Letter from the Publisher Hello May! It’s finally that time where we are spending more of our time outdoors. There are a couple signs of spring in our household that I’m sure are common in yours too, so please take a moment to relish or grovel with me. Window Cleaning: by the time spring rolls around, our house windows are filthy. Tron, our cat is usually outside pawing the windows to get our attention to be let inside and our toddler, Ari is usually on the other side, face pressed against the glass, wanting to get out. When the sun finally shows up and shines through our windows, boy do we see the dirt, dust, finger and paw prints, forehead and nose marks and it’s a clear sign that it’s time to clean those windows! I grew up using Windex but I’ve heard of vinegar concoctions that do wonders

and are nontoxic and better for the environment which we will be trying this year.

Yard work: I know I’ve talked about

this before but I love yard work on a rainless day! Thatching, raking, planting, water, mowing… you name it, it’s an enjoyable spring and summer time activity. Foraging for wild edibles. I had a good friend and roommate who’d bring home wild fiddleheads, spruce tips, mushrooms, and make a mean stir fry. I am going to try and be adventurous and forage when the timing is appropriate for said plants and fungi and see what I come up with. SUNLIGHT Spring has finally arrived and in Alaska that means not just warmer days, but longer more light filled days! Yeah! I am a huge fan of more sunshine! It’s easy to take the rising of the sun and its presence in our daily lives for granted because most of us have never experienced anything other than that predictable rhythm. Many scientists would argue that the sun is the single most important piece of our physical world; that without

i t , all life on earth would literally cease to exist. The sun provides the entire planet with not only the energy required to sustain life, but its warmth, radiation and light influence our atmosphere, climate and weather patterns. As far as impacts of sun exposure on human health, our culture has mostly focused on the potential harm caused by too much UV radiation (UVR). There are also very powerful positive impacts on our

Anyway, the light signal causes a rise in body temperature, raises the release of the hormones like cortisol and histamine as well as the neurotransmitters that stimulate arousal. It conversely inhibits the part of the brain that house and release melatonin, the hormone primarily responsible for inducing sleep. Sunlight also stimulates the release of serotonin, a mood enhancing neurotransmitter, which is why periods of darkness seem to be associated with a type of depression known as SAD (seasonal affective disorder). CONTINUED FROM PAGE 7 This is a condition many Alaskans likely experience to some degree, even if they are not fully aware of it. In addition, serotonin is a pre-cursor for melatonin. Are you beginning to see how the rhythm of light and dark exposure feeds the cycle of wakefulness and sleep? In addition to circadian rhythms the body has a sleep-wake homeostasis mechanism that seems to be related to a build up of chemical signals such as adenosine and pressure in the cerebral spinal fluid that can only be relieved by actual sleep. This is why despite stimulants the body eventually forces itself to sleep. Interestingly, light exposure seems to influence this mechanism of sleep regulation too. While many people think they can “get by” on little sleep, the body is designed to thrive on a continuous cycle of about 16 hours of wakefulness followed by about 8 hours of uninterrupted sleep. Lack of sleep eventually catches up to you. There is so much evidence in the medical research that verifies this to be true. One example is that we know melatonin has been shown to be important in supporting the immune system (including suppressing auto-immunity, cancer and inflammation). Lack of sleep is linked to increased rates of diabetes, obesity, cognitive impairment, mood disorders and more. Adequate sleep on an appropriate cycle keeps the body healthy both short and long term.

Sunshine So what to do for better sleep? Here are just 10 basic rules for a better sleep environment:

1.

Make sure to expose yourself to bright sun light first thing in the morning and throughout the day. Ideally, you want to get up with the sun. Daylight exposure only from a window is likely not sufficient. Make sure to get outside and let the sun hit your eyes and skin. Consider a light therapy devise if necessary. These vary greatly, so ask your physician for their recommendation for a safe and effective type.

2.

Get to bed early as well. Start a ritual of moving toward relaxation about 2 hours before bed. The body is known to get the most restorative work done while sleeping between 10pm and 2am. So, be in bed and asleep in time to hit that natural cycle if possible.

3.

Your bedroom should be clean and clutter free with a good mattress and pillows that are non-toxic and supportive of good sleep posture.

4.

Your bedroom should be used only for sleep and sex. It is not for entertainment like television or for work.

5.

Do not sleep with your phone near your bed. Electromagnetic fields disrupt sleep.

6.

The temperature of the room should be cool – the average is about 65 °F

7.

