Letter from the Publisher Welcome to June! Summer is in full swing. Soccer and softball have started, many of us have dipped or dunked our bodies in the ocean, perhaps caught a fish or two. As I sit here and bask in the glory that is the beginning of summer, I am thinking ahead, planning cabin trips, fishing excursions, hikes and so much more. I am also planning for a visit from family who want to explore Juneau for a week. They are coming from California and bringing their four year old twin boys! I’m trying to put together a list of things to do, rain and/or shine so
that they can experience all the amazing things Juneau, and Southeast Alaska has to offer. Beaches: One of my favorite things to do with or without kiddos is to go to the beach. There’s so many things to do at the beach including picnics, responsibly managed bonfires, fishing, beach combing, games and so much more. Personally, Eagle Beach is probably my favorite beach. It’s a gorgeous drive out the road, and the ocean and mountain backdrop is absolutely breathtaking. There’s lots of room to explore, and plenty of space to separate yourself from

And of course, I cannot leave out Little Hong Kong and Asiana Gardens in the valley for their great food and friendly service. If you’re headed out the road, or even if you’re not; Chan’s Thai Kitchen is delicious and worth any amount of driving. I could write an entire column on the wonderful eateries Juneau has to offer, I know I’ve missed mentioning some fabulous places and for that I apologize. Mendenhall Glacier: The glacier offers many different activities for people of all ages and activity levels. There are several hikes, the most popular is a nice flat walk out to the Nugget Falls or there is a platformed nature walk where salmon can be seen spawning and sometimes bears fishing. There is a beautiful Visitor Center to check out the history and information about the glacier. Mt. Roberts Tram: I like taking people up or down the Tram as it offers a beautiful bird’s eye view of downtown Juneau and Douglas. .COM
Cabins: Depending on how good you are at planning ahead, cabin rentals are always a “rustic” way to experience Alaska. There are many different local cabins that can be rented with varying levels of accessibility. The Eagle Beach cabins are great for families as they are easy to walk. With most cabins in Southeast, you’ve got to plan ahead as they are rented out during the prime times of the year far in advanced. Hikes: There are so many places to explore by foot in Juneau and Southeast Alaska! Hiking or walking, whatever you prefer to call it is one of my favorite activities no matter the time of year or weather. Currently we are enjoying the Brotherhood Bridge trail, mostly because it’s very stroller friendly. For visitors and scenic opportunities I like to take people to the glacier which was previously mentioned or to the wetlands. If everyone is physically fit and desiring a longer hike, the ice caves are my favorite destination. Ferry Ride: We love to take the Alaska State Ferry System to
other Southeast Alaska Communities for the day or even a couple days. It’s a great way to explore Southeast and if you don’t have a boat it’s a great way to get on the water and see the marine life. Boats: For those that know me, know that if I could, I’d be on the water from sunup to sundown. I love the ocean, I love fishing, I love everything about being on the water. So if you have access to a boat, there’s endless beauty, wildlife and adventures to be had. Whale watching is something I will never get tired of, especially when the humpbacks are bubblenet feeding. It’s fun to see the sea lion haul out and hear them bark and flop into the ocean. I love to teach visitors about fishing, and watch someone reel up their first catch. If we have a larger group, it’s fun to drop people off on an island for a picnic. Tours: There are many options for tours to take visitors on, too many to list. I’d highly recommend a whale watching tour, and if you’re inclined to get up in the air, a helicopter or float plane tour is spectacular. There are many more things to do in this great state, but these are just some of my favorite things. Life is a series of opportunities to learn to do better. Every month, I try to write an article with the hope that it will be of value to those of you trying to do the same as I, create a home that supports health and happiness. So, it’s sometimes very frustrating when you are trying to do all the “right” things, only to find out that “right” has changed! Such is the case with an article I wrote around this time last year about the potential health hazards of CFL light bulbs. In that article, I told you to prepare for the industry shift to LED. CONTINUED: Let’s get the most controversial part of this subject out of the way first. nnEMF. This is an area of great debate. While there are some international standards for recommended limits on levels of exposure to nnEMF, the United States has no formal federal regulations and only a handful of states have instituted their own standards. On one side of the argument are experts and government agencies tasked with the job of defining risk. They argue that there just is not enough research conclusively showing that nnEMF exposure causes significant health concerns (with the exception of childhood leukemia) to warrant strict regulation. On the other side, there is a growing number of industry a n d
international authority on the the subject. His interviews are certainly worth listening to for more information. Light is critical to energy production in living organisms, including humans – right down to the cellular level (our mitochondria). Mitochondria are generally recognized as the “power house of the cell” or the part of each cell that is responsible, in gross terms, for converting food molecules into a form of energy that each individual cell of the body can use for energy. That usable form is called ATP. Without it, the cells of the body literally can not function.

