The General Manager Dear Members & Families, At this writing, we’re on the eve of the Holidays with all the usual hustle and bustle associated with them. I hope all of you had a chance to slow down a little, enjoy a great meal with family and friends, and reflect on this great life we have in our little slice of paradise. With the New Year comes opportunity and a chance to commit to a resolution, or two! What are mine? Over the years we’ve (you’ve!) done a good job staying true to these foundation statements. The time is now ripe to go from “good to great!” In the coming months, with the leadership of Vice President and Strategic Planning Chair, Steve Manley, the Strategic Planning Committee will be studying information and charting a way toward an even more successful Kensington Golf & Country Club. Of course there are other resolutions, the first of which I will carry past the usual 5-7 days! That being said, you will notice a decidedly “healthy & fit” theme in this “new” Kronicle! A special thank you goes out to Kellie Sprague and Katie Flicker who have teamed up with our new friend Gabe Aluisy of Shake Creative to help us launch this new look! Additionally, the team will be launching a new look with our print media as well as our social media to help strengthen our brand. More updates to follow! Food & Beverage On the House Happy New Year! We have gotten off to a great high season with almost 400 people attending November’s Welcome Back party. Revisions to our reservation system and phone system have made it easier to get through. Many thanks to our staff for their creativity and additional resources making the process easier. Hopefully, many of you met John Langdon, our new Dining Room Supervisor. This allows Rebecca Ellis more time to develop and market our outside event program. The revenue these events bring into the club make a difference in our budget. Rebecca has already made great strides in getting Kensington’s name out there for weddings and private functions. We strive to keep these events to times of non-member usage so that the club facilities are available for members. We have two very exciting events coming up. Our annual Gala this year on January 23rd is a Venetian Masked Ball theme. While black tie is optional, cocktail attire and jackets are fine. Masks are encouraged, but optional. Space is still available. New this year is our High Tea on February 10th. Some of our members are hosting tables with their own china and tea services. We will be celebrating the lives of three extraordinary women, our speakers, as well as enjoying the traditional service of High Tea. Call to sign up to host a table or to come and enjoy the afternoon. Many thanks to those of you who have sent positive messages to our new Chef , Ralph Feraco and our F&B Director, Bret Borshell this past year. Both Chef Ralph and Bret have retained many of their staff. This is good for our culture and also good for our financial health as it saves us many thousands of dollars on staff retraining. Isn’t it nice to be greeted by the same friendly faces when we come back to Kensington? We look forward to seeing you around the club.

Happy New Year!! I am certain that 2015 will be a great year filled with good health and warm smiles. The Holiday Season was fantastic and we had a number of big success stories. These included the Wine Festival and the Holiday Dinner Dance. With 2015 starting next week, Chef Ralph will be introducing all new menus. In addition, our Wednesday night barbecues and Thursday night a la Carte dining commence on January 7th and 8th. Please join us to experience Kensington at its best. January 9th is sure to be fun night with Chef Ralph showcasing his first annual “Culinary Dinner Dine & Dance” with Billy Dean & Dawn. Expect a fun-filled game night of Trivial Pursuit on January 15th. If you have not already heard, the Venetian Masked Ball is Kensington’s premier social event of the year. Happy New Year from Kensington’s Culinary Team As we close out 2014 and we look forward to 2015 I can’t help to feel very excited. The Food and Beverage team is ready to serve all of you with great food and service. In January you will find some new menus in all of the dining areas, please come in a give them a try. Starting January 7th we will be open for our first Wednesday evening Grill night. I hope that this year we will exceed your expectations. Then Thursday, January 8th we will open up for our a la carte menu along with a few specials. I have received lots of positive response in the direction that the food program is headed, but I can’t take all the credit. We have a very good culinary team here at Kensington and the food program can only be as good as the staff. We retained 100% of our staff from last season and we are all passionate about food which makes it fun and challenging at the same time. As a member you will have the opportunity to try different items on our menus. I know that we tend to stay in our comfort zone and order the same 2-3 items, but I would like to encourage you all to try something new or different. As we strive for perfection there are a lot of moving pieces to our operation and if we don’t meet your expectations, please let us know and give us an opportunity to make it right. On Thursday, February 19th please join me for my first cooking demo called Conscious Cuisine LIVE! I will be teaming up with Marion, our Fitness & Spa Director and we’ll be talking about cooking healthy, tasty foods with less calories and lots of natural flavor. Immediately following the cooking demo you will be served the dinner I just created right in front of you. We will provide a recipe packet and we will be open for questions. Sign up and reserve you place. Starting in January please taste our homemade Granola available in the Fitness Center for you to snack on before or after your work out. Please remember that we offer a knife sharpening service for our members, so if you are in need of an edge please drop your knifes off and allow 2 days for this service. Also if you need any culinary tips please feel free to give me a call.

Our tournament schedule over the next few months has been designed to provide a blend of great competition and fun. Additionally we know a lot of you will be entertaining guests and it will be our goal to make you proud of your club and provide your guests the best possible golf experience. Tee time reminder. Please make sure you make your tee time plans ahead and get your requests in on time. Because of the anticipated increase in play there could be some days where you may not always get the exact time you hoped for, but your Golf Staff will always do their best to get you as close to your requested time as possible. Linked group captains are asked to be punctual and accurate with your requests. Our Caddy On Call program has been a little slow, but with the season about ready to break loose we will need to contact our caddies several days in advance in order to secure their services on your behalf. Kensington is a great course to walk and walking is a great way to enjoy the essence of the game. The course is ready…your staff is prepared…. let’s have a memorable season!

