like so many cliché movies, it actually started to rain as Krause drove away. I wish I could remember everything exactly the way he said it, but I remember the feeling of lots of love, and though there were lots of sniffles and tears, it wouldn’t be the last time we saw each other. I would best describe Krause like my cat housemate: we never went on walks or hikes together, we saw just a few movies in theater, and only did one or two suppers out with friends; so about 99% of the time we hung out was at home in the living room. Like a housecat, Krause was usually on the couch reading on his iPad or watching a movie when he wasn’t at work or doing church stuff. And like my cat Ember, he was perfectly content to simply drink a beer (yes, Ember steals beer, that feline lush) and share the same space as me with little to no interaction, allowing us to simply enjoy each other’s company while doing our own thing. Just being around each other was enough because we were secure in our friendship that we didn’t need to fill every space with something other than each other’s presence. We would often share stories about our day and then later settle in on the couch to watch a movie together. I would often get a text about what movie he had rented, or we would do a process of elimination from my DVD collection where one of us would select several movies, and the other would pick the winner from the selection. I think his best quality was that I could talk to him about anything. Before Krause moved to Alaska, he was very involved with a church down south and used to do couples therapy. He has a psychology degree from a fancy university so it was actually worth it to frame his diploma and have it nicely displayed - instead of my degree that I’m pretty sure is just in the bottom of my fireproof safe in the original envelope it came in. He was always willing to share his personal stories that related to what we were talking about, and he n e v e r

had a judgy face about anything I would confess feeling or doing. Often, I would start a conversation with ‘I have to confess,’ *dramatic pause* ‘I had a super terrible thought about _____ today.’ And he would always laugh and we would talk about what happened, what could have been done differently, and what to look out for in the future. But even though he was a pastor, he was never a ‘holier than thou’ kind of guy. He has a past, as we all do, and he could often recall a similar situation he had found himself in ‘back when he was my age’. Although, I do have to admit, I did live a little more prudishly than I probably would have had I not lived with a pastor. And in no way is that a bad thing! Yeesh. Keeps me out of trouble. Probably the funniest conversation I ever had when first meeting someone, was when I met Krause. He responded to my Craigslist post that ended with ‘creepers, partiers, and sex offenders need not apply’. I had said that I liked to have the house quiet-ish around 9, and in bed around 10. Oh man did I feel like Craigslist was a gamble! When Krause first came to the house, he had a bit of a head-tilt confused look when I answered and said hello. Krause asked if “Courtney was available” to which I replied “that’s me”. He said “Oh,” (trailing off) “ok.” I asked if something was wrong, and he said no, but that he had “envisioned someone much older”. I was super happy to hear him say that and said “perfect!” He chuckled and said he was expecting to meet someone’s grandma, not someone young enough to be his child. And that was how our wonderful living arrangement began. I never once thought it was weird to live with a guy 21 years older than me who had a wife, cats, dog, and a house down south. If anything, it was like having an older brother with many years of life’s lessons to share, but stories you have never heard before. It was always funny to hear a story about Krause when he was younger and be totally flabbergasted that the calm and serene adult sitting next to me was once even remotely a wild child. But it just reminds you that everyone’s got some stories to tell. And it’s kind of weird to sit here and realize that I don’t really have any stories to tell with Krause. But like your housecat, you don’t really tend to have crazy and wild stories to share around a campfire or over beers. But you count on (and take for granted that) your cat will