If like me, electromagnetism is not your area of expertise, it can be daunting to read through all of the conflicting reports. Mitochondria are extremely fascinating, because while present in every single cell of our body, they have a DNA different from the rest of the cell they are housed in. The most current hypothesis is that mitochondria are not even “human”. Wow…but that’s a whole other topic. What is important to know is that a light absorbing molecule is the final sequence of this energy production by the mitochondria. We literally need the long wavelengths of light (red and near-infrared) used in this process in order to support mitochondrial function. The short wavelengths of red and near-infrared are also shown to stimulate healing in the body. Conversely, other short wavelengths, such as the blue, actually create damage. The short blue light wavelengths of LED lights coupled with the fact they are missing the near-infrared lights makes exposure to LED very disruptive, causes cell stress, suppresses melatonin production and inhibits the ability of the body to heal. Basically, LED lights can only avoid flicker when fully on. In order to dim them, they have to alternate between fully on and off. While this can happen so quickly that in perhaps 90% of the population the eye often does not perceive the flicker, other cells of the body do. This bioactive flicker causes disruption to many areas of the body’s functioning. The good news is that not all LED lights are manufactured the same. There are some that are a better choice than others. You can not simply switch to an LED that appears less blue. The warmer color can

be masked by using higher out puts of yellow or orange without adding in the red spectrum or decreasing the blue. So look for manufacturers who block the wavelengths known to be bioactively harmful. I just started using the nightlights from lowbluelights.com. So far it has made a noticeable difference in my children’s ability to fall asleep more easily. I still go in and actually turn off the light once they are asleep. This is because, as I wrote in a previous article, it is critical to have absolutely no light in your room while sleeping. Other tips to choosing better lighting for your health would be to only have incandescent or halogen lights on in the evening. Limit screen time as long before bed as possible, but at least 1 hour prior retiring. Special blue blocking glasses and screen covers can be purchased as well as many newer screen devices have settings for lowering the blue light emission. Light is something you have some measure of authority over. Controlling the quality and quantity of light you get is a relatively simple action you can take that may just have complex impacts toward improving the impact your home has on your health. I encourage you to start studying the impacts of LED on health at a much deeper level than this article…..and stay tuned – As I learn more, I’ll be sure to share information on lighting and resources for you to incorporate better light choices. Seasoning tips to help you savor a great grilling (BPT) - Flowers are blooming, days are getting longer and temperatures are warmer - you can probably recognize all the signs that grilling season has arrived! But do you know how to best season all the fresh foods you'll grill this summer? Sure, a dash of salt and pepper may be all you n e e d for some premium cuts of meat, but creative seasoning with organic spices and herbs can enhance the taste of virtually everything you grill. What's more, the clean simplicity of organic

seasonings perfectly complements the natural healthfulness of grilling. The organic seasoning experts at Frontier Co-op offer some tips for using seasonings to achieve greater grilling this spring and summer: Dry or wet? That's the rub Two of the most common ways to add seasonings to grilled food is through the use of a rub or marinade. What's the difference between the two? It's not just that one is dry and the other wet, because some rubs are wet, too. Generally, rubs are mixtures of dry spices that you rub on food to add flavor before cooking. They're good for high-fat foods like meat, and often contain salt and sugar, which also promotes the formation of a crust on the food when you grill it. Usually, after applying a rub you'll want to let the food sit an hour or two before grilling it. Marinades are typically liquid seasoned with spices to add flavor to food and sometimes tenderize it. You place the food in the liquid and allow it to sit for

a set period of time - a few hours to overnight. When you're ready to cook, remove the food from the marinade and use a brush or rubber spatula to remove excess marinade before placing the food on the grill. Marinades are great for vegetables and meat, poultry or fish that tend to be dry.

