Welcome to the first edition of SLIM for 2023 - I hope everyone has had an amazing start to the year! I still find it hard to believe we are in 2023.

We have a great edition of SLIM packed full of interesting reads, fantastic competitions, new products, socials, fashion and medical procedures.

Our cover girl is the gorgeous Lily Collins from Emily in Paris - a fascinating and intelligent young woman - this story is definitely worth the read.

Being that it is still early in the year, new year resolutions are still top of mind and starting the year o with a focus on health and well-being is important for many of us; which is why we have included some great articles on ways to keep motivated and focused on achieving your goals, as well as some great tips for nutrition and meditation to keep both our bodies and minds in tiptop shape.

We also have a focus on both men and women’s general health, and the importance of regular health checks in combating serious illness. During the years of Covid-19 lockdowns, many of us put our regular health practices to the side, and there is no better time to pick them back up again than now.

As we step into autumn it doesn’t have to mean retreating in-doors, especially not for those of us lucky enough to live on the Gold Coast. We have some beautiful autumn fashion in our pages this edition, for both men and women, that will keep you looking good whether you are indoors or out.

WE ALL KNOW WE SHOULD CHECK OUR BREASTS REGULARLY, BUT DO WE KNOW OUR INDIVIDUAL BREAST CANCER RISK AND WHAT SCREENING OPTIONS ARE BEST TO MANAGE IT?

Breast cancer poses a risk to all women, with 1 in 8 likely to develop the disease in their lifetime. It remains the most common cancer found in women worldwide. Women 40 years and over are at an increased risk of developing breast cancer as they age, which is why it is important for regular breast screening to be part of every woman’s health check routine.

Unfortunately breast screening is not necessarily a ‘one size fits all’ scenario. There are a number of risk factors that should be considered when screening women for breast cancer including their specific physiology, genetics and any medications they may be taking, along with the types of screening tests best suited to their specific situation.

Mammograms have, for many years, been the mainstay of screening women for breast cancer, being excellent at detecting low grade or intermediate growing cancers. These types of cancers may leave calcifications or ‘dead tissue’ behind, or incite in the breast ‘scar’ like lesions. Both these ‘calcifications and scars’ can be detected by a mammogram.

However, mammograms are less e ective at identifying those faster growing or more aggressive cancers that tend not to show calcification, and which can also be hidden by dense breast tissue.

An MRI is two to three times better at detecting fast growing breast cancer in women with dense breast tissue when compared to mammography. However, MRI is less e ective at detecting slow growing cancers.

Given nearly 50 percent of women in the “breast cancer relevant age range” have dense breast tissue potentially masking any cancer that may be present, it is important patients know their breast density type, and their individual risk factors, in order to make the best decisions for themselves when it comes to breast screening.

At Gold Coast Radiology (GCR) all female patients are o ered the option of undertaking a Lifetime Breast Malignancy Risk Assessment. This assessment highlights an individual’s risk of breast malignancy, and to what degree, by looking at breast density and other risk factors that may be at play.

If a woman’s risk is within a certain category level a screening breast MRI will be o ered to the patient so that the most comprehensive screening can take place.

Providing women with thorough information gives them the best chance of making the breast screening choices of most benefit to them, and that is what the GCR lifetime breast risk malignancy assessment does.

Breast MRI’s are available at GCR and all our patients are encouraged to understand their individual breast cancer risk factors. However, no matter the screening options chosen, all women should regularly ‘selfcheck’ their breasts under the guidance of their GP and all women 40 years and over should have regular mammograms and include MRI screening if their individual circumstances necessitate it.

GOODBYE WEIGHT, HELLO DREAM HOLIDAY

What was your relationship with food?

I have never had a good relationship with food. It has always been just a means to survive and I have also been an emotional eater for much of my adult life. Not a foodie.

What motivated you to go on your weight-loss journey?

My biggest motivation came from a desire to travel, with a massive Europe and Mediterranean trip scheduled for June 2023. I wanted to be able to have the confidence to experience all of it without pain, fatigue and body conscious issues holding me back.

How long had you battled with weight issues?

I have had weight issues since I was 20. A lack of self-control, mixed with hormone medication to battle endometriosis saw my weight increase steadily over the years. I also didn’t lose much post babies.

What health problems did you face as a result?

I have had two spinal surgeries in the past 6 years to manage a disc bulge which crushed my sciatic nerve. Although the surgeries were deemed successful, the ongoing inflammation was aggravated by the excess weight I was carrying. It was a constant battle between increasing exercise and managing increased pain. I was also su ering from high cholesterol, severe reflux and depression.

What made you decide on weight-loss surgery and which procedure was the right one for you?

My GP asked me if I’d ever considered weight-loss surgery, as I felt I had unsuccessfully tried everything else. I had always thought it would be too hard because it would interfere with my social lifestyle and be too restrictive. But, with a lot of research and pre-education I decided I wanted to investigate the option to the very end. After meeting with my surgeon and Dietitian, I decided I really wanted this to be successful. I also saw a psychologist and listened to some podcasts on what life might look like post Gastric surgery. It was decided that the Gastric Bypass would be the best option for me because of my reflux history. A hiatus hernia was successfully repaired during the Bypass surgery.

Post-surgery, what have been some of the challenges?

I’ve had a couple of challenges. Not big ones really but I need to make sure I eat enough food. Some days I am just not hungry so making sure I eat properly can be challenging. The other thing is the constant struggle to not eat and drink at the same time. I’m sure I’ll get better at this as time goes on. It has only been 7 months.

Any regrets?

Absolutely no regrets whatsoever. A lot of people say, they wish they had done it earlier. Not me though, the timing was exactly when I needed it to be and I’m positive that has been one of the reasons I have had a successful journey to date.

