A Brief Look Back recessions, and an anemic, slow-torecover global economy. The industry has rebounded and appears to be as healthy as I’ve seen in my career. At Southwest, we transformed our business model for the new realities of an operating environment that’s radically different from that of just 15 years ago. One effect of “the Lost Decade” was a sharp decline in shorthaul travel, the demographic that Southwest was built to serve. Therefore, we pivoted our capabilities to serve our Customers on longer flights. This transformation necessitated a massive amount of change, including the overhaul of our
frequent flyer program, the addition of a new and larger aircraft type, the acquisition of AirTran Airways, the introduction of capabilities to support international flying, and the integration of a new reservation system. (And those are just the highlights!) With the exception of the ongoing work to replace our reservation system, we have completed these major initiatives. I’m immensely proud of our People for enduring such challenging times with enormous changes and emerging stronger than ever. It’s been a labor of love for you, our cherished Customers. Through it all, we’ve managed to remain profitable, avoid the pitfalls of bankruptcy, take care of our People, and actually grow our Company. That’s a remarkable achievement, and my hat is off to our 48,000-plus Family Members for making it happen. With much of this change behind us, we focused our attention this year on the basics of Reliability and Hospitality, two concepts that are so simple in meaning yet just as important as our major operating initiatives in terms of fulfilling our Purpose. We’re doubling down on our commitment to deliver our Customers where they want to go, ontime, with their bag, and with a smile along the way. As we prepare to close the books on another year, I’m reminded once again how cyclical our business can be. Life in the airline industry can be unpredictable, brutally competitive, and not for the faint of heart, which is why I’ve learned to enjoy the good times when they come. This year marks my 30th at Southwest Airlines and my 12th as CEO, and I feel incredibly fortunate that 2015 stands out as one of the best in our history. As an industry, we’ve spent the better part of the past 15 years reeling from the events of 9/11, along with record-high energy prices, two

Dear Southwest,
My sister and I were traveling with four pups from Puerto Rico to Buffalo, New York. The dogs were strays to be put up for adoption through the SPCA. Our connecting flight from Baltimore had been cancelled, and we had spent a long, restless night in a motel with these pups. At the airport, our pet carrier was not holding up the way I’d like. Customer service agent Diana Harding was very empathetic. She helped us try to repair the carrier. However, it was totally busted, and we couldn’t afford to buy a new one. Diana called over ramp and operations manager Joseph Depaolis. He went to the Southwest kiosk and bought a brand-new, size-appropriate carrier for us. Joseph and Diana single-handedly assisted us in safely transporting the pups to Buffalo. I cannot thank them enough. —Kate Webster

Five years ago, more than 20 years after becoming deaf from a barefoot waterski fall as a teen, I got back on the water. While flying home from my last barefoot waterskiing trip of this year, I tweeted how much I love Southwest for not charging for wet suits, preboarding deaf passengers, and friendly staff! (I also appreciate the text alerts for gate and flight changes.) When I got home, I found a warm Southwest blanket, sent by social care senior representative Nicole LaPointe, to help me face the end of my season. My 12-year-old, Brighton, recently moved with her mom to Texas. It’s been difficult being this far away from her brother and me (her dad). Her saving grace has been her tablet. She uses it for everything: pictures, letters, art, Skype. But while making our way to the gate for her flight home, she left it sitting on a table. At the gate, she realized it was gone. Brighton was in tears, and a great trip had just ended in sadness. Later that day I received a call from Sheldon Bradshaw, a Southwest ramp agent who’d found the tablet and managed to find my number in it. I was traveling home on business and arrived early at the Houston airport. I noticed an earlier flight to New Orleans and decided to stop by the gate, only to be informed that the flight was overbooked. Customer service agent Carroll Herzog said I would be first in line for standby though. I told her never mind, I was going to have a drink at the bar. Well, after having a Bloody Mary and eating some food, I heard my name. Carroll had come down the corridor and into the restaurant to find me. I am so pleased that she did, as getting home almost two hours early helped with my evening plans. When my family traveled recently, our youngest, who is 22 months old, was very tired. What we hoped would be a peaceful flight quickly turned into the 22-month-old having a total meltdown! My husband and I were at our wits’ ends trying to calm him down. Then our flight attendant, Terry Lee Allert, pulled out his tablet, put on Frozen, and handed it to my husband. It immediately worked to calm our screaming child. Once our son got bored of the movie, Terry played peekaboo and other games with him. Salvador Pineda Working as a Flight Attendant means spending a lot of time in the air, but Salvador Pineda has a surefire method for staying grounded. “I’m a huge fan of yoga,” he says. “I believe that being adaptable, flexible, and accepting is essential both on the yoga mat and at 38,000 feet.” These attributes have been apparent in him throughout his time at Southwest. Salvador will celebrate his fifth anniversary with the Company next month; he worked as a Ramp Agent and Operations Agent at the Norfolk/ Virginia Beach airport before becoming a Flight Attendant in 2014. He says these prior experiences gave him a unique perspective that he’s been able to apply in his current role. “I’m really grateful that I’ve had the opportunity to grow within the Company,” he says. “I understand the big picture, and that allows me to do my job as efficiently as possible.” Being a Flight Attendant isn’t always predictable, and for Salvador it’s about more than passing out snacks and drinks. “First and foremost, I am a Safety professional and first responder,” he says, adding that Southwest’s dedication to Customer Service is also his priority. “I have the opportunity each and every day to share Southwest’s Hospitality with our Customers, which gives me an immeasurable sense of gratification.” Salvador recently had the privilege of sharing the Southwest Spirit on a flight from Baltimore/ Washington to Denver. “I arrived at the airport and realized I would be working an Honor Flight that was filled with WWII veterans,” he says. “They had just returned from a reenactment in D.C., and they presented our Crew with souvenir coins that I still carry with me on flights today.” His dedication to making personal connections with each of his Customers makes Salvador a shining example of a Servant’s Heart. As a former brewmaster, Peter Hoey spent nearly 12 years learning to decipher which ingredients yield the right amount of froth. He honed his skills at Sacramento Brewing, as well as the iconic Sierra Nevada Brewing Co. (which is credited as one of the leaders of the craft beer revolution). Whether he’s sourcing ingredients for his full-time gig at Brewers Supply Group or guest teaching “brewing science” at a local university, beer is infused throughout Peter’s life. Keeping up in the booming business of brewing isn’t easy, but Peter is thankful he can count on Southwest Airlines to get him everywhere he needs to be in order to succeed. “The No. 1 reason I fly Southwest is the People,” he says. “Being in a social industry, I can tell immediately whether someone likes their job—Southwest Employees love what they do!” Peter travels weekly from his home base of Sacramento, where he’s become good friends with some of the Crew Members on his regular routes—not uncommon for members of the Rapid Rewards frequent flier program. In addition to great Customer Service, the ability to easily redeem points and the flexibility to change his plans really comes in handy as he covers territory from Seattle to Santa Fe. Dear Reader,
Words make brains grow. That’s my unscientific interpretation of the research behind the Thirty Million Words Initiative, a movement to close the achievement gap by getting kids to hear more words by age 4. (No, you don’t have to count them.) Heidi Stevens, a parent and author, writes about the effort on page 76. Most parenting advice just makes me feel guilty, but Thirty Million Words makes special sense to me. It’s not just about talking to children; it’s about listening as well. I’ve found that how you react to your kids’ words greatly influences how they turn out. Case in point: Years ago, my toddler son was driving his big sister crazy, and she began to make a fist. “Use your words,” her mother said. Our daughter considered this for a second and then turned back to her
brother and used her words: “This is going to hurt.” Today she’s a nurse whose bedside manner features a biting sense of humor. When she was young, we would listen to Dorothy Jr.’s talk of diseases and herbal concoctions during family weekend hikes in New Hampshire. George liked to discuss religion and education. (He once asked the best college for majoring in spelling.) George eventually studied religion and became a teacher. I wonder how they would have turned out if I had steered the conversation toward hedge funds and the importance of supporting parents in their dotage. But I don’t regret a thing. Those hikes took us away from all the white noise of electronic devices. You would think that young brains develop better when the family sound track is their own. Besides, I believe the words between parent and child are worth the time regardless of the outcome. After all, those words create the most human of all miracles: a conversation.

