Letter from the Publisher Winterizing your Pets

November is all about the start of winter for me. The beginning of the snowy season means spending time winterizing various things and necessities. We do our vehicles by replacing our regular tires with studs, we also prepare by digging out the snow shovels and snowblower. We shut house vents and dust off our winter clothes and gear. Another thing that we do in our household is brainstorm alternative things for our cat to do when he cannot adventure outside for as many hours as he does the rest of the year.

Our cat Tron is one outdoorsy cat. He loves to be outside regardless of the weather. Seasonally, the issue is with heavy snow there are less places for him to explore. I do keep a close eye on him because he ventures where areas are plowed, meaning the streets and driveways. Tron is very adventurous and from the moment we got him we knew he was an outdoor cat. We kept him inside for the first four months of his life and it was no easy feat. He’d bolt for the door anytime someone came in or went out. We’d have to plan exit strategies and hang signs on the doors warning people not to let the little escapee out. When we felt like

it was appropriate for Tron to see the great outdoors we put him on a leash and harness and walked him daily for the entire summer to establish home boundaries for him. We then let him out off the leash but stayed outside with him and then finally we let him out on his own, for the first few weeks I would stay inside glued to the window and wouldn’t take my eyes off him and when he ventured too far, I’d run outside and shake the treat bag so he’d return. I never go to sleep without making sure he is inside at night, even if that means calling him and shaking the treat bag until he comes home at 3am, yes this has happened a couple times. That being said, we’ve tried hard to establish property boundaries for Tron but he still ventures into the woods and into other people’s driveways.

husband and I have a number of games we play with Tron and we’ve found it’s funny that pets choose the cheapest non-pet things to keep themselves entertained. Tron’s favorite thing is something we call “mint-ing him.” We take a dinner mint that’s wrapped in crinkly plastic and slide it back and forth on the floor between us. Tron loves the sounds of the wrapper and chases it. We will throw in a bounce here and there and he will stop at nothing to tackle and subdue that mint.

Then when that becomes monotonous we move to the laser pointer on the carpeted stairs, we race him up and down as many times as he will go, treating him at the end of the session of course. Tron also likes to play tag for very short periods of time and only likes to be the tagger. He occasionally will fetch a crumpled up piece of paper.

forms of water, he hates a bath but loves snow and ice cubes. Anytime anyone puts ice in his or her cup from the dispenser on the fridge he makes a dash for it. Once given a piece of ice, he chases it all over the house until it’s lost forever under the stove or fridge. When the holidays come around he likes to “help” wrap presents and he especially loves boxes. When we get something new that comes in a box we don’t immediately recycle it but leave it out in the living room for Tron to jump in, explore and spontaneously pop out of. And, if all else fails to keep him entertained there’s always catnip... a little catnip on his cat tree or the floor and he’s occupied and then sleepy for at least a little while. It’s important to keep pets stimulated during the short days and dark months and we enjoy spending quality time entertaining our furry one. Thanksgiving Season is almost here! Somehow, I always feel like this holiday tends to get lost between Halloween and Christmas. Origin stories about the holiday seem to stir up controversy but I think the greater message of the tradition remains important to the fabric of

what makes a great holiday that we should be bringing into our homes. That message is gratitude. Thanksgiving around the world in its various forms, whether steeped in religious or cultural traditions, is really a harvest festival to celebrate or blessings and exercise gratitude. Acknowledging this, in 1963, then President John F. Kennedy and congress proclaimed the fourth Thursday of November as a national day of Thanksgiving. I encourage you to look up what President Kennedy wrote in Proclamation # 3560. It’s a moving and heartfelt call to the nation to acknowledge our struggles, while taking action to continue to keep doing better. In it, he includes: “Yet, as our power has grown, so has our peril. Today we give our thanks, most of all, for the ideals of honor

FUNCTIONAL ART – Making a House Your Home –

Wood.

