Letter from the Publisher Welcome to June! Summer is in full swing. Soccer and softball have started, many of us have dipped or dunked our bodies in the ocean, perhaps caught a fish or two. As I sit here and bask in the glory that is the beginning of summer, I am thinking ahead, planning cabin trips, fishing excursions, hikes and so much more. I’m trying to put together a list of things to do, rain and/or shine to experience all the amazing things Juneau, and Southeast Alaska has to offer. Beaches: One of my favorite things to do with or without kiddos is to go to the beach. There’s so many things to do at the beach including picnics, responsibly managed bonfires, fishing, beach combing, games and so much more. Personally, Eagle Beach is probably my favorite beach. It’s a gorgeous drive out the road, and the ocean and mountain backdrop is absolutely breathtaking. There’s lots of room to explore, and plenty of space to separate yourself from other
beach goers.
Welcome to Juneau! column on the wonderful eateries Juneau has to offer, I know I’ve missed mentioning some fabulous places and for that I apologize.
Eateries: Juneau offers so many choices and varieties of food it’s sometimes hard to decide where to take guests. I cannot leave out Little Hong Kong and Asiana Gardens in the valley for their great Mt. Roberts Tram: I like taking people up food and friendly service. If you’re headed or down the Tram as it offers a beautiful out the road, or even if you’re not; Chan’s bird’s eye view of downtown Juneau and Thai Kitchen is delicious and worth any Douglas. Depending on activity level, one amount of driving. I could write an entire can hike up and ride down or ride the tram up and hike the mountain down, or of course take it both directions. There’s a bunch of activities to do once up at the top like dining, shopping and a bunch of educational opportunities. Cabins: Depending on how good you are at planning ahead, cabin rentals are always a “rustic” way to experience Alaska. There are many different local cabins that can be rented with varying levels of accessibility. The Eagle Beach cabins are great for families as they are easy to walk. With most cabins in Southeast, you’ve got to plan ahead as they are rented out during the prime times of the year far in advanced. Hikes: There are so many places to explore by foot in Juneau and Southeast Alaska! Hiking or walking, whatever you prefer to call it is one of my favorite activities no matter the time of year or weather. Currently we are enjoying the Brotherhood Bridge trail, mostly because it’s very stroller friendly. For visitors and scenic opportunities I like to take people to the glacier which was previously mentioned or to the wetlands. If everyone is physically fit and desiring a longer hike, the ice caves are my favorite destination. Ferry Ride: We love to take the Alaska

State Ferry System to other Southeast Alaska Communities for the day or even a couple days. It’s a great way to explore Southeast and if you don’t have a boat it’s a great way to get on the water and see the marine life. Boats: For those that know me, know that if I could, I’d be on the water from sunup to sundown. I love the ocean, I love fishing, I love everything about being on the water. So if you have access to a boat, there’s endless beauty, wildlife and adventures to be had. Whale watching is something I will never get tired of, especially when the humpbacks are bubblenet or lunge feeding. It’s fun to see the sea lion haul out and hear them bark and flop into the ocean. I love to teach visitors about fishing, and watch someone reel up their first catch. If we have a larger group, it’s fun to drop people off on an island for a picnic. Tours: There are many options for tours to take visitors on, too many to list. I’d highly recommend a whale watching tour, and if you’re inclined to get up in the air, a helicopter or float plane tour is spectacular. There are many more things to do in this great state, but these are just some of my favorite things. CONTINUED FROM PAGE 8: The more right answer is probably “both” and “neither”…because people are more complicated than an either/or question and so are our living spaces. Our homes are in many ways a reflection of who we (and the people we live with) are, and when we choose to invite others into our home, it can be fairly revealing. We are forced to see ourselves through other’s eyes as they interpret so much about us from how our home simply appears. As the famous quote says, “How you do anything is how you do everything.” If this is true, than perhaps an unkempt home, and uncared for house, a neglected yard mean that you are the type of person who is careless with all manner of important areas of life? After all, a home is most people’s single largest financial investment of their life. You would think it would

be worth the time and attention to care for it as best as possible? A home is the place you and the people you care about spend the majority of their time; doesn’t that warrant making sure it supports an optimal lifestyle? I know that, even unintentionally perhaps, I make immediate judgment calls about a person when I walk into their home and I’m sure people do the same about me. So does my home accurately reflect who I see myself as? Look around your home and take a moment to really look at and honestly assess how you have either cared for or neglected it. Are there similar ways you either care for or neglect other areas of your life? What could you do differently to create a home environment that is a place that reflects the best of what you want your life to be? Are there similar assessments and

