Gustavus Getaway

H

ere we are, in Hoonah to fuel up and drop full-blown spring! off cargo; some of which Since my last were alive. Back on the plane started in a small plane also known as and a short while later we landed in a caravan with my aunt. We landed in Gustavus. The weather was great and landing was smooth even though I do get a little nervous on those small planes no matter the forecast. After being met at the airport by my dad and a family friend, we retrieved our bags, skis, and boxes full of food and beverages as we packed into the truck like sardines. I can’t say for certain that Gustavus is a magically unique place but it certainly feels like it as we left the airport and set out for the cabin. The

community is very friendly and helpful and I am still delighted by the requisite wave while passing someone on the road as they wave back. The locals we pass on the roads may be pleasant but the road itself is not so much. Our cabin is some distance down Rink Creek Road, and if you’ve ever traveled that road in the winter or spring you know what I’m talking about. The way is riddled with deep, continuous potholes and I could probably run faster than the truck could drive. Car parts can be found

scattered about as they fall off vehicles and inside the cab, heads are knocked together. After a brief intermission halfway through our drive to view some swans at the gravel pit we arrived with scrambled brains to our charming little cabin just in time for dinner and celebratory cocktail hour. As night fell my aunt and I made our way to a neighboring house to sleep, as I had learned my lesson the last time with the epic family snorers. Continued on page 19

Moisture IN THE Attic I

s there an issue with my attic? Out of sight out of mind, right? I have gotten a few calls lately, well more than a few calls about moisture in the attic. Water condensing in the attic on the roof decking, nails with frost on them, roof decking with frost, and when the temperature warms it actually raining in the attic. What causes this? Is it a roof leak? How can it be stopped? There can be a couple of causes for the moisture in your attic, and it all could start in the crawlspace. Really! the crawlspace can cause issues in the attic. Even if a crawlspace seems dry and the dirt in the crawlspace seems dry, the dryness is caused by evaporation. If the crawlspace is not properly sealed with an airtight vapor barrier or no vapor barrier at all, the moisture in the earth below from the dry dirt is evaporating into the air as vapor. That is exactly why the dirt in the crawlspace is dry, evaporation.

The home acts like a big evaporation chimney and this is how it works: cool moist air from the crawlspace travels to the warmer air of the house and the warm moisture laden air travels up through the home through leaks in the attic where the moist air finds cool attic air. The moist air hits its dew point on the roof decking and freezes or condenses on the roof deck. The roof deck is warmed easily by sun or warming temperatures and causes a little micro climate rain storm in the attic. Damp roof decking will eventually turn to a blacken charred look. The black charred look is actually a type of fungus and this fungus is slowly eating the roof decking. The fungus or mold can be any type of the 400,000 plus types known and would have to be sampled and sent to a lab to determine the kind, but the fact of the matter is that there is a problem with moisture.

when the air is not moving and there is no breeze outside. Code requires a

certain amount of attic ventilation per square foot of attic but I have to ask,

how does the air actually flow if there is no air flow outside? Does the water vapor that finds its way up through the crawlspace from the interior see an opening in the attic via vents and tell all the other little water vapors to get the hell out of here and travel on its own to freedom? I don’t think so. It finds its dew point and starts a rainstorm in the attic. How do we stop this water vapor from entering the attic? Well, we need to seal between the house and the attic. Foam or chalk all the penetrations from home to the attic to stop the air flow. Insulation alone does not stop the problem, in fact it accelerates the vapor to water transformation. The key is air seal, air seal, air seal. Then tackle the moisture within the home with proper ventilation and heat. The heat will come a little easier now that it is not all lost with the water vapor into the attic and the ventilation will work more

efficiently with the sealed ducting. Now that everything is sealed up, check the moisture content of the attic roof decking to see if the air sealing was successful. If the roof decking moisture content falls below 12% then the attic roof decking moisture content has fallen below a moisture content that will allow mold or fungal growth. Remedy! that next step to make an appointment with their Realtor so they can actually go in and look around. If you’ve got a messy yard, now is the time to clean it up and make it look manicured. Get the toys off the lawn. Rake the leaves and mow the grass. Pressure wash your deck. Consider a coat of paint to freshen up the home, even if it’s only applied to one side of the house. Think about what you can do now to make your property look its best from the outside so that buyers will be intrigued enough to want to go inside.

