Welcome to September! I cannot believe we are at the tail end of summer and beginning of fall. As I try to enjoy the last few days of summer I can’t help but notice the leaves turning and the sky mourning the end of the season. As the weather starts to turn, I start making a mental list of indoor activities to do with the family. Dimond Park Field House: The field house has a lot to offer from various sports,
the indoor track and turf for tots. There seems to always be something going on at the field house and it’s a great place to burn some energy, even if it’s walking the track for a few minutes. Pool: I just found a new love for swimming. I have a friend who swam competitively and also taught swimming and now she’s teaching me! I’ve had a great time learning new drills with her, and of course using the floaty kick board while having a chat when our heads are not underwater. Lucky for us there are two pools in town so no matter where you live they aren’t too far away. Gym: We have a number of gyms and workout facilities in Southeast. I am guilty of not visiting the gym and I have been a member for quite a long

What to do... time. My “excuse” is that it was summer and I was doing a lot of outdoor activities but deep down that excuse is mixed with laziness and the fact that I have a little one. Some of our local gyms even offer childcare which is great and takes that excuse out of my book. Library/SLAM: We have two beautiful state of the art educational buildings both in the valley and downtown. They are great places to go check out on a rainy day. Read a book or explore and check out the various sections and exhibits! Mall Walking: As a parent of a toddler we often “mall walk” while the other parent is eating or shopping. One of our favorite restaurants is Little Hong Kong in the valley. Our little one will eat two bites of wonton soup and is fully fueled and ready to explore. We meander down the hallway, waving to other mall walkers and discover “exciting” things like the gumball machine or the fish tank in Bauer and Associates office. Costco: And then there’s shopping.
Who doesn’t love Costco any day of the week but especially on a rainy day. We love to go down every isle, check out what’s new and exciting, have a sample or three, and usually run into friends or family and have a chat. We always find something we “need” to have that we didn’t anticipate buying when we first entered and that is all part of the excitement and experience. And of course when you exhaust all your resources indoors, throw on a coat, hat and some boots and hit the pavement or trails. I cannot express enough how getting outside for even twenty minutes, even if the weather is terrible, changes my mood. It’s easy to be gloom and doom while looking out the window but when you are out in it, it’s easier to gain an appreciation and see the beauty in it. Happy Fall everyone, stay warm! SCHEDULING SELFISHNESS FOR A SUCCESSFUL SCHOOL YEAR It is expected that Southeast Alaska will get a short summer compared to its’ closest neighboring states in the contingent US. This year however, it seems summer never really showed up at all and it’s already over! I was in Juneau for an always too brief visit, so while the weather didn’t bother me (I almost found it a relief from the heat and forest fires we are dealing with here in the Pacific Northwest) I kept hearing from friends and family about just how gray this summer had been. Berries were even noticeably absent on my hikes. By the time you are reading this in print, kids in most Southeast communities will have started back to school for the fall. Here in Washington, my little ones won’t return to the classroom until after Labor Day. Still, I already feel behind in preparations. So if you were unable to make the time to examine what worked and what did not work
last year to make getting kids to school on time, homework done (if they have any), planning good nutrition, before/after school care or activities and transportation, weekend commitments, and, and , and…… deep breath. You should still do it. Do it now so that you can implement changes right away to ensure home is not more stressful this year.

This is where the hooks are for the kids backpacks and near their shoes and coats. The idea is that whenever coming or going, there is a designated space for every member of the family to have the things they need to grab on their way out the door. This is also the space where these things should be placed when coming in the house. Nothing makes for a stressful morning like frantically searching for something you are supposed to send to school or take to work. BEFORE you start filling in those calendar days, I suggest that you consider choosing regular days and times for fun and self-care and write those into the calendar first. Be so bold as to select days to keep clear of commitments. These blank days can be a breath of fresh air in an otherwise extremely busy life. They also build flexibility into your week or month so that you can respond to impromptu opportunities. Plan a vacation – even if it ends up being a “staycation”. I strongly believe that one of the reasons
parents burn out and have little time or patience to really be available to meet their kids needs is because we have not committed to taking care of ourselves. I’m as guilty as anyone else. The more I work with patients the more I realize that the root cause of most of their health concerns is stress and a lack of commitment to self-care. They have not consistently made the time for regular exercise, activities or classes they enjoy, time with friends and family that is playful and relaxing, maybe a massage or even menu planning and meal prep so their nutrition is supportive of health and not just convenient. They haven’t mastered the art of saying “no” to most things so that they can fully say “yes” to the most important things. Motivational speaker, Lisa Nichols, often shares something her grandmother would say: “Conviction and Convenience do not live on the same block.” If you are resolute in your belief that lifestyle is important to your health and wellbeing, you may have to forgo some conveniences because they simply do not support your conviction.