LILY COLLINS, HAS BECOME A HOUSEHOLD NAME OVER THE PAST THREE YEARS, EVER SINCE HER WILDLY SUCCESSFUL NETFLIX SERIES EMILY IN PARIS PREMIERED AT THE HEIGHT OF COVID -19 IN 2020.

Being the daughter of legendary pop-star Phil Collins, means the experience of fame, is not a new concept to the British American actress, who was born in Surrey in the United Kingdom in March 1989.

Always attracted to the lights of the small and silver screens, Lily has been modelling and acting for much of her life, her first role was starring in the BBC network’s Growing Pains at the tender age of just two years old.

Not long after Growing Pains, Lily and her mother Jane Tavellman, moved back to her mother’s hometown of Los Angeles, California, where Lily continued to pursue her interest in acting, and journalism. As a teenager Lily even wrote for publications such as Teen Vogue and Elle Girl, but still continued to act, performing with the Youth Academy of Dramatic Arts.

After finishing school, Lily further pursued her interest in journalism studying communications at the University of Southern California, where she majored in broadcast journalism; but after only a few small reporting and hosting roles with kids channel Nickelodeon, Lily began to pursue her interest in acting more seriously.

Since then, Lily has starred in a plethora of television and film works including the reboot of 90210, with her big break occurring in 2009 with her role in the Academy Award nominated The Blind Side where she played opposite Sandra Bullock and Tim McGraw, as their daughter Collins Tuohy.

From there her acting career continued to flourish, with Lily starring in Mirror, Mirror opposite Julia Roberts and then in the screen adaptation of Cassandra Clare’s The Mortal Instruments: City of Bones where she played the main character of Clary. In 2016 Lily came to critical acclaim, receiving a nomination for a Best Actress Golden Globe for her role in the Warren Beatty film, Rules Don’t Apply.

Lily continued her film career, preferring to choose roles with substance. In 2017 she again came to critical acclaim for her role in Marti Noxom’s To the Bone, where she played a woman su ering anorexia.

It was later revealed that the subject matter of the film was familiar to Collins, who had su ered eating disorders, anorexia and bulimia herself throughout her teenage years.

That same year Lily Collins published her memoir, Unfiltered: No Shame, No Regrets, Just Me, where she shared her experience of living with an eating disorder, an emotionally abusive relationship, growing up in a famous family and finding her confidence.

Collins said the book was a very personal project for her, and she was inspired to share her own experiences by the strength and honesty shown by her social media followers who were brave enough to share their own personal stories with her.

“It’s definitely like having my diary published,” said Collins.

“This is my way to open up a conversation with young women and say, - hey, we’re all the same, we all have the same struggles.”

Fast forward to 2019 and Lily auditions for the lead role in the new rom-com series by Sex and the City creator, Darren Star - Emily in Paris. Darren thought Lily would be the perfect person to play the lead character of Emily, and o ered the actress the role on her 30th birthday.

“From the moment I met Lily I was struck by her charm, her beauty, her light, dynamic personality,” Star recalls. “I knew I had found my Emily, but I couldn’t believe it was that easy!”

Lily was excited by the role too, and the potential of the series, so she jumped at the opportunity to be a producer on the show and take a more active role in its development.

Season one of Emily in Paris debuted on Netflix at the height of the pandemic in 2020, and was watched by over 58 million viewers. It was the perfect mix of travel, fun, fashion and light-hearted escapism so desperately needed at a time when no one was supposed to even step outside their own front door.

However, season one wasn’t without its controversies. Widely criticised for its cliched take on Paris and the French people, along with a distinct lack of diversity, Star and Collins took it all in their stride, and welcomed the

“I got to be a part of conversations that I’d never been privy to before, [have] input creatively in front of the camera and behind the camera,” Collins said.

Clearly producing got under Lily’s skin, with her recently announcing that she and new husband Charlie McDowell, along with acclaimed indie producer Alex Orlovsky have created their own production company - Case Study Films.

Lily described the collaboration as a great opportunity for her to continue to tell stories in front and behind the camera and that the production company would heavily focus on collaboration and storytelling.

Lily Collins has done a whole lot of living in her 33 years, and with high achievers like Lily, people always ask - what’s next?

In a recent interview Lily said she was looking toward the next season of Emily in Paris, but that she also didn’t want to get too far ahead, instead enjoying living in the present and being with her husband and dog Redford.

The release date for the new season of Emily in Paris has yet to be released, but our bet would be somewhere around December 2023and we can’t wait!

Plastic surgeons are also required to keep up with the latest advancements in their field, which helps to ensure that they are providing the most e ective and safe treatments available.

A plastic surgeon will also have the ability to handle any complications that may arise during a cosmetic procedure. For example, if a patient experiences a complication during a facelift, a plastic surgeon is better equipped to address the issue and provide the necessary care to ensure that the patient heals properly and still achieves a pleasing result. They are also trained in various techniques for performing cosmetic procedures, including minimally invasive techniques such as endoscopic surgery and laser surgery which often o ers faster recovery times.

Unfortunately, in recent times there have been many reports in the media about unscrupulous cosmetic surgeons, performing procedures outside their skill set and leaving patients with less than desirable outcomes.

Weight-loss surgery, also known as bariatric surgery, is a medical procedure used to help people with obesity lose weight and improve their health.

In recent years, the use of robotics in weight-loss surgery has become increasingly popular, o ering several benefits over traditional surgical methods.

One of the greatest advantages of robotic weight-loss surgery is the increased precision and accuracy of the procedure. The use of robotic technology enables the surgeon to perform the procedure with greater dexterity and control, resulting in very precise incisions and less tissue damage. This is particularly important in bariatric surgery, as it often involves re-routing the digestive system and altering the anatomy of the patient. The surgeon will control miniaturised instruments mounted on three robotic arms, which enter the patient through standard keyhole ports or incisions. The surgeon looks through the 3-D camera attached to a robotic arm, which magnifies the surgical site.

