COMMODORE’S LOG Chapter 7 The dog days of summer are fast approaching. For many of us this means spending more fun time on our boats! May is a big month for the Cruising Fleet with the annual SPYC Commodore’s Cruise taking place from May 3rd through May 19th. The 50th Year & Golden Anniversary of the Regata del Sol al Sol commenced last month with the awards ceremony to take place on May 4th in Isla Mujeres. Keep an eye out for the July/August double issue of Smooth Sailing outlining the article and photos of this fantastic event, including the list of winners. Our Membership Reinstatement Program is an overwhelming success. To date we’ve welcomed over 40+ past members back to the SPYC. As a result, the Board of Directors has elected to extend the program for an additional month. A reminder, this offer consists of a special reinstatement fee of $500, plus pro-rated dues through the end of our fiscal year (September 2018). If you know of any past members, this is a great opportunity for them to rejoin their SPYC family and friends. Applications must be received by May 31st; please contact our Membership Director, Susan Robertson. We have modified our Club cellular device policy. It is our hope that this relaxed policy will make it easier for members to stay connected, and at the same time, be considerate to other members in the Clubhouse:

“Cellular Devices must be set on vibrate while at the Club and, with discretion and consideration for others, may be used for texting and checking messages. Cellular devices for voice calls are allowed in the following areas: The Compass Room, Second Floor Banquet Lobby, Outside Club spaces (except for the 1909 dining terrace). Speakerphone mode is strictly prohibited anywhere on Club premises. We thank you for your cooperation.” This month on Sunday, May 13th, enjoy a Mother’s Day Brunch Buffet at the Downtown Clubhouse, or Mother’s Day Lunch with some holiday featured entrées at our Pass-a-Grille Clubhouse. Details of this event and many more, including Father’s Day Brunch on Sunday, June 17th and upcoming July 4th festivities, are listed in this issue. On Saturday, June 9th, get involved with the annual Downtown Poker Run. A fantastic event to see our members enjoy themselves with a day of fun in the sun! Complete details are on page 7, including how to host or volunteer a Dock Stop. Lastly, mark your calendars for the St. Petersburg Yacht Club to host the first 2019 FCYC General Meeting in January. 71st Annual Winter Lightning Regatta by Kathy Ahern

March 23-26, 2018 ~ Beautiful days of March! SPYC hosted 52 boats from 4 counties and 18 states. The Lightning Class has been coming to SPYC longer than any other one design fleetâ&#x20AC;Ś71 consecutive years! Built in 1938 the class will be celebrating its 80th Anniversary in Skaneateles, NY on July 6th-8th. This class is strongly bonded in family and friendship. With good winds, six races were completed and four very active socials enjoyed by 197 people. By only one point this yearâ&#x20AC;&#x2122;s winner was a team from Argentina, skippered by Javier Conte and followed by David Stark from New York. Other winners: Masters - Ched Proctor from CT and Middle of the Bay - Rob Ruhlman from Ohio. From SPYC the Lightning Competitors headed to Miami to complete the Southern Circuit. A huge thank you to the Race Committee for a great job and to the staff at SPYC for being so flexible and friendly with such a large number of competitors and family.

Did You Just Hire Your Seasonal Boat Dock Staff?

BoatUS online course minimizes environmental risk, helps prevent spills at fuel docks ANNAPOLIS, Md., May 9, 2017 – As the summer boating season begins, marinas, boat yards and clubs are staffing up. These seasonal employees, sometimes high school, college students or part-timers, are responsible for refueling hundreds of boats at the gas dock. But do they have the training to prevent a fuel spill? Utilizing a grant from National Fish and Wildlife Foundation, the BoatUS Foundation offers a critical learning tool for seasonal fuel-dock employees: “Spill Prevention and Response for Marina Staff”. The free online course, which can be taken at any time at BoatUS.org/spill-prevention, is designed to minimize risk and give seasonal staff the ability to protect marinas and the environment. The spill-prevention, planning and response course offers videos, interactive exercises and interviews with spill responders, marina owners and managers. The BoatUS Foundation encourages marinas and clubs to have their new fuel dock staff complete the course just after they are hired.

