A Message From

The General Manager Dear Members & Families, It’s spring time in your slice of paradise! So what does that mean? It means that the high season is reaching a crescendo as is the positive buzz around the Club! Thank you all for your tremendous support and comments regarding the performance of our staff team. In mid March we hosted two of our very important events, the Ladies’ and Men’s Invitational’s. With some great planning by chairs Lee Pinto and Tony Panza, the staff team went to work and facilitated outstanding presentations from the golf course, to the dining venues. Special kudos go out to Dick Erick, Corey McDonough, Bret Borshell, Chef Ralph, Israel Jimenez and their teams for all the hard work to make us all proud! This year’s Annual Meeting, held March 16th had over 100 members in attendance to hear about the state of the Club from President Bob Zamboldi, Treasurer Linda Adamany and Phil Newman of our auditing firm, McGladrey, LLC. We thanked outgoing Board Members, Bob Korowicki (left in October), Jeff Siewert (who filled in the remainder of Mr. Korowicki’s term), Susan Freeman, Russ Sherwood and President, Bob Zamboldi. It is volunteer ladies and

A Note from Kellie Here we are in the beginning of the most temperate of Florida’s beautiful weather. It has been a pleasure to see the members of Kensington using and enjoying all the amenities available to them. We received much positive feedback on our Ladies’ and Men’s Invitationals, which will be remembered as one of the best golf events held at the Club. We also hear wonderful compliments on the dining experiences, and the condition of our course and the social atmosphere at Kensington. Our membership efforts have been encouraging with 22 new members added this fiscal year, which started October 1st. This includes 16 new golf, 3 sports, and 6 social members. We have projected 16 golf, 3 sports, and 7 social for the upcoming year, so we are definitely moving in the right direction. Unfortunately, we are experiencing an exodus of members who gave up their refundability in 2010 and have given their one year notice to resign from membership. The exciting news is the Summer Preview Membership will be accessible on May 1st. The rate for first time members is $995 and gives you admittance to golf, tennis, swimming, dining and Club activities through October 15th. This is an excellent opportunity to take advantage of summer fun and enjoyment. If there is a colleague, neighbor, or co-worker that would like to participate please have them contact me. Bob & Claudia Hatterman - (Resident Sports) They have recently purchased in Kensington and reside seasonally in Omaha, Nebraska.

Food & Beverage

It has been wonderful to receive so many nice comments about food and service this past month. The food & beverage team appreciates your feedback. It helps us through busy weeks as well as identifying areas where we can improve. In regards to a la carte dining, the pace of seating is critical to our success. I need your continued support. The best thing an a la carte guest can do to help us is to make a reservation and be prepared to sit down at your reserved table at the appropriate time. Thank you for your understanding and support with the reservation process. April brings one of the best social events of the year, The Change of Seasons Party, on Friday, April 10th. We had a smaller version of this party (200ppl) on March 20th for the Closing Party of the 2015 Men’s Invitational. It was nothing less than incredible. This season’s Change of Season’s Party will be similar in that the dancing,

entertainment, seating, progressive dinner design and beverage service will be outside under the stars. If you have less than 8 guests in your party, we will most likely pair you with other guests to provide maximum attendance and maximum fun. Also, valet service will pickup and drop off from the golf bag drop. Please plan on attending this spectacular party. Chef Rebecca and I want to grow our summer business for a number of reasons. In order to further support our summer membership, we will be hosting a higher number of dine and dances than we did in 2014 - the Summer Kronicle will outline all the bands so be sure to review the lineup. For those that will be leaving this month for the summer, you will be missed. It has been my pleasure taking great care of you this year. Just wait until you see what we have in store for you next year! Sincerely,

Bret & your Kensington F&B Family

Culinary Corner

WOW! What a season so far, but there are still a lot of activities to come. For those who are planning on attending both the Passover Seder on April 4 and our Easter Brunch on April 5, please make sure to make your reservations. The following week, the staff will start preparing for the Change of Seasons Party. This year’s party will be one to remember with lots of food stations for you to enjoy while listening to some great music under the stars. Don’t miss out on this great night we have planned! As we continue to improve the food and beverage program here at Kensington, I need to thank Mrs. Harris and the Board of Directors for their input, encouragement and continued support. As we continue to increase the catering portion of our business, we must also look at improving the kitchen by replacing the outdated contemporary ovens and equipment with greater, more efficient pieces. Most members think we had a new kitchen installed when the renovation was done in 2009, but this is not true, it was only made larger with some added refrigeration space. The kitchen is still equipped with the same old equipment which over the years has become less efficient and outdated. This past month the club purchased two Rational Combi Ovens. One White Efficiency Combi Oven and one Combi Master Plus. With this purchase it will help improve the cooking quality, consistency and productivity in every facet of our operation. The White Efficiency Combi is much more than an oven. This

one unit performs many different cooking processes. A few examples of those are: grilling, roasting, poaching, braising, low temperature cooking (sous vide) and it’s also a steamer! You can make stocks, pan sear meats and fish, proof breads and pastries and so much more. Please feel free to stop in and take a look at the newest additions to our kitchen. While adding these two pieces, we also had the opportunity to move some other pieces around to help us better serve our members during crunch time. The entire kitchen staff is very excited with these kitchen upgrades. It’s been infectious! Looking ahead to next year, be on the lookout for some hands-on cooking classes as well as more cooking demo dinners where I demo tonight’s dinner in front of you and then you get to enjoy the food I just prepared. Also, we will be adding some exciting theme buffets as well as other new exciting dining possibilities for you and your guests to enjoy. For those members who are staying in town, please remember Kensington for one of your dining options all summer long. For those who are heading north please travel safe and we will be waiting for your return. I want to thank all of Kensington’s Members for their continued support and for making my first year here a blast! I hope you enjoyed it as much as I did. Please remember we offer a free knife sharpening. Just drop your knives off and we’ll have them back to you in a few days, razor sharp! Culinary regards, Chef Ralph C Feraco CEC AAC

This true tale covers her grandmother’s life. Read about Lily Casey riding 500 miles, alone, to get to her job as a teacher in a one-room schoolhouse. And that’s just the beginning!