action you could take to improve those areas of your life that mirror the messiness of your home? This is an on-going process for me and what I’m finding is as I do things like the Clifton Strengths Assessment and am able to really be honest about my weaknesses I simply find opportunity. I also learn about my aptitudes and how to really use them to up-level my way of thinking and taking action. As I do the work on myself (mind, body, soul) it feeds my desire to be creating a home that does the same. As I really care for my home, it in turn feeds my desire and ability to be improving as a person. Doing the hard work, just a little all the time, means that you never have to be choosing between being messy or honest. You get to do both and neither! The goal is not perfection in either our homes or ourselves. The goal
is honest assessment and action toward growth.

Corn and fennel chowder (delicious with a topping of Dungeness crab) Serves 6 3 tablespoons olive oil 1 medium yellow onion, diced 1 medium fennel bulb, diced 2 celery stalks, diced 2 cloves garlic, minced Bunch of thyme sprigs 5 ears white corn, kernels removed 2 cups chicken stock 1 1/2 cups half and half Salt and pepper Dill flowers, optional

Umbelliferae family favorite Foeniculum Vulgare, this licorice flavored feathery bulb originated in India, Egypt and China, but was quickly popularized in Europe by the Greeks and Romans. Charlemagne very much loved fennel because of its healing properties and popularized its use in Europe. From increasing milk flow in nursing mothers to its reputation for weight loss and healing skin remedies. To me fresh fennel is as sweet as summer, and being so light and fragrant lends itself to many dishes, as it also grows quite nicely in our Pacific Northwest climates. It is one of
our oldest medicinal plants and culinary herbs used today around the world. This month I wanted to give you some of my favorite adaptions and recipes using fennel, my summer happy plant.
Herbed Polenta with Caramelized Fennel Bulb Serves 4 6 cups vegetable broth or water, as needed 2 cups organic, non-GMO polenta fine sea salt to taste 1 large fennel bulb 1Tsp of ghee or clarified butter 4 Tsp raw fennel seeds 1 Tsp pure organic maple syrup, or to taste 1/2 cup mixed herbs, such as dill, chives, parsley, lovage, chervil 1/2 cup Pecorino Romano cheese cold-pressed olive oil drizzle and herb flowers for garnish Heat the vegetable broth in a large saucepan until simmering. Slowly pour in the polenta in a steady stream, whisking all the while to prevent clumping. Add a few pinches of salt. Stir constantly for a couple minutes; then reduce the heat

and simmer, stirring every 5 minutes or so, for 30 to 45 minutes (read the label on your polenta for cooking time approximations). If the polenta becomes too thick, add more broth or water and whisk until smooth The polenta is cooked when you rub a small amount of it between your fingers and it is no longer gritty, but instead creamy and smooth. While the polenta is cooking, cut the fennel bulb into thin vertical slices (from the top to the base). Heat the ghee in a large skillet on medium-high heat. Working in batches, add the fennel slices to the skillet, making sure that they all come into contact with the surface of the skillet (not overlapping). Sprinkle with sea salt. Do not stir or move the fennel until it is golden on the bottom, 5 to 7 minutes. When all the pieces have browned, flip them onto the uncooked sides. When the underside has also browned, add a sprinkling of fennel seeds and the maple syrup, and let cook for 1 minute. Toss to coat, transfer the fennel to a plate. Season with more salt if needed. Add the chopped herbs and grated cheese to the polenta, and give it a final stir. Whisk in a little more broth or water
Heat a medium pan over medium heat. Add the olive oil, onion, fennel, celery, garlic and thyme. Season with salt and pepper. Cook until tender but not browned over medium heat, about 10 minutes. Add the corn kernels and stir. Add the chicken stock and half and half. Bring the liquid to a slight boil, reduce heat and cover the pan, simmer for 15 minutes or until all vegetables are tender. Season with salt and pepper to taste. Serve with dill or nasturtium optional.
Finocchietto Champagne Cocktail ¾ oz Don Julio blanco tequila ¾ oz Finocchietto liqueur (can also be made at home with 3 months planning see note) ¼ oz Fresh lime juice ¼ oz raw organic honey syrup Dash Orange bitters Top with Champagne and fresh fennel frond or lime twist Muddle fresh lime or lime juice, honey, liquors and bitters over ice, shake and strain into champagne flute and top with Champagne and garnish with fennel frond or lime twist.
