Letter from the Publisher Happy July everyone! I have always loved the month of July, but now more than ever as it is my daughter’s birth month. Yes, this time of year will always hold a piece of my heart. In true fashion of putting things off, being busy and plain old forgetfulness, I have put off sending a thank you letter to the awesome staff at Bartlett OB, so I’d like to take the opportunity to say a little thank you now from the Hoke Family: Dearest Bartlett OB Staff: We’d like to extend a very long overdue Thank you. We were blown away by your kindness, receptiveness, knowledge and confidence bestowed on us the many times we visited; obviously we enjoyed ourselves so much we couldn’t stay away. Yes, we visited quite a few times during many different circumstances… First we’d like to thank you for a number of amazing classes we took taught by staff members of the OB. We took an amazing Childbirth Preparation class that Bartlett Regional Hospital offers (for free). The class was amazing, and although admittedly we didn’t know what to expect and were

kind of dreading it, we finished the class feeling confident and connected as parents both to one another and to other soon to be parents that took the class with us. We then were excited to follow that experience with the Breastfeeding Success and Newborn Care Class and again found it very helpful and could not stop talking about what a great experience it was. Thank you so much for these educational classes and to the incredible instructors; Sara, Renae, and Debi, who taught them.

COST VS QUALITY I think I’ve mentioned before, in regards to drawing analogies to our health and our homes, that our bodies are in the most exclusive sense the house for our self – it holds the essence of who we are whether we recognize that as mind, spirit, soul, etc. Our bodies determine to a large extent how we function and interact in the world and what limitations we might experience due to health concerns. So what kind of “house” do you have? What kind of “house” do you want? What impacts the quality of your “home” most? One of my dearest friends is raising three very active girls. In fact they win Cross-Fit competitions and they are all under the age of 16. So she is going to be paying to feed those athletes for quite a few more years! She asked me recently how much we spend on average each month for food, and was relieved when I said, that while it varies (because we often buy in bulk and fill a freezer) I thought it was likely close to 25% of our monthly income. She spends even a little more. We both buy almost exclusively certified organic, grass-fed meats and wild caught fish, and non-GMO. We both avoid baked goods fairly religiously, never purchase soda, rarely eat out/ cook at home, and buy very few pre-packaged items. When we are buying packaged goods, we read labels and avoid artificial sweeteners, high fructose corn syrup, high sugar of any kind, anything with artificial food colorings or flavorings, some other additives (the list is looooong) and soy. We buy high quality fats. Grocery shopping and meal planning and prep often feels like a combination of full time job and school – it’s a lot of work and when you think you finally have it figured out, either the trusted product changes, you learn something else might be better for you, or manufacturers re-name ingredients just to trick you! A label of “Natural” generally means nothing of value other than you are going to pay more for this product – you have to learn to read labels or you just get hussled in the Natural Food section of most grocery stores. My friend had been feeling bad, because another mom had been bragging about how they only ever spent no more than about 1/3 of what my friend did, and she was raising 4 boys. In stark contrast however, this mom stated she cared only about the price of the food. She never looked at ingredients or nutritional labels. She bought almost exclusively canned goods and boxed foods that had

been clearance priced. She only bought meats on clearance sale and the cheapest dairy and cooking oils she could find. She purchased almost no fresh or whole foods and lots of discount baked goods and a run through fast food for cheapest “meals” was not uncommon. This mother, I’m sure, was doing the very best she knew how, and I in no way intend to shame her. In fact, I would dare to say she represents the common view of food held in this

We need a little room for the girls and dog to be outside, let alone indulge my want to garden just a bit. The other striking thing we both noticed right away, was that while the first impression of these new sub-division homes was breathtaking, they were all finished with lower quality “big-box” store bulk material. In the model homes, the finishes were already showing significant wear just from the traffic of prospective buyers. We both value quality over quantity, so now we had to re-directed our search again. This time our search focused purely on quality. We wanted a solid construction with materials that will not have to be replaced in five years and attention to detail. We wanted a community that was nourishing, not busy and draining. We wanted just enough outdoor space to breathe deep and an environment that would foster peace. The last home we looked at was smaller and less expensive than the others we’d toured, but offered far more than we had hoped for in quality. After all, your home should be a place you want to come back to and ideally never leave – a haven. We think we found exactly that and went under contract just this afternoon. Whether it’s your health or your home….hire someone who is an expert in their field to work with you and for you. Don’t get tricked by quick and easy or trendy. Trust that this is a journey involving course changes. Investing in quality for your body and your home is something that always pays off.