I have never been so moved in the sky as I was by your article on the heartbeat. Yes, tears in my eyes—I had to use my Southwest napkin to catch them. The mom hearing the transplanted heart of her young daughter beating in the mom of two who would now go on living. The dad listening to the heartbeat of his young son in music. Traumatic, dramatic stories of sorrow and then comfort and peace. I’m on the ground now, forever touched by these young children, gone too soon, with hearts that are joyfully beating, comforting family.

My husband brought home a copy of Southwest: The Magazine that he’d read on his trip to San Francisco. He said there was an article in it that he thought I’d love. It was “The Original
Rhythm,” and he was right: I loved it. I think that it captivated us right away because my husband and I are musicians. But it also touched on something more personal. My brother was diagnosed with a rare heart disease at age 16. He’s been on medication ever since (he’s now in his 40s) and has had a pacemaker for the last several years. Thankfully, he’s doing fine. He started playing drums at age 8 and continues to do so to this day. I can’t believe I’ve never linked the fact that his drumming, his beats, are almost a continuation of his heart, which finds new, stronger rhythms through his music. I will share your piece with him for sure. Thank you for sharing it with us.

Army did not score again!” At first, instant replay was used just to enhance broadcasts; while the NFL recognized its potential as a refereeing tool, the league didn’t adopt it until 1986 (it was shelved in ’92 and reintroduced in ’99). Why the lag? “Cost was a factor,” says pro football historian Ken Crippen. “The technology was expensive to install in all stadiums.” Anyone whose team has suffered a bad call will agree: It was worth the investment.

For bartender William Escalante of Ouzo Bay in Baltimore, it wasn’t a matter of if he would incorporate the festive flavor into his seasonal cocktail menu but how. The Girls Who Code founder is a big fan of rejection—just ask her. My first big dance with failure was law school. I was around 13 when I decided I wanted to go to Yale. I had my dad print out the U.S. News & World Report with Yale as the No. 1 law school. I circled it, put it on the refrigerator, and stared at it every day. When I was finally old enough to apply, I got rejected three separate times. I eventually ended up going to Georgetown and transferring to Yale, but year after year of getting those rejection letters was really painful. I ran for Congress in 2010 and lost, and then in 2013 I ran for Public Advocate for the City of New York and lost again. But had I not lost my congressional bid, Girls Who Code wouldn’t exist today. The point is you never know where your journey will lead you. Being open to failure, risk, and rejection is the key to ending up exactly where you’re supposed to be.
FRIEND BENEFITS We don’t realize the power in our own networks. Girls Who Code is now a national nonprofit, but it was once just an idea in my head that came to life because people I was connected to by one or two degrees believed in me. LISTEN UP, GIRLS I tell the young women in my life to be direct, to be specific. Don’t worry about whether or not you’re imposing or how busy someone is. Men don’t care about those things.