The course looks at practical topics, such as how to know when a boat fuel tank is full, as well as a look at different types of oil and fuel products at marinas and how they are handled safely; how prevent and to prepare for spill events and the best steps to take if one happens; the impacts on the environment; and the laws that impact refueling facilities. “The best part is that all you need is a computer with Internet access to train new hires in the basics of spill prevention,” said BoatUS Foundation Vice President Susan Shingledecker. It takes about 1-2 hours for the average learner to complete. “Course takers can stop anytime and later start right back up where they left off,” she added. More than 800 have taken the course to date. While the course does not provide HAZWOPER certification and is designed for new marina staff, included throughout are management tips to provide additional information to more senior staff. Yachting Information by Donna Sue Marks, Yachting Information Chairperson Even though our Allison Jolly Regatta isn’t happening this year, it is the 30th year of the 1988 Olympics. Allison Jolly from St. Petersburg’s Junior Sailing Program was the skipper in the 1988 Olympics in the 470 Class. She and her crew, Lynne Jewell Shore, were the first US Women to capture a Gold Medal in Sailing. Allison and Lynne were the only American sailors, male or female to win a gold medal in those games. Congratulations to Allison, her crew and all the young women who continue the desire to participate in sailing for recreation and professionalism. Cause for applause to our Club Historian Barbara Watson! She spearheaded from soup to nuts the publishing of the Ray Kendall Williams Photo Collection St. Petersburg to Havana Race 1930- 1957. The books are SOLD OUT! Congratulations to all who have received this one of a kind collector’s book. Way to go Barbara!! May/June 2018

SPYC Junior Sailing Activities ON

The SPYC Junior Sailing Team had a busy month both locally and abroad. With events all over Florida, Texas, and Europe the team has been very well represented across all Fleets. Guthrie Braun and Dorothy Mendelblatt qualified to represent the USA at the 1300 boat Lake Garda Opti Meeting in Italy and the Magic Marine Easter Regatta in the Netherlands. Logan Rimel and Sebastian Spinelli Sax also travelled to Lake Garda as part of the Sail Fast Clinic. All sailors represented the Club well and are sure to be stronger sailors upon their return to Tampa Bay. Over the Easter weekend, SPYC hosted the North American Laser Class Association Gulf Coast Championships. Sailors were treated to some of the best conditions Tampa Bay has to offer with 12-18 knots of wind from the northeast. Ethan Danielson was our top performer finishing in 3rd overall in the Laser 4.7 class. Emily Allen, Heather Kerns, Heidi Hicks, Cameron Delgado, Emma Shakespeare, and Colin Lawther also participated.

Our Opti Race teams have also had a busy month with a large number of sailors travelling to Jensen Beach to compete in the Sunshine State Opti Champs. This was a large event with winds in the 20-25 knot range all weekend so it really tested the skills of all our sailors. Competing for SPYC were Ainsley Braun, Sophia Fuller, Adam and Reid Mendelblatt, Guthrie Braun, Bella and Ava Shakespeare, Kate Danielson, Sidney Moyer, Rosie Simpson, Logan Rimel, and Reid Nelson. SPYC was also well represented at the Clearwater Junior Sailing Open. In the Opti RWB Fleet, Julia Conneely finished in 3rd place overall and was followed by Rosie Simpson in 8th overall and 1st place in the Opti White Fleet. In the Green Fleet, SPYC’s John Hartney and Sophia Fuller finished in 1st and 2nd place overall. Also representing SPYC were Wesley Woods, Cole Rogers and Jad Aberdabo.

Crown Cars Regatta at Pass-a-Grille by Selga Sakss March 10th ~ The Crown Cars Regatta was held at Pass-a-Grille with 22 competitors sailing designated courses of 12.5 nautical miles for the one Cruising division, and 15.8 nautical miles for the three Spinnaker divisions. Unlike previous years, when cold fronts left too much wind and dangerously turbulent seas to allow safe passage out of the PAG channel, the wind for this regatta was a favorable southeasterly at 8-10 knots. However, as the fleet rounded the John’s Pass buoy the velocity lessened and the competitors struggled to complete the course and finish under a dying wind. SPYC competitors finished in the top four places in each division: Spin A -2nd place TackTick skippered by Mike Siedlecki; 3rd place Wasabi skippered by Eric Lopez; 4th place Pigs with no Purpose owned by Meg Gimmi; Spin B-1st place Warrior skippered by Grant Dumas; 3rd place Ariel skippered by Jody Abrams; Spin C -2nd place Abeona skippered by Joseph Toth, 4th place One Up skippered by Hall Palmer. Cruising – 3rd place was won by Tom Glew and his crew aboard XTC and in 4th place After You skippered by John Gardner. Complete results are available on www.SPYC.org under Sailing/ Regatta Results. The Golf Group has been VERY BUSY these past few months! In March, and after rescheduling due to rain, 15 golfers met up at Countryside Country Club. It was a bit windy which affected our game, or at least that’s the story we’re sticking to! Finishing in 1st place at par were Steve Hamblin, Gerry Opiela, and Susan Arsenault. John Arsenault, Jack Pyhel, Bill Casey, and Larry Heinkel came in 2nd with a score of +3. Straightest drive was Jack Howard. Closest to the pins were Tom Ritschel, Gerry Opiela, and Jack Pyhel.

