Gary’s Greeting

Every year in the airline industry brings more than its fair share of triumphs and challenges. You might even say that airline years are a lot like dog years. Southwest may only be 46 years old, but we’ve packed several lifetimes of experience into our history—there’s literally that much going on at any given time. That kind of experience has taught me to appreciate each year for its uniqueness. This year, in particular, I will recall with a special fondness. It is, perhaps, one of the finest and most impressive I’ve experienced to date. We’ve had several initiatives underway for the last few years that have

come to fruition in 2017, and they set us up well for the future. Here are the highlights: • In Ft. Lauderdale, we opened up a new international terminal, which is an absolutely beautiful facility and will serve as a strategic gateway for international expansion. • We successfully deployed a new reservation system, which was the single largest technology project in our Company’s history. The transition to the new system on May 9 was nearly flawless, which is a remarkable achievement.

• We retired the last of our Boeing 737300 Classics, and we set Company records for the most aircraft retired in one quarter, one month, and one day. • The retirement of the Classics paved the way to launch service with the new Boeing 737 MAX 8 on Oct. 1. The MAX 8 aircraft ushers in a new era of efficiency, reliability, and performance that will take us to new heights—and our Customers to new destinations! • And, we announced our plans to launch service to Hawaii! See what I mean? Each of these accomplishments is enough to be an individual highlight of almost any other year, but we managed to mark them all off our checklist in 2017. Meanwhile, we were confronted with some of the biggest storms to hit the United States in decades: Hurricanes Harvey, Irma, and Maria. We have responded to these natural disasters with fortitude, perseverance, and resiliency. I’m proud of our Company’s efforts to help our Employees, Customers, and communities recover in the wake of such extreme adversity. Through the challenges and triumphs over the year, I have witnessed the Heart of Southwest Airlines shine brighter than ever. For that, I’ll be forever grateful and proud of the magnificent People of Southwest Airlines.

En la industria de las aerolíneas, cada año trae consigo una buena cantidad de triunfos y retos. Incluso podríamos decir que los años de las aerolíneas son como los años de los perros; son tantas las cosas sucediendo al mismo tiempo en todo momento, que Southwest podrá tener 46 años de edad, pero hemos acumulado incontables años de experiencia en nuestra historia. Tal cúmulo de experiencia me ha enseñado a valorar cada año en sí mismo, y este es uno que recordaré con especial cariño. Es, quizá, uno de los mejores y de los más impresionantes que he experimentado hasta la fecha. En los últimos años, hemos puesto en marcha varias iniciativas que han dado

frutos en 2017, las cuales nos han preparado bien para el futuro. A continuación, les comparto las más destacadas:

Community Outreach

Southwest Airlines teams up with Mexican fashion label Carla FernĂĄndez to create a line of upcycled fashion accessories.

Southwest Airlines focuses on reducing environmental impact. Since 2013, Southwest Airlines has worked with organizations nationwide to build our capacity to repurpose and recycle items. By extending the life cycle of materials, we reduce waste sent to landfills and provide economic benefits in communities. Here are a few of our recent projects making an impact: LUV Seat As we work to ensure our cabins are the highest quality, we may remove and replace seat covers. Old seat covers are repurposed and given new life through programs that serve veterans, youth, people with disabilities, and minority groups. Billboards Around the country, billboard material from our ads has been repurposed into items like handbags, backpacks, and carry-on bags. Aircraft and Aircraft Components The life cycle of a retired Southwest aircraft can be extended by selling it to another carrier for continued use as a

Life Vests We partnered with a Florida Rotary Club to repurpose 5,000 life vests. This safety equipment was sent to fishermen in Uganda, keeping nearly 5,500 pounds of waste out of landfills. Lost Items While we do our best to reconnect owners with items left onboard or in terminals, some items go unclaimed. We partner with a national distributor to sell the lost items, and proceeds from the sales are donated to the Salvation Army. Traditional Recycling Southwest recycles waste materials like paper, plastic, aluminum, and cardboard. Used carpet is sent to a recycling company to be reprocessed in new carpet, yarn, or trim. Opportunities continue to arise to extend the lives of other items like heat-resistant gloves, blankets, old uniforms, and the plastic six-pack rings used to package aluminum cans. Our commitment to living responsibly and reducing our environmental impact is strengthened by our repurposing and recycling efforts. —Todd Spinks, Sustainability & Citizenship

