Ten Minutes with the Founder of Butcher’s Bistro, meet Scott Bauer. The story behind the American restaurant/butcher shop that is hatching in Denver’s Ballpark neighborhood this week. Share with us what is Butcher’s Bistro... Butcher’s Bistro is your neighborhood butcher and restaurant all in one. We specialize in bringing in whole and half (cows are big) animals and letting people try out new cuts they may not have had before. Don’t worry, we have something for everyone, even the vegetarian or the gluten free. The best advice received...
Following your dreams. Some of them can be scary and intimidating, but nothing truly great is ever easy.
What does it mean to you to be a part of the Ballpark community... After 8 years in this community it has been awesome to watch it grow. The amount of people living, working and playing in this neighborhood has gone through the roof. Buildings built, restaurants opening, and all the cool places that have been there for years thriving is inspiring.
The most exciting part about owning my own business... The daily reward. Even before we have opened it is awesome to be a part of everything that gets accomplished each day. I love the short-term reward of getting the instant gratification of new paint, a new piece of equipment, a receipt coming together or the excitement in the people we are hiring.