Locally harvested wood. Crafted with such skill as to make the most utilitarian of objects — spoons, bowls, and tables — into works of art that can add a lived-in feeling to a new home. If you wish to add such elements of style and warmth to your living spaces, unique wood products will be offered by several vendors at the 35th annual Alaska-Juneau Public Market, Friday through Sunday of Thanksgiving weekend. Zach LaPerriere, wood bowl artisan of Sitka, will sell and display his wares for the first time in Juneau at the Public Market. LaPerriere grew up in Ketchikan where he graduated from high school. He acquired his interest in wood and construction skills working alongside his father, a builder and shipwright. Zach LaPerriere now lives in Sitka with his wife and their three children in a rustic setting just above the beach near Whale Park. “Wood from the Tongass has always fascinated me,” he says. “I’ve milled it, built homes with it, and now make bowls with it. But if you go to a local hardware store, you’ll

find lots of wood but little from Alaska.” LaPerriere harvests all his wood from the Tongass, working closely with the Forest Service, which he praises for their cooperative attitude. For the last three years LaPerriere has concentrated on making wood bowls, taking pride in recovering some of his best cuts from dead trees. He turns bowls from mountain ash, yellow cedar, Sitka spruce, tight grained hemlock, but confesses to a preference for red alder. LaPerriere has found some massive trunks of dead alder, from which he has salvaged material for making exquisite bowls. Sometimes most of the dead wood is in a state of rot, but the fungus that invades the fiber also contributes to the color. “If you cut a very old alder, it probably won’t be good for much other than my use. When the tree dies, spalting sets in — the first phase of fungal growth.” The good wood that comes out of such a tree can be exceptionally beautiful. “I see bowl making as functional art. People who buy my bowls connect with Alaska, with the Tongass. Maybe more than half are given as gifts, most sent to loved ones outside. My customers

Jenny Sedor and Garrett Cox of Anchorage return with their hand-crafted wood spoons, which many shoppers will likely consider

as appropriate companion pieces for LaPerriere’s bowls. Sedor and Cox were amazed by the demand for their spoons at their first Public Market appearance. “It blew us away,” Sedor says of the enthusiasm at the 2016 Public Market. “It was our best show of the year! The people of Juneau seemed to embrace us.”

Wood spoon crafting has its own ethic: from the tree to the table, without the use of power tools, Sedor explains. “We like green Alaska birch, it is soft and easy to carve, though the wood is fairly blond,” she says. “One of our processes, which darkens and hardens the wood, and helps keep its integrity, is to boil it in salt water. By adding a little baking soda the wood darkens. We never add dye.” Also new to the Public Market last year, Reid Harris, born and raised in Juneau, is returning to the 35th annual event where he’ll be situated in the main hall next to long-time vendors, Ruth and Gary McMasters of Wintersong Soaps from Sitka. Harris produces one of-a-kind furnishings such as slab tables crafted from straightgrained, book-matched Sitka spruce

In 2005, the Public Market opened an Annex at the nearby Juneau Arts and Culture Center. LaPerriere, Sedor, and Harris will join about 150 other vendors from all over Alaska, the Pacific Northwest, and other regions including Canada, who will be on hand to sell products ranging from the practical, to the wearable, to the decorative, to the givable, and many products suitable for household décor. The Public Market begins Friday, November 24, and will be open from noon to 7 pm; and on Saturday and Sunday, from 10 am to 5 pm.

To find alder of sufficient diameter for bowls, Zach LaPerriere often treks deep into the woods. He looks for dead trees that have sections at a stage of decay in which fungi have invaded but not ruined the wood. The fungi produce a pigmentation within the wood that creates colors and patterns a craftsman like LaPerriere can coax into works of art.

think it’s fair to say that there is some amount of wild game in a majority of Alaskans’ freezers. Now, I won’t go so far as to say that most Alaskans have a freezer JUST for wild game, but I know several people who do (myself included). Part of living in such a beautiful and bountiful state is that we are able to go out and collect natural resources to feed ourselves, family, and friends. But obviously not everyone is inclined to spend hours and hours - in usually the rain here in Southeast and bugs in the interior - to maybe or maybe not find a deer, to maybe or maybe not get a shooting opportunity, to maybe or maybe not successfully harvest one. And that’s ok. Just because you have the opportunity doesn’t mean you have to take it. But for those of us that are going to make those opportunities and are blessed to harvest a big game animal, what do you do with it? I honestly think that freezers are some of the best inventions allowing us to store and preserve food without having to dry or salt it. I mean, I can do oodles of things with frozen meat, as opposed to having to commit to all of it being salted or smoked. If you haven’t tried ‘deer and beer stew’, you really should. Basically make a pot roast with a hunk-o-meat, then add a big bottle or two of Alaskan Smoked Porter to cover your meat, shake in some rosemary and thyme, and add brown sugar to taste. Add your onions, carrots, and potatoes closer to supper time so they don’t get overly done. Super yummy. Last night was moose tacos, and a few nights before that was caribou steaks sprinkled with Lawry’s served with mashed potatoes and steamed veggies. Steak with veggies always makes me feel fancy, even though it’s the fastest and easiest meal to make. Between the field and your plate, that precious meat has to live somewhere. I personally bought a medium sized chest freezer when I bought my condo over 3