I’d been divorced for about two years, and it was a hectic time career wise. My company was in a transitional phase, and it demanded a lot of my time and effort, so I didn’t have time for much else.
JENNIE: I’d also been divorced about two years. Being a single mom and working full-time, it wasn’t a huge priority of mine to go out and do the legwork it took to meet someone; it felt like having another job, and I didn’t have time for that.
Favorite first date memories?
grEg: I was attracted to her right away. On the second date there was a real chemistry. Then it evolved very, very quickly. JENNIE:
When Greg and I started talking, I discovered we had similar careers. I remember the conversation was so easy and comfortable. When I shared my date feedback with my IJL matchmaker, I let her know that Greg and I had made arrangements to attend a big award dinner at his country club. The minute I walked in, I knew he was a consummate gentleman. I felt so cared for. He was attentive and made sure I was introduced to everyone.
How did IJL compare to your online dating experience?

“ALL OF THIS HISTORY,” my 5-year-old sighs, “I am just not sure I believe it.” We are standing atop the walls of a medieval Hungarian castle on a rainy, gray morning, and the picturesque town sprawled around us looks very different from what I assume my son was expecting: fallen Ottoman warriors on open fields, stockpiles of stone walls burned to the ground, and scattered weapons and flags—leftovers from the great, unexpected victory of a small Hungarian army against a vast Turkish force in 1552. We climb steep stairs (new concrete) to the top of watchtowers (ancient rock) and follow our tour guide’s finger as he points to enemy cannon positions on the ground. We stand at the foot of the tomb of the castle’s captain (a replica of the original) and wander past the sarcophagus harboring the bones of those who perished during the battle (assumed real). I feed him small bits from books and movies and my own recollections. The years are all muddled in his mind. (“A long time ago,” he says as he plays out battle scenes with his toy soldiers, “in the 1980s.”) He imagines battles that never happened, between American Indians and Hungarians, or American Civil War soldiers and his favorite Turkish warriors. We’ve been looking forward to seeing this particular castle for a
while now, ever since he watched a movie about the battle and we read portions of a popular novel that’s mandatory reading for all kids in Hungary. Every Hungarian child is brought here on a school trip at least once. Standing on the castle wall with the rain soaking our jackets, I am relieved to be able to give Sam this gift. We drive back to Budapest later that afternoon, and Sam and I spend the rest of the week

wandering around my old turf. The thrill I feel showing him around my city is unexpected. We walk down the wide, tree-lined street where I grew up and went to school. I point out the bridges spanning the Danube, and we gaze in awe at the gilded dome of the Parliament. We get caught in a rain shower standing by the Chain Bridge’s lions, and we shuffle onto a stuffed bus heading up to the castle in Buda. We giggle when we finally reach the marble bust of King Matthias. We’ve seen the picture of the sculpture in books many, many times. I had promised Sam that he would get to see it in person, and I don’t think he believed me. But the sculpture is real, right there in front of us. We can almost touch it. After walking the endless halls of the National Gallery, we come to the darkened room where one of Sam’s favorite historical paintings hangs under a spotlight. He’s been studying the painting in books and online, its morbid subject matter (recovering a king’s body from a battlefield swamp) impossible to resist for a little boy. The painting is even bigger than I remember, and Sam discovers new details—the king’s armor remains in the mud and someone forgot a shovel on the ground. That night a thunderstorm rolls through the city, and I lie awake for hours—from jet lag, from the rain beating on the metal windowsill. From history. From wanting to pass it on and yearning for it to be a part of Sam’s bones. From raising him in a country that, even after 20 years, feels foreign to me. I feel disconnected from the past in America, as if everything is replaceable and disposable. I fear I will never get used to this feeling. I feel tied to my city and its past, the connection a constant, dull tug in my rib cage. Where will Sam feel rooted? Where will he find his city and know the stories of buildings and

castles? Where does history live among strip malls and highways and streets with no sidewalks? My own childhood was wrapped up in the past. I walked to school on streets where World War II battles were fought, where at one time ghetto walls stood, near where my grandfather hid for weeks in an attic and where he and my grandmother married hastily in between bombings. That same grandfather sat next
to me at dinner every night, small and frail and elflike. He was history himself, full of memories, and I was aware that he was passing something on to me, something that might otherwise be lost. I listened to him after every meal out of duty and curiosity. I wanted to know what came before me, what or who explained my nose, my hair, my temper, my love of writing. I remember hearing about a distant aunt who owned
a paper store in prewar Budapest and finding it comforting when my grandfather said that I inherited my love of stationery from her. Now that I live so far away, it is this sense of the past that provides answers to the big questions: Who are you? Where are you from? Who are your people? To Sam, history is just about the exciting battles right now, but someday he will need history to answer his own questions. THE CIVIL WAR encampment in my husband’s Pennsylvania hometown is small this year, just a few groups of tents under a grove of trees. We swat away tiny gnats as we walk from tent to tent and stop to look at the treasures unearthed from battlefields around the country: bullets, combs, diaries, Bibles, pipes, pen tips, badges. I’ve been to one of these camps before. Just like Sam was skeptical about the authenticity of the castle walls in Hungary, I am skeptical about grown men playing dress-up and the true origin of these battlefield finds. At one tent, a reenactor in full Union garb sits on a stool and tells Sam how much he would get paid as a soldier, what type of weapon he would use, and what foods he would eat. Sam is enthralled but too shy to say anything, so his grandmother nudges him. “Go ahead,” she says, “tell him why your name is Sam.” The soldier is an old friend, so he knows about my husband’s ancestor, but he leans down anyway, waiting for Sam’s version of the story. “I am named after my great-great-greatgreat-great-grandfather Samuel, who died in the Civil War,” he whispers, eyes to the ground. The soldier bolts up straight, pulls his weapon close to his body, and stands at attention. He raises his hand to salute my Sam. I am grateful for the sun and my sunglasses, because tears flow without warning or permission.

