Letter from the Publisher

Welcome to March! Happy 7th Birthday to us! This month marks our 84th edition of the magazine and I couldn’t be more proud of what this publication has become. Thank you so much to our loyal supporters, advertisers and readers, we wouldn’t be where we are without you!

March also marks one of my favorite times of year. The days are longer, signs of spring are making an appearance, spring skiing is excellent (as long as we have snow) and group sports are in full swing. It’s no secret that I love soccer, not just for the sport but also for the social and therapeutic aspect of it. I’ve talked about the winter blues before, but I also can find myself in a slump any time of year if I’m secluded in my home for too long or don’t get out and see the bustling community around me. Group sports or activities are beneficial in many ways both mental and physical and I wanted to share what I get out of them with you. They get you out of the house. Just the act of getting ready and stepping out the door can add life back to the dull moments, not to mention it’s a reminder that there is much going on outside your front door. When I

put on my soccer gear, I start to think about the sport, but also the people I am going to see and the information that I will share with them. Then I get in my car and I enjoy turning up the music, and inspecting my surroundings as I make my short drive to the Field House. I find comfort in seeing other people in vehicles driving to or from their destinations and I relish the idea that life is happening around me. Even if you don’t have a designated sport or group activity, stepping out of your comfort zone is usually a good thing. It isn’t always comfortable (hence leaving the “comfort” zone) but I feel like it stimulates new parts of your body and brain and in the end, enhances your life and can lead to new exciting adventures. There are group fitness classes, sports, book groups, parent groups, hiking groups, and educational classes around the community, some of which are free! And disclaimer, sometimes

.COM

Groups & Sports certain group activities can be too far out of your comfort zone. I’ve learned from experience that I am not good at group classes that have any type of synchronized actions, like Zumba. Love the idea of it, but after a number of classes, it’s just not for me. And that’s ok too. It took doing something new and different to discover my likes and also my dislikes. Group activities have an obvious social aspect to them. See others, sharing experiences, and communicating face to face always helps me and pulls me out of the enclosed “box” that my life becomes sometimes. I do suffer from a little bit of social anxiety from time to time, but I’ve learned that if you’re honest with yourself and others; most people are kind, patient and understanding. And with that said, being face to face with someone that doesn’t share those qualities can also be a good experience. I’ve been in situations where group or team members aren’t getting along or someone has a poor

attitude and it’s a good life skill to know how to deal with or diffuse a situation, or if you’re not comfortable, how to excuse yourself from a situation. With the social aspect of group activities, friendships often form and this can lead to other activities and opportunities. I have gained many friendships over the years that started on a sports team, organizational board, or just getting together with a group of friends and their friends. And if you feel like staying in, try a new family activity. My husband and I started doing workout videos together and it has been a humbling, entertaining change to our routine. It’s fun to try different exercises, involve our toddler who likes to be in the action and also laugh together at how out of shape we truly are. It’s nice to have someone close to you that can hold you accountable and be encouraging. So get out there Southeast Alaska! Find a group, a sport, a class and see how it’s benefits your life! BEWARE THE IDES OF MARCH By Dr. Summer Beattie, ND

Whether or not you are familiar with the works of Shakespeare you have likely heard or even uttered the infamous phrase, “Beware the Ides of March” as a warning that something ominous was sure to happen on that day; perpetuating the idea that the date itself is destined to be ill-fated. While historical experts argue the accuracy of Shakespeare’s rendition of the fall of Caesar, one thing we can be sure of - March 15th did prove deadly for Roman Emperor Julius Caesar in 44 B.C. when he ignored the prophecy of a soothsayer and other warnings that he was in grave danger. Throughout history epic tragedies have occurred on March 15. However, there is no reason to think that the day itself holds any innate peril. The

Roman

calendar

originally

consisted of just 10 months, with Spring as the first of the year, starting in March. This early calendar was based on the lunar cycle which i s roughly 29.5 days with the middle of the month and rise of the full moon being called the Ides. The Latin root of the word draws from the meaning to divide, hence the Ides being the middle of the month. Emperor Julius Caesar was actually responsible for moving the Roman Empire to a 12 month calendar that the current Gregorian calendar, we are all familiar with, was based on. During ancient Roman times, the Ides of March was a

Twenty dollar bill. The champion of the common man, and only President to pay off the national debt, his legacy and birthday serve as a reminder to “Beware the Ides of March” and be ready to settle our debts. I find it ironically fitting that this season of fiscal reckoning immediately precedes the deadline to file federal income taxes.

deadline for settling debts. So if we want to associate superstitious meaning to the date, perhaps it is no coincidence that the 7th President of the United States, Andrew Jackson, was born on March 15, 1767 and his portrait graces the

