Happy New Year! I cannot believe another year has past. Like last year, I have several “resolutions,” 100 to be exact. I’ve started writing a list every year of 100 things I want to try and accomplish. I credit one of my writers, Courtney Wendel for this idea that she shared with us two years ago. Courtney splits her goals into categories and I thought I’d do the same. A quick gander at life, and these are the categories I tend to focus on and find importance in; health, happiness, financial, future, adventure, and home.

First of, Health. Health for me is the foundation for everything else in life, both mentally and physically. 1. Eat well. Eating lots of fruits and vegetables is important. I typically consider myself a pretty healthy eater. This year was filled with lots of travel for me, and with that comes a lot of good food, and in my case weight gain. Luckily I am currently participating in

the Holiday Cup soccer tournament so hopefully that will help expedite the disappearance of my extra squish. I also have a new found love for pressure cookers. If you haven’t tried this method of cooking, I highly recommend it. Pintrest and the Internet offer tons of great, healthy recipes.

2. Get back to running shape. I’ve run a half marathon distance twice before, while participating in the Klondike Road Relay Race and I think it’s time to train and do something like that again. Having a toddler is amazing, but the exercise

Goals... struggle for me is real. By the time I get some “me-time” (what’s that?!) I am too pooped to even think about getting my heart rate up and I end up at best, soaking in a bath staring at my phone. Next up, happiness. Everyday I find myself looking at life with a sparkle and wondering how I got so lucky, so I am certainly not lacking in the happiness department. A long while ago I used to paint, mostly acrylic and oil based paint on canvas. I’d love to get back into painting as it was a passion of mine as well as something I studied in college. Financial. Ugh, watch my eyes glaze over and roll with the epitome of something I find little interest in but that I acknowledge is vital all the same. Every year I contribute to my IRA, it’s very important to plan for the future and retirement so I make a point to do that every year, and this year will be no different. 2018, keep my stocks in the green, and the price of Bitcoin up! And then to the future. There are many things I’d like to do in the future but with an energetic toddler at home, I need to be realistic. In the next year I’d like to: Plant a garden. Last summer we did extensive work on our yard. It was satisfying and rewarding and we are left with a beautiful front, side, and backyard that is a perfect canvas for plants. While traveling last summer I was constantly blown away by local produce. It inspired me to try my hand at gardening once again. My neighbors are also very handy with vegetation so I may be picking their brains. I’d love to have peas, carrots, potatoes, spinach, and who knows, maybe even corn. Come on sun! Adventure. There are a number of things I want to do with my kiddo

this year in terms of adventure. I am so excited for summer because she’ll be ready for hikes, fishing, berry picking and tide pool exploring. 1. Hike a “mountain” with a toddler. I did Eaglecrest last summer with Ari in the backpack and she did fantastic. I’d like to try something similar but let her walk on the easy parts. 2. Fishing with a toddler. Obviously Ari won’t be doing a lot of fishing but she loves the boat, wildlife and scenery that Southeast Alaska has to offer on the water. 3. Camping, either in a tent or cabin. We’ve yet to do tent camping with our toddler but think it’s something nearing our adventurous future. We’ve had some fun excursions watching the stars and northern lights in our yard with blankets and hopefully this year we will adventure out and make it a whole night. Home. On the clutter. I’d really like to work on minimizing all the stuff we have. The struggle is real with a kiddo. Toys and stuffed animals are fun and we get great joy out of gifting them to our little one but boy do we have too many of them. Toys are easier to give away or donate but for me, stuffed animals are hard to part with. I find myself getting attached to certain animals that Ari has obtained. I know if I weeded them out and gave them away we probably wouldn’t miss them, but for some reason I feel like I’m abandoning a memory that I might want back! Parents, what do you do with lightly used stuffed animals? Those are just a few items from my 100’s list. I hope you enjoyed them and I hope you too create some goals to work at or look forward to in the New Year. Thanks again Courtney for the awesome idea! Happy January everyone! Normally, I want to write about joy and hope around this time of year. After all, January is the month of fresh starts, and many of this season’s holidays we just celebrated were about the gift of family, thanksgiving, hope, new beginnings, and love. The holiday season is also a time that can bring overwhelm, grief and loss. Often we experience both – the joy and despair all at the same time. At least this has been true for many of my patients, family and friends. This year it is true for me in a new way, and that prompts this article. Put your house in order. This phrase refers to making sure that you have thoughtfully considered, discussed with loved ones, and properly documented what your wishes are should you become incapacitated or die. The things you need to have clear are not only what happens to your possessions, but who and how will your children or pets be cared for, what will happen to your body and what sort of end of life medical care do you want.