On April 12th, 72 golfers played at our annual Member/ Guest Golf Outing at St Petersburg Country Club. We also had another nine join us for dinner. What a gorgeous, temperate day for golf! And as always, SPCC knocked it out of the park with the poolside barbecue, free beer, and their wonderful staff; talk about a well-oiled machine. Coming in 1st place with a gross score of 52 (20 under par!) were Maurice Goldman, Shane Brown, Wes Bryan, and Sean Kelly. 2nd place gross finishers were Larry Heinkel, Claire Vermette, George Kinemond, and Jack Kierman. 3rd place gross with a score of 59 went to Bill Protz, Brad Bell, John Rogers, and Rick Kappal. In 1st place net with a score of 53 were Dawn Eckhart, Jeff Mong, Kevin Reed, and Ted Koufas. Winning 2nd place net with a 59 were Marc Reydams, Dick Vazzano, Jay Ostema, and Rob Rehman. 3rd place net and also with a score of 59 was won by Fred Alberg, Dan Snyder, Bill Brown, and John Marcel. Steve Deininger won Closest to the Line on the second hole (he landed RIGHT ON THE LINE!) and Guy Anderson, Dawn Eckart, Ron Hersch, and Bob Rehman won closest to the pin on the par 3’s.

Woman’s Club AT ST. PETERSBURG YACHT CLUB

On May 16th, please join us for a demonstration on contemporary florals with our own Bev Eddins who makes it look so easy. We gather at the usual time: 5:00 pm Social Time with Hospitality Bar; 5:30 pm Meeting & Program to follow Looking back, we’ve been busy this year with our interesting and entertaining monthly programs which have been a little“spooky”, focused on the arts or fashion, or just plain fun. We traveled about to places near and far, and also hosted some special events at the Club, such as the Fashion Show and Tea, and A Land Remembered Show... and our Woman’s Club Directory took on a“new”look featuring YOU! Now that the officers have been installed, we’re busy planning programs for next year. Meanwhile, we look forward to you joining us this summer‘cause the fun doesn’t stop. Beginning in June, while Golf goes on hiatus for the summer (it’s too hot) and we take a break from monthly program meetings, we still actively play Mah Jongg and Bridge every week, and meet for Book Group every month. In addition we get together for some Bingo fun at Pass-A-Grille, or Trivia events downtown. We also begin our Summer DineArounds which everyone enjoys.

Cruising Fleet at Sarasota Yacht Club

For our March cruise (3/23-3/25) we returned yet again to Sarasota Yacht Club, while Sarasota Yacht Club visited SPYC. This prearranged“swap”allowed us to accommodate 17 boats on this cruise, while Sarasota invaded our dock with over 30 boats! We enjoyed some docktails in the Club on Friday before dinner, where we received personal greetings from Sarasota Commodore Jane Hutchins along with a visit from the Chef. Then on Saturday, some of the ladies played Mah Jongg in the afternoon before heading into St. Arman’s circle for dinner at a few different restaurants. We enjoyed the fire pits before and after dinner and welcomed a few more new members joining us for the first time, as our Fleet continues to grow and expand our large circle of friends! A special thanks to our Port Directors Camille Iurillo and Joe Petrella who made all the arrangements for our large group to have a great cruising weekend. . We enjoyed everything Sarasota had to offer and then some! Our hats are also off to the Dockmasters at both locations!

