Food & Beverage

Happy Chanukah and Merry Christmas to everyone! We are thrilled to bring in the Holiday Season with a number of great events. As you know there are a number of big changes at Kensington. I wanted to add to the list with our own set of exciting changes. •

The first is that we are launching online dining reservations through the Kensington website. I am excited about this new technology. You will now be able to easily make reservations for Sunday brunch, lunch, dinner, Club events and Tuesday mixed bridge from your phone or computer! I would be glad to show you as your schedule allows. Once the system is perfectly set up, I will announce a day/time to host a Live & Learn education tutorial. In order to better accommodate the demand for more casual dining, the Grill Room (Mayfair Grill) is now open for dinner Tuesday and Friday evenings, mirroring regular a la carte dining. This means you can now reserve tables in the Mayfair Grill for dinner and order from both the bar and main dining room menus. The Mayfair Grill is a great après golf location for dinner with a more casual pub feel including large TVs.

News

I promoted Domenic Volpi to Assistant Food & Beverage Manager this past May, so please congratulate Domenic! In addition, Rachael Groman has joined the Kensington team as the Banquets and Events Manager. Rachael brings a wealth of experience as a local events planner. I feel fortunate to have both Domenic and Rachael on the front of house management team. You will be drawn to their infectious smiles as they light up the Clubhouse this season! Heather has some serious competition for best smile! I will introduce a number of new line staff members in next month’s Kronicle. I have one favor to ask: Chef and I need your help by making advance dinner reservations. Currently we only receive about 25% of the total evening’s guests as advance reservations. This makes it extremely difficult to exceed your expectations of food and service having wild fluctuations with walk-ins from night to night. My sincere hope is that the online reservation system and your conscious support will be marked by a shift to over 60% of our dinner reservations being made in advance. Please help me achieve this goal. Kind regards,

Bret Borshell

Culinary Corner

Welcome back Kensington! As the culinary department is off to a fast start this year we are all excited to continually improve your dining experience. The culinary email blasts have been a great success; I have been receiving a lot of positive comments from the members stating that they look forward to the menu options of the week. This year the culinary team has a few new faces; Tayri Lara is a past Ritz Carlton employee. She has taken the lead in our garde manger department and has shown a lot of interest in becoming a line cook. We will start to train her in those areas during the season. Steven Joseph is fairly new to the kitchen; he loves learning new concepts and procedures and is improving every day. This year we have two bakers on staff overlapping hours. Frank Setera is returning to Kensington this year; Frank is a veteran in the industry and is a complement to our team. We have added Irene Smith also a baker by trade; Irene’s background includes the Ritz Carlton. Between Frank and Irene we will have fresh baked items every day for members to enjoy. Finally, I have added Alex Rossano. Alex is an experienced pastry chef. She will be wearing two hats in our kitchen. She will take care of evening desserts as well as work the evening pantry. Staffing is an issue in the Naples area with fewer quality employees to select. I am currently searching for two line positions and will continue to explore other options until I find the right employees to join our team. I also have all kitchen employees in an “everyday training program,” not in just their positions but in all areas of the kitchen. By rotating their positions this will give the culinary brigade more flexibility. The opening of the Mayfair Lounge to evening a la carte reservations has become very popular. We serve both the Main Dining Room Menu and a causal bar menu currently in the Mayfair and Chelsea Lounge. With the availability of 80 more seats in the Mayfair Lounge I am asking you to make a reservation when possible. Without a reservation, more pressure is added on both the dining room and kitchen staff to provide great service, food and atmosphere. It is a great to see so many members enjoying the club. Reservations will help the management team properly prep the correct amount of product and eliminate waste. It will also assist our team to properly staff, which helps control payroll while reducing service and culinary inconsistencies, and assists with the timing of service. Please check the Kronicle for my cooking demonstrations. I want to remind you culinarians that we offer complimentary knife sharpening service for our members with a two to three day turnaround. Thanks again for your continued support in Kensington’s culinary program. I am looking forward to seeing you around the club.

