Letter from the Publisher

Welcome to October! This time of year I usually find myself writing about Halloween and everything pumpkin. The theme is usually upbeat and festive. I am going to deviate from that a little bit so be forewarned. Almost six years ago our house was robbed and with the increase in criminal activity and burglaries I’ve read about this year, I just cannot get it out of my mind. Six years ago in December, I came home from the gym after only being gone from the house for an hour, short gym day, I know. I burst through our unlocked front door and went directly into the shower. A family member arrived shortly after for a preplanned shopping trip, and before we left we spent a good half an hour looking for my wedding and engagement rings. I chalked it up to being in a rush and vowed to look for them after we went shopping. I arrived home and as I walked into the living room, I realized all the wrapped gifts from under our tree were missing. I immediately tried to call the police and in my haste, shock and revelation that my missing rings were probably with the missing gifts, I actually opened my calculator app on my phone and typed the number in while staring blankly waiting for it to ring. I realize that sounds very odd but it is a

testament to how shocking and violating it is to realize someone has been in your house, perhaps while you were showering or doing other various things when you thought you were alone. Now, no time is a good time to get robbed but this particular time in my life was pretty much the worst timing. My husband and I just bought a house and had used every single penny we had on a down payment, we lived for months with empty rooms because we couldn’t afford to furnish them. I’d recently left my secure state job and started this magazine and anyone who’s started a business knows that in the beginning it can be rough, stressful and those ends don’t always meet. My husband had been laid off from his prior job during bad economic times and was months into a new one that didn’t pay as much and the final blow, he’d just had knee surgery the month before and we were paying off medical bills. We were in debt, like use-the-giftcards-from-yourwedding-to-buy-peoples-christmas-presents type of debt. I finished up my phone call to JPD and started to make my way around the house. I discovered that every single room had been sifted through. Odd doors were left open, an iPad that had been under a bed was gone, my professional camera and lenses

Safety First were missing... Tools, purses, keys, were gone. Now, the moral of my gloomy article. We prepared our house and ourselves after this incident and you should too with these relatively inexpensive and easy tips. Home security cameras: We have security cameras that were fairly inexpensive, both inside and outside our house. They upload footage to the cloud that can be watched on a smart phone. They are motion sensing and will alert the homeowner to any suspicious activity and as a bonus, they monitor air quality so they can alert you to unhealthy environmental changes. Deadbolts and door locks: We have automatic locks on the doors including deadbolts that can be set with our phones in case we forgot or need to let someone in who has been locked out. Lights: We have motion sensor lights on the front of our house that can be set off by vehicles, people or animals. Dogs: We don’t have dogs but luckily we have neighborhood dogs that alert us to any suspicious activity, bear or otherwise. This isn’t always a blessing when a bear decides to stroll around at 4am but at least you know

something is going on. Awareness: An unfortunate part of this burglary is that it has changed me in ways I cannot revert. I watch most unfamiliar cars that drive down our street from my home office window, sometimes getting up, grabbing my camera and watching them to the end of our cul-de-sac. If I get spooked, I look around for the nearest object I can use to project myself and the most efficient escape route. On the rare occasion that my husband is out of town, I will check the house over before bed even if the doors have been locked for hours and when I am in my room I will lock the door and wedge a chair under the door handle to insure I am safe while asleep. I realize most of the paragraph seems like overkill, and it is but that’s personally how I think after this incident. It’s smart to be safe, and it’s a perspective into what a nonviolent “materialistic” crime can do, burglaries do create victims, not only with a monetary or material loss but also a loss in the feeling of being safe. Be safe out there Juneau and Southeast Alaska!

HOMEWORK:

With all of us finally settled into the school season, I hear parents discussing the common and hotly debated topic of homework. There seems to be a wide spectrum of what any child might expect to be required of them. Homework policies vary not only based simply on whether the child is in public or a variety of private school methodologies, but also from state to state, district to district, and among individual schools of the same type, in the same city. Even different teachers of the same grades in the same school often have vastly different approaches to what kind of homework, if any, or how much to assign. If you are anything like me, while you certainly do not want your child to fall behind, having your child spend potentially hours doing more school work at home everyday can be challenging for both child and parent and may even be harmful? Stanford Graduate Education studied