Every year when I attend I travel with a list of needs and wants from the membership. So send me an email and let me know if you have anything particular you are looking for. Look forward to Spring 2015 shipments coming to your golf shop mid January: For our gentleman we have some great spring colors from Peter Millar. We will receive Fairway and Greene Tech pullovers and solids in Cape Cod colors. Donald Ross will fill in with fresh new stripes, and of course Greg Norman will be refreshed and Page and Tuttle will be introduced in a great palette of colors. From the Rough One of the many things we take for granted living in such a tropical paradise is the abundance of wildlife living among us. Sometimes we feel threatened, sometimes annoyed and sometimes amazed, but after witnessing our annual “bird parade” I felt lucky to live in an area where I could witness something of this magnitude. By parade I am referring to the recent visit of the diving birds (aka Cormorants) and the slew of other bird and even mammal species that followed them lake-to-lake putting on quite a show for those lucky enough to witness. Every December hordes of Cormorants fly into Kensington every morning from our surrounding tidal marshes to feast on the abundance of fish our lakes have to offer. Wave after wave of v-shaped platoons clumsily land in a different lake each day which begins another round of the bird parade. The process for the cormorants is simple, swim around and devour as many fish as possible then move to another lake and do the same. It’s the unintended consequence they create that makes this remarkable. I stood on the 5th green on December 12th as the sun was coming up and the Cormorants were fast at work. What I witnessed was nearly 300 birds of approximately 15 different species all gathered around the edges of the lake waiting for a chance to grab a quick meal. Cormorants were bobbing up and down chasing the fish to the edges where Ospreys, Great White Egrets, Blue Herons, Woodstorks, Little Blue Herons, Green Herons, Blackbirds, Cow Egrets and numerous other water birds waited. There were Pelicans dive bombing the Cormorants trying to steal their catch, an Otter joined in the fray but the show stealer (literally speaking) was a Bald Eagle. A mature Bald Eagle gracefully circled the madness below waiting for the chance to swoop down and scare one of the birds into dropping its catch so she could easily grab a quick bite. In the hierarchy of birds, Bald Eagles rank at the top and I think every bird on the lake that morning knew it. Every time the Eagle swooped down it got the undivided attention of every bird in the area. At one point the Eagle flew from #6 tee under the oak canopy and over 50 Cormorants that were resting on the shoreline with full bellies. As if the Eagle were pulling a prank, the Cormorants exploded in all directions diving for the lake and the cover of water.
It was my belief that the Eagle was just exerting her authority one last time before flying back to its home. This scene was created morning after morning for a couple of weeks and has been occurring for many years. Below is a picture I took in 2003 of the parade on #17. In that picture there are 2 juvenile bald eagles working the lake from above and you can easily see my portrayal from #5 playing out. We have seen as many as 4 Bald Eagles (2 Adults and 2 Juvenile) at one time and one of our members took an outstanding picture (also below) of one of the juvenile Eagles in flight. I was hoping the juvenile Eagles in the picture from 2003 were the adults we see today and that the juveniles we see here today come back and fish our lakes in the future. If you did not have an opportunity to see this in action you should mark your calendars for next December to see it in person. It is truly a treat. As for the poor fish… they should not have been made so tasty.

Once again and all too soon, we are looking at making our New Year Resolutions! When we reflect on what changes we would like to make, it can often be a challenging time. How and where do we start to incorporate new habits in our daily routines? Changing old habits and making new ones does not happen overnight. Here at the Fitness Center we see the number of members using the Fitness Center greatly increase come January 1st. However, as you may know, our best intentions can often get sidetracked. Your Fitness and Spa Staff are committed to helping you meet those New Year goals.
1. Doing your Cardio on a regular basis,‌. 5 to 6X per week for at least 30 minutes is ideal. Tracking your progress with a Heart Rate Monitor gives you the maximum benefits from your cardio routine. All of our machines have heart rate monitors and the chart on the wall shows you your Target Heart Rate Zone for your age.
This season we are promoting Fitness and Wellness through a series of events. In January, we have Dr. Moon, Clinical Nutritionist, as our guest speaker. In February, we have Chef Ralph demoing and preparing a health conscious cuisine. In March, we are still reviewing our options. There is more detailed information about these events in this edition of the Kronicle, in our future issues, and in the E-Blasts. Start 2015 by making one of your New Year’s Resolutions a commitment to gaining more knowledge in the field of Nutrition and Fitness. KRISTY suggests: 1. Buddy Check-In Challenge – Find a buddy you can be accountable to with your fitness workouts or walks. Two times a week set a day and time to “check-in” with each other. 2. Plan ahead healthy meals for the week, then buy only those particular foods to keep in the house. This will help you NOT cheat on “empty” calorie foods and prevent you from overeating. 3. Plan ahead the night before what your workout time will be OR even better set a training time with one of our fantastic trainers. DON’T let anything take up that hour! Even set out your workout clothes the night before for the early bird workouts! JOHN suggests: 1. The key to improving your fitness level is to REGULARLY challenge yourself with an energetic exercise program. When it comes to physical fitness, the rule of thumb is ....IF YOU DON’T USE IT, YOU’LL LOSE IT! 2. For many of us, when it comes to getting and staying in shape, the hardest part is controlling our diet. Think of your body as a sports car. For your engine to run at peak performance, you have to put the right fuel in the tank. Similarly, you cannot expect your body to perform to its full potential without providing it with the proper nutrition. So ask yourself this question......DO I live to eat OR do I eat to live? 3. Often I hear people say they want to exercise but do not have the time or motivation. Fortunately, here at Kensington you not only have the convenience of a fully equipped Fitness Center on Campus, but you also have a team of Fitness Professionals ready to help you along the way! Do yourself a favor this Holiday Season, come visit us at the Spa and Fitness Center so together we can get you started on your journey to a new and healthier YOU!