The surgeon’s hand, wrist and finger movements are transmitted through the computer console to the instruments attached to the robot’s arms. The robot’s “hands” have a higher degree of dexterity and maneuverability compared to laparoscopic instruments, allowing the surgeon the ability to operate in very tight spaces in the body that would otherwise only be accessible through open (long incision) surgery.

A second surgeon, acting as an assistant, supervises the robot at the patient’s bedside, providing an added element of control and safety.

The types of weight-loss surgery that commonly use a robotic system include gastric bypass, sleeve gastrectomy and anti-reflux operations, among others.

SADI Procedure

The SADI procedure (Sleeve Gastrectomy plus Duodeno- Ileostomy) involves a sleeve gastrectomy with bypass of part of the small intestine. The weight-loss and resolution of medical disorders is much more than a sleeve gastrectomy alone. The big M: Menopause

MENOPAUSE IS A NATURAL CHANGE IN THE LIFE OF EVERY WOMAN, BUT MANY FEEL UNCERTAIN AND UNEASY ABOUT ‘THE CHANGE’ - WHAT IT IS, WHAT HAPPENS AND WHAT CAN BE DONE TO RELIEVE SYMPTOMS.

Put simply, menopause is the end of the reproductive stage of a woman’s life. The ovaries stop releasing eggs and monthly periods cease.

There are in fact three stages to menopause:

- Perimenopause (stage before menopause, when periods become irregular, lasting generally between 4 and 6 years)

- Menopause (when your periods cease for 12 months and

- Postmenopause (when reproduction ceases and your body adjusts to operating with lower hormone levels)

Generally women experience menopause between 45 and 60 years of age, but some women, around 12 percent, will experience early menopause (when menopause begins before 45), and this can be due to a number of reasons including some cancer treatments.

Like most things, menopause is not a ‘one size fits all’ situation. Across the di erent stages of menopause and as oestrogen levels decrease, women experience a whole range of symptoms, and to varying degrees, some symptoms may be severe and some very mild.

Commonly women experience hot flushes, aches and pains, insomnia (di culty sleeping), lethargy, mood changes and vaginal and urinary changes.

It is not uncommon for these changes to begin to occur in the perimenopause stage.

The good news is there are plenty of treatment options available to ease symptoms.

Menopausal Hormone Therapy (MHT) is one of the more well known forms of treatment for menopause symptoms. It works by replacing the hormones that are depleting within the body such as oestrogen and progesterone, in order to relieve symptoms. It often works well on hot flushes, insomnia, mood changes, joint aches and vaginal dryness.

However, this form of treatment cannot be used by all women, in particular those who have had a cancer diagnosis such as breast or uterine cancer.

If MHT is not an option, non-hormonal medicines can also be prescribed. Some antidepressant medications have shown to be e ective at treating hot flushes and night sweats.

Another non-hormonal option to manage vaginal and urinary changes is Vaginal Laser with the Juliet Erbium YAG Laser that Dr Cary o ers as an in-o ce procedure.

Many women also find natural and alternate therapies such as acupuncture, meditation/ mindfulness practices and herbal remedies helpful in managing symptoms. Health and lifestyle choices are also important factors for women to consider, especially giving up smoking, weight management and taking time for regular exercise.

DEATHS DUE TO ISCHAEMIC HEART CONDITIONS HAVE BEEN INCREASING ACROSS AUSTRALIA IN RECENT YEARS, BUT WHAT IS BEHIND THE INCREASE AND WHAT CAN YOU DO TO PROTECT YOURSELF?

Heart disease has long been a leading cause of death for Australians, but recently, deaths due to ischaemic heart disease have increased beyond the expected natural range, according to a report from the Actuaries Institute.

The American Heart Association describes ischaemia as a condition in which blood flow is restricted or reduced in a part of the body. In cardiac ischemia blood flow and oxygen is restricted to the heart muscle, often by narrowed coronary arteries. This restriction then increases the chance of heart attack.

The Actuaries Institute reported that during 2021 and 2022 there were around 2,300 deaths due to cardiac ischemia beyond the general expectation, a finding also supported by the Australian Bureau of Statistics.

Fatalities could be increasing due to a number of factors, the pandemic being one of them.

During Covid-19 lock downs, and throughout the pandemic, people visited their GP less, which meant symptoms and risk factors were picked up later, when cardiac disease was more advanced.

Covid-19 itself causes inflammation in the body, and this coupled with other pre-existing conditions and poorer lifestyle choices (especially during lockdowns) means the e ects of cardiac issues have been magnified in many people, unbeknownst to them, leading to an increase in serious cardiac incidents and death.

“It is very important that people visit their GP regularly and make their heart health a regular part of their check-ups,” said Dr Ben Andersen, a leading Gold Coast cardiothoracic surgeon.

“Cardiac issues can often be managed e ectively with early diagnosis, and when people are aware of their risk factors they can make some relatively simple changes in lifestyle that make all the di erence.”

Risk factors that can increase your chances of heart disease, including cardiac ischaemia, are issues with weight, such as obesity, smoking (including vaping), diabetes, high blood pressure, high cholesterol and a family history of heart disease and other coronary issues, among others; all of which should be carefully managed with your healthcare professional.

The good news is, since the end of the pandemic, more people have started heading back to their doctors and heart health checks have been increasing since the end of 2022 according to Medicare.

A heart health check only takes around 20 minutes and includes some simple tests such as a blood pressure check, blood test and discussion around family history and risk factors.