May – “EIGHTY DAYS: NELLIE BLY AND ELIZABETH BISLAND’S RACE AROUND THE WORLD” On November 14, 1889, crusading reporter, Nellie Bly, left New York City by steamship on a quest to break the record for the fastest trip around the world. Also departing from New York that day-and heading in the opposite direction by train-was a young journalist from “The Cosmopolitan” magazine, Elizabeth Bisland. Can these young women outdo Jules Verne’s fictional hero Phileas Fogg? Can they circle the globe in less than 80 days? Which woman will triumph? Join us on May 6, 2015 at 10:30am for a lively discussion of these trailblazing women. Reservations for these two events are essential. Call the receptionist at 649-4440 to reserve your spot.

From the Fa i r way s What a great season we have had. Other than a little challenging weather in February we have experienced what everyone is here for, plenty of sunshine and fun. As the winter season winds down, we will be preparing for the launch of our summer season. Reciprocals begin Friday, May 1, 2015. Please remember we allow visiting members from our neighboring clubs to make reservations up to 4 days in advance so for at least the first 2 weeks of May use your “request” option 7 days in advance. This will ensure you getting the times you want. The reciprocal list will be available by the last week of April. On behalf of the Golf Staff, we extend a sincere thank you for all of your support both in the events as well as supporting your Golf Shop. For those of you soon heading north, we wish you safe travels and for those who will be here to open our summer season, watch the Wednesday golf e-blast for event announcements.

Across the Net The season is winding down. Don’t miss the cookout following the Saturday morning mixer (April 11th). Sign up in the Tennis shop. Looking back, I found this photo of the legendary Bjorn Borg playing in the Nuveen Championships here at Kensington in 1999. Hard to believe that the likes of Jimmy Connors, John McEnroe and of course Borg have played at our Club. Maybe there is some of their magic left on court 7. The 2015 Club Championships take place March 30th – April 3rd, results will be posted in the next edition of the Kronicle. Many thanks to our USTA captains – Joe Fedoryk, Bill Swift, Mike Balser and Chris Elkins. This is a very difficult and time consuming job. A big Thank You! Fitness & Spa

When this Kronicle is published, it will be April 1st. This means the Season is winding down and, for many of you, thoughts of returning home to warmer, more spring like temperatures up North. We have experienced some beautiful weather in Naples these past few months and, along with it, more traffic and visitors. However, Naples, once being known as the BEST KEPT SECRET, no longer exists. We have had a consistent number of members using the Fitness Center this year and we are always pleased to see so many of you taking advantage of the services we offer. Your support of our “Fitness Events” was greatly appreciated this past season. Chef Ralph’s CONSCIOUS CUISINE LIVE was a BIG HIT and we hope to be able to entice you again next season with repeat performances by our outstanding Chef! Also, many of our members took classes with Kristy on the Pilates Reformers and others outside with Marion’s Mat Pilates Class. Both of these methods strengthen core and provide better posture and flexibility. Something we are all seeking to help us look and feel younger! The staff at the Spa and Fitness Center encourages everyone who may be leaving us for the summer to keep up your exercise routine and massages. You have worked hard to achieve your goals so keep exercising and nurturing yourself on a regular basis. This is KEY! Although you may not have a Fitness Center at your finger tips, doing some form of physical activity is critical. Golf is a great sport and wonderful to enjoy outdoors, but it is not aerobic. In other words, you need to get your heart rate up to a certain level, dependent on your age, in order to burn calories and build up your stamina levels. Walking, gardening, swimming, biking or taking a scenic hike can be fun and offer a new approach to staying FIT!

I read that there are FIVE things you can do to feel HAPPIER which are referred to as BLISS-BOOSTING TIPS; 1. Write down three things every day that you feel grateful for in your life. 2. Exercise ……even if it is only for 10 to 15 minutes in the morning and then again in the afternoon. 3. Spend time with a beloved pet, toddler, and/or nature environment. 4. Play a song that you really enjoy and sing along. 5. Do an act of kindness for a stranger or friend. Add making good food choices to all the above recommendations in my article and you have a recipe for a successful, happy, healthy summer! For those of you leaving us, you will be missed by all the Staff here at the Spa and Fitness Center and, for those of you hanging around; we look forward to having you still pop into the Fitness Center to do your workout! Those of you staying here during the summer months can cool off and get your exercise at the same time by taking a Water Aerobics Class with Lucia in our Saline System Pool. I want to commend Lucia for all she has done to provide one of the best Water Aerobics Program in Naples. Lucia recently added her WATERART Certification to her other qualifications. This certification integrates the principles of exercise science for a safe, effective, and enjoyable program design. Staying buoyant in the water prevents any stress on the joints and therefore, is an ideal way to get your exercise. My very BEST to everyone for a SAFE and FUN SUMMER!
