New Additions!

W

elcome to May! May, the month where we see our first potential sunburns and sold-out aisles of hotdog buns. May is also the month where I look forward to gardening, fishing, softball and really kicking it into gear. This year my May will be a little different. I am excited to announce to the readers of Southeast Living Magazine that my family is expanding by one coming this August. Instead of much fishing, I am swimming at the pool and picking out a backpack that will one day soon hold a little one. We are so excited to welcome our new addition; it will be fun to have a little helper or snoozer around the office to keep me on my toes. Speaking of new additions, we recently launched our new, redesigned website for Southeast Living Magazine. We updated our look and

hopefully made accessing articles and content easier and more user friendly for readers. We are still in the overhauling process of upgrading our gallery page, which will allow viewers an easier way to access and share our photos. This

revamp process has been inspiring in other areas of the magazine as well. We are constantly looking for ways to improve our product and help our writers and advertisers expand their business through ours. As an example, we spent time finding new distribution locations this month, and deploying more of our large floor stands.

Theses newly designed stands hold our current issues, two previous back issues and the monthly Powell Tab. We are always looking for community events to attend and photograph so if you have any suggestions, please send them our way. Last month we attended the Juneau Skating Recital and this month we are excited to attend the Annual Maritime Festival and various upcoming sporting events that are starting to take place. love HGTV. My husband thinks it gives me all kinds of terrible ideas - as does Pinterest. Lucky for him, until recently I had been working far too many hours (all while trying to fit in quality and quantity time with two little ones) to do much more than watch a show while nursing, or pin an idea. We have been in our current home for about three years, and I’ve written before about how we were trying to slowly bring it up to date; a feat almost impossible to really do efficiently when you have little ones in the house. We had decided that it was finally time to “get serious” and finish the projects we had started and start the ones that we had not yet begun…. and that was when I realized this was going to be A LOT of work! Not because there is really that much to do, but because deciding work needs to be done is all we agreed on. We can not find common ground on what exactly should be done, what not to do, what

ccording to Remodeling Magazine, the Pacific Region, which encompasses Alaska, California, Hawaii, Oregon and Washington, has the highest cost to value ratio (88%) when it comes to recouping remodeling costs. As the saying goes, kitchens sell homes, and remodeled kitchens continue to be one of the best investments you can make in your house. A kitchen remodel is one of the most costly home renovations, so where should you spend your money? First of all, replace old appliances with new energy-efficient models. They are better for the environment and will reduce your energy bills. It is also beneficial to purchase a matching suite of stainless

steel appliances. Using one brand, style and finish throughout the kitchen will provide a cohesive look. Stainless steel appliances have become very popular in the past decade and are available at nearly every price point. Even entry-level buyers expect to see them in an updated kitchen. Replace ceramic tile and laminate counter tops with solid-surface or natural stone counter tops. Corian, granite and quartz are durable, stain and heat resistant, and will appeal to a wide variety of buyers. Install counter tops in natural or neutral colors for maximum resale value. If your kitchen has an island or peninsula, consider installing a larger counter top with overhang so that bar stools can be tucked underneath for additional seating.

entryway. Wrapping posts and beams with the same pvc, vinyl, or cedar can drastically upgrade a covered entrance. What if there is not a covered entrance? Adding a covered entrance is a great way to update a home, especially in rainy Southeast Alaska where it makes a tremendous difference. When adding a cover it’s a great opportunity to add details that tie into the rest of the exterior finish or accent the entryway even further. Adding a covered entrance that is timber framed or post and beam can compliment a home’s exterior appeal greatly. Updating and matching lighting fixtures, house numbers and other exterior details can add to the charm of a home. I have added chandelier fixtures to a couple of covered entries which adds a dramatic effect. Adding an open but covered entryway to the front of a home not only updates and upgrades the home, it also adds some comfort by getting a homeowner and guests out of the rain and snow quicker. In a covered entryway, it’s just as important to fix or update the materials below your feet. Concrete is an old solid standby and adding some color and a stamp pattern to new concrete is a very good way to create a durable, long lasting, and attractive entryway. Tile and

decking can also be added on the floor of a covered entryway to enhance the space. Siding, Soffits, Fascia On the market today are more options for siding than ever. Each material brings its own look and mixing materials can make an ordinary house look fantastic or a dreary house look dreamy. When replacing the siding of a home keep in mind a couple of weatherization items that will add efficiency, comfort, and durability to a home.