Cut the clutter. This is im-

portant. Buyers want to imagine themselves living there, not you. If you want to really show off your house,

then you need to minimize the stuff inside it. Rent a storage unit if you need to, but please take this step seriously. You’re moving anyway, right? It doesn’t hurt to start putting some stuff in boxes. Start by removing any unnecessary furniture that would otherwise make the space look smaller than it is. Leave a few tasteful and appropriate pieces. Boxes in the closet? Storage space sells, so maybe now is a good time for a yard sale. Walls and mantle covered in family pictures? Take ‘em down. You need to de-personalize as much as possible. Buyers are there to see your house, not you.

should look and smell fresh every time a potential buyer comes by to see it, so make sure your house is sparkling. Check all your light bulbs By Amanda Pilley to make sure none are burnt out and replace any that are. Make sure all your curtains and blinds are open to let in the natural light. No one is going to get a good look at a room that‘s dimly lit. Clean those places you might otherwise skip in your general routine, like the baseboards, or pay a professional to clean your house for you. Pay particular attention to the kitchen. Consider a fresh coat of neutrally colored paint to liven up a room or hallway. If you have pets make sure that your house doesn’t smell like them. In fact, if you know the house is being shown, throw some cookies in the oven beforehand. It’s hard to resist the smell of fresh cookies. Although there is not much you can do about the surrounding neighborhood, there is plenty you can do to boost the appeal of your home. Take a good, serious look at your house and the surrounding property. You might even consider recruiting a friend for an outside, unbiased opinion. If your house is getting plenty of showings but no offers, ask your Realtor for some feedback from the showings, and make improvements. If you do everything you can to help create that perfect first impression, it’ll only be a matter of time before a drive-by will turn into an offer.

a maximum of three days, though some symptoms may linger for weeks. While most doctors will tell you, there is no treatment because antibiotics do not work against viruses (only bacteria); I want to offer you a couple of ideas. First of all, healthy people weather common illnesses much better than if your vitality is waning….so if you are not already focusing on healthy home, healthy habits, etc. start now! This virus is speculated to be more virulent in the winter and spring because we spend more time indoors close to one another, with the windows and doors shut and the heat up – drying out the air in our homes and creating a breeding ground for sharing both viruses and bacteria… so now that the weather is a bit nicer, open up your windows, do a deep spring clean and then get outside. Norovirus is primarily spread when infected people do not wash their hands or do not wash them well after using the bathroom. The virus is then transmitted to surfaces and fabrics they touch, food and even drinking liquids. Vomit easily aerosolizes the virus, as does flushing the toilet with contaminated stool or vomit. Those who are contaminated should not prepare food or care for other sick individuals for up to three days after they are feeling better. The virus can be found in stool up to three days prior to a person feeling ill and for two weeks in a person who has been sick. Surfaces and fabrics can harbor the virus for up to two weeks as well. Fruits and vegetables should always be carefully washed, and seafood needs to be cooked thoroughly as the virus withstands temperatures up to 140°F (a quick steam). Most store bought cleaners and disinfecting wipes do not kill norovirus, neither do hand sanitizer gels or alcohol.

Instead, clean all surfaces with either a bleach or 5% Hydrogen Peroxide cleaner. Some sources say clean once with hydrogen peroxide and then follow with another wipe down of vinegar. Please, wash your hands, and then do it again. When you wash, lather with plenty of soap and wash hands, wrists and lower arms very, very thoroughly before rinsing in hot water. If you’ve already contracted the stomach bug, then the following may be helpful in treating your symptoms. Make sure not to get dehydrated. Continue to drink water and electrolyte replenishing drinks such as recharge. Once you have stopped vomiting, take a high quality pro-biotic every few hours. I like the selection of brands available at Ron’s Apothecary, though you can find them in the health food section of most stores… in fact I recommend a daily probiotic to most healthy individuals too. Teas with ginger, fennel and burdock not only help combat dehydration, but can settle the stomach and alleviate nausea. I also like blends of essential oils used both topically (diluted in oil – coconut or jojoba are great and easy to find in Juneau) and in diffusers. For this virus, a good blend is peppermint with lemon. While both are strongly anti-viral, they also help soothe nausea. Get plenty of rest, and if you’re worried, seek medical care sooner rather than later. More detailed information is available at: http://www.cdc. gov/norovirus/index.html