be there every day when you come home. And everyone knows you have a cat. And everyone knows you love your cat. Your cat is a basic part of your life, and every day your cat makes your life better and enriches your existence. And though you may not take your cat out to public events, everyone would be sad if your cat went missing because they know how much it means to you. I would say after maybe six or eight months we casually said we were our favorite housemates, and after about a year it was a fact that we had never had a better living arrangement. And I guess I’ll bring you up to speed that last February my boyfriend and I broke up and then in March he moved out. Krause and I decided to get a new housemate, as a friend of mine who is 22 years older than me was looking to downsize his renting situation when his daughter moved for college. Consequently, for the majority of 2017 it was me, and two guys who actually have children my age. At night I would laugh and loudly exclaim ‘thank god!’ when Krause would say he was going to bed, because it felt shameful to be the youngest by over 20 years and be the first one to go to bed. Krause was an early riser, so he would get up around 5am, and between the two of us there was never a battle for the shower. Sometimes I would get up early and we would chat in the living room before I headed down to shower, but usually, like ships in the night, we always just seemed to just miss each other in the morning. Having his family down south, and working for the Feds meant that Krause was looking to transfer back to the contiguous US when he found a good job. Being selfish, I will say that unfortunately that day finally came. It all happened kind of suddenly, but life always does. It was less than a month and Krause booked his tickets and packed up his car. Looking back, I can say that my best friend moved away that day. Funny how you don’t realize just how important someone is to you until you are looking for their car every day when you get home to realize that they will literally never park there again; catching yourself waving at the same color, make, and model on the highway across lanes. I can say that I’m 100% positive that Ember has mourned him moving away and misses him too. Of all my housemates, Krause was for sure her buddy. Krause also experienced the ‘seven pound cat trap’ where Ember would curl up and fall asleep on him and he wouldn’t move because he didn’t want to disturb her. That’s love. And though Ember likes men more then women, her cuddles and her affection for Krause was without a doubt special. Krause moved out in August, and the 2017 holiday season was pretty rough. Mom

asked me at Thanksgiving how Krause was, and I said that I didn’t want to talk about it because I wasn’t wearing waterproof mascara. I attempted to call Krause probably five times that day, but I just turned into a blubbering mess before I could even place the call. And of course almost every phone call we have had has ended in me getting a bit weepy. But I send him pictures of Ember looking like the regal feline she is, and I think he gets a bit weepy missing her. I know that the day Ember crosses that rainbow bridge, a Rainbow Hearts memory glass with her ashes will be sent to him. I almost wonder if secretly he is her soul mate. I know for a fact that Krause is a shining example of genuine platonic love. It has been argued that platonic love is the highest form of love, because you truly just love the person for who they are, without any of that silly physical attraction that makes you do crazy stuff. With genuine platonic love, it’s not a roller coaster ride of chemistry: it’s just rock solid love for them as an independent person. When my grandma died just before Christmas Krause was the first person who called me after my mom called from Iowa to let me know she passed. I can’t tell you what a difference it makes to actually call someone when they get news like that. And even writing this now I’m getting weepy, because being in a time zone that is four hours ahead of Alaska, he literally stopped everything he was doing when he got the text to make sure that he called right away and checked in on me. How funny to think that if I hadn’t bought my condo, if I didn’t have rooms to rent, and if I hadn’t put an ad on Craigslist, I would have missed out on one of my most foundational relationships of the last few years, and I’m sure many years to come. I have had good housemates, I have had bad housemates, and then I have had Krause who has literally changed my life. I am such a better person for having met him. We both know that if life ever gets us down, we will never be homeless, we will never be on our own, and we will always have someone to talk to. And though Craigslist is a total gamble, Krause restores my faith in humanity that there are good people out there just waiting to cross your path. They literally might be just a rent check away. Après ski is literally French for “after ski,” and it’s a general phrase to describe the social activities that take place after a day spent hitting the slopes. I know it’s been a weird winter season on the slopes of southeast so I thought it might be good to improve upon our Apres- Ski game while we wait for the flakes to fall. HOT BUTTERED RUM I use my daughters leftover buttercream each year to make hot buttered rum mix, if you don’t have a Thanksgiving birthday to pilfer from mix softened vanilla ice cream with softened butter,