Outdoor Spaces SOME LOVE
When Juneau has a rainy summer, it’s easy to forget about the outdoor spaces around your home. Our yard and landscape is in need of some By Susan Stopher love so we’ve been Stopher Construction developing a plan of attack. If you need to develop a plan for addressing the needs in your outdoor spaces, make a list of all that needs to be done. Then walk around the neighborhoods and see how other people have tackled your challenges. And, if you can’t find ideas in your neighborhood, look on Pinterest and Houzz for ideas. Here is my list of items which may give you a little inspiration for laying out your own projects:
1.
Deck reconfiguration. Our deck does not work the way it’s configured. We rarely use it on sunny days, and since it’s not covered for Juneau’s sometimes too frequent rainy days, we rarely use it the way it is now. We’ve decided to remove the rail/bench
that goes around the deck and add a step so it’s accessible from nearly every direction which opens up access to the backyard significantly.
2.
Address low spots in our landscape. Our yard has lots of low spots and lots of general unevenness. We need to level it out a bit by bringing in some stone and topsoil.
3.
Curb appeal. We’d like to dress up our mailbox, add shutters, paint the oil tank, stain the fence and paint the garage door. These little details should make our home feel warmer and more inviting.
4.
Driveway resurfacing. This is going to be a big, long term project that we will do in phases.
5.
Perennial shade garden. Each year, I add a few plants to develop a perennial garden at our home. I’d say much of what I add hasn’t survived but I’m determined to be more successful this time around. I’ve joined gardening groups and have been reading a lot about what will work in this climate, how to fertilize, etc.

Grow grass. Our grass is full of moss and weeds. We are planning to make it less weedy and more grassy going forward. Hopefully adding topsoil and new seed will be the beginning of our lawn repair.

Walking paths. I’d like to add some sort of path to the areas of the yard that are most frequently walked on. I’ve found some great ideas on Pinterest. That’s my list for now. It’s ever growing but I’m determined to tackle at least a few items this summer. I’d say my perennial shade garden is well on its way thanks to the generosity of some local gardeners. Start by making your list. That way you’ll have a starting point for projects. Identify which projects need to be done this year and which are longer term. Find ideas for the first project and get it done as soon as you have the weather to do so. It’s sometimes hard to tackle many of these projects in the rain, so on the next nice day get out there and get it done!

I Bought my Dog and Cat a Condo If you have read my articles with any regularity, you have probably noticed my spotted pooch in almost every article. (Not that I’m a crazy dog lady, but you know, I have my priorities.) I have also talked about how hard it is to rent with animals in this town. Nothing against landlords that don’t allow pets – I TOTALLY get it, but it just makes it hard for the responsible pet owners. And maybe I should really be saying that irresponsible pet owners who are bad renters make it hard for responsible pet owners to rent. Having lived in most areas of town, I have had the luxury of figuring out where I fit in the best with my cat and dog in tow. I have had the time to build my dream house in my mind many times over, the leases to test run several houses and condos, and there are a few things that are on the top of my list for my future residence:
1. A grass yard is a NEED. 2. A dog friendly trail within walking distance is a NEED. 3. A longer trail, something over 3 miles within walking distance is a NEED. 4. More than one trail in my general area. Variety is the spice of life. 5. Close to work. As much as I love driving…. 6. Does it already have hardwood floors, or, how much would it cost to put in hard wood floors? 7. Do I have off street parking? 8. How many hills are between me and work? I hate icy roads in the winter. 9. Is there a garage? 10. Can I fence in a yard and put in a doggy door? Though I think it’s good to narrow down the most important qualities when

looking for a place to rent or own, I also understand that no place is perfect and that it will be many, many years until I am living in the home that not only fills all of my desires but is also without “home improvement projects”. And that’s ok. I think that my desires will change over time anyways, so it’s kind of like trying to nail down a moving target at this point. I have some needs, and I have a LOT of wants, and understanding the difference between the two has made my journey a lot easier. I have always enjoyed going to open houses to window shop and look at how other people set up their homes. To think of my wants and needs, and see how other people in my town have built their homes to fill different aspects of their lives always interests me. A lot of people here are hunters, and though I’m not very good on the whole interior decorating thing, I do really enjoy the hunting lodge look and feel. If you have the chance, you should really read “The Life-Changing Magic of Tidying Up” by Marie Kondo (PS I’m not getting anything for recommending this book). I really like the look and feel of our wood forest service cabins, the natural earth tones, the plaid; and being a photographer I love having favorite memories around the house. But I’m also a minimalist, and I hate the feeling of clutter and too many distracting visual lines. Google images is a wonderful thing, and it has helped give me some direction on decorating, so when I have to buy or replace the little things around my house I keep in mind the overall look I want to slowly move towards. Unless you are getting a home custom built, or buying new construction where you can still give them your input on some things, the reality of home buying is that you are going to take what is available, and shape it to fit what you want. I haven’t met a single person who bought their house and absolutely every single aspect was exactly what they wanted – at least not if they lived there for multiple years. So having a general idea of how the functionality of the space will work for you, and keeping your wish list in the back of your mind, is always good when looking at property. So with that in mind, I bought my dog and cat a condo. Having lived around town I think that the airport trail is a really wonderful all-season trail. In the summer it is muddy paws and