A fully dark room is critical – install black out shades or curtains that cover even the edges of windowsno nightlights, no lighted clocks, cover LED lights from electronics, literally have no light at all in the room while sleeping. Studies have shown that even your skin has light receptors that can be influenced by any light, artificial or natural, when trying to sleep….even if you think it isn’t bothering you, the chemistry of your body proves otherwise. It’s not enough to simply cover your eyes.

8.

Keep earplugs by the bed and use them if it is safe for you to do so.

9.

Discontinue all exposure to blue-light (like from a television, smart-phone, computer or tablet, etc.) at least one hour before bed. Blue light is a known sleep disruptor. If you have to have a light, use red or get blue light blocking glasses.

10.

If you are not getting adequate sleep, seek help from a functional medicine doctor well versed in the many behaviors, environmental factors, lifestyle factors as well as medications and supplements that can help you regain a consistent and fully restorative

JUST TAKE MY MONEY! I could have baked a baby in the number of months that I looked at the hole in my bathroom ceiling. Nine. Long. Months. Not gonna lie, I bought a condo to have an introduction to home ownership: ownership-light. So I was a little butt hurt when I had some house maintenance problems a year in. Yes, I got an inspection report before I bought it, I did all the good little things you are supposed to do to protect yourself from buying a lemon. But, turns out, that doesn’t include finding leaking pipes. There is a really nice new dishwasher in my condo, and I have used it exactly twice in almost two years that I have lived there: once right when I moved in, and twice when we had a dinner party. The first time I used the dishwasher, there was a bubble that showed up in the paint in the bathroom wall (our bathroom walls are the shared wall). Being literally a week into home ownership I didn’t think anything about it. Then, the second time I used my dishwasher another bubble showed up under the pain in the bathroom wall, so I

poked it. And water came out. Sausages. So this time I took it more seriously. And I called a plumbing company to come check it out. Initially they cut a little hole and said it was a leaky pipe in the party wall and I talked with my condo board, and they said it was a condo issue and would be covered. So, when the contractor wanted to cut a big hole to fix it, I said go for it, I didn’t care. Because, I wasn’t paying for it. Then, my condo board changed their mind and decided that they weren’t paying for the

repair after all. To say this was upsetting would be a gross understatement. This was also upsetting because when I bought my condo I was told I only needed to worry about the paint in, and from my insurance company, I was told I can only insure from the paint in, because the condo association owns the structure. So now I was in this magical gray area where no one wants to take responsibility but in the end if I want it fixed I have to pony up the cash. I also had a crash course on working

with construction companies. Little did I know, not everyone wants every job. A few contractors said that they only really do re-models, or something bigger than just fixing a hole (and here I thought size didn’t matter, pshh). And that was frustrating. Because this isn’t something I’m going to just look up on Pinterest and hope for the best. #Nailedit Plus, there are perfectly capable people who actually know what they’re doing that can do this. There are home-improvement things I’ll do on my own, but this isn’t one of them.

JUST TAKE MY MONEY!

So I kept calling around looking for someone who would take my project and take my money. One construction company came out and looked at it, and encouraged me to take it to my board again, because he believed they should cover it. Problem being, that didn’t actually help me get the hole fixed. Fast forward a few months and two more construction companies, and I finally found someone who was interested in my project. Xentropa Services had an ad on the radio that I heard one day, and I wrote down the number. But when I tried to do a search for them, I was spelling it with a Z so I came back with no results. A little while later I heard another ad, so I confirmed the number and gave Ben a call. Turns out if you spell Xentropa correctly, he has been doing home repair for years. I explained my current situation, and Ben said he would get me

on the schedule for next week. NEXT WEEK!!! My months of waiting were finally in the home stretch. The following week Ben’s team came out and patched the hole. Ben sent me texts to check on my happiness with the work, and I sent texts back like “yep, looks like not a hole! ” Over the course of three days, I was able to watch my hole slowly disappear, and then on the third day, just be gone. To think that it took 9 months to accomplish with Xentropa did from getting me on the schedule to finish in a total of 7 days makes me a little sad. The number of showers I cut short because the hot air was hitting the cold water pipe, condensing, and dripping down on me all could have been rectified in a mere week if I had just called him first. But alas, we live and learn. I did forward Ben’s number on to a co-worker who was having some attendance issues with her other handy

man. And again, Ben got her on the schedule and boom, project done. This has made me seriously re-consider some of my home improvement projects that I have been thinking about – now knowing there is a company out there that will actually take small jobs, and get it done pretty quickly. I have wrestled with how much money do you invest in your place, when you aren’t sure how many years you will live there? Even from when I moved in, I knew there were a few things I would change and fix. But I’m not sure how many years I’ll live here. I know I want a garage, and obviously this condo doesn’t have one. So I don’t want to sink a bunch of money into my place now, just to move in a few years anyways. And I mean, except for a few things, the stuff is just cosmetic to make it look and function the way I want. But maybe this is part of owning something instead of renting something. Making it yours.