Recently, a dear friend of mine successfully beat cancer (for the second time in her life!), but the treatments and experience has taken a significant toll on both her emotional and physical health. She has a longstanding difficult relationship with her family, so she asked me to accompany her to her most recent appointment with her primary care physician. She had lost so much weight at this point, that despite being cancer free, he feared she did not have much time left and asked me if I would be willing to take on the role of becoming her Medical Power of Attorney. To be honest, even as a physician, the prospect and responsibility was overwhelming. We did meet with a social worker provided by the Senior Health Care Center. This was a very, very difficult conversation to have, even with a professional as guide. It was marked by all the things we all fear most with having this sort of consult - tears, anger, denial and in the end some resignation and compromise. As

expected, nothing concrete was actually decided other than that my friend should talk to her family about accompanying her to another visit. Over six weeks has passed since that visit and my friend has been unwilling to move forward with discussion and documentation of her end-life wishes. Therein is the heart-break of this story and why I felt it urgent to share. Shortly after Thanksgiving, she lost her balance while home alone, and broke her ankle. Even as I type, she is now lying in a bed at a nursing home. Daily, she seems to be slipping mentally, emotionally, and physically – she has lost the ability to make most decisions for herself simply because she is confined to a care facility with its own set of rules and regulations as to what they can even allow her as options. She may find the strength and desire to recover or she soon may be

So my encouragement to you and a reminder to myself as we move into the New Year, is to use whatever time we have to live intentionally. Much like the houses we live in need constant, purposeful and planned care so that they do not crumble about us, so too

does the rest of what makes up our lives. We need a vision and a determined course of action in the relationships we have, the work we do, and the investments we make in our health. Unless we really stop to sit with ourselves and others to have the hard and sometimes painful discussions, time simply moves forward with no hope for anything different or better. When loss suddenly comes, and it always does come and seemingly suddenly, the lack of planning only makes the burden of grief that much harder. Do not let your New Year pass without commitment to letting go of what holds you back from living fully into the life you wish. Mend the relationships that can be; let go of those that cannot be. Do not fill your home with meaningless things that you cannot possible even use – give them now to someone who will appreciate them. See your healthcare provider and map out a one year, five year, and ten year plan for optimal health. Meet with a social worker, lawyer, or trusted pastor or friend to help document your wishes for how those things you are

responsible for will be handled if you are gone or incapable. Put your house in order. Determine that this New Year is the year you will give greatly to others and yourself; that you will give with intention and careful planning. “When you die, you do not take what you have, you take what you gave.” ~ Azim Jamal

I took the motorcycle safety course, I got a sibling tattoo with my twin brother, had a sweet pup-day party for Kiska and all her dog and human friends including doggy ice cream and party hats, and after years and years I finally got a memory glass of my late cat. But for all the things still on my list, I have to realize that I made a lot of excuses this summer. I take self-reflection pretty seriously, and I would rather admit the hard truth and BE better, than to make excuses and FEEL better. After all, as my mom says, “excuses only satisfy those who make them.” Most of the things I didn’t do were hiking adventures, and reading. But here’s the thing, what did I do with my time? Like, where did 2017 go? I have been single since February, and my little mantra was ‘I’m doing me’ and my go-to song was