Addressing these items in an exterior remodel can add comfort, durability, as well as curb appeal. I will follow up next month with even more items for the exterior of the home including accents, columns, decks, roofs, and additions. SAUCES, SIDES AND SOLILOQUIES I love rice as a side dish to salmon, plain, simple white, black and most of the time short-grain brown rice is perfect with salmon. I prefer mine in a pressure cooker 2:1 ratio water:rice, bring up to pressure, cook for 10 minutes, turn off heat, let rest for 10 minutes and fluff with fork and tiny bit of coconut oil. SIRACHA LIME CREMA SAUCE 1 cup Greek or strained plain organic whole milk yogurt 2 cloves garlic, minced 1 tblsp fresh lime juice 1 ½ tsp siracha ½ tsp soy sauce ½ tsp fresh ground pepper 1 tblsp honey (mixes better if warmed slightly) Mix all ingredients in a bowl until smooth, let sit twenty minutes and enjoy!

othing in Southeast beats the beginning of the spring salmon run, it’s the proverbial start of summer in my mind. My first job in Juneau was as a Fish Tech with Fish and Game, complete with state issued lawn chair, mini van and binoculars, my tough assignment was to spend half the season out at False Outer Point and in Auke Bay collecting salmon scales (for age) and tagged salmon heads for data. It was a glorious summer spent watching the drama unfold on the rocks, it was a great introduction to the community and to meet lots of friends that I still cherish today. And trust me while

It will resemble a cut of fish referred to as a steak. This is butterfly fillet and it is a great way to grill fish evenly, unlike cooking a full side fillet of salmon where the thinner tail section always cooks first.

I wanted to share with you my favorite way to cook a salmon fillet... the Butterfly!

If you have friends and family back East looking for Alaskan seafood, have them check out Otolith Seafoods!

Fillet Salmon: (there are a few ways, I”m not sold on one particular way here) pull pin bones with needle nose pliers (yes please do this! I know it’s a pain but so well worth it in the end ). With the grain of the fillet, cut each 2 inch wide portion lengthwise down its center without cutting through the skin. Make a second 2 inch cut but cut all the way through the skin this time. Continue this method until the end of the fillet. They will be different sizes, but of the same thickness.

boating is a blast, there are so many opportunities to catch salmon along the Juneau road system it’s really incredible as most places I’ve been in Southeast require a skiff to get just about anywhere worth a good cast but in Juneau there are dozens of places that you can drive to. I guess you might expect that with over 2700 miles of city to roam and over 500 miles of water/shoreline.

¼ cup french ground mustard (like Mille or Grey Poupon) ½ cup Mayonaise (or plain yogurt if looking to lighten) ½ tsp pepper or to taste

Mix in bowl till smooth, let sit twenty minutes and enjoy! SIMPLE SALMON GLAZE 2 Tblsp Alaskan Amber reduction (start with ¼ cup and reduce on medium heat till in half ) 2 Tblsp melted butter 2 Tblsp brown sugar 2 cloves garlic, minced 1 tsp fresh lemon juice 2 tsp shoyu or soy sauce ½ tsp fresh grated ginger 2 tsp minced green onions salt pepper to taste Reduce beer in saucepan on medium heat until volume has decreased by half, skim off any foam, mix remaining ingredients and you can baste on fish as finishing glaze or marinate overnight and my favorite do both!