chuck it balls. In the winter cross country skiers set a track and every now and then the airport plows the trail. In the spring and fall the meadows are a wash of flowers and fall colors. The crisp smell of the ocean and the afternoon sea breeze helps keep the bugs off and makes the hot summer days more tolerable. So, having narrowed down the best place for me to live, I then started my hunt for housing in my budget. My friend knew of a condo that would be coming up for sale in her association, and I asked her to give the family my contact information. It was a town house, end unit, and the best part is the massive shared grass yard in addition to the little front yard for each condo. It is under a five-minute walk from the airport trail, and on Berners Avenue I was able to meet so many of my needs and wants: a huge grass yard, multiple trails nearby, one longer trail just down the street, off street parking, NO hills between me and work, and the condo already had hard wood floors. This little town house was able to meet so many of my desires, that not having a garage, a doggy door, or a fenced yard are wants that I can live without for now. Now don’t get me wrong, when I fed my dog a new type of food and she was super sick and waking me up every two hours to go explode in the yard all night on a Sunday night, I was very sad that I didn’t have a doggy door so she could let herself out. And staying home the whole next day with her would have been solved if I could have just put her in a fenced yard and checked on her at lunch. But, the tradeoff is a more reasonable mortgage, not having to worry about mowing the yard, plowing the snow, painting the building, or anything else that comes with owning a single family home. So, while I’m young, I will get up every other hour to let Kiska out when she gets sick or drinks too much water before bed. I will listen to my nerdy neighbors when they get super excited playing their video games, and one day, I will have my own
garage. But until then, I will be happy here in a small enough house that when I plug my vacuum cleaner into the right outlet I can vacuum the whole house without having to change the outlet. The
word pickle comes from the Northern German word “pokel” meaning Salt/brine which are the key elements in the pickling process. It is one of the older and best ways to preserve food which can also be a mobile process used on sailing ships and while traveling. It’s a wonderful way to preserve foods for winter from the summer harvest. When I think summer I think pickle dishes, either in potato salad, or alongside an amazing pastrami sandwich. I also love growing dill, and it does amazingly well in Southeast, even in container gardens. Pickled cucumbers are often lacto-fermented in the saltwater brine which allows the microbial organisms to develop and turn the naturally occurring sugars into lactic acid which becomes highly acidic and is inhospitable to bacteria. You can also vinegar and salt brine pickles as well. Kosher dills have their own beginnings in history in Jewish food and was a dietary staple for Jews living in northern Eu-

rope and Russia and were welcomed accompaniment to a very bland bread and potato based diet during the cold winter months. They were filled in barrels or crocks with cucumbers, beets or cabbage and let the natural rhythms of the weather go from warm to cool at exactly the right time to ferment, flavor and preserve to create amazing pickles that would last until the next spring.

One of my favorite books growing up was The Pushcart War by Jean Merrill. It was a story of battling street hawkers veying with pea shooters in the streets of New York City for the best locations to sell their wares. Pickle carts were often seen in the early part of the last century. Pickl-It versus Harsch Crock – Pickl-It wins by a landslide!

Pickles Dill Pickles using the new Pickl-it Lid Container size: 3-liter Pickl-It (or use two 1 1/2-liter Pickl-It or three 1-liter Pickl-It containers) Brine: 3% strength – 59 grams high-quality sea salt, stirred-to-dissolve in 8-cups filtered, non-chlorine, non-fluoridated water (simple brine recipes)
Ingredients • 3-4 pounds small, no-wax Kirby-style pickling cukes, preferably no wider than 1 1/2-inches; try to select ones that are uniform in size • 2 heads garlic, peeled • 4-5 heads flowering dill • 1-cup blanched pearl onions (cut “X” in root end with sharp knife, blanch for 1-minute; rinse under cold water, “pop” onion through “X” removing from outer skin) • 2-T organic pickling spice blend (purchased or home-made, recipe follows) • 2-3 small, or 1-2 medium organic grape leaves, oak leaves
Directions 1. Remove lid from the Pickl-It container for easier filling 2. Insert airlock into Pickl-It lid; set aside 3. Make sure all traces of the cucumber blossoms are removed; scrub all debris, sand from pickling cukes 4. Pack and alternate pickling cukes, pearl onions (if you’re using them!) and whole-spices into the Pickl-It; rows and layers work best, rather than just randomly dumping them into the jar; this reduces oxygen space and is more efficient. 5. Note: Add garlic cloves and dill heads on the day the Pickl-It cucumbers are moved to the fridge. And yes, keep the airlock on for at least 3 months! 6. Do not load the cucumbers any higher than the jar “shoulder” 7. Place Pickl-It Dunk’R on top the pickling cukes, holding them under the brine. Hint for using carrot strips under Dunk’R to hold pickles down. 8. Install Pickl-It lid on Pickl-It jar