Mark your Calendars for the Fifth Annual Juneau Maritime Festival

M

ark your calendars! The Fifth Annual Juneau Maritime Festival is coming to Marine Park on Saturday, May 10th to celebrate Juneau’s unique maritime history, culture, and commerce. The festival is a favorite in the community and continues to grow larger every year due to enthusiastic support from the maritime industry and a variety of family friendly activities. Last year it was estimated there were over 2,500 festival goers and 60 vendors. One of the major draws of the festival, the salmon fillet contest, in which quick hands compete for glory and prizes, will be back to entertain crowds. Other popular festival highlights that will be making an appearance again this year include the Smok’n Hot Alaska Salmon dip contest, Wild Alaskan marinade

contest, Taku Fisheries Fish Tote Race, and the Cruise Line Tug o’ War. Kid friendly activities include miniature boat building with a team from Home Depot, a touch tank full of sea creatures provided by DIPAC, underwater robotics with STEM AK, canoe rides, and much more. In addition, the Coast Guard will be teaching water safety with Kids Don’t Float activities and the US Forest Service will premiering a movie in light of the 50th anniversary of the Wilderness Act. For adults, live music, freshly grilled salmon, and a beer garden featuring brews from the Alaskan Brewing Company is good enough reason to come out and enjoy the festival. The Juneau Maritime Festival is a free,

nonprofit event thanks to community sponsors according to Brian Holst, a member of the Festival Steering Committee. “There would be no festival without our community sponsors,” said Holst. The festival’s 2014 key sponsors include Alaska Marine Lines, Alaska Seafood Marketing Institute, the US Forest Service, Alaska Glacier Seafoods, Taku Fisheries and Smokeries, AEL&P, United Fisherman of Alaska, Southeast Alaska Seiners, Southeast Alaska Gillnetters, Denali Alaskan Federal Credit Union, the Alaska Cruise Association, Alaska Brewing Company, AEL&P, Goldbelt, Wells Fargo, and Fred Meyers. set for May 9th at 6pm, has all the ingredients to be a truly upscale night of entertainment and fine dining. Starting at Salt for appetizers and moving to The Baranof for a seafood dinner including salmon and king crab, the dinner’s final stop is Rockwell for dessert, entertainment, and a silent auction. Tables for ten are going for $2,000 with single tickets selling for $100. The fundraising dinner will be an annual event and proceeds go to funding the Juneau Maritime Festival. The next few days were spent hiking around, skiing in the meadow, morning runs with my aunt and laying on the flats in the sunshine watching geese and beach combing for bones and wolf tracks. Every evening we’d cook dinner, some nights play a card game called “hearts” and do a dusk or dark stroll in which we’d listen to howling dogs or wolves and the resident owl. We saw moose on several occasions, both on the road and in the meadows. We also visited the local library that happened to have a skeleton of an orca whale displayed there which was pretty neat. And before I knew it the trip was coming to an end. The morning of our departure was spent closing up the cabin, cleaning the incinerator toilet and packing our gear. The weather began to look more and more unappealing as the winds picked up. The trees danced together, a beautiful sight except it’s not something that I’d ever want to fly in. As I reviewed the weather report I was thrilled to learn that there was a Taku wind warning in the forecast beginning

in the afternoon, as our flight was scheduled to land at 3:52pm…. Oh joy! We learned that our flight was still a go with a call to the airport as we didn’t want to make any unnecessary trips down Rink Creek “brain-scrambler” road. Fast forward, we load onto the plane and the pilot briefs us saying to strap in tight, “it’s going to be a bumpy one, if you start feeling weird turn on the air above you.” Well if I wasn’t scared before, I certainly was now and I knew I was in for an adventurous ride. As we took off I made the admittedly sheepish decision to keep my eyes closed the entire flight. I imagined I was riding a boat through the waves and catching fish. I made a mental note to put line on my new fishing reel. I thought about Hawaii and what I’d do there. I thought about what I’d cook for dinner when I got home and how nice it would be to take a real shower after the one freezing outdoor bucket shower I had the last 3 days. Alas, we made it home safely and obviously I lived to tell the story of Gustavus. Of course in the back of my mind I knew we were not in real danger as they wouldn’t let us fly in poor conditions but being in a scary situation does bring up all the thoughts, hopes and dreams you are looking forward to no matter how minimal or extravagant they can be. Southeast Alaska is a beautiful and adventurous place and I am very much looking forward to traveling to other places around the region this spring and summer! Lemony Ricotta Pasta with Basil