Later that weekend we drive through the Gettysburg battlefield and stop at the monument where Sam’s namesake is etched on a plaque amid thousands of others. It’s a tradition in my husband’s family to take a photo here, pointing at the name. My husband describes the battle to Sam while I try to make sense of my earlier emotional reaction. Until now, I never really considered Sam’s connection to his American side. That history does not belong to me, does not form me or give me my identity. It doesn’t move me or inspire me. Not because it isn’t heroic or exciting but because it’s not mine. It was—is—a story, a fairy tale, not something that happened to my people. I knew that we named Sam after an ancestor, but to me it was just a cute boy’s name, not a family tradition. I realize that the tears earlier came from relief. Because even though I might not feel like this country’s past is mine, Sam feels it is his. He comes from both the heroic warriors who defended the castle against the Turks and the brave soldiers who fought at Gettysburg. He is both Old World and New World, both ancient stone and shiny skyline. He can take it all in, and when he is old enough that the questions and answers will matter to him, he’ll have double the past to search for answers. He will find himself on cobblestone streets in Budapest, in wheat fields in Pennsylvania, in castle ruins, and in the remains of a stockade prison baking in the hot Southern sun. He will find his people in Jewish ghettos, in European castles, in small country churches, on farm fields, in modern cities, and sleepy suburbs. checked into my hotel. This golden-hued wormwood amaro is so bracingly bitter that it’s known as a rite-ofpassage spirit within Chicago’s drinking culture. For a more refined take on the Malört experience, check out Bësk, produced by local distiller letherbee. The distillery’s Fernet also plays well in cocktails or is perfectly delicious on its own. I defy you to find a more perfect spot for a stretch of day drinking than the patio at 1 parson’s chicken & fish in Logan Square, whose quick-get-me-another Negroni Slushy is the ideal companion to an order of hush puppies and hot chicken. FOR YEARS, tasting the bittersweet, herbal liqueur known as amaro required a pilgrimage to its birthplace in Italy, where it remains a fundamental part of the country’s culinary culture. Now, America has embraced the digestif, thanks to homegrown distilleries and the craft cocktail movement. And while I love amaro-centric bars like barnacle in Seattle and amor y amargo in New York City, Chicago has emerged as my favorite destination for a bitter bender. It’s more fun to drink it and think, What am I tasting? In the past we have made some bad—let’s say, not great—decisions. One year we used frankincense. I didn’t like that one. Every year I get at least one email saying, ‘This is the worst Christmas Ale you’ve ever made,’ but I also get one that says, ‘This is the best you’ve ever made.’ One other thing: So many years people say, ‘I taste allspice in there.’ We have never used allspice!”

Try it for yourself at parliament in Dallas.
NEW YORK CITY’S everyman espresso has reinvented your favorite cocktails and created new ones—without the booze. Recipes shift seasonally to complement the nuances of distinctive coffee beans. The Old Fashioned, for example, accentuates specific espresso notes by using various bitters and citrus garnishes like lemon, grapefruit, and orange. Feeling adventurous? Order the Second Wind, an espresso, simple syrup, and lime combo that’s shaken and then served in a coupe glass.

Falernum, the sweet syrup indispensable in tiki drinks, only takes a few minutes to make. the brooklynite rookl rooklynite in San Antonio let us peek at its house recipe: 40 whole cloves 3 ounces ginger syrup 10 ounces simple syrup 5 ounces orgeat 4 ounces freshsqueezed lime juice Zest of 10 limes Zest of half a grapefruit Zest of half a lemon 4 ounces Wray and Nephew Rum In a dry pan over low heat, toast the cloves to bring out natural oils, taking care not to burn them. Boil all ingredients except lime juice, citrus zests, and rum. Turn off heat, and add zests and lime juice. Let sit for 10 minutes or until the edges of the lime zest turn yellow, and then strain. Add rum, stir, and bottle for future use.

DAVE ARNOLD, owner of New York City’s booker and dax and the James Beard Award–winning author of Liquid Intelligence: The Art and Science of the Perfect Cocktail, offers tips on optimizing a timeless classic. His secret? Chemistry. Tonic water is denser than gin, so the order of operations is critical, Dave says. Ingredients must mix thoroughly without any bubble-liberating activities like stirring. Got it? Let’s begin. STORE YOUR GIN in the freezer (Dave recommends Tanqueray; we like Dripping Springs) along with glassware, and chill a bottle of fresh tonic water in ice water. Quarter a lime. Use a jigger to add 1¾ ounces of gin to a frosty glass. Tilt the glass 45 degrees and slowly add 3¼ ounces of tonic. As you pour, gradually raise the glass to vertical. Add freezer-cold ice (not tempered), but don’t chunk it like a Neanderthal—gently slide it in using a barspoon. Ease a lime quarter into the glass, leaving the bubbles undisturbed. Final step: bottoms up.

