Letter from the Publisher Winterizing your Pets
November is all about the start of winter for me. The beginning of the snowy season means spending time winterizing various things and necessities. We do our vehicles by replacing our regular tires with studs, we also prepare by digging out the snow shovels and snowblower. We shut house vents and dust off our winter clothes and gear. Another thing that we do in our household is brainstorm alternative things for our cat to do when he cannot adventure outside for as many hours as he does the rest of the year.
Our cat Tron is one outdoorsy cat. He loves to be outside regardless of the weather. Seasonally, the issue is with heavy snow there are less places for him to explore. I do keep a close eye on him because he ventures where areas are plowed, meaning the streets and driveways. Tron is very adventurous and from the moment we got him we knew he was an outdoor cat. We kept him inside for the first four months of his life and it was no easy feat. He’d bolt for the door anytime someone came in or went out. We’d have to plan exit strategies and hang signs on the doors warning people not to let the little escapee out. When we felt like
it was appropriate for Tron to see the great outdoors we put him on a leash and harness and walked him daily for the entire summer to establish home boundaries for him. We then let him out off the leash but stayed outside with him and then finally we let him out on his own, for the first few weeks I would stay inside glued to the window and wouldn’t take my eyes off him and when he ventured too far, I’d run outside and shake the treat bag so he’d return. I never go to sleep without making sure he is inside at night, even if that means calling him and shaking the treat bag until he comes home at 3am, yes this has happened a couple times. That being said, we’ve tried hard to establish property boundaries for Tron but he still ventures into the woods and into other people’s driveways.
husband and I have a number of games we play with Tron and we’ve found it’s funny that pets choose the cheapest non-pet things to keep themselves entertained. Tron’s favorite thing is something we call “mint-ing him.” We take a dinner mint that’s wrapped in crinkly plastic and slide it back and forth on the floor between us. Tron loves the sounds of the wrapper and chases it. We will throw in a bounce here and there and he will stop at nothing to tackle and subdue that mint.
forms of water, he hates a bath but loves snow and ice cubes. Anytime anyone puts ice in his or her cup from the dispenser on the fridge he makes a dash for it. Once given a piece of ice, he chases it all over the house until it’s lost forever under the stove or fridge.
It’s important to keep pets stimulated during the short days and dark months and we enjoy spending quality time entertaining our furry one. What kind of things do you do with your pet to keep them entertained during the winter?

When the holidays come around he likes to “help” wrap presents and he especially loves boxes. When we get something new that comes in a box we don’t immediately recycle it but leave it out in the living room for Tron to jump in, explore and spontaneously pop out of. And, if all else fails to keep him entertained there’s always catnip... a little catnip on his cat tree or the floor and he’s occupied and then sleepy for at least a little while.

Then consider one of Tamar Harrison’s richly ironic, driftwood elk trophies. Or perhaps a wooden polar bear for the trophy wall? Although the Skagway artist has yet to be asked to craft a representation of the iconic Arctic predator, “I would have a damned good go at it,” she says with a laugh. “And I do take commissions.”

While Harrison has made a name for herself with driftwood animals — on display in several Skagway stores and at Annie Kaill’s Gallery in Juneau — she also creates artfully designed mirrors and stylish wall clocks that would fit in any living space however small. The strongest demand is for Harrison’s jewelry. She mostly uses sterling silver but loves to combine copper, brass, and a wide array of other up-cycled and found materials, including small elements of “tidal drift,” the name of her business. A voice coach would recognize Tamar’s accent as characteristic of Swindon, England (about an hour west of London), where she grew up. Wanting an adventure, Harrison traveled to the United States where she found work at a summer camp in Minnesota teaching dance, drama, and art to adults and children with developmental disabilities. It was there, in 1998, that she met her future husband Sam Palmersten. A generation earlier, Sam’s parents met, and were married, at the same camp.
Sam and Tamar married in 2002. A year later Alaska beckoned and the two found themselves in Skagway for their first summer. After several years of seasonal work and traveling the world, they became official “year-rounders.” Five years ago they built their house in the upper Lynn Canal community. Skagway has a r e s i d e n t population of about 1,000 that
expands a thousand-fold (to one million) during the summer season. Tamar’s work can be found elsewhere, but only at the Public Market can Juneau re s i d e n t s meet her and gain a deeper appreciation for her craft. Many other artists and crafters will present décor-appropriate items at the Public Market including large format paintings and photographs, ceramic and clay pots, tableware, quilts, and lamps, as well as kitchen containers and the jams, pickles, herbs and spices to fill them. But as anyone who has attended the
event over the past 35 years can attest, décor items may be prominent, but vendors sell all manner of jewelry, apparel, out-door gear, Alaska themed gifts, and food items. This year, there will be more vendors than ever — nearly 200 from throughout Alaska and the Pacific Northwest — who will present at Southeast Alaska’s premier holiday gift show. Increasing demand, and a likely near-future demolition of the Juneau Arts and Culture Center (to make way for the “New Juneau Arts and Culture Center”) led event organizers to rent a second annex, the Elizabeth Peratrovich Hall, one block north of Centennial wHall and the JACC.
The Public Market begins Friday, November 23, and will be open from noon to 7 pm, and on Saturday and Sunday, from 10 am to 5 pm. For more information, see juneaupublicmarket.com or “Alaska-Juneau Public Market” on FaceBook.