Those who know me best, know that extraordinary skill at budgeting and managing money well is not my area of expertise…. With age and experience comes a little bit of wisdom I would like to think. The other thing that comes with age is the glimpses of retirement in the ever closer distant future. Bear with me as I ramble through some musings on this topic. CNBC reported last summer that a survey showed that half of all Americans have absolutely no savings for retirement. None. That same survey said that 34 % have no savings at all, even for an emergency and 35% only have a few hundred dollars set aside. That means nearly 70% of all Americans are at risk of financial collapse in the face of an emergency. According to expert Suzie Orman, the historical and current economic climate, the risk of illness or injury leaving you out of work or of some other natural or political disaster leaving you without steady income means you should have closer to one year of savings for an emergency. Then there is retirement. You have to have a regular income from savings and investments to replace your current employment income and have enough of it. How much is enough? According to Forbes, you can expect to only be able to draw a maximum of 4.5% per year from of your retirement accounts if you do not want to outlive your savings. That means if you have $500,000 saved you’ll need to live off of roughly $20,000+/ year. This may be enough in some parts of the country.

CONTINUED: If you live in the greater Seattle area, this past years’ data put the low income cut off at $72,000/year for a family of four. DataUSA put the median male income for Juneau, Alaska at just over $60,000/year for men and just over $44,000/year women. This means the average woman in Juneau would need to have over 1 million dollars in savings/retirement investments to continue living there when they leave the work force. Consensus is that it will require about 75%-80% of your current income to maintain your current standard of living when you retire – and perhaps 100% if you are still paying a mortgage! So is home ownership the most important retirement investment? Surprisingly, it depends! The Right Kind of Neighbors By Courtney Wendel When looking at places to rent and places to buy, most people take a look around and see what their neighborly status would be. Some communities seem to attract the younger crowd, and other communities are geared more towards the retired and empty-nesters. When I think of what it means to be ‘the right kind of neighbor’, I keep playing the scenes from the new Baywatch movie where anytime someone says ‘you people’, the characters act offended. “What do you mean ‘you people?!’” I feel like wanting the ‘right kind of neighbor’ is like saying we should all try to be ‘normal’. It’s a fallacy that

we all know doesn’t actually exist, but is a nice thought. It’s a social standard lie we tell ourselves to either motivate us, or to help us feel like we made it in life. But that’s really all it is. Let’s start with my adorable Nerdy Neighbors. They are your classic gamers. Because I have an end unit, they are the only condo that I share a wall with. Our biggest bedrooms share a common wall, and that is their gaming room on their side. I would never say that they are loud, but because our condos were built “back in the day”, our walls aren’t exactly the most up to date on their soundproofing. I also go to bed quite a bit before them, so I would hear them talking while they gamed. It was so funny, I would mostly just hear the general sound of people talking, but every now and then I would be able to catch words and sentences. One time I heard him exclaim “oh no!! I killed you! I’m so sorry!” Too funny. Death by friendly fire is always a bummer. So I sent him a funny text about it and then I heard him kind of yell at my wall “sorry!” in a sheepish way. Because I am such a light

sleeper, I ended up moving out of my biggest bedroom and into my smallest bedroom because that is on the outside corner and the quietest room. In no way am I butthurt about it at all. If anything, being in the smallest room has helped me to cull my personal stuff and keep it under control. The Pastor stayed in the biggest room when he was here because he, one, could sleep through literally anything, and two, he snored. Switching rooms helped so the Pastor didn’t share a bedroom wall with my other two rooms, and also that our Nerdy Neighbors could literally be as loud as they wanted and it affected no one. Win-win. Now my other housemate stays in that room and he stays awake a lot later than I do reading, and he also can sleep through quite a bit. My Nerdy Neighbors don’t put out seasonal decorations or flowers, and they also don’t have stuff out front of their condo such as a grill or children’s toys. They don’t have clutter but they also don’t do anything to increase curb appeal. They don’t weed the little dirt area for flowers by their door, and they don’t really shovel snow. But as an introverted couple, they are friendly with their friends and guarded towards everyone else. So in the summer I weed their area and keep the chickweed under control, and I put flower pots in front of their condo so they have a splash of color and you know someone actually lives there from the outside. I shovel the snow in front of their door and keep the sidewalk from their door past mine to our covered parking spots clear. Ha ha, not like we have had a cray amount of snow anyways. *cries on the inside* So, taking all of that into account, I absolutely adore my Nerdy Neighbors. I know they like apple butter, so sometimes I leave a jar out front of their door as little offerings of love. I recently got a package from Amazon, and I got a text saying that they saw it delivered and it was raining sideways so they grabbed it to keep it from getting wet. I was so thankful they did that, as it was a book and sitting in the rain for hours could have been pretty disastrous. That was so thoughtful of them to grab it for me and keep it safe. For us, we work out perfectly. When we knew another neighbor was on vacation, we grabbed a big box that got delivered while they were gone and held it safe on our kitchen table until they got back. Lest any evil mail thieves come trolling our porches. Are Nerdy Neighbors the ‘right kind of neighbors’ because they keep to themselves, don’t have clutter out front, don’t have guests over or house parties, and generally are low maintenance neighbors? Or not, because they don’t contribute to the community living, don’t

