Letter from the Publisher Happy 4th of July! Happy July everyone! I have always

loved the month of July, but now more than ever as it is my daughter’s birth month. Yes, this time of year will always hold a piece of my heart. This year she has decided she wants a “Daniel Tiger” themed birthday party. For those who don’t know, Daniel Tiger’s Neighborhood is a PBS animated continuation to Mr. Rogers’ Neighborhood, where all the original characters are now grown up with their own preschool-aged children (in animal form). It’s full of life lessons and catchy songs. It’s so fun to experience the growth of a child and observe the choices they make and the things they learn. When I think of July, I also think of Independence Day. I know I’ve talked about my personal Independence Day traditions before but it’s too near and

dear to my heart to not reminisce again! Typically my husband and I, and any family member we have on hand, will venture downtown on the 3rd to watch the fireworks. Well, that was then. We’ve skipped the last three years of fireworks, first due to being out of town, then the last two years, we’ve had an itty bitty baby who probably wouldn’t take kindly to the late night and noise. Instead we do an evening picnic on a beach somewhere, maybe shoot off a firework or two and make a relatively early night of it. This year we are contemplating braving the late night and downtown traffic with our almost three year old. She’s been such a joy to experience things with, and she is always more brave and comprehending then I estimate. For example, we went to the carnival for the first time last month and she was a superstar! She rode every ride

her height allowed her to go on. Got her face painted twice and had opinions about which colors and sparkles were to be applied. I was amazed at her understanding and direction following, because sometimes my demands at home fall on deaf ears or like any boundary testing kiddo, she’ll do the opposite of my request. Anyway, the fireworks are up in the air, I’ll let you know next month what decision was made. Back to our Independence Day ritual... We typically make our way downtown midmorning of the forth to share a delicious crepe from the Alaskan Crepe Escape (Monkey Business is our magazine, favorite) and visit with our dear friends I have developed a before the parade starts. know if that is a small community trait or not, but regardless we are very lucky to have the philanthropic and generous communities of Southeast Alaska that we do. She bought almost exclusively canned goods and boxed foods that had been clearance priced. She only bought meats on clearance sale and the cheapest dairy and cooking oils she could find. She purchased almost no fresh or whole foods and lots of discount baked goods and a run through fast food for cheapest “meals” was not uncommon. This mother, I’m sure, was doing the very best she knew how, and I in no way intend to shame her. In fact, I would dare to say she represents the common view of food held in this country. That price is what matters most. If you share her view, I want to challenge you to reconsider food as an investment in your body and your health; much the same way you invest in the home you buy. Trust me, I know the expense to choose healthy seems like an

insurmountable burden, if not pure lunacy, when you first start switching from a cost to a quality mindset. I didn’t do it all at once myself and we still make compromises to fit our budget. Continued on PAGE 8

What I encourage you to do is start learning about food. As you learn about food and create habits of choice for foods that are of high quality, you become empowered, not burdened. Food is always going to be one of the biggest influencers of your health. Study after study after study has proven this and continues to prove this. Food is either medicine or poison. You have to think of it this way. Food is biochemically active inside of your body. It communicates with the cells and systems of your body to either nourish you or poison you. It is really that simple. AND you have a choice every time you eat or drink – ultimately no one else makes that decision for you. You get to because in your future when you invest in the food you purchase. If you are having a hard time seeing it, really do compare it to a house. We have been house shopping since moving last year. After recently walking through a large home on a big lot in the neighborhood we desired, we came to the conclusion that we needed to shift our search. A friend who is a realtor had sent us the MLS as soon as it hit the market, knowing it was everything we

thought we wanted as far as size, location, and price – we were concerned about the age of the property. Nothing is sitting on the market here; act fast or get shut out. The minute we stepped in the front door, we knew we wanted nothing to do with that house. The owners had decorated impeccably, it looked like a photo shoot out of a Pottery Barn catalog. It was clean and spacious. So what was wrong? The floor was so uneven that there was a change of almost a foot by the time you got to the back of the house. In fact it didn’t just slope, it went up and down, leaving you feeling almost sea sick as you walked from room to room. The upstairs was the same. In that moment we both agreed that if we were going to spend that much money on a house, we were buying new construction, which meant – not in that neighborhood given our price range! So next we looked at some beautiful homes (in the same price range) about 30 minutes out of town. The thing was these large homes were on postage stamp sized lots, and sometimes shared driveways too. We need a little room for the girls and dog to be outside, let alone indulge my want to garden

just a bit. The Best Bread in the world! My memories of fresh bread as a child are very strong, from missing loaves of bread that had disappeared at the logging camp while we had gone to town, or waking up to that yeasty smell in the morning were very special. I grew up on sailboats, in logging camps and eventually moving into town when I was old enough for school, and probably wild enough that my mom didn’t want to spend all day answering my millions of questions. On the rare occasions that we went out to eat it would be at Helse or “Health” in Norwegian. It was a small, narrow restaurant tucked on the edge of Sing Lee Alley.

Low and behold I was able to get a copy of the original recipe thanks to a community Facebook page of Petersburg history. I immediately ordered new larger bread pans and some organic 7 grain cereal. I’ve posted the original recipe and then

will share my adaptations… (Because I can’t just leave anything amazing alone lol). I recommend trying both, see which version you like best. Helse 7 grain Bread Alaskan Amber Style I’m assembling the ingredients and milling the flour. Add honey, mix in glass bowl and let sit 10 minutes.

Ingredients ½ T organic black strap molasses 2 T honey, organic 2/3 c 7 grain cereal, must be organic!! 1/2c oats (I just pulsed steal cut oats in the vitamin) 3 cups organic whole wheat flour (I milled inkhorn berries) 2T Yeast 1/3 cup avocado oil (or olive, safflower) 2t salt 3 cups white flour (organic spelt) ¼ c vital wheat gluten, organic 2t diastatic malt powder

loom your yeast in ¼ cup of warm water somewhere around 85 degrees, I usually boil my water and then let it cool to temp, while

Combine 7-grain cereal, oat bran, oil molasses, diastatic malt powder, and remaining hot boiling water. Let it sprout at least 20 minutes overnight (minus the malt powder if you can) then add in flour, vital wheat gluten and kneed 5-10 minutes.

Let rise covered in warm place for an hour, punch down and form into loaves (think rolling up a towel and pinching the ends closed.

Place in extra-large greased bread pans for 10-15 minutes. Bake at 350 for 30 minutes, cover top with foil and bake another 30 minutes. Loaves should leave toothpick clean when done, and sound hollow to the tap when removed from pan.