During our return trip from a vacation in Florida, our connecting flight out of Phoenix was delayed. I have three small kids, and it was way past their bedtime. They were starting to get a little grumpy. Luckily, we were in the Southwest terminal surrounded by fantastic employees like ramp agents Yvette Brown and Oliver Morrison. It just so happened that we were traveling during some kind of employee or customer appreciation event. There were balloons everywhere, which the

I travel quite a bit for work and recently took an Uber to the Dallas Love Field airport. I arrived at 1:30 p.m., and my flight was scheduled for 4:35 p.m. While checking my bag with your curbside check-in, I asked skycap Special Givens, “Since I’ve arrived early, are there any direct flights I could take instead?” Special was able to find me a 3:10 p.m. direct flight to San Antonio, and I was very happy. But when I walked into the airport, I realized I had left my cell phone in the Uber car. I went back to Special and told her my situation, and she was a superstar! She logged out of her own Uber

kids loved. Big speakers were also set up, and employees were playing music and dancing. My 4-year-old asked if she could go “join the party,” and as she walked over, the Southwest employees smiled and waved, inviting her to join them. They changed the music to “Cha Cha Slide” and taught my daughter how to do the dance. My 2-year-old twins couldn’t resist the fun and joined in, too. I was a bit on edge when I found out our flight would be delayed, but I should have known not to worry. We were in good hands with the Southwest team. —Vicky Bazanos

My now-husband and I can’t help but send a shout-out to three members of your Southwest team: flight attendants Anita Roycraft, Cheryl Ellrich, and Joel Wright. We were flying from Pittsburgh to Denver to get married in Estes Park, Colorado, and when we checked in, we were in boarding positions C1 and C2. Upon scanning our passes at the gate, we asked if there was any way to sit together. Thankfully, we found two seats together three rows from the back. About 30

minutes into our flight, we heard over the intercom: “Would Laura Louzon and Ian Miller please raise your hands? Did you find seats together? Everyone, these two are flying to Colorado to get married this weekend! We will be handing out pens and napkins to everyone. Please write some marriage advice for the couple.” We received napkin after napkin of advice; we laughed, we cried. Halfway through the flight, they asked for Ian to report to the front of the plane. They “crowned” him with a crown of peanut packets and drink stirrers. I was called to the back of the plane and “crowned” with peanut packets, drink stirrers, and a toilet paper veil—complete with a toilet paper roll bouquet. As instructed, we rehearsed our ceremony. Other passengers hummed the “Wedding March,” and I walked down the aisle to Ian and kissed him, and everyone cheered. We cannot thank Anita, Cheryl, and Joel enough. Ian and I will forever cherish those napkins and the memories your crew gave us. —Laura Miller

COULDN’T HAVE DONE IT WITHOUT SOUTHWEST

My husband and I dated for three years long distance (between Memphis and Dallas). Because Southwest Airlines keeps their flight prices low, we were able to see each other often and chase our dreams together. My husband, Aaron Gouge, is a Paralympian for Team USA. He is a double amputee and has played wheelchair basketball his entire life. Last year, he went to the Olympics in Rio de Janeiro and won gold. I also graduated with my master’s in nursing last year and am a pediatric oncology nurse. I have now moved to Dallas, and my family has been using Southwest to come visit us. Our dreams and this entire relationship have been made easier and smoother because we had a way to see each other. We were married in October and flew Southwest for our honeymoon, too. Dear Reader, In honor of this issue, my wife and I poured ourselves a drink and sat down to a rare cocktail hour. This was the ninth year we’d toasted the annual Spirit Guide. Which, as I raised my glass to my wife, made me wonder: Why does the same word that denotes an alcoholic beverage also get used to describe a mood, a team’s character, a ghost, a theft (“spirited away”), a journey (ditto), and the breath of God (“Holy Spirit”)? Being an unabashed geek, I went straight to that source of deep wisdom, the Oxford English Dictionary. There, I learned the word comes from the Latin

spiritus, meaning “breath.” The same Latin gives us “inspiration”; the ancients believed you got it by inhaling the breath of the muses. Over the ages, “spirit” came to mean the soul or essence, the very air of a thing. Clever writers put the word to use for distilled substances; distillation, after all, gets down to the essence of things. The point, or essence, of all this is that the most spirited moment of a cocktail hour—in a bar or at home, with a friend or lover or book—comes right after you give a quiet “cheers” or “l’chaim” and raise the glass. That little ceremony, the anticipation, is the first breath of something. Which makes me wonder further: While alcohol is the water of life, can you inhale that spirit without the alcohol? Can you take a breath of your own, welcome the muses, say “Here’s to life,” and get the same effect? In other words, can you distill that moment and use it whenever you want? Give it a try. That’s the spirit!