THE YOUNGER ATHLETE

AS MOST YOUNGER ATHLETES EMERGE FROM THE SLUMBER OF THEIR CHRISTMAS AND NEW YEAR’S CELEBRATIONS, THEY SOON REALISE THAT THE SCHOOL SPORTS SEASON IS UPON THEM AND KICKING BACK INTO A MORE RIGOROUS TRAINING REGIME WILL BECOME TOP OF MIND. OFTEN WITH AN INCREASE IN SPORTS TRAINING, COMES AN INCREASE IN SPORTS INJURIES IN YOUNG ATHLETES.

There are a small group of high performing young athletes that train year-round and specialise in sports in their childhood and during adolescence. In this group, it is not uncommon for pre-teens to train 20+ hours per week at regional training centres in tennis and gymnastics and compete in events such as triathlons.

As activity increases, education of coaches, parents and the athletes themselves about all aspects of injury prevention is crucial.

RISK FACTORS

Some of the risk factors for young athletes include having an immature skeleton, di erent rates of bone growth of di erent body parts and adolescent growth spurts. Some younger athletes may also have less developed coordination skills and perception. One of the unique features of the child skeleton is the existence of a growth plate which we call a physis, this is the regional zone in which longitudinal bone growth occurs. Often the way injuries occur in young athletes and adults is the same, however, in children some injuries occur because of this growing bone.

STRENGTH TRAINING

I’m frequently asked about strength or resistance training guidelines by mums. Parents often enquire about the starting age and safety of weight training. Strength training can be safe and e ective if the programme is well designed and monitored by qualified personnel. Strength increases naturally with age and body weight, but this can be accelerated with weight training. Using the correct form and working only on circuit-based machines is the safest. A free weights

programme with the objective of muscle size and strength gain, should only be considered from over 16 years of age. Athletes should participate in both weight training and endurance activities. Light weights with higher repetitions should be the programme focus.

INJURY TYPE

Young athletes commonly injure the physis (growth plate) of long bone or pull o the attachment of tendons and ligament from bone. They do not commonly tear ligaments and seldom develop overuse tendon injuries (tendinopathy). Often injuries occur due to trauma or repetitive overuse. It is always important to remember that sinister bone cancers can masquerade as “sports injuries” so making the correct diagnosis early is crucial.

PEARLS FOR PARENTS

• The younger athlete is unique and is not a young adult.

• Make sure to get an accurate diagnosis for all injuries and consult a sports physician early on.

• If physiotherapy treatment has not helped after three treatment sessions, ask for a referral to a sports physician.

• Carefully monitor training loads, this is the best first line for injury prevention.

• Try to train no more than five days per week and take 8-10 weeks o consecutively in a year to rest and recover.

• Over 50 percent of injuries occur in the gym performing weight training.

Prioritising preventative healthcare is a great place to start. More often than not, we visit our GP for support, advice and treatment when we are experiencing bothersome symptoms or health concerns.

Preventative healthcare encourages us to check-in regularly with our GP even when we feel healthy to ask: What can I do to prevent ill health in the future?

We encourage our patients to check-in with their GP regularly to discuss which preventive examinations are recommended, when each was last performed, their results, and when each is due to be performed next.

Preventive healthcare includes age-appropriate cancer screening, routine health checks, immunisations/ boosters, medication reviews, physical examinations (e.g. checking blood pressure, and measuring your waist circumference) and general health advice for a healthy and balanced lifestyle.

Since the COVID-19 pandemic, many individuals de-prioritised or weren’t able to visit their GP for routine check-ups, meaning screening was delayed.

Screening is one of the most e ective ways to detect early signs of cancer, which is why it’s important to check in with your GP to see if you’re up-to-date with some of the more common screenings, such as:

Cervical cancer

Females aged 25–74 are encouraged to undergo screening for cervical cancer every five years. If you haven’t had a test since November 2017, now is the time to book one with your GP.

Bowel cancer

Individuals aged 50–74 are recommended to test for bowel cancer every two years.

Breast cancer

Females are encouraged to perform self-examinations monthly from the age of 20. Mammogram screening is advised for females aged 50 to 74 every two years. Women aged 40–49 and over 74 are also eligible.

If you plan to discuss preventive healthcare when you next visit your GP for some other reason, it’s a good idea to request a long appointment so you have plenty of time for physical examinations and advice.

Set your goals HIGH

Move your body every day!

You have all heard it before and I am saying it again. We expect so much from our body and mind each and every day. You need to give back. This can be a walk with the dog, a stand-up paddleboarding session, whatever you fancy. It will do your mindset wonders too. Health for life is not a sprint, it’s a marathon.

Being in nature really does feed the soul

Once a week try to take the time to be in and around nature and appreciate its beauty. This could be a hike in

the Hinterland or an early morning beach walk, it’s up to you, but it will do wonders for you. You’ll feel lighter, calmer and be able to handle that work deadline that gets thrown on your desk at 2pm on a Friday afternoon.

The 80/20 guide

Motivate yourself to go hard early in the week on good veggies and wholefoods. Come the weekend, you’ll not only feel great about yourself (your body will love you for it), but you have also created a healthy balanced diet for yourself. And if you are going to treat yourself, Why not?! Don’t feel bad about it, life is there to enjoy.

Do what makes you happy

We are all here for a certain amount of time and I feel we need to appreciate that. Aim to get to every Sunday night and be excited to start the week ahead for yourself.

Be your own inspiration

I am a believer that you certainly have role models, but I am also a believer in striving to be a person that others would like to look up to.

