his home had an original kitchen from the early 80’s and was in desperate need of an updating; for both form and function! This project is a perfect example of how relocating a few key elements of the layout can improve the overall efficiency of a kitchen. The original layout had countertops that were “chopped up” and provided very little counterspace to work at, storage was minimal, and the overall aesthetic of the kitchen was dated and worn. We also determined that the useless soffits located above the cabinets could award this kitchen some much needed long term storage, so these were promptly removed during the demoli-

Part 2: Interior Maintenance

ith fall just around the corner there are certainly many things to look forward to in Southeast Alaska. I enjoy fall because of hunting season, it’s a great time to take fish on a fly rod, and it reminds me to start planning for ski and hockey season. Fall is also a great time to prepare your home for the winter months and to get caught up on yearly maintenance items. This will be a two part series – Part I (in the August issue) focused on the home’s exterior maintenance items and when they should be completed. This month’s focus is on interior maintenance around the home. Next month, Part III will cover the mechanical systems of a home and the maintenance involved with those items. Home maintenance will increase the life of your home as well as keep it healthy for all residents. With exterior maintenance I start at the top of the home and work my way down, I use the opposite approach

Checking and cleaning the items in the kitchen and bathroom really don’t take much time. If they are performed twice a year, any problems that are found can usually be fixed reasonably. Under all sinks throughout the home, check the supply water lines and replace them with braided stainless steel hoses. It’s also important to be aware of what is stored under your sink. I have often noticed a lot of potentially hazardous chemicals stored there and I would prefer to see those materials stored outside of the home or disposed of properly all together. Some time should be spent in the laundry room. Check the supply lines to the washer. The supply line hoses are a place that commonly fail in a home and can cause thousands of dollars of damage. These hoses, like the bathroom hoses, should be the braided stainless steel hoses. The shutoff valves to the hoses should be functioning properly as well. Check the vent

to the dryer to make sure it is clean of lint buildup and that it’s sealed and ducted to the exterior of the home. If a dryer vent is not ducted to the exterior it will release gallons of water as a vapor into the air of your home each day. Some of the miscellaneous items to check are the garage and windows of the house from the interior, since we have already checked the exterior. If the garage is attached to the home treat it like the home and make sure that all potentially hazardous items are stored properly or disposed of completely. Check for any water damage throughout garage. Check all the windows for signs of water intrusion and see if they are functioning correctly.
Moisture can also find its way through the home and into the attic in vapor form and condense on the underside of a cool roof deck in colder temperatures. This condensation can happen on a daily basis if the home humidity level is high enough and the roof deck is at dew point temperature. Another thing to check in the attic is any vent ducting run through the attic. Make sure all ducting is sealed correctly and vented to the exterior. It will also be easy to see the insulation in the attic and if the insulation is in place or if it’s time to add more.

One of the last areas to check is the attic. Most of the attic can be checked from the access but sometimes it is wise to check all the under decking of the roof for signs of moisture if the roof is questionable. Not all water-damaged areas of an attic are caused by roof failures or problems.
Set aside a rainy day in early fall to complete your indoor maintenance as most of these maintenance items usually only take a day or possibly a weekend to accomplish. Next month, I will provide a checklist for all the mechanical systems maintenance to help you maintain a healthy, safe, and durable home. HUNTING SEASON IS HERE AGAIN!
By Hannah Lindoff I love the fall in Juneau. I know this is not a popular opinion but there are so many nice things about fall. I like the nip in the air and the way the undergrowth suddenly dies down and the landscape of the trails around town changes. The eternal summer debate - do I bring a coat, do I not bring a
coat?- is laid to rest and I can move forward confidently sporting outerwear. I like the tourists better in the fall. The few tourists still loitering through town, usually huddled together under awnings, are more sympathetic figures than the hoards that swarm the streets in the summer. My favorite thing about the fall though, is probably the food. It’s time to bring back hot cocoa and spiced cider. It’s time for pumpkin dishes and soup. And most importantly in our household, it’s time to eat fresh deer steaks! To say my husband is an avid hunter is a gross understatement. My husband
is obsessed with hunting. All year long he points out ridges and valleys in the mountains to me and tells me about what he thinks the deer are doing. We had his 30th birthday party at Cabella’s and we were there so late they locked the doors after us when we left. I’d like to believe that hunting is more cost effective than buying meat at the store, but when I take stock of all the expensive hunting gear in our house, I can tell you that this certainly is not the case. However, game meat is without a doubt healthier than store-bought meat so we try to eat it as often as possible. Lately we’ve been enjoying deer jerky