School of the health

effects of nearly 5,000 students from 10 different high performing high schools and found that over half of the students found their homework burden to be a significant source of stress, resulting in anxiety that impacted their health. Most commonly reported were headaches, depression, sleep deprivation and exhaustion, gastro-intestinal disorders and weight loss. These students reported that they felt more isolated from friends, family and other social activities. Many students report their homework is simply “busywork”. To make it worse, other studies have shown that, with the exception of math, all this extra homework really is not improving students overall test scores. Why? What if we are asking the wrong question when we discuss homework. We keep asking is it too much or is it too little, when maybe By Dr. Summer Beattie, ND the real question is what is

the quality of the homework. Lucky for us parents, educators started asking this same question, and Kurt Fisher, Ph.D. founded what is known as Mind, Brain, Education at Harvard Graduate School of Education. In 2004, that had grown into formation of the International Mind Brain and Education Society (IMBES). This is the first group focused strictly on relating biology and cognitive science with education. They are the first to have a publication where neuroscientists and biologists could collaborate with educators to create quality research and publish good science that could then be implemented. Schools have already started to utilize some of these evidence based techniques, such as “spaced repetition”, “retrieval practice”, and even “cognitive disfluency”. These strategies often are not applied to homework however.

All of this may sound complicated and daunting. So, what can you do at home, starting today, to ensure your child is optimizing their

learning? The answer is surprisingly simple. In fact, you probably already do it, just maybe not as consistently or often as you should. The answer: READ. Read to your children, read with your children, have your children read to you and have them read to others - siblings, dolls or stuffies and even just themselves. Just spending 20 minutes a day, every day, reading with your child is enough to have huge positive impact.

HOMEWORK:

With all the debate around homework, this is the one thing I find educators, scientists and even parents usually agree on. Reading is fundamental to development of all areas of learning. It’s never too early to start either! By 23 weeks, developing babies are starting to hear in utero. They are hearing t h e

heartbeat of their mother, her breathing, music and voices outside the womb. We know that sound in utero is an essential part of the brain’s formation, later helping with development of the ability to reason. Around this same time, the auditory cortex is starting to function, and once it does, the baby starts to learn and respond to the low frequency rhythms and tones of the voices around it. Talking to, reading to, playing music and even incorporating soothing touch to the baby while in in utero have shown that they are born with language recognition. As a bonus, they also exhibit a predictable pattern to soothing, especially when the same to the techniques used to communicate and touch before birth are continued after birth. Infants who are read to show a much larger vocabulary acquisition. Still, studies have yet to be done on whether reading to your unborn child confers an on-going and long-lasting academic edge. The relationship between parent

and child created by a practice of reading is certainly a positive one with long lasting benefits. For your child that is preparing to enter school or is in school, some of the benefits of reading and stories include: building listening skills, fostering the imagination, understanding cause/effect, exercises reasoning skills, encouraging abstract thinking, creating social structural norms, helping children learn to distinguish fact from fantasy, improving concentration, and developing memory strength. The ability to read opens doors to obtaining information on limitless interests and themes. Reading cultivates the ability for all of us to see the world through the story-teller’s eyes, deepening our empathy and effectively allowing self-education and development. This is one reason that throughout history, literacy has been strongly linked to democracy. Reading with your child will change not only their life and yours, but

possibly the world. “One book, one pen, one child and one teacher can change the world.” ~ Malala Yousafzai, 2014 Nobel Peace Prize Winner and Pakastani girl shot by the Taliban for promoting literacy for girls Dr. Summer Beattie,ND was born and grew up in Southeawst Alaska - it will always be home. A 2004 graduate of Bastyr University, she served two terms on the board of directors for the Washington Association of Naturopathic Physicians, and has worked in a variety of primary and specialty care settings. This has given her a broad wealth of experience that she now uses in a unique clinical practice with a focus on rejuvenative physical and aesthetic medicine. 5 tips to solve separation anxiety in your pet (BPT) - With good weather and flexible work schedules, summer time is the best season for spending some extra time with your pet. However, once fall comes, the kids aren't the only ones in the family that experience the backto-school blues. Separation anxiety can happen for many reasons among pets, but with the changing routine and lack of attention due to busy schedules, back-to-school is a common time when pet owners may start noticing changes in their dog or

cat's behavior. To support them during this time Dr. Kurt Venator, Purina's Chief Veterinary Officer offers five tips to address separation anxiety in pets. 1. Get your pet into a routine. Pets love routines because it makes them feel secure. During the summer, kids are always around to make things entertaining and exciting. When they suddenly disappear, some cats and dogs will feel sad and confused while others may experience real separation anxiety. It's important to get your pet acclimated to the change by replacing their old schedule with a new one. This new schedule should include allocating time to play after work and keeping a consistent schedule when coming and going from the house. 2. Burn off some energy. Some pets deal with separation anxiety by engag-