12

make their condo look nice in summer out front, can be loud late at night gaming, and have two small dogs that bark sometimes? At a condo meeting when their landlord was there, I made a point to tell him how much I adore them and I hope they never leave. Now, on to our neighbors Bird Guy, his sweet wife (Seriously, she’s like Disney princess sweet. I wouldn’t be surprised if birds actually landed on her fingers and sang to her.). Bird Guy and his wife moved here for jobs from down south. Both Bird Guy and his wife have biology degrees and both have jobs using them (jealous). They are both well-educated and well-spoken, and have come to condo meetings to be a little involved in what was going on. As a landlord, I would for sure want to rent to them, because what isn’t attractive about a college educated married couple with career jobs? Very recently, they added to their family with a little bundle of joy. Or, as Bird Guy said one time, ‘a little drunk housemate who cries a lot, vomits both on herself and others, poos herself often, and is very focused on his wife’s breasts’. Man, I laughed so hard. Sounds like all the joys of parenting. During the late summer when I was in full jam making swing, I had them come over and grab a jar of just sealed jam, and in the most epic neighbor goals Princess brought over homemade pumpkin bread hot out of their oven. When their new baby came home, I had them pick a night of the week they wanted me to bring over supper to help out with silly things like making food. Knowing Princess doesn’t really do red meat, I made them some salmon and veggies with rice. She loves salmon. She gets whatever she wants. When I got my caribou this fall, I had Bird Guy come over and grab a steak before it hit the freezer. When I was butchering my buck I had them come over and pick out some backstrap and tenderloin for Christmas. When my buck’s head was out in the front yard chillin in the snow, Bird Guy snuck over and put Christmas lights in his antlers and wrote ‘merry Christmas’ in the snow. We personally thought we should have won the holiday decoration competition. I just about died laughing when I saw that in the front yard. Princess said that if I got another deer and didn’t have room in my chest freezer, they had plenty of room in theirs and would happily store some meat for me. I said I would pay freezer rent in fish. She smiled. Continued on Page 14

Now, knowing how thin our walls are, I have to wonder how much of their new baby’s cries are heard by other condos. IN NO WAY am I saying having babies living in a condo is bad. But if I can hear Nerdy Neighbors gaming, I’m pretty sure someone can probably hear baby crying. Does this make them now less awesome neighbors for the next however many years until baby grows up? Like Nerdy Neighbors, they don’t really contribute to community living by raking leaves or stuff, and like Nerdy Neighbors they are very low maintenance and don’t really have people over. So are Bird Guy, Princess, and baby the ‘right kind of neighbors’? Like my Nerdy Neighbors, I hope Bird Guy and Princess never leave. If late-at-night-gamers aren’t the right kind of neighbors, are married college graduates with a new baby? If crying babies aren’t the right kind of neighbors, are neighbors who don’t want to hear a single peep through the walls past 10pm the right kind of neighbors? If neighbors who keep to themselves and just kind of do their own thing aren’t the right kind of neighbors, are neighbors who want to be involved with EVERYONE and expect everyone to have the same amount of free time to volunteer the right kind of neighbors? Is the neighbor who works a normal eight to five, Monday through Friday better than the neighbor who works shift work savings lives and sometimes needs it quiet to sleep during the day but is up all

night? Is the person who has been in a multi-year renovation process involving power tools and contractors worse than the person who hasn’t updated their condo since it was built? I honestly think it would be weird if we lived in a community where everyone knows everyone and knows what everyone was up to. I don’t want to feel bad for not dropping jam or ungulate pieces off at every neighbor’s door because someone might feel slighted. I don’t want everyone to be quiet and keep to themselves, but I also don’t want everyone to come say hi when they see me out in the yard. I don’t want everyone to be cat people, but if everyone had a dog that would be a lot of doggy paws on the yard. There is an older gentleman who has a hard time verbally communicating but always walks towards us to give my dog Kiska pets and she runs up to him and sings for him, and there are people who express no interest in Kiska and she just ignores them. The neighborhood kids who have Cooper love to throw the ball for Kiska (Cooper isn’t really a ball dog, he is more of a let’s play chase dog), but if everyone had children could you imagine the number of bikes and toys that would be in front of our condos? I mean, unless you are making or selling drugs out of your house, hoarding or abusing animals, causing structural concerns and not fixing problems, or having no regard for the safety and concerns for others, I don’t really think there is a ‘wrong kind of neighbor’. I think it takes all kinds of people to make a community.