Thank you for Liana Aghajanian’s beautiful story about her dog, Henry [“A Dog of One’s Own,” October 2017]. It changed my relationship with Felix, our wheaten terrier, and maybe my life. I married into Felix’s family, and we got along, but I thought of him as the burden that needed to be walked and required food, treats, and haircuts. Then, I read about Liana’s desire for a dog and Henry’s unifying significance as she coped with a transition into our sometimes-difficult country. It gave me a newfound gratitude for Felix, and I realized he is a connective glue that helps me be a part of the family. As our nation, unfortunately, fights over immigrants, I am grateful to Liana for helping me gain a more expansive perspective. Mike Hemmer ST. LOUIS

wife and I have six dogs after starting out with one we purchased from a breeder—a golden retriever named Heathcliff. After buying him, we began to feel guilty when my wife learned more about the plight of so many shelter dogs, and we eventually welcomed a pureblood redbone coonhound named Ryder. Next, we inherited a pit bull mix from our son. Many other rescues rotate in and out of our home. For my part, I have found that the dog does more for me than I do for him. He changes my outlook on life, softens the edges, and shows me every day what true friendship is: sincerity, love, and loyalty. Please thank Liana for the great article and sharing her insights. I’m so happy her family has come to regard dogs with the love and respect they deserve.

This past summer, bartenders at Culinary Dropout restaurants in five cities were tasked with concocting a drink that represented their region. Recipes poured in: an apricot tipple in Phoenix, a chamomile-infused whiskey highball in Vegas— you get the idea. When the Austin staff put its heads together, one idea stuck out: sweet tea. But this isn’t your grandma’s porch sipper. Austin favorite Deep Eddy Vodka was infused with black tea, and then combined with almondy amaretto. Lemon juice and apple cider vinegar add punch, while a syrup of Texas honey and mint brings sweetness. The results spoke for themselves: The Austin locale sold more Forget Yo Honeys than all the other locations’ drinks combined.

MAKE IT ↑ Combine ½ bar spoon apple cider vinegar, ½ ounce lemon juice, ½ ounce amaretto, 1 ¼ ounces mint-honey syrup*, and 2 ounces black tea-infused Deep Eddy Vodka ** in an ice-filled shaker; shake to combine. After surveying nearly 3,700 full-time workers, job site CareerBuilder found that more than half of us have our eyes on a less regimented schedule. “Employers are concerned about acquiring and retaining great talent, and one way they can do that is by offering flexibility and making changes to how and when employees report to work,” says Rosemary Haefner, chief human resources officer at CareerBuilder. “These options help an employee’s quality of life and productivity, and they can boost loyalty with the employer.” That approach can translate to employees working remotely or operating on an alternative schedule. We guess working 9-to-5 isn’t the only way to make a living.

Change is possible when companies “activate caring,” says the Audible CEO. We’re investing in an urban renaissance for Newark, New Jersey, where we’re headquartered. That means doing things like giving rent subsidies to employees who live downtown, using locally sourced food in the cafeteria, and hiring people from our community. Being on the ground gives us insight. For instance, we found that for many of our interns— Newark-born, first-generation college students—the college-entry experience was rocky. We reported to local schools on the problems we were seeing, like gaps in workplace vocabulary and trouble crafting resumes, and ended up collaborating on a mentoring program. I’m hopeful that when we do these things, other CEOs will have even better ideas about how to activate caring versus just mailing in checks to a philanthropy.

Then, when you get distracted—which will happen a million times— gently and good-naturedly begin again.”

panic attack on national television, which set me off on a windy path that ultimately led to meditation. I always thought it was nonsense, but what changed my mind was the science—meditation has been proven to lower your blood pressure, boost your immune system, help with anxiety and depression, and even rewire parts of your brain.”