On March 21st, Co-Captain Connie Beckman thanked J P Creignou and Charlie Lalanne for presenting an excellent seminar on racing tactics. She also gave the Rainbow team sailors a big thanks for putting in a lot of practice time this year. First place in the Easter Hat Contest went to Jan Hunter, 2nd place to Bonnie Drake and 3rd place to Nancy Vildibill for their lovely hats!! Easter Sunday provided a new experience and a thoroughly enjoyable day for nine Salty Sisters. We attended a brunch hosted by the Sarasota Polo Club. The food was great, the atmosphere satisfying, and the polo match most enlightening and educational for those who were new to the game.

Easter Cruise to Sarasota

The Broad Reachers were training hard these past months, alongside the Salty Sisters, for the Rainbow Regatta this year. We have been very lucky to have J.P. Creignou and Charlie Lalanne coaching us. Every Saturday in March we practiced tacking drills, starts, and finetuned our upwind approaches. J.P and Charlie taught us how to properly rig our boats, making sure the sails were just right in all wind conditions. They even showed the Broads how to do roll tacks; well at least the theory behind them. We were all very excited about the big event on April 9th sailing from the Boca Ciega Yacht Club. Amateur Radio Club by Barbara Watson

Jack Satterfield led the meeting at SPYC on March 20th. The final third Tuesday meeting at SPYC Downtown will be  May 15th at 6:00 pm in the Parkview Room, following Happy Hour in the Lounge. The Amateur Radio Club is happy to welcome new members: Chris Cameron KN4KGW, Chris Fraser KN4JBI, Michael Gulley, Chris Spencer, and Rick Brooks. Congratulations to Russ Savela for achieving his extra license in March. Ralph Warmack and Dick Mordaunt both frequently use, remotely, the club’s HF radio and are working to reposition the current g5rv antenna on the roof of the Clubhouse. But, there are plans to install a new vertical antenna for all bands. Joel Taliaferro had volunteered to set up a base station in the Dockmasters office. Shawn informed him that it is now set up, so the Dockmaster has a greater VHF range from anywhere on the dock. Jack then gave us a talk on his experiences in Katrina, the earthquake in Haiti (see attached QST cover) and about the Emergency Management System in the category 5 rated building on Ulmerton. Hams provide communications between all the shelters and there is a ham at every shelter.

Among those at the communication center were Jack Satterfield, W4GRJ, and Lousin Cruz, N4LDG. The Wing Shooters Society is a men’s group that enjoys shooting sports, especially sporting clays. Sporting clays simulates hunting scenarios and the target clays are referred to as ‘birds’. But to keep everyone on their toes, there is the occasional ‘rabbit’. A rabbit is a clay rolled on its edge across the ground in front of the shooter.

Where did the year go? We had so much fun and the program season buzzed by in a flash!! September brought us One Act Plays by Joan Petit, a local playwright; the October Cupcake Decorating (remember the Too Pretty to Eat, Only a Mother Could Love, and Best Halloween awards?), the Chico’s Fashion Show in November featuring our very own lovely models, followed by a Toys for Tots Marine who spoke on their history and Lito Cortez pianist. In addition, we collected a huge table of gifts for area children. That was just for starters – the “new year” brought Re-gift BINGO in January, the Human Trafficking of Women and Children with Sergeant Les Santiago of the St. Pete Police Department in February and March floral design with Brian from Redman Steele Florist. The PAG clubhouse never smelled so good!!!! April 9th we installed a new slate of officers. Mark Foster is shown here aiming up high at a ‘teal’ (teal is a form of duck). In sporting clays a teal goes almost straight up in front of you before it plummets down. You can see the piece of equipment that throws the bird straight up.

Speaker for the installation and luncheon was Lance Peterson from the Gulf Beaches Historical Museum. He gave a very informative talk and slide show presentation on the history of the gulf beaches. We rounded out the program year on April 30th with our annual Derby Day event and as always, it was great fun.

The Macks are BACK!! King and Spanish Mackerel are back in abundance, and the Red Grouper keep on biting. The SPYC Saltwater Anglers made a couple of offshore trips, consistently finding Red Grouper in 110’ of water. Bill Mann and Wayne Andrews left the dock at a leisurely 10:00 am, ran out to the middle of the ship channel and trolled spoons for about 2 hours. After landing over 20 Spanish Mackerel, they still had time for a nice lunch at the Pass-a-Grille Clubhouse. MARK YOUR CALENDARS!! The date has been set for our Annual Fishing Tournament. The tournament will be held at the Pass-a-Grille Clubhouse on Saturday, October 27th.