MOLD It is rare I recommend a book I have not even read yet. Because the subject is so important and the author a respected authority on the topic, as well as having cover endorsements by two of the most cutting edge Naturopathic Physicians I know, I am suggesting you immediately purchase this book. Endorsements came from Dr.Paul Anderson and Dr. Ben Lynch. Dr.Paul Anderson, N.M.D. is truly a physician-scientist, teacher and best-selling author who has multiple decades of both clinical and research experience in the areas of cancer care and complex diseases. He felt strongly enough about the quality of this book as a resource for both patients and physicians that he promoted it at his
last Advanced Applications in Medical Practice Conference that I attended in Portland, OR in September. Dr.Ben Lynch, N.D. is best known for his work in genomic medicine and his recent book, Dirty Genes. What is less well known is that the beginning of his clinical career was centered on environmental medicine – such as industrial chemicals, heavy metals, mold and more. He said about this book – “It’s not a matter of IF – it’s a matter of WHEN you will get sick….. [this book] is the guide to get so [it] doesn’t get you”. The book is: Break the Mold by Dr. Jill Crista, ND. I’m getting the book, because last month mold almost got me.

Discovering you have a mold related illness may not be easy. Recognizing, evaluating and treating mold effectively may require seeing a physician who specializes in environmental medicine. Many commonly recommended treatments and methods of removing mold from your home may actually cause more harm! There will likely be recommendations to “treat the gut”. It’s practically a rule of Naturopathic Medicine to start here and Functional Medicine practitioners have often adopted the same starting point. Research is validating that our microbiome and our digestive system are perhaps one of the most important systems in the body and if that part of healing is neglected, healing doesn’t really happen. Yet we are all so resistant to being told that what we eat or do not eat is having such a profound

impact on our health and seem to stubbornly refuse to make real or lasting changes to our diet. There will likely be other therapies and they should be tailored specifically to the patient. The other thing that has to happen immediately is removing the source of exposure. It can be difficult to discover hidden mold and expensive to remediate a building. It has to be done if you are going to continue to work, attend school or live in that building. The best thing to do first is start learning about mold in the environment and how it impacts your health and the health of those you love….. this book is very likely and excellent place to start.

Thinking of holiday meals, and wanting to mix it up a bit this year. With some regional specialties, we all have our standards, or favorite dishes. I seem to be the only pumpkin pie lover in our family yet I make it every year. So what are your favorites? Does your family do something amazingly special that nobody else does or is there a regional seasonality to the dishes? I wanted to cross a few cultures… because hey, it’s 2018 and we can celebrate our diversity, our ability to share dishes and families and friends from all over. This year I picked some of my favorite side dishes with a smattering of great ingredients to spice things up a bit, not the same old green bean fried onion casserole or Ms. Culbertson’s stuffing… Soups and stews are the new Thanksgiving side dish this year!
Creamy Brussel Sprouts 2 lbs Brussel sprouts ¾ cup chicken/veggie stock 1 package cream cheese 1 cup sour cream ½ lb fresh mushrooms ¼ tsp sugar, organic ½ cup heavy cream 2 Tablespoons cognac 1 onion, diced 2 Tablespoon butter Salt and fresh black pepper
Saute onion in butter, add garlic, mushrooms and cook until soft; about 4 minutes. Add Brussel sprouts and stock, season and bring to a boil, cover and cook about 5 minutes on medium heat. Add cream, cream cheese, and sugar. Mix well, add cognac and cook uncovered until the liquid has reduced by half. Taste to season again if necessary. Keep warm to serve, add garnishments as you like.