A decade ago, this Portland, Oregon–based pizzeria decided to create soda pairings to complement their pies. They refurbished a 1960s bottling machine and got to work, using fresh produce like organic Hawaiian ginger, California lemons, and Oregon-grown marionberries. An army of devoted fans soon followed. Last summer, hotlips joined with three Pacific Northwest breweries to produce limited-edition radlers, a trendy soda-beer hybrid. K/KRIEK K This Belgian-style brew is finally garnering some much-deserved attention in the U.S. Made by fermenting tart cherries with lambic varietals of beer, it’s worthy of a sojourn. Hop the ferry to Nantucket Island in Massachusetts for a taste of cisco brewers’ Monomoy Kriek. Or pull up a barstool at cascade brewing barrel house in Portland, Oregon, for its offering, aged in oak wine barrels. Once you’re converted, make room in your suitcase for one of Cascade’s aged krieks—a 750-milliliter 2008 bottle goes for $60.
It wasn’t so long ago that Mexico City was merely an afterthought in high-end cocktail circles. The food, sure—worldclass. The drinks? Not so much. The libations finally caught up to their culinary counterparts when licorería limantour opened in 2011. In only four years it’s become a globally renowned destination, landing at No. 20 on the World’s 50 Best Bars list. The menu—inspired by the bar’s adage, “the new old days”—is divided into seasonals, classics, and limantour, their best-selling tour contemporary drinks.

WE HAD 19 MINUTES until Margaret walked down the aisle, which meant we had time for a beer. But if we craned our necks out the front door of nye’s we could see the church steeple just up the hill, peering over Minneapolis—meaning we actually had time for two. The bartender looked at us. “Wedding or funeral?” he asked. Tim, Mike, and I, dressed in our best suits, responded in unison: “Wedding.” The bartender grabbed three glasses off the decades-old back bar, its edges rounded and faded by thousands upon thousands of passes. He pulled us pints of Grain Belt, a beer that does the trick
when you have to drink two in 19 minutes but not much more. Sean and Sal joined us with 11 minutes to go—enough time for one pint. The five of us toasted to John and Margaret and scooted the 285 feet up the hill. During the homily, the priest told the guests about the groom’s valiant but unsuccessful fight against an encroaching apartment tower that would soon eclipse the church, Our Lady of Lourdes. That same tower will force the teardown of Nye’s early next year, after 65 years of pints and polka. So, wedding or funeral? Turns out it was both. —B.P.
Housed in a repurposed pump station whose character is anything but dark and mechanic, this St. Louis wine bar offers one of the best lists of varietals in the Midwest, plus a drink that most other bars neglect: anise-flavored liqueurs. E PINECON “It doesn’t really do anything for the flavor,” Jordan Krema says. “But it’s cool and makes you feel like you’re around a campfire.” I’m sitting in press & pony in Boise, Idaho, which itself sits in the back of a french fry restaurant, and Jordan is about to blowtorch a pinecone. (Appropriately, a pine tree tattoo fills his entire left forearm.) The pinecone flickers and crackles on the bar, and after it smolders he slides it next to my drink, a mezcal, gin, and apricot concoction known as the Local Foraged. Jordan actually sold the pinecone short: The mezcal’s natural smokiness mingles with the smoldering scent, creating a one-two punch that enhances the flavor and shoots me back in time to gooey marshmallows and starry nights spent in a sleeping bag. —B.P.

FUN TO SAY, even more fun to drink, this fortified wine has a spellbinding history. A literal tonic, it was created in the early 19th century as a way to make quinine— and its malaria-fighting properties—more palatable, and it’s now making a comeback thanks to its bitter yet mildly sweet flavor profile. Its most famous brand is probably Lillet Blanc, used in James Bond’s gin-andvodka Vesper cocktail from the 1953 novel Casino Royale, but bartenders nowadays tend to reach for Tempus Fugit’s Kina L’Aéro d’Or. Not a vodka fan? Skip the Vesper and order the Enlightener, a gin, Kina, and chartreuse delight at gather in Berkeley, California.

Trek not to Yamagata, Japan, but to the foothills of the Blue Ridge Mountains, and you’ll discover Natali Nakaji Jackson crafting spirits the old-fashioned way. You’ll find her hand-washing, soaking, and steaming 600 pounds of rice over five days, and then fermenting it with water, yeast, and koji, a rice mold, for another two months. Natali is the head brewer for ben’s tune up in Asheville, North Carolina, a (deep breath) beer garden, restaurant, market, butchery, and sake brewery. It’s one of only a dozen or so sake microbreweries in the U.S. They churn out standard varieties like the milky, unfiltered nigori and the house brew, nama genshu, but also experiment with fruitier distillations such as pineapple jalapeño and lemon ginger. “We’re doing a lot of experimenting and creating flavor combinations not seen in the past,” Natali says. All that, and you don’t even have to head to Japan.

THE MOMENT you step into Indianapolis’ red key tavern, you are on the right path—an actual footpath worn into the light brown tile by the steps of countless patrons that have come and gone since 1933. It runs from the door, past the pushbutton jukebox stocked with 45s of Sinatra, Crosby, and the Andrews Sisters, and along the shag-lined bar where, for almost six decades, owner Russell Settle served vodka tonics or Pabsts in the same short highball glasses and enforced the rules of his house. No cursing. No standing at the bar. No putting your feet up or leaning back in your chair. Hats and coats were to be hung on the rack further up the path, near its terminus at the men’s room in the back. Violators were sent packing back down the trace to the front door. There were no appeals. Russell’s own road ended in 2010, at the age of 92. But the trail he blazed is still plain. The World War II pilot’s dusty model bombers still hang from water-stained ceiling tiles; the handpainted murals of pastoral scenes are still obscured by eons of burger grease and smoke. The old man still looks on from a framed photo hanging on the back wall, while his son, Jim, tends bar and tries to uphold order. Today, there’s a sense that the rules have eased—when the football game is on the new flatscreen above the cooler, you can linger by the bar and even get away with blurting out a well-placed expletive. But it’s best not to stray too far from the path. That way, at last call, when you’ve emptied your highball and paid your handwritten tab—cash only—it’ll be easy to find your way home. —Tony Rehagen

IN 1926, Ernest Raymond Beaumont Gantt left his small Texas town and took to the seas. He traveled across the Caribbean and the South Pacific and washed up on the California coast, where in 1933 he distilled the tastes and mystique of his travels into an alias, Don the Beachcomber, and a bar of the same name. Tiki was born. Forty years later, it disappeared after a market invasion of sugary premixes, but today the tiki revival is in full swing thanks to funky new bars like three dots and a dash, in Chicago, and adrift, adrift in Denver. At San Antonio’s the brooklynite, owner Jeret Peña’s Tiki Tuesday nights embrace the philosophy of Don the Beachcomber. “With cocktail bars, there tends to be more pretense,” he says. “This is meant to be much more fun.” The Brooklynite in San Antonio sets the cocktail world afire on Tiki Tuesdays.