The May-June Car of the Month is a 1965 Series IIA pickup owned by club member Peter Hood, and sports a “Top Winner” trophy from the 2016 SPYC Vintage Motor Classic.  Peter owns two old Land Rovers. The pictured truck sports a safari paint job that Peter did by hand.  He also has a 1966 Series IIA station wagon purchased when he was a graduate student in 1982.  These old Land Rovers are by no means fast or luxurious, but they’re practical and easy to work on; as these utilitarian vehicles are found all over the world.  And…that’s why Peter loves his trucks! VMC Field Trip: Tampa Bay Auto Museum and factory tour of Polypack hosted by TBAM - Thursday, June 21st at 6:00 pm, located at 3301 Gateway Centre Blvd, Pinellas Park. Reservation required by June 15th. Please confirm via email to Stephanie at Slmitaly15@ gmail.com or Stew at saahman@gmail.com. Our host for the evening is SPYC member, Emmanuel Cerf, a sponsor of the Vintage Motor Classic for over 12 years and an owner of Polypack. This is a very rare collection of mostly European cars, and are quite different from vehicles that are usually in attendance at U.S. shows. Many vehicles on display have been beautifully restored and are shown in their wonderful museum show room. The evening will also include a tour through their product factory. Bill Waters quotes, “I have been to both the factory and the museum and was amazed. I am sure that many of you have never seen these cars before. If there ever was a ‘don’t miss event’, this is it!” Thank you TBAM for sponsoring this wonderful evening for us at the museum.

Join our Riders Club meeting held the third Tuesday of each month at the Downtown Clubhouse. Upcoming meetings: May 15th and June 19th at 6:15pm. The SPYC Riders recently turned into “route scouts” hitting the winding backroads of Northern Pasco County looking for great new throughways for upcoming rides. We look forward to future rides where we can enjoy these new routes. Ray Noyes and friends traveled to Daytona for Bike Week and also made several side trips including the Space Center in Titusville, the Fort in St. Augustine, and the Race Track Museum in Ocala. Ray logged an impressive 798 miles during his travels.

April 11th -15th was the 2018 Sun n’ Fun International Fly-in and Expo in Lakeland, FL, and is one of the largest aviation gatherings on the East Coast. Pete Privitera and myself made it on opening day, to be met with more like ‘Rain n’ Mud’, but we still enjoyed our time and worked through the exhibits. We met at the Florida Aerospace Historic Annex, run by the dedicated folks from our own AWAPS (Albert Whitted Airport Preservation Society). Pete Privitera, Tracy Livingston, Dave Wilgus, and myself volunteered, sharing cooking duties for burgers and hot dogs, that helped AWAPS cover their costs. Luckily we returned on Thursday and Friday to glorious sunny and clear skies, along with many happy pilots. We spent time with the folk over at AOPA and EAA, organizations who support General Aviation to the fullest and are often our only voice in Washington. Amazing was AOPA’s Sweepstake Super Cub, which was finished two weeks ago and flown down from Madison, WI. The Annex contains many historic items on display, including details of the Benoist; this was the first commercial flight in the USA from St. Pete to Tampa. Details were also shared about long swallowed up National Airlines in 1934 that began out of Albert Whitted. There were daily airshows which had plenty for everyone, a chance to get up close and personal with every imaginable aircraft, the military display with ability to converse with actual pilots, and amazing daily aerobatic flyers with a stunning display of the F18 Super Hornet and F16 Viper display teams. Our next meeting will be at the Downtown Club, Sunday May 20th (one week later due to Mother’s Day), meet 5:00 pm for cocktails at Tiki Bar (weather permitting), meeting at 6:00 pm, optional dinner at 7:00 pm. SPYC Member Life Events Congratulations to SPYC Member Jim Myers!

Seeing Florida By Water …

SPYC member, Jim Myers (also known as the “Head Ding Dong”), rang the Sunset Bell at the Paradise Grille one final time on March 27th, marking his retirement from bell duty after an amazing 21 years of service. It’s a tradition he is pretty familiar with, given that he is one of the founding members of the “Clapper Club”; a group of volunteers who each night, at sunset, entertain visitors at Pass-a-Grille with the “bell story” and the history of this unique part of Florida. A large crowd gathered to thank Mr. Myers for starting and maintaining the bell tradition and a plaque was placed on the bell’s post in his honor. In a short speech at the occasion, Myers reminded the crowd that the tradition of the Sunset Bell will continue without him, thanks to other members of the Clapper Club who honor and appreciate what it stands for every night.