I’m Sorry I’m
sorry mom that I didn’t really understand so many things growing up. I vividly remember when I was a child, my room a disaster of toys and blankets, a giant chalk board for drawing, stuffed animals strewn about, and lord knows what else haphazardly in piles. I remember my room was supposed to be clean by the time you got home, and it wasn’t. You cried, and said you ‘didn’t know how I would ever make it as an adult if I couldn’t even clean up my room’. At the time I 100% didn’t understand what the big deal was, but I remember that being one of my first light bulb moments as a child. “Uh oh. Mom is crying because of me, something important must be happening right now. I should pay attention.”
I don’t really remember if I kept my room clean or not after that. Mostly my childhood memories are individual
moments of trying to find my glasses I misplaced and taking picture of my favorite stuffed animal Puppy. (Thanks mom for financially supporting my photography habit at such a young age, even though 99.9% of my pictures were terrible and I don’t even have them anymore. But I did learn a lot and hopefully that shows now.) I like to think that I changed my behavior as best a child can. Though I can’t really say that my cleanliness extended much beyond my bedroom door. Fast forward to college, and I’m 90% sure my room is 70% clean about 80% of the time. I even had an apartmentmate tell me that I was ‘possessive’ of my food area when I lived in co-ed housing because I had to have all my stuff in one neat little area. But I just explained to him that in actuality I just needed my food all
in one spot, otherwise I would never remember what was mine and I’m sure food would go to waste. It had nothing to do with ‘claiming territory’ as he called it, it just had to do with me not remembering what I bought. He laughed and said “oh, ya, I forget which food is mine sometimes...” Point made. Who knows, maybe you even helped someone else’s kid out. I’m sorry parents that I made exasperated sounds when you would ask me to grab something from t h e
p a n t r y. “Mom, this expired last year.” Now I understand that keeping a pantry organized and keeping food rotating through is not as easy as a single cupboard in college or shelf in the fridge. That buying in bulk from Costco is both a blessing and a curse. Having my own pantry now, I understand what it’s like to buy a giant box of canned green beans, because it’s cheaper than buying single cans. #BallerOnABudget I have been looking at the box for a while now, as I slowly use a can at a time. How long will that box last me, lord only knows. But I guess I should look at the expiration date to make sure I use them up in time. Because now I understand how that happens. “Mom, why do you have like, 3 things of this?” “Because I forgot we already had some and I bought more.” Or conversely “what, we are out? I swear we had some in there.” Ask me how many individual cans of tri bean blend I have in my pantry right now. It’s more than 5 but less than 10. Why? Because I swear that I was out when I was at the store so I bought more. Made some awesome sweet potato fries, and lo and behold, no ketchup. What? That can’t be right. I totally have more ketchup…. *checks the wet drawer in

the pantry* Nope. Huh, guess I don’t. Dang it. Now if I want to do any large food runs, I actually take a picture of my pantry and my fridge, so when I’m at the store and think to myself ‘oh gee, I wonder if I have this,’ I literally look at my pictures and see if I do or not. Because how does anyone actually remember absolutely everything that they have? I’m sorry parents I thought you were superhuman. Speaking of superhuman, how did you keep the house so clean, when I distinctly don’t remember helping with chores very much? A funny story you like to tell is when we were toddlers we used to go around and use our fingers to scratch up carpet lint. So you would vacuum all the time to make sure we didn’t eat random things and literally had nothing to find to put in our mouths. And here I say that 90% of dog parenting is yelling ‘what are you eating!!?’ Sounds not too far from babies. But even when we were older, the house just seemed to magically say clean. I now know that is a lie. That in fact, time and energy are invested into keeping a clean house, not magic. And let’s talk about that pet you didn’t let me get until the stray cat showed up in our backyard and out of pity you took kitty in. Mom, I vacuum my house just about every 3 days right now, because between the cat and the dog there are little tumbleweeds of fuzz if I don’t keep up on it. Continued: I’m Sorry As awful as we probably thought you were, so much so I guess I put slugs in my pockets to bring home as a pet, I think you made the right call. And I’m sorry that I didn’t understand even 30% of how much work it takes to actually take care of another little living thing. Now that I have my own pets and my own place, I understand what all is involved and I can say with confidence I wasn’t ready to be that committed to un-fun chores for years of my life. But I think my biggest apology is, I’m sorry I hounded you about not starting those ‘dream’ changes, or those home improvements you talked about doing. Wow, I’m a hypocrite FOR SURE on this one, and now I understand. Living in my place for 2.5 years, there are plenty of things I want to change, update, make a little different. My grandiose plans include Home Depot shopping, cart screen shots, and plenty

of nights spent on Google images. Have you seen my Home and Crafty Pants Pinterest boards? Let me tell you, they are pretty fantastic. But that’s exactly it, that’s all they are: they look fantastic. They have not actually made my house look any different. Well, except for a few things. I will give myself credit for the five things I have actually finished out of the tens I have thought of. But actually finding the time, motivation, money, and suppliers to do those things is hard. And living in Juneau doesn’t make it any easier. It’s not a laziness or a commitment factor, but in the scheme of life it’s just not a priority for me right now. When I look at the actual dollar value to things, I have to think if it really should be done or not. Spending $600 on a security system was something that I felt was worth it for my home. So I did it. Because I do have legit fears that one day my house will catch fire and no one will