Make time for you

If you do this, you can get the best out of yourself, which means everyone else gets to enjoy the best of you too. A few examples are once a week sauna, hot/cold baths, massages, bubble bath at home with your favourite book and a face mask, meditation in nature, time with your girls or even a nana nap mid-week (I know everybody loves those). HOW TO LOSE WEIGHT AND KEEP IT OFF THE HEALTHY WAY

JUST A FEW SMALL CHANGES CAN MAKE ALL THE DIFFERENCE WHEN LOOKING TO LOSE WEIGHT. OUR EXPERT BEC MILLER SHARES SOME OF HER BEST TIPS TO MOVE THE WEIGHT AND KEEP IT OFF.

Many Australians, especially women will feel the need to lose weight at some point in their lives. In fact, it is predicted one in four Australians try a new diet each year. Many will go on unrealistic diets and spend years fluctuating which can cause a host of physical and mental health issues, including poor digestion and developing a negative relationship with food. The good news is there are ways to get healthier and to achieve your weight-loss goals without deprivation.

Bec Miller, the founder of Health with Bec, is one nutritionist who is fast becoming known for her extremely successful program which has seen thousands of women achieve their goals sustainably and keep the weight o for good. We asked her for her top tips for keeping weight o this year.

Drink enough water

It’s an oldie but a goodie - you should be drinking at least eight glasses of water each day and ideally have one before every meal. Often when we feel tired or overly hungry part of the problem is that we are actually thirsty. By solving the thirst problem before you eat, you are more likely to eat less. Additionally, being hydrated will help you absorb the nutrients of the food you have consumed and digest it better.

Drink co ee before noon - if you can tolerate it

If you are a co ee drinker, have a cup of co ee before noon. Co ee is great for boosting your metabolism and keeping you feeling fuller for longer. Be mindful of the type of milk you are using, ideally have your co ee black. Drinking co ee late in the afternoon can also be detrimental to your sleep. Good sleep is important when trying to lose weight - it keeps your cortisol in check and you are less likely to over-eat or snack when well rested.

Try intermittent fasting

This one can be a bit controversial but if done well intermittent fasting can work wonders.

Intermittent fasting is a pattern of eating that cycles between times of fasting and times of eating. The easiest method in my opinion is the 16/8 method which involves skipping breakfast and restricting your daily eating period to 8 hours. For example you may eat between 12noon and 8pm which gives you a 16 hour fasting window. There are a number of other methods also, but this is the method I find best.

Take glucomannan

Glucomannan is a great supplement to take if you are looking to lose weight. It is a dietary fibre that is made from the konjac plant and it helps to regulate your appetite which can help you feel fuller for longer.

Cut down on the carbs and cut the refined sugar

Tried everything and can’t lose weight? If you haven’t tried cutting down on your carb intake and going sugar free, it’s absolutely worth a try. Eat a diet rich in lean protein, nonstarchy veggies, fruit, nuts, seeds and healthy fats (whilst being conscious of calories). Eating this way will help to keep you feeling satiated for longer, your blood sugars stable and keep your cravings away, which in turn helps you eat less and prevent energy crashes.

Use smaller plates

Honestly, it makes a di erence. Your meal seems so much bigger on a smaller plate, you won’t even notice if you are cutting your portions.

Move every day

When it comes to weight-loss, diet is around 80 percent of the formula and exercise is 20 percent. Exercise helps you feel more energised which helps you be more motivated to make healthier meal choices. Exercise also helps you burn energy which can help you sleep better and it is great for helping you tone up and shift some kilos.

At the start of the school year, often the thought of having to head back to daily lunchbox making can strike fear into the hearts of families across the nation, but with these top tips, you can change a lunchbox nightmare into a lunchbox daydream.

1. Swapping staples such as white bread, snack bars and high sugar fruit drinks for more nutritious options including wholemeal bread, wholegrain snack bars and low sugar drink options like a low-sugar Golden Circle Refresher drink as an occasional treat, makes for a more balanced nutritious lunchbox, whilst being something kids can get excited about.

MEN CAN OFTEN OVERLOOK THEIR HEALTH, BUT TAKING A PROACTIVE APPROACH AND HAVING REGULAR CHECK-UPS WITH YOUR GP CAN MEAN A LONGER, HEALTHIER LIFE.

Compared to Australian women, Australian men visit the GP far less often, have shorter visits and only attend in the latter stages of disease, when treatment is more complicated - a worrying trend that can be easily overcome.

Regular health checks play an important part in improving men’s overall health, and increasing longevity for a number of reasons:

• Early detection of health problems - regular check-ups often uncover health problems in the initial stages, when they are easier to treat. Early detection of conditions such as high blood pressure, high cholesterol, or prostate cancer can greatly improve the chances of successful treatment.

• Regular health checks also assist with improving overall health. They identify lifestyle habits that may be contributing to poor health, such as poor diet, lack of exercise, or smoking. By addressing these habits, men can improve their overall health and reduce the risk of serious health problems.

Having a good General Practitioner that you are comfortable with, and who is familiar with your medical history is a key part to improving your health. Notions of masculinity, and a tendency to think ‘she’ll be right’ can be factors in men’s decisions not to have regular health checks. A good GP can become a trusted source of information and support, making you feel more comfortable discussing personal health concerns.

The Royal Australian College of General Practitioners (RACGP) suggests talking to friends and family to get recommendations when looking for a new GP, consider the practice location and opening times, whether they bulkbill - if cost is a concern, and most importantly finding a good rapport, as you will need to be comfortable discussing a range of health issues.

By making regular health checks a priority, men can take a proactive approach to maintaining good health, and even prevent serious problems from developing into the future.

SOUND ASLEEP

The Dalai Lama once said that ‘Sleep is the best meditation’, which I would certainly agree with. There’s not many things a good night’s sleep can’t fix. Stress, blood pressure and even weight management have all been proven to improve if one can get enough sleep.

