Broccoli has a well-earned reputation for being a nutritional superstar. After all, it’s a rich source of vitamins, minerals and antioxidants. Better yet, eating broccoli regularly may help reduce the risk of cancer, improve bone health and protect heart health. This delicious broccoli salad is great to serve at a summer picnic or potluck.
Broccoli Salad with Creamy Tahini Lime Dressing Ingredients: 1 pound broccoli florets ½ cup chopped red onion ½ cup dried cranberries or raisins ½ cup sunflower seeds ¼ cup sesame tahini 2 tablespoons lime juice 1 tablespoon red wine vinegar 1 tablespoon pure maple syrup ¾ teaspoon sea salt Freshly ground black pepper Water
Directions:
1 Cut the broccoli into bite-sized pieces then toss in a medium mixing bowl with onions and dried cranberries or raisins.
2 In a small bowl, whisk together the tahini, lime juice, vinegar, maple syrup, salt and pepper. Slowly add 1 tablespoon of water at a time until you reach a consistency that’s thin enough to pour, yet still thick and creamy enough to coat the broccoli.
3 Toss broccoli salad with dressing. Sprinkle with sunflower seeds when ready to serve.