1 1/2 pounds peeled and deveined medium shrimp 4 teaspoons Original Essence (see below) 1/2 teaspoon salt 8 ounces andouille sausage 1/4 cup vegetable oil 1 cup finely chopped yellow onion 1/2 cup finely chopped red bell pepper 1/2 cup finely chopped green bell pepper 1 teaspoon minced garlic 1 1/2 cups chicken broth, or canned, low-sodium chicken stock 1/4 cup heavy cream 2 tablespoons finely chopped green onions 2 tablespoons minced parsley

CHARLESTON STYLE GRITS: 6 cups water Salt to taste 1 1/2 cups quick cooking or old fashioned grits (not instant!) 2 cups milk 1 cup heavy cream 8 tablespoons butter Freshly ground black pepper to taste

SPICY SHRIMP AND ANDOUILLE: Season the wild Alaskan shrimp with 3 teaspoons Original Essence (recipe below) Emeril’s Essence Recipe 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme

Combine organic varieties in jar or container mix use within 12 months. Heat a large (12 to 14 inches), heavy sauté or cast iron pan over medium-high heat, add 1 tablespoon of the oil and sear the andouille, cooking for about 3 minutes. Remove the andouille to a plate, add 1 tablespoon of the oil to the pan, add half the shrimp, and cook for 2 to 3 minutes. Remove the shrimp from the pan, and another tablespoon of oil to the pan and repeat with the remaining shrimp. Add the remaining tablespoon of oil to the pan and add the onion and bell peppers and cook until soft, 3 minutes. Add the remaining teaspoon Essence to the pan, stirring well, then add the garlic and cook 1 minute. Add the chicken broth to the pan and cook until reduced by half, about 5 minutes. Stir the cream, green onions and parsley into the sauce and return the andouille and shrimp to the pan. Return sauce to a simmer and continue to cook until reduced

slightly. Stir well and season to taste with salt and pepper. Serve over Charleston-Style Grits.

CHARLESTON STYLE GRITS: In a large, heavy saucepan bring the water to a boil. Add a generous teaspoon of salt and the grits and stir with a wooden spoon to combine. When grits thicken add milk, cream and butter and return to a boil. Reduce heat to a simmer, cover saucepan and cook for 45 minutes to one hour, until grits are tender, smooth and creamy. Taste and season with salt and pepper. Keep covered and warm until ready to serve with Spicy Shrimp and Andouille. Chilli Fondue or Don’t? I’m Swiss so melted cheese and dips are as much a part of skiing as I can imagine, and who isn’t going to enjoy gobs of warm cheese on everything (fondue, raclette etc) some meats and crackers with pickles (okay so maybe a few of you, but the rest will love it!) 1 medium clove garlic, cut in half 1 cup dry white wine, such as sauvignon blanc or pinot grigio, plus more as needed 1/2 pound Emmentaler cheese, grated 1/2 pound Gruyère cheese, grated 1 tablespoon cornstarch, organic 1 tablespoon fresh juice from 1 lemon 1 tablespoon kirsch (cognac or brandy) Kosher salt and freshly ground white or black pepper Toasted bread cubed and/or lightly blanched and salted vegetables, for dipping

Rub cut faces of garlic cloves around the inside of a fondue pot, double boiler, or stainless steel mixing bowl set over a pot of simmering water (do not allow bowl to come into direct contact with the water). Add wine and heat until steaming. Meanwhile, in a large bowl, toss together both cheeses with cornstarch until evenly coated. Working over low heat, add cheese 1 handful at a time, stirring until mostly melted before adding next handful. Continue until all cheese is melted into the wine, forming a smooth, glossy melted cheese sauce, about 10 minutes; it is very important that the fondue stay below a simmer once you start adding the cheese, or there’s a risk it could break. Stir in lemon juice and kirsch, if using, until fully incorporated. Season with salt and pepper. If not already in a fondue pot, transfer fondue to a fondue pot to keep it warm and melted at the table. Serve with toasted bread cubes and lightly blanched vegetables for dipping. If fondue begins to thicken too much, add a small splash of wine to loosen it. Amber King can be emailed at accereek@gmail. com