Spring Onion and Morel Risotto

Recipe

UAF Cooperative Extension Morel Resource Page:

www.uaf.edu/files/ces/publications-db/ catalog/hec/FNH-00020.pdf And for a little sweet treat try my favorite french baked good (next to hot brioche) and my favorite nuts, pistachios and almonds mix in these little golden bites from heaven! This traditional French pastry got its name being baked in tiny golden molds that resembled bars of gold, the finance district patrons liked a two-bite not so messy item they could eat in the business dress suit without worry of a mess. It is a batter that must rest for an hour so plan for that in your day. I just think they are a wonderful and easy recipe to learn and share with friends.

March means springtime and growth, and is one of my favorite times of year when I can start planning my garden and looking for shoots coming out. It’s a time of celebration, new life, spring king salmon and longer days. In the plant kingdom to me this means spring onions and mushrooms! I do admit I get a little excited about both, seeing new shoots, harvesting and planning for larger garden projects, but little signs of life poking thru the snow and mud are a welcomed event after winter. I love combining them with one of my favorite dishes; Risotto, traditionally made with the starchy arborio rice, and stirred till creamy perfection. Morels can be found in Southeast, maybe more frequently as our seasons warm with the climate, but I do know many who venture to the main road system into Haines and Canada to harvest locally. They are abundant after wildfires in the spring. Mushroom hunting is by far my favorite harvest and way to explore the forest and little signs of life emerging in spring. Check out the Cooperative Extension link at the bottom of the page for more info, and always cook morels, they are not to be eaten or tasted raw… a very quick wash and pat dry before cooking is advisable. They will soak up all the goodness of risotto and add incredible flavor and texture as well as nutrition

much needed in spring, such as vitamin D. When I was cooking professionally in Chicago we had a risotto dish on the menu, made in small batches to order, I built up some nice forearms stirring risotto, it’s a labor of love but so worth the reward. This dish would be amazing with a little fresh grilled king if you get one early on!

Spring Onion and Morel Risotto 2 tablespoons toasted sesame oil 1 cup pearl barley, organic 1/2 cup arborio or brown short-grain rice, organic 3 cups vegetable broth, warmed (very easy to make while you are preparing the vegetables, take all the scraps, ends, skins and a few mushroom stems and cover with cold water and bring to a simmer and strain) 1 cup morel mushrooms, split lengthwise 1 cup minced sweet onion ½ cup of spring onions, and about 3” of 1/2 cup peeled and grated carrots 6-8 oz. bottle-conditioned amber ale 1/4 cup minced parsley 1/4 cup minced celery 1/3 cup grated Parmesan or Asiago cheese (optional)

Toast the pearl barley in a deep stock pot fitted with a lid, (I love my cast iron pot for this) along with the sesame oil, stirring over medium heat, about 4-5 minutes. Barley should be golden and aromatic. Add arborio rice and stir well to coat with oil, then add broth. (Caution: stock will spatter and steam, so use a long-handled spoon). Cover, reduce heat to low and let simmer 20 minutes. Remove cover and stir. Add onion, carrots, mushrooms and enough ale to let it be easily stirred. Simmer uncovered, stirring occasionally until liquid is absorbed, about 15-20 minutes. Taste the grains. I often do my stock additions in three batches, with constant stirring to get the desired consistency, you want the rice to slowly absorb the liquid and release its starch to make creamy. If a softer texture is desired, add 2-3 more ounces ale and simmer longer. Stir in parsley, celery and if desired, cheese. Stir well, remove from heat and cover. Let sit 10 minutes, stir again, and season to taste with kosher or sea salt, pepper and a teaspoon of lemon juice or your favorite vinegar to brighten the flavors. (I love sherry vinegar and mushrooms) Garnish with a touch of fresh parsley, thyme, cheese or sautéed onion and mushroom.

Ingredients 8 tbsp. unsalted butter, plus more for pans 1⁄2 cup flour, plus more for pans 1⁄2 cup sugar 1⁄2 cup light brown sugar 1⁄2 tsp. kosher salt 4 egg whites 1⁄2 cup finely ground pistachios, plus 1⁄2 cup finely chopped 2 tbsp. finely ground almonds 1 tsp. baking powder Instructions Grease and flour 1 1⁄2”-round financier molds or mini-muffin pans; set aside. Heat butter in a 2-qt. saucepan over medium heat; cook, without stirring, until butter begins to brown, about 5 minutes. Pour through a fine strainer into a bowl; cool. Whisk sugars, salt, and egg whites in a bowl until smooth. Add flour, ground pistachios, almonds, and baking powder; stir until combined. Add browned butter; stir until smooth. Refrigerate for 1 hour. Heat oven to 350°. Pour about 1 tsp. batter into each mold; sprinkle with chopped pistachios, and bake until golden brown, about 16 minutes. From my spring table to yours, Enjoy!