What usually prevents people from practicing? “Based off my conversations, I’d say it’s time. The good news is if you meditate for 5-10 minutes most days, you will be able to get most of the benefits. The better news is one minute a day also counts. Once you’ve anchored the practice into your life, you can work on the dosage.” How has meditating improved your work? “We’re often live on the air and it’s very unscripted. I used to struggle with control. I would get caught up in keeping everything on track and hitting commercial breaks, and that got in the way of being spontaneous and authentic. Meditation helps me to be right there in the moment. It’s also helped me to better listen to my teammates and react organically to what they’re saying.”

Steeped in the Moment

I thought I knew tea. Then I met Josephie. / BY CARA STRICKLAND

I

start every morning with a cup of British black tea, a remnant of several months my family lived in the United Kingdom when I was young. My mother acquired a tea habit, and by the time I was 8, I knew how to make a proper pot. I started the electric kettle, and when it boiled, I poured a small amount of hot water into the teapot and swirled it slowly before emptying it into the sink—hotting the pot, it’s called. Next, I would add in the tea bags: PG Tips from the U.K., as ubiquitous there as Lipton but with a distinctly British flavor. The formula, my mother said, was one for each person and one for the pot, so I always added four, for her, my brother, and me. Then, I allowed the tea to steep until five minutes had passed and I could pour a cup

for her the way she liked it, with just a splash of milk. I would place it at her bedside, and only then would she begin to stir. At 16, my first job was in a tearoom, discerning the palates of guests in hats and floral dresses, helping them choose from our selection of more than 50 teas and tisanes. I moved so quickly that I would barely touch the ground as I made tiny pots for a group of five people, trying to keep all the flavors straight in my head. After they were gone, I did the dishes while sipping dregs from a chipped teacup. It was no surprise, then, that I would make my way to Gaiwan Tea House in Coeur d’Alene, Idaho, along with 30 others, to meet Josephie Dean Jackson, a newcomer to Idaho by way of CONTINUED ON PAGE 65 ILLUSTRATION BY EMMA KELLY

Australia and Texas (which made for a fabulous accent). She was teaching a wildly ambitious two-hour course on the history, preparation, and culture of tea. I was eager to meet Josephie because I’d heard that she was beginning to grow tea in Idaho, the first attempt in the state. She’d planted seedlings from Russia and Nepal, and they’d already survived nearly two winters since her arrival in 2015. In 2009 Josephie began to grow a test plot of tea plants in East Texas, becoming the first female tea farmer in the United States and the first tea farmer in all of Texas, ignoring those who told her it wasn’t possible to grow tea there, since no one ever had. “There always has to be a first,” Josephie told the crowd. “Just because no one had done it, didn’t mean it couldn’t be done.” A few minutes later she added an additional word of advice. “Don’t tell a woman she can’t do something.” In her early days, there were only a handful of American tea farms, but

She harvests Camellia sinensis leaves, using them to make a variety of teas, including black, green, white, and oolong; they retail between $600 and $800 a pound. Early in the presentation, Josephie showed pictures of her Texas tea and its bright green leaves, about 10 times larger than what I shook into my little pot every day. How could it be that I’d given so little

thought to what tea might be like in its natural state? I had only experienced it when it was ready to use, completely dry and curled. While Josephie talked, we sipped tiny cups of several teas with particular historical significance. “You have to use all of your senses when drinking tea,” she said. “The sixth sense is your soul. You might find that, when you really smell the tea, it will bring back memories.” She was right, of course. When I stopped and paid attention, I could suddenly be in a small tea shop in Seattle, sipping too-hot lavender black tea too quickly, or sitting on the floor in my college boyfriend’s apartment, trying strong, fermented Pu’er for the first time. Several weeks later, I met Josephie for tea at Gaiwan. Once settled at our table, she removed two sets of carefully wrapped Chinese teacups and taller, cylindrical scent cups from her purse, and placed them on small wooden trays. Next, she pulled out a gaiwan, a Chinese tea infusion bowl invented during the Ming dynasty. She filled the gaiwan with tea leaves and waited just a moment for the tea to steep before pouring some into my scent cup. She demonstrated the proper technique, placing the cup on top of the scent cup tightly, flipping it, and slowly releasing the scent cup. The teacups cooled slightly, and we buried our noses in the empty scent cups. “What does it smell like to you?” Josephie asked. “Honestly, it’s a little like barley,” I said. “There are no right answers,” she said. “It’s all about how it smells to you, what it makes you think about.” As the tea dried in the scent cup, the smell changed, almost jarringly. My barley scent became a strong honey aroma. Only after we’d thoroughly noticed the scent could we begin to sip the tea.