DayTrippers! March’s boat trip to Frenchy’s was so much fun … even for those of us who got there late. Five boats and 16 people (buddied up on boats) made the trip from St. Pete to Clearwater on March 31st where we enjoyed good food, camaraderie, and really good service! On April 14th our boat trip was to Indian Rocks municipal docks; a short trip, but some fun restaurants. These docks are free and on a first come first served basis. Brian Kowalik volunteered to lead this trip. Thank you Brian and Angela! There will be no DayTrippers boat trip in May as most of us will be on the annual Commodore’s Cruise. Look for us in June when we are planning a trip to Homosassa Springs to boat with the manatees. Water shouldn’t be too cold, as we hope to go swimming. We will publish more information on both these upcoming events on our club website. We are working on hosting the 2018 North American Invitational (NAI) in October. This is a prestigious national event attended by experienced yachtsmen who have won Cruising Navigation Rallies in their respective clubs or associations and earned the right to represent those clubs or associations in the NAI. We are looking for a few boats to host visiting yachtsman. Because the competing yachtsmen come from all over the country, and can’t bring their boats, SPYC boat owners have generously allowed their boats to be used in this competition. Our club webpage contains information on participating and the advantages as a participating boat owner. Thank you to everyone who has already volunteered their boat. We will hold an informational meeting in June to provide details, answer questions, and sign up more volunteers. Additionally, if you would like to represent SPYC in this event, we will be holding a series of cruising navigation rallies (with training) to select our NAI representative. Chocolate Truffle Cake with Chocolate Ganache Gluten Free Servings:â&#x20AC;ŻMakes 5-6 individual cakes Ingredients: 1 Cup Water 1 Cup Sugar 1 Pound Butter 1 Pound Chocolate (Bittersweet or Semisweet) 8 Eggs 1 Tablespoon Vanilla Instructions: 1. Heat first 3 ingredients until butter has melted, then remove from heat. Stir in chocolate until melted, add eggs and vanilla. 2. Pour batter into greased pans (5-6, 4 ounce small individual dishes) 3. Pre-heat oven to 350 degrees. Bake in a water bath for 20 minutes. Check to see if done using a toothpick inserted in center. If toothpick comes out clean, it is ready. Remove cakes from their dishes and place on draining rack. Refrigerate overnight.

Chocolate Ganache Ingredients: 1 Pound Chocolate (small pieces, Bittersweet or Semisweet) 2 Cups Heavy Cream Instructions: 1. In saucepan, heat heavy cream until it boils. 2. Place chocolate in a mixing bowl. Pour hot heavy cream over chocolate. 3. Let stand for a few minutes (be careful not to stir too much and incorporate bubbles) 4. Pour over your individual cakes and refrigerate. Garnish with fresh berries and chocolate.

Please join Chef Tim Cobb as he shows you these techniques, leaving you with mouthwatering results that you can use in your own kitchen.

Rosemary Dijon Pork Tenderloin Serving Size - One Ingredients: 2 Tablespoons Olive Oil 2 Pork Tenderloins (about 1 lb each) 1/2 Teaspoon Kosher Salt 1/4 Teaspoon Black Pepper For the Sauce: 3 Ounces Dijon Mustard 1/4 Cup White Wine (for deglazing) 1- 1/4 teaspoon Fresh Chopped Rosemary Salt & Pepper to taste Instructions: 1. Clean tenderloin of silver skin - pat dry 2. Season with kosher salt & black pepper. 3. In pan on medium high heat, add olive oil - wait until oil shimmers (thins out - nearing its smoke point). 4. Add tenderloins to pan, let sear/caramelized on all sides. Remove and let rest on a plate. 5. Deglaze pan with white wine, let reduce for 1 minute (reduction is the process of thickening and intensifying the flavor of a liquid mixture). 6. Add Dijon mustard, whisk until smooth, add rosemary and salt and pepper to taste. 7. Serve on a dish and pour sauce over tenderloin. May/June 2018