THE SEARCH for Seattle’s zig zag café is a treasure hunt of sorts. After your requisite stop at Pike Place Market, head down the stairs of the Pike Street Hillclimb toward Elliott Bay, the route used by generations of farmers to carry their produce to market. Traverse a skywalk, descend another set of stairs, and there on the right is a cubbyhole tucked into the hillside. The journey is half the fun, but you’ll probably want a drink too.
Zig Zag is to thank for reintroducing the world to the Last Word, an early-20th-century libation lost to the sands of the cocktail desert. In 2003 bartender Murray Stenson dug up the recipe in a 1951 cocktail book called Bottoms Up, and soon the glowing gin-chartreuse drink exploded. You can probably find it at your local pub, but there’s something poetic about enjoying the treasure at the source. december 2015 southwest 75

gives piggyback rides into her operating room. “Except when the patients are bigger than I am,” she says with a laugh. “But they usually aren’t.” Suskind, who is 47 and stands 5-foot-1, grants the gift of sound to children as young as a year old—kids who were born deaf, experienced traumatic hearing loss, or for any other reason do not have the ability to hear. In 2006 she founded the pediatric cochlear implant program at Comer Children’s Hospital at the University of Chicago. She has since operated on more than 100 children, surgically inserting into the damaged ear an electronic device about the size of a quarter that stimulates the auditory nerve. The procedure ushers in a world of noises, experiences, and pursuits that would otherwise be reserved for their hearing peers. “We call the moment the cochlear device is activated the ‘hearing birthday,’” Suskind says. “It’s very emotional. We give them a little balloon and a present because it really is a monumental moment.” If you’ve seen YouTube videos of toddlers hearing their parents’ voices for the first time, you know it’s nothing short of transcendent. “The surgery is wonderful—it’s delicate, it’s beautiful,” Suskind says. “But when they start to hear is when the excitement really begins.” The world as they’ve known it their entire lives is altered in an instant. During follow-up appointments, however, Suskind began to notice disturbing discrepancies in her patients’ progress. Some children took almost immediately to language, speaking and reading as well as their peers who were born hearing, while others lagged behind. Two of her first patients, Zach and Michelle, were both diagnosed deaf at birth and received cochlear implants around their first birthdays. “Same potential, same surgery,” Suskind says, “but very different outcomes. “Zach took off like a racehorse out of the gate,”
she says. He immediately soaked up sounds and words. By third grade, he was mainstreamed into a public school classroom and scored at grade level in reading and math. Michelle, on the other hand, was only reading at a kindergarten level in third grade and used very little spoken or sign language. Her hearing was evaluated and deemed normal, but she struggled to grasp the meaning of most words and appeared unable to learn them, even with extra help from teachers and speech therapists. To diagnose the problem, Suskind knew she needed to better understand her patients’ worlds. She toured hearing impaired classrooms in the Chicago area and discovered that Zach and Michelle’s disparate narratives weren’t all that unusual. Some kids who received cochlear implants struggled to speak and read at grade level, even as others soared. She felt compelled to understand why. “It is without a doubt the greatest of privileges to give my young patients the ability to hear,” Suskind says. “But I realized that taking the Hippocratic Oath meant that my obligation didn’t end when I finished the operation; it ended when my patient was well.” A surgeon trying to solve a social problem is a bit like planning a trip to the moon, Suskind admits, because it means leaving the familiar confines of the operating room. Fortunately, her operating room sits on the campus of a storied university. She signed up for Introduction to Child Language

Development—a surgeon sitting in a classroom full of undergraduates—and encountered research that rerouted the course of her career. In the 1960s, University of Kansas child psychologists Betty Hart and Todd Risley set out to investigate why lower-income children consistently underperformed at school compared to their higher-income peers. They refused to accept conventional wisdom, which held that children who performed well were simply smarter, thanks to genetics. Poor people? It wasn’t in their genes to be smart. Hart and Risley analyzed more than two years of daily exchanges between parents and their children and discovered that kids born into poverty heard, in their first three years of life, 30 million fewer words than those born into more affluent families. The words the poorer children did hear consisted of more

becomes the foundation for thinking and learning. And while our brains continue to develop throughout our lives, the growth is never as rapid as it is between birth and age 3. So just as a baby who is deprived of adequate food for the first three years will never grow to his or her full potential height, a baby whose brain is deprived of adequate language will never reach his or her full intellectual potential. Suskind was struck that Michelle, one of her first patients, exemplified these findings. Born into poverty, Michelle lived with a kind, loving mother, but her language environment at home was austere, and the effect on Michelle was crippling. Suskind observed Michelle during a visit to the girl’s third-grade classroom, about eight years after “curing” her by implanting the cochlear device. Her teacher communicated
prohibitions (“Don’t touch that!”), fewer affirmations (“Nice job!”), and fewer back-and-forth conversations. Hart and Risley linked this word gap to vocabulary development, test scores at third grade, and IQ. Why do those early years matter so much? Because 80 to 85 percent of the physical brain develops in the first three years of life. A brain surrounded by frequent, positive language forms an abundance of positive neuron connections, building a strong architecture that

primarily through sign language, and the children sat silently. The sparkle had faded from Michelle’s eyes. “When I looked at her lovely face, it was hard to say whether I was seeing the tragedy of deafness or the tragedy of poverty,” Suskind writes in her recently published book, Thirty Million Words: Building a Child’s Brain—Tune in, Talk More, Take Turns. “Without question, however, I knew that I was seeing the tragedy of wasted potential.”