Josephie told me that in Chinese culture, it’s polite to hide your teeth as you drink, and that you should finish the cup in three sips. She poured out the excess tea from the gaiwan into a stoneware pitcher from her purse and refilled it with water for a second steeping. “It’s even better the second time around,” she said. As we sipped, we talked about resilience. “The tea leaf has been abused,” she said. “Its water has been taken from it. When it comes back to life, it’s called the dance of agony.” She paused to take a sip. “But when you taste it, it’s all worth it.” Beauty out of hardship and suffering is a metaphor close to Josephie’s heart. As a divorcee, immigrant, and single mother, Josephie made a living in the male-dominated oil and gas field. When her daughter rose above bullying, she reminded Josephie of her own potential. Later, newly married and blending a family, she decided it was time to grow into that potential. She planted her first tea crop. Even when everything is going well, it takes four to seven years before you see a harvest from a tea plant. Josephie’s first plants suffered through drought and insect ravages. Still, they carry on. She removed a small bag of traditional Chinese black tea—she called it Texas Cha Cha—from her purse. As she steeped it, she reminded me that this was the tea James Norwood Pratt, a noted tea authority, once called the best U.S.-grown tea he’d ever consumed. We had been drinking good tea at Gaiwan, but something about this experience was different. I had never tasted tea in the presence of the person who grew and processed it. I didn’t know if it was really that much better, or if my brain had tricked my taste buds, but it was delicate and slightly floral. “It tastes a little like a Darjeeling, doesn’t it?” Josephie asked. It did.

The next day, Josephie flew to Texas to check on her tea. When she returned, a week later, she sent me a text: “Have a little tea leaf plucked from TX and shall be guiding the core members of tea class how to make tea tomorrow. Let me know if you would like to come.” I texted back immediately, asking for the address. NOTHING PREPARES ME for the glossy green leaves that Josephie pours out of Ziploc bags onto the kitchen counter. Our small group of tea enthusiasts is made up of the faithful members of Josephie’s weekly classes at Gaiwan, and none of us can wait to touch tea leaves in their natural state. We begin to sort them into piles by size; Josephie regales us with stories of traveling through airport security with eight plastic bags of damp tea leaves. A day of tea-making can last 14-16 hours. There are so many leaves to sort; I despair that we will ever make the tea at all. “When you drink tea from here on in, you’ll think about the people who did this,” Josephie says. But after a while, a meditative calm descends over the room. The members of the tea class are no longer second-guessing their sorting technique. We have entered into the experience fully. Somehow, that pile does get sorted, and then it’s time to decide what kind of tea each pile will make. The smallest leaves with the most buds will be white tea, Josephie says. Two others will make two different kinds of green tea; there will be an oolong and a black. She spreads the future white tea on a cookie sheet and pops it into a low oven to wither. One student puts larger leaves into a skillet on very low heat, gently rotating them with his hands. Another steams leaves in a silver bowl. When Josephie pronounces the leaves withered, it’s time to roll them. One student is meticulous, rolling each leaf by itself. Others

roll many under their palms. When more tea is withered, Josephie places it into a muslin cloth, stained with years of tea. She tightens it and rolls it on the counter until juice oozes from the cloth. When she opens it, there is a giant green ball. “This is called a dragon’s egg,” she says. The white tea is the first to look like something we might steep. It’s lightly green in color, and the moisture is gone. The green tea turns dark and fragrant, curling into leafy tendrils. Each batch changes before our eyes, releasing moisture and transforming, ready to take on moisture in exchange for flavor again. It’s almost 1 a.m. by the time we set every tea on the counter. It’s close, but still needs time to dry. The transformation is dramatic. We can’t stop picking up the tiny leaves and smelling them, commenting on what has changed

AFTER TEA AT GAIWAN, just before we parted, Josephie asked: “What do you think your tea metaphor will be?” Tonight I’ve been letting the question swirl around in my mind, as the tea turned from raw, vivid green into something beloved the world over. They say a woman is like a tea bag, revealed for who she is once she gets into hot water. But long before steeping, weather and human intervention help decide what the tea will taste like.