.COM

ing in negative or destructive behaviors, such as howling, excessive barking or chewing on inappropriate objects. A great way to keep your dog from doing this is to take them on a walk in the morning before you leave the house to help burn off some of that extra energy. For cats, consider playing with them at night as well - whether it's making them chase a feather wand or play with a ball. 3. Create an interactive environment. Back-to-school season is a great time to buy your pet a new, interactive toy to play with. This will help mentally stimulate them and keep them occupied during the day when children are away at school. For dogs, chew toys are a way for them to relieve their anxiety, frustration and boredom. For cats, creating a play area - including scratching posts and cat furniture - can keep them entertained even when you're not home. 4. Turn up the tunes and start with baby steps. Try leaving some soothing music on at your home while everyone is out of the house. The music

will help drown out distracting noises that your dog may mistakenly associate with their family coming home. Some animal shelters have even found that playing calming music helps animals in their facilities relax. Additionally, help your pets adjust to a new routine by providing them with clear cues. For example, jingling your car keys prior to leaving for work each day can provide your pet with an important audible cue and ultimately, help with the transition to a new family schedule. 5. Spend time with your pet. It's important to remember that while you may have had a long day, your pet may have been sitting at home feeling lonely, waiting for you to come home. Spending some quality time with your pet at the end of the day is critical to helping keep them active and mentally sharp. It may be tough to fit into a busy work schedule, but be sure to build some interactive time - whether it's a walk or cuddle session -to benefit both you and your pet.

Emergency preparedness 101: Know how to protect

your

family against carbon monoxide poisoning (BPT) - Few areas of the country are immune to natural disasters or severe weather. Whether you live in a hurricane zone or face icy winters, it is important to prepare your home and family to weather the storm and know the potential health and safety risks that may arise in emergency situations. Beyond inconvenience, widespread and long-term power outages resulting from storms raise a much more serious concern: carbon monoxide (CO) poisoning. While the poisonous gas can come from any fossil fuel-burning appliance or vehicle, the risk posed by generators is of particular concern because of this year’s devastating storm season. “Simple preparation, along with an understanding of the risks of CO, are key factors for protecting your home and loved ones both during storm season and throughout the year,” said Tarsila Wey, director of marketing for First Alert. “The risk of CO can occur anytime - not just during emergencies - which is why installing

and regularly testing CO alarms are an integral part of any home safety plan.” What is CO? Often dubbed “the silent killer,” the gas is colorless and odorless, making it impossible to detect without a CO alarm. According to the Journal of the American Medical Association, CO poisoning is the No. 1 cause of accidental poisoning in the United States and is responsible for an average of 450 deaths each year. CO poisoning is notoriously difficult to diagnose - often until it’s too late. Symptoms mimic those of many other illnesses, and include nausea, headaches, dizziness, weakness, chest pain and vomiting. In more severe poisoning cases, people may experience disorientation or unconsciousness, or suffer long-term neurological disabilities, cardio-respiratory failure or death. Sources of CO may include, but are not limited to, generators, heaters, fireplaces, furnaces, appliances or cooking sources

using coal, wood, petroleum products or other fuels emitting CO as a by-product of combustion. Attached garages with doors, ductwork or ventilation shafts connected to a living space also are sources of CO. What should you do? The National Fire Protection Association recommends installing CO alarms on every level of the home, including the basement, and within 15 feet of all sleeping rooms. These alarms are the first line of defense against CO poisoning. Checking alarms regularly and following manufacturer instructions for alarms and all home equipment play an equally vital role. Additional areas to consider include the kitchen stove, a frequent source of CO poisoning in the home. Ensure the kitchen vent or exhaust fan is running to limit exposure. For any fuel-burning appliances in the home, make sure to have a professional inspect them regularly to detect any CO leaks. This includes items such as the furnace, oven, fireplace, dryer and water heater.

If you have an attached garage, it is extremely important to never leave your car running inside. Even if the garage door is open, CO emissions can leak inside the home. CO alarms should be battery-powered or hardwired with battery backup. To help ensure your family is protected, First Alert offers a variety of alarms to meet all needs, including a table-top alarm with a 10-year sealed battery and digital display to see detected CO levels in parts per million. Additional alarm options include plug-in and wall-mount alarms, hardwired alarms with battery backup, and a combination smoke and CO alarm for 2-in-1 protection. In addition to carbon monoxide alarms, fire extinguishers, along with smoke alarms, should be an integral part of a comprehensive home safety plan. Most importantly, if your CO alarm sounds, go outside for fresh air immediately and call 911. To learn more about CO safety or other home safety tips from First Alert, visit www.firstalert.com.