n 2009, suskind founded the Thirty Million Words Initiative to teach parents how to harness the power of their own speech to build their children’s brains. “You don’t need a master’s degree to make your child smart,” Suskind says. “You just need to talk with them.” Her mission is itself a moon shot: narrowing the achievement gap, mitigating the effects of poverty on a child’s academic success, and boosting our nation’s standing in the global marketplace. She soon garnered national attention, and to help keep up with the growth she enlisted her sisterin-law, Beth, as co-director. “You can only go to so many dinners at Dana’s house before she ropes you into something,” Beth says. Beth had spent the previous 15 years as a TV producer and show runner for such networks as NBC, TLC, and A&E. She’s spent the last few months fielding calls from the Jim Henson Company, which is developing a Netflix series for preschoolers. At the conclusion of each episode, they want to include a 50-second segment that shows parents how to introduce new words to their children, and they’ve tapped Thirty Million Words to help create them. Still, much of Thirty Million Words’ work happens on a smaller scale. The staff connects with families at community centers, faith-based organizations, and day care centers, approaching parents with a proposal: Allow us into your home for six months of weekly visits, and we’ll teach you how to build your child’s brain. Parents document their child’s language environment using a small digital audio recorder that fits inside the child’s T-shirt pocket—a word pedometer, in essence. The device records up to 16 hours of sound, which is then uploaded each week to compare with recordings done before and after

the interventions begin. The feedback is shared with parents, who are coached on how to improve their use of the “Three T’s”: Tune in. Talk more. Take turns. “Tune in” urges parents to pay attention to a child’s coos and squeals and to treat them as the beginning of a conversation. “Talk more” involves surrounding kids with a wide variety of words. “Take turns” reminds parents to stick around for what their child has to say, even if he or she is pre-verbal and mostly babbles. Claudia Herrera, a mother of three, stumbled upon Thirty Million Words at a Mother’s Day breakfast at her church on Chicago’s South Side. Her youngest son was 15 months old (her other children are 7 and 15). “There are so many people like me,” she says. “We take really good care of our kids, but we don’t know the importance of talking to them and how much that helps. Before the program, I would say, ‘Do this. Do that.’ Now I talk to my son all the time. We go grocery shopping and I make sure when he points at something, I say what he is seeing. ‘Oh, are you pointing to that apple?’ I explain to him that I am putting on his shoes.” Transforming typical daily activities into learning opportunities is precisely what Thirty Million Words teaches, ensuring that overloaded parents can participate without the burden of an added task. “My husband says our youngest son is the smartest,” Herrera says with a hint of amusement. Suskind’s group is also piloting videos, in both English and Spanish, for parents to watch in the hospital soon after giving birth. While their newborn’s hearing gets tested, they’ll view a 10-minute video explaining how to capitalize on the connection between hearing and brain development. They’ve even developed a wellbaby curriculum to be taught at

pediatricians’ offices during 1-, 2-, 4-, and 6-month checkups. If Thirty Million Words has its way, parents will be reminded repeatedly that babies aren’t born smart; they’re made smart by parents interacting with them.
“I
t shows you how smart the brain really is because, in absolute evolutionary brilliance, it harnesses a plentiful, natural resource as the key catalyst for its own development,” Suskind writes in her book, which received glowing reviews from T. Berry Brazelton, clinical professor of pediatrics emeritus at Harvard Medical School, and James Heckman, winner of the 2000 Nobel Prize in Economic Sciences. But not everyone is a believer. “Focusing on the ‘word gap’ as an explanation for the achievement gap between poor students and wealthier students is both distracting and potentially harmful,” Molly McManus, a Ph.D. candidate in educational psychology at the University of Texas, wrote in the New Republic. Teachers are primed, she argues, to view poor children as so far behind they’re past the point of helping. Others believe it forces a middle- to upper-class value system on populations who have every right to their own brand of parenting. Yet Suskind is unfazed. “We’re responding to an almost universal desire of parents to have children who reach their full potential,” she says. “When that environment doesn’t exist at home, schools, no matter how good they are, are remedial—trying to solve problems that need not exist in the first place.” It’s an imperative message for all families, particularly in an era when digital enticements compete for parents’ attention. One needn’t look further than the nearest playground to see parents

ignoring their tiny charges in favor of a hand-held device. Economist and author John List is optimistic that Suskind’s work will be a game changer. “In medicine we have randomized trials, and we test the efficiency and efficacy of drugs, but we didn’t— until now—have science to tell us what exactly we should be doing with our kids to give them the best chance at success,” he says. “Some people say, ‘Well, that’s
because medicine is life or death and education isn’t.’ But if you walk around the halls of a Chicago Public School, you see that when things don’t work out and kids drop out, that is life or death.” The word gap has captured the attention of academics, politicians, and foundations alike. The White House built its Early Learning Initiative around it, and President Obama has called closing the word gap one of his top priorities.