“Scared to be Lonely” and I refused to do anything I thought I might be doing just because I was lonely, which ironically, might have made me more lonely in the end anyways. You know that meme of a lady sitting at a table set for one, and it says “I know what I bring to the table, so I’m not afraid to eat alone.” Eating alone for 10 months gets pretty dang quiet. But I didn’t really do me, I just put my singleness time and energy into things that I *thought* would make me feel like I had a societal purpose, but didn’t really. I volunteered on several boards and committees in our community, giving so many hours of my time for things where my housemates often asked me if the ‘juice was worth the squeeze.’ I got a second job this summer and a year round second job this winter that I actually really enjoy but am giving up my weekends and my

precious adventure time. I often work 7 days a week, though usually just a few hours on Saturday. I walked my dog basically every day but we have done the EVAR more than ever and I looked longingly at our mountains feeling guilty that Kiska might be getting bored chasing the same squirrels every day. I also hated my life probably the most I have in years, and I cried myself to sleep more often than I should admit in print. I was a terrible burnt-out housemate who left dishes in the sink overnight, who didn’t vacuum as often as I should have after my pets and their constant little tri-colored fur balls. I don’t think I really pulled my weight in taking out the garbage and recycling. I started so many projects yet left so many unfinished. I had the best of intentions, but the worst follow through. I literally didn’t have enough energy to go around so instead of doing just a few things well, I failed at many. But if I wasn’t out adventuring and I wasn’t home reading, what was I doing? I honestly don’t even know. I feel like 2017 was a wasted year except for a few

blips of happiness. I wasted my time and energy on things that didn’t even make me happy trying to prove to myself that I had redeeming qualities of value, wasted my emotions being sad about not getting invited to things with my friend group and frustrated about personality conflicts on boards, and wasted my solitude hating my condo because I felt like I was stuck living there, trapped in my own choices; instead of it being a sanctuary it was a cinder block drowning me in drama. So Many Excuses, So Little Satisfaction

I feel like in trying to find other validation I bit off more than I could chew. But not even a giant bowl of crème brulee with the delightful toasted sugar shell more than I could chew; this was the gnarly gristle on an overly-done steak that I thought would ‘make a positive change’ for myself and others, and I was ‘fighting the good fight’. HA! What a joke. While I spent my

t i m e chewing on that never ending disaster, others were enjoying their dessert. #OverAcheiverFail As I sit down to make my holiday cards, I skim off a solid layer of self-pity and find those nuggets of goodness from the year. Looking at my 100’s list, I did hike the Chilkoot trail with my fake sister Brittany and a good friend Mareta, and we had the best weather I have ever had in the 6 years of

hiking it. I don’t have new ridgeline photos to show, but I do have familiar mountains with faces I love. Though my chest waders never saw the sea this summer, I did spend countless hours picking berries in the rain while Kiska got a blue tongue from eating blueberries; my house smelled like sweet f r u i t and the popping of sealing lids was often heard. I did more experimenting with jam this summer than I have before, and luckily made some amazing combinations. Looking at the flats of jam and apple butter I have in my coat closet, I do have jars upon jars to show for my gathering efforts which will be shared this holiday season. I did do my first caribou hunt up north, and that was an experience to learn from. This winter hunting has been slow with only one buck in the freezer, and the fuzzy little deer butts have all been elusive while their fresh tracks in the snow chumming me along. But even though hunting has been slow I have made some good memories with my brothers and learned a lot. Never underestimate the benefits of quietly taking your gun for a walk. I think something I’ll go into 2018 with is

not being afraid to adventure on my own. I made a lot of excuses for not getting out this summer because I didn’t have someone to go with. But I have ventured out several times hunting on my own, and reaffirmed that I’m not a total idiot in the woods and I can in fact come home alive. I mean, what happens when people move to new places? Do they never go out hiking until they make friends? That seems silly and unlikely. And as far as other excuses, I guess I’ll try to catch myself making them, and try to evaluate if the excuse is legit or not. Am I just masking insecurity or laziness with an excuse, or are there really conflicts such as time constraints or other obligations? And if there are other obligations, what is my priority level? Are these things I really want to do, that REALLY make me happy? And lord knows some days I just want to sit down and watch a movie, but I want to be honest about it and acknowledge the mental check-out instead of using it as an avoidance of something else that needs to get done, or being pouty later about how I spent my time. My 2018 100’s list is coming along. “Not making excuses” is at the top. A lot of my same adventures are still on there, and this next year I hope they will be filled with friends and smiling faces, but if not, then at least I will see the sights for myself and know that I went because I wanted to and it

was important to me. And heck, maybe it’s about time I read that book on mountaineering and backcountry safety before I head out alone.