Culinary regards,

Chef Ralph C Feraco CEC AAC

Golf From the Rough Welcome back to Paradise! Our highest priority from a maintenance perspective is to provide our members and guests with the finest playing conditions ON A DAILY BASIS. We can control what our staff does to groom and setup the course for each day of golf but we cannot control what you do during your rounds. We have reiterated all of the golf etiquette rules on many occasions and will continue to do so until we get the message out to everyone.

Merchandise News

Please take a moment to carefully read the following tips that, if adopted, will assist in making Kensington even better. How to Make Our Golf Course Better in 9 Easy Steps

The 2015-2016 season is here! New items will be arriving in your golf shop monthly. To start off with your equipment needs, we will have FootJoy, Ecco, and New Balance golf shoes available to get your feet ready for the links. Then, we will have Sun Mountain, Burton, and LoudMouth golf bags to get you started in the golf bag area. Remember, we can customize your golf bag with the Kensington logo, your company logo, your name and/or monogram. We can also match your bag to your headcover preference. Men will find a great assortment of Peter Millar, Ralph Lauren Polo, Donald Ross, and FootJoy golf apparel, along with Fairway and Green, Zero, Cutter and Buck, and UnderArmour. For the Ladies, we will have an impressive line-up for you too, with the likes of Peter Millar, GG Blue, Cutter and Buck, Tail, Daily, and Jamie Sadock. Be on the lookout for the date of our next “Holiday Sale” coming up in December. It’s a great time to buy and get your gifts wrapped and ready to ship up north or to be put away for the festive season. We are looking forward to seeing you back at Kensington. Let us know if there is anything you need us to put aside for you before you join us back in Paradise!

1. Use the 90 degree rule at all times unless other cart restrictions are in place. If you are moving towards the green you should be on a cart path. 2. Check the front portion of the greens for ballmarks that need repairing. The front of greens 3 and 8 are particularly damaged from unrepaired ballmarks. 3. Keep all 4 tires on the path when driving and parking. Please look at the path edges during your round and observe the worn out turf. 4. Fill all divots level with the sand provided, this includes walkers. All divots in the fairways AND roughs should be filled. 5. Holes 10 and 11 are both CART PATH ONLY. Please walk over the hills to #11 to find your drive from #10. 6. Do not ignore ropes, stakes and directional signage. We are using them to protect areas that are prone to excessive cart wear and tear. 7. Bunker rakes are to be placed OUTSIDE the bunkers after the bunker is raked smooth. 8. Carts should not be driven on or parked on the slopes and mounding. 9. The golf course should not be used as an access to the Clubhouse. Please use the roads at all times. Our goal is Tournament Conditions on a daily basis and with a little assistance from our golfers following the golf etiquette guidelines above, we can make that a reality. Please remember that this course belongs to all the members and a few bad habits can take away from someone else’s experience. We are looking forward to another great season at Kensington and making your Winter Paradise the best it can be!

News

Thanks to all of you, we are off to a great start to our season. We have had recordsetting turnouts for all events, specifically 116 Ladies Fall Guest Day and 124 for the Sunday Social. And now as we welcome in the New Year, things really get active. You are encouraged to watch the Kronicle, the Kensington website, and e-blasts (Golf News You Can Use) for all tournaments and sign-up announcements. Certain events require several weeks advanced sign-up. As the demand grows for starting times, specific days are very busy. Mondays and Fridays are very challenging due to the amount of linked group activity. Your group time will always be accommodated as close to the requested time as possible. The most popular times requested are invariably between 8:00 and 10:00 (total of 13 times) and we could get 20 to 30 requests for that time period. Obviously not everyone will fit. Please be patient. If you are a group captain, please work closely with the Golf Shop and encourage your group members to consult with you about tee time questions or concerns. All members please be reminded, during the holidays we are privileged to have many visiting guests. This is a very festive time of year and we want everyone to have fun and enjoy your club so please advise all guests of club rules (dress code, private cart usage, cell phones etc.). Thank you for your help. SPECIAL NOTE:

Sign-up for the Men’s Invitational, March 3-5, have opened. The field is limited to the first 60 teams. You should have received a special e-mail with all information. We also have packets available in the Golf Shop. Ladies Winter Guest Day, January 27, sign-up book is in the Golf Shop at this time. Watch for special flyers on the weekly e-mail blast and posters around the club. Field is limited to the first 120 players. STAFF NEWS: Merchandise Manager, Missy Weiss resigned to take a new position nearer her new home in Ft. Myers. We wish her well and thank her for a job well done. Effective Tuesday December 8th, Mary Logan will be your new Merchandise Mgr. Mary has an excellent merchandising and retail background. Most recently she has held the same position at Spring Run and from 2007 to the end of 2014 Mary was the Assistant Merchandise Mgr. at Grey Oaks. Prior to moving to Naples she was employed as the purchasing supervisor of Seragen Inc. in Hopkinton MA. Mary is a graduate of the University of New Hampshire. At your convenience please stop by the Golf Shop and introduce yourself and welcome her to Kensington. Another new face is Sean Hand who has joined the Outside Services crew for the winter. Sean works at the Garden City Club in the summer. On behalf of the entire Golf Staff, we wish everyone a safe and joyous Holiday Season!

Across the Net Hope your Thanksgiving Holiday was great and that the Holiday season is even better. Tennis held our Annual Welcome back party on November 6th with well over 50 in attendance. Just to let members know, because we currently do not have lights on the court, our upcoming mixers on December 11, 2015, January 29, February 19, and March 16 (2016) will all have start times of 3pm with appetizers to follow at 5pm. Different but nice. I am sure members have noticed some of the improvements at the tennis courts – newly painted fence poles, courts resurfaced, some new nets, less screens to make the place look bigger and brighter, and new benches on courts 1, 6 and 7. In the near future we will repave the patio area and add new furniture. We have a beautiful club, let’s keep it that way!

Fitness & Spa

WELCOME BACK TO PARADISE, As I am writing this article for the Kronicle, the weather has had record high temperatures reported. There have been a lot of HOT (not skill level) golfers and tennis players feeling the effects, but hang in there, it will only get better and the increasing cold weather up North will remind us how thankful we are to be in Paradise. The Holidays are just around the corner and, in fact, you will have celebrated Thanksgiving already when this article goes to Press. It is that time of year when we are very busy, become stressed and less motivated to keep up a disciplined fitness routine or even nurture ourselves with a facial or massage. However, there are many opportunities to KEEP MOVING by coming to the Fitness Center and participating in our classes or by surprising a special someone by buying a GIFT CERTIFICATE for one of our Spa services. Our Kensington Community offers beautiful, lush landscaping, thanks to Corey, so as you walk, ride your bike, play golf and tennis, try to take all of it in with a deep breath of appreciation. The entire Staff of the Fitness Center are here to encourage, motivate, and support our members to achieve and maintain a “QUALITY OF LIFE.” As we transition into our seasonal routines, we engage in different activities and many of these involve eating out. Chef Ralph offers a variety of selections on his luncheon and dinner menus keeping our health conscious members happy and healthy!! So as we look forward to the Holidays, may we all enjoy the many festive foods served, keeping in mind to continue the necessary balance between how much you eat and how much you exercise.

Aqua Fitness with John

By taking one day at a time , even one step at a time, we can approach our daily lives with a heart of gratitude! Our staff is here to help you accomplish your goals when the New Year 2016 rolls around. Enjoy every day, stay in the present, it is a gift, and do all you can to make staying fit and healthy one of your top priorities!!

Lt. Col. Bryan Price, Phd, the Director of the Combating Terrorism Center at the United States Military Academy at West Point, and Dr. Daniel Milton, PhD, the CTC’s top ISIS analyst, will give a presentation on ISIS, its organization, funding, goals and capabilities, and on the then current terrorism situation and expected developments. Gen. Fred Franks will introduce the speakers. This program is exclusive to Kensington and attendance is limited to 200 people. The presentation by Lt. Col.