So how can you fall asleep quicker and more soundly? Just like most experiences in life, meditation and sleep can be broken up into three main sections. Start, middle and end, but with our increasing lack of patience, what we tend to do with both of these practices is to try and skip the start and jump straight into the middle.

We’ll often try to go straight into it without a proper starting ritual. It’s just like going for a run. You’re probably going to run further and faster if you take the time to stretch and warm up before you hit the pavement and a quick 10-minute meditation exercise can be your ‘warm-up’ for sleep.

So next time you’re in bed and you close the laptop with heavy eyes, try the following ‘warm-up sleep exercise’ aka ‘meditation for sleep’.

Find a comfortable position laying on your back. Try to have a straight spine, let your arms and legs fall into a comfortable position. If you’re a tummy sleeper, that’s ok - just make sure you are comfortable.

Take 5 deep breaths. As deep, long and as full as possible. When you breathe out, really try to exhale every bit of air your lungs have in them and imagine your body is feeling lighter and lighter with each breath out.

Bring your attention to the small area around your left nostril. Really feel the air entering the nostril and follow it all the way down into your lungs. Once it fills up the space in your lungs, follow it as it begins to leave the body. Whenever you feel ready, shift your attention to the right nostril and repeat this process a few times. Finishing with focusing on your breath entering and leaving the body through both nostrils. Noticing your breath getting deeper and heavier.

Then really try to feel your toes. As if you’re putting your mind in them. They may feel tingly as if there’s energy swirling around and through them. Feel this energy as it begins to move around your feet and creep up your legs. Take your time with this and just focus on the di erent parts of your body as this energy moves up the legs, around your torso, down your arms and lastly through your neck, shoulders and head.

Your body at this stage should really start to feel relaxed, light and peaceful. The mind is also beginning to quieten down, as it has simply been focusing on an element (part of your body or breath) in the present moment not something that might have happened earlier that day or what needs to happen tomorrow. Just the act of diverting your thinking to the above is incredibly relaxing.

BANGKOK BARRAMUNDI IN A BAG

METHOD

Preheat the oven to 200°C and line a baking tray with baking paper. Place a 40cm x 30cm piece of baking paper on your benchtop. To create your base, in the middle of the paper add a layer of the pumpkin triangles roughly the same width and length as the barramundi fillet. Drizzle with 1 teaspoon of the olive oil, then top with the barramundi.

Combine the red curry paste, cherry tomatoes and three quarters of the coriander in a small bowl and gently whisk. Pour this mixture over the barramundi, drizzle with the remaining olive oil and season well with salt and pepper.

Bring the corners of the baking paper together and twist to enclose, then tie tightly with kitchen twine to seal in the flavours. Place on the tray and bake for 20 minutes. To check, gently open the parcel (be careful of the hot steam) – if the fish is opaque and the pumpkin is tender when pierced with the tip of a knife, it’s ready. If not, bake for another 5 minutes and check again.

Allow the barramundi in a bag to rest for 5 minutes, then untie the twine and carefully open – be prepared for the amazing aroma to hit you. Sprinkle with the remaining coriander, add a squeeze of lime juice, if desired, and enjoy.

• 1 x 125g barramundi fillet, skin removed and pin-boned

METHOD

Preheat the oven to 200°C and line a large baking tray with baking paper.

Cut the pumpkin into 3–4mm thick slices, then cut into irregular triangle shapes and transfer to a large bowl. Add the olive oil and toss to coat well. Now add half the Mexican seasoning, the tapioca flour and a generous sprinkle of salt. Massage with your hands to get even coverage.

Arrange the pumpkin triangles in a single layer on the tray, allowing plenty of space between each slice for maximum crispiness. Bake for 20–30 minutes, or until crispy and golden brown.

Meanwhile, to make a salsa, combine the tomato, avocado, coriander, the remaining Mexican seasoning and the lemon or lime juice in a bowl and gently toss.

Serve the pumpkin chips in a shallow bowl, loaded with the Mexican salsa, sprinkled with the chilli flakes, if using, and seasoned well with salt and pepper.

Slow-roasted Salmon with Salsa Verde

Most home cooks wouldn’t associate slow roasting with seafood but once you take it low and slow with a fillet of salmon or trout you will never revert to a quick blast of heat again. Slow cooking gradually renders the fat, so the fish cooks more evenly, producing a silky, melt-in-your-mouth texture. Paired with a bright, zesty salsa verde and you have an elegant, healthy, single piece of protein to feed an entire family.

METHOD

Preheat the oven to 120°C (fan-forced).

Place the salmon or trout fillet in a deep baking tray, drizzle on the olive oil and season all sides with the salt and pepper. Bake for 40 minutes, basting the fish with the tray juices halfway through cooking. Transfer the fish to a platter and drizzle on the tray juices.

Meanwhile, to make the salsa verde, place the parsley, basil, garlic, capers and anchovy fillets in a food processor and blitz to combine. With the motor running, drizzle in the lemon juice and olive oil and process until combined. Taste and adjust the seasoning as required.

Drizzle the salsa verde over the fish, scatter with extra parsley and basil leaves and serve with lemon wedges.

INGREDIENTS

SERVES 4-6

• 1kg salmon or trout fillet, skin and bones removed (see Note)

• 2 tablespoons extra-virgin olive oil

• 2 teaspoons sea salt flakes

• pinch of freshly ground

• black pepper

• lemon wedges, to serve

SALSA VERDE

• large handful of flat-leaf parsley leaves, plus extra to serve

• large handful of basil leaves, plus extra to serve

• 1 garlic clove, bashed and peeled

• 2 teaspoons capers, drained

• 3 anchovy fillets

• juice of 1 small lemon

• 125ml (1⁄2 cup) extra-virgin olive oil

• sea salt flakes and freshly groundblack pepper

NOTE

When cooking a large piece of protein like this, to help it cook more evenly, take it out of the fridge an hour prior to cooking to bring it to room temperature.