years ago. Back then, I thought that there was no way I would ever fill it up. Well fall of 2017, thank god I rock at Tetris. Because my lid closes and seals, but only just. My freezer has never been at max capacity before. And though I love it, it presents its own problems. Granted I haven’t seen all of the magazine covers for Real Simple or Organizing, but I don’t recall ever seeing a cover on chest freezer organization. They will show you how to organize your recipe cards, closet, pantry, crafting supplies, but never how to tackle the lurking animal that is your chest freezer. God bless Pinterest. While hunting for a caribou in DC485 (Game Management Unit 13), I have

to regretfully admit that I didn’t even consider how much freezer space I had. In my mind, I didn’t have too much in there, so without questioning it, I assumed it would all fit. In an epic day that lasted almost 24 hours, I got on a plane to ANC, got in a truck with a friend, drove up to Glennallen, bought some snacks at The Hub and topped off the fuel, then headed out Denali to find some bou. The hunting culture is very different in the interior, and personally being from Alaska with the spot and stalk technique being standard, it was crazy to see all the four wheelers and ATVs. My hunting partner and I stopped in an archaeological area, so no vehicles are allowed. It appeared that very few people want to pack a caribou out with just their two little legs. We saw some bou up a mountain, and decided to

head up and find them. It was 7 miles round trip, but I was lucky enough to successfully harvest a mature cow caribou. One shot, she ran about 10 yards where she laid down in a clear spot, and in about 2 minutes all signs of electricity and chemistry were gone. With much respect and appreciation she was quickly butchered and packed out. We got to the truck via head lamp, and began our drive back to ANC. I brought Delta (as I have named her, because the mountain was next to a big

Delta sign on the road) back to JNU in two totes, leaving her cape in ANC to be tanned. My two totes weight 101.5 pounds, including her head that I personally cleaned and processed to European mount. While there is plenty of wall space for Delta next to Gilpin and Cecelia, the two days that I took to process Delta’s four quarters and add her to the freezer bag by bag was trying at times. First I just threw in stakes and roast as I cut them and vacuum packed them, but eventually I realized the amount of meat I had left was more than the available space. Oh. Shoot. My dear friend and Klondike teammate Joann came and got the leg bones as I cleaned them, and her husband came back to get Delta’s tongue. Joann and Kurt have the dedication and knowledge I aspire to have: to truly understand how to use every part of the

animal. I hear some bone broth for soup will be coming back my way, and she sent me several recipes on how to prepare heart aside from just frying thin slices in bacon fat with onions. After I managed to squeeze everything – badly mind you – in my chest freezer, I hopped on Pinterest to find some organization ideas. Mostly it looks like people use little totes, either with lids or without, to organize by category. But for me, my freezer of death is basically going to have three categories: salmon, deer, and caribou. That makes it way easier from the beginning as opposed to having over 10 categories of food to track. I measured out my freezer dimensions, and with my trusty measuring tape set out to Fred Meyer to find some totes. I made a little stack of baskets in the aisle, measuring other options to make sure I made the best use of space. Eventually I settled on black baskets, and they were even on sale. I decided that I would rather go with metal wire baskets after surveying my options, because in the past I have found that thin frozen plastic becomes brittle and breaks pretty easily. Also, as much as I love lids, I thought it might be really limiting to have to be able to close a lid. CONTINUED ON PAGE 18

With metal wire baskets, they just sit one on top of the other so if something pokes out it’s no big deal, and when one basket is emptied it just nests under another. If I didn’t want to reach into the bottom of my freezer, I could always turn it upside down to keep the top baskets at the same level. With hesitancy, I pulled everything out of

my freezer when I got home. I haven’t seen the bottom of my freezer in quite some time, so it was a little scary not gonna lie. There wasn’t as much mystery food in there as I thought, but I did find that a renter left a bag of chicken nuggets in there at some point. I ate them, but not as excitedly as if they were Dino Nuggets. Anything that was left by my renters was taken out of the box and it all went into one basket. Everything else was organized by animal, and by date. All of Delta went in three baskets on the bottom, along with the salmon from this summer. Deer and salmon from last year are now on top, along with the store bought food. We are making extra effort to eat all of the purchased food, as some Delta burger doesn’t fit in the freezer yet. Because my mom is the best, begrudgingly she came over to write in Sharpie marker on the lid of my freezer after reassuring her several times, ‘yes mom, I really do want you to write on the top’. Her handwriting is fantastic and now that I’m older and don’t live with my parents, I want a few