But at least now I know the guy to call who actually wants to take my money. Courtney Wendel has lived in Juneau since she was a year old. She has a twin brother and an older brother, and learned to enjoy the outdoors at a young age by following the boys into mischief. Graduating from JDHS in 2006, she attended UAS to receive her Literature of the Environment, BA English degree. Ode to Spring Salmon Rich in the long chain Omega-3 Fatty Acids, unlike most other fats, omega-3 fats are considered “essential”, meaning you must get them from your diet since your body cannot produce them alone. Omega 3’s are an integral part of the cellular structure and affect the function of cell receptors in membranes. They provide the starting point for making hormones and regulate blood clotting, contraction and relaxation of artery walls and inflammation. They also bind to receptors in cells that regulate genetic function. Let’s not forget your heart, salmon is without a doubt the best food for heart health (and an extra glass of red wine, my favorite addition) you just can’t get enough B vitamins, potassium, selenium, antioxidants all with out our wild Alaskan salmon. From kings, sockeye and coho we really are spoiled here in Southeast to have such bounty of health and wealth in our amazing local foods. Fill up that freezer and pantry for winters ahead. But right now, break out the grill, and find a ripe avocado (I dare you) because you’ve got two options here healthy salsa or oven fried goodness! Which shoulder spirit will you be picking this spring? Watch the flowers come up, and the whales and return of the tourists.

Grilled Salmon with Avocado Salsa Bowl (the healthy version) Salmon fillet, butterfly cut into 4 pieces 1 tsp ground cumin 1 tsp paprika 1 tsp onion powder ½ tsp ancho chili powder 1 Tbsp olive oil Salt and pepper to taste Avocado Salsa 2 avocados, diced ½ cup red onion, diced 2 Tbsp Cilantro minced 2 Limes juiced ½ serrano pepper, minced or to taste 1 Tbsp Honey, organic

1c Jasmine Rice, organic cooked (you can add a little cilantro and lime juice to this while cooking to kick it up Salt to taste Directions: Mix the salt, chili powder, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix, refrigerate for at least 30 minutes. Preheat Grill and wipe grill with half an onion to clean and season it. Combine avocado, onion, cilantro, pepper, honey and lime juice with salt, mix well and set aside until you grill your salmon. Grill salmon about 3 minutes each side if butterflied to 2” thickness, but it’s your fish grill to taste, place on top of rice and top with the Avocado Salsa, grab a cold beer from the fridge and enjoy your amazing heart and brain healthy food.

I like to use a “butterfly cut” on my salmon, start by taking a whole fillet, pull pin bones with pliers in the direction of the meat, and cut into three inch sections of meat, then in the middle of each piece cut gently through the meat but stopping once you reach the skin. Fold the skin pieces back to back and there you have your butterfly. Unhealthy but oh so good version…. (the salmon stays the same)

Avocado Fries 2 large avocados 1/2 lime, juiced

tablespoon oil in sheet tray or baking dish; set aside. Squeeze fresh lime juice on avocado slices to preserve their color while baking (this step is optional). Season with salt, pepper. Dredge in flour then dip in egg and coat in panko breadcrumbs. Be sure the avocado slices are coated very well in the panko. Place in a single layer on the greased (or baking mat) sheet pan. Drizzle with the remaining oil or spray with cooking spray. This will help the avocado slices crisp in the oven. Bake for 15 minutes or until the avocados are golden and crispy. If desired, more oil can be drizzle while they are baking for additional crispness.

Chipotle Dipping Sauce 1 chipotle chili roasted (or canned if you’re into cheating) ½ c mayo 1/3 c Greek yogurt ¼ cup cilantro, minced ¼ tsp ground cumin ¼ tsp dill Salt to taste

Salt and pepper to taste

Combine all ingredients in blender or food processor and blend for 2-3 minutes until creamy, refrigerate for up to 4 weeks in refrigerator in a jar..

1 c panko bread crumbs