know to save Kiska and Ember. But it’s not the fun and visually appealing changes I want to make. It’s that lame adult choice that helps you sleep better at night but in the morning everything still looks the same. But I guess I can still look at the same obnoxious heat register covers, the same miss-matched outlet covers for a while longer. Because, I will be living here for some time. And I guess that means that you will still hear about the beautiful new wood doors I want to put in instead of these dreadfully lame white ones. And as you have listened and talked with me while having the patient wisdom I lacked, I’m sorry I wasn’t able to do the same for you. But my goal in life is for personal growth and always striving to be a better person. So thank you mom and dad for tolerating me when I clearly didn’t get it. In the future I will listen with
more patience, more understanding, and actually try to be productive and help you. Courtney Wendel has lived in Juneau since she was a year old. Ceviche CLASSIC SALMON CEVICHE
Recipe
10-ounce fresh Alaskan salmon, skin and all bones removed
2 tsp rice vinegar
3/4 cup fresh lime juice
1//8 tsp cayenne pepper
2 T honey
1 tsp minced shallot
2 1/2 tsp soy sauce
1 cucumber, peeled and cut into 1/8” thick slices
1 1/2 tsp lightly toasted sesame seeds
1 bunch radishes, trimmed, cut into 1/8” thick slices
salt, to taste
1 head butter lettuce, rinsed and torn into 2” pieces
1/2 tsp grated fresh ginger
1/2 cup chopped green onions
Preparation: To make salmon ceviche: on a clean work surface, use a sharp knife to slice salmon crosswise into 1/8” thick pieces. place in a glass or stainless-steel bowl with 1/2 cup lime juice; cover and refrigerate 1 1/2 to 2 hours. To make honey lime dressing: In a small bowl, whisk together honey, 2 T lime juice, 2 tsp soy sauce, 1/2 tsp sesame seeds and salt; reserve. To make ginger lime dressing: In a small bowl, whisk together ginger, 2 T lime juice, 1/2 tsp soy sauce, vinegar, shallot, 1 tsp sesame seeds, salt and cayenne; reserve. In a large bowl, combine cucumber and radishes, add honey lime dressing and toss. Let stand 5 minutes, add lettuce and toss. Drain salmon ceviche (it should be nearly opaque throughout), place in another bowl with ginger lime dressing and toss. Divide cucumber salad amount 4 individual plates, top each with salmon ceviche, and garnish with green onions. Serve immediately. Additional garnish can be grapefruit slices, pickled ginger, yuzu sauce, or avocado.
Oh Ceviche, let me declare my affections for you. Sweet fresh flesh of the sea marinated in heavy citrus and sass, I could eat you at least five days a week! Having at least 2,000 years of culinary archeological history under it’s belt and having a request from my dear Claire, I thought it was time to pay homage to this delightful dish celebrating the gifts of the sea. Moorish women from Granada accompanied the Spanish Conquistadors and colonizers throughout South America where it found its home most notably in Peru and then returned it’s delights to Europe. Food, culture, cuisine, politics, history have all traveled, been adopted, been changed, been accepted and have made foodie culture what it is. If you love food you have to love where it came from, know it’s roots, know many immigrants and colonizers to understand it’s ingredients and how to prepare it. I find it particularly important to stress upon today’s tensions of food, people, and politics that we are wanderers, we eat, we travel, we share and in this way we survive across the globe, as we did thousands of years ago and presently.

I prefer to use either the freshest fish possible that day’s catch or par frozen to get a nice cut, either way if your fish or seafood has been on ice for over a day, pick another recipe. You need firm flesh in its prime! Ingredients can be as varied as the catch and there are two basic ways to make, one I liken to a quick Salsa Fresca style ceviche made and eaten within a few hours or fully cooked ceviche where just the protein spends at least 24 hours in citrus, is drained and then re-dressed in a new citrusy dressing, this preparation has a little longer staying power. Pick your preparation carefully depending on how you intend to use it. This recipe will focus on the more classic fully cooked preparation and a smoked salmon variation, but I seriously love both. Other sea proteins I love are ceviche octopus, raw prawns, scallops, snapper, rockfish to name a few. From my table to yours enjoy! ~Amber

SMOKED SALMON CEVICHE 6-oz Wild Alaskan Smoked Salmon (bones/skin removed)
Juice of 12 limes, or more as needed
½ red onion, diced small
Salt and black pepper to taste
1 jalapeno or 1-2 Serrano peppers (minced) 2 small tomatoes, diced
½ bunch cilantro, chopped Avocado slices, lime wedges, and tortilla chips, for serving
Preparation: Cut the salmon into half inch pieces and dice the onion, peppers, tomatoes and cilantro, combining all into a large non-reactive (glass or ceramic) bowl. Squeeze the limes over the ceviche and stir well before refrigerating, covered for an hour. Stir again and return to the refrigerator for another 3-4 hours, season to taste with salt and black pepper and serve with lime wedges, organic avocado slices, and organic tortilla chips