more reminders of my mom around my house. Plus, what good is a system if you can’t actually maintain it? I had mom write out all my food categories on the lid, so under them I can put a tick mark for how many of each I have. Fun fact, Rain-X takes Sharpie off of plastic surfaces. Not sure why, but it does. So I counted out how much of everything I had, and did some basic math to figure out how much of each category I need to eat a week to make sure that by this time next year my freezer is empty. That is taking a gamble that I will actually be successful next year in my hunting and fishing endeavors, but I figure looking at a mostly empty freezer will be encouragement to try hard. Also, from a purely utilitarian standpoint this should prevent any food spending more

time in a freezer than it should, and ensure that nothing is wasted. With deer season underway and my first freezer full, now the question becomes: should I get a second chest freezer? #AlaskaProblems Courtney Wendel has lived in Juneau since she was a year old. Fall Harvest

all vegetable dishes are some of my favorites! Flavorful marinades, dressings and their simplicity just showcase the amazing growing season in all its glory. I love the harvest, the hunt and the sweet reward of sharing amazing meals with family and friends. I especially love dishes that people remember, from textures and colors and foods that preserve the last fleeting moments of fall. Until the frost is on the pumpkin and the alpenglow is slowly making its way down the mountains, it’s time to come inside and share a meal with great friends. Since my nine year old daughter has declared she is a vegetarian, we’ve been cooking a few more veggie based meals (we already did 2-3 a week) and she’s trying out foods she would have never previously, so it’s been great fun to play “stump the checkout line” of trying to make them guess our ingredients, is it rutabaga or kolharabi, and which squash is that? So in the spirit of trying some new side dishes or an

amazing tymey onion jam... (bacon is so 2013, might I add). Here are three great recipes, grab some friends, a great glass of porter or single malt to sip on in the kitchen and cook away.

a few cracks of pepper. Cover and cook over medium-low heat for 20 minutes. Add the vinegar and sugar and cook, stirring frequently, 20 minutes or longer until thickened. Remove bay leaf. Transfer jam to a bowl and let cool. Season with additional salt and pepper, if desired. Can be refrigerated for quite a few days; return to room temperature before serving. Amazing on toast with bleu cheese.

Onion-Thyme Jam

Root Vegetable Slaw With Orange-Cumin Dressing

2 tablespoons unsalted butter 2 tablespoons olive oil 4 medium sweet onions, chopped (about 4 cups) 2 tablespoons fresh thyme leaves (or 1 1/2 teaspoons dried) 1 bay leaf 1 roasted garlic clove, mashed (optional) Kosher salt Freshly ground black pepper 1/4 cup apple cider vinegar 2 tablespoons brown sugar

Zest and juice of 1 orange 1 tsp cumin seeds, toasted 3 Tbsp sherry vinegar 1 Tbsp extra virgin olive oil 1/2 tsp sugar 3 medium organic carrots 2 medium organic beets (golden, chigogga, or ruby) 1 small organic celery root Salt and pepper to taste

Makes about 1 cup

Melt the butter and olive oil in a heavy-bottomed pot. Add the onions, thyme, bay leaf, garlic, 1 teaspoon salt, and

In a large bowl, whisk together the orange zest and juice, cumin seeds, vinegar, olive oil, and sugar. Peel and shred the carrots, beets, and celery root and add to the bowl.

Brussel Sprout, Avocado and Pepita Salad Finely grated zest of 1 lemon 1 1/2Tbsp lemon juice 1/2 tsp quality Dijon mustard 3 Tbsp EVO (extra-virgin olive oil) or avocado oil if you have it Coarse salt and freshly ground black pepper 1 pound organic brussels sprouts, trimmed, leaves separated, raw or lightly steamed 2 Tbsp pepitas (pumpkin seeds),lightly toasted and seasoned 1 avocado, thin sliced

Whisk lemon juice and mustard in a small bowl. Gradually add oil, whisking to emulsify, and season with salt and pepper. Toss dressing with brussel sprouts and pumpkin seeds. Gently stir in avocado and salt to taste. Contributed by Amber King