It’s also a centerpiece of the Clinton Foundation’s Too Small to Fail program, aimed at improving the well-being of kids from birth to age 5. List points to this pairing of public and private entities as evidence of a cultural sea change. Altering attitudes about smoking and seat belts required similarly monumental partnerships, he says. Only when the government and manufacturers teamed up did
it become second nature to buckle up when you hop in a car. “You can make small, incremental changes at the individual level, but for broad progress you need a general movement that changes the way the next generation thinks,” he says. “It’s science like Dana’s that will get us to that point. There isn’t one study of cigarettes that you can point to that changed everything. It was a general scientific consensus that arose because
of overwhelming evidence about the risks of tobacco.”
S
uskind’s work is also deeply personal. In 2012 her husband, Donald Liu, died while rescuing two 12-year-old boys from drowning in Lake Michigan. Liu, 50, was the internationally recognized surgeon-in-chief at Comer Children’s Hospital. Patients traveled from across the nation to see him. “This is a man that would wake up at 2 in the morning, be in the operating room in 10 or 15 minutes, literally save a child’s life who was bleeding to death from trauma—a car accident, gunshot wound, a beating—then he would go home and go back to sleep,” his colleague John Alverdy told a reporter shortly after Liu’s death. “An hour later he would wake up, come to the OR, operate for five hours, maybe grab some lunch, go to another hospital, and save another life—all in a day’s work.” Liu’s death was an inconceivable tragedy for his family—Suskind and their three children, who were 13, 10, and 7 at the time. “He was Dana’s biggest fan,” says Beth Suskind. “He believed so strongly in her work.” In the epilogue of her book, Suskind points to her husband’s legacy as inspiration: “A child needed help; the child got help. It was not simply a maxim; it was his way of life. He would never have considered standing on the shoreline while two children struggled, even if he knew taking action would cost him his life.” Across the country, she writes, too many children still struggle silently, with no one to fight like mad to ensure they reach their potential. “They are floundering. The challenge is knowing the right thing to say or do, says Rachelle Goerke, RN, BSN, OCN, and director of cancer navigation for the Sarah Cannon cancer programs offered at HealthONE Hospitals located across the Denver metro area. Goerke offers a few helpful tips to support someone with cancer effectively. 1. LISTEN. A cancer diagnosis can elicit a slew of emotions, and patients need to be able to share those feelings, thoughts, and fears with people they trust in a judgment-free zone. 2. SERVE as their cancer companion. Whether they’re going to a doctor’s visit, a radiology appointment, chemotherapy, or a surgical procedure, the stress can be intensified when patients must confront these challenges on their own. Offer to take them to medical appointments and keep them company for the duration of the visit. 3. PROVIDE practical assistance. The need for shopping, housework, bill-paying, and errandrunning doesn’t go away when cancer enters the picture. But patients often don’t want to bother loved ones for help with nonmedical tasks. Don’t wait to be asked; take the initiative. Providing home-cooked meals that abide by dietary restrictions, spending an afternoon doing laundry or cleaning, or taking a shift on a carpool list can offer a much-needed respite. 4. SHIFT the focus away from cancer. It’s important for patients to know there’s a world outside of the disease. Talk about topics that are unrelated to cancer, encourage them to participate in activities they used to enjoy, and make plans for what you will do together when they are feeling better. Thirty Years of Tradition The annual LUV Classic supports children’s charities. In October, we celebrated the 30th year of a beloved Southwest Airlines tradition: the LUV Classic golf tournament and party. It’s an awesome competition played for charity, with a handful of fun twists delivered in typical Southwest style. Over these past three decades, more than 47,000 party guests, 17,000 golfers, and nearly 7,000 volunteers have participated in the annual event, generating more than $15 million for children’s charities. However, the LUV Classic hasn’t always been the polished party that it is today. In fact, it began very humbly. When popular Dallas bar owner Joe Miller was diagnosed with cancer in the mid-’80s, several friends—including Southwest Airlines Cofounder and Chairman Emeritus Herb Kelleher—rallied around him, raising funds to ease the burden of his medical bills. Their efforts pulled in more than he needed, so Joe took the excess and donated it to the Dallas Ronald McDonald House, which is part of a national charity dedicated to helping families traveling to receive medical attention for their critically ill children. Shortly after Joe passed away, the Dallas Ronald McDonald House’s board of directors, which included Southwest President Emeritus Colleen Barrett, decided to host a golf tournament and party fundraiser in Joe’s honor. Southwest organized that first event and has continued
to do so ever since, and over the years the LUV Classic has grown exponentially and evolved into the celebration it is today. Southwest has proudly donated to 113 Ronald McDonald Houses. In line with our international expansion, we’ve spread that love to Houses in some of our international cities as well. And this year, we added Children’s Medical Center of Dallas and St. Jude Children’s Research Hospital to the list of children’s charities that we support— further amplifying the impact Southwest makes on families who are facing serious illnesses. The 30th annual LUV Classic, complete with dinner, dancing, and a night of camaraderie, was held at Brookhaven Country Club in Farmers Branch, Texas. We would like to extend our sincere gratitude to all of the charitable sponsors, volunteers, and party attendees who made the event an overwhelming success! Southwest Airlines is teeing up for many more years of golfing fun while helping those in need. —Lori Skinner

I was on tour when the Rock and Roll Hall of Fame approached me about preparing a couple of songs for the 2015 induction. I had to learn “Dedicated to the One I Love” by The “5” Royales and “When a Man Loves a Woman” by Percy Sledge. Having to go in front of all these great musicians—Paul McCartney, Stevie Wonder, Bill Withers, John Legend—and sing songs that weren’t really in my range and that I’d had little time to familiarize myself with was prett y nerve-wracking. The “5” Royales’ children were there, along with their children’s children. I was shaking the whole time.