PARTY BOOTS When Southeast Alaska serves up one of the coldest, rainiest summers, it’s time to celebrate boots. The funny thing is even if you live in LA or Ve-
made from the hindquarters, where you’ll find the most tender steaks of the buck. The meat is cut into thin strips and seasoned with teriyaki sauce and red pepper flakes. Then it’s set in the dehydrator for 7-8 hours. The jerky should be kept in the refrigerator in a Ziploc to retain its moisture. Last year we tried to freeze jerky but the quality went way down so we have resigned ourselves to eating the jerky within a few weeks of processing (if it lasts that long!)
The super star product of the hunt is of course the deer steaks. The tender loins, the smallest but most tender muscles of the deer make the best steak and eggs for morning-after breakfast. The all around favorite is the backstrap, or loins, which run along the spine. The backstrap is best prepared medium-rare and with minimal ingredients (salt and pepper and olive oil). Be sure to remove the “silver skin” as it’s extremely tough; this simple but critical step.
We like deer burger not just for burgers but in lasagna, tacos, enchiladas and chili.
My husband also recently spent the better part of a day grinding tougher, more sinewy meat into burger (cuts such as the neck, shoulders, and rib meat). This is a labor-intensive project, especially when you are dealing with a handcrank grinder, but the final product is wonderfully versatile and holds up well in the freezer. We like deer burger not just for burgers but in lasagna, tacos, enchiladas and chili. It’s important, however, that the meat is thoroughly cleaned before it goes through the grinder, otherwise you will spend a lot of time stopping to clean the grinder. It is also worth your time to send the meat through the grinder twice. Nothing ruins a lasagna faster than biting into a hard chunk of…well, you’re not really sure what it may be.

Raspberry Vinaigrette

Ingredients

1 1/4 cup Fresh raspberries
1/2 - 1 tbsp Red wine vinegar (see below) 1/2 tsp Dijon mustard or Moosetard (ginger birch is my fav)
1/2 tsp Sea salt (little generous)
2 1/2 - 3 tbsp Pure maple syrup or honey (adjust to taste and sweetness of berries) Freshly ground black pepper and kosher salt to taste
3 tbsp Walnut oil or other oil of choice (see below)
1/2 cup Toasted pecans (see below)
1 tbsp Water (to thin if desired)
Instructions: In a blender: add all ingredients (except pecans), and blend until fully smooth and creamy. If straining (or if using a whisk add all ingredients and then oil slowly to emulsify, strain and then return vinaigrette to blender and add pecans. Pulse through until pecans are well incorporated and mostly crushed, but still maintaining some texture, and add water to thin if desired. Note 1: Depending on the sweetness of your berries, and how much tang you enjoy in a vinaigrette, you can adjust the amount of red wine vinegar you use. Start with ½ tbsp, then add the extra ½ tbsp if you think you’d like the extra acidity.

t’s that time of year when Alaskans (and wildlife too), are spending hours upon hours harvesting berries in the hills woods and yards. While I won’t be divulging my sacred nagoon berry picking patch (R. arcticus or .R chamaemorus) I will tout our tamed and cultivated berry friend the Raspberry. While a great source of Vitamin K, Magnesium, Vitamin C, Manganese and Dietary Fiber, raspberries also contain Omega 3 and 6 Fatty acids, who knew. As a member of the genus rubus, raspberries are in

the rose family and are believed to be brought to North America via the Bering Strait, so Alaska has wild strains but most of us have a garden area or fence line dedicated to the Chilliwack, Summit or Boyne variety. The UAF Cooperative Extension service recommends avoiding planting berries and grapes in areas where potatoes, tomatoes, peppers, and eggplants (oxalic veggies) have grown within the past three years, in full sunlight and well-draining soil. I always add a few inches of bladder whack seaweed to my beds for the winter.

I like pairing my greens with a creamy tart chevre (goat cheese), pecans or nuts preferably candied (sprinkled with a salt/ sugar/spice mix and baked for 15 minutes), sliced red onions, with a cold Alaskan beer. Note 2: Extra-virgin olive oil can be a little overpowering to the fruity flavor of the raspberries. So, either use a more neutral oil like walnut, or use extra-virgin olive oil (about 1 – 2 tbsp). Note 3: I quite like the nutty sweet flavor of the pecans in this dressing. It’s not essential, but consider trying it, it adds another dimension that is very pleasant. Note 4: If you are a stickler for not having seeds in the vinaigrette, strain through a fine sieve after blending. If using a high-powered blender (vitamix), it pulverizes the seeds quite well, and there are not too many nibbly seeds noticeable. But, straining is still an option. If adding the toasted pecans, simply strain vinaigrette, return to blender, and then pulse through the pecans.

We will stay away from processed foods whenever possible, and will be knowledgeable as to where our ingredients
come from. Halcyon Café will be a very conscious business.
And the do-gooder stuff, we’ll always be raising money for a specific charity or community project in Juneau. This will let donors (or, grilled cheese eaters), know exactly where their money is going, as well as educating the public on various issues in our community. Halcyon will also offer free space to non-profits for board meetings and events, connect them with volunteers, and provide information about what they do.
Halcyon Café will also offer classes. Yoga classes will be offered in the evenings at 7, for those who get off of work later than most, as well as half hour classes at lunch time.