• 1 cup mustard seeds
11. After 24-hours, you should notice small carbon dioxide bubbles throughout the brine – this is normal, a sign of good, healthy fermentation. A “froth” or “foam” will accumulated on top the brine. Ignore it. Unlike other methods of so-called methods of “fermentation” that allow oxygen into the jar, Pickl-It locks the oxygen out. The “foam” or “scum” in the Pickl-It isn’t loaded with mold or oxygen-fed yeast. It is simply the result of a good batch of CO2 – carbon dioxide – which shows you’ve got a great batch of pickles. 12. If your room temperature is between 68-74F, leave the Pickl-It container on the counter for 5-7 days, then add garlic and dill. 13. Move the Pickl-It to the refrigerator for 20-days. 14. Remove one pickle and slice in half. If there is a uniform green color throughout the pickle’s interior, without white spots or streaks, your Kosher Dill Pickles are ready to eat! 15. If you have white spots or white streaks, return the re-latched Pickl-It to the refrigerator for another 7-days. Check progress again, and continue to repeat until there is even coloration. Enjoy! 16. If you are preserving your cucumbers, and using multiple Pickl-It jars, the “cukes” will last up to 15-months when made and stored in the Pickl-It. 17. Here’s how to use the Plug’R to ensure good long-term preservation: After 3-months, remove the airlock from the Pickl-It containers that will be stored long-term in the refrigerator. Place the Pickl-It Plug’R in the grommet, after removing the airlock. When removing pickles from the Pickl-It, remove the Plug’R and restore the airlock ( be sure to fill it with water). That way, any oxygen that rushes into the PicklIt, when food is removed, is pushed back up and out the airlock, after the lid is latched closed.

Directions 1. Stir all ingredients in a glass jar, preferably wire-bail 2. Store up to 12-months – or longer. We’ve had batches remain crispy and flavorful for 18-months. But we make and store all our ferments in the PicklIt. Moving Pickl-It food into a mason jar, or into a plain wire-bail jar, greatly reduces their life and probiotic value due to oxygen exposure.
Traditional Vinegar based pickles
Wash and lightly scrub cucumbers in very cold water (or ice water) Make sure to toss out any ones with soft spots. Make vinegar brine 1 1/2 pounds Kirby or Persian cucumbers 4 garlic cloves, peeled and smashed 2 teaspoons dill seed 1/2 teaspoon red pepper flakes, optional 1 cup cider vinegar 1 cup water 1 1/2 tablespoons pickling salt or kosher salt Chef ’s knife
Prepare the jars: If you are planning to can your pickles for long-term storage, bring a large pot of water to a boil and sterilize the jars and their lids. If you are planning to make refrigerator pickles, simply washing the jars and lids is fine. Prepare the cucumbers: Wash and dry the cucumbers. Trim away the blossom end of the cucumber, which contains enzymes that can lead to limp pickles. Leave the pickles whole, cut them into spears, or slice them into coins, as preferred.

Add the spices to the jars: Divide the garlic, dill seed, and red pepper flakes (if using) between the pint jars: 2 smashed cloves, 1 teaspoon dill seed, and 1/4 teaspoon red pepper flakes per jar. Pack the pickles into the jars: Pack the pickles into the jars. Trim the ends if they stand more than 1/2 inch below the top of the jar. Pack them in as tightly as you can without smashing the cucumbers. Bring the pickling brine to a boil: Combine the vinegar, water, and salt in a small sauce pan over high heat. Bring to a rolling boil. Pour the brine over the pickles, filling each jar to within 1/2inch of the top. You might not use all the brine. Remove air bubbles: Gently tap the jars against the counter a few times to remove all the air bubbles. Top off with more pickling brine if necessary. Tighten the lids: Place the lids over the jars and screw on the rings until tight. (but not overly tight) Cool and refrigerate: Let the jars cool to room temperature. If you processed the jars, they can be stored on the shelf. If unprocessed, store the pickles in the fridge. The pickles will improve with flavor as they age — try to wait at least 48 hours before cracking them open. Storing canned pickles: Canned pickles will keep for at least a year on the shelf and for several weeks in the refrigerator once opened; refrigerator pickles will keep for several weeks.