with Rich Homemade Ricotta Rich Homemade Ricotta Inspired by Salvatore Ricotta, via Tasting Table

Makes about 1 generous cup of ricotta 6 cups whole milk 2 cup heavy cream (see Note above about using less) 1 teaspoon coarse sea salt ½ cup (or slightly less) freshly squeezed lemon juice Directions: Pour the milk, cream and salt into a nonreactive saucepan. Attach a candy or deep-fry thermometer. Heat the milk to 190°F, stirring it occasionally to keep it from scorching on the bottom. Turn off the heat Remove from heat and add the lemon juice, then stir it once or twice, gently and slowly. Let the pot sit undisturbed for 5 minutes. Line a colander with a few layers of cheesecloth and place it over a large bowl (to catch the whey). Pour the curds and whey into the colander and let the curds strain for at least an hour. At an hour, you’ll have a tender, spreadable ricotta. At two hours, it will be spreadable but a bit firmer, almost like cream cheese. (It will firm as it cools, so do not judge its final texture by what you have in your cheesecloth.) Discard the whey, or, if you’re one of those crafty people who use it for other things, of course, save it. Eat the ricotta right away or transfer it to an airtight container and refrigerate until ready to use.

• Whole vs. 2% vs. Non-Fat Milk: While whole milk is our favorite for making ricotta, 2% milk can also be used, though the ricotta is slightly less rich and creamy. Avoid using skim and nonfat milks; these don’t separate as easily into curds and whey. Trust me forget worrying about fat in foods and worry about the chemicals and unhealthy additives making them non-fat or low-fat. Count chemicals not calories!! • Pasteurized Milk: Pasteurized milk is fine to use for making ricotta, but avoid UHT (Ultra High Temperature) pasteurized milk as this process changes the protein structure of the milk, preventing it from separating. (read the carton, or buy a goat, yack or milk a musk ox) • Making Fresh Ricotta Salata: If you’d like to make a fresh farmer’s cheese (ricotta salata) from this ricotta, wrap it in cheese

The pasta shapes that best compliment this sauce are small shaped pieces like rotini, penne, fusilli, and gemili, although obviously, anything will work. Again, quality makes a big difference here. Now’s a time to spring for something better than plain-wrap spaghetti. However, if it’s all you have, you’ll still be eating well.

Lemony Ricotta Pasta with Basil serves 6

1 pound good-quality pasta, in a short twisted shape or with a hole (such as penne or gemili) 1 15-ounce package (about 2 cups) fresh ricotta cheese 1 cup freshly grated Parmesan cheese 2 tablespoons good-quality EVO olive oil zest of 1 lemon juice of half the lemon 1/2 teaspoon coarse salt 1 teaspoon lemon zest 1/2 teaspoon freshly ground black pepper 1/2 loosely packed basil leaves, sliced thin, or chiffonade (google it if your unsure) Set a pot of water to boil. When it boils, add a generous amount of salt and the pasta. One of my favorite chef mentors made me promise to cook all my pasta in “sea water” salt levels! In a bowl wide enough to fit over the top of the pot, mix together the remaining ingredients, excluding the basil. When there are about 2 minutes remaining in the pasta’s cooking time, place the bowl over the pot and slowly stir the ricotta and other ingredients. You should see it loosening as it warms. When the pasta is cooked al dente (too the tooth), drain it, I also like to reserve a few tablespoons of my “sea water” pasta liquid to remain in my dish to use the starch from the pasta to help bind them together. Add the basil to the bowl of sauce and toss lightly with the pasta, very important not to bruise the basil and its delicate sensibilities. From my table to yours, Salude!