Quite often Paella recipes call for a lengthy list of ingredients that require a lot of time and money, a major turn off for most home cooks, but Paella does not need to be complicated. My version is very quick and easy – and just as delicious. Rice is the star of the show, each grain is infused in a golden stock of smoky paprika, floral saffron and garlicky tomato. The prawns and mussels are then nestled into the pan, adding delicious chunks of succulent seafood and further flavour to the stock. The final mark of a great Paella is the ‘socarrat’, that crusty layer of rice at the bottom of the pan that everyone fights over. Don’t be afraid to turn up the heat in the last few minutes of cooking for that magnificent textural crunch.

Easy Seafood Paella

INGREDIENTS

SERVES 4

• 3 tablespoons extra-virgin olive oil

• 1 onion, finely chopped

• 1⁄2 red capsicum, deseeded and finely chopped

• sea salt flakes and freshly ground black pepper

• 3 garlic cloves, finely chopped

• 2 teaspoons smoked paprika

• 295g (1⁄3 cups) Paella rice (bomba or calasparra)

• 600ml Fish Stock or Chicken Stock

• 1 large tomato, grated, skin discarded

• pinch of saffron threads

• 12 large raw prawns, peeled and deveined, tails intact

• 12 mussels, cleaned and debearded

• 50g (1⁄3 cup) frozen peas

• handful of flat leaf parsley leaves, finely chopped

• lemon wedges, to serves

METHOD

Place a 30cm Paella pan or frying pan over low heat. Add the olive oil, onion, capsicum and a pinch of salt and sauté, stirring occasionally, for 5 minutes to soften. Add the garlic and paprika and cook for another 30 seconds.

Add the rice to the pan and stir for a few seconds to coat the grains in the oil. Stir in the stock, tomato and saffron and season with a pinch of salt and pepper. Bring to a simmer and cook gently for 10 minutes without stirring.

Nestle the prawns and mussels in the rice and scatter on the peas. Cover and simmer for 5 minutes or until most of the stock is absorbed and the rice is al dente. Remove the lid and increase the heat to high. Cook for 2 minutes to achieve the ‘socarrat’ crust on the base, then remove the pan from the heat, cover and rest for 5 minutes. Scatter on the parsley and serve with lemon wedges.

Classic Pork Wonton Noodle Soup

METHOD

Make the pork bone broth: In a large pot over high heat, combine the pork chuck bones, ginger, spring onion, dried shrimps, Shaoxing wine and water. Bring to a boil, then lower the heat and simmer for 90 minutes. Remove from the heat and strain the liquid into another pot. Season with salt as required.

Make the wonton filling: In a medium-sized bowl, combine all the filling ingredients and mix vigorously in one direction until the mixture binds. Cover and leave to rest in the fridge for 30 minutes.

INGREDIENTS

SERVES 4

PORK BONE BROTH

• 800g pork chuck bones

• 7tbsp (40g) sliced fresh ginger

• 1 spring onion, white part only

• 1tsp dried shrimps, rinsed

• 2tbsp (30ml) Shaoxing rice wine

• 8½ cups (2L) water

• Salt

PORK WONTON FILLING

• 200g fatty ground pork

• 6 tbsp (30g) grated fresh ginger

• 1 tbsp (15ml) oyster sauce

• 1 tsp sesame oil

• 1 tsp cornstarch

• Pinch of freshly ground white pepper

• Pinch of salt

• 20 wonton wrappers

• Scant 80g thin-cut Egg Noodles

• Bunch of bok choy, trimmed

• Sliced spring onion, for garnish

• Fried garlic flakes, for garnish

To assemble, place one wonton wrapper on a clean surface. Place a heaping teaspoon of the mixture in the center and brush half of the edges of the wrapper with water. Fold the wet edges over (in half) to make a rectangular shape and enclose the filling. Brush one of the corners with water and fold inward to overlap with the other corner. Press to seal and transfer to a baking sheet lined with parchment paper. Continue until all the remaining wontons are formed.

Bring a large pot of water to a boil, then cook the noodles for about 3 minutes, or until just cooked through. Remove them from the pot, using a mesh strainer, drain and divide among four serving bowls. Cook the wontons in the same boiling water until cooked through, 4 to 6 minutes. Remove from the water, using a slotted spoon, and divide among the serving bowls. Blanch the bok choy in the boiling water until just cooked, about 1 minute. Remove with a slotted spoon and divide among the serving bowls. Ladle the pork bone broth over the wontons, noodles and bok choy and top with spring onion and fried garlic flakes. Serve immediately.

This classic Thai dish is a standout and comes from northern Thailand, which is home to some of the spiciest foods with a rich complexity of flavors. Khao soi in and of itself isn’t super spicy on the Scoville scale, but the curried soup base is laden with some strong spices, including turmeric, cumin and coriander.

METHOD

Make the khao soi paste: In a food processor, combine all the paste ingredients and blitz until smooth. Transfer to a small bowl and set aside until required.