It’s difficult now for me to look at tea without seeing a metaphor for life. Each joyful day in the sun, each bitter sorrow, every experience I’ve had has contributed to the flavor I carry with me. Like the little teapot from the song, I’m waiting for someone to get close enough to tip me over and pour me out, just enough to share. I have a feeling the results will be delicious. A group of botanists brings a new ingredient to the world of bitters: transparency. / by Tove Danovich

If they’re lucky, botanists can be intrepid explorers, traveling the world to discover and document plant species. Ashley DuVal, Rachel Meyer, and Selena Ahmed met while researching at the New York Botanical Garden; their individual fields of study run the gamut from the domestication of trees, to how food crops have changed over time, to the medicinal side of botanicals. During their individual careers, they traveled across the world and found that, as different as places could be, there was one thing many cultures had in common: bitters—those infused, compact tinctures you often find bartenders

reaching for. The herbal elixirs started as a type of medicine (the value of which was often dubious), and their production goes back hundreds of years. Bitters makers jealously guarded their ingredients to keep their competition—and perhaps their customers—from finding out what they were. DuVal, Meyer, and Ahmed realized that the opposite should be true: Bitters could be an effective way to bring the experience and flavors of cultures around the world back home to New York. They started making them as an educational tool at the Botanical Garden, to show people which plants they’re using and why they matter. Soon, Shoots & Roots Bitters was born. Even in the spirited world of bitters, the flavors that Shoots & Roots draw from their tinctures stand out. Demon Flower is a mixture of 12 plants from Mexico and the Philippines; Chai Jolokia combines the native North Indian ghost pepper with masala chai; Black Bear’s Bitters uses osha root and juniper cone, two plants that bears eat to aid digestion. The trio’s forthcoming book, Botany at the Bar, is taking their bitter transparency a step further by providing instructions for people who want to make bitters at home. Add all ingredients except tonic water to an icefilled shaker. Shake to combine, and then double strain into a highball glass with large ice cubes. Top with tonic water. *Smoked maple syrup: Add 2 cups maple syrup to a glass baking dish, and then place the dish on a barbecue grill. Add 1 centimeter of oak chips to a cast iron pan. Heat the oak chips on a stovetop for about 5 minutes, making sure the wood does not ignite. Move the pan with the wood chips to the grill and place near the maple syrup. Close the lid and let smoke for 20 minutes. Pour the syrup into a jar and store in a cool place.

the most valuable winemaking tool at 8 Bells isn’t an oak barrel, a stainless steel fermentation tank, or one of the shiny glass stoppers this boutique Seattle winery uses to close its bottles of Chardonnay and pinot gris. It’s the spectrophotometer (see diagram below), a piece of equipment the size of an Xbox that you’d be more likely to find in a research lab. Which makes sense when you consider that 8 Bells co-owner Tim Bates and assistant winemaker Travis Allen moonlight as a National Oceanic and Atmospheric

Administration climate scientist and nurse anesthetist, respectively. While the average winery ships samples of grapes and wine to a lab to measure sugars, nitrogen, or malic acid, these two do that all in-house with the little contraption that Bates would typically use in his day job to measure nutrient levels in sea water. And they have the notebooks full of measurements to prove it. “We’re control freaks,” Allen says with a grin. Precision plays a part too. Most wineries this size—8 Bells releases close to 1,800 cases each year—are at the mercy of a vineyard’s schedule when it comes time to harvest. But because Bates and Allen are

The irony, as Allen acknowledges, is that there’s no instrument that can measure a wine’s flavor; that just comes down to personal preference. But if the success of their limited-run Cabernet Franc is any indication, they may have perfected the formula: The 2015 vintage sold out months before its December 2017 release.

By the end of next year, the moon could open up its first micro (like, really, really micro) brewery. / by Mike Darling Brewing a beer on the moon, it turns out, can teach us a lot more than just whether or not future space colonies will ever have a good IPA on tap. A group of college engineers from the University of California San Diego has convinced a separate team of scientists—Team Synergy Moon—to include a brewing canister onboard what could be the next spacecraft to explore the moon’s surface. (The team is vying for the Google Lunar XPrize: a $20 million bounty given to the first team whose spacecraft reaches the moon and explores 500 meters of its surface.) We talked to Neeki Ashari, a recent bioengineering graduate and one of the experiment’s leaders, about what she and the other engineers hope to learn from boldly brewing where no one has brewed before. Describe what you mean by “brewing” a beer on the moon. Our team has developed a fermentation canister about the size of a soda can. A top chamber will hold our wort and the second chamber will hold our yeast. Between those two chambers is a valve separation barrier. Once actuated, it will open up, allowing our wort to mix in with our yeast. Fermentation will then commence. The third chamber will hold our spectroscopy device, which will help us measure the fermentation rate. And what’s different, exactly, about observing this process in space? We want to see how reduced gravity will