Of course, seasonings can add flavor to food in multiple ways. For example, if you're soaking vegetables or fruit before grilling, you can add herbs and spices to the soaking water. In addition to absorbing liquid, the food will also soak up the great flavor of the seasonings. Some foods benefit from basting during the grilling process. You can enhance the flavor of the food by adding seasonings to the butter or liquid you use for basting. If you use foil packets to steam fish, veggies or fruit on the grill, you can add seasonings directly atop the food before folding the foil, or add them to a bit of liquid at the base of the packet.
Some food/seasoning pairings are obvious, like apples and cinnamon or fish and lemon pepper. However, a wide range of seasonings can elevate the flavor of a variety of foods. Here are a few creative pairings to try this summer grilling season:

4 easy ways to make your yard an outdoor oasis this summer
(BPT) - Summer is the season when your backyard takes center stage. As warm weather arrives, it’s time to head outdoors and create a beautiful and lush outdoor space that you can enjoy all season long. “It’s no secret that backyards are the best place to spend time with family and friends in the summer months,” says Chris Lambton, yard and garden expert for Fiskars. “Using the right tools to take care of your grass, trees, plants and shrubs will freshen the look of your outdoor space and create a yard that feels like an oasis for you and your guests.” Lambton offers his tips and tools to help your yard flourish this season:
Maintain proper lawn height The optimal grass height for a healthy lawn changes with the time of year. Cut grass shorter in the spring and fall and keep it longer in summer so it won’t dry out. Use a reel mower that allows you to easily adjust the cut height for the season. In addition to making your lawn look its best, pushing a reel mower provides an opportunity for exercise and fresh air. Encourage new plant growth Pruning and deadheading are necessary for plant health as they encourage new growth. Pruning is great for keeping tall plants within bounds, stimulating branch growth and blooms and tightening up plants that get lanky throughout the
season, including perennials and shrubs. Hand shears, like the Fiskars PowerGear2 Pruner, cut through stems and light branches and are perfect for quick and easy maintenance projects around the yard. Deadheading can be done year-round when a flowering plant fades using a tool like a pruning snip. Know when to water When watering potted plants, the goal is to create soil that’s damp but not soggy. Depending on the size of the pot, water your plants one to two times a day using a thumb control watering nozzle, which easily adjusts water flow with one touch. Be sure to pair your nozzle with a hose that stands up to the season’s heat and sun, like the durable Flexogen Super Duty Hose. season is in full swing and for some reason I always equate summertime to lasagna, maybe it’s because I spend so much time in the summer at the ball field that an awesome light summer vegetable filled casserole dish that creates hearty leftovers is exactly what my family needs. I also love squash, from blossoms to fruit, they are amazing, packed with all kinds of nutrients. Recent studies have come out touting that all we knew about cheese and cholesterol and heart health is wrong and that a good full fat grass fed cheese products like ricotta is actually good for you, just warms my heart! Ingredients
oats (with four cheeses!) for a quick weeknight meal! Vegetarian & Gluten Free, B makes four boats. 5 ounces fresh sauteed spinach with butter, garlic and salt(est 1 bunch fresh spinach) 4 large zucchini
½ teaspoon salt
Instructions
1/8 teaspoon pepper
Preheat oven to 400 degrees F.
2 cups whole milk organic ricotta cheese 1 ½ cups grated mozzarella cheese, divided ½ cup grated Parmesan cheese
2 cups of your favorite marinara sauce or a quick saute and blend of marinara ingredients, I like to make in bulk and can it for later use.
Slice each zucchini in half lengthwise. Use a spoon to scrape out the insides of the zucchini, forming a well for the filling. Place zucchini in a baking dish. Place ricotta cheese, 1 cup of the mozzarella, the Parmesan, salt, and pepper in a large bowl and stir to combine. Stir in the sauteed spinach. Spoon the filling into the zucchini. Top with marinara sauce and the remaining ½ cup mozzarella cheese. Cover the baking dish with foil and bake for 30 minutes. Uncover and bake 5 minutes more, until cheese is melted and zucchini are tender. Serve