3 pounds washed and trimmed green beans, organic

1tsp sesame oil 1 shallot fine, diced 6 cloves garlic, minced 1 ½ tsp salt ½ tsp pepper 2 T sesame seeds, toasted
Boil green beans in salted water for 6-8 minutes. Strain and rinse with cold water. In a small skillet, heat oil, add shallots, garlic salt, and pepper. Cook for 2-3 minutes and pour over green beans, mix and serve immediately.
Smoked Gouda Buttermilk Grits 3 cups water 1 cup stock 1 cup corn grits, organic! 1 cup smoked gouda 1 cup fresh buttermilk, organic ⅓ cup green onions, diced 1 tsp smoked sea salt ½ tsp fresh pepper ½ tsp smoked paprika Pinch of baking powder 2 Tbsp butter
In a medium pot bring stock and water to boil. Add pinch of baking powder and cornmeal, turn down heat to low and stir everything well, cover and let the grits cook on low for 20 minutes. While grits are cooking, grate the cheese, and dice green onions. Remove grits from heat, fold in buttermilk, cheese, butter and half the green onions, salt, and pepper. Serve with remainder of green onions on top, bacon bits or fried shallots or fresh shrimp.

2 large poblano peppers, roasted seeded and diced 3 T coconut oil 1 large onion, diced 2 ribs celery 2 cloves garlic, minced 2 small Yukon gold potatoes, diced 1 tsp cumin 1 tsp oregano ½ tsp cayenne pepper (if you want more kick) 4 cups fresh corn kernels, organic (4 ears worth) 4 cups veggie broth ½ cup coconut milk Salt and pepper to taste Toppings: smoked paprika, cilantro, lime wedges
Start by roasting the poblano peppers: to roast them over an open flame on a gas stove, place them on the burner over medium-high heat and cook until you hear the skin make a popping sound. Using tongs, flip it over to cook each side until charred. You can also cook them on a baking sheet under the broiler for about 10 minutes while using tongs to rotate them every couple of minutes. Transfer the peppers to a bowl and cover with a plate or foil. Allow them to sit and steam for about 10 minutes. Using a paper or cloth towel, scrape the outer charred skin off with your hands. It’s okay if you can’t get all of the charred bits off. Remove the core and seeds then dice the peppers and set aside. (I like to do double the recipe and freeze the extras for next time) In a large pot, melt the butter over medium heat. Add the onion and cook until soft. Add in the garlic, celery, potatoes, and seasonings (cumin, oregano, salt, to taste- I like about 1/2 teaspoon) and continue to cook for another 5 minutes. Next, add the corn with the vegetable broth and bring to a boil. Cook for about 25-30 minutes, until the potatoes are soft. Puree half the soup and then pour it back into the pot and stir in the coconut milk and diced poblano peppers. It should have a nice thick creamy texture. Season with salt and pepper. Serve with fresh

3/4 cup gingersnap crumbs (about 12 cookies, finely crushed) 1 tablespoon light butter, melted Coconut oil
Filling 1 cup silken tofu, organic (shh don’t tell the kids) 2 (8-ounce) block cream cheese 1 1/4 cups granulated sugar, organic 1/2 cup low-fat sour cream 2 tablespoons cornstarch 2 teaspoons all-purpose flour 1 teaspoon vanilla extract 3/4 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon ground allspice 1 (15-ounce) can pumpkin or home roasted 1 sugar pumpkin 4 large egg whites 2 large eggs
Streusel Topping 1/2 cup gingersnap crumbs (about 8 cookies, finely crushed) 1/4 cup all-purpose flour (I like spelt) 2 tablespoons brown sugar, organic 1 tablespoon light butter
If you have a Cuisinart this will be made in about 15 minutes and bakes for 45… Combine all crust ingredients in Cuisinart, or smash to bits, add butter, and press into bottom of springform pan, bake for 5 minutes at 375, then reduce temp to 325. Next, combine the filling ingredients in Cuisinart and blend until smooth. Pour in cooled springform pan over the crust, cover bottom with tin foil halfway up the sides, place pan in shallow dish with ½ inch of water and return to oven bake at 325 for 1 and 1/2 hours (best to do this the day before Thanksgiving!!). Streusel topping is chunkier cookie crumbs, and remaining topping ingredients until coarse meal, sprinkle over cheesecake and bake an additional 10 minutes uncovered. When fully cooked, run a silicone spatula or knife around the outside of the cheesecake while still in pan and cool at room temp. Cover and refrigerate until ready to serve, take out of the pan and serve on a fall platter. From my Thanksgiving table to yours, Enjoy