alter the pressure and fermentation rate of yeast. Understanding these results may have consumptive and clinical applications that can be used in the future for space exploration. Give us a sense of what you hope to learn from all that. We really want to emphasize our understanding of the viability of yeast in a lunar gravity environment. This isn’t just about brewing beer; it’s about serving a scientific purpose. Yeast is one of the most prevalent microorganisms. We find it in bread, in beer, in pharmaceuticals like insulin. This experiment may also open up more doors for understanding microorganisms—not just yeast—in lunar gravity. What might some of those applications be? They might include developing yeast-driven foods to support colonization on Mars—bread, for example. As for clinical applications, synthetic insulin is made in both bacteria and yeast and can be used to help control your glucose levels from getting too high. This can be a future application for explorers who can’t generate insulin themselves. Now, the important question: What kind of beer is it gonna be? So far, we’re looking to brew a low-gravity porter, but we are only producing roughly 15 milliliters, which is very small. This is just an experiment—it will not be coming back to Earth, nor will it ever be consumed. Bummer.

David Kyrejko has perfected every drinker’s ideal alchemy: turning beer into whiskey. Oh, and he can do it in only two weeks. / by Tony Rehagen

When David Kyrejko was an art student at New York’s Cooper Union for the Advancement of Science and Art, he actually favored the former, spending as much time auditing engineering classes as he did in the studio. He lists one of his hobbies as “high-efficiency heat exchanger design.” Even his interest in booze, while not purely scientific, is firmly rooted in a love of machines and how things work. “It’s a platform to experiment with,” he says. “Alcohol is proof of process.” In this case, the “proof” is the 80- to 110-proof alcohol content of Lone Wolf beer whiskeys—actual malt whiskey distilled from, and retaining the flavors of, stouts,

pale ales, and sours—which Kyrejko concocts in the one-man, Brooklyn-based Arcane Distilling. But why beer whiskey? First, c’mon! It’s beer and whiskey— two of God’s tastiest gifts, working together (finally!) to create the uber-intoxicant. Secondly, the 33-year-old engineer enjoys the challenge. Distilling beer into liquor is not exactly new. Germans have been turning brew into schnapps and brandy for decades, and here in the States, beer whiskeys and gins have inevitably bubbled up during the torrent of new craft brewers. What sets Kyrejko apart, of course, is the science. Unlike other distillers, who are beholden to the ancient techniques of boiling their mixture in huge vats and aging their whiskeys in barrels, Kyrejko has perfected a method of vacuum distillation. pressure of the liquid, lowering the boiling point to room temperature. That prevents the product from degrading, so all the hops and yeast character is retained. Then, he puts the batch through a secret aging process, which Kyrejko, like any great math-magician, is loath to divulge. “It’s not like I’m using some sort of flavoring agents or caramel coloring,” he says. “Just good old-fashioned science.” The result is a rich brown liquor that can be proofed and bottled in two weeks as opposed to the typical year or more. And, unlike many

of the other traditional beer whiskeys Kyrejko has tried, this one actually smells and tastes like the beer of origin. If there is an ulterior motive to Kyrejko’s mad science, it’s that, in addition to being delicious, cool-sounding, and quick, vacuum distillation is also good for the environment. Since he doesn’t need to heat a kettle to 200-plus degrees, the whiskey sucks up a minimal amount of energy. His custom still, made entirely from glass, is 20 feet tall, but occupies only 4-by-6 feet in the corner of the building he shares with a Brooklyn brewery. He also doesn’t need space to

many beers have quirky origin stories, but the ones Travis Rupp brews come with epics that stretch on for centuries. Rupp is a classics lecturer at the University of Colorado Boulder and a brewer at Avery Brewing Company in Boulder, where his job title is beer archaeologist—he makes new beers based on ancient recipes. Rupp’s process begins with deep research. He spends days in libraries, “reading a lot of journals, reading a lot of history books. But where I get a lot of my ideas is archaeological reports. I’ll look for analyses from excavations that point to certain plant life, or see if they were processing grains in a