Chicken and Mushrooms Sauté

Recipe

Serve over brown rice

Ingredients: 2T Olive Oil

1 Whole Organic chicken, cut up 1t Salt ¼ c rice flour 1lb cremini mushrooms, quartered 4 cloves fresh garlic, pressed/minced 2 sprigs of fresh thyme 1/4c dry sherry 1c pinot grigio 1c chicken stock 3T butter (don’t be afraid) 2T Rice flour Salt and pepper to taste Chives and fresh homemade or live sourkraut to garnish

So now that the Holidays have passed and we’re all making new resolutions and diet/exercise promises to be healthier and thrive better in the Contributed new year. Many of by Amber King these resolutions involve food. So I’d love to share with you my resolution this year. To stop consuming nightshade vegetables… what are they and why do you want to stop? Nightshade vegetables are a plant family called Solanaceae. They all have certain characteristics in common (flower shape, seed arrangement etc…) Many are inedible and several are highly poisonous like deadly nightshade, tobacco and jimsonweed. Many edible nightshades are in our (and my) diet. Bell Peppers, hot peppers, tomatoes, okra, artichokes, soy sauce (usually made with GMO soy beans and cut with petunia, eggplant, goji berries, paprika, pimentos, pepinos (hot peppers), potatoes (not sweet potatoes), tomatillos, gooseberries, naranjilla,

vodka (again the potatoes, I guess I’ll be drinking Ciroc with Puffy P Diddy…) The problem is the glycoalkaloid/ saponin, lectin and capsaicin content. Overconsumption of these edible species can be poisonous to humans and at some levels, toxic properties can cause and inflame health issues if consumed regularly over time. Not to mention Oxalic Kidney stones. Lectins are present in most foods, but have the ability to increase intestinal permeability and have hi proline content and are relatively heat stable so cooking will not break them down and will cause leaky gut. Not what I’m looking for in the new year and on the same level it’s the same with saponin, which can also stimulate and exaggerate an immune response. Since I have auto immune issues I need to avoid these too. Glycoakaloid poisoning can occur with excessive consumption of nightshade vegetables and inhibit a key enzyme, acetyl cholinesterase, which is required for nerve impulse conduction. Think of a flickering light bulb, but that of the nervous system.. not good. The Capsaicin is a steroidal stimulant

found in hot peppers, it’s what makes them hot. It is a natural irritant to a variety of tissues including skin, eyes and mucous membranes and can also increase intestinally inflammation. So while it’s going to be incredibly difficult to give up my love of everything hot sauced based, curry’s and many favorite Italian dishes, no more eggplant terrines, artichoke dip or my favorite pizza… Will life be a bland remainder of what it once was without my arsenal of peppery sauces and condiments (I really mean half the fridge door is hot sauces!) But if it means I’ll feel better at the end then it’s totally worth it. No more arthritis, or chronic pain. If you have constant pain, dietary issues or auto immune responses you might consider a three month challenge to avoid nightshades and see if it makes a difference… I’d also avoid GMO foods also since again it’s all about promoting good protein absorption and happy gut flora and fauna (see added sauerkraut) Amber King can be emailed at accereek@ gmail.com

Preheat oven to 325. Heat olive oil in Dutch Oven on medium heat. Sprinkle 1 tsp. salt equally over cut-up chicken pieces. Place rice flour in bowl and lightly dust the chicken pieces until coated. Brown chicken about 8 minutes per side. Don’t over crowd – do this in two batches, or heat up another skillet and brown concurrently. Remove chicken to plate and add mushrooms and garlic cloves. Stir and sauté 5 minutes. Add sherry. With a wooden spoon, scrape up the brown bits from the bottom of the pan and cook for 1 minute. Add minced garlic and stir 1 minute. Add wine, chicken stock, salt and pepper and stir. Add chicken back into pot. Cover and place in oven for 30–35 minutes. Place pot on stove when chicken is cooked through and discard thyme. Remove chicken to a plate while you thicken sauce. Mash rice flour and butter with the back of a spoon to create a roux. Turn pot onto a low simmer and gradually stir in the roux to thicken the sauce, about 5 minutes. Or substitute the roux with the arrowroot/broth mixture to thicken. Add chicken back to pot and leave covered to keep warm. This was adapted from an Ina Garten recipe. From My Hot Sauce Free Table to yours, Happy New Year!