Mushroom Galettes For the pastry: 1 1/4 cups (160 grams) all-purpose flour

1 garlic clove, minced

1/4 teaspoon table salt

1/4 teaspoon finely grated lemon zest

8 tablespoons (4 ounces or 115 grams) cold unsalted butter, cut into pieces and chill again

1/4 cup chopped flat-leaf parsley

1/4 cup (60 grams) plain yogurt or sour cream 2 teaspoons (10 ml) fresh lemon juice 1/4 cup (60 ml) ice water

For the filling 3 small-to-medium leeks, dark green tops discarded, white and light green parts halved lengthwise 1 ½ cup fresh mushrooms (cremini, white, wild if you have them) 2 tablespoons olive oil

October

means the beginning of fall and start of mushroom season. I’ve spent many hours of the past few years harvesting, hiking and foraging wild mushrooms across the Pacific Northwest. Spending time in the forests of Southeast there is a bounty of harvest available when you know what your looking for. Always, always take a guidebook, some clean white paper for spore printing and a paper bag with a few paper towels for wrapping. Locals in Juneau recently participated in a wild mushroom identification class and even in the wet darkening days of fall there is treasure to be found in the soft moss and hidden under leaves. My favorites are chantrelles, morels and bollettes and occasionally you can find chicken of the woods growing on trees in the area. For cooking and flavor these hit it big time. Always wrap in paper and keep dry and free of smushing, I carry a sharp mushroom knife like this with me and a copy of All That the Rain Promises and More: A Hip Pocket Guide to Western Mushrooms.

Recipe

2/3 cup grated gruyère cheese, divided

For the Sauce: 2 Tbs butter 2Tbs flour ¾ cup whole milk Fresh nutmeg Salt and pepper 1 Tablespoon French or English Dijon Mustard (not whole grain)

Kosher salt

Pastry Glaze:

Freshly ground black pepper

1 egg yolk beaten with 1 teaspoon water

1/2 15-ounce can organic cannellini beans, rinsed and drained

Directions Make dough: Stir the flour and salt together in a large bowl. Sprinkle bits of butter over dough and, using a pastry blender or your fingertips, work it into the flour until the mixture resembles coarse meal, with the biggest pieces of butter the size of tiny peas. In a small bowl, stir together the sour cream, lemon juice and water and add this to the butter-flour mixture. With your fingertips or a wooden spoon, mix in the liquid until large lumps form. Pat the lumps into a ball. Wrap with plastic and refrigerate for 1 hour, or up to 2 days. Meanwhile, prepare filling: Heat the oven to 400 degrees F. To clean your leeks slice the length of the leek about a half inch into the white area. Run under cold water rubbing each layer with your thumb to loosen compressed dirt and soil that gets caught as the leek emerges when growing in the field. Arrange leeks cut-side-up in a large (9×13-inch) baking dish with cleaned and cut mushrooms. Drizzle with olive oil. Sprinkle with 1 teaspoon kosher salt and freshly ground black pepper. Flip the leeks so that their cut sides face down, add 3 tablespoons of water (or wine) to the dish, cover tightly with foil and bake for 20 minutes until tender. Uncover and add chopped and cleaned mushrooms continue roasting a for 10 to 15 minutes, or until caramelized. Leave oven on. Let leeks and mushrooms cool slightly, then chop into bite sized pieces and place in a large bowl. Toss with beans, garlic, lemon zest, parsley, 1/2 cup grated cheese and season with salt and pepper to taste.

Make the sauce: In a large skillet melt butter over medium heat and then stir in flour until a paste forms. Very slowly drizzle in milk, whisking the whole time to keep the mixture smooth. Add nutmeg, salt and pepper and cook, stirring, until mixture has simmered for a couple minutes. It will be thick and get thicker as it cools; this makes for a better spread. Scrape into a bowl and stir in Dijon. Adjust seasonings if needed. Set aside to cool. Assemble galettes: Divide dough into 4 pieces. On a floured counter, roll the first piece dough out into a roughly 8-inch round, although it really doesn’t need to be perfectly shaped. Transfer to a large parchment-lined baking sheet; I like to fold my dough gently, without creasing, in quarters then unfold it onto the baking pan. Add at least 2 Tablespoons of sauce then sprinkle about 1/4 of the prepared filling into the center of the dough, leaving a 1 1/2-inch border. Sprinkle with about 1/4 of the remaining cheese. Fold the border over the filling, pleating the edge to make it fit. The center will be open. Brush crust with egg yolk glaze. Repeat with remaining dough and filling, making 4 small galettes. Bake the galettes: For 25 to 30 minutes, until golden brown all over. Remove from the oven and let stand for 5 minutes, then slide the galette onto a serving plate. Or, if you’re planning ahead, let cool completely and refrigerate until needed. Gently rewarm before serving in a low oven.