certain way.” Then, he goes to the place where the beer was made and conducts on-site research, looking for evidence in museums, the natural environment, and the local cultures that exist today. Rupp’s first beer for Avery, released in September 2016, was called Nestor’s Cup, an Iliad reference and a nod to the beer’s roots in Mycenaean Greece. the apple doesn’t fall far / by Adam Erace The black gold beneath the chartreuse hills of Adams County, Pennsylvania, isn’t oil but soil— well-drained dirt ideal for apples. Many make their way into Ploughman Farm Cider, the line of hard ciders from Ben Wenk, a chipper 34-yearold whose ancestors founded Three Springs Fruit Farm in 1901. He controls the whole process, from planting specific heirlooms to practicing sustainable pest management to inoculating pressed juices with local yeast, which “really put[s] that Adams County terroir in the bottle.” That desirable funk plays well against the backbone of crisp fruit, distilled from the following varieties you’ll find on Three Springs’ 250 acres.

yeast would do to the flavor profile,” Rupp says, before adding, with an exuberant chuckle, “But we decided to just go for it.” Nestor’s Cup turned out to be rich, slightly tart, and fruity— and instantly popular, selling out its first tank in 10 weeks. Since then, Rupp has made three more ancient beers: Khonsu Im-Heb, from Egypt around 1100 B.C.; Pachamama, from the Peruvian Andes, circa 1200 A.D.; and, in collaboration with the Denver Museum of Nature and Science, an ale called Ragnarsdrápa, inspired by ninth-century Vikings. and with each launch, Rupp hosts a lecture, with a dinner and beer pairing. Sometimes the historic techniques and ingredients have disappeared, but often they’re still in use. That isn’t to say Rupp can use them for his purpose—the smallbatch methods may not translate well to the scale of Avery’s output, or his machinery may not be able to handle the ingredients. With Pachamama, Rupp ran into both problems. The beer is a type of chicha, a South American drink most commonly brewed with corn, and still made in Peru using traditional methods, which include chewing the corn. Human saliva contains an enzyme called alpha-amylase, which initiates the fermentation process by breaking down starches; mastication really is a critical step. So for Rupp’s first attempt at making Pachamama, that’s exactly what he and his colleagues did: chewed and chewed

The corn also got stuck in Avery’s brewing system. For the second attempt, Rupp found mass-produced

alpha-amylase online—less authentic, perhaps, but more effective and efficient for his needs. Using so many unfamiliar ingredients and techniques means Rupp is constantly uncertain what, exactly, to expect of the final product. But the challenge and the mystery are part of the appeal. After the surprise popularity of Nestor’s Cup—patrons still request it, a year after its limited run—Rupp was emboldened and got more experimental with Khonsu Im-Heb, the Egyptian beer. It was wildly fermented (meaning the container was left open to absorb natural yeast in the air) and made using only ingredients found in ancient Egypt, including emmer wheat and kamut wheat. “For most of us at the brewery, that’s our favorite,” Rupp says. “It’s sour and light and refreshing.” Avery is planning eight new Ales of Antiquity in 2018, and it’s a globe-hopping, centuries-spanning lineup. There’s one that Rupp has been planning with Umbrian monks, a colonial American beer he’s creating in collaboration with the Smithsonian, and another made in partnership with the only craft brewery in Jordan. There’s also a “dinosaur beer,” made using the oldest known variety of hops— which happens to come from Colorado—and yeast propagated from amber, a process Rupp compares, excitedly, to Jurassic Park. Rupp says that the beers he’s made so far have made him realize that thinking of their own craftbrew epoch as the high point in beer making may be “a little bit pretentious.” “It turns out that ancient beer,” he says, “is pretty damn good—at least so far.”

What’s one role you’d love to take on?

I learned to sing and play guitar for my role as David Koresh in Waco. He wrote most of the songs himself and they’re Bible-driven, so I wasn’t learning Eddie Vedder or Tom Petty. But I’m starting to learn more of the classics now, and I hope I never put the guitar down again. I consider myself an Austinite, and I run by the statue of Stevie Ray Vaughan often. I think that’s a fascinating story that hasn’t been told, and I would love to do something like that in the future.