Chicken Khao Soi Noodles

INGREDIENTS

SERVES 4

KHAO SOI PASTE

• 2 Thai red chiles

• 2 medium-sized shallots, roughly chopped

• 4 cloves garlic

• 2 tbsp (12g) diced fresh ginger

• 2 tbsp (12g) diced fresh turmeric

• Small handful of fresh cilantro stems and root

• 2 tsp (4g) ground coriander

• 1 tsp ground cardamom

• 1 tsp curry powder

• 2 tbsp (30g) shrimp paste

SOUP

• 2 tbsp (30ml) vegetable oil

• 450g boneless chicken thighs

• 2 tbsp (15g) red curry paste

• 4¼ cups (1L) chicken stock

• 2 tsp (6g) palm sugar

• 1 (400ml) can coconut milk

• 3 tbsp (45ml) Asian fish sauce

• Salt (optional)

• 400g thin-cut Egg Noodles

• Scant 50g thin-cut Egg Noodles, deep-fried

• 2 shallots, thinly sliced

• 2 limes, cut into wedges

• 100g pickled mustard greens, chopped

• Fresh cilantro, for serving

• Mung bean sprouts, for serving

Make the soup: In a wok over high heat, heat the vegetable oil. Once hot, add the chicken and stir-fry until golden brown, about 5 minutes. Remove the chicken and set aside. Add the khao soi paste to the wok and cook, stirring, for 3 minutes. Add the red curry paste, chicken stock and palm sugar, and bring to a boil. Lower the heat and add the coconut milk and fish sauce. Add back the chicken and let simmer for another 5 to 10 minutes. Taste and season with salt, if required.

Bring a large pot of water to a boil and cook the noodles for about 3 minutes, or until just cooked through. Drain, then divide among four serving bowls. Ladle the hot khao soi soup and chicken over the cooked noodles. Top with the deepfried noodles, sliced shallots, lime wedges, pickled mustard greens, cilantro and mung bean sprouts. Serve immediately.

Nostalgic Finger Buns

METHOD

To start the dough, sift the flour into a large mixing bowl, then add the sugar, butter, eggs, yeast, salt, milk and water. Stir with a wooden spoon until a dough ball begins to form.

INGREDIENTS

SERVES 12 BUNS

• 4 cups (550g) bread flour

• 1⁄3 cup (75g) caster sugar

• ¼cup (60g) butter, softened

• 2 eggs, at room temperature

• 4 tsp (14g) yeast

• Pinch of salt

• 150ml milk, at room temperature

• 150ml water

• Vegetable oil spray

EGG WASH

• 1 egg

• 1 tsp milk

FILLING

• 1 serving berry jam

• 1 serving pastry cream or whipped cream

• ½ cup (70g) icing sugar

Turn the dough out onto a lightly floured work surface. Knead for 10 minutes, or until the dough has a smooth surface and springs back when it is poked. Place the dough in a lightly greased mixing bowl, then cover it with a damp tea towel. Leave the dough to double in size, which will take about 1 hour.

Roll the dough into a log about 30cm long, then cut it into twelve portions. (First divide the log into three even parts, then cut each of the thirds in half, and finish by cutting each of those six pieces in half again.) Roll them into balls. Roll one side of each ball to form a little finger at least 10cm long.

Place the fingers on a lined baking tray. Either brush or spray them with oil, then cover them with a damp tea towel and leave them until they become plump and fluffy, about 40 minutes.

Whilst the dough is rising, preheat the oven to 220°C fan forced, or, for a non-convection oven, 235°C. In a bowl, whisk together your egg wash until there are no lumps of egg white remaining. When the dough has risen, lightly brush each finger with the egg wash, then place the tray in the oven for 10 to 15 minutes, or until the fingers are evenly golden and cooked through. Set them on a wire rack to cool.

Cut each finger bun horizontally, then fill it with your choice of jam or cream. Dust it lightly with icing sugar before serving.

• ½ cup (120ml) spiced rum

• 2 cups (480ml) water

• 3 black peppercorns

• ½ vanilla bean

ORANGE AND VANILLA CHANTILLY CREAM

• 1 cup (240ml) thickened or whipping cream

• 4 tbsp (30g) icing sugar, sifted

• Zest of 1 orange

• ½ vanilla bean

METHOD

Preheat the oven to 180°C, and grease the baba molds with spray oil. (Rum baba is usually baked in a mini Bundt pan tray. If you’re unable to find one of these, just use a small cupcake tray.)

To prepare the baba batter, whisk together the eggs, yeast and sugar in a bowl. Add the flour and knead it in with an electric mixer fitted with a dough hook attachment for approximately 5 minutes, or until the mixture is soft and elastic. Remember to scrape the bowl down as you go. Add the melted butter, then knead again for an additional 5 minutes so it incorporates.

Divide the dough between the greased molds using dessert spoons (2 teaspoons - 10ml) or a piping bag. Cover the tray in a tea towel and place it in a warm place to proof for 30 minutes, or until it doubles in size. Then place in the oven and bake for 15 to 20 minutes, or until the cakes are golden.

Once baked, allow the cakes to cool completely before soaking them in the syrup.

To make the rum syrup, place the caster sugar, rum, water, peppercorns and half vanilla pod with the seeds in a saucepan and whisk them together, then bring the mixture to a boil. Boil the syrup for 5 minutes to infuse the flavors. Remove it from the heat and cool it completely before dropping the babas into the syrup and allowing them to soak for 10 minutes. Once the babas are soaked, remove them from the syrup and set them on a tray, ready to decorate.

For the Chantilly cream, place the cream, icing sugar and orange zest in a bowl, scrape the seeds out of the half vanilla pod and add them to the cream, then whisk it all together until soft peaks are formed. Dollop the orange cream on top of each soaked rum baba.

It was a perfect day for polo and showjumping at the recent Pacific Fair Magic Millions Polo and Showjumping Day held at Doug Jennings Park. Guests were joined at the glittering event by global ambassador Elsa Pataky and husband Chris Hemsworth, along with other equine enthusiasts Zara and Mike Tindall and Billy Slater. Competition was fierce both on and o the field, with two great polo matches played on the day and the always popular Fashions on the Field bringing a splash of colour and glamour to the event.
